he news of COVID-19 hitting South Africa hard exploded in the same month as our 40th birthday. A few weeks later, the pandemic exacerbated the closure of at least 10 magazines, many of which are household names in SA that have been in circulation for decades. The heartbreaking news threatened our entire industry, but we weren’t going to give up without a fight. We’ve made it our mission to turn a negative situation into a powerful new beginning. Under these dramatic new conditions with unpredictable long-term effects, the Hello Joburg Magazine team has had to rapidly adapt. The current situation made me wonder what news and information you want to see in the pages of your Hello Joburg Magazine, with our team being divided on the topic. Do our readers want to see glamorous things to dream and escape until the lockdown is over? Or do they want practicality and straight-to-the-point entertainment to keep busy while they’re stuck at home? I believe the answer is probably somewhere in the middle during self-isolation. However, our mission to bring you the best food, culture, entertainment and fun around Joburg and beyond hasn’t changed. While it’s important to stay indoors to protect ourselves and others, that doesn’t mean we can’t still have a good time. The Foundry Sure, we all love our plant-based Beyond Burgers and fried chicken sandwiches, but sometimes nothing replaces a classic, beefy burger. Café 28 For the perfect pie The owners of this contemporary café are masters of their trade who make mouth-watering imaginative pizzas, pastas and burgers. The carbonara pizza from The Foundry: The toppings on this Pizza Bianco (meaning no tomato sauce or cheese) are creative without being strange – roasted garlic, crispy bacon, baked egg, pecorino shavings, fresh basil and black pepper aioli. If you’ve never experienced a pizza with an egg, we beg you to try it. When the yolk breaks, it transforms into a luscious sauce that makes the pizza that much more decadent. The egg is the ‘it’ factor that makes this pizza truly special. Would it be too trite for us to call it heaven on a crust?

The ricotta and spinach gnudi from Brik Café: Gnudi are essentially the light and cloud-like kin to gnocchi. The ricotta and spinach gnudi from Brike Café are described as ‘ricotta dumplings’. The featherlight clouds of fluffy, fresh ricotta are light, ethereally airy and incredibly moreish, served with a rich and simple burnt butter. The dish is also made with green mole – a bright green sauce made from pumpkin seeds and green chile with a strong earthy, nutty taste.

The ribs and chicken wings from La Boqueria: While pizzas and burgers both go down easy alongside a cold beer, the undisputed king of munchies is certainly the ribs and chicken wings from La Boqueria, served with corn on the cob. The sweet and spicy pork ribs are so impossibly melt-in-your-mouth tender, one bite will quiet even the pickiest of barbecue hard-liners. The smoky chicken wings are a crowd-pleaser – they’re crispy, rich, juicy and kissed by coal flames.

The calamarata pasta from Café 28: Calamarata pasta is a traditional Neapolitan pasta shape, which inherited its name for its shape that resembles calamari rings. This type of pasta absorbs all kinds of condiments, making it the perfect companion for the simple but amazingly delicious tomato sauce in this dish. The pasta is cooked al dente and then tossed with fresh calamari rings cooked in the tomato sauce before it’s finished off with fresh, aromatic chopped parsley.

Despite her focus on seasonal dishes, Glenda also works wonders on the indulgent brunch front. Now, there’s no need to leave your house to taste the famed exotic mushroom risotto, with the option to get it delivered straight to your door. Paulo Santo might be the chef behind this top Joburg restaurant, but that doesn’t mean he doesn’t like a couch meal, either. Lindt gluten-free chocolate and raspberry pancakes Makes six servings or 18 pancakes Ingredients: For the pancakes 4 cups of gluten-free plain flour (500g) ¼ cup (60ml) cocoa powder, sifted (25g) 1 tablespoon (15ml) baking powder (15g) 1 teaspoon (5ml) bicarbonate of soda (5g) ½ teaspoon (2ml) salt (1g) ¼ cup (60ml) castor/granulated sugar (50g) 2 eggs (at room temperature) 2 cups (500ml) buttermilk 1 teaspoon (5ml) vanilla extract 2 tablespoons (30 ml) rapeseed or sunflower oil For assembly 2 bars Lindt Excellence Raspberry, divided (each 100g) 1 cup (250ml) double or whipping cream ¼ cup (60ml) icing sugar (30g) 2 cups (500ml) raspberries (250g) Method: For the pancakes 1. In a large bowl, whisk together the gluten-free flour, cocoa, sugar, baking powder, bicarbonate of soda and salt, then set aside. 2. In another bowl, whisk together the eggs and buttermilk. Pour the buttermilk mixture over the dry ingredients. Whisk until just combined – don’t overmix - a few lumps are okay. Let the batter rest for 10 to 15 minutes. 3. Heat a large non-stick frying pan over a medium heat and brush with some of the oil. Once the pan is hot, adjust heat to medium-low. Using 75ml batter per pancake, cook the pancakes in batches for about one-two minutes, until bubbles start to form. Flip and cook for the same amount of time until golden on the bottom. Brush the skillet with more oil as needed. For assembly Meanwhile, finely chop 1 bar Lindt Excellence Raspberry. Place in a heat-safe bowl set over a saucepan of barely simmering water for five minutes or until the chocolate is melted and can be stirred. Using a vegetable peeler, shave flat thin shavings from the remaining bar of Lindt Excellence Raspberry away from you onto a parchment paper-lined plate. Whip the cream with the icing sugar using an electric whisk until stiff peaks form. Serve the pancakes with the melted chocolate, and a dollop of whipped cream. Carrot cake overnight oatmeal Ingredients: ½ cup rolled oats 1 teaspoon cinnamon ½ teaspoon ground or fresh nutmeg ¼ teaspoon salt 2 teaspoon chia seeds 1 raw carrot, finely grated 2 chopped dates 1 teaspoon vanilla essence 1 teaspoon honey or maple syrup 1 ½ cups oat milk Toppings: Walnuts Coconut yoghurt Peanut or almond butter Method: • Prepare a sealable jar or Tupperware. In a medium bowl or in the jar, combine the oats, cinnamon, nutmeg, salt, and chia seeds. Then add in the vanilla essence, honey and milk. Mix together until well combined. Lastly, add in the grated carrot and chopped dates. Leave to set in the fridge overnight and enjoy the next day. •
To enjoy warm, simply heat the mix on a stove top with an additional ¼ cup milk or water for 15 minutes until the oats are fully cooked through. Serve with yoghurt, nut butter, walnuts and honey.

Doughnut sugar cookies Ingredients: Will make about 25 cookies, depending on how big your cookie cutter is 230g unsalted butter at room temperature ¾ cup sugar 1 large egg 1 teaspoon vanilla essence 3 cups flour 1 teaspoon baking powder ¼ teaspoon salt (if you use salted butter leave this out) Method: • Using a mixer beat the butter together with the ¾ cup sugar. Mix for two minutes until fluffy and pale. Add the egg and vanilla essence. Mix until nicely combined. •
In a separate bowl, mix all the dry ingredients together then add them in two stages to the wet ingredients. Mix everything until well combined. Don’t overmix.
•
Turn the dough out onto a lightly floured surface and knead until smooth. Pat it into a ball, wrap with cling wrap and pop into the fridge for an hour. This step is important because it helps the cookies keep their shape whilst baking.
•
Once chilled cut your ball of dough in half (so it’s easier to work with) then place it between 2 sheets of baking paper, before rolling over it with a rolling pin until it’s about a 1/4-inch thick.

Using a round cookie-cutter or glass (I found a class gave a better doughnut shape) cut out your doughnuts, then using the back of an icing tip or anything else small and round, cut out your doughnut holes.
•
Once cut place them on a baking sheet and back into the fridge for ten minutes to chill.
•
Bake the cookies at 180°C for 10 minutes or until slightly golden. Cool before icing.

Basic vanilla cupcakes with vanilla buttercream Makes 12 standard cupcakes Ingredients:

400g icing sugar 200g butter (at room temperature) 10ml vanilla essence 15ml lemon juice Splash of milk to adjust consistency

Preheat the oven to 175°C.

Place cupcake liners in a muffin or cupcake pan. Using a paddle attachment, cream (beat) the butter and castor sugar until pale in colour (this can also be done by hand using a whisk, it just requires a lot of elbow grease). Add the eggs and vanilla essence and beat well.
•
Add half the flour (self-raising and flour combined) to the mix as well as half the milk and beat well. Add the remainder of the flour as well as the milk and mix until well incorporated.
•
Fill a piping bag and pipe mixture into the cupcake liners until they are ¾ full. Bake at 175°C for roughly 15 minutes, until a skewer comes out clean. Allow to cool until room temperature.
•
For the buttercream •
Place butter, vanilla essence and lemon juice in a bowl and beat well using a paddle attachment. Add the icing sugar and mix until well incorporated into a smooth buttercream.
•
Add milk to adjust the consistency (you want something that is thick and easily pipeable), continue beating for roughly two minutes until nice and smooth (this allows the sugar granules to dissolve into the butter giving you a silky smooth texture).
•
You can then add your favourite colouring to the buttercream and mix it in. You can also use a piping bag with or without a nozzle as demonstrated in the video. Pipe and decorate your cupcakes. I used an assortment of mini cones, sprinkles and caramel popcorn.

Ouma’s warm baked pudding Ingredients:

3 tablespoons butter, just melted ½ cup white sugar 1 cup granulated white sugar 380g can evaporated milk 3 eggs 1 teaspoon vanilla essence ¼ cup milk Reserved syrup from the 1½ cups cake flour canned apples 1½ teaspoon baking powder ½ teaspoon salt 385g can sliced pie apples, drained but reserve the syrup Method: • Preheat the oven to 180°C. Grease a 23x26cm pie dish. I prefer to use a heatproof glass dish as it heats slowly and evenly, which is great for puddings and pies. •
Cream the butter and sugar together until light and fluffy. You’ll need a bit of elbow grease for this one, but the result is worth it!
•
Slowly add your eggs, one at a time, mixing until fully combined. Add the milk, flour, baking powder and salt and mix well.
•
Pour the batter into the prepared dish and arrange the fruit on top, it will eventually sink. Bake for 45 minutes or until a skewer inserted into the centre comes out clean.
•
To make the sauce, place the ingredients into a saucepan and bring to a gentle simmer for about two to three minutes.
•
Pour sauce over the pudding as it comes out of the oven. Set aside to cool slightly and the sauce to soak in before serving.
Tips: Custard, cream and ice-cream are all perfect with this pudding. I often replace the canned apples with canned peaches, fresh raspberries or fresh blueberries depending on my mood and the weather.

Spiked Nutella hot chocolate
Ingredients: 1 ½ cups milk ⅓ cup Nutella 1 cinnamon stick 120ml bourbon, Frangelico, cacao rum or chocolate liqueur Whipped cream or marshmallows
Method: In a pot over medium-high heat, bring the milk to a simmer. Add the Nutella, stirring until it has melted and become incorporated. Add the cinnamon stick and bring to a simmer.
Divide the bourbon between two mugs, if using (60ml per mug). Ladle the hot milk mixture into the mugs and serve with fresh whipped cream or marshmallows.
TOP TIP If you’re serving your spiked Nutella hot chocolate with marshmallows, toast them on a foil-lined baking sheet under the broiler for 30 to 45 seconds, until golden.

Since starting her food blog 12 years ago, Naqiyah Mayat has stacked up more than 30,000 Instagram followers, started her own lifestyle brand and just released her very first cookbook, The Beginning: Indian Recipes from my Home. We caught up with this powerhouse to find out more about her book, being a mum and what’s next.

hat inspired your love of food? My relationship and connection with my husband, Mohamed is largely centered around food and it helps us to communicate in so many ways. Mohamed and I retreat to bed every evening with a quiet moment and a cup of masala tea. While our marriage has resulted in some incredible food, it’s also produced four very curious children, all with a voracious appetite for life. Tell us what made you release your debut cookbook. For me, food has a magical way of connecting and unifying us. It’s the invisible thread that connects us all. From the start, I wanted to publish a book that harnessed the power of my food memories – from growing up to the new discoveries I made when I got married and the shared experiences I had from cooking for my children. I wanted to develop a book to give an honest and easy approach to cooking and to reinvent familial cooking, where the past serves as an inspiration rather than a set of rules.
h a y i q Na yat a M Do you have a favourite chapter in the book? Probably chapter two, because not all spices are the same! The spice chapter shows you how it all comes down to the variety of spices and quality of ingredients that are used. You’ll have a good understanding of spices after reading this chapter.
What else do you love to cook? I love creating showstopping desserts for my guests. For me, a showstopper doesn’t necessarily need to be something elaborate – a memorable dish can be created with a few ingredients and minimal prep. I recently recreated a traditional ‘sweetmeat’ as a panna cotta and topped it with Turkish candy floss. It was a great way to elevate ordinary flavours. Tell us about your favourite ingredients to work with. The staples you’ll always find in my home are ground garlic, ground ginger and red ginger and garlic masala in my fridge, a pack of Woolworths puff pastry in my freezer and a tin of broad beans in my pantry. Together, these can make a meal. Other than cooking, what are your passions? I’m passionate about creating content for my Instagram account and looking at creative ways to market myself. I also love fashion and enjoy finding items that define my personal style. Anything people would be surprised to know about you?
I think people would be surprised to know that I used to think that I’d be a fashion designer, doctor or a pilot. But now (look, Mum!) I’m all three – just fulfilling each in different ways. Share your favourite dishes in Joburg. I frequent a few places in Joburg and rarely deviate from what I order when I go there. A standout for me is something as simple as a Citrus Sunrise breakfast pot from Tashas – I even order it for dinner sometimes! I also love the butter chicken at Alhamra Restaurant in Mayfair for lunch, the prawn tagliatelle at Saint in Sandton for dinner and the ice cream nut cake at Pigalle for dessert. You’re a mum of four – have you ever had to deal with fussy eaters? I often get asked on social media how my kids aren’t fussy eaters, and the answer is that I’ve groomed them from a young age to try every food and learn to have an appreciation for it. I’ve never followed a ‘prescribed’ children’s diet and introduced foods to my kids that weren’t typically child friendly. Also, I never limited them to the kids’ menu at restaurants, so they’ve been eating salmon and shellfish from a young age and even eat oysters now (which I wouldn’t typically order for myself !). What’s next for you and your career? The story is set in 1940s New York and follows 19-year-old Vivian, a seamstress who winds up working at a charming, yet slightly disreputable theatre. This novel tastefully explores themes of female sexuality and promiscuity and in true, Elizabeth Gilbert style, love. It’s told from the perspective of an older Vivian reflecting on her youth and the decisions which would alter her path in life forever. It’s an easy read that’s bound to enthral!

Girl with a Pearl Earring This 2003 drama delves into the life of Dutch painter, Johannes Vermeer during the time he painted the famous portrait, Girl with a Pearl Earring. The film is based on the novel of the same name by Tracy Chevalier and exercises a lot of artistic licence, considering very little is known about who actually inspired this painting. However, it’s thought that the portrait is one of the servants who worked in Vermeer’s house. The film is a fantastic watch for those who are fans of period dramas.
Loving Vincent Loving Vincent is the world’s very first fully painted feature film, meaning each and every shot in this animated film was hand painted. It took 65,000 frames and six years in total to make! It chronicles the journey of a young man called Armand who’s forced by his father to travel to the hometown of Vincent van Gogh to deliver the artist’s final letter to his brother. Armand becomes interested in the controversial artist and ends up looking into how Vincent spent his final days. Although there are many biopics about this famous painter, Loving Vincent is a refreshing watch. Mr Turner This film follows the life of JMW Turner – an English romantic painter, printmaker and watercolourist who’s known for his stunning and dramatic landscapes. The titular character is played by Timothy Spall, who does any amazing job of portraying the eccentric artist. The movie explores the inspiration behind the artist’s famous works like Fisherman at Sea, Three Seascapes and Chichester Canal as well as spotlig

Frida As the name suggests, the 2002 film Frida depicts the life of surrealist artist, Frida Kahlo. The plot centres around Frida’s personal life and career, starting with her teenage years and the famous accident which left her with a lifetime of painful injuries. These injuries are what inspired Frida’s art and her famous self-portraits. The film also details Frida’s personal relationship with her husband, Diego Rivera as well as her many extra-marital affairs. The character of Frida is played by Salma Hayek and it’s considered one of her best performances to date – we couldn’t agree more!

Can these products be integrated into your existing skincare routine? It can definitely be integrated with one rule: Don’t layer different product ranges. For example, you can use a 365 SKIN WORKOUT cleanser and another brand’s moisturiser, but don’t apply a serum from one brand under a moisturiser of another brand as no one is sure if the delivery systems and/or ingredients used may clash. Tell us about your favourite product in the range. My favourite product by far is the Retinol Refirm. I’m 40 years old and often get asked; “You look so young – what’s your secret?” There are only two ingredients that we know of that can to a certain extent reverse and prevent ageing, being retinol and peptides. The Retinol Refirm is the only retinol-based product that I can use daily without the common ‘retinol response’ of dryness, sensitisation and skin thinning. This is made possible with the unique U-complex delivery system and hydrolysed wheat protein. Not only does it slow down the ageing clock, it also has an instant firming effect! Which product would you recommend new customers try first? I always recommend starting with the Multicleanse. Think of your skin as a house: If the foundation is not strong, the house will crumble. The same happens with the skin. So many consumers opt for a cheaper cleanser option like soap and spend money on their moisturisers instead. Your moisturiser loses up to 60% of its efficacy and product
penetration ability if the correct cleanser isn’t used to prepare the skin and remove toxins from the cells to ensure space for the moisturiser ingredients to penetrate. Which top three products would you recommend for winter? Winter is when the skin needs the most comfort and protection against moisture loss as a results of barrier damage due to heaters and so on. For that reason, my favourites are the Exfo Gel to rid the skin of dead skin cells, the Instant Hydrating Mask to repair the skin barrier and lock in moisture as well as the Skin Hydrating Serum to soothe, calm and hydrate the skin both superficially and in depth whilst adding anti-itch and anti-redness benefits. Is it still necessary to apply an SPF in the colder months? Definitely! The sun doesn’t lose its damaging power in winter even though it feels colder. A top tip to remember is that blue light is the new sun damage. We’re exposed to this between eight and 10 hours per day in the form of mobile phones and laptops. The SPF 30 protects against the sun, blue light, infrared, indoor lighting and pollution. How often would you recommend masking in winter? The Instant Hydrating Mask will give you an instant surge of moisture and comfort and can be used as often as you feel your skin needs rescuing, but two to three times per week is normally sufficient. Remember that it only takes three minutes versus the typical mask that needs 10 to 15 minutes to do its job.
