After sitting down at Melrose Arch’s Churchills Bar with four of the Lions rugby team's most prominent players, Carly Ritz is seeing high-performance athletes in a completely new light

I don’t know the game so I can’t tell. But was it really? I have a front-row seat to ask anything, so here goes – are those really the moments they write home about? What they really write home about For hooker Robbie, that stand-out career moment dates back long before his professional time on the field. It was what came before that really set the tone. “One of my earliest and best memories is that of me and my brother, Dewald, playing rugby together for the first time. I was 10 years old and he was 13. (Dewald went on to play for the Leopards.) I just knew then that this was what I wanted to do.”

Lifting up the cup was an amazing feeling.” Next up is fast-talking fly-half Elton, who doesn’t blink when asked about this defining rugby moment to date, and even knows why. “It was when I played my first test for the Springboks. It was the first time that I wore the green and gold jersey against the Barbarians. It was a hard game and we lost the game. I remember it well. It had been raining and snowing so conditions were tough, but it was amazing to play my first game for the Springboks at Twickenham.” What was even more amazing was that Elton’s parents had surprised him and come to watch. “My father

waiter is holding. Snap a pic of your bill, the phone scans it in and you’re paid up. Easy! Save the environment (and some money) The price of electricity is set to hike up even more in 2016… which is why Big Brother alumni Irvan Damon was smart to jump on the Internet of Things when he did. Irvan heads up CarbonTRACK – a company that installs a device in your home that measures your electricity consumption. The device is able to monitor your consumption and then also allow you to remotely control what is pulling power. The device in your house speaks to an app on your phone. You are able to switch off items, like pool pumps, that are eating up electricity and also keep an eye on the power during peak periods. While you save money (and electricity) you also save the environment by decreasing your carbon footprint. Everyone wins!

From root to recipe, Chef Paulo Santo is at the helm of Gemelli Restaurant’s kitchen – and for good reason

aulo Santo is the head chef at Italian restaurant Gemelli in Bryanston, which he founded together with Alessandro Mosupi Khojane. Gemelli is a mutual dream realised by the two men, who saw the need for a contemporary Italian restaurant in Joburg – where the food could transport its diners to an authentic, warm Italian kitchen… think somewhere in the middle of Roma. Chef Paulo’s sojourn into the culinary forest started with childhood traditions that included sowing seeds, harvesting and tending to the family vegetable garden. What were once tedious chores for Chef Paulo – like the juicing, preserving and jamming of the fresh fruits on their farm – are now the nostalgic memories of a chef whose palate was developed at a young age. “My father moved to South Africa in the 1950s and worked as an agricultural farmer for many years. Fresh produce retail was a natural progression, and I was always exposed to the fruits of the land.”

Chef Paulo then took a page out of his mother’s cooking book. “She displayed an exceptional ability in the domestic kitchen. My love for baking came from her, and the breads she produced using live, wet yeasts and a particular milled flour she secretly sourced will forever be missed.” As in tune as he is with his palate and sense of taste, Chef Paulo deeply appreciates the sense of hearing as well. With a passion and appreciation for music, sound engineering and music production was Chef Paulo’s chosen career path after school. Sadly, a hearing impairment from birth meant that he could not achieve this dream. Ultimately, his love for and uncanny natural ability in the kitchen led him to Cape Town, where he pursued hospitality studies. Chef Paulo completed his City & Guilds diploma at the Capsicum Culinary Studio in Cape Town. “I strongly believe that cooking schools are a mere platform to professional kitchens. You will learn

more in a week in a commercial restaurant kitchen than you will in two years of culinary studies. Fact. Ultimately, I believe that all chefs are both selftaught and mentored through their careers.” Of course, the menu has deep roots in classic Italian flavours, which are given a fresh feel through the use of modern cooking techniques, clever combinations of colour, texture and plating style, as well as Asian influences where applicable. This provides for a contemporary take on familiar concepts, and a somewhat unique flavour profile and style. Everyone wants to know a chef ’s signature dish, but as Chef Paulo points out, they come and go. The menu at Gemelli changes twice a year, during spring/summer and autumn/winter. “I naturally gravitate to the homely, comfort foods of the colder months, so risotto and hearty, high-quality pastas are always a favourite,” says Chef Paulo. The magical combination of Arborio rice, chicken stock, porcini, parmesan, butter and truffle makes me weak every time though, so I truly love cooking risotto.” So what’s it like working in a hot kitchen? It’s clear that Chef Paulo loves what he does. “The produce, above all else, makes me fall in love with cooking over and over again. The camaraderie among my team of chefs and cooks is like family to me, and the act of nourishing people with my labours and creativity remains eternally gratifying.” But he has some valid observations about the industry as well. And that with so much potential and talent floating across local kitchens there is room for more cohesion between chefs in South Africa. “We all seem to know each other, but very few of us make the time to collaborate and share in our knowledge, the way it’s done around the world. Time spent in South America made this quite clear to me, and I truly hope I can change this for the good going forward. Producers and suppliers that pull the wool over the eyes of young, inexperienced cooks and restaurateurs with inferior product and advice is also a pet hate of mine.”

And besides Gemelli, where does Chef Paulo suggest for a bite to eat? “Easily, Cube Tasting Kitchen in Parktown North. Their philosophy and approach is beyond the grasp of many in the game. So what are the big food trends at the moment? Of course these vary by their nature and come and go, but here are some insights into what’s happening in some of Jozi’s cooler kitchens: Sharing plates and smaller, tapas styled dishes are a huge trend at the moment. Europeans have always eaten this way, so it’s just a coming of age in South Africa. An awareness towards a healthier lifestyle and diet is evident too, and we’re finally starting to enjoy and creatively explore the abundance of beautiful fresh produce in our country. Banting is alive and well, so chefs really need to be on their game to keep dishes interesting. People are seeking substance and value on a night out. A meal needs to be well thought through, creative, edgy, and the produce of a high quality. Patrons are willing to spend, as long as their meal provides a little more than just tick the box of some supper for the night.

That’s why I absolutely looove these broccoli bites. This recipe makes eating broccoli an absolute pleasure while providing you with plenty of antioxidants, vitamins and minerals. Broccoli is also brilliant for fighting inflammation. You can enjoy these on their own as a main meal, as an accompaniment to your favourite protein – or even as a veggie patty if you feel a burger craving coming on. Enjoy!

Broccoli Bites with Tomato-Avo Salsa Prep time 20 minutes | Serves 4 Ingredients For the Broccoli Bites 1 broccoli head, cut into pieces ½ cup sunflower seeds 2 eggs, lightly beaten 1 tsp dried oregano 1 tsp dried mint ½ cup almond flour 2 tsp raw honey/xylitol ¼ tsp cayenne pepper ½ tsp pink crystal salt 1 Tbsp coconut oil For the Tomato-Avo Salsa 2 large tomatoes, cut into chunks ¼ red onion, chopped 2 avocados, skins and pips removed 1 Tbsp extra virgin olive oil 2 Tbsp tahini 1 tsp crushed garlic 1 Tbsp fresh lemon juice 2 tsp za’atar (Middle Eastern spice) pink crystal salt, to taste

Method 1 Place broccoli pieces into food processor and blend until fine. You may need to do a few loads, depending on the size of your food processor. Be careful not to overfill – rather do several small loads. 2 Add remaining ingredients to finely processed broccoli and blend for 2–3 minutes, until all ingredients are thoroughly combined. 3 In a large frying pan, melt enough coconut oil on high heat to cover pan entirely, to prevent sticking. Reduce to

medium heat and add spoonfuls of the mixture to the pan. You can make between 3–4 bites at a time, depending on the size of your frying pan. Be sure to spread each spoonful evenly across the pan. Fry on each side for about 4 minutes, until golden brown. Use a spatula to flip each Broccoli Bite. Once cooked, set aside. 4 To prepare the Tomato-Avo Salsa, place all ingredients into food processor and blend thoroughly for 1–2 minutes, until thick salsa forms. Remove from blender and add to serving dish. H

5 Relationship myths

When it comes to depicting relationships, fairytales and romcoms can be misleading. Watch out for these common fallacies

Myth 1 When you find your soulmate, you’ll feel complete Although your partner will partly contribute to your fulfillment in life, being whole as yourself is wise and more realistic. Myth 2 The right relationship lasts forever There are no guarantees in relationships, just probabilities based on how well you communicate what you’d love in terms of what they’d love. The more value you offer, the more probable your relationship’s longevity. Myth 3 A good relationship requires sacrifice When one partner sacrifices for the other, they both store their perceptions of the imbalance in a memory until the slate is rebalanced. Equity is what sustains relationships. Myth 4 Children complete a marriage This is as unlikely as assuming that partners complete each other. Children can be both pain and pleasure, frustrating and fulfilling. If you don’t have genetic children, people at work or in your family or social life emerge to become your surrogate children. An insider’s tips for breaking into Joburg’s social scene

She says, with a bit of polishing up, we can all be irresistible (even us non-socialites). Seeing as she’s made a name for herself – in six different countries – and has just written a book on personal branding, From Z to A-lister, we’re taking note of every tip she shares. Here’s what every social climber needs to know. Style yourself striking “Getting noticed on the social scene isn’t about looking like a supermodel; it’s about how unique you look,” says Jen. She suggests finding a statement accessory you’ll be remembered for – like her flamboyant hats. Another tip is to create a signature pose for photos. Experiment in front of the mirror or in selfies to discover which expressions and angles flatter your face and body – the classic arm-slimming hand-on-waist trick, for example. Then when cameras start flashing, it’s time for your go-to pose. Jen says you should also consider what you look like from all sides. And mind your nonverbal behaviour. To get an idea of how others see you, ask a friend to film you on their cellphone when you’re out and about but don’t realise anyone’s watching. Rub all the right shoulders It’s important to be strategic about who you approach at parties. Start by greeting and thanking the person who invited you, says Jen, then chat with the party planner and any spokespeople – and don’t overlook the photographer (always make friends with the paparazzi!).

And do your research before attending the more formal parties so you don’t stumble over your words when asked to comment on something. Boost your influence Social media makes networking easier. “You meet someone, take a selfie with them, ask for their social media handles, upload the pic, tag them, and you’re connected,” says Jen. You’ll find opportunities in the most unexpected places, so always be prepared, smartphone in hand. How does Jen look so good in every social snap? She uses a photo-editing app (Facetune is her favourite) to quickly tweak pics before uploading them to social media. Warning: think before you tweet. Though it might give you fleeting (negative) attention, a needlessly controversial tweet can destroy your personal brand in a flash. H

he country is, without a doubt, one of the finest diving destinations in the world, with unspoilt coral reefs and an abundance of marine life, including hundreds of species of fish, as well as dolphins, humpback whales, moray eels and turtles. Audi’s dauntless Q7

Audi’s second-generation Q7 is a revolution in engineering. It’s also a remarkably different car from the original Q7 it replaces – it’s lighter (up to 325kgs), looks completely different, uses FlexRay optical fibre and offers a host of technologies, elevating it to a new league of progression. Sold with the payoff line “Dauntless”, the new Q7 has been engineered to drive off most of its competition. Audi are brave in opting for the Q7’s styling. The new design is clean and bold but somewhat plain compared to the car it replaces. The Q7 is arguably the least attractive model in its family line-up. Looks aside – and thank goodness for subjective thinking regarding the topic, as some will love its styling – the Q7 is so much more than just a seven-seater SUV. It offers the most spacious interior in the premium SUV segment yet it’s more compact than the first Q7. It’s decked out with technology that can be felt and seen by its driver and passengers – like its optional full LED headlights and Matrix LED headlights. Both engines are mated to a sublime 8-speed ZF automatic gearbox. Pricing for the Q7 begins at R827 000 for the 2.0T FSI and R924 000 for the diesel. Both come standard with the 5-year/100 000km Audi Freeway Plan, available to extend to 6 years/200 000km.


XJ Jaguar – ageing gracefully Jaguars aren’t traditionally big. Rather, they’re compact, lean and athletic specimens. The felines, that is. The motor vehicle variety, on the other hand, is well known for being large and luxurious. Britain’s upper crust, the lofty crowd who aren’t haughty enough to drive a Rolls, yet enjoy a large automotive status symbol made in their home country, have chosen the Jaguar XJ ever since its launch in 1968. The current XJ, now in its fourth guise, was introduced in 2009. The highly unique sedan – which breaks from the previous generations’ “classical” looks – is in keeping with Ian Callum’s new design direction, which was first witnessed on the XF. Bigger and

measurably better than its predecessor, the current generation is clearly designed to create an aggressive impression. The most striking aspects are the slimmer lights and a larger, squarer grille, which follow through to the swooping taillights, nicknamed “cat’s claws”, as well as the black roof panels on each side of the rear screen, which aim to hide the XJ’s width. The range is driven by three petrol units: 2.0l, 3.0l and 5.0l turbo and supercharged power plants, all with varying power outputs, and one diesel unit, a 3.0 turbo. Each engine is paired with a sublime 8-speed automatic gearbox, a XF unit that’s used by many other manufactures due to its superiority.

Comparable to the Mercedes-Benz S-Class, which is arguably the benchmark leader in its class, the XJ is well cushioned and supple, yet still dynamic and sporty. The XJ enjoys being driven. Although it’s all about its passengers and their comfort. Considering its size, the XJ is an excellent choice for being chauffeured in, especially the long wheel base L version. Is this the best car in the large luxury sedan class? No. Though it’s debatably the best looking. Comfort-wise, its ride is its shining glory, but from a technological and innovative perspective, it’s surpassed by its German rivals. Being seven years old this year, the XJ’s getting on in years – but it’s aged gorgeously.

The interior is pure unadulterated luxury – soft-touch leather, chromo and piano black plastics are used plentifully. X marks the spot for Toyota’s Aygo Like an exotic but appetising Asian-French-fusion starter, the Aygo is the result of Toyota’s collaboration with French automotive company PSG (Peugeot, Citroën and DS). This tiny but tasty entrée has been introduced into the car market’s growing micro-mini segment. This type of car is aimed at both firsttime and last-time buyers.

The Aygo looks like a coupé, yet it’s a four-door hatch. But don’t let its small size put you off – a concerted effort has been made to maximise the interior space. Designed to seat four average-sized adults in reasonable comfort, it’s perfect for work and social commutes. The Aygo’s cheeky interior will appeal to the young at heart. It’s fresh, cute and playful, featuring two-tone seats, an on-board infotainment system and a pretty decent sound system. The Aygo is driven by a 1.0l engine. As part of its fuel-saving credentials, the engine features three cylinders. The result? It’s light at the fuel pumps and sounds like a mini Porsche. Perhaps the acoustic reference is a tad playful, but it does emit a cute burble when pushed. I’m afraid it isn’t going to win any robotto-robot shootouts like a Porsche would, however – not unless you challenge your half-asleep gran in her 2001 Daihatsu Charade. In the Aygo’s defence, it wasn’t designed for that purpose. What it was designed for, it does well. The Aygo is priced to go at R140 000. As part of the package is a 3-year/100 000km warranty and a 5-year/90 000km service plan. The new models are also supported by ToyotaCare roadside assistance. The south african flag

T

he South African national flag was first flown in April 1994, after the first free election in South Africa. It is designed by Frederick G Brownell and is the only flag in the world with six colours. The flag means different things to different people. According to the flag’s designer, the red symbolizes the blood that was shed during the various wars and conflicts in the country. It is also suggested that the blue represents the sky and the two oceans that flank the country. The green symbolises the farms and the rich, natural environment of the country, while the yellow represents the natural resources, particularly gold. ver since her 2014 colab with DJ Black Coffee, singer/songwriter Cara Frew’s had our attention. Now that her latest single, “Falling”, is climbing the charts, we’re really taking notice. And she’s only getting started. With her first full album, new music videos and tons of live performances on the way this year, this 24-year-old firecracker is one to watch. We hung out with Cara on Sandton City’s rooftop, admiring one of Jozi’s finest sunsets and chatting about her loves, beauty routine and jumping on stage with a house music legend… You love Joburg because… It’s our amazing sunsets. Also the people. We’re all generally friendly, as well as driven and determined. I grew up in Jozi and my family is here, so it’s a special place to me.

From Idols to sharing the stage with DJ Black Coffee – your career highlight so far? Definitely my Black Coffee collaboration. He’s just such an inspiration to me and he continues to support me. Whenever we’re performing together (anywhere in the world) he lets me jump on stage with him. He was also the first person to hear my single “Falling”. I initially felt unsure about the track as it was so different from anything I’d done before, so I asked what he thought of it. He said, “I love it, Car.” And that was it; now I love it too. Your sound has evolved over the years. What can we expect from you in 2016? I’m quite a diverse artist. There’s my tropical house sound coming through but I’ve also got an acoustic side to me – this year I want to bring these styles together. So at the moment I’m working on my first full album with a composer called Andre Scheepers. He’s also worked with ChianoSky and Jesse Clegg. He’ll be guiding
