A creamy seductive mouth feel and good lacing complements the robust malt and raisin fruit flavour. Slight presence of dusty hop flowers in the aftertaste but malt prevails in the sweet finish. A cracking example of a traditional Scottish 80/-ii.

Suggestions of dark fruits in the aroma, and also citrus, banana, some spice and hint of roasted malt. The body is medium with smooth mouth feel and dry finish.

Pours a hazy golden colored liquid, with a thick white dense head which has nice retention and lacing. The nose shows malts wheat and hops, and the wheat is very present. Medium body and nice carbonation.

Clean, flavorful and yeasty. Medium bodied and thirst quenching in summer heat.

ลัมบิค Lambic is a type of beer brewed traditionally in Belgium. Lambic is now mainly consumed after refermentation. Unlike conventional ales and lagers, which are fermented by carefully cultivated strains of brewer's yeasts, lambic beer is produced by spontaneous fermentation: it is exposed to the wild yeasts and bacteria that are said to be native to the Senne valley, in which Brussels lies. It is this unusual process which gives the beer its distinctive flavour: dry, vinous, and cidery, usually with a sour aftertaste.

Wheat Beer (Dark) Dark wheat varieties are made with darker, more highly-kilned malts (both wheat and barley) and typically have higher alcohol content than their lighter cousins.

Craft Beer (Traditionally Crafted Beer) Craft Beer is made by craft brewers that possess 3 key traits.

To qualify as a microbrewery, the establishment must produce less than 15,000 barrels annually.

Small local breweries are not a new idea. Before the days of refrigeration, most towns and villages had a brewery, as beer could not be transported before it went bad. After refrigerated transport became possible, most local breweries were closed down in favor of the larger, more consistent brewers.

The first to actually use the term microbrewery was a small operation that opened in 1976 in Sonoma, California. .

German Hops | The oldest evidence concerning hop cultivation, which can be traced, is the year 736 AD in the German Geisenfeld/Hallertau region, located north of Munich. For a long time, hops were only used as flavouring agents or for medicinal uses such as sedatives or laxatives. Originally it was common to brew beer with other plants like laurel, sage, lavender or herbs. Until the Middle Ages, when adding hops to the beer brewing process became popular.

In the Bavarian Purity Law, passed in 1516, water, barley and hops were officially confirmed as the only ingredients in beer.

Originally, hops were only grown in locations where beer had previously been brewed. In the 18th and 19th century, many sovereigns and scholars stood up for intensified hop cultivation. The aim was to raise the people’s prosperity and secure higher tax revenue. The building of traffic routes and railways supported the production of beer and during that time consumption also increased. Since that time, hops growing and trading has developed on a large scale. The Hallertau, which became Germany’s hops centre in the 1900s, has been the largest hops producing area in the world since 1966. ii

Scottish 80.- | It is generally held that the classic Scottish ale is referred to as an 80/- (eighty shilling) while a stronger Scotch ale of today is often known as a 90/- (ninety shilling) or "Wee Heavy".

This shilling system started to be used some time in the mid-19th century. The "shilling terminology" started just after 1880 when the previous taxes on malt and sugar in the United Kingdom were replaced by Beer Duty. But brewers were using this naming convention as much as fifty years prior to 1880. The names referred to the invoice price of ale per barrel (36 U.K. gallons or about 43.2 U.S. gallons) or hogshead (a cask holding 54 U.K. gallons or about 64.8 U.S. gallons). This dual application of pricing applied to two different liquid measures brought about complications: a 60/- ale in the barrel was a 90/- ale in the hogshead even though it was the same product. The actual price of the ale could be as little as half of the invoice cost once the calculated duties and the discounts allowed by the brewers were subtracted.

During this period the majority of Scottish brewers were producing a number of beers of differing styles and alcohol content. Light beers such as table beer ranged from 42/- to 48/-. Mild and pale ales were 54/- and 60/- while export beers were sold as 70/- and 80/-. Strong ales were usually sold as a twelve guinea or fifteen guinea (although the guinea coin - worth 21 shillings at the time - was phased out after the Coinage Act of 1816). The strong ales were typically sold in bottles in "nips" of 6 fluid ounces which equates to 1/3 Imperial pint. These "nips" were also known as "Wee Heavy", hence the origin of this term. As can be seen, these values gave a rough indication of the alcoholic strength of the product. However, they were far from consistent.

Eventually this system lost most if not all of its meaning.

The shilling system was carried on through World War II but gradually declined in use thereafter. The terms "Light", "Heavy" and "Export" took the place of the previous shilling terminology as the breadth in range of beers offered shrunk. Light, a low gravity ale, replaced Mild although was typically still dark in color much as what most of the few Mild ales still available today in the U.K. are. Heavy was a medium gravity beer that was sweeter than Light but still fairly light in color. Export beer, along with the increasingly popular India Pale Ale, were beers of the highest quality, were stronger and darker than Heavy and were normally brewed for the export market.

Today, few brewers use the terminology but those that do have for the most part adhered to labeling beers of increasing alcoholic strength and flavor profile with increasing "values" in shillings. It is somewhat admirable that the terminology has outlived the currency unit itself. This system was unique to Scotland and as such provides one of the purely Scottish contributions to the overall history of brewing. So, the next time you approach the barman in the pub and order a "pint of eighty", pause before you take that first sip and raise your glass in salute to all the great brewers of the past and present that have contributed to this truly Scottish tradition.

German Pilsners | The Pilsner beer was first brewed in Bohemia, a Germanspeaking province in the old Austrian Empire. Pilsner is one of the most popular styles of lager beers in Germany. It’s often spelled as "Pilsner", or spoken in slang, as "Pils." Classic German Pilsners are very light straw to golden in color with a dense and rich head. They are also well-hopped, brewed using Noble hops which exhibit a spicy herbal or floral aroma and flavor, often times a bit coarse on the palate, and distribute a flash of citrus-like zest--hop bitterness iv Fuggles Hops | This variety was noticed growing "wild" in the hop garden of George Stace's house at Horsmonden in Kent, England in 1861. In 1875 it was introduced by Richard Fuggle who lived in the village of Brenchley (not far from

Horsmonden) and hence it was called Fuggle. The aroma is earthier and less sweet than other Kent hops. v

Bramling Cross Hops | Bramling Cross is a dual use hops that has a strong foothold in European brews. It originates from the U.K. dating back to 1927 when two varieties were mixed to produce this darling. Bramling and Monitoban are the proud parents of this fruity aromatic hops. Both of these would indicate a more earthy, herbal aroma and flavor, even spicy. But the lower amount of these oils in total reduce the strength of these traits and allow for more fruity flavors and smells to come through.

Bottom Fermented | A slow alcoholic fermentation during which the yeast cells collect at the bottom of the fermenting liquid. It takes place at a temperature of 4° - 10° C. (39° - 50°F.). It is used in making lager beer and wines of low alcohol content but fine bouquet. vii Saaz Hops | Saaz Hops changed the world of brewing forever, as it is an esteemed and honored variety that helped to define European Lagers and Bohemian Pilsners. It is a natural variety from Czechoslovakia (Czech Republic) that originated from the area around the town of Saaz which is in Bohemia.

Saaz hops also subsides the oxidation and aging process in beer, giving it a longer shelf life. It produces small and light cones that can be difficult to harvest, but that has not slowed down its demand on the commercial markets, and is a staple to many breweries around the world. The aroma from Saaz shows a seasoned herbal character.

viii Trappist Monks | The Rule of St. Benedict, written in the sixth century, guides the lives of Trappist monks. The Rule describes the ideals and values of a monastic life. "Strict Observance" refers to the Trappists' goal of following to stability, fidelity to monastic life, and obedience. Trappist monks generally speak only when necessary; thus idle talk is strongly discouraged. According to St. Benedict, speech disturbs a disciple's quietude and receptivity, and may tempt one to exercise one's own will instead of the will of God. Speech that leads to unkind amusement or laughter is seen as evil and is banned. A Trappist Sign Language, distinct from other forms of monastic sign language, has developed to render speaking unnecessary. Meals are usually taken in contemplative silence as members of the order are supposed to listen to a reading.

ix Top-Fermented | Ale yeast strains are best used at temperatures ranging from 10 to 25°C, though some strains will not actively ferment below 12°C. Ale yeasts are generally regarded as top-fermenting yeasts since they rise to the surface during fermentation, creating a very thick, rich yeast head. That is why the term "top-fermenting" is associated with ale yeasts. Fermentation by ale yeasts at these relatively warmer temperatures produces a beer high in esters, which many regard as a distinctive character of ale beers. Top-fermenting yeasts are used for brewing ales, porters, stouts, Altbier, Kölsch, and wheat beers.
