Hi Bryn. Can you tell us about your connection to the Coffs Coast?
I moved to the Coffs Coast in 1984 from Temora and it didn’t take long for me to feel at home. Our family lived on Diggers Headland and I practically grew up on the beach. We had tracks leading straight to Diggers and Macauley’s, which became my playground.
Back then, my older brother’s friends would store their surfboards under our house and
I’d sneak a different board to try every time I headed out—until I finally got my very own (second-hand) board. From that point on, surfing became my life. I’d be in the water twice a day, completely.
The club means so much to me that I even have our logo as a permanent reminder! My passion comes from wanting to see young surfers from our region make it to the world stage.
You have been involved with the Coffs Boardriders for a number of years, what made you want to be involved and what do you enjoy about being part of the club?
I joined the Coffs Boardriders when I was about 10 years old and I’ve loved it ever since. Over the years, I’ve taken on various roles, from President to Vice President, and even BBQ Queen! I’ve been pretty heavily involved since 2002 and have always felt a deep connection to the club.

What motivates you to be involved with local community groups? What does it mean to you to be an active part of the Coffs Coast community?
I have a deep love for Coffs Harbour and a strong desire to see it thrive. I want this community to remain strong and continue to be a wonderful place for my family and for future generations. This passion for our community is a big part of why I enjoy being involved.

Can you share a bit about some of the other longstanding club members and
what it takes to keep the club running?
Wow! There have been so many characters and awesome people involved in the club in my time anyway. From the Ricketts, Lindsay and Ashdown families through to Mum & Dad, Wal, Spike and Ian. Through to my lovely family and current legends Carly White and her awesome crew.

Hi Amelia. Congratulations on receiving the Australian Sports Medal! Can you share what it felt like to be recognised by Governor Margaret Beazley alongside your teammates and coaches? It was a great honour to receive the Australian Sports Medal alongside my teammates and coaches. Being recognised by the Governor was a momentous occasion I was able to share with my family and will never forget. This medal is a once in a lifetime achievement and it was a very special occasion for each of us making us feel very deserving and so proud of our achievements.
Representing Australia at the Global Games in Vichy, France, is a huge achievement. What were some of your standout moments from that experience?
I had a few standout moments, one was when I won my first Gold medal and by the time I had gotten out of the pool from my race, one of the

Amelia recently received the Australian Sports Medal in recognition of her incredible performance!
coaches, Michael Able, had already called my mum and nan who were watching from home in Australia. Michael had them on the phone ready to talk to me. Another stand out moment was swimming with my teammates in the 4 x 100 mixed medley relay where we secured a Gold medal and the 4 x 100 freestyle relay where we secured a Bronze medal. I brought home a medal from each individual event I swam, 3 Gold, 5 Silver and 4 Bronze in total. I loved meeting new swimmers from other countries and seeing what they could do.
As an S19 swimmer, what challenges have you overcome, and how has it shaped you as an athlete?
Throughout my swimming journey there've been a few major challenges I’ve had to overcome. One of the biggest was being treated differently and judged because my disability isn’t a visible one so people don’t understand how it could affect swimming. I had to accept that not everyone will accept me for who I am and not everyone will support me through achieving
my goals. I had to build resilience after losing my best friend when she started to ignore and exclude me when I was selected for my second Australian team. I now realise that I don’t need others to believe in me for me to believe in myself. I had a shoulder injury that I swam in France with and it has taken over 12 months to overcome it. It still gives me grief at times but I’ve learnt to push through the pain to achieve what I want.
You’ve excelled in swimming and represented Australia multiple times now. Can you tell us about some of your personal highlights in your swimming career so far?
Some of my personal highlights during my swimming journey include the privilege of representing Australia twice. The first team I made I was 15 years old and competed at the Oceania Asia Games in Brisbane 2022. Then my second team I made I was 16 years old and competed at the Global Games in Vichy France 2023. Meeting new people and creating many new relationships with like-minded people is
amazing. Being able to follow my dreams that I didn’t believe possible until I met my idol and inspiration – Paralympian Madeleine McTernan. It was such an honour to make my first Australian team and swim with Maddie.
I realised I had to focus on my goals and dreams chasing them and not let those who didn’t want me to succeed bring me down. It was very hard at the time but it made me a stronger person today.
Who or what first inspired you to take up swimming, and what kept you motivated through the years?
I first started swimming when we moved to Coffs Harbour 9 yrs ago as we were very involved with Surf Life Saving and mum always had to swim beside me in the ocean swim, so she put me into stroke correction lessons with Daniel Bannerman so I could gain confidence. Mum wouldn’t let me paddle my board (which I love to do) unless she was confident I could swim to shore if I lost my board. Since that day Daniel has been by my side helping get to where I am today. Daniel has supported and encouraged me the whole way, sometimes having to push me and put up with my “attitude” or me pushing his buttons. Dan has shaped me and helped me build resilience, overcome setbacks and taught me to be disciplined. Dan helped teach me the value of perseverance, and the importance of goal setting, and pushed me beyond what I ever thought was possible. Dan has been there to help and watch me grow.
Paralympian Maddie McTernan who also originates out of Coffs Harbour has always been my inspiration. Maddie and her family have
been instrumental in supporting, encouraging and assisting me achieve and follow my dreams. The McTernan family always give so much back and look after their grass roots. I have been very fortunate to meet them and now have the pleasure of being their friends, part of the swim family. Maddie is such an inspiration to many swimmers both multi class and able body swimmers.
How important is the role of your coaches and teammates in your journey? Are there any specific moments when their support really made a difference?
The role of my coaches and teammates is very important as having good relationships with them makes training and competition more fun, exciting and less stressful knowing that you always have someone to turn to when you need to. When I was preparing for the Global Games in France I had so many people support and encourage me, while just a few were the complete opposite. I realised I had to focus on my goals and dreams, chasing them and not let those who didn’t want me to succeed bring me down. It was very hard at the time but it made me a stronger person today. I also have a wonderful “mentor” who supports and encourages me, helping me whenever and wherever he can, Tony Goodwin. Tony is a Masters swimmer who holds over 20 world records and has just been inducted into the
What does it mean to you to be a role model for other young multi-class swimmers in your community?
It means the world to me to be able to be a role model for other multi class swimmers. When I was first classified as an S19 multi class swimmer we knew nothing about it – it was a reasonably new classification and we didn’t understand multi class. To now be able to share more information and educate others about multi class and inclusion, it is very rewarding. Being able to help path the way for new upcoming swimmers makes me feel like I’ve achieved another goal. I want to be able to promote inclusion and be part of pathing the way for S19s.
What advice would you give to young swimmers, especially those in multi-class events, who aspire to represent their country one day?
One piece of advice would be that not everyone is going to want you to succeed so you need to be the one to want it and you need to go for it, put in the effort, train hard and never give up –those dreams will come true. Don’t let anyone else stop you from achieving your goals.
What’s next for you? Do you have any personal goals and aspirations for the future?
I've got a big few meets coming up, Country Regionals, State and Nationals but my next big focus and goal is to go to Worlds being held in Thailand next year, then the Oceania Asia Games in 2026 being held in Bangkok.

Hi Scotty. Congratulations on becoming a World Champion! How does it feel to bring home the Gold in the Men’s Grand Masters at the ISA World Masters Surfing Championship?
It still feels surreal, but the title of World Champion sounds great!
Even though every competitor who enters believes they can win, a lot needs to go your way, so winning and bringing home the world title is absolutely a dream come true. It wasn’t easy. The win took 17 rounds of surfing, 5 rounds in the NSW titles, then 5 rounds at the Australian titles (which I had to win), and I then had to compete in 7 rounds at the World Masters. The ISA World Masters Titles brought with it top international career surfers and seeds like the International Surfing Association's most decorated surfer, Tom Curren, the previous world champion, Mike
Latronic from Hawaii, and a bunch of former world tour competitors.
Can you tell us about your experience competing in El Salvador? What were the waves and conditions like?
The surf was great, although not perfect, but very surf-able. It was a lot like a fun day here at home. Maybe like a fun day at Crescent Head or Arrawarra. It’s a long, soft righthander with a 500-700 meter paddle out, which took its toll on many competitors. This is where my training definitely paid off.
How did you prepare, both mentally and physically, for this world championship?
I spent a fair bit of time preparing physically. Remembering that I started training back in June for the NSW State Titles, I carried that into the Australian Titles in August and then ramped it up for the ISA Masters. There is no better training for a sport than doing the sport itself, and that absolutely rings true with
surfing. So, I chased waves before we left for the competition, which would reflect the same kinds of waves that El Salvador was offering. Additionally, there is a lot you can do for physical fitness training when the surf is no good or in the evening once the sun goes down. Although that physical training, doing popups and mock surfing was more for mental strength training, knowing I was doing whatever it took to be ready. Having the belief that I was physically prepared was essential to my confidence for sure.
What was going through your mind during the final moments of the competition?

competition, anyone can win as most of the competitors were previously on the world tour and at any moment, there will be an excellent wave on offer. So, knowing this in the final and with 8 minutes remaining, it was crazy. I was in 1st place, but we all knew there was enough time for another opportunity for each of us competitors to get one more score. And then it happened: a good set came through with about 90 seconds to go. I had 3rd priority, and the former world tour surfer from Brazil, JoJo, who was in 2nd place, had 1st priority, meaning he had 1st choice of the waves. I caught one, and now, with about 45 seconds to go, I realised I couldn’t be beaten as JoJo didn’t get another wave, and with that, I won.
As someone who has been surfing for decades, what keeps you motivated to keep pushing yourself to reach new heights in the sport?
I love the way competitive surfing keeps us young and fit. A lot of people ask why I still compete, and that’s the reason. When a competition is coming up, I have to surf and train more than usual; even when the surf is terrible, I still do sessions to prepare for anything.
What has been the most rewarding part of your journey as a competitive surfer?
Winning is definitely the most rewarding. A panel of our peers judges us, and there is a definitive answer as to who is 1st and last. Unlike business, where there is room for everyone to win, in sport, there can only be 1 winner, but when we win, there is that feeling of accomplishment that can only come from sport. That's the best recognition and feeling of all.
What has the support been like from the local Coffs Coast community?
I was representing so much of the surfing community, not just the Coffs Coast. And it has been a surprise to see some of the support from people I least expected. There is so much history, for example, I joined Coffs Harbour Christian BoardRiders when I was 13, then Sawtell Boardriders when it started
again when I was about 15. Plus, and for many different reasons, I have also been a member of Woolgoolga, Le-Ba, Newcastle and Merewether BoardRiders clubs. Members from all these clubs showed support along with people from all over the world that I know from both business and surfing.
But the most support has definitely come from Sawtell and Coffs Coast locals. So many people sat up and watched the live broadcast and sent direct messages of support and that is exactly what I needed to stay focused on the goal of bringing home a world title. The support meant way more than I can explain, and I am extremely humbled by the messages that came in. It’s not something that I have ever experienced before and I will be eternally grateful for. Thank you everyone for being awesome. It’s great to be on your team.
Now that you’re a world champion, do you have any other goals or ambitions in surfing? What’s next for you?
Tough question! Over the years, I have given up so much time to give back to the sport, training and coaching the juniors, being president and active member of the clubs, the regional director for Surfing NSW, to name a few. So, for now, I have not set any new goals; in fact, I really want to take some time off and soak it all in and enjoy the recognition of being judged and acknowledged as one of the best surfers in the world.

Hi Gemma. Can you share a bit about your background and your introduction to music?
Music has always been a major part of my life growing up and holds a very important and glueing role in my family. My dad introduced me to all my first loves of music (The Mamas & The Papas, the Beatles, Pink Floyd…) and my mum showed me the span of how different parts of the world can sound. This love cohesively grew as I started taking lessons in piano, cello and drums. In school I played in every band that was accessible to me but found my first true love in songwriting.

How do you think growing up here in Bellingen influenced your path into a music career?

You are both a musician and producer, can you tell us a bit about the kind of projects you’ve been working on lately?
Since graduating with my Bachelor of Production in 2023 I have done a number of projects spanning from hiphop records,
Growing up in Bellingen greatly influenced my path. As soon as I landed here I was playing in string groups that performed in the Opera House and discovering a family-like community of musicians. Although this community has shifted as I have changed courses from instrumentation to production, the deep connection fellow musicians hold to each other is always there and allows connection with people you would never meet otherwise. I would say the biggest influence/tool I have is my background in various genres of music and being pushed in all directions which I only gained by being a kid around Bello.

One of my favourite artists right now is Lexa Gates, she’s a rapper coming up out of New York and I’m just obsessed with her style.
What are some of your biggest influences?
style. I’d love to have a few artists that I work with and grow together with, that’s my main goal.
This question always stumps me because it changes all the time as I’m still finding my own individual sound. At the moment I’ve been revisiting some of my old favourites like Lily Allen, Amy Winehouse, Eminem, Mac Miller and all of their producers. I also love Billie Eilish and her brother/ producer Finneas, I take inspiration from their approach and individuality. I got my love of horns and all things big bands from artists like Cat Empire and I love their infectious energy. I’m all over the place honestly haha. When I’m creating a song I strive to make the listener feel how I feel when I’m making it and I think that’s the main way these artists influence me.
Can you tell us a bit about your process when working on new music, whether it be your own or for another project? My process varies depending on if it’s for me or for another artist. I honestly just hear things in my head and try my hardest to get them down and out before they disappear. Whether that be lyrics or a melody or just a general energy and vibe. This results in a lot of voice memos on my phone which I’m sure any artist can attest to. I do all my initial work out of my home studio and then when I’m in the city I go to studios to record myself or other artists. I’ll usually ask an artist to send me their biggest influences and some of their favourite songs in terms of energy they want to bring as a jumping off point. I much prefer to collaborate back and forth together rather than just sending them a beat and they go from there.
My approach is all about providing personalised service, where I take the time to understand each client’s unique needs, goals, and circumstances.
What would be some of your dream collaborations to work on?
On a close scale I’m really loving the Melbourne hip hop and RnB scene at the moment and have a few artists down there I’m already in the works with. On a larger scale, one of my favourite artists right now is Lexa Gates, she’s a rapper coming up out of New York and I’m just obsessed with her
Where do you see yourself taking your music and production work heading into the future?
Like I said before I’d really love to have a couple of artists I grow with as a producer because I am still green and I love shaping a sound to a person and seeing how that evolves over time as we progress. But I’d also love to make music for film, tv and video games. I love the power music holds in these media genres and I think it could be a great outlet for my more instrumental ideas.

Meet Chontelle Mallie, a proud Kuku Yalanji and Torres Strait Islander woman who calls Coffs Harbour home these days and works as a disability support worker and with young people.
What inspired you to move to Coffs Harbour, and what do you love most about the community?
I’m a Queenslander but I was living in Alice Springs for 2 years before I relocated to Coffs. Besides the spectacular beaches and gorgeous weather, I had a close friend who lived here and our friendship blossomed into a relationship. We’ve been together for 3 years this coming January. I went from being single to being in a relationship with a family, and now having 2 step children, 2 cocker spaniels and a green cheek conure parrot. Coffs is absolute paradise and I love
the connections I have here and the long life friends that I’ve made in such a short period of time.
Can you share a little about your Kuku Yalanji and Torres Strait Islander heritage?
How does your cultural background influence your work and daily life?
I was born and raised in Mackay, Yuwibara country, which has quite a large Aboriginal, Torres Strait Islander and South Sea Islander community. Most of us embraced each others cultures and we grew up in each others houses. Our parents hung out with each other and so did the younger generations. My Kuku Yalanji people are rainforest people. We originate from the Mossman and
Daintree area in Far North QLD. The Daintree is the worlds oldest tropical rainforest. Our Ancestors were resilient, they were survivors. When I’m going through tough times or challenging moments, I remember my Ancestors. If it wasn’t for them, I wouldn’t be here today. They had their role in this journey I’m proud to follow in their footsteps by surviving and keeping the culture and connection alive.
What values or traditions from your culture do you hold closest to your heart?
Our Ancestors are a huge part of my cultures. As a Torres Strait Islander, we have what is called a ‘Tombstone Opening’, which is a Tombstone Unveiling. This is held
work, and what's the most rewarding part of your job?
I actually took on disability support work as a 2nd job. I’ve come to love it so much because it helped me recognise the super qualities, skills, talents and abilities that people with disabilities have. I work with people who may not be able to speak well, but can throw a basketball through a hoop over 50 times without missing. I work with young people who know the ins & outs of movies from my era, music, computing, gaming and so on. These people are super amazing and their ability to contain and memorise information is astounding! Some are super talented artists and others are geniuses and use words that I haven’t even heard before. Just because some people are limited in particular areas, doesn’t mean that they are any less. I feel so lucky to work with such a great group of people who educate me on a daily basis. How do you advocate for inclusivity and accessibility in your community?
I’m a member of the queer community, and I’m happy to wear pride clothing or share info on my socials, not because I need others to know my sexuality, but to let those who may be struggling or don’t feel safe to reveal their true selves, know that I’m here and I accept them. It’s important to me that people know that they are safe with me. Safe from judgment and safe from ridicule, which unfortunately is still a big problem in many communities.
My long term goal is to just be happy, to maintain a work life that fulfils me, challenges me and makes me a be er person. I think it’s important that I continue to encourage people to do what makes them happy too. approximately 1yr after a funeral and is as important as the funeral. This ceremony takes place with family, friends, dance & a massive feast. We mourn at the funeral, but the Tombstone Opening is to celebrate their life. This ceremony takes place at the grave, where the tombstone is first revealed and then the feast and dancing takes place in a hall. A lot of work, planning and preparation goes into it and it’s a huge and important part of the Torres Strait Islander culture.
What drew you to disability support
How do you incorporate your cultural knowledge and perspectives into your work with young people and disability support?
By respect. Respecting the person for who they are and the knowledge, experiences and stories they carry. My culture is built on respect, respecting our Elders, respecting our children, respecting country and respecting
the country that we reside on. I’m grateful to the Gumbaynggirr people and the culture that they willingly share. I believe that respect goes both ways but I first need to show respect to receive respect. When people know that they are seen, heard and respected, it breaks down walls.
What are your long-term career goals, and how do you see yourself making a positive impact?
My long term goal is to just be happy, to maintain a work life that fulfils me, challenges me and makes me a better person. I think it’s important that I continue to encourage people to do what makes them happy too. Life can be tough, and it’s not fun trying to keep up with the Jones’s. I hope the impact that I make is that someone followed their own goals rather than someone else’s goals for them and that they are happy.
Outside of work, what do you enjoy doing in your free time?
I’m an op shop fanatic! I collect vinyls, cassettes, CD’s and vintage Tupperware (my friends will be laughing that I mentioned my beloved Tupperware haha). For some strange reason they make me overly happy. I’m a massive 80’s fan and would go back to the 80’s in a heartbeat if I could. Life was so fun back then & like many people, I have fond memories of that era. Riding around on bikes with friends, catching tadpoles, getting into mischief crawling through drains of estates that were being built, throwing a video into the video player, sitting around watching Monkey Magic after school and writing long letters to my friends after spending all day with them at school haha.
What's something people might not know about you that you'd like to share?
I went to the same high school as Cathy Freeman. She was 2 grades above me and was very close friends with some of my family. I remember Cathy’s brother breaking the high jump record at school. They were such great athletes. They’re also Kuku Yalanji, and so is Jess Mauboy. I’d like to claim that I’m related to Jess, but I’m not haha.

month we get to talk to Tiga, the Manager of Coffs Coast Wildlife Sanctuary, who is doing
Hi Tiga, tell us the latest news since taking over 12 months ago. It’s been an incredible year at the Coffs Coast Wildlife Sanctuary, with immense support from the Coffs Harbour community. Over 50,000 visitors and 2,000 students joined our wildlife care programs. We’ve trained more than 100 marine rescue volunteers, rescued over 100 sea turtles, and assisted in seal, dolphin, whale, and sea bird rescues. We also welcomed the birth of Garlambirla, the 16th Australian Sea Lion pup in our world-leading program. Our Little Blue Penguin colony expanded too, with new chicks, in collaboration with Darling Downs Zoo and SEA LIFE Aquarium Sunshine Coast. We’ve enhanced our conservation efforts and earned a North Coast Tourism Silver Award.
Who are some of the other businesses or people that have helped you since taking over the Sanctuary? Local donations have supported rescues like Nikki the green sea turtle, with crucial help from Woolgoolga Vet Clinic. Businesses like Signarama, Aussie Home Loans, Rotary, Business NSW and Southern Cross Austereo Network have provided financial and in-kind support, along with many other local partners. We also received great promotional help from the Destination Coffs

What changes have you implemented so far? We’ve made key upgrades, installing 40 solar panels with Sunboost Solar and improving our education marquee thanks to Coffs Blinds & Awnings. Our Peckish Penguin café was revamped, and we introduced a popular local merchandise range. New eco-conservation talks, teen programs, and improved facilities are enhancing both education and visitor experiences.
With school holidays coming up, what are some of the events you have on? We’re offering new conservation talks, Animal Carer workshops, and a fascinating insect exhibit. We’re open daily, including Christmas Day, with membership benefits for locals.
What plans do you have that you can share with us about the future of Coffs Coast Wildlife Sanctuary heading into your future? We aim to build a wildlife hospital for expanded rescue efforts, create new exhibits, and collaborate with Eco-Tourism Australia and local partners to establish the Sanctuary as a leading eco-destination. Ma Donovan is a much loved local chef who has two venues here on the Co s Coast; Donovan’s Surfclub Restaurant and Bar, and Donovan’s Link Eatery and Grounds. Ma recently started creating Dinner With e Donovan’s reels on social media, where he showcases what he’s cooking his large family for dinner each Sunday night. ese videos have a racted a huge audience and have had people requesting he start o ering cooking classes for the everyday home cook!
Hi Matt. Can you share a bit about your background as a chef?
It’s hard to believe, but this Christmas period will mark my 37th year working in a commercial kitchen. In 1987, I started washing dishes at night down at the Jetty Strip, earning myself an apprenticeship with Martin Moser at Avanti Restaurant. Once qualified, I moved to Melbourne to pursue what the city restaurants had to offer. I was lucky enough to work under some great chefs at various venues. Upon returning to Coffs Harbour, I worked and ran a few smaller restaurants until we were given the opportunity to open a restaurant at the Coffs Harbour Deep Sea Fishing Club (Ocean Front Brasserie). It was a great experience and very challenging, but became a successful business over an 8-year period. I made some great friends and some lifelong customers who still visit today. For those that don’t know you, can you tell us about your restaurants and what you enjoy most about being a chef?
We operate two venues in Coffs Harbour: Donovan’s Surfclub Restaurant and Bar, located on the top floor of the iconic Coffs
Harbour Surf Life Saving Club, and Donovan’s Link Eatery and Grounds. I’ve been at the Surfclub for 16 years. It’s a beautiful venue with a relaxed atmosphere, friendly staff, fantastic ocean and coastal views, and a place where families can enjoy breakfast and lunch. We also specialise in weddings and functions.
Our second venue, Donovan’s Link Eatery and Grounds, is absolutely beautiful, and the gardens are first-class. We serve premium quality coffee, have our own bakery section with artisan toasties and sweet treats, and offer a great breakfast and lunch menu. We harvest from our own garden beds within the grounds and have a deli section where you can create your own charcuterie board to enjoy in the gardens, which also feature a kids’ playground and loads of wildlife. The Link also has three function rooms available for hire for your next event, and Donovan’s can cater for special occasions or weddings. We open from 8:30
AM, seven days a week, and are located at The Link, Toormina.
The part I enjoy most about being a chef these days is my ability to be more present with the customers and chat with the people I’ve been serving locally for 30 years. Now that I have such a great, supportive team, I can spend more time greeting guests and being on the floor in my restaurants.

You have recently started creating "Dinner with the Donovans" reels. You’ve been cooking professionally for many years, so what’s the idea behind these reels and how did it come about?
"Dinner with the Donovans" is a new addition to our brand. We have a really large family, and on Sunday afternoons, I’ve always cooked for them. To make it easier and more userfriendly, I always cook with my large paella pan to create a one-pan dish. After seeing the influx of cooking gurus on social media, my wife encouraged me to show people how it’s done, especially considering the extravagance

and large scale of our chaotic family dinners. With my youngest son, Joey, as my director (lol), we manage to get the reels out on the same night for those loyal viewers who stay up all night waiting for them! It has developed into something I never thought possible, reaching over 1,000,000 views across my socials (@chefmattdonovan).
What do you think it is about these videos that have captured the interest of so many?
We keep it real. It’s more about a family getting together for dinner. I’m showing how easy it is to throw something together for a large group while having fun. It’s not a task — I’m able to have a beer and enjoy family time. It’s my favourite day of the week.
What has been some of the feedback you’ve received about these clips? Have there been any fan favourites of the meals you’ve shared or any requests?
To be honest, I can’t believe the traction these videos have gained. So many people have given positive feedback, and even the keyboard warriors have had their say! My favourite feedback is when I run into friends of the videos, and they ask me, “What’s for
dinner tonight?” They’ll even throw a request my way. I’ve had people passing through Coffs Harbour drop into the Surfclub and ask if Matt’s around, coming specifically because of "Dinner with the Donovans." It’s crazy how many people these videos reach and entertain. I get so many requests for recipes that we now do a follow-up post with the exact ingredients and tips. We also get requests for cooking classes. I’ve also been approached by local suppliers to collaborate and showcase what our local produce has to offer. I’m always open to working with local businesses. So many people ask “where’s my invite”, which has inclined me to put on a live Dinner @ Donovans, at the Surfclub on the 15th of December, MAKE SURE YOU’RE THERE!
What advice would you give to people cooking for large families or groups?
If you’re lucky enough to have your family or friends over for a meal, the most important thing is that you should be spending time with them, not stuck at the stove. Make it fun and interactive. Follow one of my recipes, open a beverage, and even give me a message if you get stuck.
Do you have any other projects in
the works or ideas for the future of Donovan’s?
We’ve spent a good couple of years really pushing and building our Donovan’s brand. Now, one of my daughters is designing and marketing our merchandise through social media, which has been really popular. It’s sold at the Surfclub but will soon be available online as well. We see a solid future with more operations in the pipeline. We’re lucky to have great staff who are on this journey with us. Our dream is to open a luxury accommodation venue in the area that incorporates our food, service, and brand. Within the next 5 years we hope to integrate this into our wedding packages, as well as offer short stays. Where can we follow along or find out more?

Hi James. Can you share a bit about your background and how you developed a love for cooking?
I grew up here on the Coffs Coast & after travelling around for a few years post high school, returned home with my roots now well and truly locked in here. I’ve been surrounded by cooking & restaurants ever since I was born. Growing up in Emerald Beach, my parents were the local restaurateurs at what was then called Esmeralda’s, my Dad ran things in the kitchen & mum took care of things out the front. I’ve literally been in and around commercial kitchens since I was in the baby bouncer, so needless to say this has meant that cooking, food & hospitality has been a constant & integral part of life since the very beginning. How did you come to be a professional chef? Did you do formal training?
I bounced around a lot as a young guy fresh out of high school, spending my time cooking & travelling around chasing surf & snow, taking kitchen jobs in the snowy mountains, some time in Margaret River & travels overseas. At 21, I found out I was going to become a
dad for this first time & that’s when I settled a bit & decided to go all in on becoming a professional chef. As an apprentice I was super driven to learn as much as I could about both cooking & hospitality in general. I decided to break my training up and work in several kitchens to soak up as much as I could from different chefs & their differing perspectives on cooking. During this time I was fortunate enough to spend time working with some of the local areas best chefs, learning a lot in the process. Straight out of my apprenticeship I was part of the original team that started Old Johns Cafe in town, which at the time exploded onto the local scene and offered something Coffs had never really seen before. Then a few years later I headed up the original kitchen team at The Spare Room, Sawtell which also quickly became a local favourite.
James Ellis is a brilliant local chef who has been part of the original crew at both Old John’s Cafe and The Spare Room, establishing them each as favourites on the food scene here.
James has moved into working as a private chef these days, with his Back Deck Dinners offering everything from intimate private dinners at home to full scale wedding catering.
Can you tell us about the beginnings of Back Deck Dinners? How did the idea come about?
During covid lockdowns & the ensuing downtime at home, I was lucky enough to be living in a place with a big beautiful back deck.

We would have ‘back deck dinner’ nights cooking and sharing food on the deck, just for fun I started an Instagram page, called it back deck dinners and started posting some shots of food I was cooking at home. It didn’t take long before I got a few messages from people asking if I did catering. The gap in the market for this style of private chef personalised catering was obvious. After having just sold a different business & facing a bit of a crossroads with what to do next, the idea of heading down the private chef path vs going back to a full-time kitchen role sounded like something worth pursuing.
So I ran with it & started building a private chef business.
What sort of services do you offer as a private chef?
I know that all events and situations where people might want to hire a private chef are different so I like to run as flexible a service as possible, tailoring options to suit different clients needs. Over the past few years I’ve handled all kinds of events from private intimate dinners for 2, up to full scale wedding services for 130 guests, and everything in between. I’ve put together everything from carefully curated degustation menus, shared banquet style dining events, gourmet grazing tables, canapé finger food offerings for larger events & heaps more. I’ll always start things off by getting a snapshot of what potential clients are looking for then build menu’s & catering options based off the event style, taste bud preferences, dietary restrictions & any other finer details.

How would you describe your food style? Are you inspired or influenced by anything in particular?
It’s always hard to box yourself into particular styles, but I like to have a less is more style of approach to my cooking, utilising quality
ingredients and just treating them with the care & respect they deserve. Keeping things relatively simple and cooking to suit the seasons by not overly complicating things with too many ingredients on the plate. If I had to put my cooking into a category, most of my training & inspiration has come from Italian & Mediterranean style cooking. More recently, I have been super inspired my Japanese cuisine after spending a bit of time there over the past year, and have been diving head first into the huge world of Japanese flavours & cooking styles.
What would you say you enjoy most about your job?
I love my job! Running this business has provided me with so many epic opportunities to do something different. It leaves room for creativity, flexibility & freedom without being confined by the restraints of full-time work & a restaurant menu to follow. But most of all I love the connection that naturally develops with clients, using home kitchen’s & creating memorable moments for special occasions through the simple nature of sharing food. I get such a kick out of providing quality food & service to people that even after the longest of
days at the biggest of catering events, I always leave with a buzz on, full of energy after seeing the reactions of people sharing good food together.
What are some of your favourite types of jobs to do? Do you prefer to cater for small groups or larger events?
Both small and large events offer so many things in different ways, I definitely love catering for large weddings, the energy & vibes that radiate throughout entire venues on a wedding day is hard to match. However, I personally love the intimacy of cooking for small groups at home. 9 times out of 10 these sorts of bookings are for special family occasions & I love creating shared menus & being a part of these special moments by sharing food.
Do you still enjoy cooking outside of work?
I cook every day, I always have & always will. These days I get to share this gift with my son & love the moments we share preparing food in the kitchen at home. If I’m feeling stressed or worked up about anything I’ll just slow down, get the pasta roller out, pour a glass of red, put some background tunes & roll out some fresh pasta to bring myself back to earth.

Hi, we are Dan and Kristy the proud new owners of Muffin Break, Coffs Central. Local family of three beautiful boys we are a small family business that has joined forces with an Australian big brand name. Kristy worked in hospitality whilst studying to be a Registered Nurse, where she then spent 8yrs nursing with NSW Health. Dan joined the Army at the age of 17 and completed a very successful 9 years of service under 3RAR before discharging in 2018 and remaining in Coffs Harbour location to where he met his wife Kristy and they raised a family. We took over the store back in April of 2024 and are excited to be a part of the Muffin
Break family. We loved the brand well before we took over and this would often be our go to whenever we were out and about.
How do you plan to maintain the brand’s reputation and customer loyalty?
Very soon after we took over Muffin Break Coffs Central, we quickly discovered how loyal the community was to our store and brand. We decided as the new owners to do a re-fit of the store a lot sooner than we had been obligated to, and I guess this was our way of giving back to the community and their loyalty. We wanted to make our Muffin Break welcoming and inviting to all clientele. We installed a brand new coffee machine followed by the addition of new chairs and tables for dine in guests. We arranged a full
refurbishment of the store and really put our efforts and passion into this. We wanted to make a fresh space where people would feel welcome and comfortable.
On top of the huge refurbishment, we also strive to maintain product quality. We believe customer satisfaction is number one and this includes all aspects of customer interaction. Whether it’s a purchase, catching up with a friend or saying hello walking by, we want our Muffin Break to be a place that people of any age can visit and enjoy.

Jungle Giants
The Jungle Giants are playing at the Hoey Moey on Saturday the 7th December and we are here for it! We spoke to bass player Andrew Dooris ahead of the show to give us the rundown.
Can you share a bit about your backgrounds and the beginnings of the Jungle Giants?
The Jungle Giants came together about 13 years ago. We all went to school together on the southside of Brisbane at Mansfield State High School. There's a music program and a battle of the bands at the school, which we're really lucky to have been part of, that's an important part of our DNA.
Sam started writing songs, and he was looking for some bandmates to fill out the songs, and that's how we formed. He recruited Cesira and I first. Sam did this spectacular thing that I still am amazed at, where he worked two jobs, saved all this money and wrote all these songs straight out of school. With us helping him to fill out the songs that he'd already written, and with the money he had saved up, we went to go record the songs. We went to this studio called Airlock Studios
in the burbs of Brisbane, that's run by some of the people from Powderfinger. When we recorded that first EP Sam did all the drums on it because he's a drummer as well, and then when we were looking to make the live show, I suggested my best mate Keelan who I'd known since I was seven years old, could be our drummer. And it's been 13 years, and we haven't really looked back, no lineup changes, all still fabulously in love with one another.
Sam was becoming more and more ambitious with his songwriting and his production. So really, it was a conscious choice to just give Sam the reins to do everything.
Are there any specific influences or experiences that inspired your most recent album?
The Jungle Giants can be put down to who we are together in our live show and also to
a general feeling of a really tight group of friends who always just support each other and want the best for each other. So that last record was really Sam's foray into being everything. Given the state of the world at the time, we were in different places, locked out of each other's physical presence. Sam was becoming more and more ambitious with his songwriting and his production. So really, it was a conscious choice to just give Sam the reins to do everything. So it's the first and only Jungle Giants record that I didn't play a single note on, which is a wild thing, and that definitely pushes the boundaries of what people think of as a band. It was Sam's beast, and the best way that we could actually support the record and the production was to let him go wild

with it, which is great. So that really, more than anything, the choice of making it that way, influenced the record. The sounds themselves definitely were influenced by us being more and more enamored with electronic music and dance music. That really lent itself to that style of production, because you have those singular producers who are mostly working with samples and less working with live instrumentation. So yeah, that whole record was an experiment in dance and club, and really pushing the boundaries of what a band actually can be. It was challenging touring that record, for the rest of us to work it into how that would be perceived live, and to do it well live.
We are looking forward to the show here in Coffs Harbour! What can fans expect from your upcoming show here?
That’s one of the best things about playing shows, is that even though we’ve been doing it together for 13 years, every gig that you walk into is a new one.
We're far enough away from the last record now that it doesn't feel as important to just showcase what was on that record. So for this regional tour we've really enjoyed putting some songs from our back catalog back into the set. It's a longer set than we've been able to play for the last year or so, because we've been mostly doing international, overseas stuff, and a lot of festivals. We are a band with four records, so it becomes tough to condense all of that down to a 30 minute performance. These are our own shows, so you'll get the authentic Jungle Giants experience and the best of those four records.
We’re giving people a production that maybe the regional places wouldn't normally be able to get. This time around, we really spent a lot of time on the set and making sure that people are getting the big inner city show, they're not getting the scaled back version.
We've also been loving meeting everyone. For so long, we weren't able to go into the crowd and actually meet the people who are coming to our shows, so it's been really great doing exactly what we used to, going out into the crowd and meeting everyone. So I'm really looking forward to shaking hands with people, and having a beer or a little cuddle, or whatever else!
You’ve had a massive impact on the Australian music scene. What have been some stand out moments or highlights for you guys?
We're very lucky. I think touring internationally is a huge buzz, you dream of doing those kinds of shows. We've toured extensively through the States, and Europe, even things like playing the F1 in Singapore this year was pretty incredible. Outside Lands festival in San Francisco, Mexico City playing at Corona Capital has to be up there. But at the same time, a lot of highlight gigs have been here in Australia, playing Splendour In The Grass to 40,000 people was amazing. That was a really special thing. Headline tours, and even just recently, we played at Hand Picked festival
in South Australia. It was a gorgeous festival. Every time we get to play is a special thing. None of that is lost on us.
I always say that playing the shows is actually the payment for us, not the work. The work is everything that goes into doing the show. The reward is actually the show itself.
What’s it like hitting these regional areas like Coffs after some of the massive festivals and big city shows you’ve played?
Variety is the spice of life! I think we've only played there maybe two or three times in the 13 years that we've been a band. So I'm looking forward to it! I hear the Hoey Moey is great, that the vibe is popping off in Coffs! That's one of the best things about playing shows, is that even though we've been doing it together for 13 years, every gig that you walk into is a new one. Music on every scale is important and good for you.
What’s next for The Jungle Giants? Any new projects or music you’re excited to share with us?
We're probably midway through album number five, which is slated for next year. There's a new song very much brewing. That's in the final stages of mastering and mixing. So without saying too much, that is definitely on the horizon.

Can you provide us with an overview of the Qantas A220 and what sets it apart?

What excites you most about the launch
Can you share a memorable moment from the launch that stands out to you?
There were two things that stood out for me.
The first was seeing the families arrive on the first flight. It is one of the amazing things about working in the aviation industry – you get to see families reunite. It makes the hard work that goes on behind the scenes worth it.

The second was the amazing and unique artwork. As the plane arrived the Indigenous artwork was on show. The A220 we welcomed is part of Qantas-Balarinji Flying Art series and it made the day all the more special.
If you could describe the A220 in three words, what would they be and why?
The three words I would choose are impressive, modern and sustainable.

Seeing the A220 touchdown drove home how impressive it is. The aircraft is state of the art and provides an improved flying experience for passengers. Not only is the passenger experience better, but it is also better for the environment. Approximately 25% fewer CO2 emissions per seat and up to 50% noise footprint reduction compared with previous generation aircraft. This supports the Coffs Coast and its status as a certified ECO Destination.
What are some of the tourism benefits the A220 will support?
With more flights operating between Coffs Harbour and Melbourne, it gives more opportunities for our southern friends to take a short flight and enjoy everything the Coffs

From mid-December until April, we will see Qantas 737s servicing the Sydney route increasing seat numbers over the holidays. I am excited to see the 737s back in Coffs Harbour. And while this additional capacity is only temporary, it will connect family, friends and loved ones, boost tourism, and support local business over the school holidays.

Multi-award winning artist and architect Fiona Bennell has been perfecting her cra since the 1990’s and is also writing and illustrating her first children’s book. Fiona has taught art in creative workshops and was previously running her own successful architectural practice. Focus caught up with the Woolgoolga based artist to chat through her love of creativity.
Hi Fiona. It is such a pleasure to speak with you. Is there anything you cannot do! Firstly your art is indeed dynamic and beautiful and has an uplifting and nostalgic quality to it. Can you tell us a little about your artistic process?
Thanks Sarah, it’s very kind of you but of course, there’s so much I can’t do with my health issues associated with epilepsy. I just do the best I can. I feel my art is guided initially by my mind but often another energy or undercurrent coming into play. Maybe it’s my soul, but sometimes I believe it’s the Holy Spirit at work; as happens with some artists.

When higher forces come into play, it’s not the artist creating the art; we’re just acting as a

I’ve also learnt that it’s not easy for artists to make a living, even when their art is loved and selling well. That’s where doing art classes and selling smaller items like cards and crockery help.

ARTIST of the MONTH
You are extensively educated in the fields of art and architecture. Do you find the two subjects are interlinked? What does one teach you about the other?
Definitely. Architecture is the mother of all arts, but with regulations, client and consultant’s requirements and physical limitations, artistic freedom is very restricted.
Painting on the other hand allows you to go fully into all realms of colour and form; no limitations or controls.
My architectural and urban design background gives me enough knowledge of design to create images of cities from inward visions without relying on information from the outside. The twenty years of architectural design was generally based on 90-degree lines and art gives me an escape from this and paint more freely in the naïve style.
And of course, architecture is all about visual balance and harmony as with any piece of art. I’ve worked on architectural housing and commercial design projects in Sydney and the Mid North Coast, on larger urban design projects for town centres and also a number of
community art projects.
I understand much of your inspiration in your work comes from your deep interest in environmental issues. Why is this an important measure for you in producing contemporary pieces?
We have one earth, and we need to look after it. Through the paintings I seek to reflect environmental issues and show how the world might become if we don’t change. However, I am now becoming more interested in spiritual issues, as shown in the Bible, and how important it is for people to discover the truth about end times, about their having a choice to have eternal life and about the importance of love and family in our society.

Fiona, this month you will be reestablishing a new home art gallery to share your work with the public this Summer. What are your plans for the opening and what will be available for
purchase?
The show is called “Colour Matter 4 Grey Matter” with 50% of profits going to “Epilepsy Action Australia.” The opening will be an exhibition starting on the 14th December, 10:00am-12:30pm. There will be small and large paintings, prints, painted crockery, and other small items suitable for gifts.
What have been some of your highlights throughout your career to date?
My biggest highlight was my winning the ($35,000) Country Energy Art Prize for my piece entitled Silent Protest. The acrylic three-panelled work, which depicts rows of colourful cows looking imploringly at the viewer, beat more than 470 entries from across the State to take home the coveted prize.
Overall judge, artist Suzanne Archer, said my
work had caught her eye as soon as she entered the gallery and stated “I think it is a really beautiful work with pure colours. The cows look as if they’re confronting you with that stubborn look cows so often have.”

Other highlights would be having my artwork be selected for the HSC Exhibition in Sydney as well as winning the Coffs Harbour Portrait Prize, two NSW awards for architectural design, showings at several Regional Galleries, having architectural classes with Harry Seidler and art classes with Lloyd Rees and working as an architect with Phillip Cox.
What do you hope people will learn from owning one of your pieces?
I hope people will appreciate the joy of colour, discovering any dual or hidden messages, and see messages of spiritual hope beyond the environmental and political issues of our time. My art is an outward expression of my inner ‘place’, which stems from my conscious and subconscious mind. I hope people can connect
with that when viewing my work or owning a painting of mine in their home.
Away from art, how do you enjoy spending your down time?
I enjoy spending quality time with my family and friends, reading, and engaging in community work initiatives close to my heart.
What do you love most about living in this beautiful part of the world we call home?
We are so blessed to be able to live amongst clean, fresh air. I also value the sense of community spirit present where I live and the peace and tranquility of nature around me.

an you tell us about your business? I run 2 small businesses on the Coffs Coast. Coffs Coast Cosmedics, I run with my husband Dr Rouan Lerm. Coffs Coast Cosmedics is the Aesthetic Clinic associated with Dr Lerm’s Surgery and has been in business for about 15 years, offering non-surgical Medical Aesthetic treatments to restore and balance ageing and problematic skin.
Blush Make-Up & Beauty Studio I own with my business partner and ‘bestie” Elise Wittman. Blush has been operating in Coffs for nearly 18 years and we’ve owned and operated it for 4 years. Blush is a classic beauty salon providing quality beauty services and products. Our team is talented, warm and friendly.
What’s your favourite part of the work you do? I get to make people feel good about themselves. I call myself a restoration and maintenance expert, with a ‘less is more” approach to aesthetic and anti-ageing treatments. Great outcomes can be achieved using minimal drugs/products and delivered with maximum safety. In a time where aesthetic medication is being overused, I have built Coffs Coast Cosmedics to have a reputation of integrity, ethical practice and safety.
Who is your greatest influence in business? I suppose I should say someone super famous
and successful like Oprah, however honestly my husband Rouan and my business partner Elise are my best influences. Rouan is a GP and is incredibly hardworking, it’s mentally exhausting work yet he manages to look after so many people and still keep a level head and sense of humour, I love and admire him greatly. Elise is a daily inspiration, we have overcome many misfortunes in business over the past 4 years, she has taught me to rise above with dignity, grace and kindness. I’m forever grateful for her determination, resilience and above all friendship. Not to mention such fun to go to work with your bestie everyday. It’s been fabulous! What do you love about living and working on the Coffs Coast? I’ve lived here most of my life and I’ve always thought living here is pretty relaxed and easy. So many natural wonders that are totally free and accessible to everyone, it is a special place. I have all my loving family here and great friends that are always there to lend an ear or shoulder, give a hug or to just give some plain good advice. Thank you all.

What piece of advice would you give women making their way in the business world? Listen to advice given by people in the know. Find other women in the same line of business that are supportive and happy to give some guidance. Elise and I are no strangers to adversity in business, we’ve probably made every mistake in the book, but we keep jumping the hurdles and our business and friendship is stronger as a result.
How can people learn more about your business? We have recently purchased our new little space and moved Blush into its new home in the Max Murray Mall. Can you share the story behind Coopers Surf?
Coopers Surf was started in 1969 by Bob and Wills Cooper. They sold to Jim and Barb Herring in 1993. In September 2004 John and Kim Farlow and I bought off the Herrings.
When I was a grommet about 13 years old Bob and Wils Cooper sponsored me. I was forever hanging around the shop and like most grommets dreamed of either being a pro surfer or owning the local surf shop/s one day. Around November 2003 I had a conversation with Jim Herring about potentially selling and the rest is history.
Coopers Surf is today the longest running independently owned surf retail business in Australia.
How did your personal passion for surfing influence the shops?
1st and foremost I have always been a surfer and passionate about all things surf. Whether
it be our brands, our Coopers team, the talented surfers we sponsor, the Coffs Harbour Boardriders Club we try to have a positive impact and make a positive difference in the surfing community as a whole.
What awards has your shop received, and what do they mean to you and your team?
This is the 2nd time Coopers Surf has won National Multi Door Retailer of the Year. It is a great reward for our teams’ efforts. We have a great group of people and it’s rewarding to see their efforts recognized on a national level. What do you think sets your surf shop apart from others in the area that contributed to your recognition?
Our team, they call it the Coopers family. Some of our team have been with us since they were 14 year old juniors. Some have met their wives/husbands in the business.
It is a great reward for our teams’ e orts. We have a great group of people and it’s rewarding to see their e orts recognized on a national level.
Some have made lifelong friends. It’s pretty cool how everyone buys into it.

What types of products do you specialise in, and how do you select the brands and items you carry?
We have great support from all the leading brands in the surf industry and they in turn have a huge range of products from footwear, swimwear, all things clothing through to

Can you highlight any unique or exclusive products that your shop offers?
We have a lot of great humans in the club and can confidently say if CHBC is not the best run boardriders club in the country it is very close to it.
The team live and breathe all things beach and surf. We pretty much have exclusivity on all the leading brands in the surf industry in our region. Because of our history and loyalty to these brands, how heavily entrenched in our local surf community and the level of support we have always shown our major supply partners, we are one of the last areas in Australia not to have direct competition from our major suppliers. Because of this we have so many unique products from all the best brands in the surf industry.
How has your shop contributed to the local surfing community and culture?
Back in the day Bob and Wils Cooper were great supporters of our local surfing community from team riders, through to the local boardriders club and we have always
tried to carry that legacy on, whether it be sponsoring the next up and coming grommet or local legends like Lee Winkler and Mark Williams. It’s nice to be able to contribute and help keep our surf community evolving.
Do you organize or participate in any local events, surf competitions, or community initiatives?
I am a life member of Coffs Harbour Boardriders Club, current Chairperson and our open representative team coach. We have a lot of great humans in the club and can confidently say if CHBC is not the best run boardriders club in the country it is very close to it.
Generally speaking most surf events that are held in our region Coopers Surf has some sort of involvement.
How do you ensure that customers have a positive experience when they visit your stores?
At the end of the day, when our customers
walk out of our store we want them thinking how helpful and friendly our team are. We don’t want to be one of those pushy retailers trying force a sale on every person for the sake of making a sale. At the end of the day when we sell a wetsuit, surfboard, or whatever it may be to someone, we are likely to see them in the surf or around town and want them to be stoked with their purchase.
What current trends in the surfing industry are you most excited about?
The brands we stock are always coming up with the latest trend or tech products. Whether it be the latest fashion or the latest technology in surfboards we are always one of the 1st in Australia to stock the trends.

Can you tell us about the story behind Love & Kisses? What inspired you to open it? We wanted to have a one-stop shop where customers could find an inexpensive but unusual gift for everyone they care about, in every age group from newborn to ninety. What types of products do you specialise in, and how do you choose what to offer in your shop? Our best sellers are handbags, jewellery, and our huge choice of $15.95 scarves. I love buying scarves and earrings so we have way too many! Blokey things are the hardest to find, but we do have some fun things for men too. And I love our selection of gift books.
Are there any unique or exclusive items that you carry that customers cannot find elsewhere? We have several ranges of unique and quirky earrings from France and from Canada. And a very popular range of small shoulder bags designed by Australian indigenous artists… plus the best prices in town for leather

What current hair trends are you seeing at the moment that excite you the most? The current trends that excite me the most are low maintenance colours. My favourite is a colour we call a lived-in blonde, which is a more natural blonde with a blended root and bright blonde ends to ensure a soft growth and give blondes longevity, meaning you only need to have colour maintenance 2-3 times a year.

The way we avoid this from happening is to explain this in our consultations and make sure the desired result is realistic and achievable for their hair type and hair condition.

We stay up to date with the latest styles and techniques by going to courses and doing online training monthly. There are always new colours and techniques and we love trying them all.

Consultations can be tricky sometimes, but

Conquering Skin Cancer is a new documentary film that explores our complex relationship with the sun here in Australia. e film follows the remarkable stories of some famous Aussies and change-makers as they seek to conquer skin cancer, a preventable disease that impacts two in every three of us. Co s Coast local Julia McCabe was one of those people, she has been able to share the story of her late husband Al in the film, alongside other locals Dr Lois Oliver and melanoma survivor Ray Ommundson.

CONQUERING SKIN CANCER FILM
Hi Julie. Can you tell us a bit about how you came to be involved with the Conquering Skin Cancer film and what it’s all about?
When Mike and Sue approached me about sharing Al’s melanoma story, I knew that Al would be chuffed if he could keep helping people, albeit in a different way. Al’s story is quite a unique one, a little like he was! Who would have thought that melanoma would take him out!!! It has been an honour sharing Al’s story in Conquering Skin Cancer and even if it saves just one life, then it’s absolutely what Al would want.
How has it felt for you sharing the story of your late husband Al? And why did you feel it was important to share your experience through this film?
I love talking about Al and sharing his life. It kind of keeps him present and of course

carrying him everywhere in this handbag is a definite eye opener and conversation starter!! Al had a tiny pink spot on his chest wall that was more annoying than anything, so we thought best to get it looked at. Six years later we could not have imagined the chain of events that little pink spot would bring to our lives.
Can you share with our readers a little bit about Al and his journey with melanoma?
Al’s melanoma journey was quite unique as it was already stage 4 and terminal when it reappeared six years later, after finding that little pink spot on his chest. Al being a very high-level complete quadriplegic, his body did not respond the same as an able body. He was already dealing with so many complications from quadriplegia that to add a terminal diagnosis of melanoma was unthinkable at the time… But, of course it was Al! Courageous, resilient and determined….
Al was a bit of a local legend here in Coffs, what sort of response have you had from friends and family about sharing his story through this film?
After Al was diagnosed with melanoma and choosing no treatment he decided to live everyday as if it were his last. The Doctors said, “Al what would you like to do?”. Al promptly replied, “Get up every day in my
wheelchair and annoy as many people as possible!!” And that’s exactly what he did.

Sadly, Coffs Harbour has recently been identified as a skin cancer hot spot by NSW Health. The expert panel will help the audience better understand that risk and what they can do to live healthy, active, outdoor lifestyles safely in Coffs Harbour. You weren’t the only Coffs Coast local involved in the film. Can you tell us about the others involved and the importance of discussing skin cancer in our local community?
Al was blessed to have great friends and wonderful Doctors!! I know the saying
Lois and Matt Oliver are our family doctors. The rapport they had with Al and all of his unusual quirky ways was wonderful. Being able to discuss any skin change and worry with your local GP is paramount to the end result. Their part in Al’s skin cancer journey and his life through quadriplegia was massive. Our town is extremely lucky that Matt and Lois Oliver chose Coffs Harbour to carry out their life’s passion of practising medicine and helping people.
Ray and Sue Ommundson are incredible people with their own story. Ray came on board to share his skin cancer journey in the hope that others may see his story and know that the shark that took his leg was called melanoma!!!!! Check your skin, be sun safe and never ignore that change!!!

The pressure to create the perfect holiday, financial strain and the absence of loved ones can all contribute to a challenging time for mental health.
Many look forward to Christmas, but it can also be a period of significant stress and emotional turmoil. Expectations to be happy, the financial burden of gift-giving and the potential for family conflicts can all take a toll on one’s mental wellbeing. It’s essential to recognise these challenges and take proactive steps to manage one’s mental health during the festive season. The holiday season can exacerbate existing mental health issues or bring new ones to the surface. Common problems include:
• Financial Stress- The pressure to buy gifts, host parties and travel can lead to financial strain.
• Loneliness- For those who have lost loved ones or are estranged from family, Christmas can be a stark reminder of their absence.
• Family Conflicts- Spending extended time with family can sometimes lead to disagreements and stress.
• High Expectations- The societal pressure to have a “perfect” Christmas can lead to feelings of inadequacy and disappointment.
A few tips that may help:
Set Realistic Expectations: It is important to remember that the perfect Christmas portrayed in movies and advertisements is often unrealistic. Set achievable goals for yourself and your family. Focus on what truly matters to you, whether it is spending quality time with loved ones, enjoying a quiet day, or engaging in a favourite holiday tradition. By setting realistic expectations, you can reduce the pressure and enjoy the season more.
Manage Your Finances: Financial stress is a common issue during the holidays. Create a budget for your holiday spending and stick to it. Consider giving handmade gifts or experiences rather than expensive items. Remember, the value of a gift lies in the thought behind it, not the price tag. If you are having guests, consider asking everyone to contribute to the meal, reducing the financial burden on any one person.
Prioritise Self-Care: During the holiday season’s hustle and bustle, it is crucial to take time for yourself. Engage in activities that you find relaxing and enjoyable, whether it is reading a book, taking a walk, or practising mindfulness. It’s more than prawns and pavlova. e festive season brings families together from near and far.
If you notice signs that an older family member is experiencing the declines of ageing, be observant and take the opportunity to start a conversation.
As the year flies by, it’s easy to miss subtle changes in your loved ones or perhaps when coming together in the festive season after some time apart, you notice signs of decline in an older family member.
While we may want to avoid difficult conversations, waiting until a crisis - such as a fall or confusion over simple tasks - can lead to rushed, emotional decisions that may not be the best for everyone involved.
The festive season presents an opportunity to gently start later-life planning conversations. By addressing potential needs now, future planning becomes a gradual process, and accepting help feels more natural rather than a sudden, overwhelming admission of an inability to cope.
This approach might be the first step to offering your loved one a greater sense of control over their future. Control helps them maintain independence, feel valued, and alleviate some of the daily challenges they
may face. It can also reduce pressure on the whole family.

This groundbreaking initiative, championed by Prime Minister Anthony Albanese, addresses mounting concerns about social media’s impact on youth mental health and wellbeing, establishing Australia as a pioneer in digital safeguarding.
A Comprehensive Framework. The cornerstone of this legislation mandates that major social media platforms - including Facebook, Instagram, TikTok and X - implement robust age verification systems and actively prevent access by under-16s. This represents one of the most far-reaching attempts globally to regulate youth social media access. Implementation will be overseen by the eSafety Commissioner, with platforms granted a 12-month window to achieve compliance following the legislation’s enactment.
The Case for Restriction. The policy’s primary merit lies in its proactive stance towards protecting young people from the welldocumented adverse effects of social media exposure. Research has consistently demonstrated strong correlations between early social media usage and concerning outcomes: elevated rates of anxiety and depression, increased instances of cyberbullying, and diminished self-esteem among young people. Conclusion. Despite implementation challenges, Australia’s bold initiative to protect young people from premature social media exposure represents a necessary response to escalating digital risks. Success hinges upon collaboration between government bodies, technology companies and families, supported by robust assistance programmes for affected youth. Whilst some experts question blanket bans—citing concerns from parental rights to entrepreneurial opportunities—the potential benefits of delayed social media exposure warrant protective measures, provided they’re accompanied by comprehensive support mechanisms.
As this policy unfolds, its effectiveness will likely influence similar initiatives globally, potentially reshaping approaches to youth social media access in the digital age. Nurse Unit Manager of the Coffs Harbour
Acute Mental Health Unit Jessica McEvoy has been recognised as the Southern Cross University Young Alumnus of the Year.
Jessica McEvoy’s voice radiates compassionate care. Quietly spoken in a way that makes space for others to be heard, understood and supported. She is dedicated to her staff’s growth, effective workplace change and to enhancing care for patients with mental illness.
However, beneath her unassuming demeanour is a passionate drive to help usher in the bright future of mental health care — one where prevention, early intervention and care that understands the patient’s journey are common practices.
After completing a Bachelor of Nursing in
2012 at Southern Cross University’s Coffs Harbour campus, Jessica began her career at Coffs Harbour Health Campus as a graduate nurse. While she started in medical and surgical nursing, she soon found a deep connection with mental health care.
“I liked the focus on really connecting with patients and understanding their journey,” Jessica says. “And I recognised how much mental health care can progress. It looked like an exciting future to me.”
Quickly becoming known for delivering highquality patient care, Jessica took on the role of Nurse Unit Manager Level 1 in 2017. Over the following two years she completed an NSW
Health Clinical Leadership program during which she found her passion for change management, implementing a project called Making the Statistics Falls which reduced falls by 70 per cent in the unit and was a finalist for the MNCLHD Innovation Awards in 2021.
It was then Jessica saw what a difference she could make not just to individual patients, but to many — now and in the future — through effective leadership.
“Mental health care is going to look very different in 35 years, I want to say I’ve been a part of that positive change.”
“It was really exciting to me to see that you
can make change through engaging with and empowering staff and that this change can remain embedded if everyone understands what you’re doing and is able to embrace it,” Jessica says. “We have so many staff doing amazing things every day and to help support them to make positive change in mental health care is so rewarding.”
In 2021, Jessica became Nurse Unit Manger Level 3 and continued to inspire her vision of providing a trauma-informed, recoveryorientated and patient-centred service. She also began her Masters of Health Care Leadership with Southern Cross University, which she recently completed.
“It was nerve-racking going back to study at
first,” Jessica admits, “but SCU helped me re-

In 2022 Jessica was recognised as the Southern Cross University Coffs Coast Women's Day scholarship recipient, presenting a speech on the importance of education and the power of knowledge as a woman to lead change. Her dedication to her studies has now influenced other staff to undertake postgraduate studies, giving them the confidence that they too can excel.
“I will always support my staff to embrace future studies,” Jessica says. “I think it gives you such a diverse and beneficial view of what’s happening in the world, in terms of health and society in general.”
Jessica is currently the Nurse Unit Manager of the Coffs Harbour Acute Mental Health Unit, a proud 2024 Australian College of Nursing Bullwinkel Scholar and is completing her Bachelor of Innovation with Honours and a Masters of Mental Health Nursing with Southern Cross University — all while continuing to inspire her staff and helping redefine how mental health care is delivered. The focus of her studies is to reduce and, where possible, eliminate seclusion and restraint practices, providing more compassionate and innovative care to patients.
At just 33, what Jessica has achieved in her field is astounding — and the future is bright for both her and the industry she will continue to help lead. Ever-humble, however, she is quick to highlight the incredible support she has had along the way.
“I’ve had so many amazing role models in the Mid North Coast Local Health District that have really enabled my growth, and I wouldn’t be where I am today without them,” Jessica says. “For someone to excel in leadership they need people in higher leadership positions to support them, and that’s what I’ve had.”

Lisa Baxter, a WIRES volunteer and owner of Maggie’s Pet Co., is on a mission to educate the Co s Coast community about the incredible flying foxes and microbats in our region and how we can help conserve them. Flying foxes are o en misunderstood, but Lisa is here to shed light on their intelligence, beauty and the essential role they play in our ecosystem. Here’s what she shared with us:
Hi Lisa, what types or species of bats are around the area?
Coffs Coast is home to a variety of bat species, both large flying foxes and smaller microbats. The two most common flying foxes in our area are the Grey-headed and Black flying foxes. Grey-headed flying foxes are a threatened species, meaning they are particularly vulnerable and need our protection. While flying foxes tend to get most of the attention due to their size, the region is also home to a diverse range of microbats, with over 20 species found across New South Wales alone. Microbats are much smaller than flying foxes and often go unnoticed, yet they are equally important to our environment, helping to control insect populations, especially mosquitoes. Is this a time that bats are breeding?
Yes, we are currently in the midst of the breeding season for flying foxes, which generally begins in early spring and extends into summer. This is when pups are born and become highly
dependent on their mothers.
How many babies or “pups” do bats usually have?
Flying foxes typically have only one baby per year. This single pup is given all the mother’s energy and attention. The bond between a mother and her pup is incredibly strong; flying foxes have a well-developed sense of emotional intelligence, they are great mothers.
How long do babies stay with their mother?
Pups stay with their mothers for around 5 months, during which they are completely reliant on her for survival. For the first few weeks, the mother carries the pup everywhere she goes, even while flying to find food. As they grow, the mothers begin leaving them in the camp during foraging trips, but they always return to care for and nurse them. When pups reach about five months old, they start to learn to fly and forage independently.
What trees do bats like?
Pups are kept in a warm, safe environment, we wrap them in what we call mummy rolls and they have a dummy when they are young to simulate the comfort they’d feel from their mother.
Flying foxes are drawn to trees that are nectarrich, pollen-rich, and fruiting. Eucalyptus, fig and paperbark trees are favourites. Flying foxes play a vital role in spreading seeds and pollinating these trees, sustaining our forests and helping maintain the ecological balance, they are a keystone species. By conserving flying foxes you also give threatened species, like the koala, a better chance of survival.
Tell us about the babies that have been found on the ground and not with their mothers and what we can do to help.
During pup season, pups may become separated from their mothers for several reasons. It’s extremely important to note that a bat alone is never ok and please always call your local wildlife rescue as soon as possible, please do not wait to see if it flies away that night. It’s essential not to touch or try to handle any bat directly, as they are sensitive, may be injured and are often scared. Instead, keep pets and people away to minimise stress on the bat and contact WIRES or your local wildlife rescue organisation right away. Wildlife rescuers are trained to handle & care for these animals.
How do you care for a pup?
The pups stay with carers until they are around 6 months old, they start off in our homes, in incubators then go into small outdoor aviaries then into a big flight cage where they learn to be bats and practice flying. The day we release the pups of the year is absolutely the best part. Caring for a bat pups is an absolute privilege, they are beautiful animals. WIRES volunteers are trained to bottlefeed pups with a special milk formula designed to mimic their mother’s milk, ensuring they get the nutrition they need. Pups are kept in a warm, safe environment, we wrap them in what we call mummy rolls and they have a dummy when they are young to simulate the comfort they’d feel from their mother. Caring for these animals is incredibly rewarding, as flying foxes are highly intelligent and social. They can recognise their caregivers and even show affection, making them fascinating animals to work with. Who should we ring if we find a deserted pup?
If you encounter a bat pup or any bat in distress, please call WIRES on 1300 094 737 or your local wildlife rescue organisation. These trained experts know exactly how to handle bats safely and will ensure the animal gets the care it needs.
Flying foxes, while beautiful and intelligent, please do not handle them, it’s crucial to let professionals handle them to protect both the bat and yourself.
Any more advice that you would like to offer?
If you live near bat camps, especially during breeding season, try to limit loud noise and disturbances as much as possible. Flying foxes are sensitive and can be easily frightened by sudden noises or lights, which might cause them to flee, leaving pups vulnerable. Another thing to keep in mind is to avoid barbed wire fencing and netting in gardens or fruit trees, as not only bats but all wildlife can become entangled and injured, if you do use netting, please ensure it is wildlife friendly and that it is firmly fitted. Remember a bat alone is never ok, get it help asap.
Lisa concludes, “Flying foxes are often misunderstood, but they’re incredibly intelligent and emotionally aware animals. Caring for them is truly a privilege, and we all have a role to play in protecting these incredible creatures.” By learning more and taking simple steps to coexist peacefully, we can help preserve these essential and often misunderstood animals for future generations. IT’S TIME TO SEND OUR COMMUNITY INDEPENDENT TO PARLIAMENT
This coming election, we have an exciting opportunity. The electorate of Cowper will decide if this incredible region becomes the next in a series of rural and regional communities that have bucked the centurylong trend of Nationals strongholds in regional areas.
After being completely taken for granted as 'safe seats' for decades, community after community across regional Australia have used their vote to bring about what Russell Crowe described as "The rise of Independents" here in Australia - the wave of support behind community backed, and community focused, Independent candidates. As you may know, Cowper’s Independent candidate, Caz Heise, contested the last election and made history by turning this seat into the most marginal Nationals seat in the country. We’re now the closest community to securing independent representation of any current party-held seat.
I’d like to share some of my own experience with you in the hope that it might inspire you - particularly those of you feeling disengaged or checked out from politics - to see the real change that’s possible with an independent MP. Change begins when we, as a community, decide it’s time.
I've lived in over a dozen different electorates across our three east coast states, from the major cities to small townships of only a
couple hundred people. I served in the Army, I've worked hospo and I've volunteered a lot of time in community development and food security, amongst other things - I've felt the towns I've lived in at the street level and I've met and talked with all kinds. The difference between the places I've lived has been vast but nowhere was a community as involved, as listened to, and as well supported as in the areas that had independent representation in parliament. By a long shot. Community Independents have delivered real outcomes for their towns and cities through grants and funding and they have become the standard bearers for accountability in Canberra. It was a Community Independent that gave us the federal anti-corruption commission and it is Community Independents fighting to end 'Pork Barrelling' now. They fight for transparency, for accountability and for what their electorate and their constituents want and need. And they do so free from the demands of donors, factions, or the ‘party line’.
I have met Caz Heise on several occasions and spoken with her about issues affecting veterans, young people and the state of our healthcare system - an area she knows intimately as a nurse and healthcare administrator - I am deeply encouraged by
her passion, her open mind and her practical determination to bring the voices of this community into the parliament in Canberra. So for those who can see we need change, and especially to those who feel politics is irredeemable, that it’s broken beyond repair no matter who is in charge, I hear you. I’ve felt the same. Optimism in hard times is difficult. But I’ve also had the lived experience of seeing the difference that independent MPs make both locally and to the national conversation.
Early 2025, when it's already polls time again, I strongly encourage you to take an hour to look up who's running, reflect on the needs of our towns, our people and if the voices here are currently being heard and respected in Canberra and take that moment to consider voting independently.

Recycling and reusing is important to us and we make every e ort to separate all waste goods into metals, plastics, Styrofoam, cardboard, etc and either sell what we can or donate it to companies that can re-purpose it, as well de-gassing all removed air conditioners.
Faircloth & Reynolds has recently installed more than 100kW of solar panels on our Coffs Harbour factory and head office. This array now generates 70% of the energy used in our head office and factory.
We also work hard on reducing power use – for example, the new laser cutter pictured uses much less power than an equivalent plasma cutter.

THE 2025 PROPERTY MARKET & INTEREST RATES
024 is coming to a close and the 2025 year is just around the corner, it’s been another roller coaster of a year!
As reported in my previous articles the Coffs Coast property market as well as the overall Australian property market has been extremely resilient in 2024 despite 13 interest rate rises since May 2022. How will the Australian property market hold up and when will we get some interest rate relief in 2025? Well, I wish I had the proverbial crystal ball to help answer that question, however, I can share some latest insights on this.
Interest Rates and Forecasts for 2025
These 13 interest rate rises were driven in part to reverse the extremely low interest rates provided to support the economy through and post COVID. However the post COVID economic recovery has been so strong that interest rates pushed higher than pre COVID levels to try and slow the economy and contain inflation. Did we go too low too fast and were we too slow to start rising interest rates? Well, I’ll leave that to the economic and political commentators to debate, but I would note that its extremely difficult to get the balance right at the time and is always a lot easier to evaluate and judge after the event with the benefit of hindsight.
Rising interest rates have benefited those with invested funds linked to interest rates and punished borrowers and mortgage holders and we are all struggling with the increased
cost of living caused by inflation post COVID. 2024 has been a very difficult year for most people.
Despite the relatively high level of interest rates, I believe our property market resilience has been underpinned by strong demand levels from population growth but the bigger factor at play which is often ignored or overlooked is actually the extremely low levels of property supply on the market for sale as well as the lowest construction activity levels we have seen in decades.
The Latest RBA Meeting Minutes
Monetary policy meeting minutes reveal interest rates are likely to remain on hold for some time.
The RBA board decided to keep official interest rates on hold at 4.35% at their latest meeting and the minutes revealed there was no consideration as to increasing or decreasing rates at this time.
The minutes discussed scenarios in which their current forecasts may be incorrect and may necessitate a different monetary policy stance. These included: forecasts of consumption, the path of their labour force forecasts, estimates of the supply capacity throughout the economy, inflation forecasts being materially different, broader international risks, or finally, if monetary policy turns out to not be as restrictive as the RBA had judged. The minutes also reiterated that because of government policies such as energy rebates, the RBA is focusing more closely on underlying inflation than headline inflation and they don’t expect
inflation to be sustainably within the target range until 2026. The minutes noted that if inflation is weaker than expected they would need to see more than just one good quarterly inflation outcome to be confident that such a decline was sustainable.
The RBA commentary points to interest rates remaining on hold for a longer period of time.

All of our major banks forecast that we will receive interest rate relief in 2025 as below:
Conclusion
It seems that the RBA is taking a cautious approach and making no promises on future interest rate levels at this stage and rightly so in my opinion due to the significant uncertainties regarding the world and Australian economies.
Our 4 major banks all forecast that we will indeed receive some interest rate relief next year and if so, I believe this will be a positive factor to help underpin another strong year for the Australian and Coffs Coast property market. We will shortly find out!
