Roll out puff pastry. In a pan, heat sugar to caramelize and pour into a greased cake tin. Cover with apple slices then the puff pastry. Bake at 350º F for 45 minutes. Remove carefully. For the sauce, heat Balsamic Vinegar with cream and sugar until reduced (about 5 – 10 minutes). Pour over cake and garnish with whipped cream. Trim ribs of fat and place in a crock pot along with remaining ingredients. Simmer for 5 hours, or until tender. Remove ribs from marinade. Place ribs in a casserole dish and brush with remaining marinade. Sprinkle with salt and pepper and bake at 350º F for 30 minutes. Remove and serve as desired. Serves 4. DIRECTIONS
In a bowl, combine the ground sumac, garlic powder, white vinegar, salt and black pepper. Place chicken pieces in mixture and allow to marinate for at least 30 minutes. Prepare rice as directed, set aside. Thread chicken and vegetables alternately on metal or wood skewers. Grill over medium-high heat, turning frequently, until desired doneness. When cooked through, carefully remove skewers and serve over the prepared rice. Makes 6.

DIRECTIONS
Cut sausage into pieces. Sauté onions and green bell pepper together. Add sausage. Remove from pan. Place tortilla in large pan over medium heat and add cheese to cover tortilla. Add 1/2 of the sausage and onion/bell pepper mixture. Add more cheese to cover sausage and place another tortilla over top of cheese. Flip tortilla over when cheese has started to melt and tortilla begins to crisp. When the other side begins to crisp, remove from pan and allow to cool. Cut into 4 – 6 pieces. Add favorite toppings such as salsa and sour cream as desired. Makes 2. Heat the oil in a heavy-bottomed pan and sauté the onions on medium heat for about 2 minutes, or until the onions are light brown. Add the tomato pieces and fry until the oil leaves the sides.
