appy new year to all of our readers, and welcome to the first Golden Times of 2015! On the cover this month we have a shot of Bodiam Castle, taken on a very crisp December morning. It's a fascinating building in a very beautiful setting, well worth a visit. I almost caught another, very festive shot of a Robin sitting on a twig but the little scamp flew off while I was getting the camera ready! He'll never end up as a cover star with that attitude... Frank’s Travels

In the last issue I spoke of my stay in Singapore on the last leg of my Pacific tour. Well let me assure you my journey back to London only took eleven hours by air as opposed to my original journey of twenty two days to Singapore by Troopship!! The flight back to Heathrow was non-stop, and I was met by my family when I landed. I felt a bit like the returning prodigal son but it actually felt good to be back in Blighty. After a week or two I went back to my voluntary job as an Ambulance Car driver as I felt a need to be doing something useful, and as usual I loved every minute of it. There is something special about voluntary work because you are involved because you want to, and not because you have to. The year was 2001, and in the summer of that year nobody was aware of the tragedy that was about to occur on 11th September or 9/11 as our friends across the pond insist on calling it. This was about to change air-travel forever and made me realise how fortunate I was to have gone on my travels when I did. The reason I went on my travels when I did was that I had decided to treat myself to a really memorable retirement present. Let's face it, you don't get to retire every year! Leading up to my retirement I had spent the previous eight years working as a Holiday Host mainly in the

Canary Islands but also in Cyprus, and The Algarve... Surprised? Well I was too when I was offered the job at the age of fifty seven. I actually got the job by accident rather than design. Prior to this I had been a Pub Landlord in a village in South Lincolnshire but when my wife died my get up and go just got up, and went. I completely lost all interest in the business and eventually decided it was time to sell up and go. When the dust had settled I went to visit my youngest daughter who was working as a Holiday Rep; on Fuerteventura, and it was while I was there that I was told by her boss that their company, Cosmos was looking for mature Rep's to work in their over 50s Winter holiday programme. I saw this as an opportunity to give myself a complete change of direction in my life, and always being up for a challenge I decided to give it a go. I was given a bit of a lift up by the boss who provided me with a telephone number that would get me straight through to the right person at their head office, so on my return home I took a deep breath and made the call. In my next column I will fill you in on the result of that call so until the next time stay healthy, watch how you go, and enjoy living.

Julia Meanwell - In sickness and in health Maintaining a good relationship can be tough at times so when there is the addition of a health challenge it can become overwhelming. It can feel like an uphill struggle to attain additional resources within you to cope with the added stress that ill health can bring. Serious illness can strike any one of us at any time and I guess the older we get the more likelihood there is of this happening. Chronic illness requires so much extra time and work for both parties but perhaps even more so for the healthier partner. Hospital appointments alone can take up endless hours of your day. Health procedures no matter how small they are need to be carried out in the home which also adds to your already tiring day. Even the most loving of couples can feel resentment at the new regime and the resulting change that occurs when one of you becomes ill. Many couples struggle to adapt to this new way of relating to each other when dealing with long-term medical challenges in their relationship. Each of you are likely to be experiencing a vast range of emotions as you become either the carer or the cared for. This new way of life can be so demanding but what can you do to relieve some of the stress? Talking about how you feel and how much you have been affected by what is happening within your relationship can be of great benefit. Offering each other empathic understanding and being prepared to genuinely listen to some very painful feelings can be really healing. These conversations could be the toughest you’ll ever have but honest communication makes such a difference.

Q: Help! My children have bought me a tablet /computer for Christmas and I’m needing help to understand it! A: Ever since Apple launched the iPad, tablets have been taking the world by storm. In 2015 it is estimated that they will overtake sales of laptops and desktops combined, which is incredible growth. Most commentators put this down to their intuitive ease of use, with touch-screens instead of a mouse and keyboard, plus great portability. For a beginner they are certainly a good learning option. Since the iPad many tablets have hit the markets. As ever, a lot comes down to your budget, but with this equipment the motto ‘you get what you pay for’ is certainly true. At the top end the iPad still reigns as the smartest looking and best working touchscreen of them all, but the new full size ‘iPad Air’ costs £399 upwards. A cheaper option is the new mini iPad, a smaller-screen version but still powerful, which retails at £249 upwards. Elsewhere the Samsung Galaxy Note has become a true rival to the iPad, with a fantastic screen and more flexibility with the programs (called ‘apps’) you can have on it. They start at around £300. A whole host of cheaper tablets are now available from most high street retailers: Tesco’s Hudl laptop is very popular and has good reviews, as well as Amazon’s Kindle Fire HD, both retailing at only £119 – but don’t expect the top-end quality of the iPad or Galaxy. That said, if you only want to send some emails, play music and do a bit of online shopping, you could do far worse than some of the solid lower-end contenders. Reflexology and EFT - Perfect Partners. by The Barefoot Energist A Barefoot Energist! What is one of those I hear you ask? Well, after 10 years of working with my reflexology clients and working on their physical energy body - I can now finally work on their soul energy too, after qualifying as an EFT Master Practitioner. Now you all know what reflexology is, but what exactly is EFT? EFT stands for Emotional Freedom Technique and by working them both together I have found a very powerful treatment. I found it very hard to work on only one aspect of a client's problem, I spent hours wishing I could do more for them. I knew that a lot of their problem would be emotional and in most cases old emotions clogging up the energy flow and not allowing them to move on. Now with EFT, I can work on all aspects and am getting fantastic results. Reflexology and EFT are, in my view, perfect partners. By working the foot I am able to establish which areas need support and working intuitively, and therefore knowing what the emotional event could be, I am now equipped to transform my clients even more. I found that by discussing the areas that were out of balance and then, using EFT, gently working on the emotions surrounding this invaluable,

my clients all know that if they have 'issues in their tissues' I have a tap for that! A regular client of mine is a case in point, during their first session while working their left foot I noticed a small lump in the area of the small intestines, one of the elimination reflexes. To me, as a foot reader this indicates an issue or emotion which the client is currently unable to 'let go' of. Which foot the imbalances are in is also important, left = present and right = past. So I always know if the issue is a present or past event. During discussions we identified the problem and looked at the effect it was having on their life. Bit by bit using reflexology and EFT we were able to breakdown the emotions surrounding the event causing the lump. It was a very old emotion and together we are working through it. At the time of writing, the lump, and the feelings surrounding the event are reducing. How amazing is that! ARE YOU WEARING A HABIT?

How quickly a year goes by. It doesn’t seem many months since I was writing my piece for January 2014! I well remember taking a few hours out from all the Christmas preparations to consider what to talk about. I gave you my top tips for changing your style over the next year. How did you do? (In case you can’t remember the gems I set out last year, you can read all my articles on my website www.micheleduke.co.uk) I just re-read the article and I’m embarrassed to say I didn’t always follow my own advice. It reminded me how difficult it is to (i) remember good advice (ii) follow it! That’s why it’s important to embed new habits into our daily routine so it becomes second nature. I’ve recently met a woman who wears an updated version of punk style. Her hair is dyed platinum blonde and cut to look like Debbie Harry from Blondie. She dresses in tight leather with lots of chunky jewellery. She wears it with total confidence and is never, ever seen in anything remotely conventional. I wondered aloud how she found the time to create this style every day. Her answer? “I just pull something out of the wardrobe and put it on.” To her, this is everyday dressing. Looking outrageous is her normal. It’s just a habit and takes little effort. Now, I’m not suggesting we all start parading around like Siouxsie and the Banshees (remember them?), but you get the idea. Challenge yourself to make one or

two changes and make them habits. If you’re a routine trouser wearer, force yourself into skirts and dresses for a couple of weeks. It will take this long to become a habit so don’t falter until you’ve completed the full two weeks. Swop your t-shirt or sweater for a silk blouse or crisp shirt. Wear a hat every time you go out – it won’t take long till you feel under dressed without it. If you need to ease yourself in gently start by keeping your nails varnished at all times. Small changes can be the start of something big but not until they become part of your daily routine! If you did make some changes in 2014 or you’re planning some this year, please do let me know. appy new year to all of my readers! This time last year I was sunning myself in Egypt and Golden Times had to make do without my musings. No such luck this year, I've been tasked with providing the grandparents among you some ideas for occupying the youngsters during February half term! When I was a young girl terms seemed to last forever, but these days it seems the kids are off school every other week. I've only barely recovered from attending carol concerts, pantomimes and visiting Santa's grottos. None of my brood appeared in nativity plays this year, shame really, but I expect the teachers are far too busy these days to teach 8 year olds how to pronounce "frankincense" or to explain what Myrrh is. Funny enough, when I just looked them up on the internet it seems that they're pretty much the same thing, "aromatic resin". Well, it probably did whiff a bit in that stable... I hope you have all made it through the midwinter debauchery in one piece. I visited my sister on Boxing Day this year and there is a long standing family tradition among us for twisted ankles and bumped heads when enjoying some festive "refreshment". Fortunately, this years party passed without any mishaps, we just had a great time in a house full

Gardening tips for Mid/Late winter by Phoenix Gardening. Just because it’s winter and some of our native animals are beginning to hibernate or think about it, it’s not time for us gardeners to put our feet up by the fire with a cup a soup or a coffee. True, mid-winter jobs tend to be more inside tasks. Things like servicing the mower, but we can also take hardwood and root cuttings at this time of year. Keep an eye on bulbs and tubers in storage for condition. If you can provide enough warmth, in a propagator for instance, you can sow some early seeds, keep them in a well lit position for the seedlings to grow on. With Late winter upon us it’s time to finish that winter digging and apply some manure and fertilizers where needed, always remember when mulching or applying fertilizers never let it touch the plant stems this can cause burning just leave a clear ring round the stem. If you have a pond and we get some prolonged freezing weather try and keep an area of water open, the fish will thank you for it. We can take Chrysanthemums cuttings and pot up earlier rooted ones. Concentrate on indoor sowing, maximising frames etc if it gets too cold seeds won’t germinate.

Volunteering: How helping others could help you We all realise the huge value of volunteers to the people and organisations they support, but have you ever considered how the volunteers themselves may benefit from the time they give ? Studies have shown a wide range of positive effects on those who volunteer, some, such as the opportunity to meet new people, may seem obvious, but other benefits to the health might surprise you. Volunteering was found to keep people more active, which in turn has a wide range of physical health benefits, including an extended life expectancy! Older volunteers were shown in a number of studies to experience less depression, better cognitive skills and higher mental wellbeing and life satisfaction when compared to non-volunteering retirees. It was also shown that older volunteers had better relationships with their families. It is thought that the care-giving role carries over into personal relationships, making those involved in voluntary work more independent and less reliant on their family. Barbara has been caring for her husband Cliff since he had a stroke 27 years ago. Sadly the stroke left Cliff unable to speak but he is able to walk with the aid of a stick and has a great sense of humour. Volunteer Paul visits the couple each week and goes out with Cliff while Barbara has some time to herself. Paul said: “I love my role as a respite and befriending volunteer. I feel rewarded by seeing how much Barbara appreciates her break and Cliff and I have a great time together, we go to the garden centre for a browse and enjoy a cup of tea.” Barbara said: “Knowing that Paul is going to come and spend time with Cliff each week means so much to both of us, he provides companionship for Cliff as well giving me the opportunity to have some time to myself. We both think Paul is wonderful and really look forward to his visits, he’s made such a difference to our lives and is worth his weight in gold.”

"Independence" by Charlie Marsh

"Ready dad" the voice rang out of her bedroom. Swallowing hard, I knew what that meant. "Coming Jane." I replied, as I climbed the stairs. Along the landing were cases, packages, a television, hi-fi, laptop, a box of CDs and another of books. "Sorry dad, I want to take it all." Grimly, I carried them all downstairs and put them in the back of the car. As I was nearly finished, Anne, my wife, appeared from the kitchen with two more bulging bags. "Just a couple of food parcels." she assured me. We all got in the car, did a check of the vital items - keys, chargers, phones, etc, the address - and we set off. Jane was going to University for the first time, and we all had our different reasons to be nervous. We chatted away, best as we could on the three hour journey. Jane was staying in the halls of residence to start with. She had gone away with friends for a week before, but not... for the next three years. Fighting back our tears, we unpacked her on arrival, made encouraging remarks about her accommodation, which was clean and warm, if a little cramped. Jane seemed excited at seeing a load of new people her own age, all starting their degrees at the same time. We talked to the lady in charge of admissions, who showed us around, the canteen, the way to the lecture halls, and explained the house rules. It was at least comforting to know there was someone

who'd look after her. We said our goodbyes, all trying to be brave, and we got back into the car and sat. "Would you like to go for a meal ?" I asked. "No, let's just get back home." Anne replied. Like me, her stomach was full of nerves. We drove home in virtual silence, the reassuring sounds of Classic FM being our gentle accompaniment. Eventually the car scrunched into the drive. We got out and went inside. The house suddenly seemed so quiet. No Jane leaping downstairs to greet us, no music blaring from her bedroom. Just an empty, quiet house. "I'll put the kettle on." Anne offered. I went back upstairs, somehow hoping that Jane would still be in her room, which was eerily tidy. I ran a finger along the dust on her dressing table which was now devoid of her make up and photos. I went and stood at the window and stared down at the garden. How I remembered her growing up. The games of chase, the paddling pool, helping me dig up potatoes. This was now all gone. Jane had now become independent, living her own life, and was no longer the same part of our lives that she had been. I just collapsed in tears. I felt a comforting arm around me, and a mug of tea appeared next to me. "I know how you're feeling, I know." Anne Said.

"The Path Not Taken" by Vincenza Angela Osmond

They had been friends on and off for twenty years. He had become a widower in his early fifties. She was twelve years younger than him and had never married. Once, in her late forties, he had paid for her to visit him in Italy where he was living in a rented flat. She was doing her dissertation on the silent women of Southern Italy and he was reliving holidays he'd spent in childhood on the Italian Riviera. They were long past the age of sexual hunger and slept in separate beds with no discomfort to their egos. He drove her through the mountains of Saluzzo and across a landscape of trees in perfect lines. She took photographs of Madonna grottoes savouring the memories of her childhood. Both thrifty, they shared the price of the delicious pasta dishes and spent a week of charming nostalgia. The following year he visited her in England. She had moved into a one bedroomed flat. While she was out at work teaching, he built the flat -pack futon and slept on it. He praised the way she had transformed the charity shop furniture into works of art. He talked a little about the years of caring for his wife who'd died of cancer and she about the years of searching for a someone who wouldn't be afraid of her independence and would give her space to make art. They went for a walk along the tree-lined streets. Flowering weeds shot up through the cracks of paving.

'Nature abhors a vacuum' she said and he agreed. Sporadically they kept in touch. Five years later he phoned to say he was in England. They met at a restaurant by the sea. He had a silver BMW and an expensive set of crowns. He was high handed with the waitress and ordered the most expensive dishes on the menu. They drank champagne. He had inherited a fortune. He suggested that she move with him to Italy 'No strings', he said, surprised when she was unequivocal. 'How could you bear to live here in this dreary town on a meagre pittance in a dingy rented flat' he said. She gulped the last of her champagne. 'I'm sure you will find someone soon' she said and didn't add or someone will find you. She knew he wouldn't listen. When he left there was a moment in the middle of the day in which she faltered. She thought about the vast expanse of the Italian Riviera, untrammelled days of doing nothing very much in luxury. But fortunately the moment passed. Ten years later they met again in England. He paid for breakfast, although the young, Russian, ex-wife took everything, the house in Italy, the furniture and fixtures, his self-respect. She listened to the litany of grief, her thoughts reverberating in the stillness of the yawning wordless gap which now existed for eternity between them.

Golden Times Recipe by Faz Razeen Spanish Salmon Fillets pan-fried with Romesco Sauce finished with Courgette As you may or may not be aware, the Romesco is a nut and red pepper-based sauce which originates from Tarragona, Catalonia, Spain. It is known that the fishermen in Northeastern Spain were made to eat fish with Romesco sauce. One can use this sauce with any seafood but can also be served with a wide variety of other dishes, including poultry and red meat such as steak, lamb and vegetables to suit your own taste buds. Another hint, the sauce can also be used as a dip when you fancy a few slices of French or rustic bread or simply spread on your bread to enjoy the rich sauce. Serves 2 Preparation time, roughly 25 minutes. Ingredients: 2 portions salmon fillets (normally per portion 260g or 280g) 4 tbsp extra virgin oil 3 medium sized courgettes, sliced thick lengthwise 1 medium size red onion ½ lemon thinly sliced ½ lemon for Juice Pinch of smoked paprika Freshly milled black pepper Ingredients required for Romesco sauce 6 almonds* 4-5 hazel nuts 2-3 garlic cloves 1 red pepper ½ tbsp red pepper flakes or chilli flakes (optional) ½ cup of red wine vinegar or alternatively red wine ½ tin of chopped tinned tomatoes 200g ¼ tsp salt Prepare Courgettes: Cook in a saucepan, bring water to boil and then place sliced courgettes in water and simmer exactly for 4 minutes to maintain ‘’al dente’’, immediately drain water and keep it ready to add to the frying pan. Prepare Romesco Sauce: In a food processor, combine blanched almonds*, hazel nuts, garlic cloves, sliced red pepper, red pepper or chilli flakes, red wine vinegar or red wine, chopped tomato and salt. (*blanch almonds by leaving in boiled water for over 1 minute, drain and put in food processor with rest of the ingredients) Instructions: Lightly rub the salmon fillet with a pinch of smoked paprika, season with the juice of half a lemon. Heat 2 tbsp extra virgin olive oil in a large frying pan on medium heat for 2 minutes then add thinly sliced lemon and sliced onions and fry for just over a minute until slightly brown and then immediately add 2 fillets of salmon. Cook each side of salmon fillet for 5 minutes, gently turning over with a fish slice. Add cooked courgettes to the pan with fried salmon and spread 2 tbsp of extra virgin olive oil over the courgettes, and then gently pour over Romesco sauce, let it simmer for 4 minutes on a medium heat. Serve the dish by garnishing with sliced lemon and 2-4 cherry tomatoes.
