PLATINUM JUKEBOX 10 Decades of Song & Dance

Platinum Jukebox is a journey of music, song and dance starting with the gramophone in the 1920s and ending with the iPod in the 21st Century. We start the journey in the 1920s, when music from Louis Armstrong and Fred Astaire were the platinum hit songs of the week. In the 1930s and 1940s, both the LP 331⁄3 rpm record and the 45 rpm single records were invented in an era of peace, depression and then war. In the 1960s and 1970s we saw the mass production of stereo albums, and turntables became affordable. Soon the world was doing The Twist, The Loco-Motion and The Funky Chicken to songs like Let’s Twist Again, Shout, These Boots were Made for Walkin’, I’m a Believer and Proud Mary. In the 1980s - cassette tapes and compact discs were the music format, along with dancing styles such as The Moonwalk, Breakdancing, Latin American Dancing to massive selling icons such as Michael Jackson and bands such as Frankie Goes to Hollywood and Miami Sound Machine. In the 1990s we encountered The Macerena and Line Dancing to everything from Cotton Eyed Joe, Achy Breaky Heart to Shania Twain’s – Man! I Feel Like a Woman! - while the compact disc remained the flavour of the day. In the 21st century the iPod has become the flavour of the day with downloading taking the place of compact discs. ack in the day the greatest inventions usually happened haphazardly. Take Lindt for example, which made its’ first barrel of smooth and creamy chocolate when an employee forgot to turn off the antique machine for an entire weekend in 1845. The Philly Cheesesteak Company’s story isn’t much different… It all began in the 1930’s as an Italian-American named Pat Olivieri ran out of frankfurters at his hotdog stand in South Philadelphia. Instead of closing up shop, the determined immigrant chopped up German sausage with thinly sliced pieces of beef and melted cheese. Pat then lathered this appetizing concoction on top of an Italian bread roll and his entire business model changed! Fast-forward to 2012 where brothers, Bruno and Ivan Persic learned of Pat’s story and instantly found themselves inspired. Craving the taste sensation and amalgamation of cheese and beef,

T

It felt like we were indulging in a home cooked meal, warm and familiar, the food is delicious. This is modest cuisine done extremely well. Rosebank Art and Craft Market Experience the energy of Africa under one roof V isiting local markets is always a fantastic idea for the summer season. Fortunately the Rosebank Craft Market is open seven days a week from 9am to 6pm, which means more time to shop, more time to be entertained and more time to experience and indulge ourselves in Africa’s rich tradition of arts and crafts. Promoting South Africa and all its cultures, the Rosebank Market is an extravaganza with every colour imaginable on display and energy so full of life and vitality. Being Joburg’s original craft market, this market offers a variety of tastes and flavours. It was a difficult task but we chose three of our favourite stalls and chatted to the owners and businessmen and women behind the artistries. Husein Ndoy from Senegal was our first stopover. All his crafts come from the picturesque country of Senegal. With an estimated population of about thirteen million it is no wonder talent lurks amongst them. Husein’s stall has striking traditional drums from Ghana and Senegal and he has worked in the market for over ten years. His passion and commitment to his

craft is evident as he shows us his most prized possession, a beautiful bronze mask valued at R18 000. He says (with s smile) the market has been an integral part of his life here in South Africa. Sisa Thsithole from Zimbabwe was our second pit stop. She has worked in the market for an impressive nineteen years and she says each and every day, there is a new surprise and a fresh delight. Sisa is proud of her crafted pieces and says her most favorite pieces are her specialised, mukwa wooden hand crafted giraffes. She is extremely proud of her Mahogany chess sets and she says she loves creating and showcasing her tradition and customs within her sculptures and artworks. Mary Wangui from Kenya was our final stop. Mary has ornaments and décor made of beads, leather, colourful fabrics and clay. She breathes life into her work and shows us her magnificent embroidered cloths from Kenya and tribal Masai necklaces and says this is all apart of her culture and her tradition, one, which she honors. Well it’s the ‘no place like home’ adage – Ayere explains that living

A food Olympian - Chef Trevor Boyd

B

eing the youngest of four brothers might have meant that he never got to tag along when the big boys were out having fun, but it did mean Trevor Boyd got to spend an inordinate amount of time with his mother in the kitchen. Feeding four growing boys is certainly no let’s see what’s in the cupboard and hope for the best, kind of an approach. Trevor got to see first-hand, the love and energy required to truly feed people – and feed them well. And he has been doing that ever since. Enthralled by his mother’s kitchen antics, Chef Trevor loved her food and would watch closely and with awe as she took raw ingredients and worked with them to create a hearty meal for the family.

In July this year Trevor was appointed as the new Executive Chef of The Michelangelo Hotel. Few places in Johannesburg have stood the test of time like the Piccolo Mondo restaurant at the Michelangelo Hotel, which overlooks the ever cosmopolitan Nelson Mandela Square. An icon itself in the Sandton city metropolis, the restaurant has that old school Italian Renaissance combined with classical elegance that keeps the loyal customers coming back and entices the tourists from the moment they step off the Gautrain and into the Sandton vicinity. While the restaurant’s foundation stands solid, the menu changes with the times, the seasons and the trends keeping it’s offering modern and current. Having wanted to work at the Michelangelo for many years, Trevor is excited to be at the helm of this prestigious kitchen. “I started cooking straight after school. I knew I wanted to be a chef, so I decided to be a chef in the army so that I would do something that would later on benefit me in the beginning of my career.”

Trevor was a member of the South African National Culinary team of South Africa for 10 years. He calls those years some of the best and worst of his life. “I always took part in team sports and when I heard about Team SA I made sure not to miss the trials. I was fortunate to work with some great chefs along the way and made countless friends both locally and internationally. It may sound like a cliché that there is too much to talk about, but the reality is that so much happened I would not know where to start.” And boy are there memories to share like competing in two Culinary Olympics in Erfurt Germany and winning a Gold Medal in 2008 and the Restaurant of Nations category. “I would never be able to described the feeling effectively enough. Pride, joy and excitement are just a few words I can use to describe the feeling. Being associated with the caliber of chefs locally and internationally was priceless to my own personal development.” As with any career, there are always the highs and the lows. Chef Trevor is addicted to the people value. “I love the fact that I can be part of making a fantastic experience and memory for someone.

The part my kitchen plays is key to the experience and I take pride in contributing positively. But what infuriates him is working with people who work for a salary and not for the privilege to further their careers within the chef world. And how does one handle rude patrons? We take Trevor’s insights pretty seriously considering his experience so take notes… “You just need to hear what they have to say, calm them by making sure they understand you are taking their remarks and comments seriously. Confidence in your own ability and product will always help to defuse a heated situation. Listen, empathise and act. Advise for wanna be chefs: Understand that the kitchen is not all about TV shows and designer recipe books. Align yourself to a mentor that you trust and do everything that is asked of you by your mentor. The industry is very tough and social life is almost nonexistent. Now that’s the most honest advice if you ask us. Use it! H

he third Hello Recommends evening went off with a bang. Literally. The very first Jozi spring storm hit and all our foodie favorites were elated with excitement and enthusiasm. The evening took place on September 3rd at the Il Giardino Restaurant. Not under the olive trees but in The Room where it is hard not to feel touched by the legacy of love and romance. In pristine perfection, this space is elegant, charming and picture perfect. Engulfed in a glass room with long running tables, showered with roses and candles, it was sure to be a night to remember.

Our fifteen favorite foodies were welcomed with silver Patron and Appletizer drinks, which certainly got the evening started! We were then all indulged with a Mont Du Toit wine education and wine tasting. Wine farming is a du Toit tradition, and members of the family have been wine farming for more than three hundred years in the Cape. The French Huguenot founder of the family established a farm near what is now Wellington in 1691, then a wild, untamed land abounding in game, and planted the first vines in the area. Filled with balance, fruit and elegance the wines were showcased in a beautiful fashion whilst guests admired the stunning surroundings at 44 Stanley.

The purpose of the evening was to once again showcase the newly launched GoHello app. Revolutionary in its field and constantly evolving with our city and its people, the app showcases the very best restaurants, hotels and leisure activities in Jozi.

Time to feast! All our guests were wowed by the selection of foods from the set menu. A delightful focaccia bread was served, fresh and crispy, accompanied with a gorgeous parmesan and avocado salad drizzled with a balsamic reduction. This was then followed

with a spaghetti pasta including anchovies and parmesan shavings. Moreish. For main the guests indulged in a delightful lamb chop and dessert was a big spoil: decadent chocolate brownies. YUM! Stuttafords Sandton also exuberantly spoiled guests with two winners of a male Paco Rabanne and female Carolina Herrera fragrances. HELLO spoils! So what are you waiting for? With Spring upon us, I know just how many of you are concerned about getting beach-body ready. And that really doesn’t have to mean restrictive diets and bland foods. It can be as simple as swapping up the unhealthy stuff for wholesome ingredients that taste just as good (if not better) than the real thing. This super yummy choc-coconut mousse is high in protein, sugar-free, banting friendly and completely delicious! This is an ideal treat to satisfy your sweet tooth when you feel a craving coming along. I absolutely love this dessert – it is so easy to make and contains clean, healthy, wholesome ingredients. When I develop my recipes, I always think about how the final product is going to nourish the body. This choc-coconut mousse is rich in healthy fats which keeps blood sugar levels nice and stable, promotes glowing skin and leaves you feeling completely satisfied.

Prep Time: 10mins | Serves: 4 people

Ingredients

400 ml can coconut cream (preferably organic) ½

Each of us has a unique hierarchy of values that determine how we perceive the world, make decisions and act upon them. This set of values also decides our individual destiny. Each of our unique set of values emerges from whatever we perceive to be most missing in our lives at any moment in time. These perceived voids thus determine our values and these evolve through time. Every decision we make is based upon what we imagine at any particular moment will provide us with the greatest advantages over disadvantages and greatest rewards over risks. When we continually set goals that align with our top three highest values, we increase the probability of living an inspiring, meaningful and fulfilling life. Set goals aligned with your values Determine your true highest values. (This can be done through completing the Demartini Value Determination Process found on my website - https://drdemartini.com/value_ determination). This process will help you identify your top three highest values. Now start prioritising your daily actions: fulfill those high priority actions and delegate all lower priority actions to others. If you don’t fill your day with high priority actions that inspire you, it will be filled with low priority distractive actions that don’t.

Anytime you set goals that are not aligned with your true highest values, you decrease the probability of having a fulfilling life and end up experiencing what I call ‘the self-depreciating ABCD’s of negativity’ – internally directed anger and aggression, blame and feelings of betrayal, criticism and challenge and despair and depression. Determine what is important Over time, our lives demonstrate our true highest values. Each of our daily decisions is based upon these values. No one can indefinitely act or live outside their true highest values without repercussions. Although a number of people subordinate to other authorities to some degree and thus become clouded about what is truly most important to them, and may even attempt to live according to other’s values, they cannot sustain such actions, nor can they repress their own nature. Prioritise your life

Fill your days with what truly inspires you most. Also, caringly help others fulfill what is most important to their highest values. Document every experience, action or event that you can be grateful for each day. Gratitude is the key that opens the gateway of the heart. The heart is then filled with love which, when released, results in enthusiasm and inspiration. Mastery of oneself is an ongoing project. Discovering the true magnificence and unique talents we all have is golden. Gradually awakening to the fuller realisation that nothing is actually ever missing or void within us is even more priceless.

It is through transcending each of these transient illusions that this great realisation is gradually awakened. So along our journey of awakening, setting goals that are true, real, balanced and in alignment with our true highest values and then living authentically according to them will awaken our calling and inspiration from within which is our greatest wisdom expressed through love. It is therefore wise to fill each day with our highest priority actions and delegate anything less – like a tree that is growing toward enlightenment. By liberating ourselves from anything less than what is truly most important in our lives, we can then live our most inspired life. This requires that we fill our days with inspired actions that open our hearts and serve ourselves and an ever-greater number of others. GETTING RIGHT TO THE POINT The long and short of microneedling

C

ommonly referred to as a “Vampire Facial”, microneedling or collagen induction therapy (CIT), is a minimally invasive skin-rejuvenation procedure that involves the use of a device that contains fine needles that are used to puncture the skin to create a controlled skin injury. This stimulates the production of new collagen & elastin as a defense mechanism and stimulates the blood supply, thus plumping and refining the skin. At the same time, highly potent serums containing active ingredients are absorbed into these tiny micro channels, utilizing the increased absorption. Microneedling can break down scar tissue and areas or pigmentation, create even texture and stimulate blood supply, thus increasing circulation.

If you have burn scarring or hypertrophic scarring, scarring from previous surgeries or acne, then microneedling could be a hugely beneficial treatment for you. Microneeding can also treat fine lines and wrinkles, creating a fresher, younger appearance. What can I expect from this treatment? Before you run away screaming you should know that a numbing ointment will be applied to the entire treatment area to ensure minimal discomfort. Once anaesthetized, a highly-trained therapist will lightly glide the micro needling hand piece over the skin. During this time there may be some bleeding but this will subside once the treatment has been completed. Immediately afterwards your skin will be red, sensitive, hot and swollen. You may experience bruising around the eyes but this is perfectly normal. ISunblock is applied directly after the procedure and the patient should apply religiously following the procedure and try to avoid direct sunlight as the skin is exposed and thus more sensitive. During the healing process you may experience swelling, itching, tightness, peeling scabbing and in some cases, darkening of the skin (this will lighten as the skin sheds). This is only for a short while and as the new skin surfaces, it is fresh and rejuvenated. While it may sound frightening, microneedling is a fantastic way to achieve beautiful, revitalized skin and is a fraction of the cost of invasive laser and surgical procedures. H

African Futures Festival Coming This October!

The events feature literature, fine arts, performance, music, film and various digital formats. After giving birth to her second daughter Zaya-Rose in November 2013, the multi-skilled artist has not let the grass grow under her feet. She impressed SA audiences with her role on Strictly Come Dancing Season 7 and is hard at work on her new singles, which will be released during the course of 2015. But that wouldn’t be a surprise for a talent such as LeAnne, who has graced stages across the world and worked with some of the biggest artists on the planet on her way to becoming a headline act herself. HELLO JOBURG Magazine had the honor of sitting down with LeAnne to find out a little more about this true Joburger: HJ: You love Joburg because… LD: Of its diversity and vibrancy! It’s an electric city filled with so many hopes and dreams, what’s not to love! HJ: Your new single just dropped! Tell us all the deets! LD: My new single is called “No Sweat”. It was produced and recorded in LA with producer AV from The Natives and he also happens to be the rapper on the track. It’s a fun and playful take on being confident about getting your ex back whenever you want, even though you don’t want him back… But just letting him now. HJ: Who would be a dream to have up on stage with you? LD: Beyonce and Destiny’s Child! I have been a fan since day 1! HJ: Do you still get nervous? LD: All the time. I’ve heard that when you no longer get nervous you’ve lost your passion for whatever it is that you do. I hope I never do. HJ: If you had to choose three people to have dinner with dead or alive, who would they be? LD: My dad, my mom and my brother. My dad passed away tragically in a car accident last year and to just have my family together again would be like heaven to me.

HJ: What did you want to be before you grew up? LD: I’ve always wanted to be a singer. I was the entertainer in our house growing up. HJ: Gladiator sandals are… LD: In! Gooderson Monks Cowl Golf Resort The Ideal Weekend Retreat Roughly four and a half hours drive from Johannesburg, and nestled amongst the hills of the central Drakensberg Mountains, lies Gooderson Monks Cowl Golf Resort. Taking its name from the peak sandwiched between the towering Champagne Castle and Cathkin mountains, this pristine resort borders on the Mlambonja and Mdedelo Wilderness areas, and the scenery on the drive from the highway to the hotel, is nothing short of breathtaking. The resort is centered around the immaculately maintained 9 hole, 18 tee golf course, and features a mini putt putt course for the kiddies, as well as several swimming pools, one of which complete with a pool bar, 3 tennis courts, a volleyball court, and a kiddies play area to keep the children entertained for a good long while. I arrived after lunch on Sunday afternoon, and much to my joy my suite was right at the end of the property, and well enough away from other guests to afford me some much needed peace and quiet. My suite was modestly appointed, yet spotless and included all the basic necessities to make one’s stay a comfortable one, including

(much to my joy) a hair dryer – you would be surprised how often hotels omit this vital item! The sliding doors opened on to a small patio, and a mere step off the patio found me right on the edge of the golf course. I enjoyed a complimentary cappuccino in the sun on my patio and watched some rather enthusiastic golfers whizzing about in golf carts and cheering each other on as they went on to the next hole. Nothing better on a beautiful Sunday afternoon, to be certain. The hotel offers a variety of rooming options at different prices depending on your needs – from suites, to self-catering, and I noticed a tour group as well that arrived in the early evening. Nearby activities include a treetop canopy tours, white water rafting, a Bird of Prey Centre, a variety of local farm stalls, and arts and crafts villages.

The staff at Gooderson Monks Cowl Golf Resort are welcoming, and the service prompt and helpful. The onsite restaurant, “Friar Tuck”, is open for breakfast, lunch and dinner, as well as light meals at in-between times, and the menu, although not extensive, was encompassing enough to suit any palate. On the evening I was there, the restaurant served a simple, yet tasty buffet, consisting of a delicious leek and potato soup, several main course options such as a beef curry, chicken and fish dishes, accompanied by vegetables and potatoes, fresh salads and rounded off with a homemade dessert variety, served with ice cream. The breakfast buffet is filling: fresh fruits, juices, cereals and a cooked menu, made exactly to your selection, with delicious homemade pastries to tempt the taste buds. “Monks Cowl” is managed by Gooderson Leisure Corporation, which has been in operation since 1957 and currently encompasses a portfolio of 9 properties in Gauteng, Kwazulu-Natal, and Mpumalanga.

I unfortunately did not have time to visit the resort spa, which is conveniently based on the premises, however the spa menu placed in my Gooderson Leisure aims to provide affordable room looked amazing, and very well priced – and fun holidays for families, in some of the perfect for an afternoon of relaxation while most picturesque surroundings our country the gents are on the golf course. has to offer, and Gooderson Monks Cowl Golf Resort is certainly no exception. The surroundings are luscious and breathtaking, and I can certainly recommend this hotel as an affordable getaway for golf and nature enthusiasts on a budget. magine if you will, a family: three and a half kids, mom, dad, a cat and a big furry dog – let’s say for arguments sake a Golden Retriever. They are a busy bunch: lift clubs, piano lessons and adventurous weekends away. Being active is high on this family’s agenda – though following the mainstream isn’t their vibe. They like trail runs, rock climbing, and mountain biking - anything venturesome really. They need a car that’s highly capable of catering to all their needs, yet versatile in its practicality. Reliability, safety and value for money are key elements in making a purchasing decision for the above mentioned family. Left of centre, but with its eye on the trend, the Outback’s been upgraded - with an upmarket brush stroke. Techno-savvy boffins with a love for mod cons will enjoy the likes of the 6.2-inch touch screen with an interface reminiscent of smart tablet, the 12-speaker Harmon Kardon audio system, Bluetooth connectivity for hands free chats and an automatic tailgate which opens at the press of a button on the cars key fob.

The Outback is a great car: large, comfortable, understated and very capable. As a result I liked it. For those of you who don’t follow the crowd – this is an outstanding family vehicle with a performance twist - as with all Subaru’s! Ford Focus ST3 T

he ST3 features a 2.0 4 cylinder EcoBoost engine – swooshing 184kW of power, thanks to its turbo. From the outside the ST3 is equipped and bulked up with aggressively imposing body armour - the ST3 certainly isn’t a wolf in sheep’s clothing. The ST3 is a boy racer, in every sense of the word. It looks like one and drives like it too – wheel spinning pull offs are par for the course, as is the sensation that it corners as if it’s on rails. It’s a hooligan designed to excite those experienced drivers who love the thrill of motoring while scaring the lesser experienced with its menacing character. Enter the cabin - the previously cluttered dashboard of the Focus is now ordered, more simplistic - due to its large touch screen infotainment system that now controls a variety of the cars systems at the touch of the screens button. The quality of the materials have been upgraded and the snug fitting Recaro leather sports seats remain. The ST may be tough enough for a street race but

inside the cabin emulates a more sophisticated feel. Soft to touch materials, fine grade leather and embroidered ST detailing make for a classy spot to place your derrière. With the upgrades, come a questionable adjustment to the ST’s suspension – supposedly tweaked to improve – I felt the ST to be firmer than before. Previously the ST suffered from torque steer (when the steering wheel moves left and right in your hand as the tyres grasp for grip of the tarmac when accelerating hard). Unfortunately it still suffers from torque steer, which can feel like Usain Bolt out of the starting block but with a pair of his wife’s wedges on. Driven more sedately you won’t pick up this sensation problem.

There are few cars that are as entertaining to drive, albeit the money you save buying the ST over its competitors should be used for an advanced driving course – knowledge is power, right? Having the knowledge to control the power of the ST will make this the most fun you can have for R350 900 for the base ST1 and R394 900 for the higher spec’d ST3. H

The south african flag

he South African national flag was first flown in April 1994, after the first free election in South Africa. It is designed by Frederick G Brownell and is the only flag in the world with six colours. The flag means different things to different people. According to the flag’s designer, the red symbolizes the blood that was shed during the various wars and conflicts in the country. It is also suggested that the blue represents the sky and the two oceans that flank the country. The green symbolises the farms and the rich, natural environment of the country, while the yellow represents the natural resources, particularly gold.
