Welcome to the spring issue of IBB at Home! It’s been an exciting start to 2020 at IBB Design Fine Furnishings! We were honored this past January with “Best Furniture Store in the United States” for the fourth time by the ARTS Awards! The ARTS Awards celebrate excellence in the home industry, and I cannot express how proud I am of our #teamIBB for taking home this big win again. This is a fantastic way to start the year! Phase one of our store expansion has been completed, and we can’t wait for you to see it! Our retail store now has more than 85,000 square feet of beautiful fine furnishings and home décor from around the world, all curated by our talented interior designers. Spring is in the air, and it’s time to whisk away those winter blues! There are a multitude of ways to freshen things up around the house and give it a new feel. This is the time to exercise your freedom in personalizing your space by adding in visually interesting pieces and colors that speak to springtime and give a fresh feel. Think of this as you would be tackling your closet when you transition from winter clothes to your spring wardrobe. Out with the heavy, darker and dull items and in with the refreshing, invigorating pieces!

Next, I focus on adding in new items such as artwork or perhaps changing out older frames on current artwork. I also love adding permanent botanicals, as they bring such life to a space. Freshening up pillows is an easy way to liven things up, as well. To take it a step further, replacing older, darker-toned rugs with lighter toned rugs can be very effective and can change the entire look of a room. Changing out light fixtures can also make an impact and perhaps add a bit of bling.

Initially, I recommend snapping some photos of the rooms you want to focus on. This allows you to see things in a concise view and makes it easier to see where the problem areas are so that you can concentrate on those. I then make my rounds and pinpoint items that feel drab or stale and remove them from my space. This is also a good time to declutter by gathering like items and grouping them, rather than having them all spread out. Utilizing baskets or trays to tidy things up is a great idea for decluttering.

All in all, be inspired by the fresh air and blooming flowers, and create a space that aligns with your personality and brings out the best in you, as your home is your sanctuary! There’s no time better than the present to spring into action and be inspired.

Often times when it comes to tidying up your home, the struggle begins with what to let go of ‌ a piece that you love but that doesn’t truly present your vision, a nostalgic chair passed down to you but not really your style, or even something you do not truly enjoy but was costly when you purchased it. It can be hard to sift through these things and decide how to move forward. When you start a project with a designer, you can begin with letting them know what pieces you would love to keep and see if that can be worked into your style vision for the space. A chair your mother left you often can be recovered, although re-covering can often be equivalent to a new purchase. Sometimes, though, it is worth it to keep that memory in your home. On the other hand, if you do not love the piece or are keeping it due to what you spent on it, perhaps consider consigning the piece, giving it to a loved one, or donating it to someone in need. Give it a good home, just perhaps not your home. When creating a cohesive style, it is challenging to complete a vision if you have pieces that do not blend together in style or color, so do not let those things keep you from accomplishing your dreams. I can’t tell you how many times I’ve worked on projects in beautiful homes where the master suite has been dubbed the lowest priority on the punch list! Whenever I move, the master is always my first priority, as it really should be a retreat from the madness of the world. It’s the one room you’re guaranteed to spend time in, and it should be time spent resting, not staring at pending projects and pieces that “will work for now.” As opposed to living spaces where I tend to start out with the bones, in a bedroom, I typically start out with a textile story. We are rarely trying to reinvent the wheel with space plans, but rather create an environment and an atmosphere. A beautiful blend of upholstery, bedding, and drapery textiles is an amazing jumping off point that can be woven into a beautiful retreat. From the textile story, I then go into the function of the space, and that usually focuses around storage. Clutter is one of my biggest stress triggers, so if the closet is lacking, I start looking at dressers and chests of drawers. I then evaluate how much storage we’ll need in each nightstand, so we don’t have a sea of cords, coasters, remotes, c-pap machines and whatever else is out, staring at you every morning when you wake up. Maybe the best

option is a nightstand with a cabinet on one side and drawers on the other. These are all things that can be customized to create a special, personalized space. The last thing I evaluate is light control. I personally need sunlight to wake up in the morning, so I have layered draperies with sheers in my bedroom. For clients who work overnight or who struggle with sleep in general, full blackout is preferred. In many cases, I end up layering some sort of shade or shutter that I layer in with blackout draperies to maximize this function. The advancement of motorization can even further improve your sleep routine. The addition of controlled lighting such as bedside lamps and reading lights next to chairs really gives you full control of your space. At the end of the day, so much of my design aesthetic defaults back to lifestyle, and that couldn’t be more important than in the space where you go to escape from the world and restore yourself to take on the next day!

Powder bathrooms are the perfect area to have some fun with design. It’s a space in your home that most of your guests will see, so why not make it extra special? Since they’re generally small in size, you can implement ideas you love that could get costly in a larger space.

Start with the walls. Paint, wallpaper or wall treatment? For this client, we decided to panel the walls and paint them in a crisp black. SherwinWilliams Tricorn black is one of my favorites. This powder bath has a window that floods the SHERWINroom with natural WILLIAMS TRICORN light, so the black BLACK walls don’t make it feel claustrophobic. If you don’t have a window in your powder bath, you can still opt for dark walls. Just keep your ceiling and floors light. Move to flooring. If you go simple on your walls, you can have some fun with patterned floors. We found this stunning black and white water jet marble that creates a classic largescaled pattern on the floor. We love the timelessness of this palette and pattern.

Choose your vanity style. Do you want built-in cabinetry, an integrated sink vanity or a piece of furniture as the vanity? For this design, we selected a show-stopping marble, brass and nickel vanity design. It makes a beautiful statement against the black- paneled walls. Pick a fabulous faucet. When building a new home, selecting your plumbing is one of the first things to do. We knew we wanted a timeless feel, so we opted for a gooseneck style faucet. With its simple, no-fuss design, it was the perfect choice. The cross handles give an extra nod to a traditional aesthetic.

Select your lighting. I always say that lighting is like jewelry for your home and especially so in a powder bath. We wanted sconces that would make an elegant yet simple statement. We also needed to be mindful of size and scale that fit within the vanity area and that would allow for a decent sized mirror. Since the sconces provide subtle lighting and are more for decorative purposes, I always suggest adding can lighting in bathrooms. Find your statement mirror. With all of the linear elements in the room, I knew we wanted to have some shape to the mirror. The curves on this one almost beg for the sconces to settle in closer and fit beautifully with the paneling.

Furnishing a living room can be one of the most fun projects in your home to address. Dining rooms and bedrooms tend to be less subjective since usually only one wall will fit the bed and generally in only one direction does a dining table make sense in a room. A living space often gives you more opportunity to exercise your creativity. Whether you’re furnishing a dramatic formal living room or a more casual family-friendly great room, the principles are the same. These are a few suggestions when tackling a living room. First, hire a great designer. This can help to streamline the process and help negate costly mistakes. You must first assess your space and listen to what it tells you. Deciding on furniture placement is imperative. Without doing this first, you have no shopping list. Ask yourself how the room should function; is it for television and comfort or is it for entertaining?

Once this is done, I prefer to find my upholstered goods first. Choose your sofa or sectional and then chairs. Next move on to tables: cocktail, end and consoles. These fall into place after you’ve determined your upholstery arrangement. Then decide if any ottomans or benches are needed. These may be placed with a chair, paired with the cocktail table, or placed under the console. Next, I’d choose the rug - make certain that it’s not too small. (This is a common mistake.) Your rug acts as the foundation, and if it’s not large enough, it can make your room appear too small! Then move on to lamps, art and accessories for a finished look. Last but not least, don’t forget about drapery. Even if you already have privacy treatments (shutters, blinds etc.) drapery panels can add color, texture and softness, giving an overall polished final layer to your room. I hope these tried and true tips will help you achieve the living room you’ve been dreaming of!

Springtime is a great reason to incorporate fun, bright shades such as pinks and purples. They do not necessarily have to match your room’s color scheme, and they’re a great way to give your room life and interest.

Animal print is a classic and can add just the right amount of sass or sophistication to a room. Throw a zebra hide on the floor or tuck a cheetah accent. They can make a big impact in an unexpected way.

Something Blue

IBB is a big believer in using blue, and it’s the perfect time to incorporate this 2020 color of the year! A beautiful chest in rich navy or some throw pillows and a throw in a soft periwinkle can instantly transform a room. This color offers a broad spectrum of shades, so there’s bound to be one that speaks to you.

Bar carts come in a wide range of sizes including small ones that can tuck into a corner of a room. And they are not just for displaying alcohol; keep your outdoor tableware and trays stored on it. With nicer weather approaching, a bar cart on wheels is perfect to roll outdoors, providing everything you need.

3 A Tree

Whether it’s real or artificial, a tree brings in an organic element that really softens a space. By bringing the outdoors in, your space feels fresh and airy. Some trees even add a sculptural quality to a room, such as a Fiddle Leaf Fig.

Brightening up your room can have a physiological and physical benefit. A brighter, lighter, happier space will simply make you “feel better” and will uplift your spirits.

You can accomplish this by simply changing a few accessories in the room, or you can go all-in with changing lighting fixtures, wall colors and

adding a neutral rug. Lighting does more than lighten a room; it can also be a bold detail. Changing those tired pillows and adding a throw on your sofa with some fresh, neutral colors will help lighten the room. Recently, I had a client who had purchased a neutral color Marge Carson sofa many years ago. We simply re-covered the pillows that were in Old World fabrics and colors with some lighter, neutral geometric fabrics, giving the sofa an entirely new perspective and personality. Adding a floor lamp and an exquisite chandelier lightened the décor. It looked like a fresh new sofa and gave the


room some radiance! Bring in the natural light! Replace those brown shades or blinds with some neutral window coverings that let the warm flow of the outdoor light into the room. Replace any dreary arrangements with some bright white orchids. Add in some gold and silver lamps and accessories or some colorful books on your bookshelf. Changing the simplest of things can have a huge impact in bringing peace and tranquility to your home.

Keeping it Neutral BY MAXINE BURT, IBB DESIGNER

When it comes to changing a room or rooms in your home, there are 3 primary things to consider when keeping it neutral.

Top 3 tips for creating a successful neutral design:

Create interest with paint. An accent wall in a bedroom can offer contrast with a bed and begin to layer neutral shades to give the room depth. Using a taupe paint color on a kitchen island or other cabinetry can warm up an all white kitchen.

Layer textures to give the room depth. Mixing linens, velvets, leathers and other textures adds richness and dimension to your space making your

neutrals more interesting. Using sheer fabrics for drapery will not only dress your windows but also soften the walls with a light and airy appearance. A neutral patterned fabric can give you a bolder look for your room.

Mix finishes to generate intrigue. Using different wood and metal finishes will help create a more timeless and collected look while keeping it universally neutral. Be careful not to mix too many different finishes and make sure the tones all compliment each other. Trick of the trade: Layer various shades of a neutral color from light to dark to successfully create a peaceful and tonal aesthetic.

MIXING PATTERNS When selecting patterns for your room, choose three or more. The keys to mixing patterns are to vary the scale and to use some or all of the same color within the different fabrics. The largest scale pattern will make the strongest statement in your room. You can mix a large floral with a smaller size plaid, check, stripe, geometric or even a tiny floral that repeats some of the colors in your large floral. You can also mix in solid colors and tone-on-tone patterns like damasks using one of the colors to create a layered pattern look.

IBB designer Casey Gatterson met her client Charlotte Jackson during the building process of her Huntington Home, and they instantly hit it off. After seeing how quickly Casey pinpointed the style she and her family were after, Charlotte enlisted her to fully furnish the home as well. Immediately upon entering the home, the family’s love of color is evident. With Charlotte’s background in the music industry, the study just off of the entry was designed to be a piano room. A custom red lacquer and acrylic piano steals the show, while black drapery panels with embroidered trim tape dress the windows and highlight the room’s tall ceilings. A leopard print desk chair and a brass light fixture help complete the chic space.

FAMILY ROOM Casey kept the interior finishes neutral to allow color to be infused through upholstery and accessories. The Genesis rug from The Shay Geyer Collection is a favorite of Charlotte’s and was used to anchor the sitting area. A black and white horse painting was selected to hang on the fireplace as a nod to Charlotte’s love for horses.

DINING ROOM The dining table was custom made in a rich sapphire blue stain with an acrylic and gold leaf base. Hot pink side chairs with blue contrast welt and patterned host chairs offer ample seating for their large family and frequent gatherings. Orchids and succulents in a large-scaled permanent botanical from The Shay Geyer Collection complete the room.

KITCHEN The stunning kitchen is part of the open floor plan that connects the dining and family rooms. A stainless hood with brass bands acts as jewelry for the room and conveys a mixed metal look. A navy blue island brings color into the kitchen along with pops of orange through Charlotte’s kitchen mixer and decorative accessories.

MASTER BEDROOM When Casey first showed Charlotte this bed silhouette, she knew she had to have it and immediately told Casey she wanted it in a spring green velvet. A bench at the end of the bed upholstered in a hydrangea patterned fabric adds navy and powder blue to the palette. Navy velvet drapery panels dress the windows and provide a contrasting backdrop for the green wing chairs in the sitting area.

The Jacksons’ closet is a true dream! Charlotte worked with Rhonda Ray of Closet Envy to design a custom closet, perfectly organizing and displaying her belongings. They even created a rainbow display of her handbags in the upper cabinets to fashion her love of color into a fun statement.

MASTER BATHROOM Keeping the palette neutral, Casey opted to design a large scaled pattern on the floor to make a powerful design statement. Large vanities, pendant lighting and a free-standing tub all help to complete this luxurious look.

GAME ROOM & BAR The classic car pool table was at the top of Charlotte’s wish list and takes the game room to the next level. Drapery panels featuring the Hex fabric from The Shay Geyer Collection layer pattern into the room. A blue velvet sofa offers seating in the pool room, and the kitchenette offers the perfect spot to make popcorn or mix drinks. Casey used the backsplash as an opportunity to showcase pattern and color.

GUEST BEDROOM A restful palette of blush, gray and cream was used to design the guest bedroom. Casey and Charlotte used this room as an opportunity to usher in some more feminine details.

DAUGHTER'S ROOM Fit for a princess! The fun with color continues into this little girl’s dream room. Casey worked with Huntington to create a bunk bed complete with custom makeup vanity and reading nook. Hot pink, turquoise and orange were used for the room’s palette, and artwork of LOL dolls, her daughter’s favorite, was commissioned to personalize the space.

If I had a penny for every time I… I’m sure you’ve heard that saying before! Well, if I had a penny for every time a client has mentioned to me if they had to get rid of a piece of furniture or accessory that they’ve had for a very long time, I would have enough to make it worth a trip to the bank!

I am hearing more people who move here from other parts of the country say they sold all their furniture before moving to get a fresh start in their new home. That’s a great way to start building your dream space in your new location.

As we navigate this New Year and new decade, I encourage you to look around your home or office with a discerning eye, and ask yourself, “Does this décor emote the feelings I want, and does it speak to visitors as to the kind of person I am?” If you can’t honestly answer that two-part question with a resounding “YES,” then it’s time to make some changes and get rid of the old, tired décor! Everyone can achieve a comfortable, welldecorated, uplifting environment. Here are a few items to look for that could be keeping you from completing your dream space.

Dated colors are big red flags that you are in need of freshening up your décor. Studies show that there isn’t a single design principle that creates an emotional response in a décor like color. Major color trends in textiles change about every 10 years, with slight variations within that time frame. Get rid of pillows, accessories, bedding, and upholstery in dated colors. They rarely work with the current color trends, and if you try to mix new and old, the old looks deter the freshness of the new.

We all have had that sentimental piece of furniture that was passed down to us and that we’ve kept for years because it was from a beloved family member or friend – not because we cherish the actual piece. Take a nice photo of it, put the photo in a cherished book of memories and pass the piece along. Move forward in fashioning a fresh new look in your home!

Thoroughly examine your upholstery. Fabrics on sofas, chairs, drapery, and bedding should be free from soil, snags, and sagging. Has it been cleaned so much that it’s lost its luster?

2. Make sure the furnishings are the right size and shape for the space. We are a transient society, moving much more frequently than previous generations, and the new space often does not accommodate the furniture and accessories from previous trends or a different geographical area. Large-scale, bulky furniture just doesn’t work well with transitional architecture of cleaner, sleeker lines and details, even if you use fewer pieces. On the other hand, smallscale furnishings can feel like doll furniture in the large, open floor plans that are so popular today. Either way, subconsciously, the room never really feels comfortable and inviting.

A favorite feature of this floor plan is its large kitchen and extended wraparound counter. We seamlessly blended rich dark wood cabinetry and a contemporary stainless-steel vent hood with an oversized backsplash tile. The combination of wood and metal is mirrored in the ample barstool seating provided at both the island and continued counter seating.

Family Room

In this natural-toned color palette, we used contrast to create our POP! A white sofa with modern lines and a bold-patterned black and white rug provide the perfect backdrop for our rich cognac leather chairs and ottoman. Textured pillows from the Shay Geyer Collection and soft throws further the sense of casual comfort in this gorgeous family room. The perfect piece of art not only creates a focal point, but also helps to define space in an open floor plan. This contemporary mountain piece in our neutral tones gives a wonderful, cohesive transition to the dining area.

Our modern, casual aesthetic continues in the straight lines and natural linen in the dining room table and chairs. Two large moss centerpieces add a strong splash of color to our table. Accents of custom throw pillows and dinner napkins in a bold hex-patterned fabric from The Shay Geyer Collection add further dimension and cohesion to this open floor plan.

Study & Media

Bright white walls contrast well with the rich dark wood floors and invite the natural light to expand throughout the study. A desk in dark wood and iron pops on the bold black and white rug, while the built-in shelves offer plenty of space for favorite books. In this spacious media room, a dark-patterned carpet was selected to set a tone of relaxation. The black leather tufted sectional is set on a warm gray-toned wall and paired with a large gray wood and metal cocktail table. Textured pillows on the leather sofa further add a cozy atmosphere to this modern space.

Master Bedroom

We created several points of interest in this white landscape by layering different black and white patterns in the bedding, pillows, and draperies. A punch of orange was added as a pop of color and warmth. A modern, low-profile headboard is mirrored in the cozy accent chairs that were added as a conversation area in this spacious master bedroom.

Master Bath

A Carrera marble accent tile surrounds the large bathtub and frames the shower window in the master bathroom. The large floor and shower tiles in warm gray tones create a spa-like ambiance. The calming atmosphere is further enhanced with beautiful greenery, mercury glass candlesticks, and a soft gray velvet vanity stool.

Secondary Bedrooms

Personality comes to life in this teenage girl’s bedroom. We extended the black and white striped pattern on the walls up the sloped ceiling to exaggerate the lines. The drama and fun continue in the polka-dot draperies and pops of hot pink. A custom front pillow on the bed is the perfect finishing touch to this budding fashionista’s room. Does your son love adventure? This little boy’s room is the perfect place for him to dream up his next journey. We used stacked trunks as nightstands, and added airport directional hand-painted accents in the colors of our draperies and bedding to play into the travel theme. The focal point of this guest room is the windowpane artwork above the bed. The large white matting gives dramatic contrast to the painted black bed wall. The nightstands in dark metal and white marble mixed with natural materials continue the modern design of the house casual crisp white bedding invites you to truly “be our guest.”

With spring on the horizon, I have entertaining on my mind. I've created a Spring Cocktail Party Menu to share with you in this issue of IBB at Home. Providing a variety of items is a great way to please everyone's tastes but does not have to be complicated! I always love to offer a specialty drink, so I've included one of my favorites for spring. A charcuterie board is an easy yet impressive offering for any party. This Spring Charcuterie Board features dill and cracked pepper crusted goat cheese, fresh asparagus, Trader Joe's Quinoa Pesto, fresh feta cheese cubes, snap peas, radishes, purple cauliflower,

sopressata salami, lemon-marinated olives, prosciutto, grape tomatoes and my favorite gluten-free crackers, Mary’s Gone Crackers and Gluten Free Cracklebread. You could also wrap the asparagus in prosciutto. While this is the perfect party appetizer, my girls are well accustomed to this also being a self-serve dinner option for those crazy carpool nights. I’ll also make this a lot on weekends as an appetizer when we are grilling or having friends over for a glass of wine or one of my favorite margaritas. The Rosé I've shared here, Les Calans, is made by a friend and Dallasite, Gela Gellardo. You can pick it up at Central Market.


This Sparkling Elderflower Cocktail with Zephyr Gin is perfect for spring! Zephyr Gin is a crisp gin with the subtle botanical influence of elderberry, elderflower, coriander, lemon peel and juniper. This combination was so intriguing to me. I love elderflower liquor, so I knew I’d love it. My Sparkling Elderflower Cocktail is a twist on a French 75, but I added St. Germain, my favorite liquor, for a boost of botanical flavor. Elderflower Sparkling Spring Cocktail Ingredients:

• ½ oz Zephyr Gin • ½ oz St. Germain • ¼ oz Simple Syrup or Agave Nectar • Prosecco to top off • Lemon for twists • Super Fine Sugar

Instructions:

1. Rub a lemon slice on the rim of a champagne flute. 2. Coat with Super Fine Sugar. 3. Fill a cocktail shaker with ice. 4. Pour in Zephyr Gin, St. Germain and Agave Nectar. 5. Shake well and strain into the champagne flute. 6. Top with Prosecco. 7. Add a twist of lemon. 8. Cheers!

ADDITIONAL TIPS: • We recommend that nothing be in cardboard boxes but instead in airtight waterproof stackable containers • We always recommend clear containers that are labeled • For ease of finding your items and keeping out clutter, we recommend installing shelving or cabinets and hooks as necessary • Line the walls of your attic and create aisles if necessary, but do not clutter the center of the attic • Make sure it is absolutely necessary to keep everything you are putting in the attic. There is no need to keep things just because you have room for them!

SKILLET CHICKEN PICCATA

RECIPE

SERVINGS: 4 | PREP TIME: 15 MIN. | COOKING TIME: 15 MIN. TOTAL TIME (START TO FINISH): 30 MINUTES

INGREDIENTS:

• 4 boneless skinless thinsliced chicken breasts • 1/2 cup all-purpose flour • 1 teaspoon kosher salt • 1/2 teaspoon black pepper • 3 tablespoons unsalted butter • 2 tablespoons olive oil

• 2 lemons, halved • 1/4 cup lemon juice • 1 cup low sodium chicken broth • 1/4 cup brined capers, drained • 1/4 cup chopped fresh parsley, for garnishing

INSTRUCTIONS:

SPARKLING RASPBERRY MOJITOS

SERVINGS: 1 COCKTAIL | PREP TIME: 5 MINUTES

INGREDIENTS:

1. Add flour, kosher salt and black pepper to a large resealable baggie. Add the chicken breasts, seal and shake to coat each chicken breast completely. 2. In a large skillet over medium high heat, melt 3 tablespoons butter with 2 tablespoons olive oil. When butter and oil start to sizzle, remove each chicken breast from the baggie one at a time, shaking off any excess flour, and add it to the skillet. 3. Cook the chicken breasts for about 3 minutes or until they are browned and then flip and cook for another 3 minutes until both sides are browned. Transfer the chicken breasts from the skillet to a plate. If your skillet is not large enough to fit all four chicken breasts, cook them in batches, adding a few tablespoons of butter before each batch. 4. When chicken is finished cooking, add the lemon wedges, cut side down, to the hot skillet. Let lemon halves sear until browned, about 2 minutes. Remove and transfer to the plate with chicken. 5. Into the skillet, add ¼ cup lemon juice, 1 cup chicken broth and ¼ cup drained capers. Bring to a simmer and whisk frequently until the sauce starts to thicken. Return the chicken and lemon halves to the pan and simmer for about 5 minutes. Garnish with chopped fresh parsley. 6. When serving, spoon some of the sauce over each chicken breast on the plate. Serve with rice, mashed potatoes or pasta.

INSTRUCTIONS:

1. Muddle the mint, raspberries, white rum, lemon juice and simple syrup in a large glass. Add a scoop of crushed ice and top with prosecco. 2. Garnish with raspberries and fresh mint 3. Cheers!

WHIPPED BEET RICOTTA

SERVINGS: 4-6 | PREP TIME: 10 MIN. COOKING TIME: 0 MIN. TOTAL TIME (START TO FINISH): 10 MINUTES

INGREDIENTS:

• 8 ounces ready-to-eat, steamed and peeled baby beets • 1 large lemon; zest and then juice • 1 (16 ounce) container whole-milk ricotta • 1/2 teaspoon kosher salt • Chopped fresh rosemary for garnishing • Sea salt for garnishing • Toasted baguette slices for serving • Fresh raw spring vegetables for serving

INSTRUCTIONS:

1. Start by zesting a large lemon and then squeezing the juice from it. 2. Place the ready-to-eat baby beets and juice from the lemon in a blender and blend until smooth. 3. Using a stand mixer fitted with the wire whisk, whip the ricotta on high speed for 1-2 minutes or until light and airy. Add the blended beets mixture, lemon zest and 1/2 teaspoon kosher salt to the whipped ricotta and whip again for another 1-2 minutes. 4. Transfer whipped beet ricotta to a serving bowl and finish with chopped fresh rosemary and a sprinkle of sea salt. Serve with toasted baguette slices and fresh spring vegetables for dipping.

CARROT CAKE COOKIES

SERVINGS: 36 COOKIES | PREP TIME: 15 MIN. | BAKING TIME: 14-16 MIN. TOTAL TIME (START TO FINISH): 30 MINUTES

INGREDIENTS:

• 1 cup (2 sticks) unsalted butter, softened • 1 cup granulated sugar • 1 cup brown sugar • 2 large eggs • 1 teaspoon vanilla

INSTRUCTIONS:

2 cups all-purpose flour 1 teaspoon baking powder 1/4 teaspoon salt 1 teaspoon cinnamon 1/2 teaspoon nutmeg 1-1/2 cups old-fashioned rolled oats

• 1-1/2 cups finely grated carrots, (about 3 large carrots) • 3/4 cup coconut flakes • 1 cup chopped walnuts • 3/4 cup dried cranberries • 1 cup white chocolate chips

1. Preheat oven to 350°F. In the bowl of an electric mixer fitted with the paddle attachment, combine the butter, granulated sugar and brown sugar until light and fluffy, 2-3 minutes. Add eggs and vanilla, and beat on medium speed until well combined. 2. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg. Gradually add the flour mixture to the butter mixture and beat on low speed until just combined. Add the oats, grated carrots, coconut flakes, chopped walnuts and dried cranberries and beat on low speed until well incorporated. 3. Using a medium cookie scoop, scoop 1 and ½ tablespoons of cookie dough onto lightly greased or parchment-lined baking sheets, leaving a few inches between each cookie. Flatten the top of each cookie dough ball slightly with the palm of your hand. 4. Bake for 14-16 minutes or until cookies are lightly browned and crisp on top. Remove from oven and let cool completely on the baking sheets. 5. While the cookies are cooling, melt the white chocolate in a microwave safe bowl in 30-second intervals, stirring after each interval. Place melted chocolate into a small resealable plastic bag and set aside until the cookies are completely cooled. 6. Once the cookies have cooled, cut a very small corner off of the resealable baggie. Drizzle the white chocolate over the cookies in a quick zigzag pattern. You can serve the cookies immediately, but let the white chocolate harden completely before storing. 7. Store in an airtight container in the refrigerator for up to 4 days.
