what‘s new

Adeje now has a new Bike Park Situated in Las Torres, the 3,850 square metre park has cost €183,750 and local enthusiasts have helped with the design of the circuits. This public park adds one more link to the already excellent facilities on offer in the municipality and is a further fillip to alternative sports in the zone. It was built in response to public demand in the area, particularly from Las Torres and Las Nieves, where there are numerous fans of ‘extreme’ cycling. Future extensions still in the planning stage will also make available facilities for skateboards and roller skates.

audience just how much they had learned. The evening was filled with all types of music ranging from rock to classical, and some very young and talented dancers. The show was compered by Academy directors Alejandra and Laura, and Charlie Karlsen, who recently entered the TV contest Operación Triunfo, not only performed with a group but also closed the show with his own version of the Carpenters’ A Song for You. Each of the performers was given a diploma at the end of the evening.

the body, stimulating circulation and encouraging the elimination of toxins. Problem areas will be attended to with intense marine treatments and further deep massages. To complement all this, there is also a facial treatment to smooth the skin, restore its radiance and reach optimum levels of hydration and nutrition. Day Five begins with a more relaxing Pilates session to stimulate energy and general wellbeing, and ends with a toning body massage. Leave the spa feeling relaxed and with a more firm and contoured body.

Get in shape for summer Expresión Arte Joven Expresión Arte Joven is the name of a festival organised by AMAE, the musical and scenic arts academy based in Los Cristianos. Their gala took place on May 14th at the Auditorio Infanta Leonor, with students of all ages showing their

With the arrival of warmer weather, the Spa at the Gran Hotel Bahía del Duque in Costa Adeje have designed the Summer Pack, a five-day programme which combines treatments with exercise to tone and sculpture your body. Start with a Talasotherapy circuit, followed by a deep massage and complete body exfoliation with sea water in the Ducha Vichy, which incorporates purified marine salts and essential moisturising oils. This is followed by a consultation with a personal trainer to assess the client’s physical exercising priorities. On the following days, there will be Pilates and Kinesis sessions to strengthen and tone the muscles and define the silhouette, as well as a Talasotherapy bath with mineralised sea water, in which powerful air and water currents massage

This Summer Pack ritual is recommended as much for men as for women, and is available to clients or non-clients of the hotel for €980. More information is available at www.bahia-duque.com

what‘s new TapArte TapArte, the event which fuses art with gastronomy takes place at the Pinolere Ethnographic Park, La Orotava on the weekend of June 11th and 12th. On the Saturday, it will be open from 12 noon to midnight, and the Sunday from midday to 6pm.

at adults and children. Visitors will be able to taste and purchase tapas made with local produce which are offered by the participating restaurants as well as wines and cheeses. This is an event which should appeal to all of your senses, so enjoy!

Rotary Club Tenerife Sur The Kurt Konrad Memorial – XVI charity golf tournament took place at Golf Costa Adeje on May 1st. Through The Magazine, the organisers of the event, the Rotary Club Tenerife Sur would like to thank more than 80 players for their contribution, without which the day would not have been such a success. Thanks also go to the public who attended, Golf Costa Adeje, and their sponsors who support their activities year after year. The result of this event was that €10,000 was donated to entities in the south of Tenerife, and was shared between Caritas - Adeje, Caritas – Los Cristianos, Asociación San Juan – Adeje, La Asociación Hermanos de la Cruz Blanca – Las Chafiras, as well as a project to help those suffering from Alzheimers – AFATE. Each of these organisations received a symbolic cheque for €2,000 from the president of the Rotary Club Tenerife Sur, Henry Mac Lean Díaz. Taking into account the current economic crisis, they are extremely satisfied with this year’s result.

Seaing is beliving El Puertito, long one of the favoured spots for a different and more relaxed kind of beach experience among residents and holiday makers in South Tenerife, is now the centre for the creation of an underwater learning centre, a pioneering idea in Spain, with the main objective being the promotion of harmony and sustainable co-existence. The hope is that the project will improve the lives of the indigenous flora and fauna, creating a new branch of marine tourism in perfect keeping with the need to protect our environment, as well as allowing students of all ages to learn more about life under the sea. The zone is near the beach, and is, on average, six metres under the sea, and around 700 square metres. Even those with no diving experience can enjoy this. Supported by PADI Project Aware and Océano Sostenible, The Ocean Dreams Factory will immerse the visitor in a Marine Micro-Reserve experience, discovering the beauty of Costa Adeje, offering him both a helpful exercise in environmental assessment and a powerful preservation tool. With an experienced diver by their side, beginners will ‘fly’ underwater over the regenerated area, getting to meet the species that live there, and participating in research and conservation activities.

Based on local culture and economy, this fusion of artistic expressions involves music, painting, theatre, folklore and much more, with the best restaurants in the Orotava Valley. There will be exhibitions and many interactive spaces where you can get to know the Canarian culture including painting, photography, graffiti and sculpture as well as the scenic arts: theatre, mimes, puppets, storytelling, dance, music, audiovisuals and more. There will be areas and workshops aimed

Corpus Christi La Orotava, June 30

Later than usual this year, Corpus Christi is a time when many towns decorate their streets and plazas with flower and sand carpets. The most notable of these is La Orotava where the giant 950 square metre carpet is of a different (usually religious) design each year, and takes several weeks to prepare. During its manufacture and when it is complete on Thursday 30th June, this giant carpet, which will be based on Jesus Christ and this year’s World Youth Day, will be contemplated by thousands of visitors. Adding to the magical atmosphere are the surrounding streets which are carpeted with sand and flower petals giving

off a wonderful perfume. Finally, a religious procession at 6pm that evening destroys them all. Beautiful Corpus Christi carpets can also be seen in La Laguna, with smaller versions in other towns around the island.

Starmus Festival The Starmus Festival, which takes place in Tenerife and La Palma between 20th and 25th June will be the first festival to unite astronomy with spacial science, art and music. Scientists, astronauts and world famous artists will gather together for the summer solstice, and amongst these, guitarrist and founder of the mythical band Queen will be performing as a special guest artist in the Sonic Universe concert by Tangerine Dream on June 24th at the Magma Art and Congress Centre, Costa Adeje. Tangerine Dream, pioneers of progressive electronic music and New Age, will be performing some classic

songs from their repertoire as well as some new creations in which music will be mixed with the real sounds of the sun and the stars. Brian May will also be taking part in a conference and round table with Richard Dawkins, Kip Thorne (discoverer of black holes), Jill Tarter, Alexei Leonov and astronaut Buzz Aldrin. In addition, there will be a tribute to Yuri Gagarin, and exhibitions of astro-photography and spacial art. More information is available at www.starmus.com.

Canaries link with Europe The CanaLink submarine fibre optic cable which links Europe with the Canary Islands was brought to the coast of the ITER installation in Granadilla on May 16 and ceremoniously winched onto dry land. The laying of this submarine cable forms one of the fundamental phases of the ALiX project which is led by the Cabildo of Tenerife and has the objective of increasing the competitivity of Tenerife in the telecommunications world. Once connected, it will have the capacity for 75 million high quality conversations to be held simultaneously, 500,000 times the capacity of the existing cable which was installed in 1965. The event was attended by many, including Cabildo president Ricardo Melchior, the mayor of Granadilla, Carmen Nieves Gaspar Rivero, Juan Ruiz, from the Canarian Government’s energy agency, Rosario Portero, delegate consultant for ONO, the president and representatives of ITER, and many others who wished to witness this historic occasion.

Lila Downs concert Auditorio de Tenerife Adán Martín, June 25th, 8pm

Lila Downs is the daughter of Mexican cabaret singer Anita Sánchez and Allen Downs, a professor of art and cinematographer from Minnesota. She grew up partly in Mexico and partly in California as a teen, and Minnesota as an adult, where she completed her third level education in voice and anthropology. She returned to Mexico where she learned to weave but then began singing in clubs, and met her future husband and artistic director saxophonist Paul Cohen.

In recent years, Downs and her band have toured widely in Mexico, South America, the USA and Europe. Her performance of Burn it Blue, soundtrack to the film Frida, was nominated for an Oscar, and she has also collaborated with diverse musicians such as La Mari from Chamboa, Enrique Bunbury and last year she appeared on The Chieftans’ album San Patricio. Summer splash There is no better time to pamper your extremities than during those hazy, lazy days of summer. Sensible exposure to the sun will help hair and nails to grow as it produces vitamin D which increases your body’s ability to absorb calcium. But even if you don’t have time to sunbathe there’s no need to hide your hands. At Miss Nail there’s an explosion of colour just waiting for you to apply. The manicure and pedicure experts use only high quality care products and will give your nails a fresh look while spoiling you into the bargain. “To give the customer a maximum sense of wellbeing” is one of the top priorities for owner María de Francisco and her staff. While having your nails done, you sit in a comfortable massage-chair, so you can fully relax and enjoy the treatment. To further enhance her customers’ wellbeing, María has got a special whirlpool for your feet in the Parque Santiago III studio, which will stimulate and activate your feet and legs. Miss Nail will help you choose a look that suits your hands and lifestyle, whether it’s a classic French Sit in a comfortable massage chair, enjoy the foot spa and relax

Fundraising for Africa A charity gala was held on May 17 at the Hotel Boutique Flamingo Suites in San Eugenio, and organised by the Hotel Flamingo’s Natalia Tolstokorova and Ignacio Rosillo-Daoiz. The event was sponsored by Restaurante el Barril, who prepared a typical dish from Uzbekistan like a paella, called Plov. The restaurant, as well as the other sponsors, Supermercados Puchita, Bodega Torres, Sun Forever Beauty Salon, Rent-a-Car FavoritTrio, Salon Arte y Flores and Flamingo Suites all donated fabulous prizes for the raffle. There was a show featuring Hindu and Arabic dancing, ‘Bollywood’, a talk by Ignacio who was a volunteer in the construction of a hospital in Africa, as well as music, dinner and a free bar. All money collected goes to the Fundación Africa Directo, to help with the purchase of an ambulance. The Russian, British, Belgian, Ukranian, Spanish and Lithuanian companies who joined in with this project demonstrated their solidarity, and together with representatives from Banesto, Banco Popular, CAM Bank and others, were able to open doors to business and cultural matters. Another event is planned for July.

Spirit of Carnaval Photographer Phil Crean, whose work is often featured in The Magazine, has recently published a book called Spirit of Carnaval. He comments, “As someone who loves to photograph subjects in situations of strong emotion, the Carnaval is a dream come true. All the participants are playing to their audience, showing their skills at dance, music, and of course wearing fantastic costumes. There is also a great feeling of playfulness in the way they interact with the audience and vice versa which makes for great moments when my camera becomes the focus for this play, thus allowing me to get some great photos. “This year I was lucky enough to get backstage at the gala to elect the Carnaval queen and was able to photograph the candidates getting ready for the contest. Hopefully I have captured the tense atmosphere that exists as they prepare themselves and get into the massive costumes, and have all the glitter and make up applied, before transforming 20

themselves into a truly great spectacle on stage. Also during the opening parade and the Shrove Tuesday parade I have focused on the audience and caught some of them enjoying and participating in the event in their own individual way. I love the imagination and creativity that goes into making the costumes and also the message that is sometimes being put across in a humorous way. “I love to photograph people at events, whether that be Carnaval, a fiesta, a wedding or any occasion where people get together to have fun, celebrate or make a statement. Also, portraiture; landscape; and architecture are areas that I explore and I’m always looking out for new ways to stretch my creativity. “The book can be ordered at http://www.blurb.com/bookstore/ detail/2188775 who are the publishers. They offer a print on demand service so the book is printed and sent out after ordering. At the moment it is not available in shops but if demand is there I can supply copies to shops.” june 2011

The Lexus CT 200h, the company’s first five-door compact, was presented at the Geneva Motor Show as the first and only full hybrid in the European premium compact segment. The new Lexus CT 200h is a Full Hybrid capable of functioning in petrol or electric mode, or a combination of the two. Lexus’ Full Hybrid drive technology, consisting of not only the engine and electric motor, but also a generator, high capacity battery, power control unit and a power distribution unit, gives fluid acceleration, surprisingly quiet motoring, and the performance that clients expect from a premium car. The Full Hybrid transmission of the CT 200h offers superior levels of silence and significant reductions in noise, vibration and harshness. By combining the lightweight compact 1.8-litre VVT-i petrol engine with a potent electric motor and the Lexus Hybrid Drive transmission, the CT 200h gives the performance of a 2-litre unit with CO2 emissions so low that it is a leader in its class. The driver can choose between two driving modes – dynamic or relaxing – together with four other sub-selections: Eco, Normal, Sport and EV. Eco and Normal are centred around relaxing driving, EV (only available with Full Hybrid drive) allows super-silent emission-free driving using only the electric motor over distances of up to two kilometres at speeds up to 45 km/h, and Sport offers a more dynamic experience. Other fuel saving features include an automatic stop/start which means that when the vehicle stops, the engine is automatically turned off to save fuel, and during start-up or at low to medium speeds, the vehicle automatically switches to EV mode. During normal driving conditions, the power distribution is adjusted constantly between the engine and 28

the electric motor to combine optimum performance with the best fuel economy. With the electronic braking control and regeneration feature, the electric motor acts as a generator, emitting power during deceleration and regenerating power during braking. This is stored in the high output battery whose potency level is constantly monitored, and the system design eliminates the need for external recharging sources. In terms of dynamics, the CT 200h has been designed to have as low a centre of gravity and point of interia as possible. The total height of the vehicle, the height at which the driver sits and his hip level have been situated as low as possible, while the passenger seats are as close to the centre as possible. The bonnet and the rear door are made of aluminium to reduce the weight of the body and the hybrid battery hides beneath the floor in the 345-litre cargo space to optimise weight distribution and equilibrium. The cargo space can be increased to 700 litres by folding down the rear seats. The body has an aerodynamic style and a rigid structure. The CT 200h has a specifically designed suspension system which includes McPherson struts, some elements of which have also been exclusively designed for the vehicle. The CT 200h has been created for those who want a vehicle with reduced emissions but without renouncing performance, and it is likely to attract younger drivers. Sophisticated and loaded with high technology, comfortable and designed with the European market in mind, the CT 200h also has a sporty character. Efficient and elegant, the interior combines superior ergonomics with metallic finishes, dark soft-touch materials and generous use of june 2011

The instrument panel is based on the Future Lexus Interior concept and is divided into two different areas, the superior zone is for visualisation with an 8-inch LCD multi-information screen, located at an ideal distance to see at a glance, and a lower area, the operations zone, with the uniquely designed gearshift and other control systems such as Remote Touch, which functions somewhat like a computer mouse, allowing the driver to access, control and personalise several vehicle configuration programmes, and the info-entertainment system. In appearance, the CT 200h does not have the traditional ecological ‘look’ of hybrid vehicles, but has adopted a unique combination of

It has been equipped with made to measure 17-inch alloy wheels with a blue insignia, especially for the hybrid, which are available in a range of ten colours. Incidentally, in its first race, the 2,500cc 191CV racing version of the Lexus CT 200h prepared by Gazoo Racing came in second in the SP4 class, giving its first podium at Nurburgring recently. The dream goes on.... Wines under the name Jean León are the culmination of the life of a man whose passionate biography began in 1928. Jean León was born in Santander in northern Spain and his real name was Ceferino Carrión. He had a hard and unfortunate childhood, and by the age of 13, he had suffered many disasters, the family home had burnt to a cinder and he had lost his father and older brother in a tragic accident. But he had always wanted to travel, so at the age of 19, he headed for New York. He soon found work collecting plates in a club in the Rockefeller Center but without documents, had to move on as he could have been detained and deported to Spain. His next stop was Hollywood, where the glamour fascinated him. To legalise his situation, he joined the US forces as a volunteer during the Korean war and, two years later, emerged as a US citizen and continued working in restaurants, but this time, one frequented by the likes of Frank Sinatra and Joe di Maggio. He befriended many actors, especially James Dean, and together they created the most unique and luxurious restaurant in Beverley Hills, Hollywood – La Scala. Dean’s tragic death affected Jean badly, but not enough to stop the project. La Scala opened and was soon full of celebrities, including Marilyn Monroe. In fact, it is thought that Jean León was one of the last to 32

see Marilyn alive. He was soon known and respected in gastronomic circles, but he could never find the ‘perfect’ wine to serve. So he set out to create a wine which bore his name, a unique and special wine to offer his best friends. To find the best land and climate, vines, and of course winemaking methods, he arrived in Cataluña where in the heart of the Penedés he found what he was looking for. He paid a fortune for his vines – Cabernet Sauvignon, Merlot and Chardonnay – and was the first to plant these varieties in Spain. Finally, he constructed the bodega and enologist Jaume Rovira supervised operations, everything was done manually. In 1969 the Jean León Cabernet Sauvignon Gran Reserva was born. Initially it was only exported to Hollywood and tasted by the celebrities who formed part of Jean León’s social circle. It became known as the ‘wine of the stars’ and nowadays is exported to more than 30 countries and to be found on the menus of the most exclusive restaurants. Later, he spent three years sailing around the world on his yacht La Scala a Mare, with a British captain, seeking good restaurants and women. He finally settled in Phuket, Thailand and was planning to open a restaurant there when he was diagnosed with cancer. He returned to Los Angeles, where he finally died. Now, he is remembered every time a bottle of Jean León wine is uncorked. june 2011

The ultimate Sunday Carvery As most residents in the south of the Island already know, for the best Sunday roast, a visit to James’ Brasserie & Bar is a must. Carveries have been served here since 1995, so this is a firm favourite among Brits in the area, so much so that it‘s a weekly event for many. Situated in Avenida Austria, almost opposite Aqualand in San Eugenio Alto with a large free car park opposite, you can eat inside this tastefully decorated restaurant which has seating for about 70 diners, or al fresco on a spacious terrace which faces the pool area. Their traditional Carvery buffet offers home comforts at their best, allowing you to indulge in a choice of three mouthwatering cuts of roast meats, served with a selection of fresh seasonal vegetables, delicious roast and mashed potatoes, stuffing and homemade Yorkshire puddings. Complement your meal with the Chef’s famous thick homemade gravy and traditional condiments including horseradish, mint, apple and cranberry sauces. The meat is carved for you by one of their friendly chefs and you can help yourself to your favourite vegetables and trimmings. All for a very reasonable €10.50, or €5.50 for under-11s. Try it once, and you‘ll want to return again and again! James‘ Brasserie also has a full á la carte menu 34

available at other times which has been carefully selected to include not only traditional British favourites but also international classics. Starters include a delicious homemade soup of the day, Roquefort prawns, garlic mushrooms, bruschetta and much more. There are five chef’s specialities, which you need to book 24 hours in advance: a succulent fillet steak served with horseradish, mash, fresh vegetables and a red wine sauce; T-bone steak served with homemade chips, salad and your choice of mushroom or pepper sauce; fillet of salmon with a lemon butter sauce, served with crushed new potatoes and salad; breast

Teide Observatory Centre

Above the clouds Driving along the northern and southern coasts of the island on a clear day, if you look up into the centre, from certain areas you can see the white domes of the Teide Observatory Centre perched high on the flanks of the hills. Astrophysics in the Canaries began in this observatory in the 60s in Izaña, an area at 2,390 metres above the sea. The observatory area which sits on the borders of Güímar, Fasnia and La Orotava, now covers 50 hectares. The first

38

telescope here was put into operation in 1964. The geographical situation of this site and the transparency and excellent astronomical quality of its sky has meant that the Teide Observatory Centre is a preferred location for the study of the sun and gathers together some of the best sun telescopes in Europe. Together with the telescopes at the Roque de los Muchachos in La Palma, the installations make up the North European Observatory and they house telescopes and other instruments belonging to 60 different scientific institutions from 17 countries.

Solar telescopes installed in the Teide Observatory Centre include Gregor, Themis and VTT. There is also a sun laboratory. Night telescopes include Stella, Bradford, Mons, Array, CMBm Stare, IAC80, OGS and Carlos Sånchez. All these facilities, together with those in La Palma are managed by the Canarian Astrophysics Institute (IAC). The IAC consider sharing their knowledge as an integral part of their job and to that end opened a visitor’s centre at the Teide site in 1991 in an empty dome. Visits take place during the day between April and December. Groups and schools can arrange organised visits to the Observatory. The centre can deal with around 40 visitors at a time and staff members show visitors what an observatory is, how the telescopes work and the importance of astronomy for mankind. Individuals too can apply to visit the site but the visit will only take place if 15 people or more book on the same day and if climatological conditions are favourable (especially during winter), so you may need to be flexible on dates. In addition, the IAC organise open days where for example you can find out which is the closest star to the earth, take a look at it, find out all that is known so far about it and how that was discovered. How old is the Universe? Where did it come from? Where is it going? Visit them and ask all the things you wish to know about the Solar System, exoplanets, galaxies – whatever you want. The open day visits are aimed at bringing astronomy closer to you. You can visit areas of

the Observatory Centre such as the solar towers, the solar laboratory, telescopes (last year’s visit included Themis, IAC80, Carlos Sánchez, Bradford, OGS and VTT), have a look at some of the instruments they use. Via various workshops, chats and observations you will get to understand astrophysics better and enjoy a different kind of cultural visit. The next open days are on June 24th and 25th between 10am and 5pm. Entrance is permitted by strict order of arrival and you should read the IAC recommendations and warnings on their website before organising your visit.

Canarian livestock

Pearls of swine Almost 5,000 people visited the first Canarian black pig fair at the ethnographic park in Pinolere, La Orotava, last month. It was a celebration of all of the autonomous livestock of the Canaries, but especially of the famous Cochino or Turre Negro – the Canarian black pig, a breed valued by gourmets for the quality of its meat and by farmers for its amenable character.

42

The fair included information, artisans, cheese and mojo sauce stalls, tastings, show cooking, a butcher selling black pig meat, exhibitions, a very popular cafeteria and a number of live animals, especially black pigs which had been brought in for the occasion. The setting was ideal, the weather balmy, and the event an overwhelming success. Without doubt the most popular pig was a mum and her piglets, drawing a continual crowd of children and adults and the most popular stand – the extensive cafeteria where diners could enjoy black pig paella, pork scratchings with gofio, roast pork and chops, and steaks cooked over a wood fire from just €3. All washed down with an excellent local wine of course! Archaeological findings confirm that the Cochinos Negros were brought to the islands by successive waves of colonisers from the north west African coast, the Berbers. The aboriginal Guanches here valued the pigs highly and not only for meat. The tusks of the males were used to till the land, and tools and jewellery were made from the bones. The skins were used to make clothing (tamarcos), shoes, collars for the sheep and goats and to wrap the Guanche mummies. The aborigines adulated the pigs and made clay statues of the animals to honour them. Fourteenth century writers who arrived at the time of the Spanish conquest confirm the presence of the pigs in the Canaries. The pig is thought to be between the Asian pig and the june 2011

pure African variety and with the spread of Islam in the north west of Africa and the extermination of the pigs there, the Canaries became the last refuge of the species. After the Conquest, various breeds of Iberian and English pigs were also introduced which intermixed with the local breed. From the 1960s onwards, the Turre Canario was on the decline as a result of the introduction of faster growing foreign breeds which reached greater weights, added to the gradual abandonment of agriculture in the Islands as workers turned to higher paid and less exhausting jobs in tourism. Its importance lies in its position as the last remaining trace of the Berber breed and its role in the porcine colonisation of the Spanish colonies in America.

They are of a marked rustic and primitive nature, with characteristics that have developed due to their adaptation to the Islands. They have a dark skin with deep wrinkles especially on the face and the body is covered with abundant, long, thick, dark hair. The head is small in relation to the body and they have enormous wide ears, a thick neck and double chin, and a straight tail which normally points down. The males have large and powerful tusks. This is an animal that is very used to people and is normally kept in corrals, but can still be found wandering loose in some areas. It wasn’t that long ago that Cochinos Negros were being raised free-range in Garajonay National Park in La Gomera. Of all the areas in Tenerife where the pigs are raised, Icod el Alto has the most fame. 43

The gestation period is four months and a sow can have up to 10 viable piglets at a time, twice a year, quite safely. The docility and maternal nature of the sows is extraordinary and the high number of teats and her excellent body fat reserves guarantee the correct development of the piglets. The young stay with mum for up to around six weeks. In comparison with other breeds in Spain such as the Iberian pig and that of Murcia, the Cochino Negro grows at about half the pace, but that very slowness of growth, the long fattening period and the methods of breeding and raising them give the meat of these animals special properties in colour, tenderness, juiciness and flavour which differentiate it very much for the better from normal pork. If your local butcher does not carry it, try AlCampo’s meat section. Traditionally the pig killing would have been held over for a special day, a feast day, a wedding or baptism, Christmas etc. Before the onset of European Union rules and regulations it would have been carried out on the farm or at the homestead by the local pig slaughterer or by the farmer himself. It was work and a day of celebration and abundance for the whole neighbourhood. The innards were removed and cleaned to make embutidos (cold sliced meats) and the blood collected for black pudding, which here is made 44

with onion, sultanas, almonds and sugar, or simply to make ‘fried blood’ which is a delicacy. Most of the meat would have been salted to preserve it, but a good portion would have gone towards the day’s fiesta along with potatoes and wine from the area. The salted meat provided the subsistence for the family for many a month in various traditional stews and potages. Some older members of the population tell of jamón planchado, a delicacy whereby a leg of pork was covered with brown sugar to which a hot iron was pressed. The sugar coating was an excellent conserving agent. The ham would then be hung high in the chimney to smoke it. Nowadays, the Cochino Negro is the only autonomous pig in the Canaries and is included in the list of Spanish breeds as specially protected and in grave danger of extinction, although various island council initiatives, starting with Tenerife and La Palma but now extended all over the Canaries, are reducing that danger year by year. Tenerife has an expert, dedicated and thriving breeders’ association and can now boast that it has a stock across the island of Cochinos Negros sufficient to guarantee the survival of the breed and to enable us to augment the presence of a traditional product in the kitchen, which without doubt, is one of the gastronomic jewels of our archipelago. june 2011

The Sponge Who Could Fly!

Who can say what makes a small, underwater, at times annoying being, who is absorbent and yellow and porous, so internationally popular? But he is. The Sponge Bob/Bob Esponja show arrives in Tenerife on June 16th and with an extra show already added due

Since Sponge Bob first aired on
