IBB AT HOME WELCOME I SUMMER 2018 Welcome to the summer issue of IBB at Home! Summer is here and our retail store is packed with new merchandise for you to tackle your next design project with one of our talented designers. Recently, a group of our designers attended the Spring High Point Market and scoured hundreds of manufacturer showrooms to bring back the best in furniture and accessories. We take the time to put our designer touch on upholstery pieces, so you can have one-of-a-kind pieces available off the floor. In fact, if our delivery team has time in their schedule, they can follow you home with your new furniture, and your designer can install on the spot! You know I’m always bragging on #TeamIBB and for good reason. Our team took home two McSAM Awards this spring for Best Interior Merchandising for our work with Highland Homes on their model homes. The McSAM Awards are presented by the Sales & Marketing Council of the Dallas Builders Association in recognition of excellence. I’m so proud of our team’s work! The summer issue of IBB at Home is packed with design inspiration and tips. I hope it inspires you for your home’s design. Come visit us at IBB Design soon and enjoy your summer!

As temps heat up, we look for the nearest pool to jump in and cool off. Hopefully, that’s in your own backyard! If so, our cover story will give you all the tips you need to create your very own backyard resort. We’re also dishing on a classic hue, Cerulean Blue, and how you can incorporate it into your home. Our designer, Gwynn Guy, discusses durability when designing furnishings, and Jory Gattis Dickinson shows us how cocktail table books can be used to accessorize and personalize a space. Lauren Macnak is bringing sunshine into your interiors, and Michael Reese gives us step-by-step instructions on how to achieve a well-designed living room. Rachel Johnston shares ways to accessorize a bookcase, and Shannon Gidney divulges her list of things to consider when building or remodeling your kitchen. I’m exceptionally excited to share a sneak peek at my collaboration with The Botanical Mix for my new permanent botanical collection that officially launches in June. If you’re in the design industry, please join us at The Dallas Market on Thursday, June 21st at 5 p.m. to celebrate the collection launch! I’m very excited to have my friend, Alicia Wood, contributing her easy entertaining ideas for summer and Valerie Wood, owner of The Neat Method Dallas, serving up tips to get our kitchen organized. Our close-by neighbors at the Omni Frisco Hotel at The Star and Neighborhood Services have provided a refreshing cocktail recipe and scrumptious snapper recipe that I can assure you you’ll want to try. Jason Ballard, the owner of Treehouse, helps us incorporate sustainable and luxurious products and details in our outdoor designs. Wishing you a great summer!

CERULEAN BLUE Cerulean Blue dates back to the early 18th Century and has historically been a popular choice among interior designers. A blue hue shaded between azure and sky, its calming properties make it ideal for creating peaceful and relaxing environments. Pantone® named it Color of the Year back in 2000, and we continue to see it in fabrics, paints, furnishings and home accessories. Truly a timeless color, it pairs well with a multitude of colors across the spectrum.

Cerulean blue paints to consider:

Add Sunshine TO YOUR DÉCOR Would you like to bring a little fresh and bright décor into your home this summer? Try mixing in bold leaf patterns and textured furniture. A few well-placed coral pillows, green lamps and white lacquer will give a fresh Palm Beach chic feel to your design. Or, if you are a bit more adventurous, let “The Golden Girls” be your inspiration and rock banana leaf wallpaper in a powder bath with some gold accents and a pop of coral linens. Décor doesn’t have to be safe and neutral. Mixing in unique statement pieces helps create a curated look for a well-traveled vibe. You want your guests to feel like your home comes with a great story and history. For a bedroom, layer your white linens with blues, corals and greens — like you are in a tropical oasis. Tie it together with some white linen drapes lined with a bright Greek key tape trim to add the details for a cohesive space. Florals are not your foe. Modern floral prints tend to be on a larger scale giving softness and a fresh take on a classic idea. This style can also produce a more neutral, textured route by pairing caning, golds and grass cloth. Adding blues and oranges allows for a more masculine finish. Find the look that is right for you!

DESIGNER TIPS

JORY GATTIS DICKINSON IBB DESIGNER jory@ibbdesign.com @jorya.gattis on Instagram

Unlike my husband, my own design style is pared-down and simple. From the beginning, we bonded over our love of scouring antique shops and boutique stores, especially when we travel. Collecting beautiful cocktail table books is a great compromise to avoid adding more accessories to our home. Second only to art, collections of cocktail table books are not only a fantastic way to bring interesting layers of color, but are also an opportunity to infuse your personality into a space. Through art exhibits and vacations, we’ve curated quite a collection over the last couple of years. He’s found medical-themed books (of course, a pharmacist would love), and I’ve developed an obsession for fashion selections.

COCKTAIL TABLE BOOKS ADD PERSONALITY TO YOUR HOME

Whether I’m installing and dressing a family room, bedroom or study, one of the first things I ask a client is if they already have a collection of books. If they don’t, I always spend some time looking through our selection at IBB Design for some beautiful additions that aren’t only in their color palette, but also are subjects that are personal. From luxury automobiles, mixing cocktail, floral design or home furnishings, the options are limitless. Not only do cocktail table books make beautiful additions to your own home, they also make amazing gifts! We all want to give loved ones something special and unique for their homes, but we might have discerning friends and family members who aren't the easiest to buy for. Cocktail table books present an amazing opportunity to gift something special, much more so than a scented candle. It’s also not something so specific that you can’t keep a stash hidden away in a gift closet.

TIPS FOR A WELLDESIGNED

michael@ibbdesign.com @mr.maison on Instagram

step-by-step

1 2 3 4 It may seem obvious to some, but not everyone knows the best order to furnish a space. These simple steps will explain the most sensible order to furnish and decorate a living and family room.

20 IBB AT HOME

When furnishing your living room, a great first step is assessing the best furniture placement based on traffic pattern, if there is a fireplace, a view or the addition of a TV. Once you have decided on furniture arrangement, it’s good to start with upholstered pieces. Choose your sofa or sectional first followed by chairs, ottomans and/or benches. Based on your placement and upholstery choices, you should now select an appropriate rug. Don’t go too small here. The rug creates the foundation for the room. If a rug is too small, it can make a large room appear smaller. Your upholstered items should sit on the front of the rug, but don’t worry if they aren’t fully on the rug. After your seating and rug have been determined, you should now be better able to determine what tables are needed. Most rooms will require end tables and a cocktail table. A credenza is a good idea for placement below a TV, especially if you plan to hang your TV on the wall.

5

When tables are chosen, it will become more obvious what scale and style your lamps should be. Good lighting is crucial for both aesthetics, as well as necessary light.

6

The last step can be the most fun. Accessories and art! Here is where you can add color and character to your room. Endless options are available – jars, glassware, sculptures, trays, books, candles and art. These are the items that will make the overall design cohesive and your space personal.

A perfectly styled bookshelf is an opportunity to provide both form and function. A bookshelf should be eclectic rather than cluttered, minimal rather than empty, and balanced rather than unorganized. There are a few elements I find to be paramount in a well-styled bookshelf. The first essential is artwork. Bookshelves are a great way to incorporate some of your favorite pieces. Artwork can be used as a main focal point on a shelf or as a base to additional layers. I like to start by placing the pieces I know I want to incorporate first and then start layering additional books, accessories or even smaller pieces of art in front of them. Artwork helps to ground books and accessories, making them seem intentional instead of random and cluttered.

styling

A BOOKSHELF 22 IBB AT HOME

Another component I love to incorporate into a bookshelf is florals. Plants and florals not only bring life to your shelves, but are also a great way to add texture and color. Florals are an ideal way to introduce an element of freshness to your design. Some of my favorite items for a bookshelf are pieces that have been collected through one’s travels or items passed down through generations. Old photos, antique pottery, or even torn or wrinkled journal pages that you can frame are all perfect ways to personalize and add character to a bookshelf that is unique to you and your life.

“I can’t have a light sofa!” Ever said those words? Well, now you can with the innovation of performance fabrics like Sunbrella®, Crypton® and Revolution Performance Fabrics®. This isn’t your mother’s sofa of years gone by. Now, spills can clean up easily. In the 60’s, Sunbrella fabrics were for awnings, marine and outdoor use because the yarns are infused with silver ion technology, a process that makes them resistant to stains, long sun exposure and microbes. The fabrics were designed to take direct sunlight and provide UV protection, endure saltwater exposure and have high resistance to color fading. This protection is permanently engineered into the fibers and is not an after-treatment spray. Today, it has evolved into stylish, comfortable, diverse fabrics perfect for indoor use. If you haven’t looked, we have tons of options available at IBB Design Fine Furnishings. Unlike the stiff canvas of the past, these fabrics are incredibly soft, luxurious and very durable – there are

24 IBB AT HOME

even velvet options! These are great when you have a lot of light exposure in your room since they are highly fade resistant, easy to care for, and are bleachable. Another plus is the variety of colors available. You name it, and there is probably more than one choice! Crypton has been recognized as a leader and innovator for more than 20 years with superior standards of hard-working fabrics that also incorporate great design and style. These fabrics can be used in high-traffic areas while still allowing for design freedom and flexibility. There is an array of fiber types and textures such as linen, chenille, velvet, cottons and suede. The results are remarkable because the technology resists stains, spills and odors. In these busy lives we live, who doesn’t need kid-tested, mother-approved fabrics to make our lives easier! So go for it – have the light sofa you have always dreamed of having.

Kitchen DESIGN

Are you remodeling or building a new home? What better time to evaluate how you truly use your kitchen and how you’d like the finished product to look and feel! Once you’ve finalized the layout and cabinet drawings with an architect, the next step is to hire an interior designer to help you bring it to life. THE DETAILS

There are many important elements in the numerous layers of a custom kitchen. Details include the cabinet door style, inclusion of glass-front cabinets, cabinet hardware, countertops and backsplash, and finally the jewelry of the room – the light fixtures. Your architect or lighting designer generally devises a lighting plan, and then your interior designer can apply the appropriate style and scale to the actual fixture selection.

THE ISLAND

You might also take into consideration the importance of a large center island. Often it is the most popular spot in the home, the area where everyone convenes. Most revert to a rectangular-shaped island, but this custom round bump out creates a nice quaint dining area within the kitchen itself. Also, if you don’t have a cooktop or sink in the island, I love the idea of using a unique piece of furniture rather than building a true cabinet for the space.

26 IBB AT HOME

FLOORING

Flooring choices these days abound, but wood floors remain the winner in popularity. Consider engineered hardwoods, as they have come a long way and offer a vast array of colors, plank size, width and even patterns!

BARSTOOLS

Last but not least, if barstools fit into your kitchen plan, don’t forget to consider using a Crypton® or Sunbrella® fabric. These family-friendly fabrics provide you the freedom from worrying about spills and stains. They are definitely the most forgiving and durable fabrics offered in the marketplace today.

I absolutely love flowers! I use the hashtag #flowersmakemehappy on a regular basis. There’s just something about walking past a beautiful arrangement that puts a big smile on my face. I wish I could have fresh florals delivered on a weekly basis to use all over my home, but that budget line item is just not a reality. Having beautiful and unique permanent botanicals is the next best thing. They’re a beautiful finishing touch to a room’s design. I’ve worked with Shane Friesenhahn of The Botanical Mix for a while creating custom arrangements for many of my client projects. Everyone always raves about them, so I

28 IBB AT HOME

approached him to collaborate on designs we could sell at IBB Design Fine Furnishings. The first order sold out before we even had a chance to put it out on our retail floor. I wanted to bring unique arrangements that looked so lifelike you had to touch them to see the difference. We added design elements that you would see from a high-end fresh florist, such as acrylic rods and geode accents like quartz, calcite, amethyst and malachite. The Botanical Mix also does big business with fresh floral arrangements, so Shane shares my perspective and pickiness when it comes to offering the best in permanent botanicals.

Outdoor Living

ADDS LIVABLE SPACE 32 IBB AT HOME

INTERIOR DESIGN Shay Geyer

T

here’s nothing better than having a resort in your very own backyard! Over the years, we’ve seen a big trend in clients wanting to incorporate outdoor living spaces that are an extension of their homes. This allows them to enjoy the great outdoors year-round! There’s no doubt that Texas summers are brutally hot, so the centerpiece of the backyard is usually a pool. It’s important to have your interior designer work in partnership with your pool or landscape architect to ensure an overall cohesiveness to your home’s interior and exterior design.

IBB AT HOME 33

34 IBB AT HOME

Comfort is key for outdoor furnishings, but don’t skimp on style. Quality outdoor furnishings are built to last. Keep in mind that you can always get a fresh look by re-covering your cushions with an outdoor fabric in a great pattern or color to complement your home’s interiors. It will ensure flow from one space to another and will invite your guests to gather outside as an extension of your home. For the winter months, many Texans love to gather around a fireplace or fire pit for cozy nights making s’mores. A fun, patterned tile fireplace adds a fabulous design element to a covered patio. Cast stone fireplaces are also a great option for outdoor areas and work seamlessly with many pavers used for decking and patios.

IBB AT HOME 35

36 IBB AT HOME

Outdoor rugs have come a long way! We designed a traditional patterned rug that works with this client’s style and color palette. Concrete tops are sturdy and durable options to use for outdoor furnishings. Outdoor lighting doesn’t have to be boring! There are so many styles to choose from and endless options for custom designs.

IBB AT HOME 37

38 IBB AT HOME

Outdoor kitchens are all the rage. We’re seeing clients opt for designs that offer all the conveniences of a normal kitchen – sinks, refrigerator, grills and burners. They want them to be pretty, too! Quartz countertops made to endure the outdoor elements and patterned tile backsplashes are popular selections on our clients’ wish lists.

n this outdoor dining area, we opted to create a herringbone pattern with brick pavers under the dining table instead of using an outdoor area rug. This was a great option considering the uncovered patio area gets frequent use, high traffic and intense sun.Â

IBB AT HOME 41

We added a pair of chaise lounges to this space for our clients to be able to relax and enjoy the water feature and their backyard view. It’s an extension of the sitting area under their covered patio. The water feature flows into the pool and provides respite and tranquility to the area. A solid white fabric was selected to upholster the outdoor furnishings to avoid competing with the water feature and pool that are covered entirely in a stunning blue mosaic tile.Â

Form and function were key to this outdoor kitchen and dining area. Keeping the countertops all at counter height allows for maximum surface area for cooking and serving. We added counter stools for guests to keep the chef company, as well as to provide overflow seating for meal time. Custom furnishings and outdoor lighting are just a few of the specialty items our designers can bring to your outdoor spaces. We designed this backlit blue onyx table for the outdoor dining area. The intensity of the stone changes as the sun sets. It’s quite the conversation piece! We also custom colored the light fixture to coordinate with the palette of the backyard. FAMILY FARMHOUSE We were so pleased to partner once again with Huntington Custom Homes for the interior design and merchandising in their model home in Prosper, TX. We were even more thrilled to receive the prestigious McSAM Award for Best Interior Design for our work on this home. FOYER A large two-story foyer sets the tone for the entry in this home. We highlighted the soaring ceilings and architectural details by creating a gallery wall of art that fills the staircase wall. We used a pair of chairs and a secretary to create a sitting area in the large entry. MUSIC ROOM We chose to make the home’s study a music room by anchoring the space with a large baby grand piano. The room is still spacious enough for a sitting area, and a large niche contains built-in bookshelves and a desk. The room’s generous size easily allows for multiple uses.

IBB AT HOME 51

52 IBB AT HOME

FAMILY ROOM/NOOK The open floor plan features a grand family room and dining area situated next to the kitchen. The vaulted ceilings are accentuated with reclaimed wood beams. Modern tufted sofas face each other and provide ample seating in the family room. Layers of neutral colors and textures were selected for the home’s design. A patterned sisal rug defines the sitting area, and black and white patterned drapery panels dress the windows and add contrast to the room. A long rectangular metal-top table was selected for the dining area. Wood frame side chairs were paired with wingback upholstered host and hostess chairs for the table’s seating.

IBB AT HOME 53

KITCHEN All white cabinetry on the perimeter of the kitchen is contrasted by a black island in the center of the room. A pair of black iron lanterns hangs over the island and gives a nod to the home’s design aesthetic. A linear brick mosaic adds rich texture and depth to the backsplash. A large farmhouse sink offers perfect form and function for this kitchen’s design.

54 IBB AT HOME

IBB AT HOME 55

56 IBB AT HOME

MASTER SUITE A black iron canopy bed takes center stage in the master bedroom. The large planked honey-colored wood floors and sliding barn door support the overall style of the home’s architecture. Patterned drapery panels draw attention to the large bay of windows and the sitting area. Large format charcoal gray ceramic tiles cover the master bathroom floors and provide depth when paired with the rest of the room’s crisp white design elements. Metal pendants hang from the ceiling in front of the mirrors.

IBB AT HOME 57

GUEST ROOM A fresh farmhouse style was continued for this room’s design. White shiplap covers the bed wall and a quatrefoil patterned carpet in charcoal gray was selected for the flooring. An iron bed is dressed in a relaxed style with black, gray and white buffalo check pillows and toe warmer, combined with a white linen duvet comforter.

58 IBB AT HOME

GIRL’S ROOM A sophisticated ballet pink was used to paint the room and set the tone for a soft feminine look. Hand-painted canvas art featuring pointe shoes helps convey the girl’s love for dancing without going overboard on a themed room. A pattern from the bathroom’s tile was painted around the room to tie the two spaces together.

BOY’S ROOM Black and white plaid carpet offers pattern and makes quite a statement in this teenage boy’s room. Reclaimed wood and metal furnishings give a masculine and industrial feel to the space. Hand-painted guitar necks extend the visual height of the bed and pay homage to the family’s love for music.

IBB AT HOME 59

GAMEROOM This is by far one of the most talked about rooms in the home. The family’s love for music is evident by the room’s design. Reclaimed wood covers the wall and adds texture to the space and is the perfect backdrop to display their guitar collection. Metal-framed chairs upholstered in black leather provide seating while an acrylic trunk serves as a cocktail table and storage for their music books. It’s the perfect spot for a family jam session.

60 IBB AT HOME

The spacious room also offers a gaming area with a shuffleboard and a leather sectional to relax and watch TV or a movie. Plaid drapery in black and white dress the windows, and a kitchenette offers convenience for fixing a snack and for entertaining guests during a party.

IBB AT HOME 61

62 IBB AT HOME

MEDIA ROOM Deep charcoal paint covers the wood paneling and creates a cozy atmosphere for family movie night and provides contrast to the pair of linen sofas. Patterned

Berber carpet offers durable flooring for the room. A long rectangular marble and iron cocktail table is centered in the room and between the sofas.Â

HEALTHY & SUSTAINABLE LIVING

CREATE THE

perfect OUTDOOR

SANCTUARY

66 IBB AT HOME

One of the great things about living in North Texas is the short winters. While it can get pretty cold, during the other 10 months, we do a lot of outdoor living. And summertime is the time to perfect your outdoor living space! So how should you design the outside of your home to take advantage of the weather? TreeHouse’s mission to create healthy and beautiful homes doesn’t stop at the back door. That’s why TreeHouse joined forces with the award-winning landscaping company Southern Botanical. Now we can offer our customers sustainable and beautiful landscape design and installation so they can take advantage of the warmer months. Here are a few tips from TreeHouse and our friends at Southern Botanical for creating luxurious, comfortable and sustainable outdoor sanctuaries.

GO NATIVE

“Native plants thrive in often challenging conditions, braving dramatic changes in weather and resisting weeds and pests,” says Southern Botanical CEO Jason Craven. The landscape professionals at Southern Botanical are experts in sustainable practices and always advocate for chemical-free lawns and water-wise gardens. They take advantage of zone-hardy local plants, while also making use of natural hardscape like rocks and boulders. These principles help maintain the beauty of a landscape over time and help homeowners save on water costs.

COLLECT RAINWATER

Speaking of water, TreeHouse offers everything you need to get started collecting rainwater. It’s no secret that water is scarce in Texas, so using nature’s spigot is a great way to conserve this disappearing resource. Also, rainwater is free of chlorine and salts and is slightly acidic, which is better for plant and soil health than treated water.

FEEL THE BREEZE

Wind is nature's fan, but sometimes the dog days of summer call for more. That's when stylish ceiling fans and built-in misters help you keep your cool when the temperature isn't. Wind generated by a fan can also serve as a natural mosquito deterrent if you install one above an outdoor patio. Our favorite fan brand is Haiku made by Big Ass Solutions. They have many styles to choose from.

OUTDOOR COOKING

Sure, you can add a barbecue pit, but just know that you have a ton of other options when it comes to designing the outdoor kitchen you want. There are endless varieties of sleek cooktops, accessories and even “waterfall countertops” for any level of skill from the gourmet chef to the backyard barbecuer. TreeHouse’s kitchen design experts combined with the landscape professionals from Southern Botanical will get you the outdoor kitchen you’ve always wanted.

GET COMFORTABLE IN STYLE

A comfy place to kick back starts with quality all-weather furniture, but it doesn’t end there. An outdoor sound system, burbling water elements and dark-sky lighting will add atmosphere. Shading elements—whether it’s a mature tree with a hammock or an elegant arbor—can add comfort and privacy.

TIPS FOR EASY

Summer Entertaining ALICIA WOOD

CREATIVE DIRECTOR, THE LUSH LIST www.thelushlist.com @thelushlist on Instagram aliciawood@sbcglobal.net

I'm thrilled to be contributing to IBB at Home this year. Entertaining is my passion. I love sharing that passion with others whether through entertaining tips or easy recipes. Entertaining family and friends should be an enjoyable experience, something you look forward to, not something you dread. Here are my tips for easy summer entertaining to help you enjoy the evening as much as your guests, and so you’ll want to entertain often.

CREATE A MAKE-AHEAD MENU

Ensuring that you aren't in the kitchen or at the grill all night helps you to be more relaxed, and your guests will be more at ease as well. They won't feel like they should be helping, and you will have time to enjoy their company. Gazpacho Shooters, an Avocado Bar and Barbecue Chicken are my go-to dishes.

SET A BEAUTIFUL TABLE WITH OUTDOOR DINNERWARE

There are so many gorgeous options now in melamine dishes and acrylic drinkware. Over the years, I've collected a few patterns, and I love to mix and match them. Using nonbreakable items helps alleviate the worry of broken glass in the grass or pool. I use fresh flowers every time I entertain. I love to bring in a garden element to the table by adding clipped greenery or magnolia leaves from my landscaping.

MIX COCKTAILS AND MOCKTAILS IN BATCHES FOR YOUR SELF-SERVE BAR

Everyone loves an icy cocktail or mocktail in the summer. Mix yours in batches and serve in drink dispensers or pitchers with lids so that no one has to play bartender all night. Our favorite batch cocktails are my Strawberry and White Peach Basil Sangrias.

PLAY AROUND

We love to have a few outdoor games for guests. This is especially great for family entertaining. Lawn Dice, Corn Hole and Bocce are our top picks.

BE A DJ

Make a great playlist or download one from Spotify. Setting the mood is just as important as the food!

INSECT CONTROL

Be sure to spray your outdoor entertaining area early in the day to get rid of those pesky mosquitos. Nothing ruins an outdoor party like unwanted critters.

ORGANIZING

While ALL organizing is fun for the NEAT girls, one project we particularly love is a pantry makeover! There is nothing more inspiring than “NEATly labeled containers, jars and baskets in a perfectly-organized pantry.

STEP 1: Purge

The best way to start organizing your pantry is to look at each item and make sure there isn’t anything expired that’s taking up valuable real estate. Everyone has a few items that are past their expiration date, so starting fresh will ensure more compliments to the chef!

STEPS TO ORGANIZE YOUR KITCHEN pantry should have are: baking, breakfast, grains and of course salty snacks and sweet treats!

STEP 4: Implement

Consider what is most frequently used. Make sure those items are placed on the shelves that are at eye level.

It is important to purchase items that are not only visually appealing, but also functional. Oxo Containers are your best friend for a small pantry. They can help you use the full height of your shelf, ensure your food stays fresh, and did we mention they were dishwasher safe?! Don’t forget to put a sticker with the expiration date on the bottom and label, label, label.

STEP 3: Categorize

STEP 5: Enjoy

STEP 2: Prioritize

Keeping like items together will guarantee that you can always find what you need and that you will use what you have before it goes bad. A few categories that every

Snapper • •

4 6-oz. skin on snapper Clarified butter, or grapeseed oil

Score the skin of the snapper and season well with kosher salt and white pepper. Heat sauté pan to medium and place the butter or oil in pan to heat up. When it is hot, place skin side of the fish down and cook until the flesh turns opaque 3/4 of the way up. We are cooking the majority on one side to get the crispy skin. Then, carefully flip fish and finish cooking. When finished, remove fish and place on paper towel until plate up.

Spinach • • • • • •

20 oz. baby spinach or your favorite green 1/2 shallot, small dice 1 garlic clove, minced 2 slices bacon, small dice 2 oz. crushed almonds 1 TBSP grapeseed oil for sauté

Heat sauté pan to medium and add grapeseed oil. Render bacon down until 3/4 crisp; add shallots and garlic and cook another one to two minutes. Shallots and garlic should be transparent. At this point, start feeding in the spinach a little at a time until it wilts. Keep the pan moving. The spinach will wilt, and you will be able to get it all in the pan. Season with salt and pepper, add the almonds and toss.

Mango and Pineapple Relish • • • • • • • •

4 oz. pineapple 4 oz. mango 4 oz. Roma tomato, seeded, small dice 1/2 each jalapeno, seeded 1 TBSP cilantro, chopped 2 TBSP red onion, small dice 1/2 tsp olive oil Salt and pepper

Slice all ingredients into 1/4” slices. Season with salt and pepper and grill on hot grill to get marks. Cool and small dice. Add all ingredients into mixing bowl. Add 1/2 teaspoon olive oil and season with salt and pepper. Gently fold all ingredients together.

Sweet Chili Vinaigrette • • • •

6 oz. Sweet Chili Sauce 2 oz. Rice Wine Vinaigrette Juice of one lime Salt and pepper to taste

Place items in mixing bowl and mix well. Adjust seasoning with salt and pepper. Plating is easy! Put a small bed of the spinach on the center of the plate and top with the crispy fish skin side up.
