Frank’s Travels

In my previous column I wrote about being given the opportunity of applying to become a Holiday Rep; so not being one to let the grass grow under my feet I decided to give it a go!! When I returned home I mulled the idea over in my mind for a while then after a few deep breaths (Each breath lasting about two days!) I finally picked up the phone. Because of the number I had been given by my daughter's boss I got straight through to the very person who was running the recruiting programme. Bingo! Having introduced myself with some serious name-dropping I laid my cards on the table, so to speak, and said that as I was 57 years old I had no desire to waste her time or indeed to waste mine if I was considered too old for the job. To my surprise she said "Fair enough, so when can you come for an interview"? Like an idiot I said tomorrow would be fine so she said fine, I'll see you at 2pm tomorrow then. End of conversation! I hadn't realised that even though I was being a bit flippant she would take me seriously or maybe she was just checking me out? Anyway what I had landed myself with was a 180 mile journey before 2pm the following day. The company was based in a town called Stockport on the outskirts of Manchester so after a fairly early morning start I rolled up at the office with time to spare. The interview went quite smoothly, or so it seemed, and then the lady holding the interview asked me to excuse her for a few minutes while she left the office. On her return she handed me an application form, and said "When you get home fill this in, and return it with two passport size photographs." She then shook my hand and told me I'd got the job!

I was in a bit of a daze on the drive back home as I realised that I really had found a new direction in my life. I didn't know which direction I would be heading in but I remembered the old motto once again "Who dares wins". The day after I got home, I explained to my daughter that the job was only from October until May and that I would spend the Summer months in England. I don't think she was too impressed by the fact that Dad would be spending the whole of the Winter in sunnier climes. Shortly afterwards I was allocated a posting to the island of Gran Canaria, and after being fitted out with my uniform and attending a 3 day induction course I found myself on a flight to GC in the second week in October. I was met at the airport by June, the Resort Manager, who took me to my apartment and then off for a meal. During the meal she told me that I was the first Host ever to work for the company at that resort, and that I would have to set up the whole holiday programme by myself as she didn't have a clue what it was all about. That came as a bit of a shock but after a few more drinks we decided it could be fun with the blind leading the blind especially as our big bosses at head office didn't have a clue either. It looked like Frankie was gonna be on a Carte Blanche roll!! In the next issue I will fill you in on the details of my first winter as a Rep; so until then, stay healthy, watch how you go, and enjoy living........Frank

Cliff Green has been a p r o fe s s i o n a l t e ch n i c a l analyst in the financial markets for over 40 years, specialising in the study of stocks, FX and commodity markets. He is regularly quoted in the media and is considered an authority on the subject and has lectured all over the world. After many requests, Cliff is now presenting regular tutorial seminars for the private investor to help aid successful trading in these markets. Most speculators enter the trading arena totally unprepared and more often than not make decisions to buy or sell based upon influences from the media or ‘tips’ heard on the grapevine. Human behaviour then compounds these problems by not recognising ‘poor’ trades quickly enough and snatching at profits. Cliff in his presentation lays out straight forward principles and techniques for making disciplined decisions and will introduce participants to the study of technical analysis, which will help give clear ‘buy’ and ‘sell’ signals and identify sensible risk/reward parameters. His seminars are for a maximum of 10 people at a time which allows plenty of interaction and time to discuss current examples.

Julia Meanwell - Downshifting Do you need to downsize your home in order to upsize your life? Downscaling can represent the start of a new life in a new home; a change is as good as a rest! Many of us so called baby boomers have spent our lives accumulating possessions the biggest of which is likely to be the property we currently live in. Data by Rightmove has revealed that the grey pound is driving today’s property market in the UK. Downsizing is the number one reason for selling in nine out of ten regions in the UK. Downsizers are moving for a better lifestyle and, in particular for those planning their retirement, accommodation that best suits their needs in later life. Three-quarters of people aged 60 and over own their own home, whereas less than a third of those aged 25 to 34 do, according to the Office for National Statistics. Just the thought of packing up a much-loved home can seem overwhelming and moving house is up there on the list of one of our most stressful experiences. It’s likely to be an especially emotional experience if it is coupled with retirement, ill health or relationship breakdown. Clearing and sorting through a lifetime’s possessions can have quite an emotional impact. The process of emptying out your home could evoke memories that may or may not be welcome. Moving to a smaller property can have many benefits perhaps the most obvious being the lessening of some of the stress of cleaning, general maintenance and upkeep. Downsizing your home can be the first step to a minimalist lifestyle. Reducing the amount of daily tasks could free up your time for more beneficial and enjoyable activities. Having less upkeep to attend to may also allow

Local counsellor Julia Meanwell, has been in practice for over 20 years, she has a wealth of experience, empathy and understanding to offer clients. Julia began her counselling career as a relationship counsellor with Relate which incorporated working in television and radio. you more time to travel if you are fortunate enough to have the available funds. The saving in energy costs could well go towards such endeavours. It’s sometimes difficult to justify buying new furniture when our current furniture is perfectly functional if somewhat tired. Perhaps this is a golden opportunity to splash out and choose a few new vibrant pieces of furniture. Whatever your reasons are for moving you are likely to experience a whole range of emotions in the process. Change is inevitable and although it can be scary it can also be empowering for those that are able embrace it. Technology Will Save Us! But Do We Want It To? Local computer tutor Neil Duncan answers your pressing questions Q: I am an active 80 year old and everyone is telling me to “get online” do I really need to? A: A new government report came out last month that showed 7 million people in the UK remain offline, or without the basic skills to enjoy the Internet. Many people argue that “the modern world” of TV, Internet devices is taking over and we have an “always online” mentality. Many people from the older generation do indeed feel as though they have been left behind. Is it too late? Sometimes technology does pass us by. But our tutors have had literally hundreds of visits with older clients up to the age of 96, all of whom felt ‘silly’ at the start of their journey. “It’s like Chinese”, one would say. “What’s the point – it’s too late for me”, said another. “I just don’t understand”. New technology is often thought of as the plaything of the young, with the older generation wary of innovations like smart phones, tablets, and social media. But this is just the beginning of the story. As with everything in life, some simple guidance – tuition if you will – can open up the wonders of technology for even the most basic of beginners. As we often say to our clients – learning how to use a computer or the Internet is like learning a language (though not as difficult as Chinese!) or having a piano lesson – we can get by on our own but some professional instruction can really set us on our way. The stories are endless but they represent the endless possibilities the Internet can bring. Instead of being scared of technology, we can embrace it. You only need to use it as much as you want. So no, you don’t NEED to get online, but why not try it out? Neil Duncan is the local computer tutor for Silver Training in Eastbourne and Hastings area. He can come to your home for 1:1 lessons on any device and for any topic; shopping, email, skype and more. Charges are £35.00 - £40.00 per hour including training materials. Please call 01424 400 190 to enquire.

WHAT ARE YOU LEAVING YOUR CHILDREN?

We've worked hard all our lives to leave something for our children and grandchildren. Why should the local authority get it all ?

PROTECT YOUR ASSETS NOW ! For peace of mind contact David on: 01424 434788 or 07718 155740 for a free, no obligation consultation in your own home. www.clshastings.co.uk

Are you worried about having to sell your home to pay for care costs? Over 50,000 homes were sold in the last year for that reason but it can be easily avoided.

Are your affairs in order? Are your assets protected?

If you have to go into care you may be "means tested" by your Local Authority to assess your ability to pay for that care. Under current rules, if you have assets that total more than £23,250 (in England), which could include the value of your home, you will be required to fund your care in full – a care home will cost £500-£800 a week or more. Not every family is affected by this issue, and in certain circumstances your home and savings might not be vulnerable. Request our free information pack today to find out more and discover what steps you can take to protect your hard earned wealth for your family. Are You Killing Your Knees?

We put an enormous amount of mechanical stress on our knees on a daily basis. Typically, the knee is designed to take it. However, certain bad habits could be shortening the life of your knees and opening the door to chronic pain and disability. The way you stand, walk, and move can have a tremendous impact on the health of your knee joints. Taking time now to evaluate some basic choices, such as your stance, your shoes, and your level of overall health and fitness, may help you side-step debilitating knee conditions like osteoarthritis and help keep your knees healthy, inside and out. Ask yourself the following five questions and find out if you're being nice to your knees. 1. How much weight are you carrying? Your knees bear the brunt of your body weight, so it's crucial that you maintain a healthy body mass index (BMI). Every extra pound you carry adds up to 3 pounds of pressure on your knee joints when you walk. So, if your BMI is 25 or more, you may be compromising the health of your knees. In fact, obesity is one of the biggest risk factors for developing osteoarthritis because it speeds the breakdown of cartilage. Dropping extra weight -- particularly body fat -- may be the single most important thing you can do to reduce the risk of developing a serious knee problem. 2. Are you exercising? Regular exercise is essential to maintaining knee strength. Without it, your muscles weaken, leaving your joints without ample support and leaving your muscles, bones, tendons, ligaments, and joints vulnerable to misalignment. Daily, moderate exercise is much better for your joints than occasional strenuous exercise. Focus on low-impact activities

that build stamina, strength, and flexibility, such as Pilates, Yoga, walking, biking, swimming, and weight lifting. These types of exercise can help enhance circulation, improve your range of motion, and build the muscles that surround the knee joints. 3. Are you overusing some muscles and joints? Staying active is one of the best things you can do to protect your knees, but you should avoid repetitive strain on muscles and joints. For example, repeatedly engaging in the same activity -- whether for work, recreation, or exercise -- may loosen tendons or damage cartilage and eventually lead to injuries and possibly even arthritis. Determining if you are overusing a joint requires listening to your body. When you feel pain or discomfort during or after exercise, household chores, or other activities, don't ignore it. Take a break and consider ceasing the activity altogether until you can perform it without pain. In the meantime, stay active by focusing on other activities that do not stress the injured joint. If the pain does not go away in 2 weeks, see your doctor or Physiotherapist. 4. Is your body properly aligned? Just as driving a car when the wheels are out of alignment causes the tyres to wear irregularly, the same principle holds true for your knees. If your body is not properly aligned, your muscles, joints, and ligaments take more strain than they are able to endure healthfully. Here are some general principles of correct standing posture: • Your back is straight. Don't slump forward at the shoulders or waist. • Your knees are slightly bent - they should not be locked. • Your abdominal muscles are tight - gently suck in your stomach. • Your head is centred over your body. Check yourself in the mirror from side to side. • Your weight is evenly distributed between your feet. Do not jut one hip out to the side. We can help you assess your biomechanics and teach you proper standing, sitting, walking, running, and lifting techniques that can help spare your joints from extra wear and tear. 5. Are you wearing the right shoes? Shoes that cause your body weight to be unevenly distributed place extra stress on your knee joints. In addition to avoiding obviously uncomfortable or impractical shoes that can throw your stride off and stress your knees, you also should consider a visit to a speciality store if you have special anatomical considerations. As they say, nobody's perfect. Flat or rigid arches, uneven leg length, and bowed legs are fairly common in the general population, and each can contribute to an awkward stride and put pressure on your knees. Consider purchasing at least one of your main pairs of shoes or sneakers at a speciality store where the staff can advise you on which shoes provide the appropriate support for your foot and body type. Before you go, consider a visit with a podiatrist. Naomi our Podiatrist can help diagnose any additional foot concerns, such as overpronation or supination, and prescribe orthotic inserts that go into your shoes and correct your gait.

PAYING FOR YOUR LATER LIFE CARE: FUNDING OPTIONS It is possible that a great number of people moving into care homes are doing so because they don’t realise that staying at home is a realistic alternative. Care provided at home could be as simple as someone coming in to cook and clean, it could involve helping the person to get in and out of bed and/or help with some basic daily tasks such as washing and dressing. This may be provided on an ad-hoc hourly basis or to a more regular and/or formal schedule. Funding Care at Home If a person’s capital and savings and/or income push them outside the means test thresholds (currently £23,250 in England) they will generally be responsible for the funding of their own care fees until such time as their money falls below the appropriate threshold. However, with careful planning it may be possible to structure their finances in such a way that care fees can be paid indefinitely, without worry. Taking professional, timely advice could ensure that the chosen care environment is financially sustainable indefinitely. At Ethos we are here to help you explore all the possibilities open to you. If you feel any of this applies to you, please feel free to give Natalie Ringwood a call on 01293 449860 to arrange a free no obligation meeting.

Spring is nearly here. It brings renewal and rebirth. The warmer weather revitalises plants and we start to see colour and vitality all around us. Who doesn’t love the longer days and balmier nights? Best of all, it means we can throw off the winter woollies and dig out our spring favourites. The first thing to do is put away your heavy winter fabrics; spring is all about lightness. What you need now is lots of layers that will keep you warm whilst looking cool. If you follow this column, you’ll know I am crazy about layering, and now is the time to experiment. Layer up tops for a contemporary look and add a cardigan or thin jacket to keep out the chill. Pop on a scarf, bangles and a pair of jeans and you are ready for anything. That reminds me – let’s take a moment to talk about jeans for over 50’s. Jeans are an essential in any wardrobe – male or female, twenty or seventy. But you MUST find the jeans that work for your body shape. Spend money on the perfect jeans and you will never regret it. Buy cheap jeans and you will never feel good in them. At our age, don’t we deserve the perfect jean? Ok, back to the main topic… It’s time to celebrate colour. After the drabness of winter, we desperately need colour. Pastels and other soft hues work especially well for springtime, but toward the end of the season, you can safely venture into brighter colours. Don’t give up on neutrals. Spring is all about colour, but you need a good stock of neutrals to create your base. Neutral tops carry over into other seasons, so spending a bit more is worthwhile. This is the season for a stylish, belted trench raincoat.

SPRING IS NEARLY HERE

Lightweight, showerproof and found in different colours to match your springtime mood. A great trench is the perfect spring investment piece. You will wear it for years. It’s easy to wear, light to carry and can be slung over the shoulders for an instant Bridget Bardot moment!

All the skirts you kept hidden during winter can finally return to their rightful place in your wardrobe. At this time you can wear a pair of light coloured boots with skirts for a cowgirl look or pop your skirt over a pair of leggings for a more sedate ensemble. 2015 is the year of the sneaker. The catwalks are awash with models wearing plimsolls, Converse, Vans and much more. Every fashion house has a range of sneakers. They are not just for the kids. Enjoy the freedom that sneakers give you. You can pay anything from a tenner to hundreds of pounds. I’m suggesting about forty quid is reasonable. But get a pair! Accessorise like crazy. Update your handbags and scarves. Belts are the best way to change the shape of an outfit and, again, buy a great one and you’ll be wearing it in five years. My top tip for this season? Buy a colourful umbrella. Do I need to explain why?

I

Tricia's column - Chocolate, chicks & crocuses (or is it croci?)

t's that time of year again, when the kids are asking you to help them make a hat with rabbits and baby birds all over it, and they want to attack a boiled egg with a paintbrush instead of some soldiers. It's also this time of year that your children are telling you not to buy their children too much chocolate. They forget how glad they were when our own parents ignored us and gave them all the tinfoil-covered chocolate they could eat! It's not all about over-priced, gaudily packaged chocolate though. The start of spring is a fantastic time to get the younger members of the family (or indeed your own inner child) reacquainted with the wonders of the natural world. Yes we've all seen it happen dozens of times before, but how can anyone not be moved by springtime? Watching a baby lamb take it's first, tentative steps never fails to delight. I love the way they leap through the grass with a gay abandon that no amount of mint sauce could drown. It's hard not to love this time of year as the parks and gardens become a riot of colour and even roundabouts and roadsides that were dowdy and brown all winter start bursting into flowery life. What

an amazing time to be a bee! If you like your springtime flowers, do have a look at Pashley Manor Gardens, (featured opposite) a real treat for tulip lovers. However, if flowers and fresh air don't float your boat, there are plenty of other things to see and do going on. You can find out all about these on the next few pages. Concerts, walks, markets and a very nice selection of shows the kids will love at the De La Warr Pavilion. As usual it falls to me to plug our sister magazine, The Family Buzz (pictured here) which is packed with family friendly spring and Easter information. If that's not reason enough to pick a copy up, my beautiful granddaughter is on the cover, pretending a seashell is a mobile phone. I don't know about you, but it looks jolly chilly on that beach, and I wonder why she's not wearing a nice cardigan over that dress? That's about it from me for this issue, I shall be back with more musings in May.

Chestnut Tree, the children’s hospice service for Sussex, is calling upon the women of East Sussex to enjoy an evening walking together under the stars whilst helping make every day count for every child being cared for by Chestnut Tree in East Sussex. Now in its sixth year, the annual ladies-only sponsored walk will take place at midnight on Saturday 16 May 2015, with four mile and 10 mile routes taking in Sovereign Harbour and seafront. The event is vital in raising money for the children’s hospice. Chestnut Tree is funded almost entirely through fundraising, with less than 8% of its income coming from central government. The charity is currently caring for 55 children in East Sussex, but there are more children who need their care. “We now have 2 nurses and a Care Support Worker based at our Eastbourne Office which means we can reach more families in East Sussex,” says Director of Children’s Services Linda Perry, “but our overall aim is to double the number of children we are caring for here." “The Night to Remember midnight walk is a great way for women to get involved and help to raise the vital funds we need to bring more services to East Sussex, and ultimately help more children.” Of course, the event is about more than just fundraising and is renowned for being a fun, friendly evening the brings women together. Danny Evennett, one of last year’s participants describes her experience: “The night was brilliant fun. The moon was bright, the marshals were all so encouraging and it really was a Night to Remember. I challenged myself, helped a very important charity and made a really great friend all in one night.” Registration for the event closes on Monday 4 May 2015 and there is a discounted early-bird entry fee of £15 for those registering before Sunday 15 March. Entry is open to women aged 16 and over and includes a fundraising pack, an exclusive t-shirt, torch and medal as well as refreshments en route and breakfast on return.

Gardening tips for early/mid Spring by Phoenix Gardening. It’s been quite mild in my neck of the woods with some plants well into bud and some even starting to flower, so let’s hope those frosts stay away. As always check for any pests and diseases as the temperatures warm up, a good time to do this is whilst weeding and preparing to put a layer of manure, compost or mulch down on the beds or borders. Those summer bulbs can go in now as can any hardy annuals. On the veg front it’s time to chit ‘seed’ potatoes, we can also get those shallots and onion sets in the ground too. If you’re in a milder area you can sow

some seeds outside without protection but check the packets many varieties can be sown from early spring. As we move into mid spring we might have to think about the lawn mower again but keep that first cut high. You can also sow a new lawn from seed or lay turf now. Plant out herbaceous plants and stake them if necessary, sow outdoor tomatoes or runner beans in your conservatory or greenhouse (if you have one) to plant out later. Most of all, enjoy your garden.

Dealing with the Certainties It is said that the two certainties of life are death and taxes and these are brought neatly together in the form of Inheritance Tax. Despite the certainty, many people seem reluctant to confront their own mortality and fail to take even the most basic precautions to let their estate hang on to their hard-earned cash. Inheritance Tax is regarded as an iniquitous tax, as it is easily avoided by the well advised rich and the great majority of the population do not have sufficient capital to be affected. It is therefore left to the much maligned “squeezed middle” to foot the bill. So what’s to be done? There is a great deal that can be done to soften the impact and much of this takes limited effort but can have a very substantial effect. The key to dealing with the issue is to take the right kind of professional advice. For an individual, Inheritance Tax kicks in at £325,000, and with the now transferable allowance, this increases to £650,000 for married couples and civil partners. This sounds like a lot, but property prices are on the increase again and the limits can soon be exceeded. Losing 40% of everything in excess of these limits is severe, particularly as the treasured assets bequeathed to the next generation may have to be sold to pay the tax. For individuals, take advice from a solicitor to make sure that the money is channelled to whom you want to receive it and all available reliefs are considered. A doit-yourself kit for £25 from the local stationery shop is

no substitute for expert advice when you are looking at the sums involved. For businesses, speak to your accountant. At Ashdown Hurrey, we can make sure that your business assets are protected and can advise where changes in ownership will affect available reliefs, as well as considering your personal assets. If you are an investor, you should talk to your IFA, as the types of investments selected can affect the tax impact when the time comes. This article is just to encourage you to think about the implications and to take the time to prepare properly. Unfortunately, we are talking about a “when” not an “if” and getting the right advice in good time may even help you sleep more easily! If you'd like to know more, please get in touch: Bexhill - 01424 730300 Hastings - 01424 720222 SamC@ashdownhurrey.co.uk www.ashdownhurrey.co.uk

Dementia Supper Clubs

Kent & East Sussex Railway Charity Pump Trolley Challenge

Coming to terms with a diagnosis of dementia can be challenging and isolating for the person living with dementia and their partner, family and friends. Some people can find it hard to continue with the activities and friendships they have enjoyed. Dementia Supper Clubs run across the county and offer an opportunity for people with dementia and their carers to get together informally, share experiences and increase their support network. The clubs are held monthly in pubs and clubs in the following areas: Lewes, Crowborough, Eastbourne, Bexhill, Hastings, Robertsbridge, Hailsham and Seaford. The clubs are attended by a member of staff from Adult Social Care, East Sussex County Council who can provide information and guidance to anyone attending. “We haven’t done this sort of thing for years, we are living again thanks to this group. We thoroughly enjoy it and have made lots of new friends!” For more information on Dementia Supper Clubs contact: sally.goodey@eastsussex.gov.uk Phone: Contact 01323 449294 for information about your local supper club.

A Comic Relief event with a difference will take place on the Kent & East Sussex Railway on ‘Red Nose Day’ Friday 13th March when a team of 10 railway staff and volunteers will attempt a 100-mile ‘pump trolley challenge’ along the line from Tenterden to Bodiam.

"Tommy Trott" by Linda Taylor

Wearing his favourite green wellies with the red painted dragon heads at the heels, Tommy kicked through the white sand. The clouds were racing in the sky and he felt dizzy watching them for too long, so, reaching the rock pool, he sat at his usual place and peered down into the inky blue. "Hello" she said. Still gazing into the pool, he saw her head appear, out of nowhere and next to his own reflection. "I know all about you Tommy Trott" she stated in a light, tinkling voice. Tommy's big, brown eyes opened wider with wonder. "Turn left towards me!" He looked up and leftwards. She had waist-length wavy yellow hair. It was the colour of the rape seed in the fields. Her eyes were a startling bright blue, her lips cherry red. His gaze travelled downwards to her scaley green skin. "That's right, you ARE seeing a mermaid but only because you care to see! You see things too clearly, don't you, Tommy Trott?" He nodded, he could do nothing more. She moved forward on the rocks and flipped her fin. "Look down again into the Pool of Life, Tommy Trott and see what lies there!" A magic spell hung over him. He had to obey. The water paled; the centre swirled and spun. Dazed, his young head turning round and round with the pool's water, he watched until the water receded then saw to the very bottom. Something was lying there! A rope? Or maybe not? He reached his arm down towards the object and grasped it; it was cold

Pump trolleys, once used for ferrying track maintenance crews around railways, have often appeared in films and TV shows often giving a comic touch to a scene featuring trains. Jemma Hosmer said “the railway is pleased to be able to hold an event in aid of Comic Relief and to tackle 100-miles on a pump trolley is going to take some considerable effort from all those taking part, especially when it comes to climbing some of the railways steeper gradients and in particular, the long climb from Rolvenden up to Tenterden but we are all up for giving it our best and I am hoping none of us will run out of puff”. Jemma continued “Our railway is very popular with children especially with our ‘Thomas the Tank Engine’ weekends and for school visits so to be able to do something for children that are less fortunate than most will give us a great deal of pleasure and we are looking forward to making our contribution on March 13th. We have already raised £500 as of today in sponsorship and anyone who can make a donation to the cause can do so by going to http://my.rednoseday.com/sponsor/ KESRPT100?fb_ref=Default

and felt sharp enough to cut. Glistening in his hand, dripping wet, solid and heavy was a chain of golden shells. The mermaid's slim, white hand reached out towards them. She took them and hung them around her neck, fingering them fondly as they lay against her breast. Tommy looked despondent. She came to him then and gazed deeply into his tear-filled eyes. He had felt such sadness at giving up the necklace to her and yet he had willingly given it up, knowing it must be hers. "It was lost and now I have found it. Everything falls to the bottom of the pool at some time." she explained, stroking his cheek gently with a cool hand. Tommy cried then. Tommy cried aloud and then he screamed. He screamed and screamed. Suddenly from the rock pool came a loud splash; a flash of green fin dissolved within it. Tommy's scream carried on the wind like the yearning screech of gulls when the fishermen brought in their catch. Way across the sea shore it rang: on to Grandma's beach hut. They came running then - his Grandma, his Aunt and his Pa. Thanks be to God or whosoever, for Tommy Trott had found his voice again! That clear, choirboy voice abruptly lost with the news that his Mum had died...

Golden Times Recipe by Faz Razeen Roasted Sea Bass with lemon, garlic and fennel bulbs Sea Bass is available whole and un-gutted, or in prepared fillets. Today's Sea Bass is freshly readily available at fishmongers or major supermarkets. As you can appreciate, the popularity of Sea Bass has threatened stocks in some parts of the world. (EU regulations states, it must have grown to certain length before it can be legally caught). Today it is farmed extensively in Europe and Mediterranean, which has kept the price affordable. Sea Bass is farmed throughout the year. Just a tip, to get the best taste out of Sea Bass you need to make sure that the fish has been scaled thoroughly and washed before cooking. Once it is roasted with lemon, garlic and seasoned with Italian herbs you can eat the delicious luxurious meaty flesh of Sea Bass. Perfectly complemented by cooking with flavours of lemon, garlic and fennel bulbs. Just enjoy with a glass of chilled Soave. This is a unique simple recipe specially created for Golden Times readers.

Ingredients:

480g Sea Bass Olive oil, be generous with use. 6 cloves of garlic finely chopped 3 lemons (1 lemon use juice on fish, 1 lemon slices inside, I for garnish) 2 fennel bulbs 4 tsp. of Italian herbs Black pepper and salt for seasoning

Ample parking and huge beer garden. Come along and see us!

www.rainbowtroutpub.co.uk

Preparation method : Preheat the oven to electric 200C or Gas Mark 6. Clean and descale the Sea Bass and wash thoroughly. Make two diagonal slashes in the flesh of the Sea Bass on both sides, going right down to the bone. This helps the fish absorb the lemon juice, Italian seasoning and garlic to obtain the best taste.

www.thethreeoakspub.co.uk

Rub thoroughly with finely chopped garlic and Italian seasoning and place 2 to 3 thick slices of lemon in the belly cavity of the fish. Finally place the fish in a roasting tray and sprinkle with sea salt and black pepper, drizzle with olive oil to cover whole fish and rub sea salt into the skin of the fish. Leave it to cook in the oven for 30-35 minutes. The flesh should be white, the skin should be crispy Carefully remove the fish with the support of a fish slice and large spoon. You can serve your fish with salads or al dente vegetables if you prefer, I have decided to garnish the fish with fried fennel bulbs and thickly sliced lemon.
