The rags to riches story of Brain Mitchell, one of the greatest South African boxers of the 20th Century, will take the stage at Emperors Palace. Mitchell is the holder of both the WBA and IBF World Junior Lightweight titles, and his story is incredible… one of wives and bitches, make or break, a never-saydie scrap that transformed him from a ruffian teenager into someone who was inducted into the World Boxing Hall of Fame. Ghosts and goblins, spooks galore! Scary witches at your door. Jack-olanterns shining bright, wishing you a haunting night! Is there anything more entertaining than a Halloween market? Set in the suburb of Bedfordview, there will be horror movies to watch, a costume contest to win and plenty of arts and craft stalls for you to shop from. We almost forgot to mention the refreshing craft beer, including a witch’s potion – if you dare to try it! There will also be tons of live entertainment and more delicious food than you can eat. Irene Christmas Market

This is one our favourite markets, we’re not even going to lie. Open every first and last Saturday of the month, the Irene Market has over 250 stalls, all completely unique, as well as a separate antiques and collectables section, a new deli and a mouth-watering food stall section. This spot is the perfect environment for artists and patrons, all while offering quality family entertainment. The children will be entertained thanks to Acrobranch and Segway, and there’s a 20km to 30km mountain bike route, a 5km to 13km trail run and a unique Olifants Cafe at the Barn. Nickel Xmas Market

The Nickel Xmas Market is hosted and organized by the dedicated individuals at the Kungwini Welfare Organisation. These amazing people also manage the Paul Jungnickel Home, the Kungwini Children’s Home, the Kungwini Early Learning Centers and the Community Development Projects and Social Work Services. The market aims to raise funds for the organizations as local exhibitors flaunt their fabulous wares – it’s their biggest annual fundraising event! You’d be a fool to miss it; it’ll be packed with freshly baked goods, handmade arts and crafts, desirable fashion items and a whole lot more.

Parkview Charity Christmas Market This fabulous little market has become a fixture on every Joburgers calendar, and it’s all thanks to its amazing atmosphere, quality crafted goods, music and fun for the whole family. Of course, there’s loads of yummy food and refreshing drinks available throughout the day, and fun activities to keep the little ones occupied. By attending the market, you’ll be helping support over 30 projects that fall under Nicarela Charity, which is an NGO that betters the lives of many less fortunate people, mainly children. INGREDIENTS 6 de-veined tiger prawns 100g of secret garlic butter (butter with a drop of Worcester sauce, chopped garlic, dollop of tomato ketchup, handful of chopped flat leaf parsley and black pepper mashed together) 1 cup pulped tomato 1 glass dry white wine Half a lemon Extra virgin olive oil Chopped garlic steeped in olive oil 2 diced green chillies in olive oil METHOD

• Butterfly prawns and lay out soldier style on a steel oval tray. • Add dabs of garlic butter over prawns. • Drizzle prawns with the wine, lemon juice and generously sprinkle over the garlic and chilli in olive oil. • Season prawns with maldon (sea) salt. • Fleck prawns with pulped tomatoes and cook in a very hot oven until the prawns turn pink and the shells have a nice crispy edge. • Serve with cooked rice tossed in fresh cream and parmesan for a superb cholesterol bomb!

Beef Carpaccio

START BY PREPARING YOUR BEEF RIBEYE

• Portioning ribeye into 10cm by 10cm blocks. • Rub ribeye blocks in salt and pepper and coat in olive oil. • Gather mixed herbs - sage, rosemary and thyme work best for creating flavour. • Roughly rip herbs and mix together. Then rub over ribeye blocks. • Place ribeye into a vacpac bag and seal tightly, or wrap in plastic wrap as tight as possible. • Place wrapped block into the freezer over night. Wine recommendation: A glass of Garajeest Semillon

TOPPINGS A variety of toppings work with beef carpaccio, but these work the best. 50g pine nuts 100g radish slices 50g crispy capers 30g fresh parmesan slices 10g black pepper 50g mixed micro herbs 20g edible flowers PREPARING THE TOPPINGS • Thinly slicing radishes into discs. • Deep fry capers for 1 minute until crispy. • Using a peeler, gently slice paper thin slivers of parmesan. • In two separate bowls, place black pepper and pine nuts. • In one bowl, place mixed micro herbs and edible flowers. • Truffle dressing -This is generally used on beef carpaccio. • Take 1 table spoon of fresh truffle paste and place into a bowl.

• Pour 300ml of organic olive oil into the same bowl and whisk together. • Pour olive oil and truffle mixture into a dressing bottle and place in fridge. • Cutting carpaccio slices - Beef carpaccio is a very thinly sliced meat soft and delicate. • Remove ribeye from freezer and unwrap. • Using a gravity slicer or a sharp mandolin, slice meat about 2 millimetres thick. • Place slices on greaseproof paper in a flat deep dish. • Cover with plastic wrap to avoid drying out. • Avoid overlapping meat slices as they can stick together and rip apart. • Creating the plate – this is a process of layering toppings over meat. • Place slices of ribeye on the plate, creating a circular shape (depending on the shape of the plate). • Gently sprinkle pine nuts over ribeye slices. • Place radish slices and capers over meat. • Place parmesan over meat. • Sprinkle a pinch of pepper over everything and drizzle with truffle olive oil. • Garnish with mixed micros and edible flowers. Served with roasted baby veg and crispy potato skins, alongside labneh and jus. 1.25kg lamb cutlets 225ml chimichurri 10 roasted baby carrots 5 roasted parsnips, cut in half 3 potatoes, skins 150g labneh cheese 150ml jus CHIMICHURRI 180g olive oil 75ml red wine vinegar 5g oregano ½ head garlic 40g parsley 10ml chilli flakes STOCK FIRST STAGE 5kg lamb bones 5kg chicken bones 5kg beef bones 250g leeks 250g onions 250g celery 250g carrots 1 tin whole peeled tomato 2 garlic heads 1 handfuls thyme STOCK SECOND STAGE 1kg meat offcuts 1kg chicken wings 125g leeks 125g onion 125g celery 125g carrots 1 tin whole peeled tomatoes 1.5L red wine

METHOD • For the chimichurri - finely chop herbs and garlic. Add the rest of the ingredients and whisk. • For the stock (stage 1) - brown the veg and bones. Deglaze veg with tomatoes, add bones, add cold water, garlic and thyme. Simmer for 8 hours and skim with ladle constantly. • For the stock (stage 2) - brown veg, chicken wings and offcuts. Deglaze with red wine and whole peeled tomatoes. Add wine and offcuts. Add stock. Boil and skim with a ladle constantly. • For the lamb - cut lamb into individual cutlets, cook on a grill until cooked to your desired temperature. • For plating - place all ingredients nicely onto a plate. Spoon chimichurri over lamb. Garnish with crispy potato skins. • Wine recommendation: David & Nadia Elpidios


METHOD • Heat oven to 200C/180 C fan/gas 6. • Lightly flour a surface and scatter with a little sugar. • Roll out the pastry to a rectangle slightly larger than 28 X 30cm and line a large baking sheet with baking parchment and scatter more sugar. • Use a rolling pin to lift the pastry onto the scatter. Scatter more caster sugar over the pastry and cover with another sheet of baking parchment. • Lay another heavy baking sheet on top and bake for 25 to 30 mins until pastry is golden and crisp. • Set aside to cool.

Mixed Berry Mille-Feuille INGREDIENTS Plain flour for dusting 3 tbsp castor sugar, plus extra for serving 350g puff pastry 300ml double cream 1 vanilla pod

600g strawberries Small bunch of basil leaves picked, with a few of the small leaves left for the whole salad Zest ½ lemon 50g good quality white Chocolate

MAKING THE FILLING • Tip cream into a bowl with 3 tsp of sugar, and vanilla seeds. • Lightly whisk until cream just holds shape and then set aside. • Hull and quarter strawberries. Set a few aside for the salad, and cut the rest into 3 or 4 chunks. • Finely shred basil, then fold through the cream with chopped strawberries and lemon zest. • Chill until needed. • When the pastry has cooled trim the edges to form a neat 28X 30 cm rectangle. • Cut into 3 equal rectangles - to get the same size, cut one then lay it on the rest of the pastry and use it as a guide. ASSEMBLY • Lay down one rectangle of pastry. • Add half of the cream and strawberry mix and flatten with the back of a spoon. • Place the second pastry layer on top and gently press down. • Finely grate over half the white chocolate and top with the remaining cream mix. • Place the final layer of pastry on and press down gently so the filling just starts to bulge over the edges. • Use a palate knife to smooth the filling along the sides so it’s level with the edges of pastry and fills any gaps. • Add a smear of filling across cut pastry edges to help the grated chocolate to stick. • Grate Chocolate on top. • The easiest way to get grated chocolate to stick to the sides is to help it on with a palette knife. • Mix the reserved strawberries and the small basil leaves to make a simple salad. • Serve • Carefully slice the Mille-feuille into 6 equal pieces. • As you slice, hold the mille-feuille together by placing a finger at either side of the blade. • Place a piece of mille-feuille to the side of each plate. • Spoon a small pile of strawberry salad on the opposite side of the plate and serve. • Wine recommendation: Donkies Baai Hooiwijn

INGREDIENTS 1 Bar spoon Cloves 50ml Bacardi Oakheart 25 ml house made Cinnamon Syrup 2 dashes Angostura bitters 10 ml cellulose 1 egg METHOD 1. Start by muddling a bar spoon of cloves in a cocktail shaker. 2. Add the Bacardi Oakheart, cinnamon syrup, cellulose, bitters and egg and fill the shaker with cubed ice. 3. Shake vigorously to mix all the ingredients, chill the cocktail and create a creamy foam. Shake until a frost layer appears on the outside of the shaker before straining off and discarding the ice. 4. Shake again, this time with no ice. This will lengthen the foam. 5. Fine strain into a chilled coupe glass. 6. Garnish with a ginger snap and cinnamon dust.

ave you ever imagined doing your festive feast on the braai? Not many people would. Now, we’re not saying that you should cook it all on the coals (although you totes could), but you could split up the work and have the men take a few bits outside to the grill…

NOT SERVING AN ENTIRE GAMMON? Buy a few gammon steaks, toss them in a glaze made from maple syrup, coarse-grain mustard, coarse black pepper, Worcestershire sauce, soy sauce and lemon juice and then stick them on the braai over a medium heat. No carving – just carnivore pleasure! PERFECT POTATOES Score an X into the full potatoes, sprinkle each one generously with olive oil and rock salt (and whatever other spices you desire). Stick them on early, as they take about 45 minutes to get crispy on the outside and soft on the inside. The taters should be one of the last things to come off the braai. CORN ON THE COB You really can do (some) veggies on the braai. One of our fave recipes is actually from Spar – make a cheesy marinade from melted butter, parmesan cheese, parsley and chilli. Rinse the corn, toss it in the marinade and then wrap the corns individually. Grill them on the braai for 15 to 20 minutes each, while turning occasionally. Yum!

BEST BRAAI TIPS • Start with a clean grill. Nobody likes the taste of last month’s braai. • Stop food from sticking by brushing the grill with oil. • Charcoal or wood will give meat a smoky flavor. But you can try glazes, marinades and wet or dry rubs to add extra flavor. Let the meat marinade for as long as possible. • Create cooking zones. The middle of the braai will be hottest - use this area to sear meat. Then move it to the edges to cook without burning. Got a gas grill? Have one burner higher than the other. • Keep the lid on. When the braai is open, heat escapes and meat isn’t cooking. Opening the braai could also lead to dry meat. • Try not to poke, stab or turn the meat. Give it time to sear and develop a tasty crust. Only turn it when you can see grill marks. • Meats will continue cooking once you’ve removed it from the braai, so whip it off just before it’s reached it’s desired ‘done-ness’. • Check the firmness of steaks and chops by poking it with your index finger. Certain seafoods will turn opaque when cooked through. When checking chicken, cut a slit in the meatiest section – any juices should run clear if it’s properly cooked.

Chiefs Boma Head Chef

B

orn and bred in Kimberley, Tebogo is the incredibly talented Head Chef at Chiefs Boma at the Indaba Hotel, Spa & Conference Centre in Fourways. He’s best known for his infectious laugh, dazzling smile and signature dish of slow-cooked Lamb Shank. His love for cooking started at a young age. “My mom is a brilliant cook, so it was natural for me to learn from her – she loved having my sister and me in the kitchen, which was filled with laughter and chatter as we helped prepare the family meals,” he explained. Tebogo’s foodie adventure began when he started working as a waiter at Caesar’s Palace. However, he soon found himself as part of the Banqueting Kitchen Brigade, and following a short stint in the Banquet Kitchens, Tebogo decided to make food his career, and enrolled in the Hilton Hotel Chef ’s Academy 4-year Training Programme. Soon after qualifying, he landed a sought-after position with the Five Star Michaelangelo Hotel. Tebogo honed his skills amongst the finest Chef Mentors in South Africa before joining The Grace as a Sous Chef, and took responsible for the banqueting and fine dining kitchens. When The Grace closed, Tebogo joined Air Chefs and was responsible for the 100’s of 1st class, business class and coach meals prepared daily – a challenge he thoroughly enjoyed. He then moved on to join the Indaba Hotel, Spa & Conference Centre in 2016, as the Head Chef of the award-winning Chiefs Boma Restaurant, and the popular Mowana African Spa. ive your Christmas Gammon a South African twist by infusing it with the flavours of Brandy and Coke - a classic South African drink. INGREDIENTS 1 large gammon joint, about 2kg (deboned) uncooked 1 onion, halved 10 whole cloves + extra for finishing 2 litres of Coca-Cola 10 x Maraschino Cherries FOR THE GLAZE ¾ cup muscavado sugar (brown sugar will also work) 1 tot brandy Tbsp apple cider vinegar 2 tsp wholegrain mustard INSTRUCTIONS • Place your gammon in a large heavy bottom pot, add the onion, whole cloves and Coca-Cola. Bring to a simmer, loosely cover with a lid and leave to cook for at least 30 minutes (40 minutes if bone-in) per 500g, or a little more if you have time. Once the gammon is cooked, use two forks to lift it out of the cooking liquid and into an ovenproof dish. Pre-heat the oven to 200C. • While the gammon is cooling, make the glaze. Heat all the ingredients together in a small saucepan until the sugar has completely dissolved. Do not boil as it will turn to hard caramel! • When the gammon is cool enough to handle, carefully peel the skin off and remove some of the fat. Score the remaining fat to create a diamond pattern. Press a clove and Maraschino Cherry into the centre of each diamond (use toothpicks to keep cherries in place), baste the fat liberally with the glaze and return the gammon to the oven, uncovered. Baste frequently until the glazed fat has browned nicely (it should take about 15 mins).

veryone wants to strut their stuff across the sand while on holiday, right? Getting (and keeping) your body beach-ready isn’t impossible – especially with these useful tips from Chirene Hawke, a physical trainer from Adventure Boot Camp for Women! And they work for the guys too!

SET SOME GOALS

MAKE IT A LIFESTYLE

SWITCH IT UP

Do you want to fit into a size 34 dress, or do you want to lose 20 centimeters? Make your goals tangible so you can work towards it, and measure your progress. Then when you achieve it, reward yourself - with a new dress or a pair of shoes and not a double cheeseburger, chips and milkshake!

Don’t see it as punishment, see it as a lifestyle change. For example, when eating healthy, don’t cut out sugar completely, rather substitute with healthier options like coconut sugar, maple syrup or honey. If you have a sweet tooth (like us!), these substitutes will be your saving grace.

GET A WORKOUT PARTNER

USE THE 80-20 PRINCIPLE

If you only have 10 or 15 minutes a day, do a combination and switch it up so you don’t get bored. On day one, do 20 reps of squats, pushups, a one-minute plank and lunges. Add some high intensity cardio between each exercise; a 30-second sprint (on the spot if you don’t have space) to get your heart-rate up, and repeat. Day two, do some alternatives like push-ups onto your bed, backward lunges off a step, plank with leg lifts, burpees and step ups.

It makes it easier! You motivate each other and keep each other accountable, and it’s much more difficult to cop out if you know someone is waiting for you. If you don’t have a partner, consider joining a local group-exercise programme. Find something that works with your schedule and personality, so that you stick with it until the end – or stay forever because you love it! If you don’t have a schedule that allows organized exercise, do what works for you… even if it’s just long walk around the block. Add a couple of jogs, squats, backward walks or lunges to spice it up and keep your body guessing – which is the best way to get results.

If you’re good 80% of the time, you can relax the other 20%!

KNOW WHAT YOU’RE DOING

BODY WEIGHT EXERCISES ARE BEST!

Make sure you know how to do an exercise properly before you do it, and be mindful of what you’re doing. Don’t just go through the motions. If you do the exercise properly, 20 slower reps will be much more effective than 50 fast ones.

Think squats, push-ups, burpees, tricep dips and planks. These use your body weight and core to build muscle – and you can do it anywhere! How useful! DRINK LOTS OF WATER! Drink one glass for every 10kg body weight, and an extra full glass when exercising. Staying hydrated is key.

HAVE FUN! Always enjoy what you’re doing, because then you’ll keep on doing it! And that’s the best way to keep your body beach ready!

he festive season is about spending time with family and loved ones, and unwinding from a busy year. It’s also the time of year to help others - not everyone has a family to hang out with over the holidays. There are many organisations and charities that work throughout the festive season to ensure that most people, especially the little ones and furry four-legged kids, are looked after and have enough to eat.

Our charity of choice is one we work very closely with - Operation Hunger (OH). Since 1978, they’ve worked hard in local communities to support and uplift those in need. OH are always running campaigns to raise funds for worthy causes on behalf of beneficiaries. If you’d like to contribute this festive season, we welcome your support!

CREATE SMILES THIS FESTIVE SEASON!

SANTA CAUSE FOR PAWS Don’t forget the fur babies that don’t have humans to spoil them! We love Santa Cause for Paws, who collect gifts for shelter and township animals.

Their projects range from soup kitchens and vegetable gardens, to egg laying projects, building rain water tanks, creating water rollers, boreholes/hand pumps, windmills and so much more. This is to help individuals and local communities develop gardens, support livestock and be protected against various water borne diseases.

This is one of our favourites, and it’s easy to do. The Santa Shoebox Project originated in Cape Town in 2006 with a humble 180 shoeboxes. In just 10 years they’ve grown in leaps and bounds, with the number of donated Santa Shoeboxes reaching 652180. The shoeboxes are distributed to over 1000 recipient facilities each year, and through more than 60 satellites around South Africa and Namibia. A little over a 3-hour drive from Jozi, Barberton has some of the most beautiful mountain views in the country, and a great climate. If you’re visiting a place you have never been before, we really recommend the Tom Tom Sat Nav system. We recently took one on a local trip, and it was a lifesaver with its big screen and clear directions. Far better than trying to juggle a phone while trying to watch out for the cops! KEEP IT CLEAN Car trips can be messy. It’s hot, the kids are fighting and throwing their egg mayo sandwiches around, and the car is starting to look like something from a horror movie. Wet wipes are always a must have. A family pack of 60 should get you through. You can wipe the kids, the dog, the car interior and just about anything with them – and they can serve as tissues! Yes, we’ve tried this in a moment of desperation. Speaking of which, travel tissues should also be on the list! Pack a rubbish bag or two. They’re great for popping all the

s we gear up for the holidays, families start planning their annual road trips down to the coast, or to family holiday homes. There’s so much to think about and plan, and if like us, you’re a list person, you’ll likely have checklists for everything! To make things easier, we share some of our top tips to the festive season motoring - and all things road trip related… empty wrappers, cooldrink cans and those wet wipes in to. Refresh yourself. We always pop a refresher mist (think Clinique’s Moisture Surge) in to our bag to keep our skin refreshed. Also, pack a hair brush to sort out those tresses should you fall asleep. HIDING THE GIFTS Always a tricky one – and we have had to keep innovating on this, as the kids are getting sharper every year, or so it seems! Try in the cooler bag, amongst your clothes, or in the cubbies under the driver’s seat in the car. Put them in a plain shopping bag (like a Checkers bag) so it looks boring. Or seal the entire bag with as much masking tape as you possibly can! As soon as you reach your destination, send the kids ‘exploring’ and find a clever spot. On top of the cupboard, or somewhere that’s not within reach of curious hands - and eyes.
