He was engaging and treated us to an impromptu piano recital. He’s given concerts at the theatre on many occasions and will be delighting audiences again in the near future. ou won’t find a sun-kissed Leo DiCaprio tripping on drugs at this particular beach but you will find top DJ talent and a bunch of people having a great time at The Beach on the roof of 68 Juta Street in Braamfontein. Let us entertain you Back with a bang since its revamp, Roodepoort Theatre brings you an exciting line up of top South African performers as well as youth talent.

T

hirty three years after the opening of the Roodepoort Theatre (catering then to a primarily operatic audience), and after many name changes, a major revamp of the theatre took place in February this year. The theatre was closed for about five weeks to upgrade everything from the seating, to the acoustics, to the colour scheme to the dining experience. The name also changed from the Joburg Promusica Theatre to the Roodepoort Theatre. Most importantly, however, the emphasis of the Theatre changed to focus more on youth development as well as youth productions not only for youth, but also by youth. With the revamp came the expansion of the theatre. It could only seat 317 people but now the capacity has increased to 328. New seats were installed. Along with the visual refurbishments, the theatre also received a technological upgrade - the lighting rig was improved and although acoustics was never an issue at the theatre, new soundboards were installed (it’s considered to be one of the best auditoriums in terms of its acoustic capabilities). Stages Restaurant also opened at the theatre in February, allowing patrons to enjoy a hearty meal before a show.

Today, Roodepoort Theatre has a strong presence in the community, providing safe and secure parking for all patrons For the remainder of this year, look out for Nataniël, Tshedi Mholo (Malaika) CD Launch, Helen O Grady Showcase, Ballet Bugs, and in December, Aria! Opera for Everyone, Christmas in the City, Roodepoort Little Theatre. The 2015 season has been finalised. Audiences can look forward to four mini-operas: La Boheme, Madame Butterfly, L’Elisir d’Amore and Il Trovatore. The usual suspects will be back, such as the NEA, Roodepoort Dance Festival, Acts Dance and many more. The theatre is fully booked for 2015 and the calendar for 2016 is also being booked. ARIA! OPERA FOR EVERYONE WITH STEFAN LOUW Aria! Opera for Everyone is in its fourth consecutive year at the Roodepoort Theatre and to date not a single programme has been repeated. Louw prides himself in staying true to his mission: to bring quality opera to the connoisseur whilst encouraging new audiences to appreciate true opera. His programmes are designed to feature popular as well as lesserknown arias from three or four operas. He groups these arias together and a narrator tells the story of the opera and how the arias fit into the overall story. With the launch of the Aria! Opera Chorus earlier this year Louw realised how many talented young opera singers there are who are not getting any opportunities to perform on stage. With his most recent concert in August two of the chorus members made their solo debuts to immense acclaim. Christmas with Nataniël Rocco de Villiers captivates with Countrykeys

n Rocco de Villiers latest album, Countrykeys, this flamboyant king of the keys has produced a refreshing new sound for instrumental music with a country flavour. “The music is honest and it isn’t trying too hard to make a statement, to be clever or to deliver a message. It is unassuming, with the emphasis on the melody and entertainment, and that makes a statement in itself !” says Rocco. The charm of the kissing buttons is that the buttons have an air of being “individually” aligned, suggesting the suit is handmade and unique. • Ticket pocket: a small pocket on the outside of a suit jacket traditionally located above the right main pocket. he beautiful A La Bouffe restaurant has recently opened. Let me just be one of the first people to tell you (and certainly not the last) that the moment you put the first fork full into your mouth, there is no turning back. There is a part of the restaurant that’s literally taken off the streets of France. An adorable, charming lounge area with printed Eiffel Tower scattered cushions and antique vintage style furnishings. Marveling at the thick wooden floors and contemporary touches the ambience is one of sophistication & relaxation. Rather than being pretentious and ostentatious the restaurant is humble, elegant, warm and engaging. This newest addition to our city resonates with character and charm specifically because of the passion of Romuald Denesle, the owner, who is a Michelin Star Chef from France. To complement his passion for French food,

he loves nothing more than elated, satisfied customers. Best starting point: how can you visit a French restaurant and not try the escargot? You get six in a portion and they come smothered in a garlic wine sauce. Want something lighter? Opt for soupe a l’oignon, croutons a l’ail which in lay man’s terms is a delectable onion soup with garlic croutons. The middle highlight: if you are feeling daring, apparently the rabbit in mustard sauce served with buttered red rice and buttered carrots are divine. However if like me, you are not so adventurous “The Merlu poche a l’huile d’olive”- the olive oil poached hake, with scrumptious ratatouille and new potatoes is exquisitely good. End off with: my favourite part of any meal and my favorite dish from A la Bouffe has to be the crunchy, crumbly crusted chocolate tart with home-made sugary raspberry sorbet.

small plates and experimental dishes like hearts on toast. Decadent desserts and fantastic coffee finesse the offering. There are future plans to expand, all based upon the provenance of the farm, and dreams of a deli which would mean we can all cook with such exquisite ingredients.

chef of the month Described as a food alchemist, Chef Pete Goffe-Wood goes by the name Kitchen Cowboy. With his fast talking, guns blazing and charismatic nature, it’s no surprise why. With his big personality and massive energy, he fills up any kitchen with ease. lows as accurately as we imagine he would serve his meat medium rare. A highlight would have to be working for two days at Albert Roux’s handlanger for a lunch where he cooked for journalists in Paarl. The French-born restaurateur and chef who works in Britain opened one of the first restaurants, Le Gavroche in the UK to gain three Michelin stars. As for a low point. “It would have to be making make 1500 12cm sundials out of salt pastry for a table feature at a huge banquet.” Finishing off his latest book, Pete is also getting ready for summer and the end of year chaos the orders come a rolling in. As for trends for the year. Pete says keep it simple and honest, “there is a strong move towards sustainable artisanal food.” H

My favourite part of MasterChef is seeing contestants when they have that moment of realisation that there is no going back to their old lives

Q: Any advice for wanna-be-chefs? A: Eat and read – you have to continually educate yourself and the best way to do that is experience what other chefs are up to by eating out as often as your budget allows and read every cookbook or magazine that you can get your hands on. Thirdly never be scared of a bit of hard work. Q: What does Chef Pete like to eat? A: I would say that Indian cuisine is probably my favourite – it’s not just about heat it’s about multi layered spice that can be hot but also subtle and nuanced. Q: Is there a favourite restaurant to frequent in JHB? A: That would have to be 500 at The Saxon Q Who are the chefs to watch in JHB? A: David Higgs, Amanda Beck Q: What is different about the Cape Town vs JHB food landscape? A: While there are more top end restaurants in Cape Town, particularly those placed on wine estates, Johannesburg has far better authentic ethnic food and much more approachable local bistro fare.

as it a childhood dream to be a food wizard? Not at all. By his own admission, he fell into the kitchen almost accidentally. “After a disastrous academic career I started working in restaurants as a waiter. I was given the opportunity to spend some time in the kitchen and haven’t come out since.” – sounds like a success story to us. Pete caught the attention of local palates in Cape Town almost two decades ago when we were just wrapping our tongues around fusion food. A true cowboy in the kitchen, Pete took Asia, Europe and Africa and mixed them in a bowl with a variety of spices while the industry watched with trepidation. ‘What on earth was he doing?” But ultimately his lack of culinary fear is what put him in the spotlights. When’s he’s not sharing his intimate knowledge of food in his cooking workshops or serving up wild combinations of ingredients prepared with sold techniques, you may have seen him moulding new cooking talent on MasterChef South Africa. Now in its third season, Pete still approaches every season with the same enthusiasm and excitement – and fans of the show will know what we mean as he translates so well on screen. “My favourite part of MasterChef is seeing contestants when they have that moment of realisation that there is no going back to their old lives, that whether or not they win the competition they will be following a path in food in some way or another after the show. Well respected by the food industry, Pete has also served as a judge for the annual Eat Out Awards – a much coveted competition for chefs across the country’s kitchens. More than just a chef, Pete is also a food activist and firm supporter of SASSI (South African Sustainable Seafood Initiative). Some people will waffle a little bit when you ask them about their career highs and lows but not Pete. He can pinpoint highs and

ob Heyns from the League of Beers has upped our beer knowledge in the past few months. Today he discusses something that we, craft beer plebs, rarely think about - beer glasses and how they affect a beer. Drinking beer from the bottle (called ‘necking the bottle’) is the bane of my sommelier existence. The carbonation hits you right in the mouth, you don’t get to experience the full appearance and most volatiles (the pure aroma elements) are only released when a beer is poured. Now focus with me for a sec as I attempt to link craft beer and science (yes, it can be done): • Different shapes of glasses will create a different head (or foam cap) on a beer. • The head of a beer holds volatiles in (rather than escaping into the atmosphere, they are contained and escape to your tastebuds when you take a swig). • Different beer styles require different heads. So, it’s then logical that different beers will taste better in different glasses. Make sense? There are loads of different beer glasses out there so I’ve narrowed down four of the most popular ones: 1. FLUTE GLASSES These glasses release the volatiles quickly and encourage carbonation, so make sure you’re going for a big upfront aroma. Use for wild ales, saisons and red ales. 2. GOBLET OR CHALICE Traditionally, these are scored on the inside to provide a big head and the wide rim allows for deep drafts. Use for Belgian IPAs. 3. BEER MUG I wish there were more benefits to using this glass, but the truth is that the main attraction is the large volume and the ability to clink your glass in a manly way with your mates. You can use with any beer. 4. PILSNER This trumpet-like glass is great for showing off the beer’s colour, while retaining the head and volatiles. Use for pilsners and lagers 5. WEISS BEER VASE You might have guessed it, this one is for Weiss beer. The highly effervescent weiss beers with big frothy heads need a big top section that gives the head all the space it needs to spread its wings. Good luck, craft beer padawans! BEER GLASSES AND pouring techniques

F

ifteen kilometres from the sea as the crow flies and 25km from the mouth of the Breede River, a rocky plateau rises up 70m between the hamlet of Malgas and the quaint fishing village of Cape Infanta. When David Trafford and his family first saw the spot while on an camping trip in 2000, the award-winning winemaker saw the potential and the similarity of the complex stony soils to those of Portugal and France’s Southern Rhone. The exciting new vineyards were established in 2004 and the wines are called SIJNN (pr. SAY•N) after the original Khoisan name for the Breede River. There are no vineyards for a forty kilometre radius. David is a pioneer here. The climate is warm and dry with an average of just 350mm of rain annually. Moderated by sea breezes, the vineyards are planted to top quality Mediterranean varieties: Syrah, Mourvedre, Touriga Nacional for the flagship red blend and Trincadeira as well as Chenin Blanc, Viognier and Rousanne for the white blend. As an architect, David and his team have put a great deal of thought into the facility and created a building that seamlessly fits the landscape. There are pristine bushwalks and lots of exploration on offer in the area and the new winery building is open on Saturdays from 10h00 to 15h00 for tasting and sales. The wines are naturally made with no added yeasts or acids and very little intervention. James Molesworth of Wine Spectator (USA) wrote of the Sijnn 2010, “There are few projects that epitomise such a soulful, pioneering approach to winemaking” which he scored an impressive 93 points. The Sijnn White blend has four and a half Platter Guide stars, the Sijnn (Red) Blend has four and the Sijnn Syrah 2011 an impressive five stars. The accolades and high scores keep coming for this talented team. SIJNN WHITE BLEND It is exceptionally food friendly and a terrific pairing partner for lightly spicy Asian inspired dishes and curries as well as rich seafood and fish. Recommended drinking within 1 to 5 years. SIJNN (RED) BLEND The palate is soft, rounded and elegant but with a substantial intensity and complexity. Ideal with a hearty casserole, or grilled meat dishes – it is a great partner for all your summer braais! Recommend drinking within 4 to 10 years. After returning from her travels in 2004, she opened Culinary Productions - a bespoke catering and events company which became a base for winemakers and the home for their wine tastings in Johannesburg. Q: What’s the most fun you’ve had as the ‘Mayor of Munich’? A: The most fun I have had being the mayor is getting hundreds of people standing, singing and swigging beers with the oompah band, there is something very cool about that many people joining in Q: Have you been to the Oktober Bierfest in Munich? If so, how does ours compare? A: I have not unfortunately, although I might have. By the sound of things, you need to take photos at that beer fest to remember what you did. We have gone out of our way with real Bavarian traditions at our bierfest, so I think that anyone who’s been to the German one will feel right at home with us too. Q: If you could create your own brand of beer, what would you call it? A: I’d call it Snoddie Pilsner, making sure it’s a traditional bavarian style pilsner. It would have to have a dash of ginger, just like me Q: What’s your favorite beer? A: I’ve tried the King Ludwig Munich Dunkel, and it tastes like it was made by angels in heaven. On the plus side it’s also available at the Bierfest. Win win.

Primed for Success T hey are busy travelling the globe slap bang in the middle of their latest album launch – Let The Night In. But despite the fast paced madness of airports, concerts, fans and media nothing seems to dampen Prime Circle’s spirit. The band’s trade-mark sense of humour comes through in just about every interview they do. If you’re a die-hard fan like us, you’ll know what we are talking about. These guys are so local and just too lekker. So when we asked about the most difficult aspects of their international travelling, expecting answers about jetlag or language barriers, the response about lack of clean underwear and socks was just par for the interview course. The five band members, Ross, Dale, Marco, Neil and Dirk are charming on another level of charm, ladies, #justsaying.

But of course the extended time away from family, friends and loved ones is always by far the greatest challenge. So off the back of their European Tour, the band are certainly glad to be home in Joburg for a while. On the topic of home and following their electric show at Monte Casino Teatro in July we asked the guys about the dynamics of playing on home soil vs playing abroad. The feeling is unanimous. Keyboard player Neil Breytenbach admits that when playing overseas, there is definitely a sense that the guys need to prove themselves. But of course it’s different in South Africa. “Back home we have a very loyal fan base that keeps us strong and supports us through everything so long as we keep delivering the goods. Overseas they don’t know us or our history, so you are just another drop in the ocean, and it’s literally

sink or swim.” When they are home, the guys just love jamming it up on the festival stages – like Joburg day. A big fan of local events, the festival scene has certainly grown from strength to strength and is a major platform for SA bands to learn from and to grow on. The guys are off to Germany again in October. The itinerary is jam packed full of gigs. Four gigs in a row on any given day just sounds hectic. Especially if you are repeating that process for an entire month. The band are looking at possibly playing in Dubai, Asia and Netherlands on this trip too. And what’s next for the band? The guys are going from strength to strength and are adamant that they won’t stop until they get what they want… (and more – yes we linked it back to the song). H

he Hanging Gardens of Beatenberg is without a doubt the biggest band to explode onto the scene in 2014. Produced by the band themselves, Beatenberg cleverly and creatively crafted their strong vision for the album, before having the album mixed at The River Studios in London. “It was a learning curve for us: getting to grips with the workload, but also learning to trust ourselves at every stage of the process. We take a fine dining approach, which enables us to pay attention to detail and interact with our customers in an unrushed manner,” explains restaurant manager, Khaya Makhubalo. “I know most of our customers personally, by name. A: I like the live music vibe in Joburg. You find all different kinds of interesting people from all over the world mixing together. and fearless approach to food. New Volkswagen Golf R now available with manual transmission

T

he new Volkswagen Golf R can now be ordered with a manual transmission. Since its local launch in February 2014, the new Golf R has sold over 740 units in spite of only being available with DSG transmission. The new Golf R is powered by a newly designed 206 kW engine (380Nm of torque available from 1800rpm). Like all previous Golf R models, the new model also transfers its turbocharged engine power to the road via a permanent all-wheel drive system. In this case, it is the latest version of the 4MOTION system with a fifth-generation Haldex coupling. A newly configured sport suspension system (body height lowered by 20 mm), coupled with the new progressive steering system and “ESC Sport” ensures that the dynamic driving experience is exceptional. Optional features include Dynamic Chassis Control (DCC) system with the driving profile selector that features a new Race mode. The Golf R with a manual transmission reaches 100 km/h after just 5.2 seconds (previous model: 5.7 seconds). The car’s top speed is electronically limited to 250 km/h. The fuel consumption is down from 8.5 to 6.9 l/100 km compared to that of the previous model. The new Golf R is equipped with BlueMotion Technology that offers Stop-Start system and battery regeneration. The new Golf R comes standard with a 5 year/90 000km Service Plan, 3 year/120 000km warranty and a 12 year anti-corrosion warranty. Service interval is 15 000km.
