Taste in Florence Florentines form a powerful, nearly obsessive bond with their homeland.

A land blessed with a wonderful climate and natural beauty, and with a long-standing, continuous love story with its people, who have exploited but also preserved the hills, the woods, the farms. Florence is the heart of all this hustle and bustle, just like a seaport. Pellegrino Artusi, the father of Italian cooking, published his book in 1891 in Florence, where he acquired the taste for simple, genuine flavours and fruits of the earth, the staples of Tuscan cuisine, which are still watched and guarded by a small army of Florentine shopkeepers. We chose 121 of them, on the basis of quality and locality. A friendly warning: don’t rush your grocery shopping, you would deny yourself the pleasure of choosing.

Food markets. Central San Lorenzo or Sant’Ambrogio, since the late nineteenth-century covered food markets. Cool in the summer, warm in the winter, lots of shouting and bawling, mostly fresh local produce and products, and a select choice of international specialties.

C’è un legame spasmodico, quasi ossessivo che lega i fiorentini al territorio che li circonda. Terra generosa per clima e posizione. E per una lunghissima storia d’amore tra lei e gli uomini fatta di gesti che hanno disegnato le colline, di stagioni rispettate, frutti coltivati per necessità ma anche per piacere del gusto. Firenze al centro di questo laborioso fare. Perfino l’Artusi, che qui pubblicò nel 1891 il libro capostipite della cucina italiana, vi apprese il gusto dei sapori e della semplicità legata alla genuinità dei prodotti. Sapori che ancora oggi si ritrovano preservati da un piccolo esercito di botteghe fiorentine. Ne abbiamo selezionate 121 (per 11 categorie) perseguendo il principio della territorialità e della qualità. Unica avvertenza: non fate la spesa di corsa, vi private della soddisfazione di distinguere.

Food market. Mercato Centrale di San Lorenzo e Mercato di Sant’Ambrogio, i mercati alimentari coperti di fine ‘800. Freddo d’estate, caldo d’inverno, un gran vocìo, qualità, buoni affari, prodotti ad alto tasso locale, varietà di quelli stranieri.

Delicatessens. Deli owners know perfectly how much influence good locally-made prosciutto exerts on customers. Or a San Miniato Truffle. Or a sheep’s milk cheese made by a friend and farmer. And, so as not to sound too “local” (considering that it’s Florence), also national and international specialties, provided that they are the “best of”.

Bakeries. Only in Florence you can find a building that was once half church, half granary, holy and civil at the same time: Orsanmichele. It reminds us how important wheat (and bread) has always been in Florentines’ life. Saltless bread, white or wholemeal, schiacciata and focaccia bread, but also traditional cakes, such as the Schiacciata alla Fiorentina (a sort of sponge cake sprinkled with icing sugar).

Butcher’s Shops. Butchers are to Florentines as punks are to Londoners.

In the home of T-bone steaks, butchers are thought of as prophets. They tell stories, offer advice, raise spirits. More of legendary figures than shopkeepers and, above all, they really know their trade.

Fish Shops. Florence is not on the coast, but it’s just a one-hour drive from Viareggio and Livorno. That explains why freshly-caught fish from the Tyrrhenian Sea arrives daily (variety and quantity of which depending on how the overnight fishing goes).

Greengrocers. There is the farmer who sells his produce and that of his farmer friends at the market, the greengrocer supplied by local producers, Gastronomie. Qui le botteghe d’alimentari sanno bene quanto potere ha un buon prosciutto del contadino sull’affettatrice. Un tartufo di San Miniato. Un pecorino dell’amico pastore. E per non sembrare troppo locali (visto che siamo a Firenze) specialità nazionali e straniere, purché ‘il meglio di’.

Forni. Solo Firenze ha un Orsanmichele, mezza chiesa e mezzo granaio, luogo sacro e luogo civile. Questo la dice lunga sulla centralità del grano (e della panificazione) nella vita dei fiorentini, dalle origini. Pane senza sale, schiacciate e focacce, ma anche tipici dolci da forno, uno su tutti la Schiacciata alla Fiorentina (sorta di pan di Spagna spolverato di zucchero a velo).

Macellerie. I macellai stanno ai fiorentini come i punk ai londinesi.

Nell’assoluta patria della bistecca i macellai sono considerati dei vati. Raccontano storie, dispensano consigli, tirano su il morale. Più che commercianti, figure leggendarie. Ma soprattutto sanno fare magistralmente il loro mestiere.

Pescherie. Firenze non è sulla costa, ma in un’ora si va a Viareggio e in poco più a Livorno. Ciò determina almeno un fatto: pesce fresco del Tirreno tutti i giorni (più o meno vario, più o meno in quantità, dipende dalla nottata in mare).

and the “jewelry shops” (that is how Florentines call the most sophisticated and expensive stores) whose selection ranges from top-quality locallygrown produce to out-of-season rarities.

Grocery stores. Though changed and adapted over the centuries, they still have the atmosphere of old apothecary’s shops selling teas, coffees, chickpeas, beans, rice, emmers, flours, candied and dried fruit and peppers (the use of the plural is compulsory here considering the amazing variety to choose from!).

Street food. The symbol of traditional Florentine working-class cooking, it is based on “bread and something” or fried food. Though fried-food shops are nearly “extinct”, Florence still is the capital of the panino. Whether traditional or revised, the secret lies in the basic ingredients.

Wine shops. In Florence, the aristocratic families that have been producing wine since ancient times still live in their age-old palazzi and are still engaged in winemaking and marketing. What more to say?

Pastry shops. Some say that the delicious macaron, so Frenchy so chic, was sent to France with Caterina de’ Medici upon her marriage to Henry II… Ice-cream shops. Here we go with the Medici family again. When Maria de’ Medici married Henry IV by proxy, a huge party was thrown in the Salone dei Cinquecento. At dessert time, a true work of art was brought out: ice-cream, a creation by official court architect Bernardo Buontalenti.

Ortofrutta. C’è il coltivatore diretto che porta al mercato i suoi prodotti, la fruttivendola in contatto con i contadini della provincia, la ‘gioielleria’ (così i fiorentini chiamano gli orto-frutta che spiccano per selezione e, in sua virtù, per costo) che spazia dal km zero alle rarità fuori stagione.

Drogherie. Tè, caffè, ceci, fagioli, risi, farri, farine, frutte candite o secche e pepi, in un forzato plurale che non ci si può risparmiare davanti a tanta varietà.

Street food. Emblema della cucina popolare fiorentina, il cibo di strada, era quello fatto di pane e companatico o di fritture. Scomparse le friggitorie, Firenze resta la Grande Madre del panino. Tradizionali o sapientemente rivisitati, le materie prime sono il segreto.

Enoteche. A Firenze risiedono ancora oggi nei loro palazzi antiche famiglie nobili che non hanno mai interrotto la produzione vitivinicola e il commercio. Che altro dire?

Pasticcerie. Persino l’elegantissimo macaron, indentità golosa di Parigi, viaggiava nelle valigie di Caterina de’ Medici alla volta della Francia.

Gelaterie. Ancora una Medici. Maria sposa per procura Enrico IV, festa grandiosa nel Salone dei Cinquecento: arrivati al dessert, compare un capolavoro, il gelato by Bernardo Buontalenti.

La storia di Cecchi inizia nel 1893 in Chianti con Luigi Cecchi che, grazie alle sue doti di assaggiatore di vini, ha dato origine alla dinastia. Oggi, sotto la guida di Andrea e Cesare che rappresentano la quarta generazione, l’azienda è conosciuta e apprezzata in tutto il mondo per la produzione di vini toscani, ma non solo. Attualmente le proprietà Cecchi comprendono tre tenute in Toscana dislocate tra le zone del Chianti Classico - Villa Cerna, di San Gimignano - Castello Montaùto, della Maremma -Val delle Rose ed una in Umbria - Tenuta Alzatura, nella zona di Montefalco.

In 1893 Luigi Cecchi, inspired by the charm of wine, decided to set up his own business as a “palatist” - a taster and mediator - laying the foundations for what is now one of Tuscany’s most internationally famous winemaking estates. Today, as well as the Cecchi Wineries, the Cecchi properties include three estates in Tuscany located between the areas of Chianti Classico - Villa Cerna, San GimignanoCastello Montaùto and the Maremma - Val delle Rose and one in Umbria Tenuta Alzatura, in the Montefalco area.

Eataly (which stands for“eat” and “Italy”) is the most famous brand of marketplaces specialized in direct sale and service (catering) of typical high-quality food products, all of Italian origin only, whose founder was Oscar Farinetti. There are more than a dozen of Eataly stores, in Italy as in other foreign countries (in New York and in Osaka). Eataly Florence is dedicated to the Renaissance period, and it organizes many culinary classes in foreign languages for the many tourists who come to visit Florence. This is a place of a great cultural value, organized in 1,000 square meters of taste culture divided in three floors for the selling of products, food service and didactic courses.

Eataly (crasi di eat e Italy) è la più famosa catena di marketplaces specializzati nel commercio (vendita al dettaglio) e somministrazione (ristorazione) di generi alimentari tipici e di qualità, rigorosamente made in Italy. Padre fondatore, Oscar Farinetti. Più di una decina di spazi, aperti in Italia e all’estero (New York e Osaka). Eataly Firenze è dedicato al Rinascimento, con molti corsi in lingua dedicati ai tanti turisti che popolano la città. The construction of the building, along with that of Sant’Ambrogio, was decided in the years when Florence became Italy’s capital. It was designed by architect Giuseppe Mengoni (the same who designed Milan’s Galleria Vittorio Emanuele) and was inaugurated in 1874. The Art-Nouveau style structure is made of iron, cast iron and glass. The Central San Lorenzo Market is still very much frequented by Florentine restaurateurs and people living in the neighbourhood because of its excellent products and fair prices. The two-floor building houses stalls selling a variety of food, from cheese, meat, fish and cold cuts to fruit, vegetables, flowers, spices and dried fruit.

L’edificazione di questo mercato, insieme a quello di Sant’Ambrogio, fu deliberata all’epoca di Firenze capitale. La sua inaugurazione porta la data del 1874, il progetto è di Giuseppe Mengoni (lo stesso architetto della Galleria Vittorio Emanuele di Milano). La struttura Liberty sfoggia un grande utilizzo di ferro, ghisa e vetro. Il Mercato Centrale di San Lorenzo è ancora oggi un vivissimo punto di riferimento per i ristoranti fiorentini e per gli abitanti del quartiere in virtù dell’ottimo rapporto qualità-prezzo dei prodotti alimentari.

Nella bella struttura a due piani colpisce infatti la varietà dei generi alimentari sui banchi di vendita che riuniti tutti al primo piano offrono formaggio, carne, pesce, insaccati, frutta, verdura, fiori, spezie e frutta secca.

In the heart of Santa Croce, still one of Florence’s most picturesque neighbourhoods, the structure, just like the San Lorenzo Central Market, was designed by architect Giuseppe Mengoni in 1873. The building houses a food market. Outdoor sheltered stalls run around two sides of the building and sell fruit and vegetables, clothing, houseware, plants and flowers.

The market features 66 outdoor stalls and 20 indoors, in an area bursting with activity and serviced with an underground car park.

Nel cuore del quartiere di Santa Croce, ancora uno dei più popolari di Firenze, questo mercato, come quello Centrale di San Lorenzo, fu realizzato su disegno dell’architetto Giuseppe Mengoni nel 1873.

All’interno dell’edificio si trovano banchi di generi alimentari. Sotto le tettoie esterne, aggiunte successivamente, sono allestite le bancarelle di frutta e verdura, vestiario, prodotti per la casa, piante e fiori.

Il mercato conta oggi 66 banchi esterni e 20 postazione interne, in un’area ricchissima di attività di ogni tipo, è dotato anche di un parcheggio sotterraneo.

Fresh handmade pasta made with ingredients from biological agriculture. Among its specialities the kamut tagliatelle, the filled cappelletti (which mean “little hats” in Italian) and tortellini bolognese, the ravioli with parmisan cheese and truffle or gorgonzola cheese and wholenuts and the gnudi (little pasta-like dumplings). Located inside the market in Sant’Ambrogio, it is impossible not to find it: you just have to follow the smell of bread and pizzette (little pizzas) of this stand’s non-stop production. If you stop there at lunch time don’t miss the schiacciata vuota (empty Italian flatbread) or a slice of pizza with mozzarella cheese and tomato or, the best of all, with big pieces of fresh tomatoes. But the real specialities are the coccoli, which are little fried bread dough fritters, eaten with ham and stracchino cheese, since this stand also offers on-the-spot fried typical products (according to an old Florentine tradition, which is today ever more difficult to find).

A must-stop for Paola Mariabelli’s schiacciata with grapes (from May to October), sweet, soft and dripping with grape juice. This bakery, close to the Sant’Ambrogio market, is always crowded with Florentines buying bread. It is made in 40 different versions: the Tuscan filone and bozza, both saltless and made from stone-ground flour in the Casentino area, schiacciata, hand-kneaded breadsticks and special breads (suitable for coeliacs).

Tappa d’obbligo per non perdere, per nessuna cosa al mondo, la schiacciata con l’uva di Paola Mariabelli (da maggio a ottobre), dolce, soffice e grondate di succo dolce. The Becagli bakery is a family history. It was opened in 1909.

It is known above all for its excellent pastry making: ricciarelli, panforte, oven baked cakes, cenci, fritters, doughnuts according to the seasonal tradition. Eleven people are employed in this small bakery to prepare thirty different types of bread, the oil schiacciata which is baked many times during the day, and the real Tuscan bread. The Becaglis can boast to be the bread supplier of the best and most prestigious coffee bars in Florence such as the Gucci Museum cafeteria.

E’ una storia di famiglia quella del panificio Becagli. An ancient butcher shop, open since 1938 and carried on for three generations. Created in the 60s, this shop is an old-style butcher’s where sides of meat are hanging on the walls, so you can see them with your own eyes and choose the cuts you like most. All meats are of Italian origin, above all from breedings in Mantua. Some specialities you shouldn’t miss are: bistecche alla fiorentina (Florentine style steaks), roast-beef, the boned and filled chickens and rabbits from Montespertoli. Created in 1946, there are today five Vignoli butcher shops in Florence and one in Scandicci. It was here that the name Fesa di Tacchino was used for the first time to speak of turkey breast: the San Pierino poulterer’s was indeed the first shop in Italy which cut turkeys, and Rolando Vignoli named the animal’s breast “fesa”, name that is being used today in the whole country of Italy. Today the Macelleria Vignoli is a poulterer and butcher shop, specialized in ready-to-cook products, which sells the classic Italian Chianti wine, too, as well as the oil produced in the farm of San Casciano.

Nate nel 1946, oggi le macellerie Vignoli hanno cinque punti vendita a Firenze e uno a Scandicci. E’ qui che nacque la fesa di tacchino: il negozio di San Pierino infatti fu la prima polleria a sezionare il tacchino e Rolando Vignoli dette il nome di “fesa” al petto, nome oggi utilizzato in tutti i listini nazionali. On the historic bench of Paolo and Alessandro Soderi (father and son), an ancient race of Florentine butchers, we can find Limousine steaks and excellent crosses between Simmenthal and Charolaise breeds from farms in Croatia. Periodically Chianina steaks can be found, but only when they are dealing with animals of unquestionable quality. Anyway they are steaks of female animals because their meat has a more rounded flavour and an incomparable tenderness due to a better infiltration of fat in fiber Soderi Butcher’s is strong even in ready-to-cook.

If you happen to come to Florence and ask where to buy the best raw tripe, the Florentines will have only a name to tell you: Tiziano Trapani. He is one of the survivors of the noble 19th-century descendance of trippai (tripe vendors) of San Frediano in Florence. Among the products sold: tripe, lampredotto, leaf tripe, pork internal organs, tendons and casing…a stand that seems to be created and signed by Matthew Barney. All the major tripe vendors of Florence buy their raw products from Tiziano.

It isn’t a traditional butcher’s: here you can find a huge number of ready-to-cook dishes that are semi-prepared meat- and vegetable-based specialities of the shop. Some examples of the shop’s must-have dishes? Rolled chicken breasts filled with sausage and truffle or porcini mushrooms, roast pork with orange and figs, guinea fowl with apples and green pepper, curry chicken or little beef tatters with vegetables. Roberto Merlini, owner of this oasis of delicious products, has inherited this butcher shop from his grandparents, who had made the Saccardi e Panichi a mith in front of the eyes of meat lovers. The shop sells only Italian meats, bred above all in Emilia Romagna. Although this butcher’s is one of the few in Florence to have entered the Chianina Register, it offers above all Limousine meat, perfect for tender and tasty steaks.

Barabino was the nickname of the man who first bought this fish stall inside the San Lorenzo market in the immediate postwar period and grandfather to the current owner, Alessandro. The whole family has always been engaged in the business and has started several fish shops throughout the town.

The owner drives twice a week to the Viareggio fish market, while suppliers from Viareggio provide the stall with freshlycaught and top-quality fish every day.

Barabino era il soprannome del nonno di Alessandro, oggi titolare di questo banco di pesce in San Lorenzo che il nonno - da qui il bizzarro nome della pescheria - acquistò nei primi anni del dopoguerra. Da allora tutta la famiglia si è dedicata a questa attività ramificandosi anche con altri punti vendita in città. In order to grant his customers fresh fish from the Tirreno sea all the week long, Fabio personally visit, three-four times a week, the fish markets in Livorno and Viareggio. On Thursday he even takes the highway to the coast twice in the day, in the morning and in the afternoon. And on Friday: feast day for fish! Sea basses, orates, moscardini, rockfish, tub gurnards, atlantic bonitos, sanpietro (John Dory fish), red and pink prawns and jumbo shrimps. And then blue-fish: from April till October, or from the Adriatic sea during Winter come fresh veracious clams.

Per garantire sul banco pesce fresco, del Tirreno, tutta la settimana, Fabio si reca di persona ai mercati ittici di Livorno e di Viareggio 3/4 volte la settimana. Ogni giovedì addirittura inforca l’autostrada per la Costa per ben due volte, la mattina e il pomeriggio. Il venerdì è festa grande! Spigole, orate, moscardini, scorfani, gallinelle, tonnetti di palamita, sanpietri, gamberi rosa, rossi e scampi. Pesce azzurro: dal mar toscano da aprile a ottobre, o dall’Adriatico in inverno, da qui vengono anche le vongole veraci.

When there were less strict laws regulating fishing, Massimiliano Giani was the king of red tuna in Florence. Today the laws that regulate tuna fishing are really strict, and it is difficult to find high-quality tunas at a good price. Massimiliano shows all his professionality and skills in the selection of fish from the Tyrrhenian sea (hake fish, octopus, shrimps and blue fish) or of very fresh fish from the Italian or French coasts. All Florentines have a great consideration and respect for him.

In this fish shop, perhaps the oldest in Florence, which was taken over in the ‘80s by Massimo Montini (third generation of fishmongers), fish is fresh every day. He goes himself to choose the fish twice a week at the fish market in Viareggio, on Mondays and Thursdays,on other days fish is brought by reliable suppliers. The Tyrrhenian is the favourite place from which come tellinas in late winter, octopus, red mullets and squills in February, in June eledones, anchovies and mackerels in spring. In October from Mediterranean come tuna, swordfishes and amberjacks. Complete the offer: live crabs and oysters from Brittany, Scottish salmon and Norwegian dried and salted cod (Thursdays and Fridays).

In questa pescheria, forse la più antica di Firenze, rilevata negli anni ’80 da Massimo Montini (terza generazione di pescivendoli) il pesce è fresco tutti i giorni. Lui stesso va a sceglierlo di persona due volte a settimana al mercato ittico di Viareggio, il lunedì e il giovedì, gli altri giorni glielo portano i fidi fornitori. Prediletto il Tirreno da cui provengono le telline a fine inverno, polpi, cicale e triglie a febbraio, i moscardini in giugno, le acciughe e gli sgombri in primavera. In ottobre dal Mediterraneo arrivano i tonni, gli spada e le ricciole. Completano l’offerta: granchi vivi e ostriche dalla Bretagna, il salmone scozzese e il baccalà bagnato norvegese (giovedì e venerdì).

A historical fish shop of only 25 square meters at the bottom of the Torre dei Cerchi (13th Century). Every day, it offers fresh fish, chosen at the Mercafir (big market of grocery products) in the Novoli quarter of Florence by Sauro Bartoli, who inherited the passion for this job by his father and owns this shop since 1994, always granting for the best quality/price ratio (every morning he wakes up at 4.45am!). Inside, you can find fish from foreign and Italian coasts, but above fish from the Tyrrhenian sea: hakes, caramote prawns, mullets and bluefish. He will also suggest you try the paranza fish (smelts, to be panfried), the moscardini for a special risotto and even –when he can find it, fish like John Dory, rock and tub gurnard fish, which are perfect to be cooked in a soup, or white fishes (sea and stripe bass and oratas.)

Lorenzo Boccianti (who’s been a fishmonger for 25 years) not only sells fresh seafood retail, but starting from June 2012 he’s thrown himself into the most authentic tradition of street food - you can order on the spot a nice bag of fried fish (squid, shrimp and octopus) or grilled fish (tuna, swordfish, squid and cuttlefish) and in a flash you find yourself with a hearty lunch in your hands hot and steaming, fried or grilled before your own eyes.

Pescheria, ma attenzione: anche friggitoria e griglieria. Offering only the best fruits and vegetables to its clients, it also has a corner dedicated to cheeses and wine; moreover, they are famous for their first fruits: such as rosè grapes, wild asparagus from Sardinia and hops, all rare products, selected by expert hands.

A wealth of jellies, compotes and fruit preserves (mostly organic) in the most unusual versions and flavours (roast chestnut and rum, hot red pepper, green tomato, chestnut and cornelian cherry), which make the perfect pair with cheese.

Pesto sauce, pasta sauces, its own balsamic vinegar, the olive oil produced by a farm in Arezzo, San Miniato truffles, organic saffron grown in the Grosseto area, pine nuts from the coast. And wines selected by Manuel, Stefano’s son and a wellknown sommelier.

This is the stall number 217 on the Central Market’s first floor, owned by Elisabetta Fancelli and Gianni Boni, husband and wife, the union of two families that have been running fruit and vegetable stalls in the San Lorenzo market since the 1800s (should be experts by now!). Careful selection, only seasonal and local produce. For instance, all salads, aromatic herbs (basil, parsley, field balm), onions, leeks, garlic, cabbages and artichokes are supplied by local Florentine farmers. Soft fruit in season comes from the Apennines.

It is not a fruit stall but a literary café. If you think this is an overstatement, just take a look at the book titled La bancarella di Porta Romana: a collection of 87 anecdotes, short stories, small everyday events telling all about Silvana and Gianfranco, the owners, and their customers. The stall was started in 1919, but has been owned by the Naldi family for 25 years. It sells both fresh produce and culture: the owners’ art of bringing people together and wealth of interests is what makes it such a special place.

Every Friday and Saturday morning, Gianfranco Visani, a 76-yearold retired farmer, whose parents were farmers, too, after a life passed working land with enthusiasm, comes from Londa with his car full of fresh eggs –made by chickens in open-space breedings, self-produced honey and unpasteurized fruit juices (blueberry, raspberry and elder juices), as well as blueberry pulp produced in an agritourism at the top of Muraglione. He also sells different honey varieties made by a Sardinian shepherd: arbutus, cardoon, asphodelus and eucalyptus honey.

Giorgio Casilli, a small independent farmer who owns a farm in the geographical area of Scandicci, near Sollicciano, has started twenty years since to sell, every morning, his cultivated products at the Florentine market. Only seasonal fruits and vegetables, simple in the appearance, but really special in the taste. In order to ensure a certain quantity and variety of his products, he keeps collaborating with other farmers who cultivate the lands next to his, bringing their products, too, to the city. The oil, for example, comes from his cousin, who produces it in San Quirico d’Orcia (in the province of Siena).

Giorgio Casilli, coltivatore diretto con un podere dalle parti di Scandicci, vicino a Sollicciano, da una ventina d’anni tutte le mattine viene a vendere i suoi prodotti dell’orto al mercato. Solo frutta e verdura di stagione, insomma quel che butta il convento, ma il sapore è assicurato. Per garantire quantità e varietà ha fatto rete con altri contadini che lavorano terreni vicino al suo, e che periodicamente gli affidano i loro prodotti. L’olio, glielo manda un cugino che lo produce a San Quirico d’Orcia (Siena).

Nestled within Palazzo Ginori, this historic Florentine store that once sold fodder and hay, today has a timeless quality to it. Beatrice Trambusti is the only woman in Florence to be a trippaia (tripe vendor), always smiling and full of energy. Her lampredotto is of high quality, looking slightly redder, in comparison with other versions of the same dish, this depending on the larger use of tomato during the cooking time, and resulting in a very tasty dish. Then the panini “sbucciati”, that are sandwiches where the spannocchia part of lampredotto (the smooth part of the tripe, which seems to be the fat one, but it is not, in fact) is removed, sandwiches with tripe.

Beatrice Trambusti è l’unica donna trippaia in città: sempre sorridente e con un’energia invidiabile. Qualità nel lampredotto, leggermente più rosso degli altri, grazie all’uso maggiore di pomodoro in cottura, molto saporito. Panini sbucciati, nei quali il lampredotto è privato della spannocchia (cioè la parte liscia, quella che sembra più grassa ma non lo è) e panini con la trippa.

A sandwich accompanied with a glass of wine does not exceed 10 Euros.

A long experience as a butcher and, in the last 26 years, one of the most popular “trippaio” (tripe vendor) in Florence. If you ask Mario Albergucci (best known as Marione) about his specialities, he will say it is tripe, in all its possible preparations. So let’s start with a lampredotto sandwich (the tripe can be cooked with beans, leeks, livornese style, with artichokes or potatoes), and then the boiled beef, the stewed cheek, the francesina (with onions) or stewed beef with potatoes.

His address, Nerbone inside the Central Market of San Lorenzo (with marble tables in front of the counter) is in every guide and the quality is high, especially as regards the service and the care in preparing the sandwiches. In addition to the classic lampredotto here you can find a remarkable lesso, served with new oil and a genuine, creamy green sauce.

There is no novel set in Florence that does not mention its famous truffle sandwiches. It’s Procacci, a deli shop founded in 1885 in the prestigious Via de’ Tornabuoni. Its specialities related to the processing of truffles are a reference in Florence.

Taken over by Marchesi Antinori in 1998, the shop filled with an unmistakable scent of truffle, still has its original walnut shelves and the Art Nouveau green marble counter.

With its enjoyable and really typical atmosphere, it is worth a quick lunch if you happen to be in Sant’Ambrogio.

Orazio Nencioni has been running the shop for 25 years but before him it has been run by his father, his grandfather and his great grandfather. It took four generations to become the tripe and the lampredotto excellence which are made only with Italian meats. The menu proposes the francesina on Tuesdays and the sandwich with the boiled meat on Thursdays. The specialties are the lampredotto and the tripe which are cooked according to the season: cold with fresh vegetables in the summer, with cooked beet greens or artichokes in the winter. For the lampredotto lovers the bag with salt and pepper.

Only a couple of steps away from the Duomo in a medieval alley you can find the enoteca Alessi which was opened 50 years ago. Created in 1945 as a coffe bar with billiard tables, and located in the same place as it is still today, it has always been loved by the artisans of the local area. Following an old family cooking tradition, I dolci di Massimo has been selling since 1994, in the Gavinana district of Florence, fine pastry products. There you can find Sacher Torte, meringata cakes (literally “meringued”, with meringue in it), profiterole (choux pastry), semolina desserts, millefoglie (layered cake with pastry cream), and then little pastries, cakes for special events, semifreddi (partially-cooked dessert cakes), chocolates, biscuits, torrone (Italian nougat), marron glaces, pandoro and panettone (Typical Italian holiday sweet breads- at Christmas). Massimo has inherited the art of pastry-cooking from his father, and still preserves the wish of amazing his customers with his work. The shop offers a special wine list, too.

Among the pastry shops, Giorgio is by far one of the best as regards savouries. lt is therefore worth leaving the centre of the town (the shop is in the Soffiano area) to try sandwiches, such as the one with roasted meat of suckling pig, with salad and balsamic vinegar or the one with Colonnata lard, onions from Tropea and alici. When it comes to sweets its schiacciata alla fiorentina, soft and stuffed with whipped cream has no equal, just like the cream puffs or the millefeuille pastry. On Sundays, you will have to stand in a queue, so be patient.

Tra le pasticcerie, Giorgio è in assoluto una delle migliori sui salati Vale dunque la pena uscire dal centro storico (qui siamo zona Soffiano) per provare i panini, come quello con maialino arrosto, insalatina e aceto balsamico, o quello con lardo di Colonnata, cipolline di Tropea e alici. Sul fronte dei dolci la sua schiacciata alla fiorentina, soffice, farcita di crema chantilly non ha eguali, come i bigné mignon o la torta millefoglie. La domenica, c’è da fare la coda, portate pazienza.

The most delicious croissants in Florence! Whole, berry or chocolate mignons. You must try them in the morning with a steaming cappuccino and everything goes! Also noteworthy are its puff pastries (the chocolate fagotto cake, for instance) and cream puffs in different flavours. The lovers of savouries must try the butter sandwich with ham and cheese accompanied with fresh spuma bionda (strange but effective Tuscan combination). It was Enrico Rivoire, chocolate maker of the royal family of the Savoia, when Florence was the capital of Italy in 1872, who opened at the sides of the share Piazza della Signoria a little cafe, in order to produce and offer to Florentine customers a sublime chocolate, resulted from an old and secret recipe.

Robiglio pastry shop was created in 1928 by the willness of a young pastry-cook who came to Florence from Turin and fell in love with this city at first sight. He brought here in Florence the techniques in confectionery and in chocolate decoration and manufacturing that belonged to the tradition of the region of Piemonte. Since 2012 the Pasticceria Robiglio “Via dei Servi” -the one shop under the brand Robiglio which still has a manufacturing pastry laboratory- has been succesfully redescovering historic products of the brand Robiglio like the Torta Campagnola (country rice cake), the Fruttodoro (a sort of plum cake with fruit candies and chocolate) and the Gallettine al Latte (typical milk biscuits).

La pasticceria Robiglio nasce nel 1928 grazie alla volontà del suo fondatore, di origini torinesi, che si innamorò di Firenze a prima vista: il giovane pasticcere portò qui le tecniche e l’esperienza piemontese nella confetteria, decorazione e lavorazione del cioccolato. Since 1939, Scudieri in Florence is an integral part of Piazza Duomo. The location is perfect: the corner of via dei Cerretani, opposite the Baptistery of San Giovanni and the nineteenthcentury facade of Santa Maria del Fiore. The outdoor area in front of the glass and steel, overlooking one of the most beautiful views of the city. The pastry is the strong point. Produced in house it’s served, always fresh from the oven: the variety, thanks to the continuous production, is very large, even for late risers.

After 20 years of culinary history and two experimental ones, in 2006 Claudio Pistocchi and his family decided to devote themselves entirely to the production of the cake that bears their name and that made them famous. For the making: just dark chocolate crus, unsweetened cocoa powder and little milk cream. No preservatives, thickeners or vegetable fats other than cocoa butter. There is also an excellent preparation for hot chocolate, and more than 130 including pralines, bars, chocolate bars.

Dopo 20 anni di storia gastronomica e due di sperimentazione Claudio Pistocchi e la sua famiglia nel 2006 hanno deciso di dedicarsi completamente alla produzione della torta che porta il loro nome e che li ha resi famosi. Per la preparazione: solo cru di cioccolato fondente, cacao amaro in polvere e poca crema di latte. Niente conservanti, addensanti, nĂŠ grassi vegetali diversi dal burro di cacao.

Belonging to the great tradition of Italian chocolate shops from two generations, it has since always based its managing philosophy on a research of peculiar products in order to come first in the never-ending taste challenges. Its main resource - a finca, a cocoa plantation of eight hectars lays exactly in Puntacana (Santo Domingo). Coming from a long line of gelato makers from Messina, Sicily, Antonio Lisciandro was the family’s youngest exponent. In 1980 he took his love and came to Florence to open Carabè, a temple to Sicilian gelato, whose motto is “quality without compromise”. A must try is the flavour named “Spirito Siciliano” (Sicilian Spirit), made with mandarines and Sicilian lemons and his fragrant and flavoured cream-based gelatos, some even using jasmine flowers! Lastly, don’t leave without experiencing the “granite” (ice-slushes) and the sherbets (“cremolata”), all products are 100% natural.

In 1979 the Florentine shopkeepers organized a competition in remembrance of the famous architect Bernardo Buontalenti. The Badiani ice-cream shop took part in it and won the competition with an ice-cream flavour called Buontalenti, which was made with vanilla and cream. This is the history of the creation of one among the most famous flavours in the Florentine ice-cream tradition. We suggest you also try in the Badiani ice-cream shop the cremino or the chili chocolate flavour, the “bicchierini dopo-cena” (after-dinner desserts in small glasses), the zuccotto (filled sponge cake) and the little ice-cream pastries.

Nel 1979 i commercianti fiorentini indissero un concorso per ricordare il noto architetto fiorentino Bernardo Buontalenti. La gelateria Badiani si presentò e vinse il premio con un gelato chiamato “Buontalenti”, realizzato con panna e crema. Fu così che nacque il gusto che ha ricamato la tradizione gelataia della città. This treasure chest of delicious gelatos grew out of the Teglia family’s passion. At the Gelateria de Medici, which opened its doors in 1997, the quality of the ingredients is held in the highest regard with the aim of creating a gelato that is unforgettable. The fruit flavours are made using seasonal fruit and adding only water; in the summer don’t miss the fresh basil gelato and various sorbets, a real delight. Other flavours of note are the “Nocciola Gentile” (hazelnut), “la Crema de Medici” (cream), and “Cioccolato al Gelsomino” (jasmin flavoured chocolate), which draws on a recipe of Francesco Redi from the 18th century.

Located on the left bank of the Arno river, this ice-cream shop is the proud recipient of the Tripadvisor Excellence Certificate and makes use of the best ingredients, such as Langhe IGP hazelnuts and pure Bronte pistachio nuts. 38 ice-cream flavours, including sherbets and semifreddo (Italian-stylesoft ice-cream) in summertime. In addition to the classic flavours, the must-tries are Black Sesame (coming straight from Japan), ricotta cheese from Pienza and figs, peanuts and chocolate, yogurt with strawberries and honey, the Santa Trinita, the Buontalenti with mascarpone cheese and, above all, the dark chocolate. Sicilian in origin, Antonio “Toni” Cafarelli opened the doors of his gelateria in the heart of Florence’s city centre in 2006.

His secret for a gelato to remember? The use of only the highest quality ingredients: milk, cream and sugar. Of special note is his extra virgin olive oil flavoured gelato as well as the Greek yoghurt ice cream with honey, walnuts and cinnamon, and the Modica chocolate flavour with tones of rum, cinnamon and chilli pepper.

Origini siciliane e un’apertura alle più lontane contaminazioni quelle di Antonio “Toni” Cafarelli, che nel 2006 apre le porte della sua gelateria, nel pieno centro di Firenze. Il suo segreto per un gelato da ricordare? L’utilizzo di sole materie prime, oltre al latte, la panna e lo zucchero. The oldest ice-cream shop in Florence: Serafino Vivoli created this milk bar in 1929, and it immediately became a meeting point for a coffee together. Some years later he and his brother started to produce ice-cream: the natural ice was brought from Saltino, above Vallombrosa, where it was made and stored in ice-chests, to the town during the night. The family still works there with passion in the ice-cream shop, which has, nowadays, also an artisan manufacturing laboratory for pastry products. È la gelateria più antica di Firenze: Serafino Vivoli fondò la latteria nel 1929 che diventò subito un punto di ritrovo per il caffé. Qualche anno dopo insieme al fratello si è cimentato nella produzione del gelato: il ghiaccio naturale proveniva dal Saltino, sopra Vallombrosa, dove era prodotto in inverno e conservato nelle ghiacciaie fino all’estate, e trasportato in città durante la notte. Gli eredi continuano l’attività della gelateria con passione, affiancandole ora anche un laboratorio artigianale di pasticceria.
