/2 cup sugar

1 tsp. vanilla extract

2 Tbsp. butter, softened

11/2 cups whipped topping

11/4 cups milk

Chocolate syrup

/3 cup unsweetened cocoa powder

Chocolate curls

Mint leaves

In a small saucepan, mix gelatin and cold water; let stand 1 minute. Stir over low heat until completely dissolved. Stir in butter until melted. In a food processor blend milk, cocoa powder, sugar and vanilla. While mixing, gradually add gelatin mixture and process until blended. Pour mixture into bowl and gently fold in whipped topping. Put into glass dessert dishes and chill until firm. Garnish with chocolate syrup, chocolate curls and mint leaf.

Serves 8.

Pour dressing into a large resealable plastic bag with shrimp.

Reserve a small amount for basting later. Seal bag and marinate in the refrigerator for 2 hours. Preheat grill to medium-low heat.

Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade. Lightly oil grill rack and cook shrimp for 5 minutes per side or until opaque, basting frequently with reserved marinade. Serve with grilled vegetables. Serves 6.

Here are a few secrets of successful Asian cooking:

Wash rice thoroughly, soak in water and set aside. Place oil in a pan and a fry onions until golden-brown. Add the Biryani paste and cook for 3 minutes on low heat. Add chicken and cook for 5 minutes. Add water and bring to a boil. Drain the rice and add to the mixture. Lower heat to medium, cover and cook for 20 minutes or until rice is done. Serves 4.

Rinse the rice. Place in uncovered glass casserole with water.

National Heart Month Celebrate a Healthy Heart Keep the beat strong and eat to live with diet and nutrition. Cooking up heart health requires no secret ingredient. Here are some tips to help you make healthier meal choices for your family.

Balance your daily food choices. Think of your eating plan as a pyramid with the base forming the foundation for good nutrition. The foods you should eat most often form the bottom of the pyramid, and the foods you eat less of are at the top.

Grains comprise the first level of the pyramid, with bread, cereal, rice and pasta as its components.

Vegetables share the second level of the food pyramid with Fruits.

The third level consists of Dairy which includes milk, yogurt and cheese, and Protein from meat, poultry, fish, dry beans, eggs and nuts.

At the very top of the pyramid in the fourth level are the items you should use sparingly — fats, oils and sweets.

You will notice that the bottom two levels, or over half of your daily food intake, are fiber. These foods are plant based and help keep your digestive tract healthy.

Whisk together garlic, olives, crushed red chili peppers, olive oil, lime juice and cilantro. Combine with tomatoes. Cook pasta al dente, according to package directions. Drain pasta, toss all together and serve. Serves 6.

Preheat oven to 375°F. Lightly grease 2 cookie sheets. In a large bowl, beat butter, sugar and brown sugar until creamy. Beat in eggs until well blended, then mix in vanilla. In a separate bowl, stir together next seven dry ingredients. Add to butter mixture and stir well. Stir in oats, raisins and walnuts until evenly moistened.

Drop dough by rounded tablespoons onto prepared cookie sheets, spacing 2" apart. Bake until cookies are golden, but centers are still soft, about 10 – 12 minutes. Transfer cookies to rack to cool.

Makes 4 dozen.

DIRECTIONS
