Worst case scenario, you may need to run to the grocery store for a couple of extras. Chips and dips: Most people fill up on good old-fashioned salt and vinegar chips and dip at a family lunch. Also, it’s more than appropriate to ask family members to bring these items which will save you the hassle of securing them anyway. Pasta: Unless you’ve been banting lately, you should have a couple of bags in the pantry. Chopped tins of tomato: 98% chance you have two or more tins that have been sitting there since the last time you had the family over. Garlic, olive oil, onions, salt, pepper and onion: It’s a given. Olives/chickpeas/feta/parmesan/ capers: Touch and go in some kitchens but a staple in others. There is bound to be at least one of these items in your pantry to add a little pizzazz to your dish. the ultimate four-course dinner!
What’s better than enjoying a gourmet chef-inspired menu in the comfort of your home? Nothing! We’ve gathered our favourite Jozi chefs’ recipes for the ultimate at-home festive feast – bon appétit!

Frutti di Mare Serves 1 INGREDIENTS 2 Prawns 21/26 2 Clams 2 Mussels 9 Squid tentacles 1 Scallop without roe 350ml White wine 50ml Extra virgin olive oil 1 Garlic clove Pinch Maldon sea salt Pinch coarse black pepper A squeeze of half a lemon 5 Baby spinach leaves METHOD Soak the clams in cold water for 15 minutes or until they open by themselves (don’t force them open), devein the prawns and rinse under cold water. Chop up garlic finely and put in a bowl with olive oil, lemon juice, salt and pepper. Place a small pot on a hot stove and pour in the white wine and bring to boil. Place the clams and the mussels in a colander small enough to place in the pot but be careful not to submerge the shellfish. Steam for one minute but be careful not to overcook. Once tender remove. Place a frying pan over heat and pour two tablespoons of oil in – make sure the oil is hot. Place prawns in the pan frying at a medium to high heat, turn over once pink and continue frying the other side. Remove from heat once cooked. Next fry scallop till lightly golden and turn over but be careful not to overcook. Next fry the squid tentacles for 10 seconds on a high heat then remove. Once all is cooked drizzle with garlic oil dressing and season to taste.

SECOND COURSE By Chef Shayne Holt from Parliament Smoked Lamb Ribs Serves 1 METHOD Get your butcher to cut you some nice meaty lamb ribs and get your Weber ready for low, indirect heat. Soak some wood chips in water so they smoulder when you put them on the coals and not flame. Rub the ribs with your choice of spice (we use coriander seeds, paprika, dried mint, smoked salt and pepper) - get creative! Make sure the temperature is at a steady 120 degrees celsius and place your lamb ribs on the grid on indirect heat over a drip tray of water (water on the bottom grid). Drain the wood chips and throw a few on the coals and watch the smoke plume! close the lid, close the vents to half way and get ready for a three-hour wait. Check the heat and smoke occasionally: add a coal or two to keep the temperature steady, add some more wood chips to keep the smoke going (if you like it super smokey, you know what to do - we've found a mild smoke works best for our guests). Right, while this is all happening, cut some cherry tomatoes in half, season with salt and pepper and olive oil, place cut side up in a tray and in your oven at the lowest heat you can for the same three hours. We actually do this overnight at 50 degrees at the restaurant so they get really dehydrated and chewy! Voila - you now have oven dried tomatoes - you can adjust how dehydrated you like them by tweaking the cooking time. Next, find the best Kalamata olives you can and pop out the pips. Lastly, fresh mint sauce. This is nothing like that jelly gloop you buy in store but rather more vinaigrette and vibrant! Take a bunch of mint and chop it up finely. Put that in a small bowl. Add a pinch of salt and a tablespoon of castor sugar to the same bowl. Add 60ml of boiling water and stir to let the sugar dissolve. Then add 60 ml of good white wine vinegar and let it all cool. Fresh mint sauce - sorted. Now that your ribs are smokey, delicious, a little chewy but by no means tough, blast them over the coals for some nice grill marks and put them on a platter. Sprinkle over your oven-dried tomatoes and Kalamata olives and a few fresh mint leaf tips (got to make it look good). Finally, at the table and in front of your guests, drizzle over your fresh mint sauce - when that hits the hot lamb they'll do one of 2 things: cry with delight or be very rude and dive in before you've given them permission.

Thai Butternut Curry INGREDIENTS 200 gr-2cm cubed butternut 1 Punnet patty pans thickly sliced 1 Punnet medium baby marrows thick sliced 1 Punnet small white mushrooms thick sliced 1 Punnet baby corn quartered ¼ Cup salted cashews or peanuts chopped ½ Cup pearl barley 2 Tins coconut cream 1 Big bunch coriander 1 Bunch curly parsley 3 Cloves garlic cleaned 2 Tbsp grated ginger 10 Green chilli's 10 Lime leaves 2 Stalks lemongrass 1 Lime juiced 100ml Canola oil 1 Tsp salt 2 Large red onion METHOD: Add the stalks and half the coriander leaves with parsley, garlic, ginger, chillies, lime leaves, chopped lemongrass, lime juice, half red onion chopped and salt to a blender and start to blend and add the oil slowly until a thick smooth paste is made. In a pot heat some oil and add the rest of the chopped onion and fry off till soft. Add two tablespoons of your green curry paste and fry. Add the coconut cream and pearl barley cook for 10 min. Add the butternut and after 10mins add the other ingredients. Be careful not to overcook the veg as you want firm vegetables. Garnish with leftover chopped coriander leaves and chopped cashews. Serve with steamed rice.

With the festive season kicking off, the temptation for our healthy habits to slide is both alive and alluring.

social gatherings to family affairs and parties with friends. Be selective about the events you choose to attend and don’t feel guilty declining invites to ones that aren’t important to you. The holiday season should be a time to rejuvenate, rest and restore. You don’t want to enter the new year feeling exhausted and depleted! Never go back for seconds This might sound like a small change, but it will go a long way. Never go back for a second helping, no matter how tasty the buffet is. The more mindful you are, the less likely you’ll be to overeat. So, eat slowly and savour every mouthful! If you’re able to choose your food, don’t stop yourself from eating anything – just make sure the proportions of healthy eats are bigger than the unhealthy options. Drink lots of water on a night out When you’re out with your friends and they’re offering to buy you drinks, it can be difficult to say no. You don’t have to though – simply ask for a sparkling water with some lemon instead. It might not be
quite as refreshing as a gin-and-tonic, but you’ll avoid consuming unnecessary calories (not to mention wake up feeling fresh AF the next day). Or, you can always fall back on the “tomorrow is a big day and I need to be on form” excuse. Train for 15 minutes every day Set aside a minimum of 15 minutes a day for working out. It can be walking, running, yoga, HIIT, anything! On the days that you really can’t fit in a 15-minute training session, still, try to exercise for at least a few minutes to shake up your metabolism. Otherwise, schedule in a short 5-minute meditation session to slow down your breathing and focus on your body. Adapt your exercise routine Your normal training schedule is probably totally unrealistic over the festive season. For example, if you usually have a four-day routine, you should consider switching to something like one treadmill hill sprint session and one full body weight session a week. Think about what gives you the biggest bang for your buck when it comes to training and focus on that.

When it comes to the festive season, many of us abide by the social norm of providing a gift in anticipation of receiving one based on century-old traditions. But in the current economy - formally labelled a technical recession and characterized by escalating costs of living and a dire need for humanitarian aid for many – are there not better ways to ‘give’ this festive season?

very year we receive gifts which will inevitably be re-gifted and the challenge is remembering who gave it in the first place to avoid the embarrassment of returning it to sender unknowingly. Whilst for children the magic of the festive season is the belief in the imaginary and the wonder of surprise – for us adults, there is magic to be found in the ability to make a difference in someone else’s life through the simple act of giving. And we don’t mean presents. This holiday period, we encourage you to consider making a donation to a charity on behalf of someone who you would normally have bought a gift for. Whilst the amount may seem insignificant, when you add up the value of all the individual gifts you would have bought, you will be able to make a sizeable difference in the lives of those for whom the festive season is just another month of fighting for survival.
Donating is also an amazing way to teach children about the importance of giving back to others and there are a number of initiatives which you can do with your children to really make them feel part of the process: 1. Santa Shoebox Project – this initiative provides underprivileged children with a gift, which they otherwise would not receive. You pledge a box (or many) which need to include some standard hygiene items (ie toothbrush, facecloth etc) as well as toy and educational supplies dependent on the child’s age and gender. LET’S START WITH YOUR MOVIE WATCHING SCHEDULE. Holiday breaks mean more time to indulge. Netflix is great, but nothing beats a popcorn and slushie at the cinema. While the Christmas favourites will crowd the box office, these four films won’t push too much Santa down your throat while also keeping you highly entertained.
After years of horrible Transformers movies, the franchise plans to reboot on 20 December with the launch of the original story of everyone’s favourite Transformer Bumblebee. The movie Bumblebee takes us back to the 80s. A simpler time. Travis Knight also takes over director responsibilities. He found his feet in stop-motion animation with movies like ParaNorman so expect a bit of depth to the film interspersed with giant robots blowing things up.
Ralph Breaks the Internet arrives on 21 November and is the sequel to Wreck-It Ralph. Ralph and his adorable friend Vanellope von Schweetz use a connection to the internet to try to fix an arcade game. They explore a world of Facebook, Google and the like while also meeting up with characters from Marvel, Pixar and Disney. So, think Disney Princesses, Muppets and even Star Wars. It is an animation and kids will giggle but the movie has a lot of adult-only jokes that will have you chuckling under your breath.
Mary Poppins Returns sees Emily Blunt filling an iconic role portrayed by Julie Andrews. This sequel to the beloved classic looks intriguing. Mainly because Lin-Manuel Miranda makes an appearance. Miranda was responsible for writing, directing and starring in the broadway-hit Hamilton. No doubt his performance alone should be worth the cinema visit.
HOLIDAY READ
While movies are fun you might be looking for something social at home. There’s a way to ensure you entertain the extended family without having to leave the house. The book “The Floor is Lava and 99 more games for everyone everywhere” is a definite must-read. The book is written by Ivan Brett and is exactly what it says it is. A collection of games you can play everywhere. While the book will help you find fun activities for when the electricity cuts, it is also just an enjoyable read. Did you even know there was a game called Chappy Tomato? Nope. Didn’t think so.
Dream Lab 9 by Sketchy Bongo features guest appearances from Jimmy Nevis and Caleb Williams while melding together some more EDM, pop and R&B. It is the perfect summer soundtrack and a strong second showing from the producer. Each track has the potential to offer up a summertime hit so it is worth heading on this musical journey. Preferably while next to a swimming pool with your feet up.
