½ cup light corn syrup 1 tsp. distilled white vinegar ¾ cup sweetened condensed milk ½ tsp. vanilla extract 5 quarts G.H. Cretors Caramel Popcorn DIRECTIONS
In a medium saucepan with a candy thermometer inserted, combine butter, sugar, corn syrup and vinegar. Stir well and bring to a boil over medium heat. Stir in condensed milk; simmer, stirring constantly, until thermometer reads 238°F. Stir in vanilla. Pour caramel over popcorn and stir to coat. Butter hands lightly and shape popcorn into balls about 3 inches in diameter. Makes 10 – 3 inch balls.

DIRECTIONS
Heat butter in a saucepan over medium heat; add squash and onion. Cook, stirring frequently for 5 minutes. Add quinoa, apple juice, water and thyme and bring to a boil. Reduce heat to medium-low; add contents of Spice Sack and stir well. Boil gently for 12 minutes; stir in apple. Boil 2 – 5 additional minutes or until liquid is absorbed. Remove ITE from heat, cover and let stand for 5 minutes. Serves 3.

Lobster Bisque INGREDIENTS
3 Tbsp. butter
1 tsp. fresh lemon juice
1 small onion, finely chopped
1 cup chicken broth
1 Tbsp. chopped fresh parsley
2 cups heavy cream
½ tsp. salt
1 ¼ cups chopped fresh or frozen (thawed) lobster
½ tsp. pepper ½ tsp. paprika ½ tsp. cayenne pepper
¼ cup cooked lobster for garnish Fresh parsley for garnish
DIRECTIONS
Melt butter in a pan over low heat. Add onion and cook, stirring occasionally, until tender. Stir in parsley, salt, pepper, paprika, cayenne pepper, lemon juice and chicken broth. Cook, stirring constantly, until mixture is bubbly. Stir in heavy cream. Heat to boiling, stirring constantly for 1 minute. Stir in lobster and heat to boiling; reduce heat. Simmer about 3 minutes, stirring frequently, until lobster is white. Garnish plated bisque with pieces of cooked lobster and fresh parsley. Serves 4.
