La composizione del dipinto veronese ha carattere monumentale. Le masse delle figure riempiono e comprimono energicamente lo spazio, stabilendo tuttavia, attraverso un disegno senza incertezze, una scala spaziale precisamente leggibile di precedenze e profondità. Le figure costruite su modelli classici (San Giuseppe come un ritratto di sapiente ellenistico, quale il Lisia del Museo di Napoli; il bambino come un piccolo Eros o Dioniso) e la luce fredda e senza tempo creano un‘immagine di dignità nobile, austera e malinconica. Emergono invece col tempo dubbi sulla cronologia del dipinto, consolidata come tarda, intorno al 1500, o relegata alla fine della vita dell‘artista, in un generale quanto sbrigativo consenso.

Il distacco emotivo dei volti femminili è ancora quello di Piero della Francesca, gravido di silenzio sacro, anche se chiaramente rievocato dal passato dei ricordi. E mentre gli sguardi del gruppo centrale convergono appunto al centro, quello del bambino sulla Vergine e quello della Vergine abbassato e concetrato su di sé prima ancora che su un ipotetico fedele al centro in basso, i due santi guardano fuori lateralmente, con uguale angolazione, creando un anfiteatro virtuale di osservatori. Anche quanto si vede dello sfondo neutro e scuro è del tutto coerente con la severa impostazione dell‘immagine. La composizione esula quindi, pur senza parere, dagli schemi più rigidamente scontati e tradizionali.

The composition of this picture from Verona is monumental. The figures involved are compressed energetically into a fully filled space while keeping a perfectly legible sense of precedence and depth through confident delineation by the artist.

They are drawn in a classical mode (Saint Joseph resembles a Hellenistic sage, such as the Lisia in Naples Museum; the child is like a little Eros or Dionysius) and the cold light and timelessness create an image of noble dignity, austerity and melancholy. The painting’s chronology was long in doubt, but it is now generally thought to be a late work, round about 1500, or even at the end of the artist’s life.

The emotional detachment of the female faces is still the same as employed by Piero della Francesca, pregnant with sacred silence, even if clearly involved with memories of the past. And while the gaze of the central pair converges on the centre of the picture, the child looking at the Virgin and the Virgin looking down at herself before glimpsing a hypothetical believer below her in the centre of the picture, the two saints look laterally outwards at the same angle of gaze, conjuring up a virtual amphitheatre of onlookers. The dark and neutral background, too, is completely coherent with the severe structure of the composition. This is, therefore, something different to the more traditional and predictable depictions of this subject.

E

ssere ottimisti oggi: ci viene suggerito da tutte le parti, ivi inclusi, naturalmente, i direttori dei giornali, sempre alla ricerca – è una novità rispetto al passato – di buone notizie per le loro pagine, per non deprimere ulteriormente il lettore che di motivi di depressione ne ha già abbastanza.

E adesso, che è la fine dell’anno, e non senza ansia si tenta di gettare un’occhiata in avanti per vedere cosa ci porteranno i mesi, davvero si vorrebbe poter essere un poco ottimisti. È realmente piatto l’encefalogramma? Ci sono segnali che lo smentiscono: quei turisti, per esempio, che continuano ad affollare le nostre città; quei tir che incessantemente, spesso in un’unica colonna, percorrono, in entrambe le direzioni, le strade che collegano con l’estero; il mercato del lavoro agricolo che continua a essere positivo; le nostre buone cose – vestiti, oggetti, cibo – che all’estero ancora, e da anni, fanno fortuna.

E poi i giovani, la stragrande maggioranza dei giovani, non sono né choosy né schizzinosi, come il ministro ha ipotizzato. Non intorpiditi dal benessere o dal malessere, brigano, inventano, hanno idee. A questo proposito a me viene in mente una breve, indimenticabile scenetta vista sul palco del Teatro Filarmonico di Verona lo scorso 29 settembre al Premio Masi. Giovanni Battistoni, il giovanissimo direttore d’orchestra, assieme a tre amici musicanti, vi ha improvvisato un’irresistibile opera buffa suonata, cantata e parlata, non più lunga di dieci minuti, che ha incantato la folta (e fortunata) platea. Ricordo il commento di Gian Antonio Stella, grande escavatore di magagne italiane che, perciò, non pecca certo di ottimismo: “Per favore, facciamo largo”.

VENETIAN REGIONS ILLUMINATE THE HORIZON

e optimistic: this is the suggestion that arrives from every quarter, here as well of course. Newspaper editors are now always on the lookout – and this is a novelty compared to the past - for good news for their pages, so as not to depress their readers any further. After all, they’ve already got enough to be depressed about. And now it is the end of the year and we are trying to peer ahead into the future to see what the coming months will bring, a little bit of optimism is sorely needed.

Is the brain scanner really lifeless? There are some contrary signs: all those tourists, for example, who continue to crowd our cities; all those lorries that travel in both directions, often in single file, in the roads that link us to the outside world; the market for agricultural goods that continues to be dynamic; our wonderful products – clothes, goods and food – that still make us rich abroad, and have done for years.

And then young people, the vast majority of young people, are neither picky nor faddy, as the government suggests. They’re not rendered inert by too much or too little in their lives; they jockey for position, invent things and have ideas. Speaking of which reminds me of an unforgettable moment on the stage of the Teatro Filarmonico in Verona on 29th September this year at the Masi Prize when Giovanni Battistoni, the extremely youthful orchestral conductor, improvised an irresistible comic work of sound, song and speech with three musical friends that lasted no longer than ten minutes and delighted the packed (and fortunate) audience. I remember the comment from the great illuminator of Italian vice, Gian Antonio Stella, whose cardinal virtue is certainly not optimism: “Per favore, facciamo largo” – “Please, let’s make way for them”.

Il Premio Masi da oltre trent’anni rappresenta una doppia testimonianza: da un lato indica quale sia il contributo delle Venezie alla cultura, alla solidarietà e all’arte, a livello nazionale ma anche a raggio più ampio. Dall’altro, il Premio accende uno spot sui personaggi della scena internazionale, sottolineando il loro ruolo decisivo nei cambiamenti che, prima e dopo la caduta del Muro di Berlino, hanno ribaltato l’orizzonte di riferimento per tutti. Da mons. Luigi Mazzuccato, che è in prima linea con i medici del Cuamm in Africa, ad Hans-Dietrich Genscher, in prima linea nell’unificazione della Germania e nell’abolizione della Cortina di Ferro, il Premio aiuta a comprendere quanto stiano cambiando i parametri della nostra vita sul vecchio pianeta Terra.

A questa filosofia resta fedele l’edizione 2012 del Premio, che ha richiamato l’attenzione su temi decisivi: l’amore per la verità che Gian Antonio Stella testimonia quotidianamente nel suo lavoro di cronista; oppure la tutela dell’ambiente, che significa rispettare l’identità dell’uomo, come ribadisce la vita della straordinaria Kuki Gallmann da 40 anni in Africa; o ancora la capacità di “sentire” la Patria al di là dei confini nazionali usuali, anche se magari è proprio la Patria ad averti dimenticato, come insegna Giovanni Radossi.

In tempi in cui la comunicazione rischia di essere piatta e superficiale, di travolgere senza coinvolgere, il Premio lancia un messaggio di profondità e di valori. Non è poco nel Villaggio Globale del Terzo Millennio, che è ricco di notizie ma povero di informazioni vere.

For more than thirty years, the Masi Prize has had a dual function: on the one hand it has identified the contribution that the Venetian regions have made to culture, social progress and art, both at a national level and beyond. And on the other hand, the Prize has shone a spotlight on international personalities, whose work in the period before and after the fall of the Berlin Wall, has been fundamentally important in changing the points of reference for all of us. From Mons. Luigi Mazzuccato, in the front line with the Cuamm doctors in Africa, to Hans-Dietrich Genscher, in the forefront of the struggle to reunite Germany after the lifting of the Iron Curtain, the Prize helps us to understand how much the parameters of our life on old planet Earth are changing.

The 2012 edition of the Prize remains faithful to the same philosophy, and sheds its light on important themes: the love for truth shown daily by Gian Antonio Stella’s work as an investigative writer; or the care for the environment, which means respecting the identity of man, as shown in Kuki Gallmann’s extraordinary 40-year sojourn in Africa; or the ability to feel the call of the homeland from beyond the usual national confines, even if it’s the Homeland really that has forgotten you, as Giovanni Radossi tells us.

In a time when communication risks being banal and superficial, overwhelming rather than involving, the Prize broadcasts a profound message about real values.

This is no mean achievement in the Global Village of the Third Millennium, which is full of news but deprived of real information.

Giovanni Radossi: “La Patria non deve dimenticare questa terra” Giovanni Radossi: “The motherland must not forget this area” « Io ricordo sempre che l’equilibrio dell’Istria si regge sulla formula dell’acqua: due parti di idrogeno, i croati e gli sloveni, e una parte di ossigeno, noi italiani; e senza la “O” non è che ci sia meno acqua, ma l’acqua proprio non c’è ». Con questa metafora Giovanni Radossi, 76 anni, il “Guardiano dell’Istria”, premiato con il Masi per la Civiltà Veneta, illustra efficacemente la sua idea di convivenza fra le diverse etnie nella “Soglia della Serenissima”: « A chi pensa che la nostra presenza qui sia l’eredità degli ultimi, infausti periodi della storia, replichiamo che in Istria l’Italia c’è da sempre. Croati e sloveni sono quello che sono anche grazie al nostro retaggio: proprio come l’ossigeno che unito all’idrogeno dà origine all’acqua ».

Nonostante gli anni, le vicissitudini subite, la facilità di commuoversi, Radossi è tenace e solido come le querce che nella sua terra resistono al tempo e agli elementi.

Con il suo “Centro di Ricerche Storiche di Rovigno” ha difeso per tutta la vita non delle anacronistiche pretese irredentiste, ma il diritto di una comunità a vedere tutelata la propria identità, a preservare le proprie radici e la propria autonomia nella pacifica integrazione con le altre etnie. Era una comunità fiorente, che – come mostrano le mappe di inizio Novecento – era insediata soprattutto nelle città, e quindi nelle zone più ricche e popolose, 14

This is the metaphor that 76-year-old Giovanni Radossi, the “Guardiano dell’Istria” and winner of the Masi Civiltà Veneta Prize, uses to illustrate his idea of the shared heritage of the different ethnic groups who live on the “Threshold of the Serenissima”: «To those who say that we are here thanks to a particularly unedifying episode in history we reply that Istria has always been part of Italy. The Croats and the Slovenes live peaceably here thanks to us too: we are the oxygen that combines with hydrogen to make water».

Despite his age, and all he’s lived through, and the ease with which emotions overcome him, Radossi is as strong and solid as an oak planted to outface the weather and the elements in his land. He and his “Centro di Ricerche Storiche di Rovigno” have tried all their lives not to defend an illusory and anachronistic irredentism, but the right of a community to see its identity upheld and to preserve its roots and independence in peaceful integration with other ethnic groups. Ma Radossi non si limita ad un appello ai sentimenti: se il Centro di Ricerche ogni anno ospita un migliaio di studenti e 800 giovani ricercatori internazionali, la sua ultima proposta è la creazione di un’Agenzia per l’immigrazione che promuova queste idee sul campo, illustrando come si vive in Istria, quali opportunità di lavoro e di investimento vi siano, e come si fa a venirci ad abitare. Non per favorire un esodo al contrario, ma radicare ancor più una presenza veneta e italiana che qui è come una pianta autoctona.

What Radossi asks us, his co-nationals, to do most of all is to look at Istria in a different way, in the same way as we would look at a part of our homeland: «I would like you to come to Istria not just to have a beach holiday – he says – but to get to know it and appreciate it better, its nature, its art and its history. Instead of coming here and falling in love with the place and taking our young women back to Italy, I’d like you to stay and live with us here: yes, we’re in crisis, too, but there are opportunities here as well».

Radossi doesn’t limit himself to words either. His Centro di Ricerche hosts a thousand students and 800 young international researchers every year, and his latest proposal is for an immigration agency to promote the idea in the field, explaining how one lives in Istria, what work is available, what financial support can be found, and how to come and live there. Not to start any kind of exodus, but on the contrary, to root the native plant that is a Venetian and Italian presence in the are even more firmly in the soil.

L’intervista più divertente?

Quella a Giovanni Leone. L’ex presidente della Repubblica era già anziano. Mi accolse con un cardigan color panna che gli arrivava alle ginocchia. Mi mise in mano dei fogli spiegandomi in napoletano: “Aggio faticato pure per lei”. Era l’intervista già pronta: aveva scritto domande e risposte.

Naturalmente la mise da parte.

Certo. Iniziammo a chiacchierare. Dopo mezz’ora finalmente si accorse che il registratore era acceso.

Si infuriò. Chiamò al telefono un certo Gaetano: “Mi hanno mandato un fetentone”. Mi passò il telefono.

Era Afeltra: “Tranquillo, poi gli passa”. Uscii, andai a cena. Non c’era copertura del telefonino. Quando lo riaccesi trovai sette, dico sette, messaggi in segreteria: “Stella, sono Leone… facimmo ‘a pace”.

La tradizione vuole che il baccalà si accompagni con i robusti vini rossi veneti o friulani, compreso quel delizioso “Tocài” che una recente sentenza internazionale ha privato del nome, in omaggio ad uno storico vino ungherese. L’ideale sarebbe accompagnarlo anche con la lettura delle ottave del maestro Plet, magari la ricetta di un baccalà en croute che doveva essere una meraviglia, con burro, funghetti, sardelle salate, pignoli e cedrini: un trionfo dei sapori dolce-forti tanto cari al mondo veneziano.

The recipe for “baccalà mantecato” involves the reconstituted fish flakes being further crushed in a mortar and pestle after their energetic initial beating together with garlic and olive oil, thus making a type of fish-paste without needing to add any milk or cream, in the same way as the French make “brandade de morue”, which is what some of our less rigidly conformist cooks like to do too. The recipe for “baccalà alla vicentina” is more elaborate, involving the addition of spices and parmesan cheese. The “mantecato” version is eaten cold, spread on lightly grilled slices of polenta as an antipasto, while the “vicentina” version is usually made into a rich dish in its own right, again served with grilled polenta, or even better, with polenta straight from the pan sliced with a cord, as we prefer it in the Veneto.

Tradition dictates that baccalà should be eaten with a strong red wine from the Veneto or Friuli, including the delicious local Tocai that has recently had its name taken away in favour of the eponymous historic wine from Hungary. Ideally it should also be accompanied by a reading from maestro Plet’s octaves. The ultimate would be “baccalà en croute”, which must be a real wonder, with mushrooms, salted sardines, pine-nuts and verbena: a triumph of the sweet-and-sour dishes beloved in the Venetian world.

Lasciare raffreddare per bene una notte, passare nel pane grattugiato e friggere in padella da ambo i lati, facendo attenzione ad eliminare attorno la polentina le briciole di pane. Asciugare con carta assorbente. Deve risultare molto croccante ai lati e morbida al centro.

Per il baccalà mantecato: 600 g di baccalà ammollato, 180 g di olio di semi di vinacciolo, 68 g di olio extravergine di oliva, 45 g di acqua di cottura del baccalà, 13 g di olio all’aglio, 9 g di sale, 2 g di zucchero, 2 g di salsa di soia, ½ spicchio di aglio.

Preparazione: Porre il baccalà ammollato in un doppio sacchetto per cottura con lo spicchio di aglio, il sale e un bicchiere d’acqua. Cuocerlo immerso in acqua a 95°C per 2 ore e mezza circa. Scolarlo conservando il liquido di cottura. Montare il baccalà con la foglia incorporando gli oli a filo. Unire lo zucchero, la salsa di soia, l’aglio e il sale ed emulsionare con l’acqua di cottura. Dovrà risultare una crema spumosa. Unire un pizzico di anice stellato, una macinata di pepe nero di Sarawak e poca misticanza erbacea.

Per la misticanza erbacea: tritare al coltello acetosella, rucola, poco radicchio di Chioggia, pochissime uvette di Zibibbo senza i semi. Mescolare bene.

Montaggio: cospargere su un coccio fondo freddo 3 cucchiaini abbondante di misticanza erbacea, porre un disco da 5 cm di diametro alto 1 cm circa di baccalà mantecato caldo, coprire con il disco di polentina di grano appena fritta. Servire subito suggerendo di degustare con il cucchiaio assaporando i 3 strati assieme.

For 4 people Ingredients for the whole wheat flour polenta: ½ l water, 30 g flour, 20 g whole wheat flour, salt, sugar, to taste, black pepper from Sarawak, to taste, a pinch of powdered star anise, a little light oil.

Preparation: Make the polenta, cook it well and press it out in rounds using 5 cm diameter / 1 cm high oiled stainless steel rings. Leave to cool overnight before dusting with breadcrumbs and frying on both sides. Brush off any surplus breadcrumbs and dry off any surplus oil on kitchen towel. The resulting polenta discs should be crunchy on the outside and soft in the centre.

For the creamed baccalà: 600 g reconstituted baccalà, 180 g grape seed oil, 68 g extra-virgin olive oil, 45 g cooking water for the baccalà, 13 g garlic infused olive oil, 9 g salt, 2 g sugar, 2 g soy sauce, ½ garlic clove.

Preparation: Cook the softened baccalà in a sous-vide pouch with the garlic, salt and a glass of its pre-cooking water. Cook the pouch in water at 95°C for about two and a half hours. Drain it, keeping aside the cooking water in the pouch. Blitz the baccalà and blend it slowly with the oils.

Add the sugar, soy sauce, garlic and salt and emulsify with the reserved cooking water.

The result should be a frothy cream paste. Season with the pinch of star anise, a grind of Sarawak black pepper and a small amount of the chopped leaves.

Ingredients for the chopped leaves mixture: chop together sorrel, rocket, a little Chioggia radicchio, and a few seedless Zibibbo raisins. Mix well.

Presentation: on a bed of 3 heaped teaspoons of chopped leaves, place one 5 cm diameter / 1 cm high disc of hot creamed baccalà, and cover with a freshly-fried disc of whole wheat polenta. Serve immediately, recommending the use of a dessert spoon to taste the three layers at the same time.

BACCALÀ AFFOGATO-POACHED BACALAO Esteban Villalpando Lofoten Fiskerestaurant, Oslo, Norway

Ingredienti: baccalà bagnato, olio di oliva, burro, farina 00, prosecco, cipolla, acciughe, capperi, prezzemolo, pane grattato, latte, formaggio grana, sale e pepe.

Preparazione: fare cuocere in un pentolino per 2 minuti la cipolla tritata, l’olio d’oliva, i capperi, le acciughe tritate, un bicchiere di prosecco una noce di burro e un pizzico di pepe. Tagliare il baccalà a liste alte circa 2 cm, salare, pepare e infarinare. Prendere una teglia da forno, mettere mezzo preparato del pentolino, mettere il baccalà non disteso ma messo a lato partendo dai lati fino ad arrivare al centro, aggiungere un po‘ di prezzemolo una manciata di formaggio grana e mettere il restante del pentolino; scaldare il tutto a fuoco lento per 2 minuti, coprire il baccalà con il latte fatto bollire in precedenza; cospargere con 2 manciate di grana alternando con 1 di pane grattugiato. Infornare a 140 gradi per 2 ore nel forno in precedenza. scaldato.

Add boiling milk to cover the preparation and layer two handfuls of grated grana with one handful of breadcrumbs to form a crust. Bake at 140°C for two hours in a pre-heated oven.

BACCALÀ MANTECATO Ingredienti: baccalà bagnato, latte, acqua del baccalà da cotto, olio di semi, qualche goccia di olio profumato di aglio, sale e pepe.

Preparazione: eliminare tutte le lische, tagliare grossolanamente il baccalà, farlo bollire per 10 minuti in abbondante acqua. Scolarlo dall’acqua, premunirsi di 2 mestoli della stessa, metterlo in una planetaria, cominciare a frullarlo aggiungendo l’olio a filo fino ad ottenere un composto cremoso, mettere il latte, un po’ di acqua del baccalà, l’olio insaporito con l’aglio, il sale, il pepe e frullare finché diventi bianco e cremoso.

P.S. Anche per il baccalà alla Vicentina vanno tolte le spine.

L’Enciclopedia di Diderot & D’Alembert racconta mestieri e tradizioni Tradition and artisanal expertise in the Encyclopédie Diderot & D’Alembert Mentre nelle aree temperate dell’emisfero settentrionale la maggior parte dei vini va maturando nella silenziosa quiete delle cantine, la consultazione di qualche libro antico, soprattutto se artisticamente illustrato, può offrire affascinanti testimonianze sulla vendemmia dei secoli passati.

Dopo le opere in latino del Cinquecento e di parte del Seicento (fondamentale è l’enciclopedia, di piccolo formato, ma di quasi 800 pagine del medico-naturalista tedesco Philipp Jacob Sachs, Lipsia 1661, in cui, già nel titolo, compare per la prima volta il termine greco “Ampelographia”, descrizione della vite), la successiva bibliografia si arricchisce di pubblicazioni in tutte le principali lingue europee. A impreziosirne il contenuto scientifico, il testo è corredato da un apparato iconografico di particolare pregio artistico, costituito soprattutto da incisioni su rame. Ne è conferma anche la semplice consultazione del catalogo informatico della Biblioteca “La Vigna” di Vicenza (www. lavigna.it) in cui sono notevoli i testi in lingua francese da cui sono tratte le immagini riprodotte in queste pagine.

Fra i più importanti, anche riguardo alla vendemmia, è il voluminoso trattato Le nouveau théâtre d’agriculture et ménage des champs (Il nuovo teatro dell’agricoltura e di conduzione dei campi) di Louis Liger, edito a Parigi nel 1713, nel quale una tra le più affascinanti incisioni su rame (sono 29 in tutto) illustra proprio la vendemmia (les vendanges).

While most wines in the temperate zones of the northern hemisphere are ageing in the silent calm of the cellars, a glance at antique books of instruction can give a fascinating insight into the harvests of times past, especially if they are also well illustrated.

In the sixteenth and seventeenth-century works such as the small format, almost 800-page, viticultural encyclopaedia by the German naturalist-doctor Philipp Jacob Sachs (Leipzig 1661), where the Greek term “Ampelograhia” appears in the title for the first time, were in Latin.

Subsequent books on wine are published in all the principal European languages. Texts are scientific in nature, but often enhanced with highly artistic illustrations, above all in the form of copper-plate engravings. A quick glance at the catalogue information of Vicenza’s Biblioteca “La Vigna” (www.lavigna.it) is enough to confirm contemporary predominance of the French-language publications whose illustrations are used as part of this feature.

One of the most important works to deal with the harvest is the extensive treatise entitled Le nouveau théâtre d’agriculture et ménage des champs (The new theatre of agriculture and field management) by Louis Liger, published in Paris in 1713. Interestingly, one of the most fascinating copper-plate engravings in this work (there are 29 in all) is a detailed illustration of harvest time (les vendanges).

Nella parte descrittiva della monografia, sono puntuali le indicazioni anzitutto sul periodo della vendemmia, dalla fine di settembre a tutto il mese di ottobre, quando “il grappolo è giunto alla sua maturazione perfetta”. Accurati devono essere quindi i preparativi degli attrezzi e dei contenitori. Precise le istruzioni sulla selezione delle uve, sul loro trasporto, sulla pigiatura e sui processi produttivi dei vari tipi di vini, compreso il claretto (vin paillet), pronto per essere bevuto.

Il tutto alla fine è sintetizzato in una tavola ove i numeri rinviano a puntuali didascalie. Sull’ampio e suggestivo sfondo paesaggistico che si apre oltre il grande arco centrale, creato, più che per separare per unire l’interno con l’esterno, campeggia un vigneto rigoglioso, animato da numerosi vendemmiatori e trasportatori di gerle di uva (in buon risalto le donne) la quale, versata nei tini, viene pigiata con i piedi. Il ciclo produttivo, con la rappresentazione di un carro che, trainato da un cavallo, trasporta cinque tini/botti di notevoli dimensioni, continua nella parte interna ove è in azione un torchio. In bella evidenza poi, oltre a vari strumenti, alcune botti di legno nelle quali con l’impiego di un grande imbuto, pure di legno, viene versato il mosto o il vino. In scena, ben caratterizzati anche dall’elegante abbigliamento, sedici attori perfettamente organizzati. Fra le apparecchiature, predominano tini e botti di varia dimensione.

E sulla loro fabbricazione da ammirare sono le otto accurate tavole in grande formato (planches) che, relative all’arte del bottaio (tonnelier), sono contenute nel ventiduesimo volume dell’Encyclopédie diretta da Dident e d‘Alembert Diderot & D’Alembert (1751-1772). La prima, riprodotta nella pagina accanto, offre in alto la visione di un atelier ospitato in una elegante struttura architettonica e animato da otto artigiani. Nella sezione mediana e bassa della calcografia è illustrato il processo di lavorazione, dallo stato grezzo dei componenti lignei alla botte finita con le doghe tenute ben strette da cerchi di ferro. A riprova del rigore scientifico la scala metrica a pié di pagina.

Sono immagini che, messe a confronto con le tecnologie delle cantine moderne, possono far sorridere, ma questo non ne sminuisce la valenza storica e documentaria.

In the text itself, instructions about the vintage are particularly clear, dealing with the period from the end of September to the end of October, when “grape bunches reach optimum ripeness”. The work on equipment and barrels must also be very thorough. Instructions about the grape picking, transport, pressing and the production methods for the different types of wines, including “claret” (vin paillet), for early drinking, are similarly detailed.

In conclusion, all the processes are summarised on an engraving with a detailed legend and numbers corresponding to captions. An attractive countryside background can be seen beyond the big central arch, designed more to separate than unite the proceedings outside with those inside. Outside, a jolly vineyard scene is enlivened with numerous grape-pickers and grapepannier carriers (most prominently women). Grapes are tipped into vats and pressed with bare feet. The production cycle continues with a horse-drawn cart transporting five large vats or barrels inside the building, where there is a screw-press in action. Notable among the various items of equipment on display, are the wooden barrels, into which the must or wine is being poured with the aid of a big funnel, also made of wood. Sixteen participants in this drama are perfectly organised and dressed in elegant clothes and the most obvious items of equipment are variously-sized vats and barrels.

Barrel-making, in fact, is the subject of eight detailed large-format engravings (planches) dealing with the art of the tonnelier (barrel-maker), to be found in the twentysecond volume of the Encyclopédie Diderot & D’Alembert (1751-1772). The first engraving, reproduced in this feature, shows a barrel workshop in an attractive building and staffed by eight artisan barrel-makers in its upper section, while the middle and lower sections of the engraving show the manufacturing process for barrels, from the stage of working on the raw wood to the fitting of iron hoops to keep the staves together. Scientific accuracy is proclaimed with measuring scale drawn out at the foot of the page. The comparison with modern technology might make one smile, but the historical and documentary value of such images is none the less valid.
