THE WHISKY WORLD IS CHANGING INDIAN SINGLE-MALTS CATCHING UP!

India is a growing and thriving single-malt Nation. The world's largest consumer of whisky is India. Today, India is home to only eight single-malt distilleries despite such a huge populous country, among which Dr. Mohan Krishna led Cheers group is notable in bottling under their own prized brand-names. For a fine example, Three Monkeys Single Malt, made using 'six-row' barley from the foothills of the Himalayas, distilled and matured in Goa and producing a complex, fruity spirit with a rounded mouthfeel that calls to mind Scotch from a bygone era!

The Cheers group has enjoyed incredible success in a relatively short period of time. The growth in demand for it's Three Monkeys Indian single malt has allowed their distillery to expand further, and it is now eying to be one of the largest single-malt producers in the world. The huge success of Cheers group's brands in India, coupled with the global status for its single malts, is now inspiring it to aim high with expansion of it's malt reserves.

The heritage of Scottish whisky is, of course, incalculably stronger, and it is the work done in establishing Scotch as a luxury drink the world over that has set the scene for New World whiskies to emerge and they are uprising. The quality of these

Indian single-malt whiskies simply gives greater choice for the single-malt and Scotch imbibers. It brings a levelling up, an egalitarianism to the category that should be welcomed by anyone who calls themselves a single-malt lover.

The Single-malt whiskies produced by Cheers group, using Scottish style copper pot stills and the same traditional processes employed across Scotland, have found favour among its wide consumer base around the world.

"We have array of premium Single-malts, from Three Monkeys to Secret Island. These expressions are enjoyed by single malt lovers as much as anyone, who appreciate the complexity of their creation" says

"Rather than being elitist, the attitude of whisky purists has changed to e n c o u r a g e n e w enthusiasts of all types. The days of bartenders advocating strict ways to drink whisky and insisting upon the need to take single malt neat are over. Anyone who has enjoyed a good Martini will be very familiar with how they react to highstrength spirits like single-malts-- it's your whisky, drink it however you like” says Dr. Divya B a l i v a d a , G l o b a l C r e a t i v e D i r e c t o r , C h e e r s g r o u p , w h o acquired business talent from Edinburgh University, Scotland.

Cheers group uses only the highest quality malted-barley for distillation, resulting in a complex, rich and malt-forward profile. This spirit is then matured in a mixture of former Sherry, French wine, fortified wine and American bourbon casks, and often blended from single and double casks, at high strength and then bottled as per the required alcohol-strength, resulting the mature liquid flavoursome, robust and utterly delicious. BREAKING BARRIERS ONDC SET TO R E V O L U T I O N I Z E F O O D INDUSTRY, EMPOWER RESTAURANTS

Amidst mounting concerns over the dominance of food aggregator apps and their stranglehold on the restaurant sector, a game-changing solution has emerged on the horizon The Open Network for Digital Commerce (ONDC) is poised to redefine the food industry, offering newfound liberation to restaurants. Prahlad Sukhtankar, the dynamic leader of the Goa Chapter of the National Restaurants Association of India (NRAI), sheds light on the impending transformation.

Gathering momentum, the Goa Chapter of NRAI orchestrated a compelling symposium in Panaji, unraveling the potential ramifications of ONDC's entry into the scene A distinguished representative from ONDC elaborated on its distinct attributes, spotlighting its role as a centralized government initiative designed to seamlessly integrate a myriad of digital services –encompassing online ordering, delivery logistics, and secure payment solutions –into an interconnected ecosystem. Sukhtankar, with fervor, articulates how ONDC, currently navigating its beta phase across the nation, could act as a catalyst to unshackle restaurant owners from the grip of app-driven monopolies that dictate the terms of food delivery. "The prevailing landscape," he asserts, "is under the sway of a select few food aggregators who control both delivery logistics and brand visibility. ONDC is primed to reshape this landscape, enabling businesses to cherry-pick specific network components or adopt a comprehensive approach. This flexibility inherently leads to diverse pricing o p t i o n s , t h e r e b y e m p o w e r i n g consumers to engage with preferred partners."

However, the ONDC effect isn't limited to price equilibrium. Sukhtankar enthusiastically notes, "ONDC's impact transcends mere pricing dynamics. It promises to instigate a paradigm shift in

retail interactions – an evolution that extends beyond food to encompass clothing, groceries, and beyond."

ONDC's allure rests in its ability to directly connect restaurants with patrons, circumventing intermediaries. The network's potential to democratize this interactive rapport is underscored by Marichi Mathur, a distinguished figure in the Food and Beverage domain at ONDC. Mathur underscores ONDC's role as an avant-garde conduit, poised to revolutionize how restaurants cultivate relationships, conduct transactions, and c u r a t e m e m o r a b l e c u s t o m e r experiences.

"ONDC's emergence heralds a transformative era for the restaurant landscape. It's a conduit for optimizing operations, enhancing efficiency, and elevating customer satisfaction," Mathur elucidates.

Drawing from real-world experiences, Murali Krishnan, the enterprising CEO & CMO of Wow! Momo, a trailblazing panIndia restaurant chain, expounds on O N D C ' s p o t e n t i a l t o r e s h a p e profitability for restaurateurs, shifting the needle away from dependence on food aggregators. Krishnan predicts, "ONDC is the key to unlocking consumer o w n e r s h i p , f a c i l i t a t i n g h y p e rpersonalized customer experiences Diverging from the constraints imposed by traditional aggregators, ONDC provides a treasure trove of valuable insights – from detailed order histories to identifying loyal patrons. The network's promise lies not only in heightened visibility and profitability but also in potentially slashing commissions from the prevailing 25 percent to an enticing range of five to eight percent."

The stage is set for ONDC to emerge as a liberating force, breaking the chains of monopolistic influence and ushering in an era of autonomy, customization, and fiscal growth within the dynamic food industry landscape.

Embracing Global Flavours: International Influences on Goan Cuisine

Goan cuisine is a delicious and diverse blend of Indian and Portuguese influences. This unique culinary tradition has been shaped by the region's long and rich history, which has seen it come into contact with a wide variety of cultures.

One of the most significant influences on Goan cuisine has been the Portuguese. The Portuguese arrived in Goa in the 16th century and ruled the region for over 400 years. During this time, they introduced several new ingredients and cooking techniques to the region, which have had a lasting impact on Goan cuisine.

Some of the most popular international ingredients that have made their way into Goan dishes include potatoes, chillies, tomatoes, and vinegar These ingredients were originally brought to India by the Portuguese, and they have since become essential components of many Goan dishes. The chillies used in vindaloo are typically Kashmiri chillies, which are a type of hot chilli that is native to the Indian subcontinent The Portuguese introduced these chillies to India, and they have

since become a staple ingredient in Goan cuisine.

The Portuguese also introduced several new cooking techniques to Goan cuisine. One of the most important of these techniques is the use of vinegar. Vinegar is used in many Goan dishes to add a sour and tangy flavour. It is also used to tenderise meat, which is important in Goan cuisine, as many Goan dishes are made with pork.

Another important cooking technique that was introduced by the Portuguese is the use of spices. The Portuguese brought a wide variety of spices to India, and these spices have since become an essential part of Goan cuisine. Some of the most popular spices used in Goan dishes include cumin, coriander, turmeric, and chilli powder.

Goan cuisine has also been influenced by other cultures, such as the Arabs, the Chinese, and the Africans. These cultures have all contributed their unique ingredients and cooking techniques to Goan cuisine, which has helped to create a truly diverse and delicious culinary tradition.

Bridging Cultures: Culinary Exchange and Collaboration

Food is a powerful way to connect people from different cultures. It can break down barriers, build understanding, and create lasting bonds. This is the power of culinary diplomacy. Culinary diplomacy is the use of food and cuisine to promote cross-cultural understanding and cooperation. It can be used in a variety of ways, such as:

Hosting food festivals and tastings: This is a great way to introduce people to new cuisines and cultures.

Opening restaurants and food trucks: This allows people to experience different cultures through their food.

Sending chefs on exchange programs: This allows chefs to learn about different cuisines and cultures firsthand. Donating food to disaster relief efforts: This shows solidarity and compassion in times of need.

Culinary diplomacy has the potential to strengthen cultural ties between nations in several ways. First, it can help people to learn about and appreciate different cultures. When people experience new foods, they are also learning about the history, traditions, and values of the people who created those foods. This can lead to a greater understanding and appreciation of other cultures.

Second, culinary diplomacy can help to break down barriers between people. When people share a meal, they are breaking bread, which is a symbolic gesture of peace and friendship. This can help to build trust and understanding between people from different cultures.

Third, culinary diplomacy can promote cooperation between nations When countries work together to promote food security or to address food waste, they are building relationships that can lead to other forms of cooperation. Here are some examples of how culinary diplomacy has been used to strengthen cultural ties between nations:

In 2015, the United States and China hosted a "culinary diplomacy" event in Washington, D.C. The event featured chefs from both countries cooking traditional dishes. The event was a success and helped to promote understanding between the two countries.

In 2016, the French government launched a "culinary diplomacy" initiative. The initiative aims to promote French cuisine around the world. The initiative has been successful in raising awareness of French cuisine and has helped to improve France's image abroad.

In 2017, the World Food Programme (WFP) launched a "culinary diplomacy" campaign. The campaign aims to use food to promote peace and understanding. The campaign has been successful in raising awareness of the WFP's work and has helped to improve the lives of people in need.

These are just a few examples of how culinary diplomacy has been used to strengthen cultural ties between nations. Culinary diplomacy is a powerful tool that can be used to build understanding, cooperation, and peace.

Stuffed bread pakoras

Stuffed bread pakoras are a delicious and popular Indian snack that is perfect for a tea-time treat or as an appetizer for parties. The recipe below will guide you through making these mouthwatering treats:

Ingredients

8 slices of white or brown bread

2 medium-sized potatoes, boiled and mashed

1/2 cup crumbled paneer (Indian cottage cheese)

1/4 cup finely chopped onions

1/4 cup finely chopped bell peppers (capsicum)

2 green chilies, finely chopped (adjust to your spice preference)

1 teaspoon grated ginger

1/2 teaspoon cumin seeds

1/2 teaspoon garam masala

1/2 teaspoon red chili powder

1/2 teaspoon turmeric powder

1/2 teaspoon chaat masala

1 tablespoon chopped fresh coriander leaves

Salt to taste

Water for batter

Oil for deep frying

For the batter:

1 cup gram flour (besan)

1/4 teaspoon red chili powder

A pinch of asafoetida (hing)

Salt to taste

Method

In a mixing bowl, combine the boiled and mashed potatoes, crumbled paneer, chopped onions, bell peppers, green chilies, grated ginger, cumin seeds, garam masala, red chili powder, turmeric powder, chaat masala, chopped coriander leaves, and salt. Mix everything well to form a stuffing mixture.

Take two slices of bread and trim the crusts from all sides. Place a generous portion of the stuffing mixture on one slice of bread and spread it evenly.

Gently press another slice of bread on top of the stuffed slice to form a sandwich. Press the edges to seal the filling properly. Repeat this process to make more stuffed bread sandwiches.

In a deep-bottomed pan or kadhai, heat oil over medium heat for deep frying. While the oil is heating, prepare the batter. In a separate bowl, mix gram flour, red chili powder, asafoetida, and salt. Gradually add water to the mixture while whisking continuously until you get a smooth, thick batter.

Dip each stuffed bread sandwich into the batter, ensuring it is coated on all sides. Carefully place the batter-coated stuffed bread into the hot oil. Fry the pakoras in batches, making sure not to overcrowd the pan.

Fry the bread pakoras until they turn golden brown and crispy on all sides. Use a slotted spoon to remove them from the oil and place them on a plate lined with paper towels to absorb excess oil.

Serve the stuffed bread pakoras hot with green chutney or ketchup. Enjoy your delicious snack!

Mango pudding

Mango pudding is a delightful and refreshing dessert, perfect for the mango season. Here's a simple and easy recipe for you to enjoy:

Ingredients

2 ripe mangoes (preferably sweet and juicy variety)

1 cup whole milk

1/2 cup sweetened condensed milk

1/2 cup heavy cream

1 teaspoon gelatin powder

2 tablespoons water

1 teaspoon vanilla extract (optional, but adds flavor)

Sliced mangoes, mint leaves, or whipped cream for garnish (optional)

Method

Peel the ripe mangoes and cut them into chunks. Reserve a few attractive slices for garnish and set them aside. Take the remaining mango chunks and blend them in a blender or food processor until you get a smooth puree. If needed, you can add a little water to help with blending.

In a small bowl, sprinkle the gelatin over 2 tablespoons of water and let it sit for a minute or two to bloom.

In a saucepan, heat the whole milk over low to medium heat until it starts to steam (do not let it boil). Add the bloomed gelatin to the warm milk and stir until the gelatin completely dissolves. Remove the saucepan from heat.

In a separate mixing bowl, combine the mango puree, sweetened condensed milk, and heavy cream. Mix well until everything is thoroughly combined.

Slowly pour the warm milk and gelatin mixture into the mango mixture while stirring continuously. Add the vanilla extract if using and mix until you get a smooth and consistent mixture.

Pour the mango pudding mixture into individual serving bowls or a large serving dish.

Let the pudding cool to room temperature, and then cover the bowls or dish with plastic wrap and refrigerate for at least 2-3 hours or until the pudding sets and becomes firm.

Once the mango pudding is set, garnish with the reserved mango slices, mint leaves, or a dollop of whipped cream, if desired. Serve chilled and enjoy the delicious and easy mango pudding!

Note: You can adjust the sweetness by adding more or less condensed milk, depending on the sweetness of the mangoes and your personal preference. You can also experiment with different toppings such as toasted coconut flakes or chopped nuts for added texture and flavor.

The Zero-Waste Revolution

In recent years, the world has witnessed a growing concern for sustainability and the impact of human activities on the environment. Goa, with its fragile ecosystems, recognizes the urgency to shift towards more eco-conscious practices in all aspects of life, including dining. Enter the zero-waste dining revolution – an innovative approach that redefines how we consume food.

From Farm to Fork

One of the key pillars of sustainable gastronomy is sourcing food locally. Goa's fertile land offers an abundance of fresh produce and seafood, allowing chefs and restaurateurs to connect directly with local farmers and fishermen. By reducing the distance food travels from farm to fork, this approach not only supports the local economy but also lowers the carbon footprint associated with transportation.

Creative Culinary Innovations

Zero-waste dining in Goa has sparked a wave of creativity among chefs. Embracing the "root-to-stem" and "nose-to-tail" philosophies, they're turning food scraps and traditionally discarded parts of ingredients into delightful culinary creations. Fruit peels are transformed into zesty preserves, vegetable trimmings find new life in flavorful broths, and fish bones create rich stocks. These innovations not only minimise food waste but also elevate the dining experience with unique, palate-pleasing dishes.

Educating and Engaging Diners

Creating awareness and involving diners in the process is crucial for the success of sustainable gastronomy. Restaurants in Goa are taking an active role in educating their customers about their eco-friendly practices. Through interactive workshops and on-premise displays, patrons are enlightened about the positive impact of their choices on the environment. This education fosters a sense of responsibility and empowers diners to make informed, sustainable decisions.

Waste Management and Composting

THE HEALTH BENEFITS OF INCLUDING PROBIOTIC FOODS IN YOUR DIET

Probiotics are live microorganisms that provide numerous health benefits when consumed in adequate amounts. These beneficial bacteria primarily colonize our gut and play a crucial role in maintaining digestive health and overall wellbeing. Including probiotic foods in your diet can significantly improve your gut microbiota, leading to various health advantages. In this article, we will delve into the health benefits of consuming probiotic foods and provide examples of these beneficial foods.

FOOD & HEALTH 94 - Food & Hospitality - July 2023

Improved Digestive Health

One of the most well-known benefits of probiotic foods is their positive impact on digestive health. Probiotics aid in breaking down food, absorbing nutrients, and maintaining a balanced gut environment. They help to regulate bowel movements and can alleviate digestive issues such as constipation, diarrhea, and irritable bowel syndrome (IBS).

Examples of Probiotic Foods

Yogurt: This is perhaps the most popular probiotic food. Look for yogurt with live and active cultures, as they contain beneficial probiotics like Lactobacillus and Bifidobacterium strains.

Kefir: A fermented dairy drink similar to yogurt but thinner in consistency. It contains a diverse range of probiotics and is often better tolerated by those who are lactose intolerant. Fermented Vegetables: Sauerkraut, kimchi, and pickles are rich in probiotics and add a tangy flavor to your meals.

Strengthened Immune System

Probiotics play a vital role in supporting the immune system. A substantial portion of our immune cells resides in the gut, making a healthy gut microbiome essential for a strong immune response. Probiotics stimulate the production of antibodies and enhance the body's defense against harmful pathogens.

Examples of Probiotic Foods

Miso: A traditional Japanese seasoning made from fermented soybeans, rice, or barley. It contains probiotics along with essential nutrients and minerals.

Tempeh: Originating from Indonesia, tempeh is a fermented soybean product that provides a rich source of probiotics, protein, and fiber.

Enhanced Mental Health

Emerging research suggests that there is a strong connection between gut health and mental health. Probiotics can influence brain function through the gut-brain axis, potentially alleviating symptoms of anxiety and depression. A balanced gut microbiome is associated with improved mood and cognitive function.

Yogurt with added probiotic strains: Some yogurts are fortified with specific probiotic strains that target immune health.

Examples of Probiotic Foods

Fermented Tea: Kombucha is a fermented tea beverage that contains probiotics and various organic acids, which may positively impact mental health.

Probiotic Supplements: Some specific probiotic strains, such as Lactobacillus rhamnosus and Bifidobacterium longum, have shown promise in supporting mental well-being.

Lowered Risk of Chronic Diseases

Regular consumption of probiotic foods has been linked to a reduced risk of chronic diseases. A balanced gut microbiome can positively affect cholesterol levels, blood pressure, and blood sugar regulation, potentially lowering the risk of heart disease and type 2 diabetes.

Examples of Probiotic Foods

Soft Cheese: Certain soft cheeses like gouda, cheddar, and cottage cheese contain probiotic strains that contribute to heart health.

Kimchi: A Korean staple, kimchi is rich in probiotics and antioxidants, offering potential benefits for diabetes management.

Improved Skin Health

The gut-skin axis establishes a connection between gut health and skin health. Probiotics can alleviate skin conditions such as acne, eczema, and rosacea by reducing inflammation and promoting a healthy gut environment.

Examples of Probiotic Foods

Lassi: A traditional Indian beverage made from yogurt and water, lassi provides probiotics and can have a positive impact on skin health.

Non-dairy Fermented Foods: For individuals who are lactose intolerant or prefer non-dairy options, probiotic-rich foods like coconut yogurt or water kefir can be beneficial for skin health.
