Platinum Jukebox 10 Decades of Song & Dance

Platinum Jukebox is a journey of music, song and dance starting with the gramophone in the 1920s and ending with the iPod in the 21st Century. We start the journey in the 1920s, when music from Louis Armstrong and Fred Astaire were the platinum hit songs of the week. In the 1930s and 1940s, both the LP 331⁄3 rpm record and the 45 rpm single records were invented in an era of peace, depression and then war. In the 1960s and 1970s we saw the mass production of stereo albums, and turntables become affordable. Soon the world was doing The Twist, The Loco-Motion and The Funky Chicken to songs like Let’s Twist Again, Shout, These Boots were Made for Walkin’, I’m a Believer and Proud Mary. In the 1980s - cassette tapes and compact discs were the music format, along with dancing styles such as The Moonwalk, Breakdancing, Latin American Dancing to massive selling icons such as Michael Jackson and bands such as Frankie Goes to Hollywood and Miami Sound Machine. In the 1990s we encountered The Macerena and Line Dancing to everything from Cotton Eyed Joe, Achy Breaky Heart to Shania Twain’s - Man! I Feel Like a Woman! - while the compact disc remained the favourite. In the 21st century the iPod has become the flavour of the day with downloading taking the place of compact discs. Nirox Sculpture Park in the Cradle of Humankind will be celebrating an age when Music changed the World. A selection of South Africa’s finest acoustic musicians will perform some of the greatest songs from the 1960s & 1970s, live. Songs by Bob Dylan, Leonard Cohen, David Bowie, Jimi Hendrix, The Doors, Johnny Cash, Van Morrison, Nina Simone, Otis Redding, The Beatles, The Rolling Stones and more will be brought to life by local artists: Josie Field, Donovan Borne, Bye Beneco, Nic Dinnie, Justin Serrao, The Urban Village and The Runaway Train Cult. South Africa’s stature in the world of comedy continues its phenomenal rise with the launch of the Johannesburg International Comedy Festival, which takes place over three days from 6-8 November 2015.

Baked Chorizo crusted Kingklip Complemented with stir fried vegetables, herb mash and passion fruit beurre blanc

A tropical dish to surprise your guests during your festive feast Ingredients Kingklip fillet Olive oil Red onions chopped finely Garlic gloves crushed Chorizo sausage chopped Sea salt Black pepper coarse White wine Cream Oyster sauce Soya sauce Japanese bread crumbs Butter Plain flour Passion fruits Cherry tomatoes Large potatoes Parsley Baby Marrow Carrots Red onions White cabbage White mushrooms Fish stock

Method Step 1 Portion the kingklip fillet into 200g each. Season with salt and pepper and then coat with some flour. Pan-fry the fillets on both side. Place the fillets on the side to rest. They must be half cooked as they will be finished off in the oven to create the crust. Step 2 Mix the chopped chorizo with the bread crumbs and chopped parsley. The mixture must be like a paste. Put the chorizo paste on top of the fillets and bake the fish in the oven for 15 minutes at 150 degrees celcius. Step 3 For the beurre blanc we need to reduce the white wine with some chopped onions. Cube the butter into small cubes then add the passion fruit and butter whilst slowly whisking on a low to medium heat to avoid splitting the sauce. Add salt and pepper. Step 4 Boil the potatoes and then mash, adding some butter, cream, salt, pepper and chopped herbs.

Serves 5 Step 5 Cut the vegetables for the stir fry into julienne. Sautée the vegetable mixture with soya sauce, salt and pepper. Add a dash of oyster sauce for taste. Place the stir fried vegetables on the plate and put the baked chorizo crusted kingklip on top of them. On the other side, place the herb mash and drizzle the passion fruit beurre blanc around the fish. Garnish with some herbs and serve.

O

ur Executive Chef, Christopher Groves joined the Indaba Team in 2008 as an Executive Sous Chef and quickly rose through the ranks to Head Chef of the Chiefs Boma Restaurant where he became renowned for his Beef and Beer Potjie and “Big 5” Kebab. Prior to The Indaba, Chris worked abroad in numerous Five Star Restaurants and was mentored by the legendary Marco Pierre White, a 2-star Michelin Chef whose work ethos and creativity were an inspiration which Chris incorporates into his daily menus. Chris also worked on the Queen Mary 2 where he was the Demonstration Chef in the Chefs Galley – a popular restaurant which showcases talented young chefs. Chris took over the reins of the Indaba Hotel main kitchen in 2011 and added flair and creativity to the menus and food presentation with great success, fast becoming a firm favourite on the local dining front with the introduction of a new Bistro-style menu in Epsom Conservatory which showcases his talented team and his love of food. In August 2015, this talented Chef was promoted to Complex Executive Chef, taking on the responsibilities of all kitchens at Indaba Hotel, Fourways and overseeing Indaba Lodge, Gaborone. Smoked Chicken & fig Parfait

Serves 6 Ingredient List

Dressing

100g Smoked Chicken Breast 1 150g Fresh Chicken Breast 100ml 10 strips Streaky Bacon 50ml 100ml Thick Cream 50ml 5g Dried Garlic Flakes 25g 5ml Lemon Juice 6 Whole Figs 25g Fresh Basil 2 Kiwi 4 Red Chilli 1 Head Lollo Roso Lettuce (Curly Lettuce) Salt Course Pepper/ White Pepper

Grapefruit Olive Oil Grape Seed Oil Balsamic Vinegar Fresh Basil

Method ¬¬Roughly chop the smoked chicken breast and the fresh chicken breast up and place in the blender. Add in the thick cream, the basil and a pinch of dried garlic flakes. Blend until smooth then season with the salt, pepper and a dash of lemon juice. In a square bread tin layer it with cling wrap and place the streaky bacon in horizontally. Turn the oven on to 160ºC and in a deep tray fill half way with warm water. Now take the mix from the blender and place in mould. Press the figs in the centre of the mix one next to the other until covered in the chicken mix. Wrap now with the ends of the bacon to close the mix. Now close with the cling wrap nice and tight so it’s completely sealed. Place in to the water bain marie and in the oven for 45-60 minute or until nice and firm. Ones cooked take out and leave to cool. Once it has cooled down put in fridge overnight. ¬¬Peel the kiwis and cut into small cubes. Slice the chilli and add with the kiwi in a bowl and mix. This is to accompany the chicken parfait. Clean the lettuce and break apart roughly with hands.

¬¬To make the dressing cut the grapefruit and squeeze out all the juice in a bowl. Add the rest of the ingredients including the chopped basil. Whisk until a smooth and combined now add salt and pepper to taste. ¬¬To serve, slice the chicken and fig parfait and place one slice on the plate, as well as a spoon full of the kiwi and chilli concasse, and draw a line with it. Toss the lettuce in the dressing and place on plate. Drizzle some of the dressing around and serve to your guests.

Fresh and Festive Lunch with a Healthy Twist

T

he festive season is definitely my favourite time of year, where colourful tradition and good food unites friends and family together in meaningful conversation and quality time together.

Often though, Christmas time can come with many unhealthy temptations, leaving us feeling stuffed and sluggish. With the right ingredient swaps, a heavy - and unhealthy - feast can be transformed into a light, fresh and super good-for-you spread that satisfies in both taste and flavour. Here are some of my favourite healthy Christmas dishes, created especially with your health and wellbeing in mind.

Roast Chicken with Herbed Mushrooms and Peppers Serves 4 | Total Prep Time: 2 hours

Ingredients 1 large free range chicken (approx. 1.5kg) 1 tsp. Pink crystal salt, divided 1½ tsp. freshly ground pepper, divided 3 large leeks, white and light green parts only, thinly sliced 4 tsp. extra-virgin olive oil 1 large yellow pepper, chopped 3 cups sliced button mushrooms 2 cups chopped portobello mushroom caps 2 cups sliced shiitake mushroom caps 1 Tbsp. chopped fresh rosemary 1 Tbsp. chopped fresh sage 1 Tbsp. fresh thyme leaves 1 cup chicken stock 2 Tbsp. rye flour

Instructions Preheat oven to 190°C. ¬¬ Remove giblets (if included) from chicken and trim any excess skin. Loosen the skin over the breast and thigh meat and rub thyme, 1 tsp. pepper and 3/4 tsp. salt under the skin. Tuck wing tips under and tie legs together with kitchen string. Place breast-side down in a large roasting pot. Roast the chicken for 40 minutes. ¬¬ Meanwhile, place sliced leeks in a colander; rinse and drain well. Heat oil in a large skillet over medium heat. Add leeks and cook, stirring often, until softened, about 2 minutes. Add peppers; cook for 1 minute. Add button, portobello and shiitake mushrooms and cook, stirring often, until the mushrooms release their liquid and it evaporates to a glaze, about 7 minutes. Stir in rosemary, sage and the remaining 1/2 teaspoon pepper and 1/4 teaspoon salt. Cook, stirring, for 1 minute. Remove from heat ¬¬ Warm chicken stock and add rye flour. Stir thoroughly and add mixture to mushroom and peppers ¬¬ Return mushrooms and peppers to heat, and allow sauce to thicken. Once thickened remove from heat and set aside ¬¬ Remove the chicken from the oven. Skim or blot any fat from the pan juices. Add the mushroom mixture to the roasting pot and spread in an even layer. ¬¬ Return to the oven and continue roasting for 30 minutes ¬¬ Transfer the chicken and mushroom sauce to an oval serving let rest for 10 minutes before removing the string and carving.

1 large avocado – cut into cubes

¬¬ First, rinse the quinoa in a fine mesh colander under running water for a minute or two. ¬¬ In a medium-sized pot, combine the rinsed quinoa and 1 ½ cups water. Bring the mixture to a gentle boil, then cover the pot, reduce heat to a simmer and cook for 15 minutes. Remove the quinoa from heat and let it rest, still covered, for 5 minutes. Uncover the pot, drain off any excess water and fluff the quinoa with a fork. Set it aside to cool. ¬¬ In a large salad bowl, add cooled quinoa, chickpeas and cucumber and toss well. ¬¬ Add remaining salad ingredients to salad bowl, leaving a little of each aside for toppings. Toss thoroughly. ¬¬ Prepare dressing by adding all dressing ingredients to a blender. Blend for 3 minutes until all ingredients are well combined ¬¬ Pour dressing over salad and toss thoroughly ¬¬ Add toppings set aside and garnish with fresh dill. ¬¬ Serve cool.

Triple layer Chocolate cake with Salted Caramel-Vanilla Frosting Serves 6-8 | Total Prep Time: 1 hour

Cake Ingredients

Salted Caramel-Vanilla Frosting

2 400g cans Black Beans 50g Cacao powder 500g dates 1½ cups (375g) coconut flour 6 large eggs 400 ml coconut milk 1 tsp. baking powder 1 tsp. cinnamon ½ tsp. ground cloves 1 tsp. vanilla extract 80ml agave syrup / 5 tsp. xylitol

170g 125ml 75ml 1 tsp. 80ml

macadamia nut butter melted coconut oil water vanilla extract agave syrup

Toppings Almond pieces – lightly toasted Fresh strawberries – sliced in half

Instructions Preheat the oven to 180°C. ¬¬ Lightly grease three medium sized cake tins with coconut oil ¬¬ Start by draining the black beans and adding to a saucepan along with the pitted dates. Fill with water, bring to the boil and simmer for 3-5 minutes until the dates are as soft as can be without falling apart. ¬¬ Drain the beans and dates and add to a blender along with coconut milk, agave/xylitol, cacao powder, cinnamon and cloves. Blend until smooth and pour into a large mixing bowl. ¬¬ Add the whole eggs and vanilla extract to a bowl and beat thoroughly for 3-5 mins until light and fluffy. Slowly fold eggs into the bean and date mixture, stirring well. Add coconut flour and stir continuously until all ingredients are well combined. ¬¬ Divide evenly into three medium sized cake tins and place in the oven to bake for 50 minutes, or until you can insert a knife into the cake and it comes out clean. ¬¬ Whilst the cake bakes, prepare the frosting: Simply blend the coconut oil with the agave syrup, macadamia nut butter, vanilla extract, water and a generous pinch of salt until smooth. Leave aside to thicken while the cake bakes. ¬¬ Once the cake is cooked, leave on a cooling rack until cooled. Once cooled, start by buttering the bottom cake layer with frosting. Place second layer and butter with frosting. Finally place third layer on top, and drizzle with remaining frosting. Place in the fridge immediately to allow frosting to harden. ¬¬ When ready to serve, top with toasted almond pieces and fresh strawberries.

Fix’in Diaries - for bicycle awareness

e tend to easily forget the intention and importance behind public holidays these days. But this year, Heritage Day was slightly different for the odd 50 Joburgers who enjoyed Fishtail Rides courtesy of Fix’in Diaries, Vodacom in The City and Puma.

Fix’in Diaries is a locomotive movement for bicycle awareness. Established in February 2014, Hussain van Roos, Mojalefa Masopha and Karabo Masopha founded what has now become a fun-filled experience for many. This came at a time when the Masopha brothers had lost their mother and thus threw themselves into building bicycles as a distraction. Hussain was the final piece of the puzzle by bringing in the business acumen. Then friends and family saw the potential and began asking how much their built bikes cost. The mind finds clarity by cruising beside cars in Johannesburg’s newly installed bicycle lanes. The body gains definition in the thighs and core thanks to peddling through life. The spirit has enough room to breathe deeply and see clearly. Connectedness is the name of the game during Fishtail Rides. But it all comes so naturally – you have absolutely nothing to fear. From professional bikers to amateurs, Fix’in Diaries took us on an adventure through Braamfontein, Brixton, down Albertina Sisulu Street into Newtown, then Marshalltown all the way down Fox Street into Maboneng. With

a few pit-stops along the way the group of 50+ riders eagerly made their way back to Great Dane for a braai to refresh their senses. It felt monumental! To mobilise people to use another mode of transportation. “About R120-million has been allocated towards creating separate bike lanes that will connect Wits University and Park Station. The route will connect areas such as the inner city, Westbury, Auckland Park and parts of Brixton. Joburg is embracing cycling like never before, with plans to construct bicycle lanes between Park Station and Ellis Park, as well as between Alexandra and Sandton.” Johannesburg Development Agency reassuring us to get ourselves cycling. Savanna’s Unending Love Affair with Comedy “It’s dry but you can drink it” finds resonance in South African’s hearts – portrayed by their full-faced smiles or sneaky smirks when recollecting a Savanna Premium Cider skit. Since Savanna launched in 1996, “it has always been an ardent supporter of comedy. olidaying in Cape Town has fast become one of the most popular excursions for South Africans. Seeing as it was an appropriate time to do so (because when isn’t) we hopped onto the earliest flight and headed to the mother city for a mid week break. As ephemeral mountains began to draw from the heavens and clouds began to drift, we landed. The magic was just about to begin. Our first stop was a trip to the exceptional One&Only Resort. A massage and pamper day is always an integral part of any trip. So we opted for the famous and world-renowned One&Only Resort at the Victoria & Alfred Waterfront. Upon entering the resort I thought I might have been hallucinating from excitement. A beautiful tropical sanctuary awaits overlooking the majestic Table Mountain, fitting for a spa journey. From the moment you enter the spa you are welcomed with hospitality and grace, you are made to feel special. The real star of the show at this magnificent space is the breathtaking view of the city. This restaurant is ideal for a romantic date night or an evening under the stars with friends. Chilled and ever so cool, this restaurant has enough comfort and splendor to make it an incredible success. The restaurant’s signature dish and our most favourite has to be the Pot Luck Club fish sliders. These babies are sure to make your mouth water. Served in a steamed bun, crunchy, crispy and fresh, they blew our socks off. The restaurant also serves up the most delicious vegetarian dish of ash-baked celeriac, lentil and mint dressing, roasted hazel nuts and handsomely aged balsamic vinegar. What a delectable creation. A lavish, yet subtle affair, dining at The Pot Luck Club, transformed by the glistening night sky was a burst of happiness, especially because we nabbed a table with the best viewpoint of the city. And after devouring our tapas-sized plates, we were left feeling more than satisfied.

Next we were off to the famous Myoga Restaurant, situated at The Vineyard Hotel in Newlands - a sense of splendor. Firstly let us begin with the fact that there is an open-air kitchen! Clever and captivating. It certainly unlocks this dreamlike experience! We were treated to a seven-course tasting menu dinner. Need I say more? Paired with a wine for each course, it was exhilarating to explore the glees of Mike Bassett’s venture. The exquisite six-acre, landscaped gardens are the first thing you notice about the Vineyard Hotel. The recently renovated hotel is designed to emphasize the beauty of Cape Town and to showcase the city in all her glory. The property is unique, tasteful and continues to innovate, offering luxury in a refined ambience. Now to try and put into words the gastronomy is rather difficult because it really takes your breath away. Imaginative and quirky yet original and individual, the menu certainly keeps you on your toes. This is one of the most elaborate dining experiences you will ever have. It impresses from the start and takes you on a magical journey, each dish almost too pretty to eat. Starting with the smoked heirloom tomato salad with toasted cheese ice cream and lacto fermented basil and ending with the extraordinary granny smith, sour cream apple cake with a decadent caramel crème pâtissière, roasted apple ice cream, apple gel and almond apple crumble- each and every dish is an exploration, an adventure. Although seven courses may seem extreme, trust us, you will find the space! You will succumb to the indulgence. Heaven!

Babylonstoren - Marvelous, Majestic, Magical” A trip to Cape Town would not be complete without a visit to The Winelands and boy did we visit one of the best estates in Stellenbosch. On a compact tract of land lies a manor house founded in 1777 with Cape Dutch Architecture, and it’s in this distinct space where Babylonstoren began. Epitomizing the tradition of loving life, built on a foundation of creative lands, laid out in a beautiful symmetrical format, this is one special location. And although the Cape possesses many a wine estate, this one stands out the most for us. Having long realized that the Western Cape is celebrated for its wine lands, it’s not shy to give something extraordinary, like Babylonstoren. The sense of the unexpected is evident in the continuous surprises discovered along the way. Starting with the majestic two hundred hectare gardens, which gesture towards the intricate, however, still managing to remain organic, biological and in their natural form. Fruit trees lounge in these orchards, nectarines, plums and lemon pyramids and vegetable hierarchies like pumpkins, butternuts and herbs - which, whilst being pruned and preened, can also be picked and enjoyed. It is rather charming to pick your own salad to indulge at lunch, it is kind of like digressing back in time to how the old world used to be, natural, authentic, sublime. A neutral palette of greens encompasses the location and extends into the wine cellar with a vivacious Viognier 2015 with white peach accents and a Nebukadnesar 2013 that will blow you away, the Babylonstoren wine selection is renowned and distinguished. My favourite was the Babel red blend (perhaps because it has a hint of chocolate). The best news is: when you visit the Greenhouse Restaurant you get to experience all that the garden and cellar has to offer. You can create your very own tea with the herbs and spices picked from the gardens and indulge in a fresh trout sarmie with homemade brie. Delightful. An inspired space with an abiding love for nature combined with passion and vigor make for one exceptional experience.

Contributing to this supremacy is the gorgeous cuisine and wines served at the restaurant. We were fortunate enough to experience the Chef ’s table, a two-seater table inside the kitchen. We were treated to exceptional food, flavours and innovative dishes. Each dish was gracious and suave, and we were taken on a journey through the culinary realm and into the chef ’s genius mind. A wonder, blissfully private and luxurious, we can’t wait to return! Our final stop on this world wind journey was the sensational Hemelhuijs, a star in the city. Jacques Erasmus is a genius. He has created a magical space, a gem right in the heart of the city. It is hard to be ignored. Perched at the top of Waterkant Street is Hemelhuijs, a wonderful whimsical eatery. A distinct style and flavour makes for all the benefits of a super-dashing restaurant. Not to mention the food is exceptional! Whether you dine outside, basking in the sunlight and marveling at the walk-bys or inside, where you can’t help but be mesmerized by all the eccentric décor, it is an inspiring space. Ever changing, ever evolving. This restaurant holds no pretention but rather a sophistication of food, of flavour and of beautifully presented dishes. Let’s begin with the newly prepared drinks. We opted for the freshly pressed blood orange with prosecco and the non-alcoholic apple, beetroot & blood orange freshly squeezed juice, this certainly got our taste buds tingling. For starters we shared the gorgeous deconstructed garden salad, with free range boiled egg, aioli, and herb-grilled feta. Absolute perfection, a reason in itself to return. For main course we had the roast beef sandwich, moreish, wholesome and ever so delicious. What a treat! H

A trip down memory lane in the old mining town of Cullinan with Alan Rosenmeyer

C

ullinan is a small mining town that will forever be remembered as the site where the largest ever diamond was found. We took a road-trip there hoping to find the next record breaking diamond. We were unsuccessful in this mission but, instead, found a quaint and charming little town with many gems to offer. Heading out from Johannesburg in the stunning BMW 228i convertible, with top down of course, bypassing Pretoria, the entire journey took about an hour of easy cruising. This type of cruising is the ultimate way of travelling and living, in my opinion, made so much more enjoyable in a convertible that has all the power and comfort that you could ever wish for. Arriving in Cullinan, it almost feels as if you are back in 1905, the year of the historic find. A great effort has been made throughout the town to recreate the atmosphere that must have existed during those glory days. A chat to Anton, the curator of the diamond museum, as well as the tour guide for special tours through the diamond mine quickly shows his excitement and enthusiasm. The tours take you through the town in a special vintage viewing vehicle and can include a visit underground in the mine. Sadly, it was too late in the day to take advantage of this tour. Anton informed us of the amazing fact that the hole in Cullinan is actually 4 times larger than the Big Hole in Kimberley. The difference being that the Kimberley hole was entirely man made whereas the Cullinan hole was partly dug by man and then completed mechanically. There is an easily reached lookout point above the hole. (You have to traverse a short section of uneven and rocky roadway to get there, but its entirely worth the effort). Just outside the entrance to the mine is an area of old mining cottages that now house shops selling quaint and quirky items, as well as numerous restaurants. Studio 14 Restaurant was our stop for an excellent lunch. The restaurant chef and owner,

Roland, regaled us with stories of life in the village as well as telling us of his passion for only serving freshly prepared dishes. Nothing is ever frozen in his kitchen. As a retired micro-biologist, maybe we could all learn something here. Roland also takes pride in his herb garden which produces all the herbs that are used in the restaurant. Overall, well worth a visit. Across the road is an open air playpark, containing various old mining implements and machines from bygone days. These are all open and available for little kids (and probably bigger kids) to climb on and experience a bit of what it must have been like to live and work in Cullinan in those days. Another interesting stop is the old railway station which now contains various antique and second-hand shops as well as a coffee shop on the old platform. It doesn’t take much imagination to picture the hustle and bustle that must have taken place here back in the day. Speaking of the railway station, Friends of the Rail organise occasional very special outings by steam train to Cullinan. Departing from Pretoria, this would be an outing to remember. A visit to McHardy House Museum is a must. The house was built in 1903 as the residence of the first General Manager of the mine, William McHardy. The house was occupied by 2 of his daughters until their deaths in 1984. The house has been kept in its original state for you to enjoy. Cullinan is full of stately guest houses, there is also the Premier Hotel. The hotel was originally opened in 1908 and has recently been restored. One can almost picture the activity that must have taken place in the bar on weekends. Imagine a group of thirsty miners above ground after a long and hard shift. Overall, if road-tripping is your idea of a great way to spend a day (and possibly enjoy testing a new car at the same time), Cullinan is well worth the enjoyable drive.
