It is our biggest export, employs over one hundred thousand people and the fruits of this bonnie land attract tourists from all over the world. We use our channels far and wide to stress how important their work is so that they can continue to thrive. With over a billion bottles of Scotch Whisky exported every year, the industry plays an important role in raising consumer awareness of Scottish brands abroad. When people visit Scotland, regional food tourism ambassadors promote produce from their local areas to them.

The sector has faced many challenges in the past three years: a global pandemic, Brexit, and geopolitical shi s that continue to drive the price of basic commodities higher than many have experienced in their lifetimes.

Yet the people of Scotland have showed strength and determination: they have pushed themselves to think out of the box, building the industry’s resilience in the face of whatever adversity might follow. By uniting local communities and helping their fellows sustain their livelihoods, from the North East to the East, to the South, the West, the Highlands and the Islands, they have proved that we can all do better to create a more sustainable, powerful – and importantly, delicious – future. And however many herrings it takes, I think that’s a rebellion worth getting behind.

Scotland has a fantastic food and drink story to tell, and we are proud to help share it with the world YOU MAY BE familiar with the Scottish saying, ‘Twelve herrings an’ a bagpipe mak a rebellion.’ Even if you haven’t, you get the gist: it is a response to an exaggeration. It is no overstatement, however, to say that Scotland is a land of plenty when it comes to food and drink. Each of the country’s regions boasts a bounty of produce that is the envy of the world, and as many people willing to put in the hard gra to make beautiful products out of it.

Scotland’s food and drink sector is not insulated from the external pressures leading to rising prices, but its worldwide reputation endures. Businesses are facing these challenges head on, continuing to innovate, driving sustainability and quality.

AS MANY OF us have, food and drink businesses across Scotland have faced massive challenges in the past three years. The industry had to make radical changes in the context of the pandemic, adding to the upheaval caused by Brexit. According to our calculations, in 2020 alone, the industry lost almost £3 billion in sales compared to the previous year. Yet, in the face of so much adversity, the sector has shown tremendous resilience and ingenuity. It has emerged as an innovative force which has continued to create premium products, building on the foundations of Scotland’s great food and drink culture.Collaboration amongst the industry’s professionals has proved instrumental in this success.

Scotland Food & Drink Partnership’s recovery plan, backed by the Scottish Government, has made it possible for businesses to start rebuilding on stronger foundations than before: Scotland’s farming, fishing, food and drink sector amount to a £15 billion industry, employing 120,000 people.

Our producers are integral to Scotland’s economic success and authoritative status on food and drink. Even prior to the pandemic, collaboration between the public and private sector has been central to the successful development of Scotland’s food and drink industry. Naturally, it would also be instrumental to its recovery.

The plan set out more than 50 action points to aid the sector in view of stimulating demand in key markets and supporting businesses to capitalise on said demand.

The pandemic acted as a catalyst for a change in consumer habits, in some ways positive: now more than ever, people think carefully about where their food and drink comes from. The latest Provenance Perceptions research from the Scotland Food & Drink Knowledge Bank shows that 67% of Scottish shoppers now say where their food is produced is increasingly important to them, while around a third of shoppers across the UK also want to spend more of their money on food and drink produced in Scotland. With this renewed interest in local food and drink production, our industry was given an opportunity, upon which many of our members seized, adapting and changing their business model in response to hospitality closures and restrictions on travel. It will take solidarity and concerted effort for Scotland’s food and drink sector to prosper in the years to come. But this is a lesson to nurture, not learn, as the country is already well on its way to success, says Fiona Richmond, head of regional food at Scotland Food & Drink

Launched by Scotland Food & Drink and the Scottish Tourism Alliance, regional food tourism ambassadors are raising Scotland’s profile as a global food tourism destination, putting food tourism at the heart of industry recovery. From chefs and caterers, producers and independent retailers to agritourism operators, food writers, whisky experts and more, the ambassadors are all individuals deeply rooted within their communities and champion every one of Scotland’s great regions. They are shining example of excellence across the food, drink, hospitality, and tourism and are bursting with talent, enthusiasm and a spirit of working together to drive tourism growth.

Nurturing a strong local food and drink culture doesn’t just help with recovery, but proves invaluable by strengthening the sense of community in local areas.

Fiona Richmond, who leads the programme at SF&D, was recognised in the ‘2022 top 100 women in tourism’ alongside food tourism ambassadors Emma Clark, Emma Niven, Ailsa Currie and Sarah Heward.

Scotland’s food and drink sector has never been so highly-acclaimed at an international level. A growing middle class in Asia has developed a taste for our premium whisky and meat products, offering a huge economic opportunity for businesses operating in those industries.Scotland is also uniquely placed as a beacon of sustainable food and drink production for the rest of the world to follow. Acting sustainably in business is now understood as the most important way of tackling the climate emergency and food and drink businesses have much to gain from improving their environmental credentials. We expect to see a continued rise in consumer demand for premium and climateconscious food and drink. Without a doubt, tough times still lie ahead of us, as ongoing economic uncertainty and a cost of living crisis face businesses across our sector. But despite the hardships businesses have endured in recent years, they have come out stronger thanks to the concerted efforts of our outstanding food and drink professionals. Together, the people who make it such a great sector, supported by government, can look forward to a brighter future for everyone.

It is a modern operation, where promoting the local area is just as important as the runof-the mill activities: the Curries are keen to teach visitors to the farm – staying in their holiday cottages or attending their events space, Bellevue Barn - everything there is to know about farming, and encouraging curiosity about where food comes from. Together with other local producers, they host regional farmer’s markets, showing the virtues of a ‘farm-to-fork’ supply chain.

The North East of Scotland is as rich in history as it counts famous castles. It is also home to many malt whisky distilleries along Moray’s River Spay, is the birthplace of Finnan Haddie, and the stomping ground of many of the country’s artisan food and drink producers.

The Sutherlands of Portsoy smokehouse has been operating on the North East coast of Scotland for over 100 years, but has lately taken a more innovative approach. As well as a distinctive range of smoked salmon, it has tried-and-tested a number of alternative smoking methodsand fish. A notable example is the Smoked Steelhead Trout – winner of a 3-star Great Taste Award in 2022 - where the trout is hand salted then smoked over scotch whisky barrel shavings. The cold smoked line is available to trade for £2.30 per 100g, with an RRP of £2.99 for 100g. The hot smoked salmon costs £17.75 per kilo, RRP £23.10.

100 year-old Maclean’s Highland Bakery has been selling traditional Scottish fare for the past four generations, using local, organic produce. It now exports a range of shortbreads, sweet biscuits and oatcakes from its production facility in Forres. The Roehill Springs Distillery is based in a repurposed building on a third-generation family-run farm near Keith. Premium small-batch gins are created using locally foraged botanicals and the farm’s natural spring water.

Based in the village of New Deer in the Aberdeenshire countryside, The Kindness Bakery has redesigned the packaging of its Oatcake Bite range, across all six core flavours: Cheese & Chive, Chilli, Mature Cheddar, Ploughman’s Lunch, Cracked Pepper and Original. Home to Scotland’s largest herd of water buffalo, The Buffalo Farm in Kirkcaldy, Fife, is the sole producer of Scottish Buffalo Mozzarella, now widely available from wholesalers across the UK. Made on the farm using milk from the free-range herd, the mozzarella is creamier and slightly firmer in texture than its Italian counterpart thanks to the lush, green grass the animals enjoy.

Third-generation family company Macsween of Edinburgh has been handmaking haggis and black pudding ever since it was established in 1953. OwnedLeven and jointly-run by David, Kay and David Jnr McCulloch, Elie Deli is a delicatessen and general grocers in Elie, a seaside town in the East Neuk of Fife. As well as a selection of local meat, cheese, fresh and ambient items, it sells a range of gin, wine and confectionary, as well as fresh cakes, pastries, bread, coffee and sandwiches prepared to order.

Family-owned Blackthorn Salt sources and processes organic sea salt flakes on the coast of Ayr, where the only ingredient – seawater – is evaporated on the country’s only working thorn tower, resulting in a crystal laden brine. This concentrated liquid is then slowly reduced to create a salt that, according to Great Taste judges, “tastes like the sea, but has a deeper complex mellowness derived from minerals and blackthorn tannins.”

The Wild West

Nature reserves, mountains and lochs draw the landscape of the West of Scotland, the birthplace of famed poet Robert Burns, father of the tradition of eating Cullen Skink, Cock-a-Leekie, Haggis, Neeps and Tatties and Canachan – all rinsed down with a glass of Scotch –which has seen many through a cold January’s night. Not to dissuade anyone from any Burns’ Night specials, clever retailers might consider stocking these items year-round.

FoundedOrkney in 1859, the famed grocer and wine shop in Kirknall was named after owner James Kirkness, and later, when his daughter took over, after her and her husband, John Gorie. Founded in 2015, Lussa Drinks Company is the brainchild of three Jura residents passionate about growing plants, who also happen to have a shared love for gin. The UK’s most northerly mainland distillery, Dunnet Bay Distillers, set in the historic county of Caithness, was founded in 2014 by Claire and Martin Murray.
