Where did your career take you as a musician?

I did my surf bronze at Mermaid Beach Surf Club many years ago and through that process developed a love of the ocean and the beach. When I am home, I take a swim and I enjoy paddle boarding, bike riding and running. I love to practise the saxophone on a Sunday after the neighbours are awake, and I also have one in my office in Canberra, along with a piano. Sometimes my colleagues come to my office and we have a sing song of 80s hits to wind down after sitting.

I miss the thrill of a big stage performance and the interaction with a live audience, also the feeling of international touring, but I am forever grateful for the chance to experience the musicianship, the rich life of an artist and the lifelong friendships along the way.

Music is what provided me, as a young person from very humble beginnings, with a life-changing opportunity to make something of myself. My attraction to it started in primary school on the recorder (parents beware!) and later in high school, I moved to the tenor saxophone and voice. Music is something I have always done, sometimes full-time and at other times, part-time. I also taught myself the piano in high school and performed in piano bars in Sydney for a time.

I enjoyed incredible opportunities and experiences during my career as a professional musician. I started out playing local pubs and clubs. I was fortunate in my very early career to perform at large events such as the Manly Jazz Carnival and the Adelaide Grand Prix, and to perform with jazz legends Don Burrows and James Morrison. I also played at the Sydney Opera House and supported Robert Cray in Adelaide in the late 80s. In 1996, I released an original EP called “See You In Heaven” as a tribute to my late mother who died from stomach cancer. More recently, I travelled for many years with Gold Coast corporate band OzGroove to South East Asian countries and New Zealand, Fiji and the America’s with the standout memory from Las Vegas at Planet Hollywood, where we had Elvis Presley’s best man, Joe Esposito as the guest of honour and Human Nature as our guest performers.

What motivated you to pursue a career in politics?

I never dreamed of becoming a politician, I still prefer the title of parliamentarian! It really was a chance conversation with a close friend who was working for a senior Liberal who asked me if I wanted to meet Joe Hockey and I said ‘yes, of course’ and so we met at a function and we hit it off. I then went to Canberra for Joe’s Budget speech in 2014 and met a number of Liberal Cabinet Ministers and the Prime Minister at that time. Their speeches all inspired me to want to contribute to the cause and country. I joined the LNP and after working with the Party for many years including serving as LNP Women’s President, I was elected as the Member for Moncrieff in 2019. I had a lot of support along the way for which I am extremely grateful. No one does it alone.

Absolutely everything! Living in our regional city is having the best of both worlds. The lifestyle pace is slower than in the major cities and living close to the ocean has a very special feeling when you come home to it. I love my community and the generosity of spirit that Gold Coasters extend to one another, especially to those who need a hand up. I’m so proud to be a Gold Coaster, especially when we fundraise for charities like St John’s, Gold Coast Community Fund, Muscular Dystrophy and The Salvos. There are so many good and gracious people on the Coast, I couldn’t possibly name them all, but if they read this little article, I’d like to say thanks for all you do for our community and see you at the next fundraising event.

EMMA SNOWSILL, OAM Triumphant

I grew up an avid, passionate swimmer from a young age. I was fortunate to have found sport I absolutely loved. After changing schools to St Hilda’s in grade 10 to pursue swimming along with my studies, I aspired to be an Olympic swimmer. It was a very sporting school, and I became involved in running, which I didn’t enjoy. I struggled with it as it was very painful with shin splints. It took me a long time to enjoy it. Then I was exposed to Triathlon through swim club. Once I went to see a Triathlon, I was hooked. I competed in a Teams event in the swimming portion and I just loved the atmosphere. But it took me a few years until I took part in all three stages (swim, bike and run).

The most successful triathlete in the history of the sport, Australia’s Emma Snowsill is just as motivated and focused on her present and future, as a mum of two, married to 2008 Olympic champion in the men’s triathlon, Jan Frodeno, and equally determined to focus on her own health and well-being.

An Olympic, Commonwealth and triple World Champion, Emma won the ITU World Cup 12 times and graced the podium 23 times. Her sensational performance winning the Gold Medal at the 2008 Beijing Olympics and her bubbly personality ensured Emma Snowsill has etched her name and her achievements in the sporting annals and the hearts of Today,Australians.Emma

Injuries are something you have to deal with physical and mentally. Over time, I came to understand the nature of professional sport. Physical is only 10 percent of the equation the rest is mental. High performance is all about the mind and overcoming those physical boundaries. There are ebbs and flows, and every training session, you have to rely on self-talk, understanding your goals and working towards them. It all comes back to goal setting and the reasons why we pursue a career in professional sport. From every setback, you have to grow from those experiences and look at ways of self-improvement.

What attracted you to the sport of Triathlon?

Snowsill, OAM lives with her family in Spain and visits her hometown, the Gold Coast as often as she’s able. Here, Emma shares a little about her career, and her approach to health and well-being.

What were the challenges, physical and mental, during your career?

Not necessarily. I’d like them to experience as many sports and other opportunities as we can present them with. Competitive sport has to be self-initiated. It has to come from the right place. You have to love it. I won’t push it upon my young children. They need to understand the strength and the skillset required. I didn’t come from a sporting family. My sister and I were never pushed so that’s something we won’t do either. We found something inside ourselves and we grew to love it. The competitive level came about afterwards.

My husband is still competing, and he’s considered the greatest of all time in our sport so I do live and breathe it beside him, but I am not involved. I have a connection and ride the highs and lows of his career with him. It’s a sport I truly love, but on a professional and personal level, I don’t need to be involved in it at this point in time.

The 2006 Commonwealth Games in Melbourne! You can’t beat competing in front of a home crowd. I still get goose bumps knowing every single person there was cheering me on. That was the second major games in my home country in my lifetime, in my career, which was very special. Then I’d have to say Beijing 2008. I always aspired as an 11 year old watching Susie O’Neill compete in Barcelona, to be an Olympian. That became my focus and I’m extremely proud of that. You must have many highlights, but what are the real ‘shining moments’ you recall and look back on with pride and emotion?

As elite athletes, do you/will you encourage your children to play sport at a competitive level?

Sport brings out a better version of myself. It has evolved into me wanting to be strong enough, fit enough for my kids to help them with their own physical well-being, and to keep up with them snow skiing and mountain biking. These days, I’m kinder and more gentle to my body. Fitness and health give me energy and flexibility of body and mind.

Exercise is my life. It’s a form of meditation for me. I get a lot of satisfaction from it. When I retired and as years have gone by, I have time to focus on myself, to connect with nature in the outdoors, breathe in the fresh air. I have come to experience fitness in a different way. In competitive sport, it can become a job, regimented and lineal, a routine or a program, and the joy can disappear. Now, it’s meditative to go for a run on my own, to have that time to think and get clarity.

Fitness and health give me energy and flexibility of body and mind.

Are you involved in Triathlon these days? In what capacity? How do you keep fit and healthy?

Date night dinner with hubby: I love food, it’s a big part of our lives. It doesn’t have to be fancy, just great food, good wine, great company.

What do you think are the benefits an Olympic Games brings to a Host City/country?

Beach: Has to be Tallebudgera Creek with my young children. It reminds me of Hawaii with the Headland and Park opposite. Kids activity: Outdoor for swimming in the ocean and surfing. But we enjoy our time in Europe snow skiing.

We are lucky that Australia is such a strong sporting nation and the fact that we embrace sport as we do is beautiful. It brings the community together, from grass roots to the upper echelon and the world’s best. I still find the same excitement when I watch live events. The Olympics brings that sense of wonder, awe and adventure to people’s lives. Then there are the benefits for the economy, tourism, and the lasting impact that new infrastructure has on young athletes and their pathways to follow their dreams. That’s the beauty of the Olympic Games – for young people to dream and aspire to achieving the highest level. There’s so much to look forward to in 2032 and I can’t wait to see the Gold Coast evolve.

Drink: Coffee Netflix/Stan series: Formula 1 series. If I didn’t take up the endurance sport of Triathlon, I would have been a Formula 1 driver. Dream destination: As a sun lover, I like anywhere with warm water, blue skies and white sandy beaches. Sounds like the Gold Coast and since I have been away for a long time overseas, the GC is still is my dream destination. Meal: I’m a breakfast person, so eggs! I’m a foodie at heart so love eating great food. When I‘m eating breakfast I’m thinking about lunch, and when I’m eating lunch, I’m thinking about dinner.

It’s incredible! As an athlete, it means so much. The Sydney 2000 Olympics were a pivotal moment for me in my career, understanding my aspirations as a swimmer and witnessing Triathlon as a new event at Sydney 2000, seeing it on the world stage. That changed my path and solidified my ambitions, fortified my dreams. It’s a great opportunity for young people to really go forth and see it as a tangible reality, the possibility to pursue their dreams.

Best memory at school? The flour bombs thrown around, on our final days of school life, in celebration of finishing school and the friendships we made and excited about the future.

Academically, I have been an English Teacher for over ten years and taught in Japan as a qualified TESOL teacher. What did you want to be when you grew up? I wanted to be an Air Hostess or Pilot as I just wanted to fly.

Is your life now what you expected it to be? If so how? I was able to achieve my passion and dream to fly and had a couple of flying lessons but I became a Flight Attendant and Trainer in the Airlines for 15 years but sadly came to an end when the Airlines collapsed. We have a vision of how our life is expected to be, but it does not always go according to plan. I love the Aviation Industry and I love what I do in the Medical Industry. I feel blessed to have found a balance in both my personal life with my three beautiful boys and working life with a great team of professionals.

Where did you go to school for primary and senior? All Saints Anglican School. Favourite subject and why? Art & Home Economics – I’ve always loved anything where I’m able to be creative and hands on. Favourite teacher and why? So many! All the teachers at All Saints were amazing. I could name all of my teachers from year 1-12, I enjoyed each and everyone. Not to be biased, but I think All Saints is the best school on the Gold Coast! A lot of my favourite teachers shared my creative passion like my art teachers Mrs Morley & Miss Ciafardini, Drama teachers Mrs Middlebrook and Mr Cherry and my Home Ec teachers Miss Daniels & Mrs Sheehab. What did you want to be when you grew up? When I finished school I didn’t know what I wanted to be so I studied Education and Science with the thought of going on to study physiotherapy. I never in my wildest dreams expected to be working alongside my husband in our clinic, but looking back now I couldn’t imagine it any other way.

Best memory at school? When I was in primary school, I managed to convince Wolf Blass to let me to interview him about his migrant journey. It was an inspirational story to fuel the budding entrepreneurs in the class!

Academic or sporting achievement? Academic- Graduating a Masters in Business Administration with Honours. Sporting- Top 3 in QLD and Top 15 in Australia for triple jump as a junior. I was the first female to win the Player Most likely to succeed for Rugby union at my school. My horse also won North Queensland Galloway of the Year.

Where did you go to school for primary and senior? I went to Walford Anglican School for Girls in my hometown of Adelaide before relocating to the Gold Coast to complete Year 11 at St Hilda’s School. I moved to Bond College for Year 12.

Best memory at school? Travelling away for athletics, horse riding and various sports with my friends to represent my school, region or state was always so much fun.

Is your life now what you expected it to be? If so how? Not at all. My life is so much more blessed than I could have ever imagined with my gorgeous, loving husband and three beautiful children, living in one of the most stunning places in the world!

Favourite subject and why? Biology because I loved Science and Physical Education. I was a very athletic child and loved everything from Athletics to touch football and volleyball.

Favourite teacher and why? Mr Cox- he was my athletics coach and PE teacher and to this day is still a dear friend of mine.

Academic or sporting achievement? I was never terribly sporty, but I somehow managed to exhibit a knack for shot-put that landed me in the SA state carnival. What did you want to be when you grew up? I wanted to be a plastic surgeon when I was in primary school, but came to the realisation that my strength was in communications in high school and completed a Bachelor of Journalism at Bond University. Is your life now what you expected it to be? If so how? My best friend and I made a pact to be neighbours when I returned to Adelaide so we could host each other for barbecues and our children could play together. Now, he lives around the corner from me, our puppies have regular playdates and I’ve become incredibly proficient at charcoal. Career-wise, I still have a published article in Gourmet Traveller on my bucket list!

Where did you go to school for primary and senior? I went to AB Paterson College from prep- year 7, then I went to Trinity Lutheran College from year 8-12.

Where did you go to school for primary and senior? Burleigh state school then St Hilda’s.

Best memory at school? I don’t have one best memory, however I loved being involved in all of the performing arts productions and musicals during high school. They were so much fun, not just being able to perform, but also spending time with my friends. Another highlight of my time at school was going on the Trinity Performing Arts trip to Melbourne.

Academic or sporting achievement? Representing Qld in Water Polo and Australian Youth Hockey Squad. What did you want to be when you grew up? Freelance Travel Photographer or a Sports Team Physio. Is your life now what you expected it to be? If so how? Not even close...but wonderfully rewarding in different ways.

Favourite subject and why? English as it was the easiest to follow.

Academic or sporting achievement? North Queensland age champion for Breaststroke (swimming).

Best memory at school? Dancing lessons with Nudgee College and Gregory Terrace boys.

What did you want to be when you grew up? A mum.

Favourite subject and why? My favourite subject was ancient history. I found it really interesting, learning about the different civilisations and how they used to live.

Favourite teacher and why? Mrs Burton was my favourite teacher. I had her for ancient and modern history. She was always really supportive and helped me do my best.

Academic or sporting achievement? I received a performing arts award one year, but I think actually graduating was an achievement for me.

Is your life now what you expected it to be? If so how? Yes and no. When I was around 13 years of age, I knew I wanted to be a makeup and hair artist. I’m glad I was able to start my Diploma of Screen and Media in Specialist Makeup Services in Year 11, so when I finished high school, I was a qualified makeup artist. Since then, I have been able to get some really awesome work opportunities, that I didn’t expect to be able to get so soon in my career. I am very grateful for those opportunities.

Do you have a look you are trying to create? No, just whatever feels good at the time. I just like to be comfortable, usually that means colourful and fun to me. My style is all about balance. This was my first time wearing all white. Fashion philosophy?

I have found some amazing finds both local & in my travels. Some of my favourite pieces have been less than $100. Fashion does not always need to be the most expensive dress on the rack, but my most memorable would have to be a pair of heels from Milan.

I follow majority Australian designers as I find there fit better for my body shape, However I do have a lot of Rebecca Vallance in my wardrobe as I find her styles timeless and chic. Any social media style favourites you follow or who inspires you?

Jesinta Franklin- I love how she is an independent, empowering, strong, and a down to earth woman. I love how everything she does is so refreshing from family life to catwalk, from beauty to fashion. I just love her authenticity and how she lives a true life, the glitz, the glamour and everyday life.

As a hairdresser, tell us about your job and what is the best part? My work is my passion, I love making people feel good about themselves. Your hair is the biggest fashion accessory you can’t take off. There is not a one size fits all, hairdressing is constantly changing and evolving, it is very similar to fashion in that way. Who was your early inspiration in fashion –mother or someone on TV or actor?

A fuss free approach to getting dressed. Women sometimes over think their daily dressing habits or simply have too much in their wardrobes, resulting in complicated time wasting when putting a look together.

Although the bikini is generally credited to Louis Reard in 1946, Paula began wearing them in the 1930s. When somebody saw her self-made costume on the beach in Surfers Paradise and asked to buy one, she seized the opportunity and turned her two-piece designs into a business.

She began manufacturing with machinists in her attic, but later built a factory, and opened a shop called Fiesta, later the Tog Shop, the Bikini Bar and finally Paula Stafford of Surfers Paradise. She also sold her creations via mail order. The firm expanded into leisurewear for men and women, in demand from stores including British retailers Selfridges and Liberty of London and in Australia Myers, Georges, Buckley’s and David Jones, as well as Japan, Hawaii, South East Asia, Canada and New Guinea. She also founded a modelling agency and hotel.

The Gold Coast is mourning the passing of “Bikini Queen”, pioneer and business legend, Paula Stafford. 10 June 1920 to 23 June 2022.

She had a lifelong passion for creating fabric and weaving and decided to go to the Emily McPherson College of Domestic Economy. In 1943, Paula married Beverley Ralph Stafford and lived on the Gold Coast. Beverley had a beach hire business and was known for his colourful oversized shirts.

Paula wore her two-piece bathing suits and started taking orders on the beach. Their four children, Frances, Susan, Sibyl and Michael all followed her into the business.

Paula was born in Victoria in 1920. She studied at Melbourne Girls’ Grammar and dreamed of being an architect, however, her Head Mistress dissuaded her saying it was not a job for a woman.

Paula is credited with introducing the bikini to Australia. A fashion icon, her bikinis and leisure wear helped put Surfers Paradise on the map.

In a famous incident in 1952, model Ann Ferguson was asked to leave the beach in Surfers Paradise because her outfit was too revealing: she was wearing a Paula Stafford bikini. Paula responded by sending five women wearing her bikinis to the beach in what became a infamous PR stunt.

I personally had the privilege of working for Paula in her Cavill Ave store when I was 18. She was a wonderful mentor. When I wasn’t selling them, I was modelling her bikinis. My first award-winning gown was made with fabric bought from Paula’s boutique.

Paula is quoted as saying “It is no good looking back and saying ‘I should have done this. I should have done that’. I did what I did and that was that.” Enduring advice and attitude we could all benefit from.

“A fashion icon, Paula’s bikinis and leisure wear helped put Surfers Paradise on the map.”

Paula was very much involved with the Gold Coast City Council in many promotions to New Zealand and interstate encouraging visitors to enjoy our beautiful beaches and lifestyle. The promotional tours included fashion shows in the streets and other venues with Courtesy Maids and Golden Girls wearing bikinis and other clothing designed by Paula. I remember one bitterly cold morning in Melbourne modelling a Paula Stafford bikini on a tram track in Bourke Street.

Paula Stafford was awarded a Medal of the Order of Australia for her service to the fashion industry. Paula was awarded Gold Coast City Council’s “Legend Award” in 2012 and she has her name on the Paula Stafford Park at Kurrawa. In 2013 Paula was inducted into the Queensland Business Leaders Hall of Fame.

1 To make the Shirazi salad dressing, combine the ingredients in a small bowl or jar and whisk or shake to combine. 2 Arrange the tomato, cucumber and red onion in a serving bowl, pour over the salad dressing and toss through. Scatter pomegranate jewels over the top and serve.

Everyone in Iran knows this salad, named after Shiraz, a southern city near the Persian Gulf. The ingredients are very simple; the art is all in the cutting. It’s important to cut the dice very small and very evenly and, for that reason, all the ingredients have to be crisp and firm. The dressing is nice and tart with the great combination of dried mint and sumac. Shirazi salad is usually made just before serving, but the leftovers are actually really nice because the flavours all meld and the liquid from the vegetables adds to the dressing. The salad dressing makes a lot, and it’s traditional to drink the dressing at the end of the meal. We serve Shirazi salad with pilafs and lamb dishes, such as ghormeh sabzi or gheymeh bademjan.

PREP TIME 10 MINS + 6 HOURS FREEZING TIME SERVES 8 MAKES ¼ CUP (60ml)

• 2 tablespoons Saffron Liquid • 2 tablespoons rosewater • Edible dried rose petals, to serve

4 Spoon the ice cream into bowls and top with rose petals and a few extra pistachios, if you like. Serve immediately. Enjoy!

You can make this traditional Persian ice cream from scratch but the easy way to do it is to buy vanilla ice cream and add the Persian ingredients. I do this in my shop because I don’t have an ice cream maker so you definitely have permission to do it at home!

INGREDIENTS • 1g saffron threads  • 1 tablespoon granulated sugar  • ¼ cup (60ml) boiling water

1 Pour the cream into a 30 x 20cm baking dish, then set aside in the freezer for 2 hours.

3 Allow the vanilla ice cream to stand in the fridge for 15–20 minutes to soften slightly, then add the pistachios, saffron liquid, rosewater and cream blocks and stir through until well combined. Return the ice cream to the freezer for 1–2 hours until firm.

Grind the saffron and sugar using a mortar and pestle, then transfer to a heatproof bowl and stir through the boiling water to bleed the colour. Set aside for 5 minutes. INGREDIENTS • 1 cup (250ml) thickened (whipping) cream • 2 litres creamy vanilla ice cream (pistachio ice cream also works well) • 1 cup (130g) chopped pistachio kernels, plus extra to serve (optional)

4 Enjoy sabzi khordan with your meal or wrap with feta in Persian flatbread for a tasty lunch.

3 Roughly chop the herbs and spring onions into 4cm lengths, then store the herbs, spring onion (if using) and radishes, loosely wrapped in paper towel in a plastic bag in the fridge, for 2–3 days.

My father used to make this omelette for me, but I have to admit I didn’t like it much when I was younger. Now, in Australia, my tastes have grown up a bit and I love it. I’m not the only one! This is the number-one breakfast in my cafe.

1 Score a cross into the top half of each radish.

1 Heat the olive oil in a small frying pan over low heat. Add the eggs and half the feta, then, using a spoon, gently separate the yolks from the whites and push the yolks to one side of the pan. Stir together the egg whites and feta and cook for 1 minute. Spoon the yolks on top of the cheesy egg white, then gently swirl them over the mixture and briefly cook until they are heated through but still a little runny. Scatter the remaining feta on top and remove from the heat. Season with black pepper.

• 1 mild, long red chilli, finely chopped

4 Pour the sauce over the salmon, top with the ginger slices and bake for 10 minutes or until cooked to your liking.

3 Combine the chilli, coriander, garlic and lemongrass in a small blender and blend until finely chopped. Add the fish stock, fish sauce, soy sauce, lime juice and brown sugar and blend until well combined.

Whenever Mum is cooking her salmon, we all rush to her house for dinner! It’s light, but so delicious. This recipe also works well with white fish or firm tofu.

2 Season the salmon fillets with salt, freshly ground black pepper and a sprinkle of sweet paprika. Heat a splash of olive oil in a small non-stick frying pan over medium heat. Lightly brown the salmon fillets on each side, then place them in a deep ovenproof dish.

BÉCHAMEL SAUCE • ¾ cup (185g) butter • ¾ cup (110g) plain (all-purpose) flour • 3 cups (750ml) warm milk • 2 eggs, lightly beaten • ¾ cup (80g) grated parmesan cheese • ¼ teaspoon freshly grated nutme

• 1 bay leaf • 1 cinnamon stick • 400g tin crushed tomatoes • ½ cup (125ml) beef stock, as needed • 250g penne pasta ¾ cup (80g) grated parmesan cheese

2 While the meat is cooking, bring a large saucepan of salted water to the boil. Add the pasta and cook until al dente. Drain, then transfer to a bowl and toss with 2 tablespoons of the olive oil. Set aside to cool.

3 Preheat the oven to 200°C. Brush a large ovenproof dish with oil.

4 To make the béchamel sauce, melt the butter in a saucepan over medium heat. Add the flour and stir for 2 minutes, then remove the pan from the heat. Slowly add the milk, stirring until the mixture is smooth and thick. Cover and set aside to cool for 10 minutes. Stir in the eggs, parmesan and nutmeg.

1 Heat a splash of olive oil in a large non-stick frying pan over medium–high heat. Add the beef and cook until browned and the excess liquid has evaporated. Add the wine, onion, garlic, oregano, rosemary, cloves and allspice and cook for 5 minutes. Add the tomato paste, bay leaf, cinnamon stick and crushed tomatoes. Reduce the heat and simmer for 1 hour, adding the stock if the mixture is drying out. Season with salt and freshly ground black pepper.

you haven’t tried mushroom meat before, this recipe is the perfect place to start.This massaman peanut stew is so hearty, and an easy slow cooker recipe for those days when you just don’t have time to spend in the kitchen.

1 Turn your slow cooker to the sauté setting. Add the olive oil and, once it is hot, add the curry paste and sauté for 1 minute. Add the onion and plant-based braised beef or shiitake mushroom and sauté for a further minute. Add the potato, coconut cream, 400 ml of water, the peanut butter and coconut sugar, then stir well and cover with the lid. Switch the slow cooker to low and cook for 6–8 hours, until the stew is reduced and thick.

3 Serve the massaman peanut stew with steamed rice, sliced cucumber and chilli, roasted peanuts, fried shallots and lime wedges for squeezing over.

2 With 5 minutes left on the slow cooker, add the peas, stir through and cover with the lid again.

INGREDIENTS • 1 tablespoon olive oil • 1 onion, finely diced • 2 large garlic cloves, crushed • 3 celery stalks, finely diced • 2 small carrots, finely diced • 1/4 teaspoon cayenne pepper • 2 teaspoons smoked paprika • 2 teaspoons ground cumin • 2 x 400g cans chopped tomatoes • 2 x 400g cans black beans, rinsed and drained • 220g (2 cups) TVP (Textured Vegetable Protein) • 2 vegetable stock cubes • 1 teaspoon sea salt • freshly ground black pepper, to tastes

1 Turn your slow cooker to the sauté setting. Add the olive oil and, once it is hot, add the onion, garlic, celery, carrot, cayenne pepper, paprika and cumin and sauté for 2–3 minutes, until the onion has softened.

2 Add the tomatoes, black beans and TVP to the slow cooker and give everything a really good stir. Add 800ml of water and crumble in the vegetable stock cubes. Season with the salt and pepper and mix well. Switch the slow cooker to high, cover with the lid and cook for 4 hours.

TO SERVE (OPTIONAL)

3 Once ready, serve the veggie con carne with your choice of corn chips, diced avocado, coriander leaves, coconut yoghurt and sliced red chilli.

GOODRIDICULOUSLYWAFFLES

Not only are waffles delicious, they are also super versatile! This recipe is a base that you can make sweet or savoury by adding different ingredients. I love serving savoury waffles with fresh herbs and vegan cream cheese, and sweet waffles with loads of vegan butter and maple syrup.

RECIPES

2 Heat a waffle iron and lightly grease with vegan butter or olive oil.

1 To make the sweet waffle batter, combine the soy milk and apple cider vinegar in a large bowl and leave for 2 minutes. Sift in the flour and baking powder, then mix well. Add the maple syrup and salt and stir to combine.

3 Scoop enough of the batter into the waffle iron to cover the base and close the lid. Cook on high for 4½ minutes, then transfer the waffle to a plate and repeat with the remaining batter.

4 To serve, top the sweet waffles with vegan butter and your choice of fresh berries. Pour over a little extra maple syrup and enjoy!

How did you discover your contortionist talent? I tried gymnastics when I was young, but I didn’t like it. How often do you train to be an acrobat?  I train up to five days per week. I do different types of training each day to keep it interesting. How do you balance your contortionist talent with school and study? I enjoy schoolwork so juggling the two is not too hard. What do you enjoy most about the Pink Flamingo? The people I get to work with and the show. The cast are all so inspiring.

What’s next in terms of performances for you?

On and off for 36 years. I worked in Hong Kong at the end of the Vietnam war and England. I hated retirement after a few months. I tried it didn’t work for me. My feet kept tap dancing in bed, so I had to get back to work! I don’t believe in retirement if you are still active, do it! What are some of the highlights of your career?

I played two roles, in fact. I’m so grateful to Matt Ward. I’ve never done a musical before. I always wanted to do Shirl the barmaid and then a fabulous tribute for me as a young Bernadette in Les Girls. How did you feel being back on the stage?

Witty, wise and worldly, Carlotta is the unrivalled doyenne of stage and screen, having begun her career in the 1960s as one of the original members of the internationally renowned “Les Girls” in Sydney’s Kings Cross. She went on to become the show’s star and compere, before touring Australia on a road trip that inspired the film “Priscilla Queen of the Desert”. Over the years, Carlotta made a name for herself on TV, including appearances in the soap opera Number 96 as Robyn Ross, a transsexual showgirl – an explosive plotline in the early 70s – and as a regular panellist on talk-show, Beauty and the Beast. She also featured in her own show, “Carlotta’s KingsX”, a retrospective of her life and career with classic storytelling, stand-up comedy, lavish costumes and “Les Girls” dances. Living on the Gold Coast, Carlotta is in demand for festivals, galas and premieres. In 2020, Carlotta received a Member (AM) of the Order of Australia for her service to the performing arts and to the LGBTIQ community. Fresh from her roles in the Gold Coast stage show of “Priscilla”, Carlotta shares some of her memorable moments and the secret of her lust for life.

Fabulous, both the critics and stage whisper. I am thrilled. I have achieved my goal. Why did you choose to live on the Gold Coast?

WHEN IT COMES

The trouble is, the ‘egg’ is already ‘scrambled’ by the decisions made earlier on. A pathway of high-conflict and destruction, chosen in the aftermath of separation, can be difficult to turn back from. This is especially so if that pathway has involved your spouse, who is likely now also angry, and possibly seeking their own form of ‘payback’. Had you been allowed to pause; things might have been different. Perhaps there could have been a settlement through mediation. Perhaps you and your partner could have looked into a collaborative divorce. Perhaps a direct discussion between you both may have seen an outcome reached, at least in part. Instead, those opportunities have likely been obliterated by a decision made at a time when you were just not ready.

If you have separated, or are going through divorce, your first meeting with a family lawyer like us will occur when you are at an emotional low point. However, that initial anger may subside in the passing of weeks and months. With counselling, and time, you may have a different view of the separation after 6 months’ of living with it. How you felt on day one of your separation will likely differ dramatically to your feelings six months ‘in’. The so-called ‘revenge’ which might have seemed motivating earlier on may have been a mirage. You may have realised that any vindication achieved in Court is short-lived, and your focus may then be on moving on with your own life.

Of course, there will be times when there is no choice but to commence Court proceedings – when there is the risk of assets being disposed of, or when a spouse has been ‘cut off’ financially. There are, however, plenty of cases where there is time to allow the dust to settle, and for you to experience the roller coaster of emotions before being asked to give instructions as to the future direction of their case.

This is a time when lawyers will ask you to begin making important decisions about how your separation will proceed. In reality, however, it is the worst possible time for you to be making any decisions. If how you are feeling is variable, so too will be your decision making. The problem is that the decisions you make at this point will set your case on a particular pathway. If you are angry, you may wish to ‘go to Court’, perceiving that such a process will be to exact retribution on your spouse, or to have their conduct exposed. When you buy a lot in a community titles scheme (Body Corporate) you are automatically a member of the body corporate and must adhere to certain rules. There are two types of meetings in body corporate, general meetings and committee meetings. A general meeting is a meeting that allows all lot owners the opportunity to vote and have your say about the ongoing operation of the scheme. The body corporate must elect a committee at each annual general meeting. The committee is made up of lot owners or people who act for them and hold committee meetings to make decisions about the administrative and day-to-day running of the body corporate. If you would like to have your say about how your building/complex ought to be run then we recommend that you read your notice and agenda for the AGM, vote and also nominate for a Committee Position.

There are different repair and maintenance obligations of owners depending on the type of scheme you are registered under (i.e. Building Format Plan or Standard Format Plan). Generally, the Body Corporate is required to repair and maintain common property, Body Corporate assets/ infrastructure and as a lot owner you are required to maintain your lot in good condition. Where it becomes tricky is determining what is or isn’t common property. If you are uncertain, you may wish to direct your query to your appointed strata manager or obtain independent legal advice.

Liam is one passionate guy, embracing all aspects of life to the full. Here, he shares his top five favourite pastimes. Running – because the feeling that hits you 10 to 15 minutes after a run is simply the greatest in the world. They call it a runner’s high for a reason. From a long run on a trail, or a short sharp Saturday Park Run at Kirra, there’s no such thing as a bad Podcastsrun.

Passion is a powerful driving force. When you’re a passionate person, you wear your heart on your sleeve. Being a passionate person is challenging, sometimes heartbreakingly so. It means you lead with your heart, and you put it on the line more often than most.

The Beach – the reason we as a family moved to the Gold Coast was for the beach lifestyle. I’m not sure if you’d classify what I do as “surfing” but it’s fun to get out there and have a bash. I grew up doing Nippers at Henley Beach in Adelaide where surf life savers are about as useful as air conditioning on a motorbike but I loved everything about the surf club world. My daughter is now old enough to get involved so I can’t wait to spend Sunday mornings with her at

Best advice received?

Best advice I received was from my late father. While lighting up a cigarette and sipping on his scotch he said, ‘son best that you don’t smoke or drink’. I have since lived a life of health and wellness and do my best to instil this lifestyle in those around me.

You have been an industry leader in construction and development field for over three decades. What are your proudest career accomplishments and current project you are working on? Over the past 30 years I was responsible for delivery over $2 billion in mixed-use construction projects throughout Australia and New Zealand. I commenced my career in 1984 in Sydney with RLB Quantity Surveyors and later joined Multiplex in 1996. I founded my construction group in 2000 which became a leading construction company with over 200 employees and successfully delivered over 100 projects. After leaving construction in 2015 I co-founded Panthera Group, a development company, with my best friend and business partner, Chakyl Camal. I own and I am currently developing The Lanes Retail Resort in Mermaid Waters.

Some of the best advice I have given is to be true to yourself. While life is about compromise, our values do not need to be. Do not be scared to work hard. Don’t simply chase the dollar when starting your career. Despite your starting pay grade, you will be rewarded in the long term with experience and knowledge which will serve you well into your career. Be open to technology and innovate. Don’t be afraid to do things that may be different. Creativity leads to change and continuous improvements. Visualise, Verbalise and Materialise.

What is the advice you would pass on to your protégés?

I was born in 1965 in Sydney to George and Anna Evangelo, Greek Cypriot migrants who arrived in Australia in 1962 looking for a better life for their family. I have four siblings. My brother Jim and I are twins and incredibly close. I married my teenage sweetheart Janelle in 1992 who continues to be my rock and have three amazing children; Georgia, Lauren and Nicholas. My parents had incredible work ethic which immensely influenced my upbringing. My father would open his corner shop daily taking only half a day off each year for Christmas lunch. My mother was incredibly social and would always host small gatherings at home among her small Cypriot community. Our home was an open house for our family and friends. What I love the most about our Greek culture is Philotimo, a unique word to the Greek language. When directly translated in English it is the union of two words, filos and timi meaning friend and honour. Simple acts of selflessly caring and giving to those around us is an act of philotimo and a way of life for me.

The GC is a more relaxed environment to live, work and play. The people are friendly, the roads are safer, the beaches are world-class and the restaurant scene is improving each year.

What led you to your career path? My father George was a house builder in Cyprus. When he arrived in Australia, he wasn’t able to continue his profession due to the language barrier. Watching him build and renovate our family home inspired me to continue in construction. He encouraged my journey and would regularly visit my sites during his retirement to report to me on progress, safety and quality.

She began her fashion business journey by selling bridal robes at local Gold Coast markets and has grown her business into bridal loungewear, intimates and sleepwear, popular throughout the world, stocked by international retailers and in the Homebodii flagship boutique at Pacific Fair. Here, Ingrid shares some of the highlights of her journey so far and her objectives for her burgeoning brand.

What were your aims establishing Homebodii? Starting Homebodii was a labor of love. I just wanted to create beautiful sleepwear that I knew other women would appreciate. The goal was never to become a global company or anything like that. I was just passionate about what I was doing and I wanted to share that with the world. Every year, we’ve grown a little bit more and added new products and collections. It’s been so exciting to watch Homebodii evolve, and knowing that our sleepwear brings happiness to so many women makes it all worth it. We are so grateful for our customers for being part of our journey!

I feel much more comfortable at 41 than I did when I was younger. Maybe it’s because there’s something about age that feels like a victory. With age comes experience, knowledge, and an appreciation of life that can only come from living it.

Before I started Homebodii, I worked for a French beauty company. It was a great experience. I got to travel the world and see firsthand how important it is to strive for excellence in everything you do. But after a few years, I realised that I wanted to take a gamble and start my own business. It’s been a great decision, and I’m grateful for the experience and knowledge that I gained while working for the French company. It’s helped me immensely in running my own business. What did you enjoy about modelling and what were the pitfalls? Modelling was a means to an end in my late teens and early 20s. I made some wonderful memories and life-long friends during that time, but I’m much happier now that I’m older.

How has being a Gold Coaster impacted and informed your approach, your attitude and your aesthetic?

The Gold Coast is full of natural wonder, and it’s this that has inspired me to approach life with a sense of positivity and fun. No matter what challenges I face, I always remind myself that there is so much beauty in the world, and that life is meant to be enjoyed. This is what I strive to reflect in our designs - a touch of fun, combined with a healthy dose of Gold Coast glamour! We are so grateful to our GC locals for supporting us as we continue to spread some positive PJ vibes from the GC to the world!

I used to think that I had two separate lives - my business life and my personal life. I believed that it was important to keep them separate. However, over the years I have come to realise that there is only one life - a creative life. It’s not nineto-five, it’s in everything we do. This realisation changed my entire perspective and the way I approach both Homebodii and life in general. Now, I see every experience as an opportunity to learn and grow. And, I approach each day with a sense of curiosity and openness. This has allowed me to create a business that is authentic and aligned with my values. We only had a mere seven weeks to plan our wedding and that was certainly challenging. It would seem an absolute luxury to have even six months to have planned the wedding. The more prepared you are, the less chance things will go wrong on the day and the more you will be able to relax and enjoy what should be the happiest day of your life.

Damien: We were having a party on our pool deck for my 55th birthday party and my parents were visiting from Los Angeles. During my thank you speech to our friends and family in attendance I dropped to one knee and surprised Jason with a proposal. It was quite hilarious as NRL great Sam Thaiday accidentally got between Jason and myself at that very moment. Awkward! Our good friends Lee and Robby Kernaghan did an impromptu performance of his romantic ballad ‘Where I Wanna Be’ (which they recreated at the wedding).

We originally met briefly at the opening night of the 2008 Brisbane International Film Festival at the old Regent Theatre in Queen St Mall, but reconnected a month later via an internet dating site.

Damien: We were married on Sunday 31 July at the beautiful Hibiscus Room Terrace at the Hyatt Regency Brisbane. Looking back, there were many memorable and magical moments but I think the most touching for me was when our two-year-old spoodle Baci jumped up on my leg and wanted to be part of the vows. It was a bit of a start and rattled me but then she settled for holding my hand throughout the rest of the ceremony.

We got married at Braeside Estate in Merrimac. The most memorable moment would have to be the ceremony. Jake, our Celebrant, made it so enjoyable, and really tailored the ceremony to us so that it was light-hearted, but still heartfelt. I will never forget the waves of emotions that I experienced from driving to the ceremony, to walking down the aisle, sharing our vows and officially becoming Mr & Mrs Ireland.

BEST ADVICE FOR OTHER COUPLES?

We originally matched on a dating app, but after connecting on social media we realised how many mutual friends we shared. Our first date was at Mamasan in Broadbeach, where we ate delicious asian fusion, shared a bottle of Pinot Noir and laughed the night away.

We had previously attended one dance lesson, and were both so nervous before it (I couldn’t even eat my dinner), but the adrenaline of the moment got us through and we nailed it! Yes! Jarrad celebrated his Bucks in Sydney by going to the Randwick Races, and I celebrated my Hens in Cabarita Beach where we had a long greek-inspired lunch, followed by dancing the night away at the casino.

Fortunately, we did not have any postponements due to COVID, however we did both end up with COVID a few days after our wedding. We were among only a few guests who hadn’t yet had COVID.

We travelled to beautiful Bali for our honeymoon, staying in Legian and Nusa Dua. It was a very romantic and relaxing holiday filled with warm weather, lots of swimming, cocktails, delicious food, exploring, massages and shopping of course.

On our first anniversary, we travelled away on our first overseas trip to Queenstown. As soon as we checked into the hotel, Jarrad had the most beautiful bouquet of flowers delivered before dropping down on one knee and asking me if I’d like to go to dinner with him as his fiancee. The Horizon FD90 to 2C AMSA certification was the brainchild of Horizon Yacht Australia Managing Director, Mark Western and Horizon CEO and co-founder, John Lu in response to a significant number of enquiries at the 2021 Sanctuary Cove International Boat AsShow.Mark Western explains, “Charter is becoming more popular and the Horizon FD90 is unique in that it’s under 24-metre, which means fewer crew and overheads, cheaper to run, cheaper to insure, easier to find a berth, easier for an owner to operate.

The premiere of the musical “Priscilla Queen of the Desert” attracted an equally flamboyant crowd, celebrating its season at The Star with a glamorous After Party at Nineteen. Based on the Oscarwinning film of the same name, the stage production brings the boundless energy, colour and camp to the GC, thanks to production powerhouse Matt Ward. The cast includes Paulini, Yvonne Britain (Vonni) as Bernadette Bassinger, and with a special cameo by Carlotta. The musical features more than 300 dazzling costumes, as designed by Tim Chappel and Lizzy Gardiner for the original film. Already being hailed as Brisbane’s “Luncheon of the Year”, the Camilla Luncheon & Runway Show saw Brisbane City Hall filled to the brim with devotees of fashion designer Camilla Franks, with most proudly donning her uniquely fabulous designs, and all for a wonderful cause. Presented by The Lord Mayor’s Charitable Trust and Kailo, Lord Mayor Adrian Schrinner and Lord Mayoress Nina Schrinner welcomed more than 650 guests to this fundraiser for cancer charities Mummy’s Wish and Be Uplifted Inc. Rolling up to the event in a Tiffany blue Rolls Royce to a rockstar welcome, Camilla delivered in spades to her fans posing for many a selfie with guests.

Highlights of the event were impactful speeches by the Lord Mayor and Mayoress, a Queensland Ballet performance, an intimate interview with Camilla by Brisbane fashion icon Di Cant and a spectacular Camilla runway show.

I have had two exceptional mentors across the span of my career who still give me great advice, but the best piece of advice I was ever given in a professional sense was to ‘love what you do and do it well’.

The key to happiness? I am an eternal optimist, but the key would absolutely be loving what you do each and every day!

The people most important to you are? Too easy – my family.

I’m proud to be a Regional Queenslander. We moved back from London at the end of 2003, when my husband had to return to work at Queensland Health. What school did you attend?

I have been the Principal of A.B. Paterson College since 2020, and have been working at the College since 2004.

I have stayed at our College for almost 20-years because of the amazing families we have and as a result, the reputation of our students are known throughout the Gold Coast community as young people of outstanding manners and good character.

I always knew I would be a teacher – I did exceptionally well at school as I had wonderful role models at the time. It was through these experiences I decided I too wanted to invest in young people and their futures.

People who know you, know that I love...?

Our College reputation is second to none. The strong sense of good character and successes of our students both past and present is by far the one thing I am most proud to share.

What’s one of the best things you have done to promote yourself and A.B. Paterson College so far?

If not, when did you move here?

I am so fortunate to live and work in one of the most beautiful and well-resourced places in the world. This environment allows and inspires innovation and creativity which encourages a true sense of connectivity for our local community.

I finished my schooling in Central Queensland – in a small mining town called Moura. How long have you been Principal at A.B. Paterson College?

We continue the tradition of strengthening the bond between city and country by taking our Year 6 students on a nine-daytrek to the Outback, each year since our College inception in 1991. We are proud to announce that A.B. Paterson College has recently built an incredible accommodation centre, Barty’s Place – which will allow not only our students, but students from far and wide to experience the Outback and the true essence of our Australian heritage.

What is your greatest accomplishment? Aside from my family, being a part of our amazing A.B. Paterson College would be an accomplishment I am most proud of. I love playing a small part in a child (then adult’s) life – it is an absolute privilege.

It is also my honour to be the Principal of A.B. Paterson College during the time where we have been able to further foster our historic connection to the QLD outback town of Winton linked directly to our namesake, Andrew Barton Paterson who penned Waltzing Matilda nearby.

The best advice you ever received?

Our Winton trip is at the heart of A.B. Paterson College traditions and demonstrates our genuine love and appreciation for our Aussie Outback, we know the memories made during this experience by not only our Year 6 students but soon to be young people from many other schools, will live in them, and through them - forever!

Thoughts on social media?

The meaning of life is... Do you know, I often reflect on my place in the world… Helping students has always been the main motivator in my career and my life. I will know I have made a difference if I can positively impact as many students and their families as I can.
