I have a windows computer, and I want to know how to design, create, and program my own iPhone app. Is there a software that can do this on windows. I know that Xcode is confusing and is only for macs. I want to create an app as easy as possible. I don't want to put it in the actual AppStore, but I just want it on my iPod touch.-Jenny. Generally speaking you are going to require the use of a MacBook or iMac to create your App. You’ll need to learn Objective C, or use one of the App creation services like AppMakr.com. -Ed.
What is Offline Marketing? I keep hearing about it, but can’t really find out what it is? - Connie. Offline marketing is the opposite of online marketing. Online marketing is marketing/advertising done over the internet. Offline marketing is the traditional methods of marketing such as television/newspaper/magazine adverts, posters, jingles, etc. -Ed.

What is the best way to design a website so that someone with no html skills can update and edit it? I usually use Dreamweaver for web design, but it needs to be more simple than that. A client wants to be able to make small changes and add info to the site himself in the future. Any suggestions for software or an online service that would give me design freedom and control, yet be easy for him to edit? It would be best if it is cheap or free and it has to be able to run on a mac and a pc. Thanks in advance!. - Ken. For this type of setup, you really can’t go past Wordpress. You setup wordpress, do the initial design for your client and then give them the information to access the backend, and show them how to create pages and posts.. -Ed.

MWM news DON'T SHOOT YOURSELF IN THE FOOT This week I was traveling without my laptop. I only had my iPhone and iPad with me. While I was away I had to look up a number of local restaurants where I was, and perform other mundane tasks that I would usually use my laptop for if I were home. I was amazed at how many of these "local" websites that I went to are still entirely developed in Flash, with no non-Flash fallbacks. I understand that small restaurants or stores don't have the large budgets of major Internet retailers. But with every domain hosting company offering simple website designs for free, it's not that complicated for these small sites to have a nonFlash-based Internet presence. If you are a mom-and-pop shop, are you shooting yourself in the foot because you haven't done a redesign since the HTML5 revolution? If so, here is a simple checklist for signs that you are shooting yourself in the foot: Your site is based on Flash and you don't have a non-Flash version. Videos on your site are Flash-based. For a better option, host them on YouTube so you don't have to worry about anything. YouTube will take care of everything for you. Your navigation is graphics-based. Designers in the '90s and '00s designed web templates as clickable graphics because HTML didn't provide the detailed control to really make intricate designs. That is no longer the case, and a graphical navigation fails for several reasons: it makes the page heavy and slow to load, it's not indexable by a search engine, and it most likely doesn't scale well across multiple devices (such as a mobile device). You don't speak English well and that's clear from your site. So many sites I have been on lately (non-corporate sites) have been laden with grammatical errors or typos. If you don't know the difference between to, too, and two, aren't sure if "a lot" is one word or two, or don't understand the proper use of "quotes," hire a copy editor or at least ask three to four friends to read over your site and give you notes before you publish your pages. My own pet peeve is this last one: the incorrect use of quotes. The local Dairy Queen near me had a sign a while ago. It was handwritten and said: Please give "money" to our "charity" and help support "sick" kids. Need I even make a comment about this? To a corporate reader of this column, this list might seem borderline dumb because these are obvious steps that companies take to make sure their sites are professional. But the reality is small sites are still often run by nontech people who hired a local guy in their tiny town to build them a site, and have no idea how to make any changes to it. If you have a small site that you operate on your own, are you shooting yourself in the foot by not doing these basic things that will make would-be customers take you seriously?

By the end of the month administrators of all 3 million Company Pages will have access to LinkedIn Sponsored Updates. Billed as “content marketing in the world’s only professional feed,” Sponsored Updates allow companies to pay to promote their content to specific audiences on LinkedIn — in the same spirit as Sponsored Posts on Twitter and Promote Page Posts on Facebook. Sponsored Updates has been running in pilot mode since January with a handful of companies including Adobe, HubSpot, Mercedes-Benz and the Wall Street Journal. As we reported earlier this month, LinkedIn is positioning itself as the leading destination for B2B content — and content marketing. Last fall the company introduced the Influencer program, a custom blogging platform for business luminaries such as Richard Branson and Bill Gates. LinkedIn says that program now includes more than 300 contributors and that there are an additional 1.5 million publishers pushing content through their Company pages. LinkedIn is hoping those 1.5 million publishers will adopt Sponsored Updates as part of their content marketing strategies. The targeting LinkedIn offers is powerful. Publishers can select audiences by company, title, job function and seniority levels in addition to the typical geotargeting options available on other platforms. LinkedIn’s targeting gold here — and what sets it apart from Facebook, in particular — is the number of users who complete their profiles and keep them updated for professional networking. LinkedIn’s challenge now is to get those users logging in with the levels of frequency Facebook enjoys to engage with the content companies are paying to promote.

Marketing done using internet to promote products is called Internet marketing. Online advertising is a way to sell and promote the product using internet. The end user of the internet includes consumers, who are the viewers of these advertisements. Marketing through internet gives the seller the option to promote the product through different means like by email which is known as email marketing, search engine marketing, social media marketing, etc. The display of the advertisement for marketing of the product is done via web banner, mobile advertising, etc. Online advertising team includes the advertiser and the publisher. The publisher integrates the advertisements provided by the advertiser. Others who are associated with internet marketing include advertising agencies. The function of an advertising agency is to generate and place the advertisement on ad server. The ad server helps the ad to get displayed and tracks the details. Today the connection between different and far places is shortened by the use of internet. The internet plays a very important role not only for us but also for business. Gale Epstein is a creative type, a petite vegetarian who relaxes by riding horses at her upstate New York farm. Her business partner, Lida Orzeck, is more of an urbanite, a Yankee fan who prefers the bright lights of New York City. But despite their obvious differences, Epstein and Orzeck, co-founders of Hanky Panky, the homegrown lingerie company that pioneered the stretchy thong, have one thing in common -- a successful partnership that dates back to 1977. Their relationship has outlasted two marriages (Orzeck's) and two long-term relationships (Epstein's) and their business is still going strong with roughly $50 million in annual sales.

What's the secret to making a 34-year partnership work? "We share the same vision," says Epstein, the New York City company's president and creative director. "Our success is based on each of us having our own strengths, our own areas of expertise." In a fickle industry where hot styles are routinely "knocked off" by big chains at low prices, the two entrepreneurs, now in their mid-60s, have used their design sense, business savvy and legions of loyal customers to retain financial and creative control of the company they founded when they were in their 30s. The 150-employee company sells 2 million thongs a year through department stores like Nordstrom and Lord & Taylor as well as upscale lingerie boutiques across the U.S. Though Hanky Panky also sells bras, camisoles and other lingerie styles, thongs account for roughly 50% of sales. "We have such a wide demographic now," Epstein says. "Everybody from grandmothers to granddaughters wears our thongs." Hanky Panky was born in 1977, when Epstein, a Parsons-trained designer, used embroidered Chinese handkerchiefs to create a whimsical braand-panty set for Orzeck's birthday. As the country was evolving with the women's liberation movement, Epstein was inspired by the idea of turning the hankie, a dainty Victorian-era relic, into a â&#x20AC;&#x153;confident, overtly sexualâ&#x20AC;? statement of female empowerment. Orzeck, her long-time friend and neighbor, was also her target market. Orzeck, who earned a Ph.D. in social psychology at Columbia University, loved the hand-made gift so much they decided to team up to build a lingerie company around the fashion item. While Epstein sewed, Orzeck dialed up department store buyers and began booking orders.

"Gale made 12 dozen bras and bikinis for Lord & Taylor in one weekend," recalls Orzeck, who serves as chief executive of Hanky Panky. "I read the instructions on how to invoice and loaded them in my car and went to the loading docks." Hanky Panky grew slowly but profitably, hitting $1 million in sales four years after the company opened its doors. But it wasn't until 1986 that Hanky Panky introduced the panties that would put the company on the map -- the one-size-fitsall thong. The company wanted to "create something that was more comfortable than a Gstring but sexy like a pantie," Orzeck says. Word quickly spread of Hanky Panky's lacey thongs and the embarrassing panty lines they helped erase. In 2004, The Wall Street Journal declared the thong a fashion phenomenon, with supermodels like Cindy Crawford and movie stars like Julianne Moore wearing the company's signature 4811 thong. "Hanky Panky makes the ubiquitous thong that every woman knows by name," says Claire Chambers, CEO of Journelle Inc., a New York City lingerie boutique that has carried Hanky Panky's thongs since it opened in 2007. The mania that followed almost sank the homegrown business. Running at sales of about $12 million a year before the Journal article appeared, Hanky Panky was afterward deluged with large orders from major department stores that it scrambled to fulfill. "It was scary," Orzeck says. "But our contractors are [like] family, and they worked with us when the department stores cleaned us out of our inventory so quickly."
Tapping the company's credit line, the co-founders ramped up production (Hanky Panky manufactures domestically, contracting production to small factories in the New York area), expanded its sales force and created a planning department to help its retail customers figure out which styles were selling the fastest so they could re-order more effectively. Despite intense competition from national chains, the company's sales remain strong and its founders have no plans to cash out and retire. Hanky Panky is now expanding its business through licensing deals with Collegiate, a college marketer, and Hello Kitty. "We have a brand name that's so strong that the knock-offs don't matter," says Orzeck, who notes that Hanky Panky's thongs retail for $18 to $20 a pair, triple what a pair of thongs typically costs at popular lingerie chains like Victoria's Secret.

Here are some lessons that Epstein and Orzeck have learned about building a successful partnership: 1. Find a partner with complementary differences. Despite their close collaboration, Epstein and Orzeck have clearly defined areas of responsibility. Epstein is the designer who works with the creative team on new styles. Orzeck leads sales, marketing and operations. Yet both women work together to make decisions and guide company strategy. 2. Keep the lines of communication open. Though they work on opposite sides of their 11th floor Manhattan office space, Epstein and Orzeck stay in touch throughout the day. "We respect each other's opinions so much that, even though we have own specialties, we like to give our input into each other's departments," Orzeck says. 3. Build a management team to support you. No matter how talented you and your partner may be, you can't build a company alone. That's why Epstein and Orzeck have brought in what they call a "B team" to help manage sales, production, warehousing and other functions. There's also a strategy consultant to help guide future plans. "As our business has become more complex, we've relied on our trusted advisers to help us with decision-making," Orzeck says.

I’m very excited to feature you as the first interview on this platform to get the ball rolling. Should I start sending the questions your way? Joseph: – I’m honored to be involved Pratik. Thank you. Sure, fire away with the questions. Pratik: – Ok great, my first question is since how many years have you been doing social media marketing? Joseph: – I have been doing social media marketing in one form or another for about 5 years. Pratik: – Sounds good. What did you do before becoming a social media expert? How do you think this adds value to your current role? Joseph: – Before my life as an online marketer I was a salesman. My first sales job was selling advertising space and then selling life insurance for a different company. If it weren’t for these roles, I doubt I would have become an online marketer. When working in those roles I really learned to enjoy the buzz of making a sale and working in a high pressure environment. In an attempt to succeed I did all the study I could around selling and persuasion techniques, this eventually led me to find the online marketing gurus who sold me on the idea of starting my own online business. In my time as a salesman I learned how to pitch a valuable product in exchange for money. I learned how to use persuasive language. I learned how to talk to people and see things from their point of view. All of which helps me in my current role. Pratik: – What is your most successful project to date? Why? Joseph: – It’s difficult to pick just one but one of my favorite (and most fun) projects to work on was for a sci-fi book aimed at teenagers. We went from being totally unknown to being able to attract over a quarter of a million fans on the fan page in about 4 months. Needless to say we sold a lot of books too, hitting the best seller list on barnes and noble under the sci-fi category. All thanks to social media marketing. Pratik: – That’s just perfect, right? What are some of the biggest challenges you’ve experienced in implementing social media initiatives for a client? How did you overcome these challenges? Joseph: – I’ve learned that social media marketing or any other type of marketing cannot fix a product that no one is really interested in. Sometimes when people struggle with social media, I ask them to go back to basics and make sure that whatever is on offer is attractive to their target market. If it isn’t then no amount of online marketing will make a difference. For campaigns that have not performed well to start with I have made sure that the basic concept is right, only then did we continue with the campaign and fortunately in most cases we did see improvement afterwards.

Pratik: – How do you stay current on social media changes, news, research and methodologies? Joseph: – I buy a lot of courses. I read lot’s of blog and news sites. I am part of groups, forums and masterminds. I also use social networks; sometimes it’s through a friend sharing an article that I am made aware of a major change. The main way I learn though is through practice. If you are using social media regularly you will often just notice the changes yourself. Sometimes there will be some kind of explanation or notification published when a change is made and if there isn’t I then just search the blogosphere to see what others are saying about it. Pratik: – What qualities and traits do you think are necessary in a good social media expert? Why? Joseph: – Patience as a decent social media presence is not built overnight. Pratik: – What social media tools do you use on a regular basis? Why do you use these tools? Joseph: – I like sprout social for analytics, this helps me monitor performance and see what is working and what isn’t. I use Socialoomph.com for tweet scheduling and justunfollow.com for twitter Unfollowing. Tweetdeck allows me to see twitter, facebook and variety of other social media accounts all from one interface which is a good time saver. Pratik: – How do you measure success in social media? Joseph: – Ultimately money made from a campaign is the most important element as customers are paying me for results; they want a return on their investment. So that is the all important measurement. Other indicators include website traffic, clicks on links, email sign ups, numbers of people talking or responding, retweets, likes, shares, views, subscribers, followers, etc Pratik: – I saw that you’ve got tremendous response on your social media profiles such as yourTwitter has more than 173K followers, your Facebook page has more than 14K likes and yourPinterest has more than 1.3K followers. So how did you get your profiles get so much popularity? What things/strategies you used for it?
MWM 18 Joseph: – Well there’s no quick fix, those audiences were built over time. The exact strategies I used vary depending on the particular social network. Great content is essential because if people arrive at your social media profile and you have nothing interesting to say or immediate value to be offered then people will have no reason to want to stay connected to you. In terms of traffic, my facebook strategy has largely been thanks to facebook adverts. My twitter following was a strategy where I followed targeted people and they followed back and we started a relationship from there. After a while it took on a momentum of its own and lot’s people were following me first without me having to find them. Pratik: – Did your great presence on social media really paid off for you? I know I should not ask this question but what is the volume of inquiries you receive on a monthly basis? Joseph: – Yes it has paid off massively. My entire business model depends on it. I get inquiries every day, of course not all inquiries turn into paying customers but many do and it’s all thanks to social media and other forms of online marketing. Pratik: – I’m sure you’re aware about so many companies that are offering paid likes and paid followers services. Does it make sense to get paid likes or paid followers? – Why people should stay away from paid likes or paid followers? Joseph: – The simple answer is paid followers are pretty much worthless. They are not real followers they are just fake profiles so no one is actually behind them or operating them. How can you possibly get a customer from a fake social media account? Pratik: – Yes that’s totally right. I have been asked by many clients the same question so I thought to add more light into it by asking the same to you. – Do you think Google+ would be able to take over Facebook in terms of users and popularity? Joseph: – No I don’t believe they will. Facebook were first to the party and all other competitors will forever be in their shadow. A social media site would need to be significantly different or better to catch up to facebook. Google+ just is not significantly better or different. It’s like facebook but with less people using it. Only when something truly innovative comes along will facebook need to worry about their number 1 position.

Pratik: – How Pinterest is coming along in the Social Media? Have you had success with it for any of your client’s or your profile? How much weightage does it have as per the current trend? Joseph: – Pinterest has done very well. Personally because it’s relatively new, it’s the social network I have least experience with. I have made money with it but on the same scale as the other social networks like Facebook, Twitter, LinkedIn and YouTube. However I do know some people who have used it with great success and they see it as their number one social network. I think it depends on who your target market is and what social networks they tend to use. Go where your potential customers are. Pratik: – Do you get client inquiries who ask you to work along with their SEO team to help their SEO with Social Media? Because nowadays majority of companies are aligning their SEO strategy with Social Media in order to get maximum benefit of both. Joseph: – Yes I do. Many of my customers use and understand the importance of both. Like you said they are now starting to merge and becoming increasing dependant on one another. If you want maximum benefits then you need both a search and social strategy in place. Pratik: – Where do you see the future of Social Media in next 2-3 years? Joseph: – It’s hard to tell. I would like to see a truly innovative social media giant emerge to really shake things up but whether that will happen I don’t know. Mobile usage will carry on increasing too as more and more people use smart phones. Pratik: – Thanks Joseph for answering all these questions and sharing your experience with us. Is there any last advice you would like to share with the readers and the social media experts out there? Joseph: – I would just reiterate that you need a blog, that’s where social meets search. TALKING SEO – INTERVIEW WITH TODD MALICOAT By: Nick Eubanks
In this episode, I speak with Captain Todd Malicoat, Author of the Stuntdubl SEO Blog, FacultySEO Chair at MarketMotive, and Fishing Charter Captain at Miami Fishing Charters. Listen to Todd and I discuss his thoughts on Panda’s integration into Google’s normal algorithm, negative SEO, link building, and find out the one tip that Todd has for all SEO’s. How are you doing, Todd?
And they did, through a series of iterations that’s now becoming part of the overall algorithm. Those iterations are so subtle that you don’t really notice them anymore. I think that’s happened in the past with lots of different changes.
Todd: Fantastic. Nick: Good to hear it, man. The first question I’ve got coming at you has to do with Panda being integrated into Google’s normal algorithm. A couple of people, including myself are just really curious as to what the effects professionals and experts, people like yourself think that it’s going to have on just the overall search engine landscape? Todd: Yeah, I think we’ve seen this with a lot of different types of algorithm updates in the past, really. Google’s just always given different names and have targeted different problems associated with relevance. One of the big problems they were having with relevance was there was such a heavy emphasis and heavy importance placed on off-site equity and link equity that they needed something to balance that, and that kinda is what Panda was in my mind, is they had to take care of this big relevance issue.

This one, however, was obviously a huge one. That they did it so many times and that it was noticeable, so many times is a big thing. And really what came out of that as what I noticed most was having that audition period for almost any landing page and that overall score for any type of website. So we saw between Panda and Penguin, two different issues that we’re solving that emphasis on too much offsite. But with Panda, it was just ranking garbage content on a quality domain, and so that’s always been an issue. That’s starting to get solved and I think we’ve seen that the solution is working. If a site has 80% bounce rate, it’s no longer ranking for its term, number one, for a very long or more than a short time. So with Panda overall, we see that you can’t rank a crappy landing page anymore. That’s what it solved. That’s what it’ll continue to solve. You have to be watching bounce rates and kind of those exit rates in your analytics, in order to solve that and be prepared for that. If you’re not doing that, you have to know that you’re not going to rank well.
Being you have a good content creation process, you have a good outreach process, and then you’re following up with social media, and you’re doing it consistently. So that’s overall the best strategy.
Nick: I think that’s a fantastic point. Coming back to the piece you opened up with, more about the focus on off-page link equity. That leads me really well actually right into our next question, which is, Have you ever seen or experienced negative SEO firsthand? Todd: I’ve seen some examples, more so I think of hacking. Negative SEO is kind of an all-encompassing term, for anything negative that happens to your site that you really don’t have control over it.
So to truly be optimal, you’ve got to always be learning, always be reading, and certainly stay humble, because you never know when the next Zune animal is going come along.
Nick: Very good point. Todd: The most malicious of this was once called Google bowling, pointing a bunch of blog spam links at a site to tank it. I have seen it happen in competitive verticals.
Nick: Yep, I absolutely agree. Beyond links what are some of the strategies that you’re using to help your websites, and your clients gain just more visibility overall in the SERPs?
I’ve seen some examples. I’ve never really played in verticals competitive enough where it was an issue. Personally to me, I have had sites hacked where there was malware installed, and that impacted the rankings which is similar in ways, but not quite what I deemed the Google bowling, I suppose.
Todd: I was needed there for a second. Can you ask that one again?
So it does exist to a certain point. You know I think Google finally admitted there’s an issue with that, by releasing the disavow tool. But overall, unless you’re really in that competitive vertical, it’s not a huge issue, and if you are in those verticals, you’re kind of a little bit more prepared for it, and understand that SEO in those spaces is a little bit different. Nick: I think those are all really good points. I think the most interesting thing in my experience is probably on the flip side of negative SEO, which is people who aren’t trying to do it to have a negative impact on their competitors’ sites from people who are using lots of just crappy spam and drip links, Xrumer, and all that good stuff to get their stuff to rank. And probably, I think what’s amazing to me is the amount of proliferation I’ve seen, with those types of very spam-heavy link-building packets in, like the payday loan SERPs specifically, which I think and correct me if I’m wrong, it’s probably one of the more volatile SERPs within search. Todd: Yeah, those payday loan guys have been aggressive with it for quite some time and it’s an interesting space to watch. I think even things like Viagra are a little less competitive now, because they’re a little bit more regulated. Payday loans really have been sort of the Wild West kind of industries. It’s interesting to watch those search results sometimes. You have to probably have a high-level of security on your computer, and not allow any malware or Adware of any sort to be installed. But they’re interesting to watch, because there’s a little bit different space and it fluctuates a lot, by watching those results change you can kind of get a feel for what’s going on sometimes, some of the things that Google’s trying to prevent in competitive industries or other industries by watching those most important ones. Nick: That’s a very cool idea. This is actually a perfect segue into my third question which is: In your opinion, what would you consider to be one fail- safe link-building strategy that still works in 2013? Todd: I think the one that people can agree on is guest posting to a certain extent. Guest posting absolutely works. It’s kind of the foundation for content marketing in a lot of ways, which is kind of, I don’t know if it’s making a resurgence or what. In my mind it will always be link development and content building, and they’re kind of married together. But the idea of content marketing without link development, I suppose is kind of being brought back. That’s creating something and sharing it, having a linkable asset, that asset can be content. That asset can be a widget. That asset can be a tool. That asset can be software, a PDF, whatever it is. But you have to have something to be offering. You can’t just go out and kind of rob people for links anymore, hold your email gun up and say, “Give me a link,” or can I have a link. It just doesn’t work. Even in the past, people were sending thousands of emails and getting 1.0% response rate. Even at that level, those have gone down. That was really never my approach, but I think people did that in the past and webmasters fell for it, and now those same webmasters are upset about it, and they’re never going to fall for it again. So you have to have something to offer, you have to have something that’s safer, and there’s that validation later now with social to say this is a real person, send me a real request, not a pseudonym made-up person sending a request, for a payday loan site that won’t exist three days from now.
Nick: Sure. Beyond links what are some of the strategies that you’re using to help gain more visibility for your websites within the SERPs? Todd: I think it’s a combination of social as an outreach platform, and content as the asset, so it really has to be all kinds of cylinders on the engines firing at once. Being you have a good content creation process, you have a good outreach process, and then you’re following up with social media, and you’re doing it consistently. So that’s overall the best strategy. I think we’re seeing more of that importance going towards authorship and towards personal authority, so I think that’s important. For my sites personally, I’m just actually getting ready to launch a big project. I’m doing aFishingCharters.com. For that one, it’ll be me writing articles about fishing. I kind of went back to basics, with what would work for SEO and it’s not kind of the mass outreach anymore. It’s just not going to be effective, so the stuff that works for rankings is being genuine, is creating something, is doing something that people want to read and participate in. So that’s community, that’s linkable assets. That’s the things that the web was founded on, and Google is doing a good job of making sure that’s the things that you find, instead of the things you don’t want to find when you click the back button. That’s what Panda is and that’s what Penguin is and that’s what they’re continuing to do. SEO’s have a problem with some of the decisions Google makes sometimes, but I think relevance as a whole by the general user is always well-received. Nick: I think you’re absolutely right there, so sort of a fun question to close out the podcast with. If there were some magical loudspeaker that was tuned to every SEO on planet Earth, and you could tell every SEO just one thing, what would it be? Todd: Probably stay humble. What works today isn’t going to work tomorrow. The idea of optimization as a whole is kind of staying on the forefront of what works. And it’s disappointing for me to see five years later people selling directory submission packages. After there are only four or five directories that work; or selling reciprocal link packages, or selling page ranks, three links, thousands of them for two dollars; all that sort of thing. Most of it never worked for long and to see people still sell it is disappointing to me as a whole. I think some of those things get passed down as information, and then it becomes old information and then year’s later it’s rancid, stagnant information. And even the people that are on the forefront, even the people that are really actively creating sites, and doing things innovating, even those folks get caught up in a rut sometimes, I think. So to truly be optimal, you’ve got to always be learning, always be reading, and certainly stay humble, because you never know when the next Zune animal is going come along. Nick: I think that’s a fantastic piece of advice. Okay, man thank you so much for taking some time to answer some of my questions, and really, really happy and excited to have you on here. INTERVIEW WITH KENNY LAO Kenny Lao’s youthful energy is infectious, a zesty joie de vivre that colors both his personality and his food. The owner of New York City’s Rickshaw Dumplings, California native Lao graduated from Brown University and earned an MBA from NYU’s Stern Business School, but all the while suspected that his heart was in his stomach. (In a good way.)
One of my favorite meals growing up was dumpling night in my house. We’d get together with another family and we’d wrap dumplings all night. It was a shared experience around food. I loved the kind of the communality of it.
Inspired by a family who taught him the virtues of an adventurous palate, Lao embarked on a quest to spread the gospel of homemade dumplings. Rather than dive in head first like a rookie, he worked front-of-the-house jobs at esteemed restaurants like Nobu and Tribeca Grill to garner experience in the restaurant industry. That’s right; he probably took your coat one night. But, the unglamorous diligence paid off; Rickshaw Dumplings is a smash success, giving diners dynamite twists on traditional Asian flavors, all to the smooth groove of a customized soundtrack (another reflection of Lao’s hipster zeal). NAC: Why did you decide to open a dumpling restaurant? LAO: One of my favorite meals growing up was dumpling night in my house. We’d get together with another family and we’d wrap dumplings all night. It was a shared experience around food. I loved the kind of the communality of it. NAC: What did your family teach you about food? LAO: Even as a kid we ate out probably three or four times a week, around Pasadena where I grew up. My father never let me order off the kid’s menu. He didn’t want me eating grilled cheese and hot dogs at the best restaurants in town! My mother says I was always very stubborn. I was allergic to crustaceans, but I couldn’t help myself. I loved shrimp, lobster, all of it, even though I wasn’t supposed to eat it. My mother thinks I grew out of the allergy because I forced my way through it. NAC: How did you get [New Asian Cuisine contributing chef] Anita Lo involved with Rickshaw? LAO: I knew Anita through having worked in NYC restaurants. When it came time to come up with menu for Rickshaw, I wanted to have a chef on board. I don’t have formal back of the house training. There are a lot of chefs playing in more casual aspects of the restaurant right now, and I thought this concept was a logical fit for a well known Asian chef.
NAC: How did you choose the dumpling recipes for the menu? LAO: Really, I said hey, you’re the chef, come up with the best flavors that are accessible but authentic. The flavors are bright and vivid; they speak to a wide audience. The most popular is a Thai basil chicken dumpling; it’s a very traditional flavor that people recognize. Our chocolate dumpling is delicious! We use mochi flour for the dumpling, which is covered with black sesame seeds and filled with dark chocolate and high-density butter. When you cook it, the inside melts and becomes a chocolate soup. It’s a burst of flavor! And it’s apparently the first of its kind. It was named among the top ten best chocolate desserts in New York in New York Magazine.
"Artists can have greater access to reality; they can see patterns and details and connections that other people, distracted by the blur of life, might miss," he writes. "Just sharing that truth can be a very powerful thing."
NAC: What’s your favorite dumpling on the Rickshaw menu? LAO: One of my favorites here is an unusual one that Anita made up. It’s a Peking duck recipe. I knew that Peking duck is a fairly traditional Chinese flavor and I thought it would be delicious, especially if it’s pan fried because then it becomes crispy, like duck skin. NAC: According to your website, you worked with a guy named DJ Stang to create an original soundtrack for the restaurant? LAO: The music is really kind of the key element here. One of the things I realized is when people come into restaurants they’re in for the whole experience. I think that what you hear is just as important as what you see, smell, and taste. DJ Stang is a crazy Swede! He’s a DJ that I know here. It’s all music that I personally really like, but it also fits the restaurant really well. We try to do music that’s very melody driven, songs you recognize or think you recognize. We still get people asking about the music. It’s pretty unusual for a restaurant. We take off songs that the staff gets sick of, but it’s pretty static. We have every kind of music. It’s a really fun mix. One of the songs is a cover of a Cranberry’s song, in Chinese.
NAC: What are you up to when you’re not at/thinking about the restaurant? LAO: I sleep a lot when I can! Also, this sounds crazy but I go out and eat dinner. I go out and eat all the time. I swim twice a week. Sunday is my real day when I try not to come into the store, but we’re opening two more stores, so for now I’m coming in. NAC: Where are the new restaurants going to be? LAO: One on 8th street, near NYU. It’s a great location, one that I’m really excited that we were able to land. I’m really excited to come back to my alma mater area. NAC: What advice can you give to wannabe restaurateurs? LAO: People always ask; how do you open a restaurant? People want to know how I did it. The best thing to do is to get experience in the restaurant industry, any way you can; cashiering [sic.], hosting, bussing, line cooking. Get experience to see what it’s like to work in a restaurant, and then see if you still like it. There’s not that much of difference between working in a restaurant and owning one. It’s very, very hands on.
