HEAD TO ATIC RESTAURANT AFTER A NIGHT OUT! Wait until sunset to see just how many people can fit in a city. The streets fill up with people, heading in different directions with one aim - to have a good time. Atic restaurant is definitely the place to go after a jive at House of Tandoor, a reggae nightclub across the street. Even if you arrive at 8pm, just before the staff are wrapping up for the day, you’ll be served as if you’re a regular - with the best service. Try and taste all of Africa in one; order a bit of everything. Most of the dishes are West African; think yams, okra, red kabeljou fish, puasong (a variation of fish from Cameroon), miyan yakuwa (Nigerian stew with spinach) and plantain.

To drink: Guinness Malt is the only thing to have with West African meals. A kind of moonshine they refer to as palm wine is rarely served, as it’s scarce locally. We were lucky to get a glass of this potent liquor to round up our food journey.
We’ve all heard of espresso, but you need to be a coffee enthusiast to know of the Ethiopian variant, Buna. It’s served daily with meals, and used as a celebratory drink during Amharic Christmas, called Gena. We walked down Rockey street and discovered an unusual Ethiopian coffee shop that sells coffee beans, and their traditional variation of espresso, Buna. No food, no biscuits - just coffee. It’s not the kind of sip you want to mess with, so add sugar if you’re not a coffee person. Appreciate coffee made from scratch, the organic way, in a Gena Kettle!

Adrienne’s graceful air perfectly suited the gorgeous 54 on Bath Hotel, as we sat down for a pot of tea and an interesting, insightful interview with this well-known property mogul. If Adrienne had the luxury of conversing with her 20-year-old self, there’s so much she’d like to say. Wouldn’t we all? If she had to sum it up with the quick version, she’d tell herself to not to sweat the ‘small stuff’.
Adrienne implores young women starting out on their corporate journey to understand that you cannot - nor do you have to - do everything on your own. “The secret is to surround yourself with people infinitely smarter and wiser than you are in certain areas, and give him them the space to flourish. Accountability is important and you need to allow people to make their own mistakes.”
She concludes with sharing the most crucial advice ever given to her courtesy of her mother. “She always said involve yourself with people who constantly make you smile and laugh. It may sound obvious, but it’s what makes all the difference to the journey. It is what makes life’s tribulations easier to bare and the success sweeter to enjoy.”

“You have to learn to focus on the bigger picture of what you’re trying to achieve. Or as my millennial sons would say, learn to roll with the punches and not take things too personally. I’d also advise her to have patience. Success is not instant. It comes with hard work and perseverance. So be ready to put in the hours.” For those who know Adrienne and the property empire that she’s created, there is no doubt that tenacity is core to her solid work ethic and achievements. Coming back to 2017, and the challenges that women face in the corporate arena, Adrienne doesn’t mince her words around the gender dynamic in the workplace - nor does she see it as an obstacle to growth. “Sure, the challenges we faced then are still relevant today. It’s still a ‘man’s world’, and woman are likely to experience varying degrees of chauvinism as they climb the corporate ladder, but just get on with it.” As for the romantic notion of the ‘work-life balance’ that so many of us desperately want to find, Adrienne smiles knowingly. “There’s no such thing, so relax. But if you work smart you can have everything that you want. If anything, it’s about learning how to juggle and knowing what is important and when. At the end of the day, we do what we do for the benefit of our families. There’s no magic recipe here. Sitting down once a day with my partner and children for dinner in the evenings was my non-negotiable. I’ve also been very blessed to have an incredibly supportive husband. You need to decide what you’re willing to wage, and what you’re not. rowing up in Cape Town, Jonathan’s life is filled with memories of food. His mother, a domestic worker, learnt numerous cooking techniques at her job, and brought them home to her children. Artfully combining the traditional food they ate with Mediterranean flavours, the youngest of five siblings got tasked with assisting and dish washing. As he got older, he took over the cooking, which he greatly enjoyed.
However, all chef ’s need to work abroad to gain experience, so off he went. What a ride it’s been… from luxury Thai resort Anantara and LUX hotels in Mauritius, to the Seychelles and Starwood Hotels in the Maldives. The challenges faced in these remote, high-end resort hotels are like no other. Logistics, and keeping menu’s exciting for long staying guests, to sourcing requirements for an in-villa dining experience for a family of 6, who only eat specific foods, or have specific cultural requirements, found Jonathan learning fast.

ello Joburgers big news – we’re officially as cool as Cape Town, thanks to ONO Eatery in Illovo. Heard of Pokè? It’s a Hawaiian term for ‘to section’ or ‘to slice or cut’. Simply put, it’s a raw fish salad, divided into a bowl of sections and includes fresh, healthy ingredients. Nothing is hot cooked, nothing is sautéed or grilled… it’s food enjoyed in its most natural state. Anthony Theodosiou has already gained a credible reputation. He’s the mastermind behind this Pokè bar, and picked up the concept while living in London.

It opened last month, and this contemporary, island-style eatery already ticks all our boxes. Anthony’s passion lies in simple and efficient, on-the-go eating. ONO Eatery amps up the romance of healthy eating, making it sexy, and Joburgers - it’s the hippest place to chow down. All the meals are served in plastic containers, and the knives and forks are bamboo and are compostable. It’s basically a vegan restaurant, but there are salmon, tuna, prawn and chicken Pokè bowls on offer. Try the Acai Berry Protein Bowl for breakfast. It’s 100% vegan. Pair it with the Hulk protein shake, which is packed with
glorious greens like kale, spinach, apples, green protein, dates for sweetness and creamy coconut milk. Again, 100% vegan, and 100% awesome! Going for drinks on the town? Before you star, pop into ONO and order their too-pretty-toeat house Pokè bowls, or build your own. The bowls come in a medium or large size. TASTY CHICKEN SATAY STRIPS These grilled chicken strips on sticks make a delish appetizer, especially when they’re paired with a tangy peanut sauce – which only takes few minutes to prepare with a NutriBullet. • Add 1 tblsp of brown sugar, 2.5 tblsp of soy sauce, 1.5 tsp of ginger powder, 1 tsp of lime juice, 2 cloves of garlic and a quarter tsp of crushed red pepper into a NutriBullet cup and blend until evenly mixed. • Pour over a pack of skinless, boneless chicken breasts, cut into strips that have been placed in a shallow bowl. Refrigerate for 30 minutes. • Combine 1 tblsp of brown sugar, 1.5 tblsp of soy sauce, 1 tblsp of lime juice, a quarter cup of peanut butter, 1 clove of garlic and a quarter tsp of crushed red pepper in a small bowl and set the peanut sauce aside. • Preheat an indoor grill. • Prepare the strips by piercing them with wooden skewers. Razzle DAZZLE ‘EM … and all that jazz!

y now, we’ve all concluded that Luke Dale Roberts is a food genius who can do no wrong. If you’re not yet convinced, a visit to the Pot Luck Club will definitely change your mind! The first thing that makes this venture remarkable is its location in Doornfontein. Locals may have noticed that this formerly run-down, industrial area is slowly gaining traction as ‘the new Maboneng’, as the establishment of galleries and eateries change its landscape. With the Pot Luck Club opening its doors as a pop up between July and September, a major shift is about to take place. ‘Cool’ is the only way to describe this restaurant. Having made its home inside the Marabi Club, Johannesburg’s jazz haven, it has the kind of atmosphere you'd expect to find in a 1920s speakeasy. It feels underground and edgy… the kind of place where you’d expect to mix with dangerous (yet beautiful) people wearing fedoras. The décor makes it even easier to imagine that you’ve taken a holiday from the twenty-first century. The Club’s unique take on wallpaper uses distressed doors, which were claimed from a Soweto salvage yard. The chairs are also a talking point - each one is different, with the oldest dating back to the 1800s. These vintage furnishings are an important part of the restaurant’s magic. It’s evocative to imagine these items being part of someone’s every day; the doors opening and closing as residents of the house ventured into a new day, the chairs bearing witness to suppertime conversation. Now they’re all part of Johannesburg’s latest reinvention as part of its latest must-visit spot. The music is another element which can’t be ignored. Even if you don’t like jazz, you can’t deny there’s something irresistible about a bunch of artists jamming together. We defy anyone to sit through a session without tapping their toes.
Our highlights included the smoked beef fillet served with truffle café au lait; a coffee-infused sauce that complemented the meat perfectly. An outstanding dish, it was nonetheless surpassed by the churros. Accompanied by a dipping bowl of moreish dulce de leche, its saltiness was perfectly balanced by a delicate rooibos flavour. T
he Hello Joburg team got ‘hands on’ with making beer with the team from Airport Craft Brewers - a fantastic experience that will yield us our own, limitededition Hello Jo-Beer!
Bring it the boil After boiling, the wort is transferred into a whirlpool tank for the wort separation stage. During this stage, proteinaceous material and hop particles flocculate together to form ‘trub’, which is unwanted in the final beer. This is removed, leaving a liquid that’s ready to be cooled and fermented.
How does it work? First the grain (barley malt) is milled to crack open the grain kernels. This exposes the starch, which will be broken down into fermentable sugars - this milled product is called a grist. The grain arrives in 50 kg bags, and we utilized 52 kgs for our 300-liter brew. The grist is then transferred over to a metal tank called a mash tun, where it’s mixed with heated water in a process called mashing. The conversion process now uses the natural enzymes present in the malt to break down the starch into simple sugars.

When conversion is complete, the sugary liquid, now called wort, is separated from the grist in a process known as lautering (to filter it). All this is carefully controlled to ensure that all the liquid is extracted, leaving only the husky material behind. The wort is run off to another large metal tank called a wort kettle, where it’s brought to a controlled boil before the hops are added – roughly another hour. At this stage, the brew

master also adds calcium – the ground water used for brewing at the original brewing areas in the UK were very calcium rich. Our water in SA doesn’t impart this flavor, so it needs to be added to give that extra ‘beery’ good flavor.
Brewing up some magic Now the magic starts to happen. The young ‘green’ beer is fermented by yeast, where the fermentable sugars are taken up by the yeast cells and used for growth. In turn, the yeast produces alcohol and carbon dioxide for the brewer. Once completed the beer needs to be matured to allow a full development of flavors, and a smooth finish. It’s now pumped in to a maturation tank for about a week, where it’s constantly monitored and tasted during its maturation process. Once the brew master feels the beer has reached its full potential, it is filtered, carbonated and transferred to the bright beer tank. The whole process takes about 3-4 weeks.

King Kong The Fugard Theatre’s production of King Kong is finally heading to Joburg theatre! King Kong is an iconic South African musical, which was first presented in the country back in 1956. The musical portrays the life and times of a heavyweight boxer, Ezekiel Dlamini, also known as `King Kong`, who lived in Soweto. The original production played to over 250 000 South Africans before transferring to London`s West End, and incidentally launched the international career of Miriam Makeba, who played the shebeen queen of the Back of the Moon. etter settle down, Hello Joburgers… you deserve a little R&R. And by ‘R&R’, we mean reading and relaxation!
In Alison Weir’s Six Tudor Queens: Anne Boleyn, A King’s Obsession, the authors interpretation of the woman behind the story is a fascinating one. She portrays Anne as an early variety of feminist, long before feminism became ‘the thing’. Her Anne is a staunch believer that a woman’s place is just as important as a man’s, and that neither should be dominant (a vastly unusual stance for the 16th Century). With that belief, she refuses to submit to Henry when he wants to make her his mistress, and holds on to her virtue until he makes her his queen. She therefor becomes the reason for the split with Rome, as the established Church wouldn’t grant him the divorce from his first wife. Along the way she, naturally, makes many enemies, who don’t hesitate to bring her down once her star begins to wane. All while Henry begins to look elsewhere for the son he’s determined to have, to keep England safe from foreign powers. Although the story of this unhappy queen is well known, it never fails to enthrall, and Weir’s retelling of its most interesting. Even if you think you know the story, don’t fail to pick up this book. R315

Thandeka Gqubule, one of the ‘SABC 8’ journalists, has painstakingly researched the journey of Thuli Madonsela to create her book, No Longer Whispering to Power; The Story of Thuli Madonsela. Her childhood was spent in Soweto and in Swaziland, where she attended the University of Swaziland and obtained a bachelor’s degree. Thandeka continued by examining her credentials as a struggle activist during the 1990’s, during which Madonsela obtained an LLB from Wits, while taking part in civic politics and action groups. She then spent 3 months incarcerated at Diepkloof prison. It’s clear that Thuli Madonsela was instrumental amongst those who played a part in the drafting of the Constitution. With her credentials, it’s difficult to understand why, when everything she believed in and stood for was obvious, she was nominated for the post of Public Protector by President Jacob Zuma. During her time in the position, she produced thousands of reports, on a variety of concerning matters within our fledgling democracy - including public transport, sanitation and the SABC. She will undoubtedly be remembered for two - ‘Secure in Comfort’ and ‘State of Capture’ - in which she took on the ANC in the defense of the silent majority of SA citizens who will now, always, hold her in great esteem. She stepped down at the end of her term as Public Protector in October 2016 and has returned to private life. The book’s a difficult read, however it gives us a belief in the future, for while there are people like Thuli Madonsela on our side, failure will be that more difficult. R250

7 minutes with Kate Emmerson Kate travels the world sharing her message of ‘Live Light Live Large’ through her books, talks and idyllic retreats. She’s just self-published her third book, ‘Shift Your Home’ and will inspire you to stop mucking about and playing small.
You stand for energetic transition to live light, to transforming South Africa, one life at a time. How do we go about this transformation process? I support people to find way to let go of all that no longer serves them in the truest sense of the word. It may be emotional or physical ‘stuff’, mental constructs, work or spiritual ‘clutter’. When we learn how to make space in our lives, there’s a chance for the new to flow in. How did your path lead you to study life coaching? When I was in Scotland in 2002, I read an article about a London based woman changing lives. She was in this profession called Life Coaching. The moment I read those words and understood what it was, I realised it amalgamated everything I had studied, loved and felt passionate about up until that stage – combining Industrial Psychology, Human geography and then many years as a professional aromatherapist/ reflexologists and healer. Clutter clearing, what is it and does it really work? Clutter is quite simply anything that ‘no longer serves you’. It keeps you stuck, stagnant and attached to the past. Clearing it can be about clearing your body, letting go of toxins and stagnant energy or clearing your physical space to ensure you live with what you love, respect and use. Dealing with emotional clutter is important – letting go of harmful relationships, forgiving others and making peace. What inspires you? Travelling to new places - as well as a purring kitty on my lap!

Your thoughts on social media? I love the way it connects us around the world, and the potential it offers. However, I loathe how it simultaneously disconnects people from being in the same room together, and how I witness the dangerous notion of a lot of ‘fakeness’ on the platforms, pretending that everything is ok when it’s not.
