Frank’s Column Memories of Tonga I suppose I first became aware of the existence of The Kingdom of Tonga when, as a young soldier, I lined the route for the Coronation procession of Her Majesty Queen Elizabeth. (The 2nd I might add) Taking part in the procession was a rather large coloured lady sitting in an open carriage, and showing the biggest smile I have ever seen. The newspapers were full of pictures for days afterwards of this lady with the enormous smile, and that was how I learned she was The Queen of Tonga. This information must have registered somewhere in the mess of grey matter floating around in my skull, and consequently, when I planned my itinerary, I decided to include Tonga as one of my stops. I’m still not sure what kind of island paradise my imagination conjured up for me but I soon found out that my imagination could suffer as many glitches as my laptop!!! When I arrived in Tonga I found the arrivals hall to be quite similar in size, and construction as a nissen hut! That should have given me a clue but as it was 03:00hrs I suppose I could be forgiven for being more dozy than usual. Another clue to things being different here was the fact that the 'Duty Free' shop was positioned in an area after we cleared customs… Yes, you read that right! After clearing customs, then topping up on some cheap scotch, I strolled outside into the warm and humid night air to grab a taxi to

my hotel. There were taxi’s in abundance so I did a deal with a driver to take me the 20 miles to my hotel, and off we went. It wasn’t until I had settled into the back seat of the taxi that I spotted the large crack running the width of the windscreen. When I mentioned this kind of casually to the driver he gave me a warm smile, and assured me that most of the taxi’s on the island had this problem as the only shade they could get during the day was under coconut palms, and the falling coconuts were the cause of the problem.. I got plenty of proof of this when I saw the local police cars… They all looked like they belonged on a banger track!! Halfway to the hotel the driver said he was running short on petrol and would I mind if he stopped to borrow some off his brother? Bearing in mind it was around 04:00hrs it didn’t seem to bother the brother at all. It was probably a nightly occurance. Well I finally arrived at my hotel, booked in and crashed out for the next 8 hours. I won’t bore you with any more details at the moment, but I will conclude this story in the next issue, so until my next column watch how you go, stay healthy, and enjoy living.

Local computer expert Neil Duncan says “the over 50’s are being left on the wrong side of the digital divide as a whole generation has missed out on the growth of the Internet.” He intends to reverse this trend by encouraging people in the East Sussex area to take up the challenge and have some computer fun. He is one of many newly recruited tutors who have been trained and appointed by Silver Training to provide a unique, oneto-one computer tuition service directly to people in their own homes. Silver Training is unique in that it focuses on ongoing training rather than merely fixing problems. Its network of tutors are all centrally managed, trained, vetted and branded. “We are all part of an established company”, says Neil, “which means clients can trust us and have faith in the service.” The training service also includes computer buying advice, installation, Internet set-up and general assistance. Accompanying training material is provided. Neil says “It is never too late to start”, as demonstrated by one of Silver Training’s clients aged 93! Protect your assets

There is a question playing on the minds of many older people these days, along the lines of: “We have worked hard all our lives to leave something for our children and grandchildren. Why should the local authority get it all?” If you have to go into care and you have assets that total more than £23,250 (including the value of your home), you will have to fund your care in full. A care home costs, on average, £36,000 a year. The reality is that your children could end up with very little. Although care may seem a distant possibility right now, there are important steps you should take now to protect your home.

Married Couples: A legal trust arrangement within your will could save your family tens of thousands of pounds and ensure your hard earned wealth passes to those you choose. Widowed/Single: The options available to you to protect your home are fewer and it is vital you act now. “I’m protected, I’ve signed my house over to my children.” What would happen if your child/children were to experience marital difficulties and your home forms part of a divorce settlement? Did you know that capital gains tax is payable on second homes, meaning a potentially huge tax bill when your home is eventually sold by your children? It’s not too late to put it right, call Collective Legal Solutions on 01424 854561 or 07718 155740 www.clshastings.co.uk

Weed your wardrobe This is a great time of year to "weed" your wardrobe. Getting rid of the clothes you never wear will be liberating and free up space for some lovely new treasures. And it will save you time and money. Imagine having a wardrobe with a small collection of coordinated, beautiful clothes, shoes and accessories. It can be yours. It just takes a little organisation and a lot of willpower. Set aside a day to do this. You might like to enlist the help of a friend - they are more likely to chuck out your comfortable but tatty old jeans than you are! Open your wardrobe and take everything out. Sort your clothes into four piles: "bin", "charity shop", "spare room" (the ones you can't bear to part with) and "wear". Remove everything but your "wear" pile from the room. Look at what you have left. Are you certain you are going to actually wear these items in the next 6 months? If not, they need to go. Now do the same with your drawers. Everything. Including underwear, tights, night-wear, scarves. And shoes, boots, slippers. By now it must be lunchtime so treat yourself to something special. This is hard work! When you return to your bedroom, the only clothes still in the room are in your "wear" pile. Now sort your clothes into outfits and try them on. Does that skirt really suit you? Are those jeans just a bit too tight? Are those old boots really worth saving? Will you ever wear those yellow patterned tights? Really? You should be able to reduce the pile still further. (That's where the willpower comes in!) Notice what's missing. Do you have lots of lovely tops but

need a new pair of trousers? Would a new jacket give you a great alternative to your usual cardigan? Is your favourite white shirt looking a bit jaded? Press your clothes and hang in the wardrobe in an order that makes sense to you. My system is colour within type, so all trousers are together ordered by colour. Hang up as much as you can - it's easier to choose outfits from a wardrobe than a set of drawers. Organise footwear by season and pack away flip-flops and summer sandals until the temperature hits at least 70 degrees. Once you have "audited" and organised your current "stock", you're ready to fill the gaps. But, before hitting the shops consider how to avoid making the same mistakes again. Do you know which styles and colours work best for you? If not, why not get some help? There are lots of websites which will help you work out your body shape and show you the most flattering designs for you. Or you could find a local Image Consultant or Style Advisor to advise on shapes and colours. Enjoy your new "weeded" wardrobe - Michèle

Better Breathing means Better Health Throughout our lives breathing is probably the most important activity affecting our health but is largely ignored by medicine unless we have asthma or other respiratory conditions. It is presumed that we all breathe normally, but the truth seems to be that we don’t! Most of us breathe too much or hyperventilate. Over-breathing or hyperventilating can make us breathless, worsen asthma, disturb our sleep with sleep apnoea, raise our blood pressure, cause panic or anxiety attacks and many more health problems. All these problems are rarely associated with hyperventilation and are treated with drugs to

suppress or ameliorate the symptoms. Question: “Do you hyperventilate?” Check your breathing now with the Buteyko Control Pause test: Sit quietly at rest for a minute. After a normal out-breath, hold your breath and count the number of seconds before you want to breathe again. How did you do? Over 45 seconds is good, 45-35 is fair, 35-25 is over-breathing, 25-15 is hyperventilating & less than 15 seconds is serious hyperventilation. The Buteyko Method would teach you how to normalise your breathing in just a few weeks. Tel: 0800 781 2354

Hands-on-Health

Marilyn has been involved in complementary health for over 20 years as a therapist and qualified lecturer. She currently practices Su Jok Acu therapy from the Michelham Unit at the Eastbourne District General Hospital, and also runs a practice from her home in East Grinstead. Su Jok Acu is a method of treatment carried out on the hands and/or feet. Extensive clinical trials backed up by MRI scans have been carried out in hospitals throughout Russia over the past 25 years, which proves the efficacy of this therapy. Relief from acute painful conditions is often felt from the very first session. Su Jok Acu therapy has benefited many people throughout Russia, Asia and Europe but is relatively new to the UK. Originally the treatment was only carried out with small micro needles, however, it was discovered that magnets, light stimulation, electro stimulation, etc. applied to points on the hands/ feet are equally as effective as needling, enabling people with needle phobia to be treated.

Golden Times Review Having heard about Simon Roll's seated exercise DVD and all the positive reviews it's received from satisfied customers, we decided to take a look for ourselves and see what all the fuss was about. The DVD offers a chance for seniors who are still keen to keep active to enjoy a challenging and fun workout that will help keep them healthy and active. Simon has several years experience in delivering exercise classes to seniors and his coaching is positive, informative and never patronising. Throughout the session the exercises are easy to follow and their benefits are clearly explained. The up-beat background music helps to give the class a fun and sprightly feel. As good as Simon is, we felt that the real stars of the show were his two ladies, Beth and Joan. They take on the exercises with such enthusiasm and gusto that's enough to inspire anyone to stay 'Alive & Active' You can get your copy of the Alive & Active DVD from Amazon or you can find out more about this unique, seated exercise programme, along with lots of information about staying healthy later in life at:

5 Minutes with... Debi Arnold

At the start of a new year, many people feel the urge to commit to a healthier, more active lifestyle. With that in mind, we decided to have a chat with local fitness guru Debi Arnold who told us how she helps her clients get healthier, happier and more mobile : Golden Times - “We’ve seen some amazing testimonials on your website (www.thebeachpad.com) – what do you offer that is different to joining a gym for instance?” Debi Arnold - Most people who want to join a gym, have done so already. For those that haven’t – there hasn’t been much choice up until now. I always wanted personal training or personal weight loss to be affordable and loaded with results. I offer one to one ‘personalised’ sessions from just £10, making it extremely affordable and in the comfort of a nice warm studio. Not forgetting the sea view from The Beach Pad – I’m never sure if my clients come for the advice or the view and sea air!

Debi Arnold -The body is designed to move, lean, bend, rotate, stretch, balance – and over the years our muscles get weaker, and our bones feel fragile. Lovely simple exercise incorporating those movements, with support if needed, can reverse any degeneration giving you back a body that can do all the above with ease. Golden Times - I’ve heard you specialise in the overweight or those suffering with bad backs? Debi Arnold - I’ve had to become an expert in these areas as so many of my clients were struggling on a daily basis with both or either problem. We had to tackle those problems before building on a nice strong ‘scaffolding’ for greater movement, health and well being. I even teach people how to cook cheap gorgeous healthy food – if they need it.

Golden Times - You’ve mentioned one of your clients is 70! Debi Arnold - Yes and she isn’t the oldest either…My favourite comment from our lovely 70 year old – was “I used to feel like a walrus in bed – and now I don’t” It still makes me laugh. Golden Times - Why should our readers come and have a free chat with you? Debi Arnold - I’ve turned people’s lives around, being able to move freely again, skip up the stairs, play with the grandchildren on the floor, drag the wheelie-bin out, not to mention looking 10 years younger. Golden Times - How does it work?

● Pilates ● Fitness ● Weight Loss ● ● Cookery Lessons ● Massage ● All conditions and ALL ages from 17 to 70+ Bad backs ? - no problem Overweight ? - We've got it covered

Golden Times - What should our readers

Debi Arnold - Their first session is free – so they can try it out - with nothing to lose and absolutely everything to gain. They can call or email and I’ll be happy to have a chat – even if they have never exercised before – I can help turn their life around and make it a much more healthy and flexible one! Tricia’s Column

H

ello and a Happy New Year to everyone! I hope you've all had a great Christmas and recovered well from any New Years Eve celebrations! I had a very busy Christmas as usual, trying to spend some time with each of my seven grandchildren. Three of the younger ones came with me to see the fantastic "Peter Pan" panto at the White Rock Theatre on Christmas Eve, a real family treat that was, the kids really getting into the spirit of things. Pantomimes are still showing during early January at theatres in Eastbourne and Hastings so if you've not had a chance to take in some corny jokes and outrageous costumes there's still time to book! Once we've finally polished off the last of the leftover turkey and packed away the tinsel for another year, January seems to get everyone thinking about adopting a healthier lifestyle for the new year. Though it has to be said, all too often, New Years resolutions are things that go in one year and out the other! Despite starting the year full of good intentions, being more healthy can be a bit of a drag. Don't get me wrong, I'm all for exercise, especially long walks, particularly if they are taken by my husband when he's getting on my nerves! A bit of exercise is always more agreeable if you're having fun while you're exercising, so a

HEALTH AND BEAUTY SHOW Revitalise, Stimulate and Rejuvenate

night out dancing is always a great way to get fit. On the page opposite you can see details of the 1066 Jazz club which sounds like a great way to Jive, Quickstep or Foxtrot a few pounds off! There are also 'Zumba Gold' classes on page 16 which are always great fun. If you, or a friend or relative are a little less mobile but would still like to stay active, have a look at page 17 for our review of the fantastic "Alive & Active" seated fitness video. To be honest, it makes me tired even writing about all these calorie-burning activities. I'd be quite happy if my main daily activity was getting up off my sun lounger and having a dip in a tropical sea at this time of year! Reading Frank's column about his travels around the warmer parts of the globe always has me thinking about booking a holiday to escape the winter weather. I always console myself with the thought that February is a short month and by the time I write my next column the daffodils will be sprouting and spring will be on it's way once more. Until next time then, have fun enjoy whatever you're doing and don't be too hard on yourselves if those resolutions get broken long before the Valentines Day chocolates arrive !

1066 Jazz Club

The 1066 Jazz Club is probably the best jazz club in the UK, it certainly has one of the best possible venues. It meets every Friday at Azur, The Marina Pavilion, on the St Leonards sea front. There is a good sized dance floor, licensed bar and special menu for the club, with food served to your table. Prices are very reasonable. A good example is a generous plateful of fish and chips for £6.90 or a chargrilled Rump Steak for £12.50 while a bottle of wine costs £10.00. The club features a different band every week, and presents the UK’s best and most popular bands playing traditional jazz in the style of Chris Barber or Acker Bilk and the floor is usually filled with dancers. There are many different styles of dancing here, Jive, Le Roc, Quick Step and Foxtrot, Lindy Hop, Balboa and the infamous Night Club Shuffle. There are usually two or three sessions of the Charleston Stroll, a formation dance in which anyone can join. Friday February 15th will be a Mardi Gras party night with every one invited to dress up in masks, feathers and carnival costumes. Don’t miss this one !

LIME CROSS NURSERY ~ JOLLY SERIOUS ABOUT GARDENING Happy new gardening year - let’s hope it will be a far less waterlogged one! If you had a real Christmas tree, remember to be environmentally friendly and recycle it with your local authority – details in your local paper or online. Throughout the winter months, keep your bird-table topped up with a good supply of fat, seed, nuts, grain and fresh water which will provide visiting wild birds with nutrients and energy they need to survive the long, cold months. During the winter months, planting of bare rooted plants is OK but always make sure the ground is in planting condition ie, not waterlogged or frozen. Bare root hedging is a cost effective way of creating a hedge. Choose from natives such as Beech, Blackthorn, Hawthorn, Hornbeam or Hazel along with trees and shrubs for instant structure and definition. Protect your plants from snow damage; if snowfall is heavy the weight of it on your plants can cause branches and stems to break or split. Just knock or shake the snow off to lighten the load. Mahonias are a good winter plant which looks particularly good when companion-planted with hellebores, snowdrops and winter honeysuckle as well

24

as Black Grass (Ophiopogon). Winter flowering heathers (Ericas) can bring a splash of colour to the garden, and are a good ground cover plant. These will happily thrive in any soil type. Winter provides the natural resting period for your garden so now is the perfect time for you to begin planning ahead for warmer days outside. Use the time to be inspired; look for new or second-hand gardening books, sit by the fire and let yourself be transported into your very own fantasy garden! Start thinking about your veg plot and maybe plan a herb garden or window box which could provide an interesting focal point in your garden, patio or window sill, as well as being invaluable in the kitchen. Towards the end of February, seed potatoes will start appearing in your local nursery along with onion sets and shallots, rhubarb, asparagus crowns and a vast range of vegetable and herb seeds to get you underway. Order plants at this time from Lime Cross Nursery to get ahead, especially early perennials. Summer flowering bulbs such as dahlia and gladioli, crinum and freesia will be on sale too. Just ask your nursery team for their expert advice.

Don't move - improve. I think that most people would be in agreement when I say that we could all benefit from some additional living space at home. A larger lounge for that corner sofa, one extra bedroom so that children no longer have to share and in general more free flowing living space to prevent us from feeling hemmed in when we return home from work and at the weekends. If you are fortunate enough to own your own home then now is definitely an ideal time to consider improving and expanding your living space. This may range from internal alterations, through to an extension, loft conversion, the conversion of an existing cellar or even the creation of a new one. Yes, you can have a cellar put in to create additional space! An ideal solution if your home has no space for an extension. With property prices currently levelled off and the cost of moving at an all-time high the days of renovating and selling for a quick profit are a dim and distant memory and don’t look as though they will be returning in the immediate future. However, with interest rates at a historical low, and with the knowledge that property prices do eventually rise, as proven throughout the markets history, we would be wise to capitalise on this combination of circumstances by creating a more modern, spacious and up to date home that we can personally benefit from until such time as the property market awakens from its slumber. You may have an idea of what you want to achieve but the first step is always, always, always to seek professional advice. Look for a company that belongs to reputable organisations and can give you fully comprehensive advice, if possible from concept through to completion. Ideally one that’s able to guide you on such things as how to maximise your properties potential with the budget you have available and is what you want realistic. Secondly, will your project require the benefit of planning permission or listed building consent from the local authority? If it does and you don’t obtain it you could find yourself enjoying a trip to the local law court. Thirdly does any work that you intend carrying out need the intervention of a structural engineer and submission of a building regulations application. Most important this one, after all you wouldn’t want your beautiful extension to end up looking like the fairgrounds “Crooked House”. Last but not least expect the unexpected. No matter how well you plan your project, building never has been and never can be an exact science. There are variables, you will almost certainly change your mind and the odd item may be delivered later than planned but embrace the experience and revel in your achievement because when completed you should have something quite unique that just made your life a whole lot better and, best of all, you just made your home worth a lot more money.

Revealing the stars' secrets by James Curtis Bachelors pop group star Dec Cluskey says that local author Tony Flood's new book 'My Life with the Stars Best, Ali and the Panties' is rocking the show business and sports worlds. Flood, who like Cluskey lives in Eastbourne, includes in the book a host of revelations and amusing anecdotes about celebrities he interviewed as a Fleet Street journalist and Sky Television executive. This has resulted in rave reviews from actresses Shirley Anne Field, June Whitfield, Susie Amy and singing icon Cluskey. Dec Cluskey declares: "This book's revelations about big names in sport and show business is wowing celebrities and the public alike.” The Bachelors icon, who also tells how his ego was dented by Bruce Forsyth, says: “Tony Flood's book is rocking quite a few people, and if you want to know the 'ins' and 'outs' of showbiz, sport, films and politics this is the one! My Life With the Stars is full of revelations about Joan Collins, Frank Sinatra, Elvis Presley, Peter Sellars, George Best, Muhammad Ali and a host of others" So why does the book have the sub-title 'Best, Ali and the Panties'? Flood, who worked as Controller of Information at Sky Television, says: "Meeting Muhammad Ali and George Best brought me into contact with two glamorous ladies who were offering to have sex with them! “One was so desperate that she gave me her G-string, tied around her room key, to pass on to Best while he was chatting to me in a VIP area.

The Purple Hat by Rebecca Best

Dotty pulled a white, silk handkerchief from her pocket showering the cool, stone floor with tiny lilac coloured sweets and dabbed at the steady stream of tears. She sat with her friend Eadie at the back of the church. An acquaintance from their nursing home had died - the most generous act she had performed in her whole life as Eadie had pointed out behind a lace gloved hand sending Dotty into another bout of poorly suppressed mirth. "My she was a sour old cow-bag!" Eadie marvelled admiringly. "Can you remember the purple hat?" Dotty feared she would wet herself in the house of God and ineffectually swiped at her friends shoulder running her toes against the stone under her pew and crushing the little

30

“She told me seductively 'Give this to George – tell him it's from the blonde he smiled at.' In the case of Ali, a gorgeous brunette had given a security guard an envelope for the World Heavyweight Champion which contained a nude picture of her dangling her panties on her forefinger. It had her phone number on the back.” Our readers can obtain a SIGNED COPY of 'My Life With The Stars' at the specially reduced price of £5.99 – a discount of £3 – plus postage and packing of £1.66 by sending a cheque for £7.65, made payable to 'Sportsworld Communications', to: Book Offer, 24 Brisbane Quay, Eastbourne, BN23 5PD. Full details are available on : www.celebritiesconfessions.com Or copies are available at £8.99 (paperback) and £5.03 (ebook) from Amazon where Tony and his wife Heather's other books are also available in both paperback and ebook versions. Signed copies of these fantasy adventure books are also available at discounted prices through the website : www.fantasyadventurebooks.com. Tony's fantasy adventure book, "The Secret Potion" has been hailed by actress June Whitfield as ideal for Harry Potter fans, while Heather's children's books "Mousey Mousey and the Witches' Spells", "Mousey Mousey and the Witches' Revenge" and "Giant Sticker Monster" have been compared to Julia Donaldson and Beatrix Potter. sweets releasing the smell of violets. The purple hat had been a hideous tea cosy affair both unflattering to the wearer and displeasing to the eye of the beholder yet the deceased had worn it out of spite to aesthetics. Summer had passed in a blaze of insincere naughtiness and nature, exhausted by all the frivolity, prepared to rest. It was time for the hat to come out once more to make children cry and small dogs bark. After fervid rummaging in an untidy wardrobe it was discovered by the grumpy owner that the hat had a family of mice nesting in it. Absolutely livid that something should be attracted to the purple hat, she had flown into a rage and stomped about for the rest of the day being extra awful and, as rudeness was her well practised forte, this additional objectionable behaviour passed her into laughable parody. When it had become common knowledge around the retirement home what had made her so angry, Eadie had confessed to a helplessly giggling Dotty that she had fashioned a mouse-sized hole in the hat box and had been sneaking in seeds, cheese and even a few tulip bulbs she had stolen from the gardener. She had even packed the purple hat with hay and cotton wool. Back in church, the life-long friends were practically purple themselves with contorted merriment. When the other inhabitants of the home filed out after the service they walked past the apparently weeping and hysterical women impressed and surprised that the passing had caused such passion.

Telling the story of your life Have your children or friends been nagging you to write down your life story? Have you tried, but given up on this seemingly impossible task? Perhaps you don't even know where to begin? From bitter experience we know that if a life story is not preserved, a person's experiences, personality and memories can be lost forever. That is why we at Red Letter Books offer a service to help you produce a life story book, either for yourselves or for your family and friends. We record your story through a series of interviews and transcribe your words so we can edit them into a cohesive narrative. You have full control over what is included in your final story and also what photographs and other memorabilia you would like inserted within the text. We design and layout your book, including front and back covers, and deal with the printers. All you have to do is tell us your story! The process usually takes between 3-6 months and costs from £3,000 upwards, depending on the length of your story (payment is in installments). Please feel free to call us to discuss a project on 01825 723940

6 top tips for creating your life story: • Write an introduction to your readers - a good start • Work out a chronology of events as a guide before writing • Don't get too bogged down by details • Confront the sad times, as well as indulge in the good times • Use anecdotes and stories, rather than listing events • Collect photos and memorabilia that illustrate your whole life

LIFE SAVING PARTNERSHIP

12/12/2012 21:39

A partnership between the South East Lions Clubs and the Kent, Surrey & Sussex Air Ambulance will help to save even more lives, at night, in 2013. In launching their public appeal, Lions Clubs in the South East have pledged to raise £250,000 over the next 10 years which will help the charity to achieve its aim of night flying. The funds will be a significant contribution towards the additional £1 million a year needed to allow the Air Ambulance to extend its operations. Adrian Bell, Chief Executive of the Kent, Surrey and Sussex Air Ambulance said ‘Lions clubs have been long term supporters of the Air Ambulance for many years. This is a major step forward in forging a path to operating by night and potentially saving many more lives each year’. The Air Ambulance currently operates two helicopters with two crews working from 7am – 7pm. But early next year the charity will replace one of its aircraft with a newer helicopter with night flying capabilities which will allow the charity to operate after dark from the charity’s Redhill base. The 70 Lions Clubs across the South East and South London have been raising funds and providing services and facilities to their local communities for 50 years including helping to make a difference to the needy and to those experiencing less fortunate circumstances. Members of the Clubs come from varied backgrounds and professions using their skills and initiatives to improve the quality of life and the community.

Dear Lucy

Dear Eve I had a dream about my grandad last night which seems really strange to me as he died when I was little and I barely remember him though he seemed nice and kind. I'm not sure exactly what the dream was but I saw his face clearly. What does it mean? Tanya, Fairlight, Hastings Hello Tanya What a lovely dream for you and as I connect Clairvoyantly your Grandad does indeed seem nice and kind and even if you don't remember him very well he certainly does remember you. I feel people we've lost can often appear

Dear Eve After loads of tests and visits to the doctor and even the hospital I have finally been diagnosed with "irritable bowel syndrome" but they are saying that there isn't a way to treat it. I feel fed up. How did I get it and will I have it forever? Thank you, Lucy from Battle near Hastings In your longer letter you say you don't have so much pain with it now but can feel bloated and uncomfortable. From my cards it does seem you have always had a sensitive stomach and as a Cancerian female the digestive system can be vulnerable. The good news is I think you can keep it under control with your diet. Why don't you see a Naturopath who can find out what foods are aggravating this condition?. A Herbalist can also be very useful for this condition. Clairvoyantly I feel your body doesn't handle white flour, white sugar and high caffeine drinks. Remember stress does play a part with irritable bowel syndrome so try to learn how to relax more . www.evepeacock-visions.co.uk

Salmon en CroÛte This great looking fish supper can be prepared ahead and baked when required. Easy to prepare but guaranteed to deliver that "wow factor" it's perfect for dinner parties or special occasions. Simple, tasty and eye catching, serve with asparagus and a glass of chilled Chardonnay.

Ingredients Serves 4 150g Mascarpone Cheese 1bag watercress, spinach and rocket, about 120g 500g shortcrust pastry Around 500g skinless salmon fillet 1 egg, beaten

Preparation Method Heat the oven to 200C (180C for fan ovens) Put the mascarpone, watercress, spinach and rocket into a food processor and blend into a creamy, green purée. Season to taste. Roll the pastry out into a sheet large enough to wrap your salmon completely. The pastry should be a little thinner than a £1 coin. Lay the pastry on a buttered

or oiled baking sheet and place the salmon in the middle. If the tail end is thin, tuck it under, then spoon on half of the purée. Next fold the pastry over into a neat parcel, trim the edge of the join neatly and make sure there are no thick lumps of pastry as these won't cook thoroughly. Make three neat cuts in the pastry to allow steam to escape and make decorations with the pastry off cuts if you wish. Brush the beaten egg over the pastry to glaze. Bake in a pre-heated oven for 30 minutes or until the pastry is crisp and brown. To test whether the filling is cooked, push a sharp knife into the filling, wait for 3 seconds then test it against the inside of your wrist; if the knife is hot, the salmon is cooked. Serve with the remaining cream sauce and enjoy!
