Ever wonder about what people of Joburg have to say about their everyday shenanigans. I took to the streets to find an interesting person to have a chat to. I walked into Jodee’s Bakery and bumped into Jasmine Mulholland, posing with 5kg of cake flour.

There isn’t much of a Jozi scene, rather a group of artisan bakers; each of us searching for our next red velvet. Red velvet anything has become quite the craze.Why do you think? Food, like fashion is full of trends. Red velvet is like a fashion trend but I think like style, is here to stay; it has made its mark on the world and on my waistline. Cream cheese, fondant or butter Icing? Cream cheese icing any day.

Look at you posing with that cake flour I modeled for FHM once in 2005. I could tell! You were feeling your light impressively. And now you’re ‘the baking queen of the Jozi scene’ by the looks of all those baking goods in your basket. Yes. I actually used to sell baked goods to coffee shops and restaurants in Parkhurst but that all stopped once I got married and moved away. Now I do private bespoke orders. How did you start baking? I had microsurgery on my vocal chords and had to take a vow of silence for a month. In that month, with the help of YouTube and Google, I learned how to bake. Oh,Vocal surgery? I sing. Lady of many talents. In some countries. What’s your favourite cake to bake? I have two: one a dark chocolate and almond cake with a caramel-bar ganache. And the other (which is also my husband’s) is a vanilla milky bar cake, thus all

Johnny Clegg, one of South Africa’s most prolific musicians, will be performing for the first time ever at the Walter Sisulu Botanical Gardens. Recently awarded three honorary doctorates from Dartmouth College, CUNY and University of the Witwatersrand, on Freedom day, the 27 April 2012, Johnny Clegg received the presidential IKHAMANGA award as part of the National Orders ceremony. he Beerhouse literally houses 99 bottles of beer on the wall…and 20 taps, in case you’re short of choice. After months of murmurs and beer burps, the Beerhouse Fourways finally launched the last week of July at Pineslopes Boulevard on Witkoppen Road. A huge hit in Cape Town and following a massive sense of FOMO, Africa’s biggest beer variety makes itself at home in the big smog, From Lagers, Belgian ales, Wheat beer and Fruit ales, make up your mind before you get to the bar and irritate the other customers as you scratch your head deciding what to drink. Check out the comprehensive menu for a little direction if you happen to be a beer virgin. We absolutely adored the snacks and beer pairing menu too. Try the roasted pistachios with a Jack Black Pale Ale or Chili Biltong with a Lakeside London Ale. Totally on trend, the Beerhouse is also home to beer-related events. There is a weekly Rock & Roast to the much anticipated and onceyearly OktoBEERfest. The beer scene is alive and well and brewing. Expect big sports events live on two TV screens – but book a table as this place is going viral fast. The best way to not miss out on anything is to follow them on social media.

he flavors of Spain have been welcomed with open arms into the Colony Centre. Before visiting VickyCristina’s I had a look at their website. On the homepage it endearingly states: ‘Please wait while we load some love.’ The concept of love permeates through the entire restaurant. It’s quite simple really, it’s a space filled with passion and warmth. It’s one of my wished-for restaurants in Joburg. I have been obsessed with Spanish culture and food for as long as I can remember. The Nelson Mandela ROUTE A salute to one man’s walk to freedom

I

t may seem like an eerily nostalgic concept but worthwhile nonetheless if this country’s history means as much to you as it does to us. Being Heritage Month we couldn’t think of a better time to feature The Nelson Mandela Route. South Africans and tourists alike can now trace parts of the late former President Nelson Mandela’s footsteps as he traversed the choppy landscape of this country and changed history. KING WILLIAMS TOWN The Nelson Mandela Route starts in King Williams Town in the Eastern Cape which was once a London-based Missionary Station back in 1826. It provides the backdrop to early European influences in a struggle region of British, Boer and Xhosa conflicts. The town’s Amathole Museum, Xhosa Gallery, Missionary Museum and German Settlers display continue to tell the story of the strife. And of course more famously, the late leader of the Black Consciousness Movement, Steve Biko was laid to rest here. Did you know: King Williams Town in the Eastern Cape is also home to the Huberta – one of the furthest-travelling hippopotami in South Africa. Things to do in King Williams Town: If you happen to be in the area, take advantage of the magnificent natural surrounds and visit the white sands of Kidds Beach (ask any student in the area), just 45km out of town. If surfing is your thing then try Cove Rock. Grab a bite: If the Amazon Spur isn’t your thing (although it is a great option if the kids are in tow) then try the famous Sophie’s Choice. Go for the home-grown Karoo

Collectively these heritage sites collect and narrate the story of Nelson Mandela in its original context. To see it for yourself check out the famous display reflecting the life and times of Mandela at the impressive Bhunga Building section of the Nelson Mandela Museum in Mthatha. Heads up: Free guided tours of all three sectors of the Nelson Mandela Museum can be arranged via the museum in Mthatha. GAUTENG Authentically following the journey of Tata takes you to Gauteng where the route incorporates his first imprint into the Province in the 1940’s. From the iconic 8115 Ngakane Street in Orlando West, Soweto now the Mandela Family Museum, to the striking Apartheid Museum, this route tells the Apartheid story in more detail than most of us would like to know. But therein lies its charm. 8115 Ngakane Street or the matchbox home as it has been dubbed, offers a glimpse into the life of a man who despite such humble beginnings, never forgot from where he came. Today the home turned museum is shelter to an assortment of memorabilia, paintings and photographs of the Mandela family as well as a collection of honourary doctorates bestowed on Nelson Mandela from universities and institutions around the world. For the sports fans, there is the famous

boxing belt from Sugar Ray Leonard, a multi-coloured cloak presented to the former president and a row of his old boots. Did you know: Just around the corner from the Mandela Family Museum is the Hector Pieterson Museum and Memorial and, even closer to Mandela’s house, the spot where Pieterson actually fell. Also close by: In Vilikazi Street is Desmond Tutu’s house. Both Mandela and Tutu were Nobel Peace Prize winners. So much to do: These days there is so much to do in this part of Gauteng that you may need to come back after all the museum visits. From Soweto bicycle tours to the Orlando Towers bunjee jumping and a few beers at Chaf Pozi – Orlando West has fast become an attraction for the adrenalin hungry and outdoorsy types. Not to be missed: Sakhumzi’s restaurant – especially if there is a soccer match on. Find it at 6980, Vilakazi Street, Orlando West, Soweto or Nambitha African Steakhouse on the same street. Next up on your journey should include a detour to Kliptown, the oldest residential district of Soweto. The Kliptown open-air Museum is a heritage site and vital chapter in the unveiling of South Africa’s freedom. Did you know: The Kliptown open air museum is where delegates met in 1955 to adopt the Freedom Charter, now the cornerstone of the Bill of Rights and the South African Constitution. This historical museum in Soweto is dedicated to Walter Sisulu, a stalwart of the Freedom Struggle. Did you know: Nelson Mandela had to watch the proceedings at Kliptown from a nearby rooftop. Not to be missed The Nelson Mandela Route is incomplete without a trip to Robben Island off the coast of Cape Town. Now a museum in its own right, Robben Island once served as a prison for Dutch and British soldiers and settler civilians, indigenous African leaders, Muslim leaders and anti-apartheid activists, including Nelson Mandela. Through an initiative set in motion by South Africa’s President F.W. de Klerk, on 11 February 1990 Nelson Mandela left Robben Island under the glare of the international media spotlight, going on to be elected as President of South Africa in the country’s first fully representative democratic elections held in April 1994. Soweto Hotel and Conference Centre in Kliptown. Take a seat at the Jazz Maniacs Restaurant which naturally takes its cue from the famous Jazz Maniacs group from the 50’s. Today local jazz musos descend on the venue to entertain the locals and tourists alike. As for the food, come hungry. The traditional township fare, light lunches or a la carte menu, ensures there is something for all palates. Moving towards Braamfontein is Constitution Hill, where poetically once existed a notorious prison. Today the Old Fort is now a breathtaking multipurpose heritage precinct that allows you to walk through the recreational spaces and view the Women’s Jail, dating back to 1910. There is also a museum that has been made of Nelson Mandela’s cell. Built in 2003, The Nelson Mandela Bridge is the epitome of what Tata stood for. A tribute to his efforts in bridging racial divides it has become an iconic part of the Johannesburg skyline that often forms the routes of local sporting events and even doubled up as a ramp for fashion week one year. Did you know: In November 2004 The spectacular Nelson Mandela Bridge, then one of Johannesburg’s newest landmarks, was awarded for outstanding civil engineering achievement by the South African Institute of Civil Engineers (SAICE). From Braamfontein to the business hub of Sandton, The Nelson Mandela Square is the first port of call for any Madiba related event. It became a place of memorial when Tata passed away and has played host to various activities charity activities – namely the 67 minute campaign. And of course there are no shortages of places to eat or shop in Sandton. We have to admit that we are huge fans of Hard Rock Café and if you haven’t been yet, what are you waiting for? In the inner city of JHB you may also want to visit Chancellor House and The Shadow Boxer Statue too. Chancellor House was the premise of Mandela and Tambo Attorneys in the 1950’s but unfortunately they are not open to the public. liptown is one of the oldest residential districts in Soweto, about 17km south-west of Johannesburg. It is filled with history that is both violent and uplifting. It is most famously known as the area where more than 3 000 people attended what became known as the ‘Congress of the People’ in 1955 to adopt the Freedom Charter - a document in which oppressed South Africans formulated ideas of a society free from apartheid. The meeting was broken up by police on the second day, although by then the charter had already been read. Kliptown was first laid out in 1891 on land which formed part of Klipspruit farm. The farm was named after the klipspruit (rocky stream) that runs nearby. From 1903 the area was home to informal settlements. The area now contains a mixture of purpose-built housing and a large number of shacks and other informal homes. Kliptown was and is still well known for its wonderful social and entertainment venues, with people coming together for jive and dance gatherings that were known as “sessions”. These venues were also a play-ground for greater musicians like Manhattans Brothers, Dolly Rathebe, Letta Mbuli, Caiphus Semenya, to name a few. Today, the population of Kliptown is about 45 000, and the area where the delegates met in 1955 is now a bustling square – Walter Sisulu Square (named after the ANC hero and mentor to Madiba).

The architecture reflects various elements of the area, politics and the people. It is full of symbolism and meaning and is surrounded by the people who were involved in making history, thus making the rest of Kliptown, an “echo-museum”. It offers both local and international visitors an array of history, shopping, entertainment and accommodation. Walter Sisulu Square celebrates what township life is all about, its people, their spirit, their passion and aspirations and

Join the Club

Rand Club celebrates the 110th anniversary of its Club House in December 2014

and Club was launched in 1887, a year after the proclamation of Johannesburg. In its 127 years, the Club has seen two Boer wars, the rise and fall of British colonial rule, the establishment of the African National Congress in 1912, the beginning and end of Afrikaner Nationalism and the hard-won transition to a peaceful non-racial democracy since 1994. In 1886 Cecil John Rhodes and Dr Hans Sauer looked for a site for a gentlemen’s club in the mining camp that had just been named Johannesburg. At the junction of Commissioner Street - the first street in Johannesburg - Loveday and Fox Streets, Rhodes declared: “This corner will do for the club.” The Rand Club’s three homes have all been built there. Johannesburg in 1887 was a rough, raw, restless town. Although its facilities were primitive, the first Club house was a haven for its members. From the start the building was too small; plans to demolish and re-build the Club commenced in late 1888. In February 1890 the new building was opened and was described in The Star as “palatial”. While it was being built the name Rand Club had been cut in the stone-work over the Loveday Street entrance, but before the premises were completed the committee ordered the lettering to be deleted. The Club House has never had any more mark of identification than the monogram ‘R.C.’ on the glass panels of the front doors and on some parts of the front of the building. At the turn of the century, members felt that the existing Club House would not meet the needs of the future. In late 1902 a tender to build the third Club House was accepted. At the annual general meeting in November 1902 an attempt was made to open the Club to ladies. The motion was defeated by a large majority! The Club occupied the new premises in December 1904. The exterior was very much as it is today, although the inside has been

significantly altered. The present Rand Club has a metallic base structure (fabricated in the United Kingdom and shipped to South Africa) clad in concrete. A special feature is the bow windows with stained glass panels on both sides of the passage from the entrance to the main bar which show the signs of the Zodiac, minus Virgo and Aquarius; it is said that they were left out purposely because neither subject was appropriate in a club for men! The design of the building is quite simple: one enters through a heavy double door into a spacious hall which is lit in the daytime by a glass dome. On the right a grand staircase sweeps to the first floor. On the left a short passage leads to the main bar with its magnificent 32 metrelong carved teak counter. It is claimed to be the longest bar counter in Africa. On the left in the entrance hall is the original old-fashioned lift which was manually operated until 2005. The first floor is reached by the finest staircase in Johannesburg (and probably in South Africa). The beautifully worked wood does not creak even 110 years after it was built! The most magnificent rooms are undoubtedly the main dining room and the Library, both perfectly proportioned and richly paneled. On the second floor are smaller function rooms decorated with Club treasures. The most famous room is probably the Rhodes Room with its life-size portrait of Rhodes and rare volumes in the bookshelves. In June 2005 a fire broke out at the Club, destroying furniture and valuable artworks. Selected Club events are open to nonmembers. Rand Club maintains a special atmosphere, and retains a special place, in the city of Johannesburg. Details of celebratory events open to the public will be announced later this year. chef of the month David Higgs certainly needs no introduction. He’s one of Joburg’s (indeed South Africa’s) most recognised and well-known chefs, now the executive chef at Five Hundred at the Saxon.

He’s passionate and enthusiastic about Joburg Having made the move from Cape Town about three years ago, David is thriving in Joburg, not only as the executive chef at Five Hundred at the Saxon but also embracing and enjoying living in the city of gold. He is particularly passionate about the city centre – places like Maboneng and Braamfontein. He finds the raw energy of the buildings dynamic and inspiring. Favourite places to visit: Little Addis on Fox Street in Maboneng and Father Coffee in Braamfontein. He’s an avid mountain biker Gauteng may not have beautiful mountains,

endless trails and scenic beaches but since moving to Joburg, David has started mountain biking again. He lives close to the Braamfontein Spruit, so hopping on to the trail on a weekend morning with his girlfriend is easy and one of his favourite things to do on a rare days off from the kitchen. A typical Sunday morning’s ride covers about 80 to 100 kms. He’s such a mountain biking enthusiast that earlier this year he rode the grueling eight-day Absa Cape Epic for charity. Local bike shop for repairs: Dunkeld Cycles Carbo loading meal before a race: He follows a strict protein diet so he doesn’t carbo load. Before a race it’s a big breakfast of bacon and eggs; and during the race he recharge on dates and droerwors. He’s fanatical about his roof garden After discovering the disused vegetable garden on the roof of the hotel parking garage, David (with the help of Sought after Seedlings) has revived it and planted about half a rugby field’s worth of heirloom vegetables and herbs. The organic garden supplies most of the herbs and vegetables needed for Five Hundred. Walking through the garden, seeing the colours inspires David’s menu for the day: A spring-time vegetable that should be in everyone’s kitchen: Try experimenting with broad bean and pea flowers. He’s not a fussy eater Despite being an internationally acclaimed chef and having won numerous

local awards, David says he’s not a fussy eater and will eat almost anything – his mood dictates what he orders at a restaurant. He prefers to order two or three starters rather than one large main. He also confesses to not enjoying cooking for himself. A Cape Townian who has fallen in love with Joburg, David assures us he’s not ready to leave here any time soon. H

ecause Hello Joburg is not a foodie magazine and we are not foodie writers we met with David to talk about all things not food related. He gave us some insight (at times only a small peek) into the man behind creations like foie gras, porcini and white chocolate mousse topped with pureéd pear; and skate wing and marron, Pepes goats cheese, cauliflower and olive. So, here are a couple of things you might not know about David:

ob Heyns from League of Beers has been kind enough to demystify some of the key tasting terms when it comes to craft beer. Having chatted about aroma, flavour, colour and mouthfeel; he now discusses the final step to tasting a craft beer properly. Describing my ‘overall impression’ of a craft beer is secretly my favourite part of tasting a beer. After the flavour diagnosis, the aroma test and describing how the beer interacts with my mouth; I get to take another draft, close my eyes and figure out if I actually like the beer I’ve been submitting my palate to and how it compares to other beers in its style. Here are your key points when crafting (pun intended) your overall impression: STEP 1: Do you like the beer you are tasting? Here’s your moment to put your two cents in and give your opinion whether it appeals to you or not. Just remember that everyone has their own opinion so serve your two cents with a side order of tact (especially if you’re talking to the brewer, my biggest challenge). STEP 2: Think about the beer style – your expectations of a Porter will be very different to a lager. Is it supposed to be strong, or sweet, or hoppy? If you’re a beerginner, don’t stress. You’ll find out what to expect quite quickly. STEP 3: Do all the elements work together? Take a sneak peak at your notes on appearance, aroma, flavour and mouthfeel. Do they look like they are from the same beer or does it seem like Frankenstein made this brew?

LAST STEP OF BEER TASTING: Overall impression

STEP 4: This is the most important step of beer tasting: take a sip, just for the heck of it. Brewers in SA are a passionate bunch and put a lot of effort into each batch so take a swig and enjoy it. Once you have your ‘overall impression’ of the beer, it’ll be much easier to compare it to another beer. Keep your notes handy to make sure you’re comparing apples with apples. Spioenkop Wines: Made for Thinking T

he heart of South Africa’s apple orchards lies in the Elgin Valley approximately 45 minutes east of Cape Town. After climbing scenic Sir Lowry’s Pass, one descends into an ancient crater at the centre of which nestles Spioenkop Wines. The name, from the Dutch “Lookout” or “Spy Hill” is obvious with a 360 degree view across the region. Purchased by Belgian husband and wife team Koen and Hannelore Roose, this magical spot was devoid of grapes. They meticulously planned and planted an array of vines on the slopes below the dam and surrounding the farmhouse. Known as a pioneer, rebel and upstart, former engineer and sommelier, Koen, has garnered tremendous respect as his wines have received accolades across the globe. The vineyards are tended to on foot and by hand, there’s no supplemental irrigation, no pesticides or chemical weed control; and a lunar cycle governs most activities on the farm. Crazy? Maybe. But these wines are different. Good different. Koen believes that minimal intervention truly reflects a sense of place and a snapshot of the vintage. There is a whole lot of thought and even more passion behind these wines whose boxes are emblazoned with the line “a great wine begins in your head”. And these are great wines for thinking and drinking. The current range includes a Riesling, two Sauvignon Blancs, a Chenin Blanc and a

Pinotage. Put a spring in your step and try: • Spioenkop 1900 Chenin Blanc 2012: Nice slightly tropical, sophisticated flavours of pineapple, peach, and marzipan. Randy, MD Describe your typical workday in five words: Varied. Creative. Communicative. Interesting. Fun. If you could invite one person (alive or dead) to dinner, who would it be? I would love to spend time with Richard Branson – now there is a mentor if ever there was one. He reminds me of my ex-managing director of the Balalaika – the late Richard Pickering – where I worked as GM for about six years. They both share clever entrepreneurial skills yet balance it all with a serious sense of adventure. Both are down to earth, both started out with so little. How do you enjoy spending your leisure time? My leisure time invariably involves golf. I play league for my home club, Dainfern Country Club, which is always challenging and requires a strategic game plan. Any social game is a great way to catch up with friends, get a bit of exercise, and of course to have a good natter. Believe me, men talk more than women! The 19th hole is compulsory – all the walking and talking builds up quite a thirst. And on to another love, wine and bubbly is my weekend staple diet. Pink bubbles are so decadent!

I really enjoy relaxing with my family, but to be honest I am soccer bedornered! Being a retired footballer there is a connection that will never die. Man United is the my favourite team. I also grew up in the Highlands of Zimbabwe and it was there that I developed a love for the mountains, abseiling, climbing, bush trekking... I am the matriarch in my family of three children. I am a single parent and couldn’t have done it all without constant employment and financial discipline. They are getting the best education that I can give them and I have been blessed in keeping the whole thing together. I have learned so much about financial planning over the years with Randy. I have not faltered with my career and the achievements bear testimony to this.
