It is hard to get away from food when you live in this part of the world. And why would we want to anyway? The “Mediterranean diet” has an ultra-cool reputation in global culinary circles, hailed as the cornerstone of a healthy lifestyle and a cure (or at least a preventative measure) for a multitude of ailments. Furthermore, we are able to enjoy the finest cuisine from many other parts of the world, either dining out in style at a chic beach club or savouring the “menu del día” at a favourite local restaurant. Here on the Costa, we have several Michelin-star restaurants – as well as numerous others that would be deserving of that honour – and one of the world’s most celebrated chefs, Nobuyuki Matsuhisa, has just opened his first Nobu establishment in Spain, in Marbella. Gourmet markets have opened up in Málaga, Fuengirola and Marbella, another is earmarked for Estepona, and the oft-maligned Torremolinos has launched an online gastronomy initiative aimed at moving on from its clichéd image of sangria and fried fish. Even the barbecue-grilled sardine is enjoying its moment in the limelight, with a campaign underway for the “espeto de sardinas” to be granted “Intangible Cultural Heritage of Humanity” status by UNESCO. Supermarket shelves are full of “international” products we used to have squeeze into our luggage after a trip back “home”, which means we can bring all these diverse ingredients of a cosmopolitan Mediterranean culinary lifestyle – a melting pot of tastes, flavours and aromas – into our own homes. Be it a relaxed evening meal with the family, a Sunday barbecue with friends, or a more elaborate dinner party for a special anniversary, the home is the centrepiece of our love affair with food. That means choosing the right tableware, so to help in that respect in this issue’s Décor & Design section we feature an eye-catching range of table settings, including planters and vases. In recent years, the kitchen has been transformed from essentially just a functional space for food preparation and storage to a social living area where families and friends can share a meal or light snack together, and ardent amateur chefs can experiment with inventive dishes picked up from recipe books and ubiquitous TV cookery shows. Check out our kitchen section for latest trends and ideas that will help you create a foodie’s heaven in this new focal point of the home. Cool Plantation-Style Shutters for the Coast Two new fitting jobs by Shutters in Spain have the same white lacquered interior shutters made of basswood, but the final result could not be more different.

The first project was finished at the beginning of May 2017. This apartment, in a recently completed development west of Estepona, features a highly contemporary exterior and a light and bright interior. It has terraces facing from east over south to west, and the amount of light entering the home is enormous. It therefore needed window dressing that could withstand the heat and UV-rays, block the light when necessary and, at the same time, diffuse the incoming light to give the rooms a warm, cosy feeling in spring and winter. After viewing the dimensions of the windows leading onto the terraces, Shutters in Spain chose 89-millimetre slats, whereas the windows facing north-east have 63-millimetre slats. All are painted in the brightest white, and are fitted with the Clearview operating mechanism. The biggest shutters are bi-fold, which means you can open them up completely to one or both sides, or just open up a part and keep the rest closed. The triangular shutter high up in the wall “isn’t just a nice feature”, according to the company. “Our client found out that none of the more common types of window dressing was suitable for this window shape, and that was the reason they contacted us. Because wooden shutters can have any shape imaginable, these ones definitely solved the problem.” The second project was completed at the end of May. It is a detached, traditional-style villa in Villahermosa near Cádiz that has just been completely refurbished. It has numerous small and mediumsize windows, and the interior is warm and cosy – with solid wooden floors, off-white paint, beige fabrics and dark furniture. The interior tends to be a bit dark, so a slightly offwhite paint was chosen. In combination with the typical elliptical shape of the slats, it reflects the light into the interior. Forty-eight-millimetre wide (or “small”) slats, a traditional tilt rod and a tieron-tier fitting (which means there are two shutters, one on top of the other) complete the “real plantation shutter feel”. In the kitchen the shutters were fitted onto the tilt and turn windows themselves, so they remain operable. In order to be able to open the terrace doors either half or entirely, Shutters in Spain chose to fit a bifold sliding system that allows for the shutters to open to either side – “the most versatile system to cover larger surfaces”. Summer is here, and sprits are brighter after the winter rains and greyness. So what better than to get out and see what brightness we can bring into our homes. How? Easy: get gardens inside – big or small, you can always do it. There are millions of ideas, to suit your pockets and home size. The way to do this is simple: always think that the plants need good sunlight and soil, never too much watering, and adequate shade when necessary. If there is good air circulation that is an advantage. I love seeing all the wonderful ideas which people have to enhance their homes. Of course, there is nothing to stop you being as fanciful as you like. My articles are focused on not destroying our planet from the ravages we have caused, and there are a myriad of possibilities. Here are a few ideas from people around then world… Asiatic influences are always popular, a small area somewhere inside where you can relax and day-dream with or without someone accompanying you.

Think how much space you have and what you want the plants to do: are they for show, to calm, for colour or just because you like them. Think of their size: you can’t plant anything which dwarves a space unless you have a huge space to play around with. Plants grow very well going upwards, so that is another excellent option if space is not at a premium. Do remember that plants are masters at cleaning the atmosphere, and think about what they can do for your home in this respect. Sweet smelling flowers can soothe, while certain plants such as citronella, lemon grass and lavender repel mosquitoes and other nasty insects. I have lavender in large pots outside the bedroom windows and, apart from the perfume, the horrid mosquitoes don’t appear. So you see, Mother Nature looks after us – we need only to know what to do.

Commissioning an Expert Broker Who Protects Buyers’ Interests Marco Dalli, who can usually be found buzzing around the Marmorin Design Studio, has lived on the Costa del Sol for more years than he cares to remember. He has seen the property market take twists and turns that would make anyone feel dizzy. As Marco’s name regularly crops up with established brokers and big-name real estate companies here on the Coast, we thought we would catch up with this colourful character to find out what is really going on in the current property market…

Marco notes, “The property market has certainly had an upturn and over the last year or so the Coast has enjoyed a resurgence of interest from avid buyers wanting to purchase their own idyllic haven. Due to this heightened market activity, real estate agents have understandably reacted with enthusiasm. As there are now so many real estate brokers, and so many vendors listing their properties on the market sector database, real estate agents are increasingly having to split their commissions with their competitors which, as it goes without saying, is not something they particularly like. This has led to a tendency for agents to mainly show their own listed properties over any other properties available on the market, which might not necessarily be the most suitable property for that buyer – regardless of whatever else is out on the market at the time. How I work is totally different and, in my opinion, it is the best way to look after the interests of the buyer. I am commissioned to work together closely with the buyer to find the best property investments I can by contacting my large network of established

brokers, taking away from the client all the aggravation and stress. As I don’t list properties, I am totally unbiased and will never have the need to push certain properties onto a client for my own financial gain. I simply find the right property at the best price possible using my broad knowledge of the market and a handpicked selection of properties supplied by my contacts – giving the buyer options that best suit their needs. ER Arquitectos and OMAR Constructora are two well-established and highly regarded companies in the world of architecture and construction. Their philosophy as a team, under the Bespoke Living mantle, is based on hard work right from the start, liaising closely with all those involved in the construction process in order to familiarise themselves with the project throughout its duration, and thus be able to minimise costs and maximise quality for clients. The single-family home project featured here was created with the objective of respecting, as much as possible, the plot’s topographical conditions. To that end, their strategy was focused on creating a support platform for the home that would also minimise earth movement and preserve the existing trees. Hundredyear-old trees that had survived a multitude of difficulties over the years, including fires and droughts… The home was conceived as a gentle and subtle rectangular prism located in a dominant position on the plot, with a glass-oriented floor plan that enhances the landscape and surrounding land. Its clean, open geometric lines reflect the designers’ desire to avoid the area’s customary and predominant concept of building hefty structures. The result is a home that has been devised as a space that opens

out to its surroundings and also brings them into every corner of the indoor areas. That is, a geometrical element that defines space based on the principal qualities of its volume without being hampered by visual limitations other than those determined by the land itself. The home acquires its own personality through a perimeter room that links the functional focus of the indoor areas with the creation of outdoor living spaces. This aspect also had a significant influence in encouraging the architects to ultimately design the home as a single-storey structure, in spite of problems caused by the plot’s existing topography. The villa has a marked horizontal character, which makes it stand out from other typical buildings in the surrounding area, while ensuring its complete integration into the landscape. Otero group is a family business… what were its beginnings and how it did it come to Marbella? Otero Group was founded in 1955 by my grandfather, Antonio Otero, who built homes for families in towns around La Coruña. During my father’s era we also worked on a lot of public works, especially in Galicia; and when I joined the company we began to develop residential projects. Before the crisis we were developing and building in Galicia and on the Costa Blanca. When the crisis hit, I decided to move to Marbella, knowing that here on the Costa del Sol we would come out of the crisis earlier, and also keen to seek clients with greater spending power so we could create some really spectacular designs. Now, both my family and I are very happy in Marbella, and we plan to stay here for good. In fact, we are focusing all the group’s activities here. Tell us more about the services you offer… We offer our clients – both private individuals and developers – a single point of contact and responsibility for the whole construction network, from looking for land, designs and licence administration to, of course, the final construction. We are architects, builders and developers. What makes us stand out from other companies offering similar services is that we are the only company on the Costa del Sol with construction in our DNA. I’m passionate about construction, and our work is always completed to an impeccable level. We also offer remodelling and renovation services. What kind of projects do you carry out? Mainly villas. We have specialised in single-family villas with a contemporary design and sale prices under €1 million. At the moment we have 40 projects on the go on the Costa del Sol, most of them already sold. Thanks to the fact that we are builders, and we have a major proportion of our services outsourced to the La Coruña offices, we can offer prices that are well below those of our competition.

We are also involved with apartment projects, both the design and the construction, for our real estate developer clients. When it comes to renovations, we do everything, from an apartment to a complete villa refurbishment. Take us through the standard procedures when undertaking a project… First of all, the most important thing for us is to know our client and analyse their requirements, whether they are a developer or a private individual. Once we understand each other and know what they need, our team of architects presents a completely free design proposal and our building department provides a closedprice quote. This means that, right from the first minute, our clients know how much their whole project is going to cost, and we guarantee by contract that this price will not be higher. While the work is being carried out, our team is in constant contact with the client, sending photos of the project’s progress, as all our clients are outside Spain. In conclusion… Otero can offer prices up to 20 per cent below those of our competitors because our staff includes architects as well as the construction team. Furthermore, our large number of projects and our decentralised structure in Galicia enable us to operate with very tight overall costs, which is reflected in our prices. DESIGN showcase Casa Décor Celebrates Anniversary Milestone

Over the past 25 years Casa Décor has showcased latest decoration and design trends at 50 venues of impressive architectural and cultural significance, including embassies, schools, mansions and factories. This year, the exhibition returned to its origins in 1992, taking over a majestic residential building dating to 1900, in Madrid capital’s most exclusive and luxurious area: the Los Jerónimos suburb. Located at Antonio Maura 8, the building was classified as the most expensive, per square metre, in Madrid in 2015. A “nugget of gold”, in the words of the experts… The 25th anniversary edition of Casa Décor included speeches and round-table discussions involving leading figures in the world of interior decoration, as well as the presence of top brands and companies such as Villeroy & Boch and Gancedo. Designer Erico Navazo created a wellness project for Villeroy & Boch (pictured

above), transforming a bathroom into an intimate, comfortable and sophisticated oasis with an ocean theme. Italian shipyard Sanlorenzo sought out a diverse range of cutting-edge design options for its high-range SL86 yacht. The mega-yacht’s interior was designed by Marty Lowe in a version tailored to the US market, and was inspired by marble traditions from Carrara, where the shipyard is located. Lowe used large marble slabs to decorate the interiors and external lounge area, focusing on the lightness and luminosity of the spaces. Wide windows, an open staircase, light colours and carefully studied lighting were brought together to offer an ample, welcoming space which ensures guests’ maximum comfort. The designer’s keyword is “light”, which is why the Le Pietre Luminose collection by Lithos Design Primes was chosen to decorate the living space, creating a luminous “backstage” area behind the dining space, which becomes the focal point of the open space. The Le Pietre Luminose collection Rigel is one of eight models of back-lit modular three-dimensional stone coverings, “where light drives the design and the design directs the light into fascinating luminous and ornamental effects”. The collection was put together after thorough research into illumination techniques applied to the translucent properties of marble. “With Le Pietre Luminose, walls spring to life. Light enchants and enhances every facet of the design… and reveals every difference in the slope, in the thickness and in the cut of the stone, highlighting the multiplicity of the worked surfaces. Chic Designer Style FOR ROOM MATE GERARD IN BARCELONA

When interior decorator Jaime Beriestain was commissioned to design the Room Mate Gerard interior areas, he had a clear vision. He wanted to create a “masculine, comfortable and informal” hotel with a sense of “mischievousness and seduction”. He was keen to break traditional design rules and create a fun-filled, charismatic, urban and contemporary establishment aimed at a public seeking new experiences, and to that end he opted to use “rough materials”: concrete, terrazzo and wood. A sophisticated lighting system also helped him break the mould. Dimly lit spaces combined with subtly dark areas served to create a refined and cosy ambience, reinforced with a palette of Tinta black throughout the hotel. Celebrated chef Nobuyuki Matsuhisa, who owns 35 restaurants around the world, has now opened his 36th in the prestigious Puente Romano Beach Resort & Spa in Marbella. It has the honour of being the first Nobu restaurant in Spain, and joins the resort’s already huge and impressive portfolio of restaurants, including the Michelin two-star Dani García establishment. Nobu is renowned for fusing Japanese cuisine with Peruvian influences, and Nobu in Marbella offers such signature classics as Black Cod Miso, Tiradito and Yellowtail Jalapeño, while also including dishes that have intriguingly taken their inspiration from Marbella itself. Nobu is also famous for its innovative cocktails made by expert mixologists, who weave their magic on the terrace – further enhancing the vibrant ambience of the resort’s Plaza Village gastronomic hub. Interior designer Jean-Pierre Martel, together with Studio PCH, designed the restaurant to create a contemporary, natural feel and look with wooden floors, ceilings, walls, tables and chairs highlighted by the white accents of seat cushions, tableware and napkins. There are indoor and outdoor dining areas, an open kitchen and soft lighting to provide a welcoming ambience. This is not the only Nobu project planned for Marbella. They are also in the throes of developing a new boutique hotel that will offer a select number of luxurious suites and a holistic approach for distinguished guests, as well as priority bookings for the Nobu restaurant, Natura Bisse amenities and a private swimming pool. If Nobu hotel guests prefer to dine privately in their room or by the private pool, there will also be a 24-hour room/pool service in which dishes from the restaurant are brought to them. It’s All About Grapes By AJ Linn

Anyone going into the wine business over the last 20 years could be classified as either crazy or knowing something nobody else knew. With consumption dropping like a stone in practically all wine-producing countries, and regulation becoming stricter when it should be getting easier, can the profits from selling wine really be as tempting as that? French internal consumption, for example, dropped 20 per cent during the 1990s, making export markets a matter of life and death. Italy, Spain and Portugal are all in the same boat. Could this be put down to over-regulation? Any winemaker wishing to use Cabernet Sauvignon in the Rhone, or Riesling in the Loire, or Chardonnay in Bordeaux, would see their wines immediately declassified and only be permitted to be sold as “French table wine”. Mad of course, but those are the rules. Winemakers in one of the world’s newest production areas, Texas, do not enjoy the usual fairly relaxed controls typical of the USA. After Napa, Texas is the fastest-growing wine tourism destination in the US, and Texan wines get better every year. However, the legislators want to stick theirs oars in, and are planning to pass a law obliging growers to use 100 per cent Texas-sourced grapes. Currently the amount has to be 75 per cent, as in most states. One winery owner recently observed, “We should not reduce the ways winemakers have to make better wines.” As a guide to where the state’s wine industry could be heading, its premium boutique winery, William Chris Vineyards, produces a Mourvèdre that took a gold at the 2014 Concours International de Lyon in France. As has been pointed out in this column on previous occasions, over-regulation does little for wineries, and in Spain particularly the 70-odd quasi-governmental regulating bodies are little more than jobs for the boys. Most of them dictate to producers what grapes can be used, and in some areas they even insist on approving every new wine before it can be put on the market. These Consejo Reguladores are responsible for promoting their regions, but few do it in anything but an amateur and cost-ineffective manner. So it really does follow that making wine is not just a matter of leaning on the vineyard gate and watching the grapes grow. To have form is a must, and if that form is related to the administrative jungle of winemaking rules and regulations, so much the better. FINE PEDIGREE FOR CM MORO FLAGSHIP Carlos Mora, scion of a Rioja winemaking family going back for centuries, did not decide to go into the business until the beginning of the century. His professional career was outstanding, and in a short time after university he qualified as an agricultural engineer with a diploma in business administration, and doctorate in oenology and viticulture, as well as a diploma in economics and a master in communications

technology. For seven years he worked in the ministry of agriculture and he was later deputy secretary general in the Spanish federation of industries’ food and beverage section. Among many other official positions before starting his first winery, Carlos was a member of the Airbus intergovernmental committee. Most wine drinkers will instantly recognise the Matarromera brand, a Ribera del Duero label that has established itself among the top names in little more than a decade. It is logical that with Carlos’s background he was not going to be satisfied with just one bodega or even one region. He progressively acquired six other wineries, among them Valdelosfrailes in Valladolid, Rento, located in an old Jesuit convent, Emina Medina in Rueda, and Cyan in Toro. The creation of the Emina Wine Interpretation Centre in Valbuena de Duero led to the establishment of a wine museum and wine tourism complex that catapulted Emina to premier reference status in the region. In more recent years Moro founded Abrobiotec, a company dedicated to biotechnology applied to the food industry, and Esdor Cosmetics, engaged in the development and production of natural products. There is also Matarromera USA Inc. and Sinalcohol SL He is part of the Gastronomy Academy in Valladolid and the Wine Guild of the Ribera del Duero, and is a member of the Social Council of the University of Valladolid. In 2013 he was appointed vice president of the Wine Technology Platform, an association aimed at promoting and developing the wine sector, and also president of the Wine Route in Rueda. However, it his latest adventure into the Rioja region that has been the cherry on the cake for Carlos Moro. The flagship wine from his new San Vicente de la Sonsierra bodega, CM Moro 2015, has one of the best pedigrees of any wine, made by a great winemaker and businessman in Spain’s major region. Of limited production from a 20-hectare vineyard, it will continue to improve in the bottle for many years. Matarromera’s Ribera del Duero wines start with the excellent Club 2013 at around €18, and the Tinto Reservas 2010, 2012 and 2013 are around €30+. There is still some of the superb Tinto Gran Reserva 2010 left at a justifiable price of €72, and there are is a delicious barrel-fermented Verdejo 2015 at €25. Detecting Sleep Problems AND THE BENEFITS OF FIBRE

WEARABLE PATCH MAY HELP DETECT SLEEP APNEA New treatments for diagnosing and treating sleep apnea may soon make it much easier to combat this problem. Scientists have now come up with a disposable diagnostic patch that effectively detects obstructive sleep apnea across all severity levels. The device is called SomnaPatch and it weighs less than one ounce (28 grams) and records nasal pressure, blood oxygen saturation, pulse rate, respiratory effort, sleep time and body position. The team developing this product reports that the patch is highly accurate and could help those individuals who are unwilling or unable to go to a sleep lab to get diagnosed. “Our study provided clinical validation of a new wearable device for diagnosing sleep apnea,” said principal investigator Maria Merchant, PhD, CEO of Somnarus Incorporated in the United States. “It was most surprising to us how well this inexpensive miniature device performed in comparison with in-lab sleep studies.” Simultaneous polysomnography and patch recordings from 174 subjects were included in their analysis. An additional home usability study found that 38 out of 39 users were successful in activating the diagnostic patch and collecting at least four hours of sleep data while relying only on the instructions included with the device. “Most home sleep diagnostic devices are difficult for patients to use and are disruptive to patient’s sleep,” said Merchant. “Our study showed that this wearable home sleep monitor is very comfortable, easy to use and does not negatively affect sleep.” DIETARY FIBRE MAY PACK A HOST OF HIDDEN HEALTH BENEFITS Consumption of dietary fibre from breads/cereals and fruits may independently influence the likelihood of ageing successfully over 10 years, according to researchers

in Australia. It has been known for decades that a high-fibre diet provides important gastrointestinal benefits. Now, it appears it does much more than that. Scientists at The Westmead Institute for Medical Research explored the relationship between carbohydrate intake and healthy ageing in more than 1,600 adults aged 50 years and older. They found that out of all the factors they examined, which included a person’s total carbohydrate intake, total fibre intake, glycemic index, glycemic load and sugar intake, it was the fibre that made the biggest difference to what the researchers termed “successful ageing”. Successful ageing was defined as including an absence of disability, depressive symptoms, cognitive impairment, respiratory symptoms and chronic diseases including cancer, coronary artery disease and stroke. Study investigator Bamini Gopinath, PhD, who is with The Westmead Institute for Medical Research, said these findings were very important and pointed to a simple way to improve quality of life in older adults. “Out of all the variables that we looked at, fibre intake, which is a type of carbohydrate that the body can’t digest, had the strongest influence,” said Gopinath. “We found that those who had the highest intake of fibre or total fibre actually had an almost 80 per cent greater likelihood of living a long and healthy life over a 10year follow-up. That is, they were less likely to suffer from hypertension, diabetes, dementia, depression and functional disability.” This study backs up similar recent findings by the researchers that highlighted the importance of a healthful diet and healthy ageing. In a previously published study, Westmead Institute researchers found that adults who closely adhered to recommended national dietary guidelines reached old age with an absence of chronic diseases and disability, and had good functional and mental health status.

Canna Patio in Tarifa is highlighting latest trends for “farm to table eating” with a series of Bio Hemp Days throughout summer. The first was held in June, coinciding with the restaurant’s inauguration of an additional store selling hemp clothes and linens, a tattoo parlour, and a pharmacy “where people with ailments such as old injuries that ache, wounds that won’t heal, eczema or arthritis can buy creams, oils and ointments”. The other two days scheduled at the restaurant, which uses organic locally produced ingredients and infuses select dishes with hemp and CBD oil, are the last Thursdays of July, August and September. Paco Pozo, an Oscar-nominated filmmaker and owner of the Canna Patio, suffered a surfing accident at 25 that snapped his L5 vertebrae and pushed his shoulder blade through his chest. He was in hospital for six months and, because of his aversion to pharmaceutical drugs, he began to experiment with CBD oils and creams to alleviate pain and aid his healing process. “This stuff is a miracle,” says Paco. “It alleviates pain and reduces inflammation. The CBD crystals boost the immune system. And best of all, it’s clean. Totally organic.” “Hemp is the future,” adds his partner Kevin, an ex-owner of Tarifa’s now defunct Bienstar Beach Bar. “Now that the world is shifting away from petroleum-based products, hemp is becoming popular again. In Tudor England it was used to make ropes for ships, clothing, baskets, all sorts. It’s versatile and durable. People are realising hemp is the way forward.”

Belgian photographer Frederik Buyckx has been named as the Sony World Photography Awards’ 2017 Photographer of the Year. Judges chair Zelda Cheatle said of Buyckx’s photographs (titled “Whiteout”), “I have chosen a series of landscapes so that we may return to the essence of looking at photography. Landscape is often overlooked but it is central to our existence. These are beautiful pictures made by a serious photographer, and they are to be enjoyed. Payment of IBI REAL ESTATE TAX IN SPAIN Article supplied by Welex Do you want to sell or purchase a property in Spain? If so, who needs to pay the Spanish IBI real estate tax that same year? This matter is regulated in the Law for Local Tax Offices, which establishes that, for the purposes of this tax in Spain, rural and urban properties shall be considered to be in accordance with the definition that is given in the Property Cadastre or Land Registry regulations. If the same property is located in different municipalities, it is understood that it belongs to each one of those municipalities – with the corresponding size of the surface it occupies being taken into account. Whenever there is a transfer or conveyance of a property in Spain that entails changing ownership, the Spanish property remains subject to the payment of the total sum of the tax, under a subsidiary liability regime, in the terms set out in the Spanish General Tax Law. When selling a property, the IBI (or Spanish real estate tax) must be paid by whoever was the owner on 1 January that same year in which the conveyance took place. The purchaser will pay the year after that. At the time of signing the public purchase deed in Spain, the authorising notary public will request information on any possible outstanding Spanish real estate tax debt corresponding to the property that is being sold. They will provide advice about the period in which the interested party is obliged to pay the tax, as well as the liabilities that the party could incur if they do not pay.

• EMBRACE MAÑANA For the sake of your own sanity you must learn to accept and embrace “mañana”.
