INFLUENTIAL WOMEN

When I knew that I would be interviewing celebrity stylist (and Easton native) Kate Young for this edition, I spent the next few days learning everything I could about her ahead of our conversation. I listened to Kate on podcasts, watched her on YouTube and read every article I could find on the internet, ranging from the tour of her home in Upstate New York in Architectural Digest to her red carpet essentials chronicled by Page Six, and everything in between (oh, and there’s a lot in between). But I did not come across a single piece of content that didn’t emphasize the impact that Kate has had on celebrity style and on the fashion industry as a whole—a fact so undisputed, it has prompted her to be named the most powerful stylist by The Hollywood Reporter not once, not twice, but three times. When we talk about influence in one’s field, Kate Young’s got it. Read how she went from Lehigh Valley to legendary on pg. 46, where she chats with me about her time at Vogue as Anna Wintour’s assistant, what it’s like dressing the most famous players in Hollywood (ahem, Selena

Gomez, Margot Robbie, Sophie Turner, Dakota Johnson) and all of the accolades along the way.

And it would be impossible to talk about Lehigh Valley Style’s Influential Women of the Year without mentioning the influence of the incredible photographer and human behind the photos, Alison Conklin. On October 18, 2022, Alison received a lifesaving heart transplant. As her friend, colleague and fan, I’ve followed along with Alison’s journey in real time and have been endlessly inspired by her strength, her positive outlook and her ability to keep moving forward. I am so honored that Alison has chosen to share her story with our readers on pg. 36.

It was an honor to design “I Get To” featuring Alison’s journey to receiving a new heart. Alison was with me every step of the way guiding me in my own health journey in 2020 as I prepared for open heart surgery. From what questions to ask the doctors to what to have ready for recovery, she knew it all and she was always just a text away! Seven months after being diagnosed, my atrial myxoma miraculously disappeared and my surgery was canceled. I will never forget her kindness and support during such a dark time. In April, Mia & Maddie’s Bakery celebrated its grand opening in Easton. “Baking has been a life-long passion of mine,” says Eileen Newman, owner and primary baker, who began baking full-time in 2021. Inspired by her husband and three daughters, Newman hopes the bakery brings happiness to customers. “We really are trying to create an environment where everyone is welcome,” she shares. Newman says some of their most popular items include the pineapple coconut banana bread and strawberry rhubarb pie. In March 2023, The Lafayette (the oldest college newspaper in Pennsylvania) named them the best chocolate chip cookie in all of Easton. But Newman says she’s not in competition with anyone: “There’s plenty of business to go around.”

Owner Karen Widrick calls Sunny Side Up a retirement dream of hers and Chef Tim Widrick’s. “Upon opening SURV restaurant at 1800 Park Plaza, there was a breakfast location called Alfie’s that piqued my interest,” she explains. “After two years of being in Park Plaza, Alfie’s closed. It was then I knew our retirement dream would come about before retirement.” Widrick describes Sunny Side Up as a boutique breakfast and lunch spot offering scratch-made food. She calls The Lafayette Platter their most popular breakfast item with all seven of their Eggs Benedicts right behind it. The Forks Panini is a hit at lunch. MODERN FLAIR FLYING PIG TAVERN AND TAP

Billy Kounoupis, Tim Kalavruzos, Chris Kolovos and Bill Diamantakos are the team behind Bethlehem’s Flying Pig Tavern. “My cousin Tim came up with the idea and name for the Flying Pig,” says Kounoupis, sharing that Tim owns several premier banquet facilities and used to say that he’d open up a restaurant when pigs fly. “We are proud to be the type of tavern that pushes the culinary envelope by taking classic dishes and creating a modern flair,” says Kounoupis, noting their double-cut signature pork chop and steak burgers. Drinks range from the finest IPAs to craft cocktails. “As a resident of Bethlehem, I am humbled by the amount of love and support from my community,” he says.

In youth, our wide-eyed aspirations may not include “natural deodorant entrepreneur,” per se, but what a world it would be if every ambition included the conscience and care that Bailey DePew brings to her brand. Here’s how her journey brought her to start Bai-li Essentials, kind to the planet and your pits.

BEING THE CHANGE

In 2019, DePew had been living in Los Angeles for 12 years and despite the increasing availability of natural deodorant options, didn’t think of herself as someone who could make the leap. “I was like, ‘I’ll never give up my clinical strength!’” DePew says. She wanted to escape products rife with aluminum and parabens, but the search for a plausible alternative wasn’t easy.

One reason was that the sea of crunchy brands is still so often packed in plastic and with the shady term “fragrance” on the ingredient list. If she wanted a deodorant that was worth cutting ties with big pharma, she’d have to devise the perfect formula herself.

“I never thought I’d be in this industry,” DePew says, “but when I started making my own deodorant at home and it was really working, I thought, if I’m on this journey for something more sustainable, I bet others are also seeking something like this.” She was right.

DePew and now-husband Jack started in the kitchen of a one-bedroom apartment, but since they’ve moved their burgeoning business east, all production takes place in a woodworking shop on a property here in the Lehigh Valley. “Jack calls it my ‘she-shop’!” DePew says.

Each deodorant and lip balm is handpoured in the she-shop, which means its footprint to local buyers has a very short stride.

THE PACKAGING PROBLEM

DePew is highly attentive to the growing trend toward zero waste. How discouraging it is to put your money toward a product made with all the most ecological ingredients only to have to throw away a piece of immortal plastic trash at the end of it? “I had seen one or two brands at the time I started my business using the cardboard push-up tubes and just thought it was the coolest thing!” DePew says.

She was able to locate one of the only manufacturers of this type of packaging in the U.S., a company in Oregon, and source her deodorant and lip-balm tubes there, with labels made from sugarcane pulp.

This packaging is vulnerable to spills, but DePew isn’t about to let her products go to waste for mere aesthetic concerns, embracing imperfection by selling seconds at a discount.

Borrowing from Mandarin, the name Bai-li is not only a pun on DePew’s name but evokes the essence of her product: pure-beautiful, made with the simplest ingredients and authentic intention.

For months, DePew was her own guinea pig, casting aside common deodorant go-tos like baking soda when they resulted in a rash. my cardiologist said to me while I sat uncomfortably on the crinkly paper in his office. I looked down at my legs and took a breath. I remember thinking there is no way this is actually true. This isn’t what death looks like? Or feels like? I caught a glimpse of myself in the reflection of the art on the wall. Surely, he has to be wrong. I looked over at my husband, Geoff, who was sitting to my right; he looked horrified. We both stared at each other and I wondered what he was thinking. “Are you sure?” I heard myself ask. “How much time do I have?” I zoned out as my beloved cardiologist of almost two decades talked about levels, test results and complete heart failure but I didn’t miss it when he said: “We’re talking six months.”

We did what anyone who gets this sort of diagnosis does next. We followed the appointment by going to an Alanis Morissette concert that night. They were tickets we had for over three years, and finally, after a global pandemic and torrential rain had continued to push the concert back, we would experience it. I sang along with every word and buried all of the news to the back burner. Call it denial. I’ll call it survival.

This may seem like a crazy statement, but when I was 14 years old, my mother died at the age of 42 of the genetic heart condition hypertrophic cardiomyopathy. Five months before her death, when I was 13 years old, I was diagnosed with the same genetic heart condition.

She died in the kitchen of my childhood home. We had been chatting while she was cooking when she suddenly said she didn’t feel well. I watched as she collapsed to the floor. I frantically gave her CPR that I had recently learned in a babysitting class and, as I held her in my arms, I begged her to wake up. I called 911 and my father, who was at work, to tell him the unimaginable. The woman we loved the most in the world was gone. That night after returning home from the emergency room, now as a family of two, I watched as my father slid against the front door sobbing.

The next day, our beloved Great Dane, Ringo, died suddenly. We had learned about his heart condition less than a month earlier and without warning on a normal Friday afternoon he was gone. That weekend we didn’t get out of bed. I didn’t do anything but cry and sleep. When Geoff and I finally got to a place where we had the strength to talk, we decided that I needed to do everything I could to try to get a heart transplant. So, I texted my cardiologist and told him I would start the listing process.

I can’t articulate what it was like to lose my mother that way after being diagnosed with the same disease. I just know that the fear of having that same fate was something I carried since that hot July day. The number 42 has followed me around throughout the past 29 years—I always seem to grab the 42nd ticket when I am at the deli counter, when I walked the Turkey Trot 5K my bib was number 42, when I moved my father to an assisted living home his room number had 42 in it.

I was 42 years old when I was given this news of needing a heart transplant. For so many years, I looked at it like a curse, but then I started to see it as signs from my mother. I have always believed she is watching out for me.

While most kids my age were excited to start high school, I was suddenly a kid who had a team of cardiologists and specialists. I felt lost in my grief. My father, who was now a single parent to a teenage girl, taught me how to develop film and enlarge prints in a darkroom he built for me. I had become obsessed with the candid photos he and my mother had taken of me and of themselves. I used many of them for the photo wall I was put in charge of at her funeral. There were photographs they had taken that I had never seen before and that were now my most prized possessions. I used my mother’s camera as a way to navigate my sadness and I fell in love with photography and how powerful it is. I would eventually shoot my very first wedding at the age of 18.

It had been three days since my name was on the list and, suddenly, I was being prepped for surgery. I called my husband and he gathered the kids and drove to New York City so I could hug everyone one more time. I am a mother of two boys, both of whom are adults now—even if I will always see them as my babies. When I was told my donor was a man in his 30s, the very first thought I had was of how he was someone’s son. I was inconsolable. There is such complete gratitude for this amazing gift of a second chance, but it comes with the knowledge of how tragic it all is.

When the surgical team was ready, the entire nursing staff stood outside of my door playing the song “Milkshake.” With the words “my milkshake brings all

A Match

On October 10, 2022, I was admitted to NYU Langone hospital to complete the listing process and wait for a heart. I packed my suitcase with the knowledge that I may be there a long time. My hope was to at least be home by Christmas if not Thanksgiving but, truly, I had no idea what to expect. I had a septal myectomy via open heart surgery five years earlier and multiple other heart surgeries, so I figured I would have a handle on whatever was headed my way. (Spoiler alert: I couldn’t have been more wrong.) After

about one week of completing the tests, I was officially listed at Status 2 on the transplant list. The days were long in the hospital. I would walk the halls to stay as active as I could and sometimes I would chat with other patients who were also waiting. I made friends with the nursing staff (they were amazing) and three days later on one of my laps around the unit, a doctor came up to me and asked if we could talk. Not thinking for a second it was about a heart, I sat down on my hospital bed and he sat across from me. Out came the words:

Then, of course, from Rocky, “Eye of the Tiger.” As I lay on the table watching everyone run around and get ready, I started to feel completely overwhelmed. I closed my eyes and thought of my husband and my boys. I let myself imagine for a minute what my life may look like if I survived this transplant— being able to walk without being out of breath, being able to take the stairs, and simply being able to live. The anesthesiologist counted me down as I talked about photography and our shared love of Fujifilm, and the next thing I knew, I was awake, intubated and in the ICU. The surgery had lasted overnight, taking over 10 hours to complete.

New Life

I could write obsessively about how hard this has all been, how I work every day to keep myself healthy, about the anxiety and the fear. I could talk about taking handfuls of life-saving medications every day on a strict schedule, multiple times a day for the rest of my life. At the time I am writing this, I am getting ready for my eleventh heart biopsy and right side catheterization at the hospital in a few days. All of that is a large part of my story, and it is not easy, but what matters more than any of it is that I am here.

I celebrated my boys’ birthdays. I sat next to my son Moses as he bought his first car. We have gone hiking together as a family (and please reread that sentence because I could actually hike for the first time). I have taken walks with my oldest son Jonas and had the most touching conversations.

I turned 43 in May.

I have laughed way too loudly with friends and have shared adventures with my love, Geoff. I have learned so much over the past few months. We have all been changed in beautifully heartbreaking ways through this experience. One of the biggest things is to simply be happy right now. Don’t wait for this to happen or for things to be worked out or

perfect—because let me tell you, that doesn’t exist. Celebrate now. Everything is a miracle and I am grateful for all of it just as it is. For the amazing moments and for the struggles, I get to be here.

One thing I like to say is “I get to” rather than “I have to.” If there is one thing you take away from reading this, please let it be that. You get to grocery shop. You get to fold and put away the clothing of your loved ones. You get to take your dog for a walk. You get to go out to dinner with your in-laws.

You get to do all the wonderful and not-so-wonderful things in life and that change in perspective should open up a world of gratitude.

Before she was styling celebrities like Selena Gomez, Michelle Williams, Sophie Turner, Dakota Johnson, Nina Dobrev and countless others for red carpets, award shows, fashion campaigns, magazine covers, movie premieres, press tours and just about every fabulous thing in between, Kate Young once spent her summers going to dances at the Palmer Pool on Monday nights and catching movies at the Starlite Drive-In with friends. She was obsessed with fashion magazines, but also really enjoyed studying ancient Greek and Roman history. “I wanted to be a classicist,” says Young. “I don’t think it crossed my mind that fashion was an actual career.”

Young recalls rainy-day trips as a little one to the Allentown Art Museum with mom, Barbara, who was the tennis and volleyball coach turned assistant athletic director at Lafayette College. “She knew that I liked fashion,” says Young. “She would take me shopping, she would take me to New York, she would take me to the library because I wanted to read all of the magazines.” And Young says her mom would always let her pick out her own clothes, even when other moms thought it was crazy. “She was very encouraging of all of that.”

Dad Jim was an assistant professor of kinesiology at Penn State Lehigh Valley and had a passion for cycling—Young recalls so many memories with her family at the Velodrome (now Valley Preferred Cycling Center). Jim was founder of the Penn State cycling team, director of the Future Champions Cycling Club and one of the founders of the National Collegiate Cycling Association; he has been described as an inspiration to an entire generation of collegiate cyclists. In August 2021, he passed away after a hard-fought battle with Parkinson’s disease, but his legacy lives on. Young’s brother Matt was a champion cyclist, and locals can enjoy the Jim Young Super Tuesdays track cycling series in his honor at the beloved T-Town.

Reflecting on her teen years in the Lehigh Valley, Young says she began taking night classes and summer courses at Lafayette College when she was around 14 or 15 years old. “I hated high school,” she says. “I wanted to get out and get on with life.” When Young learned that she could apply for early admission before her senior year, she ditched Easton Area High School to study English on College Hill. But perhaps it wasn’t quite the launching pad that Young was searching for. She started giving college tours to prospective freshman during her own freshman year. “I knew it inside and out. I knew everyone and every building,” she says. She took a massive leap across the pond and went on to finish her education at the University of Oxford.

After college, Young began working in fashion PR in London, but she knew she wanted to be on the editorial side of the industry. It was

a fortuitous trip back home to Easton for Christmas that would ultimately catapult her career. Hoping for some advice, Young went to lunch with her mom and a woman named Kati Korpijaakko, who was the mother of two of Young’s high school friends and also the art director for Glamour magazine. Korpijaakko introduced Young to the director of human resources at publishing powerhouse Condé Nast. From there, Young was brought to Vogue editor-in-chief Anna Wintour’s office. Wintour’s titles now include Global Chief Content Officer and artistic director of Condé Nast along with Global Editorial Director of Vogue; she is considered by many to be the most important figure in fashion. “By the time I got home to Easton, I had a job offer on my answering machine,” says Young, and she had two weeks to get her affairs in London in order.

Young started at Vogue in 1997. The first few months on the job entailed many bus commutes back and forth from Easton and staying with friends in the city until she settled into a place of her own. She’d spend 11 months as Wintour’s second assistant. “I learned how New York fashion people work. In French, they call them the good addresses," she says. “Being Anna’s assistant is really useful at Vogue because you know everybody and you know what they do. It was pre-social media so they weren’t all famous. I didn’t come in knowing who Grace Coddington was.”

When she moved on to the fashion market department as the European market assistant, Lauren Weisberger, author of The Devil Wears Prada (and fellow Lehigh Valley native), would fill Young’s role as Wintour’s assistant. Meanwhile, Young continued to move up the ranks at Vogue. Her big break was a photo shoot with Debra Messing that was scheduled to take place over a holiday weekend. When no fashion editors were available to style Messing, Young was nominated and flew to Los Angeles. She went on to become a sittings associate at Vogue, and in 2003, Young styled the first-ever cover of Teen Vogue, starring Gwen Stefani.

She began splitting her time freelancing between Vogue and Teen Vogue, and her career as a celebrity stylist started to take off. As Young got to know the publicists and the celebrities on set, they began asking her about borrowing clothes. Her time in Vogue’s fashion market department meant that she had the connections to make it happen for them.

In 2010, Young decided to take celebrity styling full time. “For me, it was the thing I enjoyed most,” she says. “It just felt more fun. It felt more buzzy.” While magazine budgets were getting cut, celebrity PRs were starting to emerge, and it was clear that celebrity was the future.

It was also at that time that she gave birth to her second son, Leif, who is now 13. Young’s older son, Stellan, 15, accompanied her on a recent trip to Paris Fashion Week, but she says he’s much more interested in history, English and music. It’s possible he takes after dad, Keith Abrahamsson, who is the founder and director of A&R at Mexican Summer Records. The pair met in 2003 in New York, where they were hanging out in the same crowd. Back then, Young says he had a gig as a DJ that she would go to all the time. Now, the family of four—plus their cat, Nagini—splits their time between the city and their home upstate. “It’s very outdoorsy our life up here,” says Young, sharing that they are always hiking, love to ski in the winter and enjoy road trips and traveling in the summer. “I do pottery when I’m up here.”

On trips back to the Lehigh Valley, Young spends time with her mom walking the local trails, exploring Barton’s Auction in Nazareth and grabbing lunch at Daddy’s Place in Easton. They also enjoy cooking and eating things from her mom’s garden.

Young’s success in celebrity styling has prompted The Hollywood Reporter to name her the most powerful stylist of the year three different times. The Business of Fashion says Young’s “knack for turning Hollywood ‘It-girls’ into sartorial stars has made her one of the most powerful figures in the dance between the film and fashion industries.” So, what’s her magic? Young thinks her editorial background had a heavy hand in influencing her taste. “I tend to think about things a little bit differently than people who have just come up in celebrity styling. I’m not often trying to do something that’s just really Instagram friendly but I’m thinking about the people that I admire in fashion and asking, would they really like this?”

Young’s signature might be dressing clients like themselves in a comfortable and effortless way, but she also thinks it’s important to elevate and make a look more interesting. “There’s this funny line,” she says. “If I have the possibility to get the absolute best stuff, which is being made all over the world by the best fashion designers, it makes a lot more sense to me to push the envelope a little bit and not be serving the people at home what they already know they like.”

Social media has played a big role in how others perceive her business. Young says that when she started putting her clients’ red carpet looks on Instagram, there was a stretch of time when she would go to fashion shows and people would congratulate her on her recent success. “I’d be like, what do you mean? I’m doing the same thing, I don’t have any new clients, nothing’s changed, but they were seeing my work for the first time and associating it with me.” Social media has also opened up fashion to the general public. “I’m a little jealous of kids now who can see everything.

I had to wait for six months when the magazines came out to see what was shown in Paris,” she laughs. “And I certainly couldn’t buy anything at the Palmer Park Mall that looked like what they were showing. Now kids can do that on the internet.”

So, what’s Young’s advice for that kid in Easton following along with fashion shows, shopping online to recreate looks and dreaming of a career in couture? Develop your eye and figure out what you like. “So much of what I did as an assistant was keep a notebook and write down everything all of the editors and photographers said that I didn’t know,” she shares. “I didn’t know the movie references. I didn’t know the art references. You have to research it and figure out what you like. Read articles with people you admire, and when they say a name you don’t know, go down that hole and figure it out.”

Young says she remembers figuring it out when she was first coming up and knows it can be difficult. She reflects on how differently she once dressed, opting for only the cool designers paired with what everybody else at Vogue liked. Now, her go-to look is a navy sweater or sweatshirt with a pair of jeans. She’s also got a serious thing for ’90s vintage.

But vintage or not, Young rarely finds herself looking back. She’s described herself as overly optimistic, very goal-oriented and obsessed with the future. Currently, she’s looking forward to another collaboration with women’s jewelry designer Monica Vinader this fall. She also teases a capsule wardrobe she’s created with a brand at affordable prices: “I’m really excited because it’s sort of everything I want to wear.”

Young’s time at Vogue (and an impressive stint at Interview magazine) paired with her extraordinary accolades and years of styling celebrity clients might have onlookers assuming otherwise, but she’s the first one to not take any of it too seriously. “It’s just clothes. I’m not saving any lives,” she says. “This is just fantasy.”

Josi Garcia had worked in mental and behavioral health for many years before deciding in 2017 to open a practice of her own. “I really wanted to be a wellness group for anyone, not just someone who’s experiencing a mental health diagnosis,” she says. “You don’t need a label for someone to feel like they’re struggling with their behaviors or with their wellness.”

ZimZum Consulting, which is based in Emmaus, takes its name from a Hebrew word, which Garcia defines as “the energy between two driving forces to create something new.” It’s an accurate summation of how she and her team conduct business; ZimZum promotes a holistic, collaborative approach to achieving emotional wellness.

Garcia, a native of Brazil, says she has her own trauma story dating back to her childhood. “Working through some of that in my own life formulated this idea that I have something to share, something to give others. Helping people has always been a passion.”

She’s been a board-certified behavior analyst (BCBA) since

2007. The holistic approach she favors can be tailored to tackle any number of challenges. “We’re really looking at functionally how to adjust behaviors,” says Garcia. ZimZum offers traditional one-on-one counseling services as well as classroom consultations for teachers and schools, behavior therapy (including ABA therapy for children with special needs) and family and marriage counseling. Yoga is one of its more recent additions. “The mind-body experience is very important,” Garcia says. “We can’t miss what’s happening in our bodies and being more connected to our bodies.”

ZimZum’s clientele runs the gamut, from those seeking to stop (or start) a particular habit, to survivors of human trafficking. “My brain has to shift pretty quickly,” Garcia says. And yet, regardless of the scope of the trauma, many of the same issues are often at play, such as fear, anxiety and a lack of self-worth. “I think it helps to highlight that at the end of the day we’re all human beings, and we need help, we need support,” Garcia says. “We need to feel like we’re loved.”

For the past five years, physician assistant Nani Cuadrado put her skills to use wherever they were needed in the Lehigh Valley: under bridges, inside soup kitchens or within homeless encampments and tent cities. If an unhoused person needed medical care, she was there. Recently she decided to step away from her role as director of Valley Health Partners’ street medicine program to embrace what she calls a new season in her life as the director of education for HEAL (Health, Education, Advocacy, Linking) Trafficking.

It’s somewhat of a full-circle moment for Cuadrado, who’s been advocating for human trafficking victims for more than a decade. She says a discussion at her church in 2012 opened her eyes to the fact that trafficking is a very real problem in the Lehigh Valley. At that point, she had been working in the emergency department for several years, but had no training in recognizing the signs of human trafficking.

“I didn’t even know what I was looking for,” she says.

“I realized in all the years that I’d been [practicing], how many people I probably missed.”

One of her first major projects with HEAL was developing a Human Trafficking Response Protocol for Lehigh Valley Health Network, which was rolled out in emergency departments this past April. Cuadrado says the triage nurses, as the first line of defense, now have the tools they need to react appropriately when something seems off: “What do you do when you have your Spidey senses tingling? We’ve trained them on different red flags that would make them suspicious.” The program will be rolled out to other LVHN departments and facilities in the months and years ahead.

While the shift from an on-the-street PA to a behindthe-scenes advocate is a change, she hopes her work will be equally impactful. “The ‘why’ is my patients, because they’ve taught me everything about this. What it looks like, and what it looks like here in our community,” says Cuadrado. And she’s encouraged by the groundswell of support for trafficking victims in the Lehigh Valley. “We have great backing here,” says Cuadrado. “We have shelters in the area, we have aid centers for survivors and victims, we have law enforcement that’s behind us.”

Who is Chloe Cole?

“I’m an artist, a poet, an advocate for young people,” she says. Cole is also someone who understands the importance of having a safe space that serves as both a refuge and an incubator for creativity. Born and raised in Allentown, Cole says she struggled with a number of challenges, including violence and trauma. She wasn’t sure she’d graduate from high school on time. She credits the city’s Xcape Dance Studio with saving her life. “That program really shaped who

I am as a creator, as an artist, as a professional,” Cole says. Now she’s returning the favor through a pair of projects that aim to empower and inspire the LGBTQ+ and the BIPOC communities. “This is my way of giving back to the community and ensuring that those spaces are available for people.”

Cole was a co-founder in 2015 of Basement Poetry, a group that combines performance, community and collaboration.

give spaces for community members to talk about difficult topics such as mental health, racial inequities, LGBTQ+ issues, all of those things,” says Cole. That work is done at live shows, workshops, open mic nights and other gatherings held throughout the year.

Cole is also the program coordinator of Valley Youth House’s Project Silk, an LGBTQ+ inclusive drop-in program for people ages 13 to 29 that offers a variety of free services, such as HIV and STI testing, counseling,

education and food and emergency supplies. “Truly we’re just a space for people to come together and be in community,” says Cole. “Our community deserves radical spaces where there is radical belonging.”

Cole speaks openly about her own struggles in the hopes of buoying others who may feel adrift amidst their own trials and tribulations. “I lead with that,” she says. “I lead with love and supporting people with grace.”

The theme of growth both literally and figuratively—is one that looms large for Katarah Jordan. She’s a certified Master Gardener via Penn State Extension who loves getting her hands dirty. “Anywhere that I can get my fingers in the soil, I’m there,” she says. She’s penned a book about gardening for kids called It’s Harvest Time, which relates to the other kind of growth the fuels her—the cultivation of young minds. “I don’t find a lot of books on food liberation—really teaching children to feed themselves,” Jordan says, “and I think that’s such a huge value in the world we live in today.”

It’s just one of the many lessons she can offer young students, or “scholars” as they’re called at the James Lawson Freedom School in Allentown, where Jordan is in her second year as program director. It’s a six-week initiative that aims to lessen the impact of the learning loss experienced by many inner-city children after the traditional school year winds

down. “We help with the summer slide, really trying to make sure that when they leave in the summer they don’t lose those months of training and learning,” Jordan says. The program continues to grow, while staying true to its mission of setting up Black and Brown children for future success. But it’s not all work and no play; they have fun, too. “We don’t want it to feel like summer school,” Jordan says.

Jordan was also a cohost of the 2023 Lehigh Valley Woman’s Summit in June, and she previously served as director of Second Harvest Food Bank, two more roles that combined her penchant for outreach and advocacy for those who are underrepresented or underserved. She says she learned early on the importance of community, and the void it leaves if it’s lacking. “Having a sense of belonging is huge. Our children need it; us as adults, we need it. If I can develop space for that, if I can offer that in any way, I’m all about it.”

As executive director of YWCA Allentown, Sarah Barrett has no problem rolling with the punches, even if that means grabbing a paddle and climbing into a boat. She’s not just an advocate for the YWCA’s community rowing program (a partnership with Lehigh University), she’s also an active participant. Even though she’d never rowed before, she found herself right at home on the water. “I got in and I never wanted to get out,” she says.

Rowing may sound like an odd offering from a YWCA, but it adheres to one of the organization’s goals of fostering community connection and personal growth. And, Barrett says, it’s something the people of the Lehigh Valley wanted: “We would never offer programming without asking for input from our community.”

Barrett first came on board with the YWCA in 2009 as a volunteer with The Perfect Fit for Working Women program. “I realized pretty quickly I had a love for, and a capacity for, nonprofit work,” she says. She was named

executive director in 2017. During her tenure, The Perfect Fit has continued to thrive. The program provides women with professional clothing so they can look the part for an upcoming job interview.

“That clothing is really a tool— it’s a tool for empowerment, it’s a tool for confidence building,” Barrett says. After they land the job, they can return for a week’s worth of outfits to spare them from having to squander their first paycheck on a new wardrobe.

The YWCA helps women meet their goals in other ways, too. Barrett says during the pandemic they heard from a lot of women who wanted to change careers but lacked the computer skills to do it, so they launched the YW Tech Lab, which offers a number of free courses in everything from IT support to digital marketing.

The staff at YWCA Allentown is small—four people—but mighty. And Barrett is quick to share credit for all of its successes with her co-workers and the many volunteers who donate their time and talents. “We do a lot with a little,” she says.

Sheryl Petrillo went vegan for health reasons in 2011. But after she began researching animal rights issues, she felt a shift, a new sense of purpose. “Probably since about 2017 I’ve been vegan for the animals. That is my primary reason, and that is when my activism started to kick in,” she says. Petrillo founded her nonprofit, Animal Defenders Greater Lehigh Valley, in 2019. “Our mission is to build an inclusive vegan community by planting seeds of knowledge and promoting compassionate living,” Petrillo says. It’s about more than just changing eating habits, too;

true veganism, Petrillo says, is a lifestyle. “It’s the clothing that we wear. It’s things we consider entertainment. It’s making choices that cause the least amount of suffering that you can.”

Animal Defenders ran a vegan food pantry for three years. Recently, it’s been leading an afterschool program for Dieruff High School students who are curious about plantbased eating. Its website (animaldefendersglv.org ) is a wealth of information for both veterans and newcomers to the world of veganism, and includes

a list of local eateries and businesses that are 100 percent vegan.

A personal triumph for Petrillo came last fall, when she successfully lobbied Allentown to ban the sale of dogs, cats and rabbits that come from breeding mills. She pushed for the ordinance following her own undercover investigation that she says brought her to tears. “That says to me, one person can make a difference,” Petrillo says. Easton adopted similar legislation in March.

Her work hasn’t gone unnoticed. In May, Petrillo was honored by the national

chapter of the Humane Society with the Advocates We Love Award. “Animal Defenders is on my mind 24-7. I’m always trying to think of what else can I, can we do to make a difference in our animal friends’ lives,” she says. And, as you might expect, Petrillo has a brood of her own, made up of the furry (two dogs, two cats, six bunnies and a chinchilla) and the not so furry (one snake).

Limoncello Cheesecake WITH PA HOUSE CHEF GRACE MULICKA

Grace Mulicka began thinking about becoming a chef when she was in high school. “I was always comfortable being in a kitchen at home as a child, so maybe pursuing a career as a chef was natural,” she says. As the youngest of seven siblings, Mulicka spent a lot of time at home with her mother and her grandmother, which she recalls as being fun for her. “I remember baking blueberry muffins and Irish soda bread with my grandmom and cooking stuffed peppers, getting my hands in the filling for manicotti, with my mom,” she says.

Mulicka would go on to attend culinary school at Northampton Community College. She names Chef Scott Kalamar and Chef Sue Roth as her biggest culinary inspirations to this day.

“Both were very inspirational and influential in my culinary program,” she shares. “At the time, Chef Scott Kalamar was the head of the program and instructed on soups, mother sauces, knife skills, etc. Chef Sue Roth taught baking, meat cutting skills among other techniques.”

Mulicka also credits her degree as a pastry chef

to her time spent baking with her grandmother as a child.

Mulicka has been at the PA House restaurant in Hellertown since the day it opened in April 2022. “We recently celebrated our one-year anniversary and it has been so rewarding hearing all of the wonderful feedback from our amazing guests,” she says. “We have a terrific team with a general feeling of a work family in ‘the house.’”

Here, Mulicka is sharing a permanent fixture on PA House’s dessert menu: Limoncello Cheesecake. “It is wonderfully smooth and

creamy, yet light and airy and a perfect finish to your meal,” she says, noting it’s a guest favorite that started out as a special. “Here at PA House, we have a very collaborative environment, so ideas come through conversation and ideation, but are also driven by the seasonal ingredients.”

INGREDIENTS

Filling

16 oz. cream cheese

¾ cup sugar

1 vanilla bean

3 eggs

1 yolk

3 Tbsp. sour cream

2 oz. limoncello

Zest of 1 lemon

Graham Cracker Crumb Crust

1–1 ½ cup graham cracker crumb

�⁄� cup sugar

6 Tbsp. melted butter

INSTRUCTIONS

In a stand mixer bowl, add cream cheese and sugar and whip until combined. Scrape your bowl and add one vanilla bean, eggs and the yolk. Stir until just combined. Add remaining filling ingredients. Combine graham cracker crumb crust ingredients and press them into the bottom of your dish.

Pour filling over prepared graham cracker crumb and bake at 300° for 30 minutes. Let set in the fridge until completely cool.

The dish can be made individually or the pie size of your choice with preferred topping.

I’ve been driving past Wanderlust in Forks Township for the past year, witnessing the lot teeming with cars and the quippy messages on the digital display. From the road, it’s nearly impossible to see anything of this establishment, because it’s obscured behind a fairly low-slung but sprawling building that had been vacant for a bit. Every time I passed, I kept asking myself, what is going on here? Are people of Easton and Forks that starved for something awesome?

When I heard the announcement on social media that Jeremy Bialker, the long-running chef and general manager at Two Rivers Brewing Company, had taken the managerial helm at Wanderlust, I knew I should have been paying much closer attention.

And so, the answer to both of those questions is a resounding yes, but there’s a lot more going on than what meets the eye as you drive by.

Wanderlust Beer Garden is a one-of-a-kind establishment in the Lehigh Valley. First, it’s entirely outdoors (there are indoor bathrooms, don’t worry) and therefore seasonal, operating from April to November, weather permitting. Secondly, it’s styled like a beer garden and isn’t a brewery; that’s important to clarify. Thirdly, it caters to adults, children and dogs in equal and enthusiastic measure. (Note the abundance of beer taps, playground equipment and dog bowls.)

Imagine an enclosed but sprawling playground chock-full with upcycled infrastructure that contains the following: an Airstream from Florida transformed into a bar, an old truck hollowed out to become a bandstand, beer garden tables imported from Germany, a barn-like

structure for indoor events (think parties and small wedding receptions), fire pits, goofy signs and plenty of creative nooks with lots of whimsical surprises.

To say it’s unique is a bit of an understatement.

“It’s like nowhere else I’ve ever worked in my entire career,” says Bialker.

There are many reasons for that. Wanderlust operates a perpetually parked, baby-blue food truck inside its gates, and the grounds are extensive, admittedly netting Bialker upwards of 20,000 steps on any given Saturday. Once the doors are open, they’re open. And Wanderlust doesn’t take reservations, because it’s basically like eating and hanging out in an enclosed park, or a very large backyard, albeit one with live music and pickup trucks converted into booths. “You can’t ever say we have no seats,” says Bialker.

So how does it work, exactly? You show up and can do any number of things. Order food

or a drink, or just come in and sit down, and order later. It’s mostly self-service. Grab a table as the kids seek out the playground equipment toward the back. Walk your dog around. People are always coming and going.

“People do things in all different kinds of order,” explains Bialker. Unlike a traditional restaurant, where the order of operations is pretty standard—you come in, you sit down, you order and you eat (rinse and repeat!)—Wanderlust is freewheeling. And that can make it unpredictable for those who work there.

“It’s always busy between six and nine o'clock, but getting the food prepped can sometimes be a bit of a challenge,” says Bialker. There isn’t the typical rush, necessarily, but you might find an unexpected wait now and then in order for the kitchen to keep apace. “You’re either waiting in line to order, or waiting for food. We had to decide which we’d rather live with,” he says, chuckling. Waiting in line won out, which makes sense, especially if people are familiar with food truck concepts, where lines are not uncommon. Still, even if you have to exercise some patience, there are lots of other people to talk to while you wait, the music is good and it’s hard to be cranky in an environment with so much whimsy.

And what exactly might one be waiting for? Elevated festival fare that doesn’t neglect the four food groups (check out the salads in jars from Simply Good Jars, a Philadelphia-area company). If you want to nosh on a few shareable things, the charcuterie board is beyond ample, loaded with cheese, sliced meats, grapes and bread. If that’s not enough cheese, get

the Wisconsin cheese curds. Other go-tos could be, let’s say, the enormous Bavarian soft pretzel served with beer cheese (this beer cheese is a recurring theme). Fries, chicken fingers and mac and cheese are also available.

Otherwise, there are flatbreads, which operate like pizzas with all kinds of toppings: cheese, pepperoni, chicken-pesto and so forth. You can even get chickenbacon-ranch, cheesesteak or, Bialker’s favorite, the arugula option. (Gluten-free crust is available for a slight upcharge).

Sandwiches exceed expectations, served on a long roll with very good homemade potato chips: chicken parm, cheesesteak, croque monsieur, buffalo chicken and so forth. But don’t miss the Papadan, which is a breaded chicken breast with caramelized onions (which instantly elevate anything they’re paired with), tomato, honey, goat cheese and pesto. (This, too, is a favorite.)

Finally, it wouldn’t be outdoor dining if you couldn’t have a burger, and there are several but they’re all six-ounce Angus beef burgers served with those delicious potato chips. The namesake burger, Wanderlust, comes on a brioche bun with lettuce and tomato, along with cheese, onion rings and a beer cheese sauce. You can also get a burger on a croissant, or a cheeseburger or blue cheeseburger. If you have room left, or you just want something sweet, head straight to the funnel cake fries, which are just what they sound like: funnel cake batter fried up in the shape of French fries and doused in confectioners’ sugar. (There’s also an ice cream truck, too, in case you only want that!)

Wanderlust is definitely the genius of a business born in the wake of the pandemic. The Jinks

family bought the property and, admittedly, it went through a few permutations before they settled on the concept. But once they did, it was full steam ahead; Matt Jinks, whose family owns the place with his dad, Al Jinks, shared the long (and somewhat hilariously disjointed) list of names under consideration. But as much as it’s a different concept for the Lehigh Valley, it’s not completely unheard of.

“People keep telling us, ‘Oh, I’ve been to a place like this in Austin,’ or ‘This is just like the place I went to in Portland,’” says Jinks. Yes, those are two self-identified “weird” places, but there’s nothing really weird about what they’re doing—it’s just a little left of center enough to stand out. “The people who get us, they really get us,” says Jinks.

You might be wondering about all those buildings and all that indoor space that seem to be unoccupied. The Jinks family is looking to transform some of those spaces so they can host private events and small parties. All of this is under development at the moment, but suffice to say it won’t be long before Wanderlust will create indoor spaces as signature as its outdoor space. This way, the Wanderlust magic can span the calendar year and offer people another way to experience this fun spot.

SPROUTS & PEPPERONI Union and Finch

Pepperoni chips have become somewhat of an It snack, receiving recognition on Instagram feeds everywhere. But you don’t need to travel to New York City to experience the trending app; Union and Finch has been making it in Allentown for years—and as far as we can tell, they’re the only restaurant in the Lehigh Valley serving it.

Originally, the dish was just pepperoni chips and a housemade feta dip, which owner Ed Hanna says people loved at the inception. “With the second go-around, we decided to add a vegetable and thought Brussels sprouts would be a great complement,” he says. “Sprouts were a nice option because they add a little more depth to the dish and contrast in terms of flavor.” The pepperoni chips and sprouts are sliced to order and then deep-fried.

In the latest rendition, they kept cheese as part of the dish by topping it with a sprinkling of pecorino. For dressing, they went with a house-made spicy honey, which Hanna says leans more sweet. “With the pecorino cheese and spicy honey, it’s a nice touch of savory and sweet.”

Hanna says he thinks customers love the dish because it’s a nice change from your standard appetizers. He recommends enjoying it with a cold beer from Union and Finch’s selection of 14 draft options or their Mediterranean Mule with house-infused fig vodka. Enjoy the Sprouts & Pepperoni indoors or outside in the Union Gardens.
