The first thing I must do is to apologise to everyone (and there were a lot of you) who entered the "Aquaria" competition in the previous magazine. Due to unforseen circumstances, the production company behind the show cancelled the June and July dates meaning the show didn't arrive at the White Rock Theatre. We do however have another competition for this issue, to win tickets to the fantastic "Save the last dance for me" show at the White Rock Theatre in September. Everyone who entered the Aquaria competition will automatically be entered into the draw for this prize! You can find out more about the show on the back page and more about the competition on page 20. Frank’s Column In my last column I extolled the virtues of the very lovely island of Rarotonga which is the most densely populated of the Cook Islands. I thoroughly enjoyed my 2 week stay there, and it was only because my next stop was Auckland, New Zealand that I was able to tear myself away. However, the day before I was due to depart I decided to hire a scooter, and have a final tour of the island. In order to hire the scooter I first had to go to the local police station, and purchase a local driving permit. This cost $NZ 10 and as it would normally have lasted for the duration of my stay I thought it was quite reasonable especially as at that time the exchange rate was $NZ 3:35 to the pound!! It may never be that good again! On my farewell tour of the island I stopped off to say cheerio to the two young ladies who had set up their internet cafe, and which I had visited on my first full day on Rarotonga. They had, by then, finished the painting of the outside of the building, and the place was looking quite pristine. I sometimes wonder how their business has prospered after all these years. The following day at the airport, while waiting for my plane to Auckland, I found myself thinking about the first time I decided to take myself off on this trip. Although I had travelled extensively in the past, mainly due to my army service, I was a little apprehensive about backpacking in an unfamiliar part of the world, but grabbing the bull by the horns I started to put a plan together. When I was about to set out on my Pacific travels I remembered the advice of my old Sgt. Major: Take what you like but remember who's carrying it!! This meant that at all times I was travelling light, and in most places where I stayed I could hand wash my gear and let it dry overnight. Because I was travelling on a budget this meant that I was grateful for the convenience of the accommodation bureau's where I was able to scan what was available within my means. Whenever backpacking you cannot afford the luxury of being met by a representative from your selected accommodation, but you have the freedom to choose the roof over your head, and if it is disappointing, you have the freedom to change it. I enjoy the whole concept of backpacking as it seems to bring out the gypsy in my soul. A place has to be very special to lure me back more than once as there are still a lot of fascinating places on this planet to see, and if I visited a country or particular resort too many times I would become very bored. I will sign off now, and in the next issue I shall be writing about my trip to New Zealand so until then watch how you go, stay healthy, and enjoy living......Frank.

Is it possible to survive the devastating impact of Infidelity? I have been counselling couples over a period of many years and can appreciate that the discovery of a spouse's unfaithfulness is one of the most painful experiences to have to deal with in a relationship. It is in fact very much like bereavement as there is so much potential for experiencing loss, loss of a future together, loss of trust and loss of self-worth. A period of mourning may follow for the loss of the relationship that was and now will be forever changed by the affair. Difficulties in the way you relate and communicate with each other are the most common causes of infidelity. There may be the temptation to argue and squabble in the aftermath but this will probably result in you both being self-justifying and will prevent you from resolving anything. Talking about why the affair happened is not an easy task but it will help considerably if the unfaithful partner is prepared to answer any questions regarding the affair that the betrayed partner asks. Although this can be a very painful and emotional process for both of you it is important that you both understand why this affair has happened. Rebuilding the trust that has been broken will take considerable time, it

La Bella Figura I was recently in Italy and spent the day with a girlfriend having lunch in one of our favourite restaurants. Whenever I visit Italy, we always treat ourselves to a posh lunch. We dress up and go to lovely places where we discuss life and love, giggle a lot and allow the gorgeous waiters to treat us like royalty. It was a lovely day so, after a delightful lunch and excellent bottle of local wine, we strolled around the lovely town of Ortono. We wandered past the beautiful old castle and, to our amazement, it was open. (In small Italian towns, opening hours seem to be totally arbitrary, and you often have to ask for attractions to be opened specially for you.) Having explored the castle grounds and taken the obligatory photos, we discovered a small exhibition of photographs and paintings with some fascinating historical scenes. A rather bored woman sat behind a desk and watched us as we chatted and discussed the photos. As we turned to leave she called us over. She talked in the local dialect but we managed to understand she was praising our "look". She admired our clothes and shoes and continually used the phrase "bella figura". This, we knew, was praise indeed but were not quite sure exactly what it meant. Nevertheless we left feeling very pleased with ourselves. The next day I researched "La Bella Figura" and was fascinated to find it meant so much more than just looking good. The concept of bella figura, of making a good impression, underpins nearly every aspect of Italian society. It starts with the physical and superficial but goes beyond. It governs

behaviour, language, and customs. It dictates how business is done and how relationships are managed. Historically it defined family loyalty and honour. Today it means showing your best side, putting your best foot forward, not just physically but in every way you present yourself to the world. Style-wise it doesn’t mean spending a fortune on clothes, make-up and jewellery. It is being selective, choosing quality over quantity and ensuring the total ensemble looks fabulous. It means making the world more wonderful just because you are in it. Italian women often look like they have spent weeks getting ready but, of course, practice makes perfect and when it's in your DNA and you do it every day it's easy. The phone was ringing. Maggie reached out a feeble hand from under the duvet and picked it up. “Hello?” she croaked. “Oh hello Maggie, it’s Jean. I just wanted to let you know I’m back and to thank you for all your hard work. The house is like a new pin. I was expecting it to be an absolute tip leaving George to fend for himself. You know how helpless he is. Couldn’t organise a lettuce. So I knew you must have been coming over to keep him straight. Not an un-ironed shirt in the place, and you’ve even washed the sheets. What an angel you are! Thank you.” Maggie was struggling to clear her head. “Oh – um – yes. I – er. Yes, glad you’re home. How was your mother?” she mumbled. “Miserable as always,” Jean replied. “You wouldn’t believe the fuss she made. Anyone would think she’d had a heart transplant instead of a bunion removed. And then, of course, the stupid wound got infected and I had to stay an extra week. I’m sorry you had to hold the fort for so long.” “I – um - didn’t notice the time passing. I’ve – er – been …..” Maggie’s reply was cut short. “ I know, you’ve been very busy by the look of things,” Jean cut in. “Anyway, I won’t keep you now. Thanks again.” The line went dead. Maggie lay for a few minutes trying to digest what Jean had been saying. Her head was throbbing and her mind felt as though it was full of cotton wool. Jean had been thanking her for something but she couldn’t work out what it was. Something to do with bunions. She looked at her alarm clock. Nearly noon. She really must try to get up. She desperately wanted a cup of tea and – for the first time in days – something to eat. As she waited for the kettle to boil Maggie continued to puzzle over the phone call. Something wasn’t right. Jean had mentioned ironing and housework. What was she talking about? Maggie picked up her tea and toast and shuffled back to bed. The snack made her feel a bit better and she started to think more clearly. Not wanting to make a fool of herself by checking back with Jean she decided to ring Jean’s next door neighbour, Frances. After exchanging greetings Maggie told her friend about Jean’s phone call. “I think she was thanking me for looking after George while she was away,” Maggie said, “but she should have been thanking you, shouldn’t she?”

“Oh we heard the vacuum cleaner going every morning,” Frances remarked, “and I said to Tony that it must be you doing your neighbourly duty. Poor old George wouldn’t know one end of a hoover from the other.” “But Fran,” Maggie said, “I’ve been in bed with flu for nearly a fortnight. I don’t just mean a headache and a sniffle. I’ve had real flu, the whole caboodle. It was awful. I wanted to die. I couldn’t have lifted a feather duster, let alone a vacuum. I thought you must be looking after George. Not that I cared. I haven’t cared about anything except feeding the cat and I’m not sure I even did that every day.” “You poor old thing,” replied Frances. “But isn’t it odd? Who could it have been? We haven’t noticed anyone going in and out. Haven’t seen George either, come to that, not even pruning his precious roses.” “It’s a real mystery”, replied Maggie, feeling rather responsible. “Talking of mysteries,” Frances said brightly, “there’s been a strange car parked in their back garden. Tony saw it when he went in to get their dustbin, which George had forgotten to put out of course. He said the car was sort of hidden behind the greenhouse. One of those little Smart things, baby pink. We thought it must be a present for Jean. It’s been there all the time until yesterday.” “I know that car,” said Maggie. “Clare Bartlett has got a car like that. You know, Clare from the King’s Head. The blonde one with the bust. Better not say anything to Jean.” Frances tried hard not to giggle as she replied.“Why George! The sly old goat. He managed to organise that then. A resident housekeeper. Talk about ‘when the cat’s away’!” Next morning when Maggie opened the front door to an urgent knock she found a delivery boy holding a beautiful flower arrangement. It carried a card saying ‘Many thanks for everything’ with the ‘everything’ double underlined. She smiled to herself and murmured “But it wasn’t me”, knowing she could never tell Jean the truth. If she had been feeling better she might have taken the bouquet round to the King’s Head, card and all.

Over 14 weeks we will explore four different media: pencil drawing & sketching with shading and highlighting techniques, oil pastel painting and techniques, painting and blending with watercolours and acrylics. Step by step tuition in the basic techniques and secrets needed to create beautiful pieces of art.

COUNTRYSIDE LANDSCAPES By the end of the course, students have created a minimum of eight pieces of their very own original art they can enjoy forever, from misty mountain tops to stunning seaside vistas. What better way to enjoy the autumn months and participate in something you will look forward to every week EXHIBITION The final day of the art class will be the preparation for an exhibition held in our local venue later that day, featuring the work created over the three-and-a-half month part time course. Robertsbridge Aviation Society Established in 1964, the Robertsbridge Aviation Society is a non-profit making organisation which has the sole aim of catering for the interests and activities of the aviation enthusiast. Our Annual Open Day is held on the second Sunday in August for the public to see what the Society does. In 1973 the Society formed a collection of Museum exhibits covering Civil and military aviation past and present with the 2nd world war featuring prominently. The collection is open to the public between March and October on the last Sunday of each month and admission is free. Cod Cheeks in Beer Batter with Tartare Sauce A simple and tasty recipe using a succulent, bite-sized portion of fish. (Serves 2) Batter Ingredients 15g fresh Yeast Pinch Salt Pinch Sugar 200ml Beer 1 tsp Cider vinegar 200g plain flour Cod Cheeks Ingredients 500g cod, cheeks 3 cloves garlic, crushed Small bunch dill, chopped 2 litres vegetable oil, for deep-frying

Tartare Sauce Ingredients 3 egg yolks 2 tbsp Cider vinegar 300ml vegetable oil 100g capers 150g gherkins, chopped ½ Shallots, finely chopped Small bunch dill, chopped 2 tbsp chopped parsley ½ Lemon, juice only

Method: For the tartare sauce: whisk together the egg yolks and vinegar in a bowl. Add the vegetable oil very very slowly while continuing to whisk to make a mayonnaise. The mixture should be thick and light once the oil is incorporated. Stir in the capers, gherkins, shallot and herbs. Season to taste with salt, pepper and lemon juice. Set aside. To make the batter, sprinkle the yeast, salt and sugar into a mixing bowl. Pour over the beer and vinegar and whisk in the flour.

Leave to ferment, when the mixture starts to bubble it is ready to use. To prepare the cod cheeks, ensure the cheeks have the entire membrane removed. Cut each cheek in half and toss with the garlic and dill. Heat the vegetable oil in a large pan or deep-fat fryer to 180-190C. Dip the cod cheeks into the batter and fry in batches until golden. Remove with a slotted spoon and drain on kitchen paper. Serve immediately with the tartare sauce.
