hat was my first thought when we first went into lockdown. One thing that’s certain is that we know that adjusting to change can be challenging. Be it planned or unplanned, gradual or sudden, change is inevitable and very much part of being human.

Over the past few months, we’ve experienced an unprecedented shift in our way of life due to the COVID-19 pandemic. Pre-pandemic, who would’ve thought that a trip to do a weekly grocery shop would seem like an adventure of its own? Or that our wardrobes would include more pyjamas and fewer bras and pants? Before we know it, we’ve (reluctantly) let go of our old normal and are now settling into what seems to be our new normal. We’re facing fundamental shifts to our way of life, and even when society starts up again, there will still be restrictions. So, we’ve dedicated our July issue to surviving – and thriving – in the new normal. From sophisticated wines (from budget to splurge) for a date night home, to our top five bucket list-worthy delivery restaurants, to the best documentaries and thriller movies, we’ve got you covered. Joburg is full of restaurants serving food so good that it brings tears to our eyes. Just when you feel like you’ve ordered the best takeout and delivery the city has to offer, a whole new crop of restaurants join in, with incredible flavour combinations that taste like the actual future and an even bigger and better checklist to eat through. Here are five fantastic restaurants to add to your lockdown bucket list.

till one of Joburg’s most buzzedabout restaurants, FireRoom just leveled up with delivery. We’d describe the delivery menu as avantgarde and innovative with a focus on quality and seasonal produce.

The must-try sushi goes way beyond the usual suspects with its selection of sashimi, nigiri, dragon rolls and tiger rolls, including some meat-based items for distraction. Elegantly presented signature sushi is a highlight of the sushi menu: We recommend splashing out on the Fire Roll (crispy California rolls filled with salmon, jalapeño and cream cheese, dressed with kewpie mayo and yakitori) and the Springbok Roses (springbok carpaccio rolled with rice, topped with kewpie mayo, balsamic reduction, grapes, strawberries, camembert and sliced rocket). Although the fish is top-drawer, veggie combos are an unlikely standout here – don’t miss the crispy Halloumi Crunch filled with halloumi and cream cheese and drizzled with ‘fantasy’ sauce.

If you fancy something other than raw fish for dinner, you’re in luck: The menu also features a range of meat, chicken and fish dishes as well as salads, soups, dim sum and stir-fry. For a warm bowl of comfort, start with the seriously good potato and leek soup served with croutons. For mains, the famous fillet on the bone served with chips is a treat. Pepper crusted then flamed in the FireRoom kitchen, the meat is so tender you can slice it with a butter knife. If you’re looking to make it a date night, even with yourself, order the smash burger stacked high with two pure beef patties, melted cheddar, bacon, caramelised onion and paprika mayo on a homemade bun, or the seared Scottish salmon served with yakitori sauce that truly melts in your mouth as well. T

his honest-to-goodness Italian is just about the most perfect local restaurant you can imagine. Offering a concise, market-led menu and brilliant value despite its sky-high quality, there’s something to suit every occasion at Moda’ Ristorante – from some of the best pizza in Joburg to heaping portions of fork-twirling pasta. For starters, we recommend the paper-thin beef tenderloin carpaccio garnished with balsamic vinegar, rocket salad and shaved Parmesan, or the Falklands calamari and zucchini that’s deep fried until golden brown. hen it’s time for food that’s refreshing, cool and full of flavour, there’s one thing comes to mind immediately for us, and that’s sushi. hat’s not to love about the holy trinity of Mediterranean cuisine AKA bread, olive oil and wine? At Doppio Zero Greenside, there’s more to this comforting coastal fare than falafels and hummus. Straightforwardly split into mains, pastas, wood-fired pizzas, burgers, salads and bowls, vegan eats, soups and kiddies’ meals, the special reduced menu will transport you to the home of sun and sea. The hearty minestrone soup is some of the freshest and best we’ve had in a long time, with a healthy dose of fresh vegetables satisfying our taste buds. The aglio e olio alla greca pasta is alla greca pasta, in that, halloumi pasta is always good. What we really appreciate is the expert charring that brings out the full buttery, salty flavour of the cheese without making it too rubbery. Tossed with olive oil, garlic, cherry tomatoes, basil and Parmesan, it has a toothsome texture and delivers a satisfying chew factor. The Doppio Burger, a jaw-testing creation topped with mature cheddar and streaky bacon, is also on point. Sumptuous and full, there’s a hint of spice on the mid-palate, which leads to fine, firm tannins on the finish. When you taste it, you’ll be greeted by a punch of flavour that tappers off and then has a spicy peppery note in the aftertaste. The wine finishes off with soft, round tannins and oak. This vintage that’s all about the combination of power and elegance combines the rich, powerful aromatics of fresh blackberries and blackcurrant with softer tannins that make it easy to enjoy. The palate entry is bold with fine tannins supported by the ripe, fresh fruit and hints of spice. It has very good oak integration with a fresh, long finish. Welgegund Heritage Wines Chenin Blanc 2017 This bright and minerally white kills it for the price! Give me a giant tower of oysters with this and I’m a happy girl. We asked some of our favourite local bloggers for their top recipes that are perfect to enjoy while you shelter in place. These bakes will definitely satisfy your quarantine sugar cravings!

Fold the dough from the side of the bowl to the middle, rotating the bowl as you go along. Cover and set aside again for an hour. This may be repeated three or four times, or the dough may be placed in the fridge until the next day.

Shape the dough and place into two medium or one large bread tin/s (greased with butter). Cover with a damp tea towel and allow to rise until doubled. Score/slash the top of the loaf and bake at 180°C to 220°C for 30 to 40 minutes. The loaf should sound hollow when knocked (underneath). Allow to cool before slicing.

Gluten-free Rumkugeln Ingredients: • 100g butter (at room temperature) • 250g good quality dark or milk chocolate (don’t go higher than 70% as it may be too bitter) • 2½ teaspoons cocoa powder • 2-3 tablespoons of good quality rum (to taste) • Chocolate sprinkles, crushed nuts or icing sugar (for topping) Method: • Melt butter until soft but not runny. • Grate chocolate and mix into butter with a wooden spoon. • Now add cocoa powder and rum, mixing to form small balls. • Roll them in the chocolate sprinkles or crushed nuts. If you prefer a sweeter taste, roll in icing sugar. • Let the rum balls air dry then refrigerate in an airtight container. They can keep for over a month.

Banana French toast Ingredients: • 2 eggs • 2 small bananas • 5ml vanilla essence • 60ml milk • 4 slices of bread/croissants/hot cross buns Method: • Mash bananas in a bowl, using a fork or whisk. Add the eggs and mix well. Next add the milk, vanilla essence and mix until all combined. •

Dip each piece of bread into banana eggy mixture and press mixture in, make sure the banana bits stick to the bread.

Heat a frying pan on medium heat, melt some butter and fry until golden brown on each side. While you cook the rest, leave the cooked ones on a cooling rack to ensure it stays crispy.

Serve with cinnamon sugar, berries, yoghurt, maple syrup, honey and a sprinkle of lemon juice.

Vegan homemade honeycomb This recipe is 100% bee friendly, delicious and cruelty-free! Ingredients: • 200g castor sugar • 5 tablespoons golden syrup (or maple syrup), • 2 teaspoons bicarbonate of soda • 100g dark chocolate (if you want to coat the honeycomb) Method: • Line a 20cm baking dish with baking paper. Melt the caster sugar in the golden syrup over a high heat. Once the sugar has melted into the syrup, keep this over a high heat until you have an amber coloured caramel consistency. Turn the heat off. •

Add in the bicarbonate of soda and mix well. The mixture will start to foam, scape it into the baking dish immediately. You need to be quick as it can burn very easily and be careful as this mixture is extremely hot. The mixture will bubble away in the dish but will set in about one hour.

Break into chunks and coat in melted dark chocolate. Enjoy!

Owner Robert Swanepoel is all about preserving, salting, brining, pickling, fermenting, curing and drying some of nature’s most interesting offerings, and celebrating the most complex and compelling flavours. One of the best sourdough loaves we’ve come across in Joburg is over at Gravity Café. What makes their sourdough so good, you might ask? A shatteringly crisp crust that gives way to soft and moist bread filled with pockets of air. The flavour is tangy and the texture chewy, but not jaw-pain inducing. We love roasting it with chicken: Simply toss torn pieces of bread with shallots, cranberries, lemons and olive oil and top with chicken legs. As the chicken roasts, the bread absorbs the rich juices, becoming deliciously crisp and chewy. The breadcrumbs are also flavourful enough to serve as a topping on Gravity Café’s creamy chicken or potato and leek soup – especially if you mix them with herbs and crumbled pancetta.
