2 cups sugar

2 tsp. mustard seed

25 cucumbers, 3 – 5 inches in length, sliced

2 tsp. turmeric

12 onions, sliced

2 tsp. celery seed

in salt solution for 3 hours. Mix remaining ingredients in a pot and bring to a boil. Add drained cucumbers and onions just to heat through. Pack hot cucumbers into jars, leaving 1 /2 -inch space at the top. Cover with boiling hot liquid from pot. Place lids on jars. Place jars in hot water bath for 15 minutes.

2 tsp. baking powder

DIR E CTIONS

Combine flour, sugar, baking powder and salt. Whisk together milk, egg and peanut butter until smooth. Add mixture to dry ingredients and beat until moistened. Lightly oil hot griddle; spoon 1/4 cup of batter onto griddle and cook until golden brown on both sides. Add oil as needed with each pancake. Serve with fresh fruit and syrup. Makes 6 pancakes. DIRECTIONS

Heat the oil in a large skillet over medium heat; add the onion and cook until translucent, about 5 minutes. Remove skillet from heat and allow it to cool slightly, about 2 minutes. Add the garlic, ginger, cumin, turmeric, paprika and chili powder to the onion and stir over low heat. Pour in tomatoes and coconut milk; season with salt. Cook at a simmer, stirring occasionally, about 10 minutes. Stir in the shrimp and cilantro and cook another minute before serving. Serves 4.
