Is it just me, or is this year flying by at record speed? One minute we were setting New Year’s resolutions, and now suddenly, we’re hurtling towards the middle of the year, wondering where all the time went. Life is busy, chaotic, and full of responsibilities, and if you’re anything like me, your to-do list always seems to get longer, not shorter.

That’s why I made a promise to myself this year—to carve out real, dedicated me-time. And not just the “scrolling mindlessly on my phone while pretending to relax” kind of me-time. Proper, intentional moments just for me. Enter: yoga, pilates, and meditation.

I’ll be honest, I was a little sceptical at first. Would I really enjoy sitting still and breathing deeply? Would I actually feel the benefits of holding a plank while my muscles screamed in protest? But after a few weeks, I noticed a shift. Not only did my body feel stronger and more flexible, but my mind felt clearer too. Taking that time for myself, even just a few times a week, became something I genuinely looked forward to.

And here’s the thing—your me-time doesn’t have to look like mine. Maybe it’s a long walk with your favourite podcast, an hour curled up with a book, or a solo coffee date where you don’t have to talk to anyone (pure bliss, right?). The point is, we all need to hit the pause button every now and then.

We’re often juggling a million things at once—work, family, friends, that endless pile of laundry that never seems to disappear. But taking care of ourselves isn’t selfish, it’s essential. You can’t pour from an empty cup, and trust me, a little self-care goes a long way in keeping you sane.

So, if this year is whizzing by and you feel like you’re just along for the ride, take this as your sign to slow down, even for a moment. Find something that brings you peace, joy, or even just five minutes of uninterrupted silence (which, let’s be honest, is a luxury in itself).

Wally Lewis calls on Gold Coast to SUPPORT DEMENTIA AUSTRALIA

Queensland rugby league legend and Dementia Australia

Ambassador Wally Lewis am is urging the Gold Coast community to rally together for the 2025 Memory Walk & Jog, the organisation’s largest annual fundraising event.

“Queenslanders have always stuck together during the hard times, and it doesn’t get much harder than watching someone you love impacted by dementia,” Wally says.

“Memory Walk & Jog provides a day where family and friends can come together in a fun environment to promote good health and support each other, especially those living with dementia.”

Set to take place on Sunday, 1 June at Pratten Park, Broadbeach, this year’s event aims to raise awareness, promote brain health, and generate much-needed funds to support people living with dementia, their families, and carers.

“With dementia being the leading cause of death for women and the second leading cause for men in Australia, many Queensland families will unfortunately be touched by dementia in some way,” Wally continued.

“Raising awareness and providing support, not only for those living with dementia but for their family and friends, is essential. Memory Walk & Jog is a fantastic opportunity to do just that.”

Dementia Australia CEO Professor Tanya Buchanan highlighted the importance of community participation in helping to deliver crucial services and increasing awareness.

“There are more than 10,665 people living with dementia in the Gold Coast region,” Professor Buchanan says. “Not only does Memory Walk & Jog help raise vital funds, but it is an important opportunity to continue a national discussion about dementia and encourage people to stay active and socially connected—two key factors that can help reduce the risk of dementia.”

Dementia Australia hopes to achieve record-breaking participation numbers this year and raise more than $2 million nationwide to fund vital support, education, and services for those affected by dementia.

• Cosmetic Surgery: 33 per cent consider treatments like breast augmentations and facelifts. Younger adults (25-34) are the most likely to travel for these procedures.

The primary motivator is cost savings, cited by 37 per cent of respondents. “The cost overseas is a fraction of what you’d pay here,” said one survey participant.

A modern-day total laparoscopic hysterectomy is a minimally invasive procedure involving three, 5mm incisions in the abdomen which heal very quickly, with most women walking within hours of surgery and driving after a week.

Chocolate lovers unite! Whether you love it rich and dark or smooth and milky, chocolate is a way of life. This issue, the Wandercooks are serving up the ultimate chocolate-based recipes, so grab your apron, stock up on cocoa, and get ready to whip up some chocoholic-approved delights!

Aussie Crunch –Chocolate Coconut Slice

Ingredients:

For the slice base

• 200 g butter salted

• ½ cup caster sugar / 100g

• 2 tbsp golden syrup

• 1 cup desiccated coconut, heaped / 80g

• 3 cups cornflakes, crushed / 90g

• 1 cup self raising flour, heaped / 150g

• 1.5 tbsp cocoa powder

For the chocolate top

• 1 block Cadbury milk chocolate / 180g

Method:

1. Preheat your oven to 180°C / 360°F.

2. Pop a large saucepan on low heat. Add in the butter and melt first. Then pop in your sugar, golden syrup, coconut, cocoa and self-raising flour. Mix well until combined, then add in the crushed cornflakes last and mix again. Finally, pour into a slice tray or glass baking tray 20 x 30 cm / 8 x 12 inches.

3. Using the back of a spoon or spatula, press firmly and flatten (especially into the corners) then pop in the oven and bake for around 25 minutes.

4. Remove from the oven and allow to cool.

5. Once cooled, break up the chocolate in a bowl and melt in 30 second intervals in the microwave, stirring between each session. Once completely melted, layer with a spatula on top of the slice and place in the fridge to set.

6. Allow to set for a minimum of 15 minutes, before removing and slicing into squares, triangles or slices, ready to eat straight away or pack for a lunch snack.

Lamingtons with Chocolate Sauce

Ingredients:

For the sponge cake

• 125 g caster sugar / ¾ cup / 4.4 oz

• 50 g butter salted, softened

• 2 eggs, beaten (extra large size eggs approx 59 g / 2.1 oz each)

• 120 g self raising flour / 1 cup

• 85 g desiccated coconut / 1 cup

For the chocolate sauce

• 2 tbsp cocoa powder

• 150 g icing sugar / 1 cup

• 3 tbsp boiling water

• 1 tbsp butter melted

Method:

For the sponge cake

1. Preheat your oven to 180°C / 360°F.

2. Cream together the sugar and butter with a spoon or hand mixer. Then, add in the eggs and give it a whisk until combined.

3. Next, add the self raising flour and mix again until you have a smooth cake batter. Important: Egg sizes may vary. If your batter is too thick at this stage, add a dash of milk to thin.

4. Pour batter into a lined square baking tray (9×9 in / 24×24 cm) and smooth out to the edges. Bake in oven for 20 minutes or until deliciously golden on top. Test with a wooden skewer and if it comes out clean, it’s ready.

5. Allow the sponge to cool on a baking tray before cutting into squares or rectangles.

For the Chocolate Sauce

1. Mix together the icing sugar, cocoa, melted butter and boiling water. Pop the desiccated coconut into a separate bowl. Place a wire cooling rack over a baking tray so it’s ready for the dipped lamingtons. Tip: Keep your boiling water nearby, if your chocolate sauce starts to harden, add a dash more water and mix it in thoroughly then continue to coat as normal.

To Assemble

1. One at a time, place each slice of sponge cake on a fork and dunk it in the chocolate sauce. You may need to roll it around a bit to ensure it’s completely covered. Then use the fork to lift the cake out of the chocolate and pop it into the coconut. Use the fork to cover the cake with coconut, then once coated, transfer to the wire rack to dry.

2. Allow lamingtons to dry for 5-10 minutes then dig in!

Chocolate Weetbix Slice

Ingredients:

For the slice

• 60 g Weetbix biscuits 4 pieces

• 180 g butter melted, sub with coconut oil

• ¼ cup brown sugar / 30 g

• 1 cup desiccated coconut / 85 g

• 1 cup self raising flour / 120 g / sub plain flour + 1 tsp baking powder

• 2 tbsp cocoa powder

For the icing

• 1 cup icing sugar / 120 g

• 1 ½ tbsp cocoa powder, not drinking chocolate

• 1 tbsp milk

• 50 g butter, softened slightly

• 2 tbsp desiccated coconut to garnish

Method:

Weetbix Slice Base

1. Preheat the oven to 180C / 360F

2. Blend Weetbix biscuits in a blender until broken up into a fine powder. Transfer to a large bowl and mix in the remaining dry ingredients (self raising flour, sugar, desiccated coconut and cocoa powder).

3. Pour in the melted butter and mix until well combined. Press the mixture out into a 24 x 24 cm (9 x 9 in) square pan lined with baking paper.

4. Bake for 15 minutes, then remove from the oven and allow to cool down slightly while you make the icing. Tip: Leave the slice in the tin to avoid it crumbling as it cools. If you make the mistake of taking it out while too hot and it crumbles, use a spoon to press it back down while it’s still warm and you’ll be able to salvage it – no stress!

Chocolate Icing

1. In a small bowl mix together the icing sugar, cocoa powder, butter and milk with a spoon. Tip: Add 1-2 tsp of extra milk or warm water as required to loosen the icing if you find it’s sticking to the spoon instead of the slice and it’s too hard to spread.

2. Pour icing onto the still warm slice and spread out over the surface using the back of the spoon. Garnish with extra desiccated coconut. Pop into the fridge to cool for at least an hour (or overnight) before slicing. The firmer the slice, the easier it will be to cut without it crumbling!

Easy Chocolate Mousse

Ingredients:

• 2 cups thickened cream / 500 ml / 1 pt, sub cold coconut cream

• ⅓ cup sugar / 70 g / 2.46 oz

• 2.5 tbsp cocoa powder, unsweetened

Optional

• 3 tbsp desiccated coconut as garnish

Method:

1. Add the cream, sugar and cocoa powder into a large mixing bowl.

2. Beat with a hand mixer for 1-2 minutes until stiff peaks form – pull the beater out and the mixture holds its shape without collapsing in on itself. The mousse should be nice and thick at this point.

3. Spoon or pipe into individual serving bowls or glasses. Garnish with optional desiccated coconut. Serve!

From A Silver At The 2024 Paralympics To Giving Endless Love To Furry Friends

Maddie McTernan returned from the 2024 Paris Paralympics with her head held high, adding another impressive chapter to her already stellar swimming career. With a silver medal in the 4x100m mixed freestyle relay, two personal bests, an Australian record, and top-five finishes in the S14 100m backstroke and S14 200m freestyle, she has firmly established herself as one of Australia’s top Paralympic athletes.

Maddie’s journey to success has been shaped by resilience, determination, and an unshakable commitment to her sport. Diagnosed with an intellectual impairment, autism, anxiety, and ADHD, she has faced significant challenges along the way. However, her unwavering dedication has propelled her to the highest levels of competition.

“S14 is my classification at the Paralympics, which is the class for athletes with an intellectual disability,” Maddie explains. While she has been swimming since childhood, her competitive journey began at 13, inspired by another para-athlete aiming for the Rio Paralympics. “I wanted to do that, but I knew I wouldn’t be good enough for Rio. So I decided to go for Tokyo.”

Since making her first national team at the 2019 World Para Swimming Championships, Maddie has represented Australia at three World Championships, the Commonwealth Games, and two Paralympic Games. She

has claimed two Paralympic silver medals, one gold and three silver medals at the World Championships. However, she laughs, “All these medals were won as part of the relay! No individual medals yet, but hopefully one day!”

Born on December 29, 2000, Maddie’s love for the water flourished in Coffs Harbour, where she joined the local swimming club at 13 under coach Eugene Brogmus. The McTernan family later relocated to the Gold Coast, where she continued to thrive and refine her skills.

Beyond the pool, Maddie is passionate about giving back to her community. She volunteers with Riding for the Disabled and the Animal Welfare League Queensland (AWLQ), finding joy in supporting both people and animals.

“My coach wanted me to get out of the house and take my mind off swimming, so I decided to look at the AWLQ website and saw they were looking for volunteers,” she shares. Initially intending to work with dogs, Maddie ultimately chose to volunteer

with cats. “It’s worked out well because after my Saturday morning training, I can relax at home for a bit before coming in to see the cats. It gives me a good start to the weekend and helps me unwind after a hard week of training. There’s a little bit of cleaning, but if there isn’t much to do, I just chill and play with the cats!”

A lifelong animal lover, Maddie has a 14-year-old Maltese Shih Tzu named Lucy, a 10-year-old Oriental Shorthair cat named Ebony, and a five-year-old Burmese cat named Rey.

Her journey is far from over. She aspires to continue representing Australia on the world stage while also serving as an ambassador for children with disabilities, inspiring the next generation of athletes.

Maddie’s story is one of resilience, passion, and self-belief. With her silver medal from Paris as a testament to her hard work, she continues to inspire with her motto: “Train hard, never give up, dream, believe, achieve.” And, of course, make a few feline friends along the way!
