Tradizione chiantigiana e una moderna visione dell’enologia è la filosofia di Colle Bereto, azienda vinicola della famiglia Pinzauti. I 60 ettari di terreno della tenuta sono ripartiti sapientemente al fine di garantire un’altissima qualità: ecco che il Sangiovese, vitigno nobile del Chianti Classico, si ritrova nel Chianti Classico e nel Colle Bereto Chianti Classico Riserva, mentre il Pinot Nero ed il Merlot si esprimono al meglio ne Il Cenno e Il Tocco. Il Pinot Nero è anche protagonista della produzione dello spumante metodo classico Colle B, che grazie ad un’identità ben definita e riconoscibile è riuscito in breve tempo a ritagliarsi un posto d’onore fra gli appassionati di bollicine.

Oltre i confini

Comunicare l’unicità e il prestigio dei vini e del territorio regionale, puntando all’Eccellenza Conveying the uniqueness and prestige of regional wines and terroir. Starting from “Excellence” In questo numero desidero comunicare ai soci e ai nostri lettori il successo di un evento unico che ha riunito insieme, per la prima volta, il meglio della sommellerie contemporanea e dell’enologia toscana al mondo dell’alta cucina. Alla Stazione Leopolda di Firenze in novembre l’Associazione Italiana Sommelier Toscana ha infatti portato, in anticipo sulle date consuete, la sua manifestazione icona l’Eccellenza di Toscana, in occasione del XXVIII Congresso Nazionale organizzato della Federazione Italiana Cuochi e dell’Italian Barman Style. Tre realtà importanti riunite in un grande evento, aperto al pubblico, Food and Wine in Progress, che ha visto sfilare sotto gli occhi di migliaia di visitatori il meglio dei settori wine, beverage e food nazionali e toscani. L’Eccellenza di Toscana è l’evento annuale più glamour per gli appassionati del buon bere che vede rappresentate numerose aziende del nostro territorio. Con l’Eccellenza di Toscana, da quindici anni, seguiamo centinaia di produttori nella loro crescita, promuovendo le diverse tipicità dei territori del Granducato.

Un grande successo di selezione, ricerca e promozione delle identità e delle eccellenze vitivinicole regionali grazie anche a formule inedite di comunicazione (che si vanno ad aggiungere ai nostri corsi didattici) come l’originale Wine Tutor – un esperto sommelier guida piccoli gruppi di visitatori in un viaggio visivo, sensoriale e olfattivo tra gli stand dei produttori presenti – e l’AIS Wine School, una breve e accattivante degustazione guidata pensata per coloro che vogliono avvicinarsi al mondo della sommellerie e alla tecnica di degustazione.

E restando in tema di terroir, in queste pagine troverete documentate le nuove ed emergenti eccellenze vitivinicole della provincia di Arezzo e quelle attive nei prestigiosi areali a sud di Siena. Una nuova generazione di viticoltori che abbiamo pensato bene di far conoscere e che seguono le orme di aziende che hanno fatto la storia della viticoltura non solo regionale ma nazionale.

Segnalo per ultima ma non meno importante, l’uscita (13 novembre, Milano) della nuova Guida Vitae 2016: un lungo viaggio nell’Italia del vino attraverso i profili delle grandi case vitivinicole della Penisola e dei numerosi piccoli produttori che animano il panorama nazionale.

In this new issue I would like to inform all the association members and readers about the success of a unique event that for the first time involved not only the top representatives of contemporary sommellerie and Tuscan oenology but also the best of haute cuisine. Eccellenza di Toscana, the flagship event by Associazione Italiana Sommelier Toscana, is scheduled to take place at the Leopolda Station in November, before the usual period, in occasion of the 28th National Congress of the Federazione Italiana Cuochi and the Italian Barman Style. Three important realities side by side in occasion of the great event Food and Wine in Progress, which saw the best in the wine, beverage and Tuscan and Italian sectors being presented to thousands of visitors. The Eccellenza di Toscana is the most glamorous annual event for wine lovers which sees the participation of numerous wine– making companies of our territory. Thanks to Eccellenza di Toscana, we have been following the development of hundreds of wine producers for 15 years while promoting the different identities of the territories of the Grand Duchy of Tuscany.

A great success concerning the selection, research and promotion of the identities and of the top names in the winemaking sector in Tuscany made possible by new communication methods (beside the already existing didactical programs), like the innovative Wine Tutor – a professional sommelier guides small groups of visitors through a visual, sensory and olfactory experience among the stands of the participating producers – or the AIS Wine School, a brief and interesting guided tasting especially conceived for those who want to approach the sommellerie world and the wine tasting methods.

And, talking about terroir, these pages will provide you with all information regarding the new emerging realities in the wine sector in the province of Arezzo and the ones active in the prestigious areas in the southern part of Siena. New generation of wine producers we want you to know of, producers who follow the steps of leading wine companies at a regional and national level. Formaggio che passione

Andrea Magi, uno dei più celebri affinatori italiani One of Italy’s best-known cheese affineurs Quando si è scoperto affinatore di formaggi?

Quando avevo 12 anni ho iniziato a fare lavoretti nell’ingrosso di alimentari con distribuzione di latte fresco dei miei genitori. Col tempo è nato un rapporto epidermico con i formaggi.

Quali regole bisogna seguire per affinare i formaggi?

Regole dettate da esperienza e sensibilità, che mi dicono a che temperatura lavare i formaggi o se togliere la muffa con un canovaccio più o meno ruvido. Quello che sembra un atto meccanico è in realtà un rito.

Descriva la figura dell’affinatore.

E’ l’equivalente dell’enologo per il vino: il caseificio produce per vendere ed è un padre naturale del prodotto, l’affinatore o l’enologo lo curano, partecipano alla loro costruzione, guidandola. Sono dei padri adottivi.

I consumatori sono pronti a capire questo ruolo?

In realtà no, soprattutto in Toscana, anche se l’Onaf lo sta facendo un grande lavoro per il nostro settore.

Qual è l’abbinamento tra vino e formaggio che preferisce?

Amo gli erborinati abbinati ai vinsanti della nostra regione, guardando in particolare al mio territorio penso al Vin Santo Armanse della Fattoria Buccelletti.

Cosa c’è della campagna di Arezzo nei suoi formaggi?

Ci sono le grotte per la maturazione, il latte del pastore che rispetta la lattazione naturale, il nostro microclima.

This is Andrea Magi, a passionate affineur in Castiglion Fiorentino, multi-award-winning taste advocate and advisor to the National Organisation of Cheese Tasters (Onaf) dell’Organizzazione

When did you discover that you were a true cheese affineur?

When I was 12 I started doing odd jobs in my parents’ wholesale distribution company that also sold fresh milk. Over time I developed an epidermal relationship with cheeses.

What rules must be followed to refine cheese?

Rules dictated by experience and sensitivity, which tell me at what temperature to wash the cheese or if I should remove the mould with a rough or soft cloth. What looks like a mechanical act is actually a ritual.

Describe the role of the affineur.

It is the equivalent of the oenologist for wine: the dairy produces cheese to sell it and is the product’s natural father, while the affineur or the oenologist takes care of it, taking part in its creation, guiding it.

They are the adoptive fathers.

What is your favourite wine-cheese pairing?

I love blue cheese paired with the Vinsanto from our region or the Aleatico from Elba.

What is there of Arezzo’s countryside in your cheeses?

There are caves for maturing them, shepherd’s milk that respects the natural lactation, and our microclimate.

Riccardo Rosati, l’uomo che sussurra alla Cinta Senese The man of the Cinta Senese Cosa l’ha portata ad affiancare alla coltivazione degli olivi e delle viti anche l’allevamento della Cinta Senese?

La nostra è una produzione di tipicità locali e tra l’eccellenze caratteristiche di questo territorio, non poteva mancare la Cinta Senese.

Qual è la sua filosofia di cura e allevamento della Cinta?

Noi applichiamo un semibrado controllato. Gli animali si muovono in libertà e hanno dei ricoveri aperti, alcuni scavati nella grotta, dove possono andare in qualsiasi momento.

La più grande soddisfazione di questa attività?

Consideri che abbiamo cominciato per gioco con 5 animali e adesso ne abbiamo quasi 200, la soddisfazione è stata tanta.

Qual è la caratteristica principale di questa antica razza autoctona?

La Cinta ha qualità organolettiche meravigliose, sapori e profumi che sono ancora quelli di una volta.

Siena, terra di grandi vini, qual è secondo lei il miglior abbinamento tra vino e Cinta Senese?

L’ideale è un vino con una struttura importante e una bella persistenza, come il Sangiovese. Che sia un Brunello, un Nobile o un Chianti è un abbinamento perfetto.

After having entered the olive tree and grape growing sectors, what made you decide to enter also the one of Cinta Senese breed?

We mainly focus on the production of typical local products, and we couldn’t come without the Cinta Senese among the top quality products of this territory.

What is your phylosophy on the basis of the care and breed of the Cinta Senese?

We have chosen a semi-wild, controlled breeding. Animals can freely move and find open-air shelters, some of them inside natural caves, where they can always find refuge.

The greatest satisfaction related to this activity?

Just think that we started for fun with only 5 animals, and now we have more than 200 Cinta Senese exemplars, it was really a great satisfaction for us.

What is the main characteristic of this native breed?

The Cinta Senese has really good organoleptic characteristics and truly genuine flavors and aromas.

Il primo ad allevare le api fu mio nonno Agostino, agli inizi del ‘900. Allora era un hobby, non c’era mercato, il miele si scambiava con le mele. Dopo di lui mio padre, che quando ancora per estrarre il miele si uccidevano le api con lo zolfo, sviluppò un sistema indolore di estrazione. E adesso io.

Qual è la sua filosofia?

Produrre un miele biologico controllando le malattie delle api solo con prodotti naturali.

Qual è il fascino delle api e del miele?

L’alveare è una cosa perfetta nulla è lasciato al caso per questo affascina, il fascino di produrre miele deriva dal fatto che io riesco a ricavare da un animale un prodotto di alta qualità senza ucciderlo o farlo soffrire ma anzi aiutandolo.

Cosa significa per un apicoltore lavorare in un territorio vocato alla produzione di un grande vino?

Produrre miele a Montalcino è un grande vantaggio perché essendo Montalcino conosciuto nel mondo per un grande vino rende molto più facile vendere anche il miele per l’effetto traino che questo territorio offre.

When did your passion for honey start?

It is a family passion. The first to breed bees, at the beginning of the 20th century, in my family was my grandfather Agostino. At that time beekeeping was more like a hobby and honey was exchanged with apples.

Oro rosso della Val d’Orcia

Incontro con uno dei più noti produttori di zafferano Interview with one of Italy’s best-known saffron producers Quando è scoppiata questa passione?

Nel 1995 ho scoperto i pistilli e il fatto che in Val d’Orcia questa coltivazione era praticata fin dal Trecento. Mi sono appassionato e soltanto dopo ho realizzato che i fiori si fermano a 15 centimetri da terra!

Una passione faticosa per un prodotto costoso...

Non è così. Per un grammo di prodotto ci sono circa 280 fiori da pulire: la separazione degli stimmi va fatta a mano, così come la raccolta.

Senza contare il momento della messa a dimora dei bulbi ad agosto, sono necessari circa 45 minuti di lavoro per un grammo di zafferano. Se consideriamo che con quel grammo si preparano oltre trenta porzioni di pietanza, i 25/28 euro di costo non sono più così tanti.

Qual è il momento che la ripaga della fatica?

Le 20 o 25 mattine di ottobre in cui vado nel campo e vedo la distesa dei fiori prima di iniziare la raccolta.

Qual è il migliore utilizzo per lo zafferano?

Lo zafferano è uno dei pochi ingredienti che si sposano perfettamente col dolce e col salato, con la carne, col pesce e con le verdure.

Quale vino abbinerebbe allo zafferano?

Vini non aggressivi, che ne esaltano il sapore senza sopraffarlo. Penso a dei bianchi fermi, magari un Pitigliano o una Vernaccia.

When did this passion for saffron start?

In 1995 I discovered saffron threads and the fact that the tradition of saffron growing in the Val d’Orcia dates back to the 14th century by chance.

Vendemmia 2015 in Toscana, probabilmente un millesimo da incorniciare. Il parere di enologi ed esperti Vintage 2015 in Tuscany, a great vintage. Dopo estati complesse meteorologicamente che avevano ridimensionato le attese qualitative di raccolte e produzioni è giunto il momento in cui l’ottimismo incoraggia le previsioni come confermano produttori ed enologi di alcuni territori tra i più rappresentativi della Toscana vitivinicola.

Michele Satta, viticoltore simbolo nel bolgherese prevede un raccolto di alto livello: “La complessità dei fattori determinanti nelle vendemmie rende unico ogni raccolto, le condizioni meteo di quest’anno confermano una raccolta entusiasmante. Una stagione classicamente calda, con la zona di Bolgheri mai sopra i 35 gradi, ricca di umidità che unitamente alle condizioni permanenti del territorio trasmettono la speranza che quella davanti a noi si presenti come una produzione di quelle che capitano poche volte nella vita.

Queste terre hanno un equilibro idrico particolare e le piante hanno lavorato tanto lasciando presupporre una dotazione di profumi e di finezza tannica importante. Come agricoltore ho l’impressione di avere per le mani una cosa bella e rara tipicamente bolgherese nella finezza, nell’eleganza e nella complessità”. Filippo Paoletti, enologo di Lisini, storica azienda di Montalcino: “Le aspettative sono sicuramente tra le più alte che ho riscontrato in 26 anni. Un’annata non semplice, condizionata dal gran caldo di luglio che ha cambiato le carte in tavola, una vendemmia da interpretare in vigna e forse più determinata dal lavoro dei vignaioli che da quello degli enologi. Per il Sangiovese è stato importante curare bene i carichi per pianta al fine di avere un buon equilibrio in raccolta. Tra poco

What we are actually hoping for is a confirmation of the results of these last few months so that we can finally raise a toast to an unforgettable harvest year. After the complicated Summer weather of the previous years had lowered the expectations related to harvests and productions, time has finally come to make optimistic forecasts, as confirmed by the producers and oenologists working in some of the most representative wine regions of Tuscany.

Michele Satta, a leading wine producer in the Bolgheri region, expects a good-quality grape harvest: “The complexity of factors that most influence grape harvests is responsible for the uniqueness of every singol harvest, while thanks to the climate of this year we are likely to expect a really good harvest. A typically hot season, with average temperatures in the Bolgheri region never exceeding 35 degrees, with a presence of dampness that, combined with the permanent conditions of the territory, makes us hope that we are going to have a production like few in life. The soil water balance is really unique here, and the vines have worked very well, so we are now expecting products characterized by strong aromas and tannic finesse. As a farmer, I actually look at these products as something rare and beautiful, with the typical finesse, elegance and complex structure of Bolgheri wines”. Filippo Paoletti, oenologist at the historical Lisini wine estate of Montalcino, says: “The expectations for this year are surely among the highest I have seen over the last 26 years. A complex year influenced by the way the hot weather of July turned things around. A grape harvest that needs a careful selection in the vineyards, thus resulting more inlfuenced by the work of grape growers than by that of oenologists.

Siamo di fronte ad una annata da ricordare e a bottiglie da dimenticare in cantina e assaggiare tra qualche decennio.” Nella terra della Vernaccia di San Gimignano Alberto Bramini, direttore operativo di Teruzzi & Puthod, presente dal 1974 sul territorio afferma: “Le condizioni climatiche favorevoli unite al costante lavoro in vigna, si sono concretizzate in una vendemmia 2015 straordinaria: uva ad un grado di maturazione perfetto ed omogeneo.

Tengo a precisare che un risultato così positivo non si ottiene solo grazie al meteo: nel corso degli ultimi 9 anni abbiamo rinnovato i nostri vigneti con costanza impegno e dedizione, consapevoli che solo attraverso il rispetto della pianta e del territorio si può ottenere il miglior risultato in fase di vinificazione. Siamo molto orgogliosi della Vernaccia 2015, che già ora si presenta in tutta la sua freschezza aromatica, piacevole e morbida al palato, col suo tipico retrogusto di mandorla”.

Nel cuore del Chianti Classico, a Barberino Val d’Elsa ad Isole e Olena stesso clima positivo, come conferma Paolo De Marchi “Credo che l’annata ad Isole e Olena sia stata eccellente. Ad un inverno mite ha seguito una primavera luminosa e climaticamente perfetta, poi un’estate calda con temperature alte in luglio ed agosto. Piogge ottimali. In settembre le temperature si sono subito abbassate moltissimo quindi, sebbene la vendemmia sia iniziata in anticipo rispetto alla media, la maturazione si è conclusa lentamentente consegnandoci vini di ottima qualità e di grande espressione aromatica, buona acidità e tannini molto morbidi”.

We are very proud of Vernaccia 2015, a wine that already has fresh aromas, pleasant and soft in the palate, with its typical almond aftertaste”. In the heart of the Chianti Classico, same positive situation at Isole e Olena in Barberino Val d’Elsa, as confirmed by Paolo De Marchi: “I think it has been an eceptional year for Isole e Olena. A mild Winter followed by a bright Spring with a perfect climate and then by a hot Summer with high temperatures during July and August. Then temperatures lowered a lot in September, so, despite the fact that the harvest period started early (before average), we had a slow ripening process of grapes and consequently wines of the highest quality, with a strong aromatic expression, good acidity and very soft tannins”.

Buono come... l’olio Raccolto 2015. E’ tornato l’Oro Verde di Toscana Harvest 2015. Tuscany’s “Green Gold” is back

Le prime fettunte lo confermano: è tornato l’Oro Verde di Toscana. Buono, e soprattutto con tutte le sue caratteristiche più classiche, dagli amari ai piccanti. Colore compreso, anche se gli esperti ammoniscono sempre: nell’olio, l’unico aspetto che non conta è il colore. Ma contano altre qualità, e conta soprattutto la possibilità di tornare a rifiatare, per un settore dell’economia agricola toscana che, ancor prima della terribile mazzata del 2014, con la perdita del 70%, ma in qualche caso anche del 90% di raccolto, aveva cominciato a conoscere seri problemi.

A partire dalla scarsa redditività di un prodotto, l’olio extravergine di qualità, che soffre la concorrenza di oli – per non parlare spesso di “intrugli” – di livello assai più basso, prodotto con olive importate e imbottigliato con diciture vagamente riconducibili al locale.

Soffre insomma, l’extravergine toscano al pari e forse più di altri oli di qualità italiani, della mancanza di una normativa chiara e precisa, e in qualche modo anche di quella flessibilità di approccio alla coltivazione che da qualche decennio caratterizza sempre più invece il mondo del vino.

E soffre la mancanza di un ricambio di generazioni, mentre il presidente del Consorzio Igp Fabrizio Filippi lancia già la figura del nuovo olivicoltore: “Più flessibile, pronto a monitorare continuamente la pianta e il campo. Non voglio più sentir dire: fino ai Santi non raccolgo”.

In ogni caso, il 2015 sembra l’anno del riscatto. Lo dice il Consorzio dell’Igp, lo conferma Coldiretti. Che concordano su un dato: buona produzione, in quantità, ma non al top,” il caldo torrido – spiegano al Consorzio – ha fermato l’allegagione del frutto dopo le ottime prospettive della fioritura”, e quindi ci si dovrà accontentare di 150mila quintali contro i 180mila della media nelle annate migliori.

In particolare, a subire questo problema – anche se a macchia di leopardo – sembra sia stata soprattutto la varietà moraiolo, quella che in genere dà equilibrio e armonia all’olio. Un 20% di calo, ma comunque sempre il triplo del 2014, l’anno nero.

E saranno circa 33-35mila quintali a fregiarsi del marchio Igp. Non tantissimo però ottimo: anche su questo concordano Consorzio Igp e Coldiretti, “con un ottimo fruttato e le note di gusto amaro e piccante che caratterizzano sempre l’olio toscano”.

The first ‘fettunte’ or ‘oily slices’ confirm it. Oro Verde olive oil has returned to Tuscany. It’s good, and primarily, it has all its classic features, from the bitterness to the spiciness. The same can be said of the colour, although experts always warn that with olive oil, the only thing that does not count is the colour. But other qualities count, and above all, the opportunity to catch one’s breath, for a sector of the Tuscan agricultural economy that, even before the terrible blow of 2014, with 70% and in some cases, 90% losses of the crop, began to learn about serious problems. It starts with the poor profitability of the product, quality extra-virgin olive oil, which suffers in competition with other oils - not to mention “concoctions” often - of a much lower quality, produced with imported olives and bottled with a wording vaguely related to local production. In short, Tuscan extra virgin olive oil suffers, equally and perhaps more than other quality Italian oils, from the lack of a clear and precise legislation, and somehow also flexibility in the approach to olive growing that for some decades has increasingly characterized the world of wine instead. And it suffers from the lack of a changeover in generations.

The president of the PGI Consortium Fabrizio Filippi is already launching the figure of the new grower: “More flexible, ready to continuously monitor the plant and the field. I no longer want to hear anybody say, I’m not harvesting until all Saints Day”.

In any case, 2015 looks like the year of redemption. This is what the PGI Consortium says and Coldiretti confirms it. They agree on one fact: good production, in quantity, but not at the top, “the torrid heat,” explains the Consortium, “stopped the fruiting process after the excellent prospects of the flowering,” and therefore, growers have to be happy with 150 thousand quintals instead of the 180 thousand average from the best years.

The moraiolo olive seems to have suffered particularly from this problem, although in a patchy way. This olive usually gives balance and harmony to the oil. There has been a 20% drop, but it is still triple that of 2014, the bad year. About 33-35 thousand quintals will bear the PGI label. It will be low on quantity but high on quality, the PGI Consortium and Coldiretti both agree, “with a great fruitiness and notes of the bitter and spicy taste that always characterize Tuscan oil”.

Dopo un’annata unica come la 2006 era difficile aspettarsene un’altra ai vertici, invece, assaggi alla mano, la 2007 consente di affermare le promettenti sensazioni che si sono verificate in corso di vendemmia.

Un annata che è risultata precoce quanto a germogliamento, effetto del caldo di maggio, più regolare, in seguito, per fioritura e raccolta grazie alle notti fresche.

Un 2007 potente ma anche elegante, che vi racconterò in un percorso che attraversa la Toscana.

A Montalcino due vini sopra le righe che nascono su due versanti opposti: il Brunello Cerbaiona di Diego Molinari, un Sangiovese che si esprime su note di marasca, cuoio e soprattutto tabacco e il Rosso di Montalcino Poggio di Sotto, un Brunello a tutti gli effetti dato il lungo affinamento

After such a singular year as 2006, it was optimistic to expect another similar one at the vertical tastings. However, with samples in hand, the 2007 confirms the promising sensations experienced over the course of the harvest.

A vintage that turned out to be early in terms of budding, the effect of the May heat, was later more regular, in terms of the flowering and harvest, thanks to the cool nights.

It is a potent but elegant 2007, that I will tell you about in a route that runs through Tuscany.

In Montalcino, there are two wines made on two opposite sides: the Brunello Cerbaiona by Diego Molinari, a Sangiovese whose expression is found in its notes of cherry, leather and tobacco, and especially the Rosso di Montalcino Poggio di Sotto, a fully-fledged Brunello,

in legno, che si contraddistingue per assoluta eleganza, come il suo creatore, Palmucci, un signore di altri tempi.

Recandosi nel cuore del Chianti Classico troviamo note più fresche spostandosi verso Radda, che con Pergole Torte di Montevertine rappresenta un’icona e punto di riferimento, un vino che si getta nel futuro senza paura. Ma anche Roberto Bianchi con la sua Riserva di Val delle Corti ci regala un vino che racconta il territorio e classicità (l’azienda comunica che purtroppo questa annata, e non a caso, è esaurita, nrd.).

A Gaiole un’eccellenza è data dalla Riserva Le Baroncole, con note di frutta matura intense e fini.

Nella zona di Chiusi nasce un grande Sangiovese, che dopo un lungo affinamento, 5 anni, esce e si esprime su note terziarie di terra bagnata, sensazioni ematiche, carne, un mix unico; questo è il Poggio ai Chiari di Colle Santa Mustiola.

A Montecucco, Leonardo e Marco Salustri hanno interpretato per la prima volta una selezione da ceppi centenari del loro Sangiovese: il Terre d’Alviero.

Going into the heart of Chianti Classico, moving towards Radda, one finds fresher notes, which with Pergole Torte by Montevertine, represents an icon and a reference point, a wine that fearlessly leaps into the future.

But Roberto Bianchi too, with his Reserva di Val delle Corti gives us a wine that speaks of the territory and classicism.

In Gaiole, there is excellence in the Riserva Le Baroncole with its notes of ripe fruit and an intense finish.

In the area of Chiusi a great Sangiovese is made. After a long aging, five years, it comes forward on tertiary notes of wet earth, blood sensations, a meatiness, a unique mix; this is the Poggio ai Chiari by Colle Santa Mustiola.

In Montecucco, Leonardo and Marco Salustri have, for the first time, selected ancient vines of their Sangiovese for the Terre d’Alviero. This wine speaks of the power of

Il nostro cammino termina a Carmignano, dove si erige verso l’alto un Villa Capezzana unico che ha espresso uno dei Cabernet Sauvignon più interessanti della Toscana, frutto ricco accompagnato dalla freschezza del Sangiovese, scolpirà gli anni a venire.

The fulcrum of the event, XXIII National Congress of the Italian Federation of Chefs (FIC), open to the public for the first time and joined by the AIS Tuscany, brought Excellenza di Toscana and Cocktails in the World to the Leopolda for the occasion, in advance of the usual dates. It is a unique chance for outsiders to understand the passion and professionalism that revolve around food.

AIS Toscana protagonista con convegni, degustazioni e con la sua manifestazione-icona ‘Eccellenza di Toscana’ AIS Toscana, the star of events, wine tastings and of the Eccellenza di Toscana show One of the events at Food and Wine in Progress that stood out the most was the Eccellenza di Toscana (Excellence of Tuscany), back at the Leopolda Station in Florence two years after its brilliant success at the AIS National Congress.

Two days where AIS Tuscany was the protagonist: Sunday 8 and Monday 9 November, with free tastings and tours, two mini half-hour introductory courses to tasting aimed at providing amateur wine enthusiasts with the basic rules for tasting wine, as well as three “Wine Tour” sessions to discover, under the guidance of an expert sommelier, the best wine territories of our region.

It was also a prestigious showcase for the “Simplifying Italian wine to communicate better” conference with the participation of academics and experts. This was followed by the award of the title of Honorary Sommelier to Luca Sani, President of the XIII Agriculture Committee of the Chamber of Deputies, the spokesperson within the Parliament who requested a special focus on the wine sector and presented a proposed Consolidated Act on the regulation of grape growing and wine production and trade, with a particular focus on cutting red tape for companies and on food safety. He also proposed the bill for the recognition of wine as part of the national cultural heritage and for the dissemination of knowledge of the history and culture of wine.

Ed è stata anche una vetrina prestigiosa per il convegno “Semplificare il vino italiano per comunicarlo meglio”, con la partecipazione di docenti universitari e addetti ai lavori, a cui è seguita la consegna dell’attestato di Sommelier Onorario a Luca Sani, presidente della XIII Commissione Agricoltura alla Camera dei Deputati che si è fatto portavoce, in Parlamento, della richiesta di attenzione per il settore vitivinicolo, presentando la proposta di un Testo Unico sulla disciplina organica della coltivazione della vite e della produzione e commercio del vino, con particolari riferimenti sulla semplificazione burocratica per le aziende e sulla sicurezza alimentare e della proposta di legge per il riconoscimento del vino quale elemento del patrimonio culturale nazionale e disposizioni per la diffusione della conoscenza della storia e della cultura del vino.

Nell’ottica di esaltare le nostre eccellenze non si può quindi prescindere l’uno dall’altro, anzi è auspicabile che iniziative come questa, in cui cibo e vino si incontrano per valorizzarsi a vicenda, possano trovare sempre maggiore spazio».

Ai banchi d’assaggio, centocinquanta produttori toscani selezionati tra quelli presenti con i propri vini nella Guida AIS Vitae 2016, che ha assegnato alle cantine toscane ben 84 ‘quattro tralci’, il massimo riconoscimento conferito ai vini di eccellente profilo stilistico e organolettico.

Alla Leopolda, sono stati presenti diverse centinaia di vini raccontati dalla professionalità di oltre 200 sommelier, cui gli enoappassionati si sono affidati altresì per imparare a percepire quelle note sensoriali che rendono ogni vino un caleidoscopio di emozioni.

Un’ampia scelta dunque per le degustazioni libere, ma anche la possibilità di partecipare alla presentazione dei libri di Roberto Bellini, vice presidente nazionale, dedicati allo champagne a cui seguiranno due esclusive verticali di grande prestigio dedicate allo Champagne d’annata – guidata dall’autore anche Ambasciatore dello Champagne in Italia 2005 e dal Miglior Sommelier AIS di Toscana 2015 Andrea Galanti - e ai vini di Borgogna, presentati da Massimo Castellani, delegato AIS di Firenze e Cristiano Cini, membro del Consiglio Nazionale AIS e responsabile nazionale della Scuola Concorsi. At the tasting tables there were 150 Tuscan producers selected from those published in the AIS Vitae Guide 2016, which assigned Tuscan wineries with as many as 84 ‘four branches’, the highest prize awarded to wines with excellent stylistic and organoleptic properties. In the Leopolda, several hundred wines were present and were explained by more than 200 sommeliers, on whom wine enthusiasts also relied to learn about the sensory notes that make each wine a kaleidoscope of emotions. Therefore, a wide choice of free tastings, but also an opportunity to attend the presentation of the books by Roberto Bellini, national vice president, dedicated to champagne. This was followed by two exclusive and prestigious vertical tastings dedicated to vintage Champagne - led by the author, who was also Ambassador of Champagne in Italy in 2005, and by the Best AIS Sommelier of Tuscany 2015, Andrea Galanti - and the wines of Burgundy, presented by Massimo Castellani, CEO of AIS Florence, and Cristiano Cini, a member of the National AIS Council and the National Coordinator of the Competitive Exam School. During Food and Wine in Progress the most deserving sommelier students were presented with the scholarship provided by I Balzini on the occasion of the thirtieth anniversary of Vincent D’Isanto as part of AIS Tuscany.

What made the “partnership” possible was the 28th National Congress of the Italian Federation of Chefs, which was open to the public for the first time, with a full program of debates, educational conferences, master classes, meetings with institutions and producers, restaurateurs, sommeliers, bartenders and all the players on the Italian and international food and wine scene. An unmissable event where wine and food met to seal the excellence of our territories, whose expression lies both in the field of oenology, and the traditional dishes typical of the Mediterranean Diet food pyramid.

Since 1978, the Italian Federation of Chefs has represented Italy in the World Association of Cooks Societies (WACS) with 120 provincial associations, 20 regional unions and numerous associations and foreign delegations for a total of about 20,000 members per year. It includes professional chefs, chef patrons, restaurateurs, teachers and students of hotel schools of all levels.

The theme of the congress, shared with the Regional Union of Tuscan Chefs, Cuoco 3.0. Visioni, valori, vantaggi (Cook 3.0. Visions, values, advantages) was a unique opportunity to communicate to the end user the passion and professionalism that revolve around food. Chef, anzi cuoco Filippo La Mantia: la Sicilia a Milano Sicily in Milan

Two lives: first as a photojournalist for crime news; then as a chef or, rather, a cook, as he says.

He is a vital charming explosion who, after fascinating the guests of Food and Wine in Progress and before returning to his restaurant in Milan, Filippo La Mantia, Host and Cook, answered our questions.

Biodiversity and local: these are terms that are used ever more frequently in big kitchens. How are they used in your kitchen to become the excellent raw materials at the base of your dishes?

I might be ‘violent’ or not very credible in my remarks in relation to these topics. I understand everything and everyone. I read about the new trends, the new terminology, the new concepts in the kitchen and those who follow them, the slogans and the fashions.

But I have always invented and done dishes that represent my local area, my culture and, in particular, the family. For this reason, I do not think that the Italian family, when they set the table, thinks about biodiversity. However, I welcome an ethical focus on what we eat and I especially welcome concepts such as let’s not waste, not throw anything away and help the people who need us most.

This, for me, is absolute diversity.

In the execution of the dish internationality wins: how do you interpret this term?

My search passes through the palate of my clients. I work for them.

Any of my dishes, be they beautiful, good or bad, are nothing if they do not like it. I also think that internationality passes through the taste buds of the diners. If they like it, my thoughts on food become international because they will all talk about it.

What do you think about wine pairing and how do you do it when you create a dish?

When I create a dish, I do not think about the wine pairing. Instead I have fun, knowing the product of my land well, pairing wines with the dishes ordered by the customer.

I give in to the perceptions that they have of the food and create the pairing based on that.

The chef ’s role today: an alchemist of flavours in their kitchen with tradition and innovation, or a media star?

I have had television experiences, but I do not think I will do it again. But never say never: if they proposed a fun project and one that is different from the usual talent show, I would perhaps consider it. But I do not think that I have a natural talent for working on television all the time, in that I cannot handle the long periods of study necessary to record lots of episodes. I am more responsive to live shows and for me the best stage on which to perform is my restaurant. I am happy to see the great chefs on television, but there are already so many of them...

Biodiversità e località: sono termini che risuonano sempre di più nelle grandi cucine. Come si declinano nella sua cucina e diventano la materia prima eccellente alla base dei suoi piatti ?

Forse sarò poco credibile o ‘violento’ nelle mie esternazioni rispetto a questi argomenti. Capisco tutto e tutti. Leggo le nuove tendenze, le nuove terminologie, i nuovi concetti rispetto la cucina e chi la fa, gli slogan e le mode. Ma ho sempre pensato e fatto una cucina che rappresenti il mio territorio, la mia cultura e soprattutto la famiglia.

Per questo non credo che la famiglia italiana quando apparecchia la tavola pensi alla biodiversità.

Che ben vengano però le attenzioni etiche rispetto a quello che mangiamo e soprattutto ben vengano concetti tipo non sprechiamo, non buttiamo via nulla ed aiutiamo le persone che hanno più bisogno di noi.

Ecco, questa per me è diversità assoluta.

Nell’esecuzione del piatto al contrario vince l’internazionalità: come interpreta questo termine nella sua ricerca ?

La mia ricerca passa attraverso il palato dei miei clienti. Io lavoro per loro. Qualsiasi mio piatto, bello, buono o brutto che sia, se non è gradito da loro è nullo. Secondo me anche l’internazionalità passa attraverso i gusti dei commensali. Se piace a loro, il mio pensiero sul cibo diventa internazionale perché ne parleranno in giro.

Quanto e come pensa all’abbinamento con il vino quando crea un piatto ?

Quando penso ad un piatto non penso al vino da abbinare. Piuttosto mi diverte, conoscendo il prodotto della mia terra, unire vini con i piatti ordinati dal cliente.

Mi lascio andare alle percezioni che loro hanno del cibo e creo l’accostamento.

Il ruolo dello chef oggi: alchimista di sapori nella sua cucina dove vivono tradizione e innovazione, o star mediatica ?

Ho avuto esperienze televisive, ma non penso di ripeterle. Però mai dire mai: se mi proponessero un progetto divertente e diverso dal solito talent-show ci potrei pensare.

Ma non credo di essere portato per la televisione continuativa, nel senso che non riesco a gestire lunghi periodi di studi per registrare tante puntate. Sono più reattivo con le dirette e per me il mio più grande palcoscenico in cui esibirmi è il mio ristorante.

Che ben vengano i grandi chef in televisione, ma sono già tanti …

Gaetano Trovato del Ristorante Arnolfo di Colle Val d’Elsa Interview with the Chef of Arnolfo restaurant in Colle Val d’Elsa Dopo aver incantato la platea di Food & Wine in Progress, abbiamo intervistato Gaetano Trovato del ristorante Arnolfo.

Il ristorante, ricavato da un edificio del Cinquecento, nasce nel 1982 a Colle Val d’Elsa e prende il nome al luogo in cui sorge, vicino alla casa natale di Arnolfo di Cambio, celebre architetto e scultore toscano, che sembra aver contaminato anche Gaetano: i suoi piatti sono architetture di forme e colore che conquistano la vista ancora prima del gusto.

Qualità senza sfarzo e ricerca dell’essenza, ecco il principio che sta alla base di tutto: dall’ambiente fresco, bianco su bianco, con pareti in grassello di calce, polvere di marmo e cera d’api, con lampadari in cristallo, sedute in pelle chiara e con pochi selezionati mobili antichi e quadri d’arte moderna alla cucina.

“La mia filosofia è l’evoluzione della tradizione vista oggi con i prodotti del territorio” sostiene Gaetano Trovato.

Biodiversità e località: sono termini che risuonano sempre di più nelle grandi cucine. Come si declinano nella sua cucina e diventano la materia prima eccellente alla base dei suoi piatti ?

La mia è una ricerca continua, che no è possibile fermare o rallentare. Le eccellenze sul nostro territorio non mancano anzi a volte le sottovalutiamo. E parlo non solo della Toscana ma di tutta la Penisola. Isole comprese. Le materie prime sono vita e non si deve scendere a compromessi: abbinando i prodotti fra di loro si fondono sinergie per creare emozioni da consumare .

Nell’esecuzione del piatto al contrario vince l’internazionalità: come interpreta questo termine nella sua ricerca ?

La creazione di un piatto non dovrebbe essere riassunta entro in limiti ristretti di una definizione: è il frutto della maturità di un percorso professionale in crescita, dalle emozioni che il lavoro ti suscita quotidianamente. Scaturisce dall’idea di assemblaggio di vari ingredienti che ami e rispetti.

Quanto e come pensa all’abbinamento con il vino quando crea un piatto?

L’olfatto prevale sul gusto, la memoria più forte, quello che memorizziamo di più nel tempo è nei profumi: penso al profumo di un piatto per l’abbinamento ideale con il vino. Perché due profumi si fondono e nello stesso tempo creano contrasto fra di loro.

Armonia e persistenza.

Il ruolo dello chef oggi: alchimista di sapori nella sua cucina dove vivono tradizione e innovazione, o star mediatica?

Stiamo attraversando un momento dove lo spettacolo è anche in cucina forse per romanzare e per far dimenticare la fatica di giorno in giorno che affrontano i cuochi veri.

Ma l’impegno è tutt’altro che mediatico anzi è impegno vero che con la passione cerchiamo di nascondere.

After having enchanted the audience of Food and Wine in Progress, Gaetano Trovato of the restaurant Arnolfo was interviewed by us.

The restaurant, housed in a sixteenth-century building, was established in 1982 in Colle Val d’Elsa and named after the place where it stands, near the birthplace of Arnolfo di Cambio, the famous Tuscan architect and sculptor. He seems to have influenced Gaetano as well: his dishes are architectures of shape and colour where the visual aspect wins even before the taste does.

Quality without pomp and a quest for simplicity is the principle underlying everything: from the fresh white on white, with walls in lime, marble dust and beeswax, crystal chandeliers, pale leather seats and a few choice pieces of antique furniture and modern art paintings, to the kitchen.

“My philosophy is the evolution of tradition using a modern interpretation and local products”, says Gaetano Trovato.

Biodiversity and local products: these are terms that resonate more and more in large kitchens. How they are declined in your kitchen and how do they become the excellent basic ingredients for your dishes?

My research is on-going. I cannot stop or slow down. There is no shortage of excellent products in our country, and they are often underestimated. And I’m not only talking about Tuscany but the whole of Italy. Including the islands. Basic ingredients are life and one must not compromise: by putting products together, synergies are created and therefore comestible emotions.

Creating dishes, on the contrary, internationality prevails: how do you interpret this term in your research?

The creation of a plate should not be summed up in within the narrow limits of a definition. It is the result of maturity of the developing professional career path, emotions that the daily work arouses in you.

It springs from the idea of assembling ​​ various ingredients that you love and respect.

How much and how do you think about the pairing with the wine when creating a dish?

Scent prevails over taste. It’s the strongest memory. The one we memorize most over time is smell. I think of the scent of a dish for an ideal pairing with wine. Because the two scents blend and at the same time create contrast between one another.

Harmony and persistence.

The role of the chef today: a flavour alchemist in his kitchen where tradition and innovation live, or a media star?

We are going through a time where the show is also in the kitchen, perhaps to romanticize and forget the daily fatigue that the real chefs face. But the commitment is anything but a media event. On the contrary, it is a true commitment that we try to hide with passion.

Come si declinano nella sua cucina e diventano la materia prima eccellente alla base dei suoi piatti?

Credo molto nella qualità della materia prima. Credi che il compito più importante per un bravo chef sia quello di rispettare l’identità del prodotto, ma ancora di più, provare emozione nel manipolare la materia prima per creare un piatto.

Indubbiamente la località di provenienza è importante, in molti casi determinante, ma è fondamentale ricordare che si possono creare grandi piatti anche con materie prime poco nobili. Al Ristorante Borgo San Jacopo ad esempio ho elaborato un menù degustazione sulla patata, - “Variazione sul tema patata” - dove prevalgono pensiero e tecnica su un ingrediente davvero semplice.

Nell’esecuzione del piatto al contrario vince l’internazionalità: come interpreta questo termine nella sua ricerca?

La cucina per me si divide in due grandi filoni: poesia e business.

Ai miei ragazzi ricordo sempre che i poeti diventano ricchi quando non sono più in vita, invece il business ti consente di sopravvivere giorno dopo giorno e al tempo stesso di crescere e evolvere.

Oggi l’internazionalità nel piatto è una carta importante da giocare all’interno della proposta del ristorante perché genera un flusso di ospiti costante e continuo. Nel piatto amo interpretarla al fianco della tradizione dei grandi classici per una chiave di lettura più personale. Un esempio: il vitello tonnato, che nella mia versione della ricetta si trasforma in “Vitello, con ricordo di salsa tonnata, sedano verde, riccio di mare”.

Quanto e come pensa all’abbinamento con il vino quando crea un piatto ?

Per me una pietanza vive di vita propria: la creatività, il pensiero e la tecnica devono rimanere all’interno del piatto. Un grande vino rappresenta sicuramente un elemento in grado di valorizzare al meglio le caratteristiche di un piatto, ma non può essere un tutt’uno. Piatto e Vino è giusto che rimangano due entità separate, seppur in dialogo tra loro.

Il ruolo dello chef oggi: alchimista di sapori nella sua cucina dove vivono tradizione e innovazione, o star mediatica?

Sicuramente un po’ di visibilità non guasta mai. Agli eventi a cui ho avuto la fortuna di partecipare solitamente si creano sempre nuove amicizie che portano positività ed ottime prospettive nel percorso di crescita di uno chef. Ma la cucina vera si racchiude all›interno di un cerchio composto da: matematica, chimica e fisica.

Peter Brunel, chef of Ristorante Borgo San Jacopo in Florence and host of Food and Wine in Progress, tells us about his cooking philosophy with his usual delicacy Biodiversity and local products: these terms resonate more and more in the large kitchens. How are they used in your kitchen and how do they become the basic ingredients for your dishes?

I strongly believe in quality basic ingredients. I think that the most important task for a good chef is to respect the product’s identity, but even more, to feel emotion when manipulating the basic ingredients to create a dish.

Undoubtedly the place of origin is important, in many cases decisive, but it is important to remember that one can create great dishes with ingredients that are less than noble. At the Ristorante Borgo San Jacopo, for example, I developed a tasting menu based on the potato, - “Variation on the potato theme” - where philosophy and technique prevail over a really simple ingredient.

In creating dishes, on the contrary, internationality prevails: how do you interpret this term in your research?

Cooking for me is divided into two main themes: poetry and business. I always remind my staff that poets become rich when they are no longer alive, while the business allows you to survive day after day and at the same time grow and evolve.

Today, the international character in cuisine is an important card to play in a restaurant’s repertoire because it generates a constant and continuous flow of diners.

I love to give a more personal international interpretation to traditional classic dishes. An example: the vitello tonnato, in my version of the recipe becomes “Veal, with a hint of tuna sauce, green celery, and sea urchin”.

How much and how do you think about the pairing with the wine when you create a dish?

For me a dish has its own life: creativity, thought and technology must remain within the dish. A great wine can make the most of the characteristics of a dish, but the wine and food cannot be one whole. It is right that the Food and Wine remain separate entities, although they interact with each other.

The role of the chef today: a flavour alchemist in his kitchen where tradition and innovation live, or a media star?

Certainly, a bit of visibility never hurts. The events I’m usually lucky enough to attend usually always bring new friendships that lead to positive and excellent prospects in the growth of a chef. But the real cuisine is enclosed within a circle consisting of math, chemistry and physics.

Un itinerario speciale dedicato alle aziende vitivinicole più giovani e interessanti in provincia di Arezzo A special tour of the youngest and most interesting wineries of the Arezzo area When talking about wines from Arezzo, the image that most easily comes to mind is that of a rainbow with many color nuances and it is no wonder that this area, up to fifteen years ago, had trouble making a name for itself on the winemaking scene. However, hard work pays off, things have enormously changed and today the Arezzo area boasts some of Italy’s best wineries and wines. Let’s imagine flying over Arezzo’s vineyards. The highest point is the Casentino area, Ornina, to be precise. Here, at 450 meters above sea level, winemaker Marco Biagioli and his sister Claudia use biodynamic farming methods to grow local grape varieties such as Colorino, Pugnitello, Ciliegiolo and, of course, Sangiovese. Try their Trigono wine and everything will be clear.

In the Val d’Arno di Sopra area, there is a passionate and experienced artist-winegrower who designs his own bottle labels: Marco Cannoni and his Podere Giocoli.

Have a sip of his Fottio, a great Sangiovese wine that ages beautifully (try the 2007), and the Saeppolo, a 100% Pugnitello wine. Marco has been able to master the growing of this difficult grape variety and now he makes the best Pugnitello wine available on the market.

Not far from Podere Giocoli, in Pietraviva, is Fattoria Casabianca, where Aldo Liguori has been growing Sangiovese grapes for ten years. Then he met Carla and together they created Cadò. The perfect blend of Carla’s sweetness and Aldo’s strong personality: 50% Merlot and 50% Sangiovese.

In Gropina, along the Pratomagno hilliside, a man bursting with ideas and enthusiasm, Enzo Nocentini, started the Tiberio winery, where he grows Black Malvasia grapes and makes wines expressing balance and understated elegance, with the added value of his ebullient temper and energy.

Heading towards Cavriglia and the boundary between the Arezzo and Chianti Classico areas, we find Tenuta San Jacopo, where Poggio ai Grilli wine is produced. A Chianti-style wine having a rare characteristic among Italian labels: it is suitable for vegans. Located closer to the city of Arezzo are other two wineries. Villa La Ripa is run by the dynamic Saverio Luzzi (the owner) and the young but experienced winemaker Alessio Bandinelli. A well-oiled team that, in the past five years, has been making a wonderful blend of Sangiovese and Syrah grapes, the excellent Tiratari. Quando si parla di Arezzo si sottintende un arcobaleno con molte sfumature, un substrato di esperienze differenti che fino a 15 anni fa stentava ad emergere. Ma il lavoro paga, le cose sono enormemente cambiate, e oggi l’aretino può vantare aziende leader e citazioni multiple. Immaginiamoci un volo sul nostro “vigneto Arezzo”. Salta all’occhio il punto più alto, il Casentino, più precisamente Ornina. Qui, a 450 mslm, l’enologo Marco Biagioli, con la sorella Claudia, ha scelto di “complicarsi la vita” sposando la biodinamica ai vitigni autoctoni, come Colorino, Pugnitello, Ciliegiolo e naturalmente Sangiovese. Provate il ne comprenderete il significato. Planando sul Val d’Arno di Sopra, si scopre un vignaiolo appassionato, preparato e un po’ artista, visto che si disegna le etichette da solo: Marco Cannoni e il suo Podere Giocoli. Da non perdere il grande Sangiovese che sfida il tempo (provate il 2007) e il un Pugnitello in purezza. Marco ha sfidato questa difficile uva risultando oggi il miglior interprete sul mercato. Poco distante, in quel di Pietraviva, c’è un monolitico Sangiovese che da dieci anni Aldo Liguori porta avanti nella tradizione alla Fattoria Casabianca. A un certo punto il nostro incontra la dolce Carla: nasce il . La gentilezza di Carla nel 50% di Merlot e il carattere di Aldo nel 50% di Sangiovese.

A Gropina, sulle pendici del Pratomagno, un personaggio pieno di idee e intuito, Enzo Nocentini dell’azienda Tiberio, ha scelto tra gli altri la Malvasia Nera: equilibrio nell’elegante semplicità.

Ma il valore aggiunto è l’energia vulcanica di Enzo che negli ultimi dieci anni è tanto cresciuto quanto i suoi vini.

Voliamo verso Cavriglia e il confine tra l’Aretino e il Chianti Classico alla Tenuta San Jacopo dove prende vita un sorso di chiantigianità oltre che una rarità, fosse solo per il fatto che si tratta di un vino anche per i vegani. Ma avviciniamoci ad Arezzo per conoscere altre due aziende. Villa La Ripa, con il vulcanico Saverio Luzzi (la proprietà) e il giovane ma esperto enologo Alessio Bandinelli. Una coppia d’acciaio che da cinque anni stupisce con un grande Sangiovese e un Syrah, che blendano nell’ottimo . Occhio all’altro blend di Sangiovese e Cabernet che col nome fa chiaro e scanzonato riferimento alla professione del proprietario... neurologo! sperimentazione, sono all’ordine del giorno. Il è l’unico vino prodotto e la sintesi di quanto detto: Sangiovese, Barsaglina foglia tonda, Canaiolo e Sagrantino, un tuffo di aretinità. Approdiamo in Val di Chiana, nella Tenuta di Frassineto. La nobiltà di questa valle è rappresentata dal , raffinato Cabernet Franc con uno spruzzo di Petit Verdot. Vino di respiro internazionale ma con vocata toscanità espressa attraverso un’invidiabile vena di freschezza. La fine del nostro viaggio prevede Cortona, terra di sole e di Syrah dove Fabrizio Dionisio, avvocato romano ormai trapiantato nelle vigne cortonesi, intelligente e passionale ha ribadito il feeling tra la sua terra d’adozione e il vitigno famoso nel Rodano settentrionale. Vini generosi e caldi con un cuore più grande di quello disegnato sull’etichetta del . Giusto citare una calzante frase di Fabrizio: “Mi piace creare, ogni anno, autentici flaconi di territorio”, niente da aggiungere.

Il finale è per la produzione fra Umbria e Toscana di Stefania Mezzetti, donna di confine, intelligente ed energica. Ottimo il suo metodo classico, paritetico il Vin Santo, nel mezzo Syrah, Sangiovese, Cabernet Sauvignon e Merlot, tutto in purezza. Il è un Merlot di carattere, elegante espressione dell’invidiabile connubio tra il sole e Cortona.

Abbiamo cercato di descrivere una terra in crescita, fortemente dotata, a volte disponibile ma ancora spesso restia alla condivisione. Ma attendiamo una crescita anche in questo senso da un territorio che quando vuole sa esser generoso e lontano dallo sguardo angusto.

Then we have the Casini Giancarlo winery, named after the owner, who is also the company’s winemaker, agronomist and marketing director. Creativity, knowledge and experimentation are the secrets behind the only wine made here: Panaccio, a blend of Sangiovese, Barsaglina foglia tonda, Canaiolo and Sagrantino grapes, a plunge into the Arezzo terroir.

Next stop: the Val di Chiana area, at Tenuta di Frassineto. This winery’s signature wine is Maestro della Chiana, an elegant Cabernet Franc with a dash of Petit Verdot. A wine with an international flair, but whose wonderful freshness fully expresses its Tuscan origin.

Our tour ends in Cortona, the land of sun and Syrah, where Fabrizio Dionisio, a brilliant and passionate Roman lawyer, grows the most typical northern-Rhone variety. Generous and warm wines with a heart bigger than the one shown on the Castagno wine label.

It is worth quoting one of Fabrizio’s remarks: “Year after year, I enjoy creating genuine bottles of terroir”. We have nothing to add.

Our final stop is along the boundary between Umbria and Tuscany, where Stefania Mezzetti, a strong and intelligent woman, makes an excellent classic method sparkling wine, Vin Santo and singlevarietal Sangiovese, Cabernet Sauvignon and Merlot wines. Selvans is a 100% Merlot wine of character, the elegant expression of Cortona’s sun-blessed hills.

To sum up, we have tried to describe a fast-growing wine area, at times open to sharing, unwilling to cooperate at others. However, we expect further growth in terms of openness from a land which we know to be generous and willing to share.

The people who work there have to deal with a huge legacy and unassailable myths, the legend of the Sangiovese Grosso and the Brunello in Montalcino and the Nobile in Montepulciano, a cultural takeover and an organic idea of local ​​ production. It is therefore interesting to see the results of those who have recently taken a gamble on these territories, and the list has many names, some of them very famous and some foreign, dominated by the undeniable charm of the cellars’ produce and a countryside that is worth its weight in gold.

MONTALCINO In the sub-area to the north of Montalcino, there is Elisabetta Gnudi Angelini, who comes from the world of theatre and worked for years with Luca Barbareschi, interpreting the greatest playwrights including David Mamet and Sam Shepard. She came to Altesino in 2002 and purchased the Consonno family property that had been founded in the 70s. Keeping to the same lines of high quality and consistency that were previously followed, she has added renewed vigour and it is now one of the first companies in Montalcino to pursue the crus with its Montosoli.

Among the more recent experiences, the Castello Romitorio stands out with its Brunello and Rosso products by artist Sandro Chia, whose winery has become a model for the marriage between art and wine.

Another ‘new’ name in Montalcino is Caroline Pobitzer and Jan Hendrik Erbach’s Pian dell’Orino. After buying the vineyards in 1997 and thoroughly examining them to understand their history and structure, since 2000 they have started using biodynamic viticulture techniques; the result is an excellent Brunello, warm and elegant marked by exquisite and silky tannins. Not far from there, in Podere Le Ripi, the coffee entrepreneur Francesco Illy (the family also owns the Mastrojanni property in Montalcino) has pioneered the idea of ​​the bonsai vineyard with very low plants and a very high density per hectare.

Three other big players in the industry have invested in this area: Louis Camilleri, the former boss of the Altria Group, a holding company of Philip Morris, took over the Il Giardinello estate; the Argentinian oil tycoon, Alejandro Bulgheroni, is the owner of Poggio Landi; and in 2000, Richard Parsons, former CEO of Time Warner, bought the Il Palazzone estate. In the early 2015, Fattoria Casisano Colombaio (53 hectares, 22 of which planted with vineyards) was purchased by

Per questo è interessante conoscere i risultati di chi ha scommesso in tempi recenti su questi territori, e l’elenco brilla di molti nomi, alcuni anche assai noti, e di mani straniere, soggiogati dal fascino indiscutibile di una campagna che vale oro e di produzioni da caveaux.

MONTALCINO Nella sottozona a Nord di Montalcino Elisabetta Gnudi Angelini, che proviene dal mondo del teatro – ha lavorato per anni con Luca Barbareschi, traducendo i grandi commediografi tra cui David Mamet e Sam Shepard - è arrivata ad Altesino nel 2002, acquistando la proprietà dalla famiglia Consonno che l’aveva fondata negli anni ’70. Mantenendo la stessa linea di coerenza e altissima qualità, ha aggiunto nuovo vigore e scelto – tra le prime aziende a Montalcino – di percorrere la strada dei cru con il suo Montosoli.

Spicca tra le esperienze più recenti di grande spessore, anche Castello Romitorio con il Brunello e il Rosso di prodotti dall’artista Sandro Chia, la cui cantina è diventata un modello di connubio tra arte e vino.

Altro nome ‘nuovo’ sempre a Montalcino è Pian dell’Orino di Caroline Pobitzer e Jan Hendrik Erbach, che dopo aver acquistato i vigneti nel 1997, ed esaminati a fondo per capirne la storia e la struttura, dal 2000 hanno iniziato a praticare la viticoltura biodinamica; ne è risultato un Brunello eccellente, caldo ed elegante segnato da un tannino raffinato e setoso. Non molto lontano da qui, a Podere Le Ripi, l’imprenditore del caffè Francesco Illy (a Montalcino la famiglia detiene la proprietà anche di Mastrojanni) ha sperimentato l’idea del vigneto-bonsai, piante molto basse con un’altissima densità per ettaro. Appena qualche tempo prima i proprietari dell azienda Carpineto, Giovanni Carlo Sacchet e Antonio Mario Zaccheo, si erano aggiudicati Il Forteto del Drago (53 ettari complessivi di cui 11 vitati) dalla famiglia lombarda Troise. E ancora tre giovani imprenditori veneti, Massimo Bronzato, Stefano Brunetto e Riccardo Caliari, titolari della società Cloros, a settembre 2014 avevano assorbito l’azienda Le Macioche (3 ettari di vigneto).

MONTEPULCIANO A Montepulciano, terra del Nobile, Le Casalte passata nelle mani di Chiara Barioffi nel 1999, che ha lavorato per rendere ancora più palpabile la tipicità di questi territori, operando anche scelte difficili e coraggiose nel pieno rispetto della natura, è una delle migliori espressioni di Nobile in assoluto e in fortissima crescita.

Sulla stessa scia Salcheto, azienda esemplare in fatto di sostenibilità, off-grid e biodinemica, improntata alla ricerca tecnologica che le ha permesso di imbottigliare vini prodotti con lieviti indigeni, senza l’aggiunta di solfiti, tutta da seguire. Sulle colline che da Montepulciano degradano verso la Valdichiana, l’entusiasmo di Giulio Caporali e sua figlia Miriam (laurea in Economia e un master in Enologia a Bordeaux) hanno trasformato Tenuta Valdipiatta in una realtà conosciuta in tutto il mondo, soprattutto per il loror grande cru Vigna D’Alfiero. Avignonesi, acquistata nel 2011 dall’armatrice Virginie Saverys (Compagnie Marittime Belghe Nv) rappresenta magistralmente il territorio di Montepulciano. Il Prugnolo gentile è il punto di forza dei suoi rossi, che trova la massima espressione nelle Grandi Annate Riserva del Nobile. Non distante

On the hills that from Montepulciano slope down towards Valdichiana, the enthusiasm of Giulio Caporali and his daughter Miriam (with a degree in Economics and a Masters in Oenology from Bordeaux) have transformed the Tenuta Valdipiatta into a business that is known the world over, in particular for their great cru, Vigna D’Alfiero. Avignonesi, purchased in 2011 by the shipping company owner Virginie Saverys (Compagnie Maritime Belge Nv), masterfully represents the Montepulciano territory.

The Prugnolo Gentile is the strong point of their reds and it finds its highest expression in the Nobile Grandi Annate Riserva. Not far from here, in a small farm at the foot of the Montepulciano hill, are two

da qui, un piccolo podere ai piedi della collina di Montepulciano, due fratelli, Simone e Leonardo Abram e una grande passione dal 2005: fare vini importanti, votati all’invecchiamento, una vera e propria wine experience. Ecco un’azienda che si è posta al centro dell’attenzione negli ultimissimi anni per la grande qualità, Podere Il Macchione.

VAL D’ORCIA Spostandoci nella parte sud-est della provincia di Siena incontriamo la più giovane Doc Orcia, che risale al 2000, ma le sue aziende si fregiano ormai di consulenze enologiche di tutto rispetto (Cotarella, Ferrini, Lanati, Lavigne). Siamo in una delle zone più belle d’Italia, caratterizzata delle crete senesi, con paesaggi di rara bellezza, territori variegati, campi coltivati a seminativo, oliveti, vigneti, e borghi di fascino straordinario, uno su tutti Pienza.

Proprio davanti alla città icona di questo territorio è nata pochi anni fa dalla tenacia di un vignaiolo quarantenne, Marco Capitoni, un piccolo gioiello d’azienda di soli 5 ettari. Il suo Frasi (perché ogni anno c’è una frase diversa sull’etichetta) nato nel 2005, è frutto del sapiente dosaggio di Sangiovese, Canaiolo e Colorino, dai vigneti più vecchi (40 anni), affina per 23-24 mesi in grandi botti di rovere di Allier (33 hl) e poi ancora 12 mesi in bottiglia.

Un caso a parte è la Tenuta di Trinoro, duecento ettari di terreno, di cui poco più di 20 vitati, nel comune di Sarteano, fra l’Orcia e Montepulciano con l’Amiata che incombe all’orizzonte. Frutto dell’eclettismo e dell’intuizione di Andrea Franchetti, è una perla rara in un territorio che non ha mai conosciuto vigneti. Stile Chateux per conduzione di vigneto e vini veri ed emozionanti, tra i più materici ed esuberanti del panorama nazionale.

VAL D’ORCIA Moving towards the south-east of the province of Siena we find the younger Doc Orcia, which dates back to 2000, but its companies can already boast respectable oenological consulting (Cotarella, Ferrini, Lanati, Lavigne). We are in one of the most beautiful areas of Italy, characterised the Crete Senesi, with landscapes of rare beauty, diverse geographical territories, fields of arable land, olive groves, vineyards and villages of extraordinary charm, of which Pienza stands out from the rest. Just in front of the iconic city of this area a small company with just five hectares of land was born a few years ago from the tenacity of a winemaker in his forties, Marco Capitoni.

His Frasi (because every year there is a different phrase on the label), born in 2005, is the result of a masterful balance of Sangiovese, Canaiolo and Colorino, from the oldest vineyards (40 years old), aged for 23-24 months in large Allier oak barrels (33 hl) and then again for 12 months in the bottle.

A special case is the Tenuta di Trinoro, with 200 hectares of land, of which slightly more than 20 are used for vineyards. It is located near the town of Sarteano, between Orcia and Montepulciano and with Amiata looming on the horizon. Fruit of the intuitive and eclectic Andres Franchetti, it is a rare gem in a land that has never previously had vineyards. A Chateux style for managing the vineyards and real and exciting wines, among the most true-to-life and exuberant on the national scene.

Intensely dark colored but limpid and thick. Dark and appealing ruby-red colored. The nose offers notes of lilac and sandalwood essences, but the prevailing aroma is of blackberry preserve and cloves. An intense and inviting blend of sweet fruity aromas and balsamic notes, a challenge between the Merlot and the Cabernet with neither of the two being defeated, both on the nose and the palate, less bouncy but more balanced, not as long as the others but more enjoyable and elegant.

2012 50% Merlot, 40% Cabernet Sauvignon, 10% Petit Verdot – 14% Nel bicchiere sembra quasi inchiostro; assoluta raffinatezza olfattiva, passa circa 1 anno e 1/2 in botte piccola ma le note olfattive di elevazione non stonano e si integrano benissimo con quelle di mirtillo fresco, rosa rossa e timo che poi tornano su noce moscata e frutta gelée inserite in un contesto balsamico quasi estasiante; all’assaggio è determinato: incipit fresco prima di coinvolgere con tonici sapori di frutta; gusto già persistente con tannini ancora da stemperare ma che, fra qualche anno, potrebbero trasformarlo in epico.

Deep purplish ruby-red colored. Elegantly rich on the nose with blackcurrant and small black berries against a background of fresh violet petals and aromatic herbs. The spicy cinnamon notes are not overwhelming and blend gracefully with notes of pipe tobacco and barley candy without losing the primary fruity aromas. Juicy and soft entry on the palate, impeccably-crafted and well-integrated tannins leading to an endless aftertaste.

2012 50% Merlot, 40% Cabernet Sauvignon, 10% Petit Verdot – 14%

Nearly as dark as ink in the glass. An extremely elegant bouquet. The wine spends about one year and a half in small wood barrels, but the notes that develop through ageing are not out of place and blend wonderfully with the aromas of fresh blueberry, red rose and thyme, evolving into nutmeg and fruit jelly within a nearly enrapturing balsamic context. Resolute on the palate: freshness on the entry leading to bouncy fruity flavours. Already persistent, with tannins that need to be softened but that, in a few years’ time, will make the wine unforgettable.

Voglia di bollicine Cuordicru, l’ultimo arrivo in casa Diegale Cuordicru, the latest Diegale wine

Diegale è un’azienda agricola progettata e realizzata da Alessandro Passerotti e sua moglie Paola nel 2008, a Civitella Marittima (GR), località Podere Sant’Antimo. Una realtà a gestione familiare supportata nelle valutazioni agronomiche ed enologiche da due professionisti-amici, l’agronomo Mauro Nosi e l’enologo Fabrizio Moltard. La proprietà è composta da circa 40 ettari, di cui 16 vitati, immersi nelle colline della Maremma Toscana, in una zona indiscutibilmente vocata alla viticoltura, quella della Docg del Montecucco. Collocati tra 120 e 280 metri sul livello del mare, i filari godono di un clima sorprendentemente mite che risente degli sbalzi termici che si formano tra l’entroterra ed il Tirreno, un’escursione termica ottimale per la loro coltivazione. Entrata recentemente in regime di conversione biologica produttiva, Diegale è un’azienda da sempre attenta al rispetto della natura e della genuinità. Come dimostrato dalla passione che ha nei confronti delle proprie vigne e dai prodotti che ne derivano: il Ciarlibò, rosé Igt da bacca rossa con uvaggio Grenache 100%, lo Chaver, bianco Igt combinazione di Chardonnay e Vermentino, il Rossoscuro, Sangiovese , Cabernet Franc, Syrah e Grenache e il Diegale di Diegale, rosso Igt con uvaggio Pinot Noir 100%. Ultima novità in casa Diegale in concomitanza della nascita del terzo nipote Oscar sono le bollicine, nate dall’amore di Paola per questo genere di vino, con il nome Cuordicru for Oscar, prodotto della vendemmia 2013, sboccatura parziale ottobre 2015.

Un blend di Chardonnay e Pinot Noir, perfettamente in sintonia con il territorio e le condizioni climatiche. Lo Chardonnay è coltivato nel vigneto Campa Cavallo, il Pinot nel vigneto Punta Vento. Un Metodo Classico Dosaggio Zero dal perlage tenue, il colore deciso e un gusto sincero da tutto pasto. Un ingresso atteso ed entusiasmante.

The farm Diegale, designed and build by Alessandro Passerotti and his wife Paola in 2008, is located in Civitella Marittima (GR) in Podere Sant’Antimo. It is a family-run company where agronomic and oenology evaluations are made by two experts and friends, agronomist Mauro Nosi and oenologist Farizio Moltard. The estate coverts an area of around 40 hectares, 16 of which cultivated with vines, surrounded by the hills of the Tuscan Maremma, in a region unquestionably devoted to the production of the D.O.C.G. Montecucco variety. Located between 120 and 280 meters above the sea level, the rows of vines enjoy a surprisingly mild climate that is influenced by the temperature changes occurting between the hinterland and the Tyrrhenian Sea, a temperature range that is very favorable for their cultivation.

A company that recently converted to organic production methods, Diegale has always been focusing on nature and genuineness. Thing that is reflected by the love it shows for its vineyards and for the products that come from them: the Igt Ciarlibò rosé wine, made of 100% Grenache grapes; the white Igt Chaver, a blend of Chardonnay and Vermentino; the Rossoscuro, a blend of Sangiovese, Cabernet Franc, Syrah and Grenache and the Diegale di Diegale, a red Igt wine made of 100% Pinot Noir grapes. Just after the birth of the family’s third nephew Oscar, the launch of the latest product by Diegale, a sparkling wine, resulting from the love of Paola for these kinds of wines: it is the Cuordicru for Oscar, a 2013 vintage disgorged in October 2015.

A blend of Chardonnay and Pinot Noir that perfectly reflects the characteristics of the terroir and the climate conditions. Chardonnay is cultivated in the Campa Cavallo, while Pinot in the Punta Vento vineyard. Dosage Zero Classic Method, light perlage, strong color and sincere taste for the whole meal. A very awaited and impressive entrance.

Le prime dieci vendemmie di Tenuta Casteani The first grape harvests of Tenuta Casteani Novanta ettari, di cui 15 vitati, una cantina inaugurata nel 2014 con un elegante spazio immerso nella natura destinato ad eventi di degustazione, e uno splendido resort composto da undici stanze, due piscine affacciate sui vigneti e un ristorante. Questa è l’azienda vitivinicola e wine resort Tenuta Casteani, nata nel 2002 ad opera di Mario Pelosi, ingegnere meccanico con la passione del vino, oggi Sommelier AIS laureato in enologia.

Tenuta Casteani si trova nell’omonima località nel cuore della Maremma Grossetana, a 30 km dalla costa tirrenica. Un terreno non semplice, ma con grandi qualità che conferiscono corpo ed un incredibile arredo aromatico ai vini. Nell’azienda vengono coltivate prevalentemente uve autoctone, prime fra tutte Sangiovese, Alicante e Vermentino, ma anche Syrah, Merlot e Viognier, uve che hanno dimostrato di dare nell’area maremmana frutti di grande pregio. Nel corso degli anni Tenuta Casteani si è distinta per la sua continua volontà di sperimentazione, coniugando al meglio tradizione e innovazione. Da questa ricerca sono nate ottime etichette, come la linea di vini Spirito Libero, prodotta senza l’aggiunta di solfiti, lo spumante Piccabòn, metodo Charmat da uve vermentino e il Pian di Tatti, vino dolce caratterizzato da note di mela cotogna e confettura di frutti rossi. In fase di produzione, lo spumante Rusada, metodo classico da Sangiovese, e una particolare versione di Syrah affinato in giara di terracotta. La tenuta festeggia quest’anno un importante traguardo, le prime 10 vendemmie, potendosi dire ben fiera dei risultati che ha ottenuto da un terreno che un tempo era vocato alle miniere e al pascolo e di cui Pelosi ha contribuito a riscoprire tutta la sua importante vocazione enologica.

Tenuta Casteani is located in Casteani in the heart of the Maremma Grossetana, 30 kilometers away from the Tyrrhenian coast. The company mainly cultivates native grape varieties, above all Sangiovese, Alicante, Vermentino, Syrah, Merlot and Viognier, which can produce high quality fruits in the Maremma region. Over the years, Tenuta Casteani has distinguished itself for its will to experiment while combining tradition and innovation in the best way possible.

Thanks to this research work, very good labels have been produced, like the Spirito Libero wines with no added sulphites, the prodotta senza l’aggiunta di solfiti, the Piccabòn sparkling wine, Charmat method from Vermentino grapes and the Pian di Tatti, a sweet wine with notes of quince apples and red fruit jam. Among the wines actually under production, the Rusada sparkling wine, classic method from Sangiovese grapes, and a special wine from Syrah grapes refined in terra cotta jars. The wine resort celebrates an important achievement this year: the first ten grape harvests. It is therefore very proud of the results obtained, also because the land was once devoted to mining and pastures, and Pelosi has given an important contribution to the discovery of the great wine potential of the area.

Presentato nell’evoluzione delle sue prime cinque annate, il vino ammiraglio della famiglia Cecchi The Cecchi family’s signature wine in its first five vintages Una degustazione per apprezzare il vino, una festa per celebrarne i sei anni dalla nascita. La prima verticale di Coevo, vino che rappresenta la sintesi di un percorso molto profondo nella storia della famiglia Cecchi e dell’azienda, è ruotata intorno a due momenti: uno tecnico e professionale legato alla degustazione, e uno conviviale. Per la prima volta Coevo è stato presentato nelle sue cinque annate finora prodotte: 2006, 2007, 2009, 2010, 2011.

La degustazione tecnica è stata guidata da Andrea Cecchi insieme ad Alessandro Tomberli, restaurant manager e sommelier di Enoteca Pinchiorri e sono state analizzate tutte le sfaccettature delle cinque annate. La cena è stata curata da Valeria Piccini, chef del ristorante Da Caino di Montemerano. Una scelta che rinnova la tradizione degli eventi di Cecchi: avere a fianco un nome della cucina del proprio territorio per valorizzare e dare voce alla terra di appartenenza. “Valeria rappresenta una zona importantissima, la Maremma. Dove nella nostra tenuta Val delle Rose, nasce una parte importante di Coevo. Dalle vigne scegliamo le uve migliori di Merlot e Petit Verdot, le varietà che insieme al Sangiovese e al Cabernet Sauvignon compongo il nostro vino. La Maremma rappresenta anche una nuova sfida, un progetto in divenire che presto potrà essere mostrato. Per questo motivo nessun altro chef se non Valeria avrebbe potuto affiancarci in questa serata” dice Andrea Cecchi. La filosofia con cui nasce Coevo è: il massimo della qualità per ogni annata, tenendo conto che il gusto è un elemento dinamico che si evolve nel tempo. Per questo l’uvaggio varia a seconda della vendemmia mantenendo la base, il Sangiovese. E’ dal concetto di tempo che nasce la filosofia di questo progetto, espresso nell’etichetta da un pensiero di Sant’Agostino. “Il percorso fatto è importante – dice Cesare Cecchi - e Coevo racchiude in sé la sapienza e la professionalità che abbiamo coltivato in tanti anni e rappresenta l’occasione di mostrarci al mondo per ciò che siamo. C’è ancora tanta strada da fare per raggiungere gli obiettivi, ma sono felice di vedere come un’azienda storica come la nostra riesca ad interpretare i mercati in continuo cambiamento e le esigenze di un pubblico sempre più specializzato”.

A wine tasting event to discover to this wine’s qualities, a party to celebrate its 6th anniversary. The first vertical tasting of Coevo, a wine that perfectl reflects a deep commitment of the Cecchi family and the company to wine production, was made of two parts, a technical and professional session related to wine tasting, and a convivial part. For the first time, all the five Coevo vintages produced until now -2006, 2007, 2009, 2010, 2011have been presented. The technical part, curated by Andrea Cecchi and Alessandro Tomberli, Restaurant Manager and Sommelier at the Enoteca Pinchiorri, saw an in-depth analysis of all the aspects and characteristics related to the five vintages. The dinner was organized by Valeria Piccini, Chef at Da Caino in Montemerano. A choice perfectly in line with the events organized by Cecchi, where a local Chef of traditional local cuisine is called to give voice to the territory’s identity. “Valeria represents a very important area, the Maremma region, where, in our estate Val Delle Rose, a crucial part of Coevo comes from. In the vineyards we select the best Merlot and Petit Verdot grapes, the two varieties used, together with the Sangiovese and the Cabernet Sauvignon, to make our wine. The Maremma represents a new challenge as well, an on-going project that will soon be ready to be showed. For this reason no other Chef except Valeria could have supported us during this evening event”, says Andrea Cecchi.

The phylosophy behind the production of Coevo is: the best quality for every vintage wine, taking into account that taste is a dynamic element destined to change with the passing of time. That is why the blend usually changes according to the harvests, though the Sangiovese is always present as the basic variety used. The idea of time lies behind the phylosophy of this project, expressed by a St. Augustine’s thought on the label. “The path we have gone through is of great importance -says Cesare Cecchi- and Coevo represents not only the skills and professionalism we have been striving to achieve for many years, but also the chance we have to show the world our potential. There is still a lot of work let in order to achieve our objectives, but I am happy to see how a historical company like ours has managed to meet the expectations both of the markets that are in continuous change and of an ever more skilled and demanding public”.

Felciaio Vermentino Toscana IGT 2014 Vermentino 100% - 13% Giallo paglierino di media intensità, luminoso. Impatto floreale e agrumato, di ginestra e biancospino, cedro ed erbette di campo, nespola e pepe bianco; il tutto a creare un quadro piacevole e lineare, così come l’assaggio che risulta fresco e ordinato, in piena corrispondenza con quanto espresso in fase olfattiva. Sorso di media densità e persistenza, finale gradevolmente agrumato.

Straw-yellow colored of medium intensity, bright. Floral and citrus fruit aromas on the entry, with notes of Spanish broom, citron and wild herbs, medlar and white pepper. On the whole, the aromatic profile is pleasant and consistent, just like the palate, which is fresh and clean, fully consistent with the nose. Flavours of medium density and persistence, pleasantly citrus-fruit like on the finish.

La Suvera Bianco Toscana IGT 2013 Chardonnay 50%, Viogner 40%, Vermentino 10% - 13,5% Giallo paglierino dai brillanti riflessi dorati, buona consistenza. Profumi variegati di buona ricchezza e definizione, pesca gialla, albicocca e ananas, miele, glicine, burro fuso e nocciola, mughetto e un tocco di mimosa per chiudere con ricordi minerali gessosi. Riuscito mix di slancio e grassezza, con la freschezza a frenare le componenti morbide. Persistenza a buoni livelli, finale caldo e fruttato con cenni minerali sottotraccia.

Straw-yellow colored with bright golden hues, thick. A rich and well-defined bouquet of yellow peach, apricot and pineapple, honey, wisteria, melted butter and hazelnut, lily of the valet and a touch of mimosa ending on chalky mineral notes. A well-made mix of bouncy and fat, with the freshness keeping the soft components in check. Good persistence, warm and fruity on the finish with subdued mineral notes.

Taneto Rosso Toscana IGT 2012 Syrah 70%, Merlot 15%, Sangiovese 15% 13,5% Colore rosso rubino di buona concentrazione che schiarisce lungo il bordo.

Fruttato in evidenza con mora e ciliegia ben mature, violetta, mon cherie, speziatura scura misurata ed integrata, grafite.

Ingresso saporito e fresco, con sostanziale equilibrio tra tannini e componente alcolica che dona snellezza al sorso, discreta durata dopo la deglutizione e chiusura fresca e fruttata.

Deep ruby-red colored fading at the rim.

Intensely fruity aromas of ripe blackberry and cherry, violet, chocolate-covered cherry, well-balanced and integrated dark spicy notes, graphite.

Savoury and fresh entry on the palate, with well-balanced tannins and alcohol, lean, persistent aftertaste ending on fresh and fruity notes.

N’Antia Rosso Toscana IGT 2011 Cabernet Sauvignon 50%, Cabernet Franc 30%, Merlot 20% - 14,5% Manto rosso rubino compatto, consistente e vitale. Il frutto deflagra all’istante, ciliegia e piccoli frutti di bosco in confettura, bouquet di petali appassiti, speziatura ricca e composita che varia dalla cannella all’anice stellato, ginepro, tabacco e frutta secca, balsamicità poggiata su una delicata scia erbacea. In bocca è ricco e teso al tempo stesso, di carattere saldo e potente, ottimi tannini e lunghissima persistenza, chiude caldo e succoso.

Thick and lively ruby-red colored. Fruity entry on the nose, with cherry and soft fruit preserve, a bouquet of withered flowers, rich and varied spicy notes ranging from cinnamon to star anice, juniper, tobacco and dried fruit, balsamic notes leaving a delicate grassy trail.

Rich and racy on the palate, with a firm and powerful personality, excellent tannins, very long persistence, warm and juicy on the finish.

Vigna Alta Sangiovese Rosso Toscana IGT 2009 Sangiovese 100% - 14,5% Rosso rubino luminoso che dimostra integrità. Profumi profondi e complessi si susseguono nel corso dei minuti, visciola e mora in confettura, viola, tabacco scuro, cuoio e cioccolato, china e rabarbaro, matrice terrosa e minerale, humus e timo.

Pieno e carezzevole, caratteriale e avvolgente, sostenuto da adeguata acidità e tannini eleganti. Progressione gustativa importante, lunga persistenza appagante e fruttata.

Bright and consistent ruby-red colored. Intense and complex aromas of sour cherry and blackberry preserve, violet, dark tobacco, leather and chocolate, cinchona bark and rhubarb, earthy and mineral notes, humus and thyme. Full and mouth-filling on the palate, of character and enveloping, supported by proper acidity and elegant tannins. Strong progression on the palate, long , fulfilling and fruity persistence.

Guide. L’argomento è dibattuto da parte degli appassionati enofili perché qualcuno è convinto che le guide nel panorama italiano siano troppe, altri le considerano uno strumento editoriale passato di moda e superato dalle più moderne applicazioni per Smartphone e Tablet. Ma un fatto è certo, in questo periodo i soci AIS di tutta Italia iniziano a fremere per l’arrivo del postino con in mano il loro il tomo preferito, da consultare a capofitto e studiare.

E anche per il secondo anno la nostra regione si è occupata della selezione dei vini per la Guida Vitae dell’Associazione Italiana Sommelier. Fuori il 13 novembre nella nuova edizione 2016, con presentazione alla Diamond Tower di Milano.

Ecco un breve dietro-le-quinte per farvi conoscere le fasi che scandiscono il nostro lavoro. Si inizia a maggio, quando le aziende vitivinicole della Toscana presenti nel database nazionale ricevono l’invito ad inviare i nuovi campioni per l’assaggio.

Questo invito si effettua con una email che parte dalla sede nazionale e spiega in dettaglio le modalità di adesione, sottolineando peraltro che da parte dell’azienda la partecipazione è volontaria e nessun costo è da sostenere. In Toscana circa 800 aziende ricevono questa comunicazione e dopo qualche mese, in caso di mancata risposta, ricevono una seconda segnalazione dalla segreteria di AIS Toscana. Anche quest’anno la risposta è stata immediata e da subito sono arrivati i campioni alla sede AIS Toscana di Calenzano.

Ogni bottiglia è stata controllata, numerata, datata e stoccata in un magazzino opportunamente predisposto: in totale sono state accettate oltre 400 aziende con un numero di campioni per le

Guides. The subject has been much debated by wine enthusiasts because some are convinced that there are too many guides for Italy. Others see them as an outmoded editorial tool that has been surpassed by more modern applications for the Smartphone and Tablet. But one thing is certain, in this period, the members of AIS throughout Italy start to get excited about the postman delivering their favourite tome, diving into it for consultation and study.

And again for the second year, our region was responsible for the selection of wines for the Guide Vitae by the Italian Sommeliers Association. It came out on November 13 in the new 2016 edition, with a presentation at the Diamond Tower in Milan.

Here is a brief behind-the-scenes introduction to the phases that mark our work. It starts in May, when the Tuscan wineries in the national database receive invitations to send new samples for tasting. This call is made with an email that starts from the national headquarters, and explains in detail how to take part, stressing, however, that participation on the part of the winery is voluntary and no cost is incurred.

In Tuscany about 800 wineries receive this notice and after a few months, in case of no response, they receive a second notice from the secretariat of AIS Tuscany. Again this year the response was immediate and samples began to arrive right away at the AIS Tuscany headquarters in Calenzano.

Nel mese di luglio sono iniziati i lavori dei panel costituiti da Sommelier degustatori. Ciascun gruppo è risultato costituito da un minimo di 3 sommelier a team più numerosi: il record è stato raggiunto a settembre con 9 sommelier intorno allo stesso tavolo. Ogni gruppo ha ricevuto un’azienda scelta da terzi e su questa ha studiato la storia, le denominazioni che la caratterizzano - il terroir e i vitigni coltivati confrontandosi con i propri colleghi del gruppo prima di iniziare gli assaggi. In ogni gruppo almeno un sommelier è investito del compito di verbalizzare le descrizioni organolettiche e di registrare il punteggio in centesimi di ogni degustatore. Un apposito foglio elettronico ha consentito l’archiviazione di questi dati e il calcolo della media dei punteggi conseguiti in fase di degustazione per ciascun campione. Altre due fasi hanno caratterizzato il lavoro successivo. La prima, una sperimentazione per quest’anno, è stato l’intervento da parte di Sommelier estranei alla degustazione con il compito di leggere, correggere e omogenizzare i contenuti delle descrizioni organolettiche.

La seconda ha riguardato la realizzazione da parte di un gruppo scelto di Sommelier del cosiddetto cappello introduttivo aziendale con lo scopo di presentare e descrivere sinteticamente le caratteristiche essenziali e la filosofia produttiva. Il lavoro è stato lungo, faticoso, non privo di momenti di stanchezza e sconforto, ma la Toscana ha risposto molto bene anche quest’anno dimostrando dedizione e un grande attaccamento alla missione dell’Associazione Italiana Sommelier.

appropriately organized warehouse: in total more than 400 wineries were accepted with tasting samples that numbered 2000 bottles. In July, work began with the panels made up of Sommelier tasters. Each group had a minimum of 3 sommeliers in numerous teams: the record was reached in September with 9 sommeliers around the same table. Each group received a winery chosen by others and then they studied its history, the names that characterize it - the terroir and grape varieties - comparing with their colleagues in the group before the tastings began. In each group, at least one sommelier had the task of verbalizing sensory descriptions and recording the score of each taster with points going from one to one hundred. The data was stored in a special spread sheet and a calculation made of the average of the scores achieved in the process of tasting each sample. Two more phases followed. The first, an experiment this year, was the participation of Sommeliers not involved in the tasting with the task of reading, correcting and homogenizing the contents of the sensory descriptions. The second involved having a select group of Sommeliers create the so-called winery introduction with the aim of presenting and briefly describing the essential characteristics and the production philosophy.

The work was long, arduous, and not without moments of fatigue and discomfort, but Tuscany responded very well this year, demonstrating dedication and a great attachment to the Association of Italian Sommeliers’ mission.
