Underfloor Heating has become even More Comfortable ARCOS SP, A COMPANY BASED IN THE INLANDS OF THE CÁDIZ PROVINCE HAVE DEVELOPED A SYSTEM TO HEAT AND COOL YOUR HOME, MAKING IT EVEN MORE COMFORTABLE THAN BEFORE. Underfloor heating is by far the most comfortable way of heating your home, but did you know that you can also use it to cool your house as well? Arcos SP have been providing this system, SUELO CONFORT, for the past six years, especially in the inland areas as a good alternative to air-conditioning. “On the coastal area, with predominantly warm and humid conditions, cooling with this system may not be sufficient. Therefore, Arcos SP also started providing air-conditioning units in addition to the floor heating and cooling system,” says Roger Matthijsen, the Dutch owner of Arcos SP. “For those few days that are hot and humid, the additional air-con units can be used to lower the humidity which floor cooling cannot do alone. In addition, the air-con units help to warm the house quicker when returning to Spain during the winter season, whereas underfloor heating needs several hours to warm up the house.” Although Arcos SP clients are very happy with the system, Roger felt that it could be even better. He was able to obtain a grant from the Dutch government for new product innovations and used it to develop a special computer program which combined the air-con unit system with the floor heating and cooling system — the ARCOS CONFORT system. “Until recently, my clients needed to regulate the air-con units separately from the floor heating and cooling system. With our latest product, this is no longer necessary. There is just one thermostat in every room, which measures the temperature and humidity of the surroundings. It compares it to the temperature setting you want and decides on the most effective way to reach that desired temperature. It is programmed to use the floor heating and cooling system first because it is the most comfortable and economical way, and if necessary will start the air-con units. Furthermore, the system can be checked and adjusted from anywhere in the world with an internet connection available.” explains Roger. The ARCOS CONFORT system can also be extended to a complete domotica system including switching on and off lights, TVs and audio equipment and opening or closing blinds and curtains. Like hardly any other piece of furniture, the sofa represents the spirit and lifestyle of an era. In ancient Roman society, a triclinium (couch) was placed in the dining room. Typically, three couches were set around a 50cm high dining table (quite low by today’s standards). The couch had an elevated arm on one side, and a low back that tapered down to the height of its seat about midway along its length, much like today’s chaise longue. In the 19th century, a couch was intended for ladies to use. The stature of women in society evolved and the ladies took over these seats of leisure, while men were most often seen sitting in more masculine and heavy upholstered chairs. The term Recamier, or “fainting couch” was coined in the late 19th century. In 1717, the word “sopha” (sofa) took its place in the English language. It was originally from the Arabic word suffah, meaning a raised section of the floor that was adorned with cushions and rugs. It was a place where important officials would sit and meet, and was for the elite in private households. Thomas Chippendale’s designs in England showed the sofa becoming more symmetrical. His designs introduced upholstered arms on both sides, padded elbow rests, fully upholstered higher backs and seat cushions. Each of his designs was embellished with hand-carved wood frames. Sofa designs took on the names of their designer or manufacturer. Davenport and Chesterfield are two prime examples. The A.H. Davenport Co. from the US manufactured a large fully upholstered couch in 1887 that became its signature. You can still find an original Davenport at antique stores and auction houses. The Earl of Chesterfield designed a couch with arms as high as its back. This sofa is still referred to as a “Chesterfield.”In the 21st century, the terms sofa and couch are largely synonymous and widely used, but davenport and divan are nearly extinct. While the sofa of the 1960s was intended mainly for upright seating positions, designers in the 1970s started to create more opulent seating

landscapes that were aimed at representing the spirit of this new era. In order to understand the needs of the target groups, the designers Ronan and Erwan Bouroullec conducted an in-depth study on user comfort to accompany the design process of the Ploum sofa. “We tried to create a very comfortable settee of contemporary design,” said the designers, describing their motivation for creating this sofa. The Ploum sofa features a broad shape and soft forms, which are inviting and adapt perfectly to the user’s body contours. The combination of materials too offers a highly sensuous experience: covered by stretch fabric, the sofa’s soft foam material offers high comfort and the possibility to recline in very different ways so as

Look for the following features when purchasing a sofa: CUSHIONS Feather cushions are the comfiest but need plumping, and not everyone can be bothered. Foam alone is more ejector-seat than cushion. Several high-end designers use foam with a feather wrap for clean-lined upholstery that recovers its shape when the sitter gets up. A combination of spring and down for best comfort. The cushion must have a spring unit encased in a high-density foam wrap, then insulated on all sides by a channeled high quality ticking bag filled with a down and feather blend. FRAME • A sturdy frame means a long-lasting sofa. Soft wood, such as pine, is low-cost, but it may warp or wobble after five years. Pricier solid kiln-dried wood such as alder, maple, ash or birch is more durable. Avoid frames made of particleboard, plastic, or metal; they may warp and crack. • The frame should be connected together using double-doweling, or mortise and tenon joinery; screws may be used for added stability, not nails. • Corner blocks should be used at all joints and glued. • Legs should be an extension of the main wood frame and not added separately, although this is not a strict requirement. • Have eight-way hand-tied heavy-gauge metal coil springs that are attached to the frame to create the sofa’s foundation. The springs are tied in place with waxed twine in a series of interlocking knots. This process allows the manufacturer to

UPHOLSTERY • The deck of the sofa (the area under where the cushions set) should be covered in a high-quality durable lining. The fabric for the sofa’s main body should wrap onto the deck by at least 15cm. This is called “self–decking.” • The front edge of the deck should have adequate high-density foam padding so as not to create a hard edge. • Decorative nail heads are best when applied individually to a sofa (tacking) and not in pre-manufactured faux strands. • If you choose a patterned fabric for your sofa, make sure that the manufacturer centers the pattern within each cushion and on the body of the sofa, or that the pattern flows from one cushion to the other. LEATHER How do you go about choosing the type of leather that is best-suited to you? First select the leather class. Each class offers a variety of different leather types, which in turn are available in a wide range of colours, grain patterns and a variety of different thicknesses. Pure natural leather (Aniline) has a remarkably soft, supple feel and a beautifully refined appearance that retains all the natural and individual characteristics of the hide. Slightly pigmented leather (Semi-Aniline), is a luxurious and soft top grain leather that combines the suppleness and classic feel of untreated hide while providing some stain protection through a light surface coating. Like Aniline, semi-Aniline Leather is dyed in a dyebath to acheive an even colouration. This careful process means that only a thin finishing layer is required, enabling the Leather to retain its soft feel and natural characteristics. Coated leather has a stunning high-gloss finish that is achieved from the application of a film of coloured polyurethane. This coating provides “the look” and also makes the leather particularly wellsuited for intensive use. Coated leather is budgetfriendly and low on maintenance. If the layers are carved too thickly or too thinly or the light angle is incorrect, then the labradorescence is invisible. FASCINATING CONSTRUCTION The house, designed in the style of the Bauhaus, stands in clear contrast to an environment where the traditional architecture of Upper Bavarian with its typical dark wooden windows and gabled roofs predominates. The structure, a plain rectangle in a timeless modern style, is augmented by two cubes placed on top of it. Here the straight lines and geometric shapes played a key role to achieve what the owners longed — minimalism and symmetry. The cube-like construction appears futuristic at first glance and represents the new generosity and simple elegance of significant basic architectural forms of the future. This house is one-of-a-kind for the Ammersee region – and, in terms of the future of global architecture, it is a further step towards a clear formal language.

A PERFECT COMBINATION OF FORM, MATERIAL AND QUALITY Alongside the design-oriented building form, significant focus is placed on the materials used in this house. The ecological balance of their dream house was very important to the builder. The use of natural, breathable materials was very high on their list. The house is made of wood – but not in the usual sense. The complete shell structure was made from so-called cross laminated timber. This PEFCcertified wood is made from pine boards stacked crosswise on top of each other and glued together. Natural external bonded insulation from Inthermo was installed throughout the entire 395 square metres. The finest clear white mineral plaster provides the final finish to the exterior. CONVINCING FEATURES If there is a material that stands out over others, both by its aesthetic appearance and its quality, it is HI-MACS ® which has been used generously throughout the entire house – from the parapet cladding to the terrace to the exclusive interior. The choice of HI-MACS ® for this project was clear from the start because its owner and builder is the owner of Dreer GmbH, a manufacturing company renowned for exclusive interior design, and an expert in the use of high technology materials. “HI-MACS® provides the opportunity of creating nearly any design in nearly any building - regardless of unusual weathering conditions, high degrees of moisture or enormous loads.

It exceeds the standard material limits”, confirmed the builder. After the successful implementation of a wide range of HI-MACS® projects, Karl Dreer became convinced that he should also use the innovative properties and luxurious look of the material for his own private house. Outside, the use of HI-MACS® is found AlpineWhite at the main entrance to the house in the slats of the lattic with flank the oversized entrance door. The anthracite coloured pedestals are also made from this material. The grey coloured floor that frames the door main aspect help provide a sleek and contemporary. FINE DETAILS Once inside after entering the house through the electronically secured door, the enormous room as well as the long lines of sights and the large glass areas command attention. The bright, light-flooded atmosphere greets guests and allows the architecture to appear organically. The high walls reveal another highlight: The wall panels made from white painted MDF serve not only to separate the space but also to provide access to additional rooms and storage areas. The guest bathroom, hidden behind a wall, features a wash basin that distinguishes itself


not only through functional finesse, but also is able to impress with its non-porous, completely flat and seamless HI-MACS® surface. The opening for dirty hand towels has no supports or seams and the sink runs diagonally to the wash basin. The oversized mirror allows the bathroom to appear larger than it really is and the indirect lighting provides the room with a comfortable atmosphere. In this house, the theme of light plays a central role in every room and serves much more than simple brightness. LED illumination has been integrated within every room, thanks to suspended ceilings which hang freely in space without attachment to the external walls. The lights have no frames and are installed flush in the ceilings. Perfect illumination is also provided for the colour-intensive artwork of the builder. Extensive glass surfaces on both floors means that all rooms are light-flooded and enjoy a natural brightness. The desire for a bright, open and generous atmosphere with extensive glass surfaces, however, stands in stark contrast to the desire for the highest energy efficiency. In order to unify these two aspects, the builder installed triple insulated glass with 14mm of interim space throughout the entire house. Thanks to this glazing with integrated sun protection, the house achieves the maximum pos-

sible heat insulation. The decisive combination of energy-efficient construction materials allows the Dreer family’s house to be numbered amongst the low-energy houses which consume less than 40 watts per square metre of space. SETTING MALLEABLE ACCENTS The modern interior embodies generosity and elegance down to the last detail. The kitchen is located on one side with an array of sofas on the other. The dining room table is the central feature of the first floor — with a futuristic, free-floating form, it is not only the link between the living room and dining area, but also a true original. Thanks to the thermoplastic formability of HI-MACS®, Karl Dreer was also able to implement his creative ideas here. The material can be bent into practically any shape at 165 degrees Celsius - without losing the positive characteristics of the surface. The enormous dining room table consists of multiple HI-MACS® elements which were formed from 11 sheets. This piece of furniture also reflects the specialty of the Dreer company – complex furniture construction. GEOMETRY MEETS PERSONALITY In the kitchen, however, purism meets clarity. It begins with the HI-MACS® front milled to the mitre with servo drive (automatic drawer opening system), the retractable exhaust hood, the designer fixtures in stainless steel and the integrated HI-MACS® sink. The properties of the mineral material are also effectively applied here, the countertop work surface appears as a whole without visible joints. Even in the event of constant water penetration or moisture, HI-MACS® ensures a hygienic surface. Bacteria and mould do not have a chance. It is the “softness” of the material which is most useful in the kitchen

since, in contrast to rock-hard marble, granite or tile, the material provides for shock absorbency and is more forgiving of accidents. High-quality kitchen appliances round out the appearance. While cooking and baking, the owners can also enjoy the free view of the horizon, thanks to the glazing: pure nature! A utility room, also hidden by wall panels, is located parallel to the kitchen. It includes a washing machine, dryer and a great deal of additional space. A table, work surfaces and storage areas are all made from the trend material – hygienic and easy to care for.

RESIDENTIAL OASIS WITH STYLE On the right-hand side of the living area, the builder found space for cosy togetherness. A German designer piece of furniture from PRO SEDA provides the foundation. An unusual kymo rug frames the cream coloured sofa area and provides a feeling of comfort. The clear white line is interrupted by matte lime plaster on the central wall. The brown colour nuances from light to medium-brown constitute a light, harmonic contrast to the white living environment and accentuate the large living area. The side tables next to the spacious array of sofas are also made from HI-MACS®, as is fireplace facing. The upper section is a special metal construction which contains the fireplace technology and provides the exterior frame for the pivotable 52 inch flat screen TV. The contrast of the black television, the black stones of the fireplace and the white mineral material continues the clear design and colour principles of the house. The desire of the builder to use to a strongly reduced colour portfolio for the entire exterior and interior also extends to the floors. The builder selected matte epoxy resin flooring for the interior. The matte, cream coloured floor, provided with a light grain, extends with absolutely no seams

equally across the entire lower storey. In order to achieve a truly comfortable floor, the entire house has underfloor heating. For the subject of heating, of course, the topic of sustainability was at the forefront. The house is heated via an air/heat pump with regulated ventilation and heat recovery. The air outlets and plate valves, which are also integrated in the suspended ceilings and are thus invisible, also provide a healthy climate of comfort. The temperature, lighting and shading are all controlled via a BUS system – central, but individual. The operation and visualisation of all details takes place via touch panels which are installed in every room. . The house’s own vacuum cleaner system is another indication of its high end technology. The air is extracted via a sound insulated conduit system via connection points placed throughout the entire building, led through the dust collection container and the filter and then vented directly to the exterior air. This means that microorganisms and dust particles are wholly removed from the living areas. SPACIOUSNESS IS THE KEY The floors run perfectly into each other – from the bright epoxy resin flooring in the house to the HI-MACS® surface on the terrace. Only a large window front separates the two materials from each other. This detailed choice of materials makes the

transition from inside to outside fluid and when the Dreer family sits at their dining table, it is like they are sitting outside in nature – right in the 1,000 square metre garden, surrounded by a countless number of trees. When the sliding doors are opened, a white shimmering HI-MACS® floor is revealed with a view of striking, square pool. The high-tech material was also used for the cladding here. 18 metres in length and 3 metres in width, the pool is a true swimming paradise. Thanks to the uniform material used for the terrace and the pool, the entire area appears like one large unit. In order to strengthen this perception, the upper edge of the pool is slightly bevelled. In the summer, the pool is heated by an environmentally friendly solar cover. In the winter, the building technology heats the water to 5 degrees. The water level in the pool is also lowered by 10cm to prevent frost on the terrace. Another highlight made from the mineral material is the outside shower. An open, white pool shower has been integrated to the left of the terrace with a view of the pool. Not only practical, it is also a fine detail. The stand-alone, 55 square metre independent apartment of the mother offers a second entrance to the terrace. The house is not only an ecological, economical and architectural highlight, it is also a 2 generation house.

TOP QUALITY FROM THE FLOOR UP Light traps in the stairway to the upper floor of the right cube providing an enormous amount of light. Solid oak floor boards provide a cosy feeling to the high white walls, the large glass surfaces and the white interior. The upper floor also captivates with its overlapping spaces: Bedroom and bath – two connected rooms which are only separated by a creative room partition element. Invisible closets and an electric sliding door for separation of the rooms are also installed flush here – operated at the push of a button. The closet element opens to the bathroom side and the deep cross laminated timber wall element is upholstered with leather on the bedroom side. A spacious dressing room is integrated directly after the last stair – also hidden behind painted wall panels. The large bathroom also distinguishes itself with minimalistic colouring and interior design. A wash basin made from HI-MACS® is installed in the wall of the dressing room. The haptics of the material – a smooth, comfortable surface which is not as cold as stone but instead provides a pleasant basic warmth – was just as important as the optics here. An oversized mirror with indirect lighting completes the picture. A floor-flush shower is located next to the wash basin. The walls and floor of the shower are made completely from the mineral material. A free-standing bathtub on a pedestal made of HI-MACS® with a free view of the outdoors is located on the other side of the wash basin. Enormous window fronts provide a breathtaking panorama view. The decisive choice and placement of individual elements explains the lack of furniture – quality is much more important here than quantity. The entire living area of more than 380 luxurious square metres is marked by stringent interior architecture combined with just a few outstanding design elements.

ONE CUBE – ONE DESIGN The fitness and wellness area and the family office are located on the upper floor of the left cube. A shower, wash basin, shelves and small seating options made from HI-MACS® are also included here. The neighbouring sauna has also been made completely out of the material - only the benches are made from aspen wood. Identical in construction to the upper floor of the right cube, a retracted, shortened wall unit separates the wellness area from the office – a flat screen television is located on one side and a picture panel is located on the office side. Extensive glass surfaces, a white interior and oak floors round out the room’s appearance. Wall heating in the shower and floor heating in each room continue to be standard here. The balcony area located between both cubes is filled with black stones and is also in conformity with the interplay of colour of the house. The parapet cladding, balcony railings and the roof edges of the entire exterior, from the windowsills to the balcony cladding, are also made from the mineral material.

PROPOGATION Warm winter and early spring weather is a good time to take cuttings for propagating new plants. Fortunately the winter garden cutback and clean-up produces plenty of prunings from which to take cuttings. Come the spring or next autumn home, produced plantlets often settle into garden conditions better than larger forced hot house produced garden centre plants.

PRUNING Winter pruning improves the shape and strength of plants and stimulates new flowering and fruiting buds.

WINTER PROTECTION Recognise that heavy rains, snow, frost and cold gales can cause havoc during winter months. Check all ties to walls, fences and stakes. Cover the most frost resistance by moving them into a green house or cold frame, or covering them with several layers of fleece or bubble wrap. We line a circular gazebo with a large sheet of plastic to house delicate succulents and other plants from December until March.

PREPARING GROWING MEDIUMS. Feed the soil and not the plants. Clodagh and Dick Handscombe have lived and gardened in Spain for 25 years both on the coastal plains and in inland valleys. When preparing compost mixes for containers or new shrub beds do spend time improving the soils including the addition of organic fertilizers before planting. We find that this stimulates stronger healthier plants than planting them up in poor soils or composts than relying on frequent use of fast acting liquid or granular fertilizers.

PRESELECTION OF PLANTS. Choose according to your microclimate not the latest imported fad from damp humid jungles. Calling into a garden centre to buy plants before asking yourself “What are the most realistic plants for the microclimate of my garden at its present state of development and the availability of water in mid summer” is a sure way of wasting money. For instance when we first moved into our property it was surrounded by two walls and two lengths of wire mesh fencing. When hot or cold winds blew everything suffered and regular water cuts occurred during the summer. We had to concentrate on creating a less harsh environment by planting boundary hedges and trees and await a more reliable water supply before fully planting up the garden even though drought and frost resistant plants were generally planted. This is why the plant lists and descriptions included in the books Your Garden in Spain – From planning to planting and maintenance, Apartment Gardening Mediterranean Style and Growing Healthy Fruit in Spain clearly indicate drought and frost resistances. If you don’t experience white ground frosts you may well experience air frosts in the early hours when you are warm in bed. The surface of leaves can go down to minus 7.5 degrees if the thermometer shows plus 2.5 but there is a wind blowing at 24 km per hour.

PLANTING UP It is very easy to create a corkscrew root system that within a few years will strangle shrubs trees if root bound roots are not loosened and spread out when planting. Likewise it is often worth splitting large perennial plants into several smaller rooted plants before planting out. When planting in clay and sandy soils do prepare larger planting holes than the size of the plant pot of a purchased plant and prepare a crumbly, fertile, water retaining and good draining soil/compost mix for filling the hole under and around the plant.

POSTS FOR SUPPORT All trees and tall shrubs benefit from being staked as soon as planted. This prevents roots becoming lose, plants toppling over and trunks being snapped during storms and high winds. Buy stakes tall enough so that 25% of the stake can be knocked into the ground. If this is impossible use four guy ropes until the tree or shrub is established. Ensure that soft and loose ties are used to connect plants to the stake.

It is easy to forget about how quickly soil and compost in containers can dry out during hot summer days especially when dust laden gales blow from North Africa when planting up under cool autumn and winter conditions. But please do and mulch above roots with compost, bark chippings, grit, small rocks and rock slabs. The later can be covered with soil if you consider them unsightly. Newly planted plants can dry out and die in two days in the summer. But within a week on apartment terraces if in sunny positions.

PAMPER THE COMPOST HEAP The annual winter garden cutback and clean up will yield plenty of material for composting. However converting this to good compost is a art in Spain. There are long chapters in the first three books listed below which describe what is required to produce good compost in a Mediterranean climate situation. Success factors include retaining moisture and internal heat, layering the raw material and dampening each level, the use of ecological accelerators and turning the heap after three months. The compost heap will normally complete the process in six to nine months. In each book the effectiveness of several types of composters are compared. Happy winter gardening. When searching for a construction company to refurbish our homes we usually compare several options before choosing the best one. This sounds very simple, but most clients do not realise some of the consequences this decision could have. Do we know where we are getting into? With many professionals on the market it is a tough decision. Varying quotations (presupuestos) for the same project only add to the confusion. Some companies enter with an interesting price prevailing many important and necessary legal issues and other companies go for an all inclusive offer which protects their clients in case the unexpected happens. But there are some issues clients need to be aware of when contrating a contractor. For example, a very regular case is when a neighbour calls to inform the police or Town Hall due to loud noise or inadequate street occupancy during your construction or reform. This usually results in a building inspection to ensure that the contrator has followed the correct procedures, building license, working permissions, workers papers. If any faults are seen, the job can be stopped until all paperwork is in order. Heavy fines could be applied, the job is delayed and everyone involved including the property owner is responsible. If “illegal” workers are contracted, and an accident occurs, or in the worst case senario, a death, the suitation can get very serious indeed. Although most people trust nothing will happen, the incident can result in police involvement and a delicate legal issue. It is necessary to be aware of the consequences when employing “illegal” workers. Inspections are made often, and the property owner has no protection. For this reason a cheaper contractor can be more expensive in the end. The safest option is to choose a company that is covered, including the legal aspects, so you are also covered which prevents undesired surprises. Any construction company needs to have all their paperwork on place, all workers should have their social security and taxes paid, and the company should have no open debts with “hacienda” or “social security”. Constructors that work with cash do not come with guarantees and self employed workers should have their “Autónomo” payment up to date. For your benefit, a technical support team should be used. Ideally an architect should have made a detailed study in order to advise. Something which most construction companies do not use, as they consider it unnecessary and saves costs. This is a very wrong approach. An architect is the person that will advise on what is possible to build and how it should be done, the type of license that should be requested and when a project has to be supervised from the Architects School. On major jobs this is used, but on smaller jobs this is usually not the case. No matter how small the project, it is highly recommended that an architect supports the job: walls are changed, pools are done, structure is moved or any major change is planned. Some Europeans believe that constructors can do this part of the job, but surprisingly this not the case, and “why should they”?. Then surprises happen, walls break down, cracks on the floors as just to mention some cases. Sadly this is not valued, or constructors just do not use architects as it takes their authority away. Many workers presume “I have 30 years of experience”, but have no technical background, or simply are not up to date with new and better building methods. A typical comment we could find is “I have always done it this way”. Times change and the foreign clients demand and require a different and more professional approach.

Cook It Raw A GASTRONOMIC EXPEDITION THAT DISCOVERS THE WORLD THROUGH LOCALLY SOURCED RAW MATERIALS, UNIQUE SEASONAL INGREDIENTS AND THE MOST SUSTAINABLE AGRICULTURAL PRACTICES Fifteen of the world’s most influential chefs took part in Cook it Raw, a landmark culinary event which was celebrated this year in Ishikawa Prefecture, on the west coast of Japan. René Redzepi, from Noma, in Copenhagen, and widely considered the world’s best chef, was present at the event together with Albert Adrià, from the legendary and recently closed El Bulli. They were joined by David Chang, of the Momofuku empire; Daniel Patterson, from Coi, in San Francisco; and Claude Bosi, of London’s Hibiscus. In addition to the above mentioned chefs, who have been present since the birth of Cook It Raw in Copenhagen, other key figures from the international gastronomic scene were in attendance. The new cooks participating in this edition were rising star Magnus

in August 2010, to cook using wild products which had spent a summer bathed in constant sunlight. The latest event in Japan was a culinary experiment where the chefs, using only the products of Ishikawa Prefecture, had to create a dish, and present it on a plate made by a local artisan from the famed Utatsuyama Craft Workshop, in Kanazawa City. After days of immersing themselves completely in local traditions - exploring the fish markets of Nanao, foraging in the Satoyama forest of the Kaga Hills, visiting a sake brewery and sleeping and dining in the traditional Ryokans of Yamashiro and Yamanaka Onsen-, the chefs then meditated their experiences and presented their discoveries on a dish at a gala dinner on the final night. The final dinner was titled “Shoku-do”, which translates as “The way of food”.

The event is organised by Copenhagen based culinary consultant Alessandro Porcelli. Cook It Raw was born in Copenhagen in 2009 and was an experiment on low energy cooking. It then travelled to the Collio region of Italy in 2010, where it created a culinary exercise based on the effect of winter on food. Cook It Raw later moved to Finnish Lapland

Alex Atala presented a glittering plate called “Jewelousy”, a tartar of calamari served on a block of ice on top of a metal dish. Ben Shewry offered an emotional dish called “Dry your eyes, sweetheart”, with wasabi flowers, chrysanthemum petals and shrimp, and which was an ode to a phrase used often by a recently deceased fishmonger friend. “When Pigs Fly”, by Sean Brock, was a comic reflection on the unsuccessful duck hunt that forced him to use pork in his dish. The night ended with René Redzepi’s spectacular dessert called “Sake-Sake”, an ice cream based on the Japanese drink presented on a delicate glass bowl. For the Japanese diners present at the event it was a completely new interpretation of a flavour so familiar to them. Cook It Raw is currently preparing a spectacular new event at another exotic location for 2012.

TRIUMPHS IN “DECANTER FINE WINE ENCOUNTER” OF LONDON Fine Wine Encounter attendees highlighted the marked personality and the exquisiteness of the wines from the Jorge Ordoñez Vineyards, which are made from the most special vine of Axarquía, located in Almachar, 15 kilometres far from Vélez Málaga. They are very old vineyards, which produce a large and very aromatic grain Muscat of Alexandria grapes. Jorge Ordoñez is also distinguished because he has recovered the more traditional process of preparation of the muscatels, naturally sweet system that does not add alcohol to wine. Spanish traditional cider As in many other European countries, sweet, carbonated cider is drunk in Spain. However, for any cider lover the real hidden gem is traditional cider, produced in Asturias and the Basque Country in the north of the peninsula. Traditional cider is perhaps closest in character to the French Cidre Brut, or to a light, crisp English scrumpy. What makes it stand out from both of these, however, is its unique freshness and a light, almost imperceptible carbonization, with dry, aromatic fruit in the mouth and a beguiling balance of acidity and bitterness, often followed by a pronounced dryness at the end. A hearty yet subtle product, to be drunk by the mouthful, not sipped. The best Asturian cider now has its own Protected

Designation of Origin recognition (PDO Sidra de Asturias). Only producers who use fruit from a list of 22 approved native Asturian varieties of cider apples can carry the PDO label. These are all cider apples, not eaters, and range from acidic (Durona de Tresali) to sweet (Verdialona, Ernestina), and the whole range of basic taste groups in between: bitter-acidic, bittersemiacidic, bitter-sweet and semiacidic. With such close scrutiny of quality, the production of high-quality traditional cider is moving ever closer to the kind of standards seen in the wine industry. The Trabanco company’s Cosecha Propia, for example, is a gourmet cider made exclusively from native Asturian apples from the company’sown plan-

tations, and this year it became the first cider in Spain to be granted the Manzana Seleccionada (Selected Apple) seal following the results of an independent tasting panel organized by Bureau Veritas. Over in the Basque Country something similar is happening. This year 20 Basque cider producers have begun selling traditional cider under the Eusko Label banner, a mark of quality established by the Basque regional government. Warm-you-up Soups Tomato Basil Soup with Basil Cream For the Soup 1 1/2 kg of tomatoes (about 6 medium), cored 2 tablespoons olive oil 1/2 kg of yellow onions (about 3 medium), sliced Salt and pepper 1/3 cup coarsely chopped fresh basil leaves 4 cups chicken or vegetable broth A few basil leaves for garnish For the Basil Cream 1 cup packed fresh basil leaves 1/2 cup heavy cream Salt and pepper Bring a large pot of water to a boil. Fill a large bowlwith ice water. Gently drop tomatoes into boiling water and cook for about 20 seconds. Remove with a slotted spoon and place in ice water. Using a small, sharp knife, peel the tomatoes. Coarsely chop the tomatoes and set aside. In a large pot, heat the oil over low heat. Add the onions, salt and pepper to taste, and cook, stirring occasionally, for 10 minutes. Add tomatoes and cook for 2 to 3 minutes, stirring well. Add half of the chopped basil and raise the heat to high. Add the broth and bring to a boil. Reduce the heat, cover and let simmer for 30 minutes. Remove from the heat and set aside for 5 minutes. To make the basil cream, puree basil, cream, and salt and pepper in a food processor or blender. The basil cream can be made several hours ahead of time; cover and refrigerate until ready to use. Serve cream at room temperature. Add remaining chopped basil to the soup and, working in batches, puree soup in a food processor or blender. Taste for seasoning. Return the soup to the pot and bring to a simmer over low heat. When hot, pour into bowls and swirl about a tablespoon of the basil cream into the soup. Garnish with basil leaves and serve immediately.

Pasta E Fagioli 2 tablespoons flour Salt and pepper 350 gms boneless pork loin roast, cut into 1 cm cubes 3 tablespoons olive oil 1 cup dry white wine 1 large onion, diced 6 cloves garlic, coarsely chopped 1 medium carrot, diced 1 stalk celery, diced 1/4 cup packed chopped fresh parsley leaves 2 teaspoons chopped fresh rosemary leaves 6 cups chicken broth 1 x 28-ounce can crushed tomatoes 3/4 cup small pasta (conchigliette, ditalini, and orzo work well) 2 x 15-ounce cans cannelini beans, drained About 1 cup freshly grated Parmesan cheese Season flour with salt and pepper, and lightly coat pork. Heat a large pot, add 2 tablespoons of olive oil, and brown pork in batches, stirring occasionally, about 5 minutes per batch. Transfer browned pork to a bowl. Add wine to pot, raise heat to high, and simmer for 2 minutes, stirring to release any bits clinging to the pan. Pour wine mixture into bowl with the pork and set aside. Reduce heat to medium, and add remaining tablespoon of oil. Add onion and garlic to the pan, and cook, until the onion begins to soften, about 3 minutes. Add the carrots, celery, half the parsley and half the rosemary, season with salt and pepper. Cook for another 3 minutes, stirring occasionally. Add broth and tomatoes, and bring mixture to a strong simmer. Stir in pasta and cook, stirring, for about 5 minutes. Add beans and browned pork with wine juices, and simmer for another 5 minutes. Taste for seasoning. Just before serving, stir in remaining parsley and rosemary. Serve soup piping hot in large bowls, topped with grated Parmesan.

Roasted Vegetable Soup 3 medium parsnips, peeled and cut into 1 cm pieces 2 medium carrots, peeled and cut into 1 cm pieces One 2lb squash, peeled and cut into 1 cm cubes 3 stalks celery, cut into 1 cm pieces 1 medium celery root, peeled and cut into 1 cm cubes 3 leeks, halved lengthwise, and cut into 1 cm pieces 2 shallots, quartered 8 cloves garlic, thinly sliced Salt and freshly ground black pepper 1 1/2 tablespoons chopped fresh thyme leaves, or 2 teaspoons dried 2 1/2 tablespoons olive oil 5 cups vegetable or chicken broth 1 bay leaf 3/4 cup dry white wine Pesto for garnish, optional Place rack in the centre of the oven and preheat fan oven to 170°. Toss parsnips, carrots, squash, celery, celery root, leeks, shallots, garlic, salt, pepper, thyme, and olive oil together in a large, shallow roasting pan. Place in the oven and roast for 20 minutes. Raise heat to 190° and roast for another 10 minutes. Combine the broth in a large pot with the bay leaf and bring to a boil over high heat. Remove vegetables from the oven and deglaze the pan with the wine, using a spatula to loosen any bits clinging to the pan. Pour vegetables and liquid from the bottom of the pan into the pot with the simmering broth. Reduce heat to low and simmer for 10 minutes, partially covered. Serve piping hot with a spoonful of pesto, if desired.

A stimulus of colours. Italian architect, Teresa Sapey, designed the underground car park using a fascinating play of colour and line. A simple iconographic code on the walls leads the guest through the garage. The motifs are a finger pointing to the exits, people running with a dog, a person in a wheelchair… all of which have been rendered by mixing words from Paul Éluard’s poem Freedom.

FIRST FLOOR: ZAHA HADID

Sinuous lines and fluid spaces Exit the lift and guests discover a space that stands out for its fluidity and sinuous, curved shapes. The “Vortexx” lamp that seems almost like a liquid changes colour every so often and benches protrude from the wall. In the rooms, the most outstanding feature is the spaciousness and clean lines conferred by the white colour of the floor and walls where the guest is submerged in a world somewhere between Baroque, Modernism and Minimalism. One of the most noteworthy elements is the lighting created for the doors. A strip of LEDs illuminate messages on the doors. From the inside guests can indicate whether they want breakfast to be served, the room to be tidied, not to be disturbed, or any repair to be made. The bed, the desk and other furniture seems to come out from the wall and gives the impression that, at the guest’s orders, it could be stowed back

1 SINUOUS LINES AND FLUID SPACES First Floor by Zaha Hadid — white, clean, provocative. The rooms almost seem to be liquid rather than space. into the wall. The toilet, a piece by Stefano Giovannoni for Alessi, fits in perfectly with the rounded, futuristic lines of the bathroom which changes colour according to the room. The waste basket is a deluxe design created exclusively for the hotel, an utter challenge for guests with imagination, because it’s not so easy to find!

Second Floor: Norman Foster. A large swath of backlit onyx, which also encompasses the sink in the bathroom, spans the space wall to wall. In the bedroom, it morphs into the desk, thus elegantly joining together bathroom and sleeping area.

SECOND FLOOR: NORMAN FOSTER

Elegance and flexibility Two highly creative spirits, British architect, Morman Foster joined forces with Basque sculptor, Eduardo Chillida, to create a provocative and highly subtle design that blends high-tech materials like glass with the warmth of carpeting and leather. In the lobby, a Chillida sculpture welcomes the guests. The walls, which are covered with off-white leather, become the central element of the design and act as a nexus between the hallway and the rooms by penetrating into the rooms and the bathrrooms. One has the feeling of bathing in a bathroom out of a science fiction novel, rather than being in a hotel in the middle of Madrid. What’s more, the bathroom ceiling is made of stretched canvas that is backlit, as if the guest was in a tanning booth! Foster always avoids clutter.

THIRD FLOOR: DAVID CHIPPERFIELD

Luxury and privacy The hallway, painted totally black, gives a feeling of being in a time tunnel, achieved by the play of light and triangular bundles on the ceiling. In the rooms, which are based on a geometric concept of space, the floor is covered with pieces of terracotta measuring 7 x 21 cm and continues in the desk, which is made of a single slim piece using the same proportions as the floor tiles. The bench and headboard are covered in black leather, making for utter simplicity. Over the bed is a piece of lacquered blue DM which constitutes a unique feature in the room. The contrasting colours, mainly black and white, and the simplicity of the space give the guests supreme relaxation and achieve a very well-lit space. FOURTH FLOOR: PLASMA STUDIO

An exercise in geometry This is a young studio which managed to participate in this project upon winning a contest. Plasma Studio, made up of Eva Castro and Holger Kehne, has shown that it is in the vanguard of architecture with a bold project based on geometrical lines and cool materials such as stainless steel. The lobby and hallway is a three-dimensional space that will leave spectators astonished. Both the space and the hallway use large pieces of stain-

4 AN EXERCISE IN GEOMETRY less steel and geometrical shapes reminiscent of a spaceship. A play of different coloured lights from LED strips create a sensorial tour where the only thing that counts is the guest’s intuition. In the rooms the same steel from the hallway gives shape to the shower, the bathtub, the headboard of the bed and the desk, which unfold one after the other, all arranged along the same wall. It is all one single gigantic piece which flows naturally despite the apparent aggressiveness of its shape. The bathtub and the glass divider separating the bathroom from the room is a young, dynamic space which challenges the guest to touch it and to discover every nook and cranny.

FIFTH FLOOR: VICTORIO & LUCCHINO

Fashion which bedecks an interior Inspired by their work in the field of fashion, the design team from Seville achieve a truly welcoming, warm space where the guest feels virtually embraced by fabrics and colour. In the hall, walls are lacquered in black, armchairs are upholstered in velvet and the floor is covered in distressed black stone. Two white marble sphinxes rise hieratically in the middle of the lobby. The designers offer their unique universe to the guests, they take them by the hand and lead them into a court-

yard in Córdoba. The hallways are lined with black carpeting which contrasts with the beige velvet on the walls. In each room where the headboard is located hangs an exclusive, one-ofa-kind work crafted by the artist Sergio Cruz. The most unique feature in the rooms are the textiles. Linen, velvet and cotton have been used to create elaborate two-toned bedspreads, curtains and cushions, red velvet bases anchored with tacks, a red velvet screen with a gold interior, and red and black Chinese-inspired armchairs. In the bathroom, finishing touches include red or beige candles, as well as custom-designed ceramic receptacles and pots. SIXTH FLOOR: MARC NEWSON

The luxury and comfort of simplicity In the lobby and hallway Marc opted for wood lacquered a brilliant red and the floor alternates wool carpeting with marble. In the rooms Newson’s major pieces include the Felt Chair for Capellini, the Lockheed Lounge and the island type bed. The floor is oiled oak parquet made of wide panels that provide a touch of warmth to the interior design. In the bathroom Statuario Venato marble from the Carrara quarries.

SEVENTH FLOOR: RON ARAD

An interplay of shapes It has been said of Ron Arad’s work that it has all the energy of modern art and is one of the inevitable benchmarks in current design. On the seventh floor, he has designed a highly provocative and imaginative space with eminently luxurious details. Arad’s rounded, sinuous shapes can be glimpsed in the lobby, which boasts a circular sofa made of reflective fibreglass, foam and Alcantara in anthracite grey. A curved, continuous wall, white in some rooms and bright red in others, acts as a central divider separating the different uses of the space. Arad creates a circuit in which guests gradually discover each of the spaces: first the entryway, then the bed, then the bathroom, the sink, the toilet. The round bed is by the Italian design firm Capellini and the TV is actually a large screen that unfolds from the ceiling. There is no doubt that for many people, the luxury of having a gigantic screen right in front of the bed will be the best feature of Arad’s design. In the bathroom, the shower and toilet have stainless steel ceilings, achieving an extremely modern space with a touch of high technology.

Light in motion In collaboration with interactive designer Jason Bruges, Scottish architect Kathryn Findlay barely separates the spaces using white curtains in order to achieve a highly feminine space, even the closets don’t have doors. Fibre optic panels have been designed for the lobby which features a bench in the shape of a small maze. In the hallways, the designers have created what they call Flock Wallpaper, which reacts to the movement of whoever is walking down the hall. The most singular feature of the rooms is that there are no dividing walls or doors. The separation between the spaces is made through simple, sweeping white curtains. In certain cases, the architect has placed a single bed that does not touch the floor, as it is suspended from the ceiling via a steel structure. At the foot of the bed in the window looking out onto the façade, the architect takes advantage of the space for designing a divan with cushions that span the entire window. The bathtub, round in shape, entices guests into sensual, relaxing baths.

Arata Isozaki has brought the customs of his culture to the tenth floor with a clear Japanese influence. The lobby is a decagon painted with a special white scraped paint and tiled in marble, in stark contrast with the dark grey paint used along the hallways, and the black wool carpeting. In the rooms dark colours predominate. Wooden panelling, known as shoji, crafted of stained oak and covered with a white gossamer fabric, is clearly reminiscent of the screens used in traditional Japanese houses. A copper sheet inserted between two glass panels, visually separates the bathroom from the bedroom. The cool materials and colours contrast with the brightness and warmth of the bathroom. The bath and shower made of hinoki wood is a clear reference to the Japanese custom of having a shower before a bath, and the floor is finished in white marble. As a curious note, it is worth noting that in each of the two junior suites there are two kimonos on display, but are not for use by guests. In the normal rooms there are yukatas available for guests – robes similar to kimonos.

NINTH FLOOR: RICHARD GLUCKMAN

Boxes of colours Inspired by the “box within a box” concept this floor stands out for its orderliness and feeling of lightness and neatness. Industrial materials such as aluminium, plastic and glass are used in quite unfamiliar ways. The rooms have a simple decor but with a touch of colour, blue and grey. The most outstanding feature is a wall of translucent glass containing four methacrylate niches, which houses the television, the telephone and writing desk, and storage area. The first thing you see when you enter the bathroom, is a large glass box, with a sliding door separating it from the bedroom by means of a white metal curtain. The floor and one of the walls of the bathroom are finished in Spanish granite. It’s like taking a shower in the open air. Lastly, he has chosen the Sunset chair by Christophe Pillet for Capellini, upholstered in red or blue velvet, with a comfortable, simple appearance.

Good vibrations As soon as you exit the lift, Mariscal’s Cactus sculpture, made out of coloured Corian appears in the lobby. The walls are covered with striped Formica and the orange carpet of the lobby contrasts with the green chosen for the hallway, whose walls are covered with striped Formica. Inside the rooms, the bathroom reigns supreme. The only enclosed area is the toilet booth, isolated by means of an ash wood trellis, which also serves as a large lamp as it is backlit. Large-scale colourful flower prints predominate in the bedroom, covering the headboard and closets. The bed is located against the window so natural light hits it from behind and permeates the whole room. One of the sides of the bedroom is finished with a backlit wooden trellis, giving guests the feeling of being outdoors. Outstanding features of the living space, are the Coconut armchairs by George Nelson for

Vitra, as well as the Swiss table by È for Padova, the AJ lamp by Arne Jacobsen for Louis Poulsen and the Stone carpet by Diego Fortunato for Nani Marquina. TWELFTH FLOOR, FAÇADE AND PENTHOUSE

Jean Nouvel The terrace and bar prevail on the hotel’s penthouse floor, as do a small pool and spa. But there is no doubt that this floor’s true standout is its impressive views of Madrid. Nouvel incorporated a glass walkway that connects the different spaces, although it is not recommended for vertigo sufferers! A semi-circle with a glass floor, it reveals the whole façade (designed by Jean Nouvel) of the hotel right down to the ground. Guests can enjoy the changes in colours provided by the awnings and the poem Freedom by Éluard, which covers the façade in various languages. On the twelfth floor, the French architect has designed twelve suites where two names are of particular importance to the concept and design: the

photographers Araki and Fleischer. As the original idea is that this floor be devoted to pleasure, the French architect has decided to use the walls to display the work of these two photographers, who play with interesting images of the human body and nature. Araki’s photographs, which cover the rooms on the western side of the hotel, are notable for their expressive force. Those by Fleischer, which are completely abstract, cover the eastern wing. The larger suites have a guest room boasting views of Madrid, with a floor-to-ceiling glass wall looking onto the street. All the rooms feature a system of sliding panels with rails on the floor and the ceiling to allow guests to organise the space as they wish. In fact, the most individual feature of the rooms is that the clients themselves can act as the architects, reorganising the area to suit their own tastes. 100 people 1,000 trees Marbella charity Arboretum recently achieved its goal of getting 100 local residents to scrub land behind Marbella bus station to plant 1,000 trees. In just two hours enthusiastic volunteers dug holes and planted olive trees in the beautiful winter sunshine. It was very much a family affair with volunteers from one to seventy years old which brought the whole community together to do something enjoyable and positive for the environment. After the main tree planting, the younger members of the group were shown the Nendo Dengo planting technique and planted hundreds of seeds. This event is an important step in creating a “people’s forest” planted with thousands of plants and trees, native to the Málaga area. The project is making use of deserted scrub land and turning it into a beautiful nature reserve. When finished, the 45,000 square meter plot will be a stunning green space open to the public and will offer training and education in the field of ecological agriculture and sustainable land management. This is a fantastic way of restoring the lost woodlands of the area, and conserving the native species of trees and plants in Andalucía, while creating a lovely public green area for residents and visitors alike. Arboretum Marbella is a charity which is creating a people’s forest in Marbella made up of native species to the region of Malaga including trees, shrubs, grasses and vines. This forest is being planted using the concept of permaculture and will be sustainable and organic. It will also play an important role in protecting some of the native species of the region which are being endangered such as the Andalusian Cork Oak. As well as creating a beautiful public park on deserted scrub land, an important part of the project is to educate people on the environment, trees and sustainable land management.
