AT JAY’S LOCAL

Locals can now enjoy the offerings of Panchitas Kitchen at Jay’s Local on the days that the café is typically closed. “I began the process of starting my own business back in 2021 and, while doing so, I found it extremely hard to find a rental commercial kitchen that I could cook out of,” says owner Frances Quinones-Mullen. She turned to Facebook where a woman shared with her that Jay’s Local had a new program to help small businesses in the area get their names out and showcase their products. “I reached out to Lyell Scherline who owns Jay’s and since then we have been working together.” Stop by between 10 a.m. and 5 p.m. on Tuesdays and Wednesdays to enjoy what Quinones-Mullen calls Latin Fusion cuisine. The offerings at Panchitas Kitchen include grilled wings, chicken or pork carnitas with a choice of homestyle sauces. “Our cilantro lime sauce has been a hit and I am now offering it for sale in eight-ounce bottles.” Panchitas Kitchen can also be found popping up at Setter Ridge Vineyards, the Bethlehem Rose Garden Farmers Market and Weathered Vineyards.

Co-owners Willie Burns and Aaron Millan say they have always shared a passion for shoes and that opening a retail location is something they used to dream about together as young teenagers.

“Properly Laced was built on two cousins believing in one another and striving to live out their childhood dream,” they share. The pair teamed up in 2021 and started their journey selling sneakers out of their cars and homes for about six months before connecting with Christian Colon, owner of C23ink on 3rd Street in Bethlehem. After about 10 months at C23ink, Burns and Millan were offered the opportunity of a pop-up lease through City Center. Fast-forward to now, and they have just celebrated the grand opening of their permanent location in Downtown Allentown. “To see Allentown develop into a great-looking city, it’s an honor for us to be a part of that,” they share. Now, locals can buy, sell or trade authentic, brand-new, top-brand items at Properly Laced in Allentown or Bethlehem.

MAKING MOVES KING KONE

After a long history at its location on MacArthur Road, owner Rick Safi made the decision to move King Kone to a new location. “We outgrew the current spot. The move was to take the business to the next level,” he shares, noting that their new home on Springmill Road in Whitehall offers more room, parking, more outside seating and the ability to make his own ice cream cakes. Despite a 33-year-long history at their former location, Safi says that the community is excited about the change. “They can’t wait to sit on the deck and enjoy the view,” he says. This summer, enjoy 12 more available flavors and more vegan options, with a new soft vegan option. “Everything we make is a signature item,” says Safi. “My employees take pride in their creations which I have instilled in them that every sundae, cone or milkshake needs to be perfect.”

Bright Communications was founded in 2004. As you reflect on nearly 20 years of business, what are you most proud of?

I’m most proud of the enduring relationships I’ve

built with my team members, authors and partners—most of whom live right here in the Lehigh Valley. The books I display on my shelves that I’ve published are a tangible reminder of their incredible creativity and talent. I’m very blessed to get to work with these extraordinary people. What would you say is the most rewarding part about the work that you do? It’s an incredible privilege and pleasure helping authors bring their books to life. Many of the authors I work with have been thinking— and dreaming—about their books for years, even decades. Some of them carried notebooks around, writing their books a bit at a time. Most of them carried their book ideas around in their

hearts—looking forward to the day when they would publish their books. What are you looking forward to professionally in 2023?

I’m about to franchise my business! I think that we will be the first book publishing franchise. People will be able to buy a Bright Communications franchise, so they can use my programs and processes, hire my team and talent, and benefit from my brand and support—to have their own turnkey publishing company.

AT THE LEHIGH VALLEY MALL

Andre Williams opened his first All Weather Selvedge (AW) brick-andmortar store location at The Promenade Shops at Saucon Valley back in 2021, but now, he’s made the move to the Simon Property Group at the Lehigh Valley Mall. Williams is excited about the move for a few reasons, noting that his new space is larger and has a layout more conducive to his art gallery/comic book theme. “The suite is deep as opposed to wide, and every inch of wall space is set up to hang product and media. I have the ability to display a wide range of styles and hold a ton of product on the showroom floor,” he shares. “As I expand my style offering, it will be easy to design a creative display pattern and still manage to keep the floor relatively free and open.” Williams says his offerings haven’t changed too much, but customers are responding well to his new branding, logo design and catch phrase: “By Any Jeans Necessary.” “I am still carrying my mainline items under AW, DKShin and Runningman; a healthy total of 17 styles. However, AW is on the brink of a huge pivot into women’s selvedge denim. We have 10 new fabrics to explore in three fits; athletic, straight and slim. Overall, I’m looking to introduce 30 new styles,” he shares. “I believe the right product at this time is women’s selvedge denim. There are very few brands in the premium market that are exploring this lane. But I am equally excited to join the Simon Group ecosystem. They definitely have a formula for creating a vibrant and diverse retail experience.”

Tell us about your journey to opening your second location, the Flower & Gift Shop! Our shop in Orefield is focused on flowers, plants and garden accents. It’s an escape for the gardener or for the person who wants to feel a sense of nature around them. When the opportunity to open a second location arose, it was exciting because it would provide another type of escape for the

Lehigh Valley… a unique flower and gift shop to explore displays of inspirational and feel-good gifts. With the world heading to online shopping experiences, we are losing the piece of feeling items before we purchase them and also the experience of human interaction at a store. In my mind, the idea of having a place in the Lehigh Valley where people could pick up a quick, unique gift was needed.

What do you love about being in Allentown?

I am born and raised in Allentown, so it is what I know and love. There is a wonderful feeling I get when customers come in and I know them, whether it’s from them shopping at our Orefield location or from my living in the Lehigh Valley for so many years. Our Flower & Gift Shop has a wide variety of unique items to help you relax and take care of your mind and body. First and foremost, fresh floral arrangements that make people feel happy and lift their mood are created daily by one of our three florists. There are also other types of items that make you feel good and relaxed, such as candles, soaps, lotions, jewelry, essential oils, diffusers, journals and writing items, specialty honey, smudge sticks, crystals, cooking salts, unique socks, umbrellas, suncatchers and so much more.

How do the offerings differ from what’s available at your Orefield location?

Our Orefield location has a “gardener” focus with annuals, vegetable plants, herbs, perennials, trees and shrubs, hanging baskets, patio planters, house plants

and all the containers you’d want or need for your plants. It focuses more on gardeninspired items, but I also throw in some fun products like house and garden décor as well as inspirational pieces. The Flower & Gift Shop offers a variety of items, including some house and garden décor, but many items that we cannot house at our greenhouse setting. The temperature at the Orefield location fluctuates

based on the weather so the Flower & Gift Shop provides a temperature consistent with safely displaying candles, lotions, chocolates, etc. Also, the environment at the Orefield location often gets a little dirty from the plants and soil, so the Flower & Gift Shop is a clean, calm atmosphere to shop for a special gift.

ATTACHMENT STYLES

Attachment styles are all over pop culture right now: anxious, avoidant, secure. Have you diagnosed yourself yet? This psychological theory is a powerful tool in assessing where our relational patterns come from and how we can improve them.

Natalie Asayag, MSW, LCSW, owner of Renew Wellness & Psychotherapy in Easton, has the basics for what attachment theory is and the role it plays in our lives.

LATENT LESSONS

We’re all born with an attachment system, our way of relating to others. We can’t turn off our attachment system—it’s constantly at work in romantic, platonic and even professional relationships. “Attachment theory explores how early childhood emotional attachment with our primary caregivers wires that system to connect with others in adulthood,” Asayag says.

It’s these first relationships that lay the groundwork for how we try to get our emotional needs met and connect with others. Ideally, what we learn is to feel safe giving and expecting clear communication of needs—in other words, secure.

SECURE ATTACHMENT

If our emotional needs are generally fulfilled and not met with shame from caregivers, we’ll develop primarily that ideal secure attachment style. The percentage of the population enjoying a secure attachment style is around 65 percent.

“No one is just one attachment style,” Asayag notes. “They exist on a spectrum. Someone might be 75 percent secure and 25 percent anxious. Some psychologists believe there’s a primary style and then a secondary.”

INSECURE ATTACHMENT

When primary caregivers aren’t able to consistently meet a child’s emotional needs, that teaches some sad and difficult relational lessons, which can manifest in these insecure attachment styles.

ANXIOUS ATTACHMENT

Caregivers who are inconsistent, project their needs onto their children, and/or use them to meet their own emotional needs can engender an anxious attachment style.

“The kid craves connection,” Asayag says, “but having it only sometimes leads to low self-worth.”

In adulthood, someone with a predominantly anxious attachment style might find themselves labeled as clingy or needy, feel they need to sacrifice their own needs to tend to their partner, and struggle to communicate those needs while getting frustrated that their minds aren’t being read. “They can be too afraid of rejection to make their needs known,” Asayag says.

Those with anxious attachment benefit from a well-rounded life. The more they

focus on building up their own friends and hobbies, and learn to self-soothe, the better they’ll be able to feel healthy in a relationship.

AVOIDANT ATTACHMENT

Avoidant, or dismissive-avoidant, attachment style comes from a caregiver who rarely met the child’s emotional needs. “They learn it’s safer to avoid attaching to others because they’re used to being shut down or dismissed,” Asayag says.

In adulthood, they may focus on the sexual element, fortifications of logic or a busy schedule to keep feelings buried. Their attachment system believes that emotional intimacy leads to rejection. They’re quick to write others off, annoyed by a partner’s emotional needs and afraid of feeling trapped.

Those with an avoidant style can benefit by identifying people they can learn to be vulnerable with and also learning how to articulate their need for space without just ghosting when triggered.

DISORGANIZED ATTACHMENT

For these individuals, trauma may have been a part of childhood, with one or both caregivers a source of distress rather than security. “Not allowed to have feelings, and not safe,” Asayag says, “they’re unable to build a strong sense of self and trust other people.”

“It’s a hard style to change,” Asayag says, “and one I see only rarely, but they can benefit from self-compassion, healthy boundaries and learning to notice when they’re pushing people away.”

INTERACTING STYLES

Anxious and avoidant style people can find themselves drawn to each other because the anxious is wired to try to meet the needs of an inconsistent partner and the avoidant craves the attention the anxious offers—up to a point.

Learning about our attachment styles and triggers, and how they might be playing into our relationships, can help with understanding each other’s needs and setting good boundaries to get those needs met together without falling into comfortably familiar yet toxic patterns.

“It takes a lot of hard work and vulnerability,” Asayag says, “but it’s so cool that our attachment styles and system can be rewired. Life just becomes so much more grounded, safe and intimate when we do work towards that more secure type.”

THERAPY HELPS

“You don’t have to be in therapy to build towards a secure attachment style,” Asayag says, “but it’s so helpful to have that support and perspective.”

Adjusting emotional habits that we believe have been keeping us safe can be hard and scary, and a therapist can help give clarity and provide a sense of safety.

“People can also heal in their attachment styles with a secure person,” Asayag says. “Because wounds happen in a relationship, healing happens in a relationship.”

ounces of water first thing pays brain dividends. Remember, your brain has shrunk during sleep to remove waste, and has gone without fluids for eight hours. Rehydrating your brain and helping move those waste products out of your system is a simple but vital morning routine.

MOVEMENT

We mainly think of brain health in terms of ways to improve cognitive function, but this central command center is integral to every function in the body. We often forget that the brain is an organ in the body that is highly affected and influenced by its surroundings. Looking at the brain through the lens of supporting the organ offers a multifaceted approach to optimizing the health of this incredible network system.

SLEEP

Perhaps one of the most critical factors in the health of our brains is our sleep. The reason quality sleep is so vital is that it is the only time the brain repairs itself, clears toxins, gets rid of metabolic waste and builds new neural connections. The brain actually shrinks during sleep so that the glymphatic system (think lymphatic system

for the brain) washes away waste and toxins as well as redistributes key nutrients to the brain. Good glymphatic flow should be a high priority for brain health. Quality sleep and a good circadian rhythm directly improve glymphatic flow. Poor circadian rhythm is linked to mood swings, poor vision, weight gain, slower learning, IBS, migraines, impaired memory, increased inflammation and brain fog, just to name a few.

LIGHT

A key way to improve your sleep and circadian rhythm is to use the most powerful circadian modulator: light. Viewing early morning sun outdoors for 10 minutes (20 minutes for cloudy days) starts to improve your sleep-wake cycle for the day, increasing melatonin production for later while lowering cortisol levels.

Morning sun sets you up for a better night’s sleep and a more wakeful day. You don’t need to look directly into the sun (it should never be painful). Sunglasses nullify the benefits of sun exposure to the eyes. Similarly, getting late-day sun improves melatonin release and helps improve your circadian cycle and signaling. This also means to avoid bright lights at night and especially avoid any bright light exposure if you wake up during your sleep. By bombarding ourselves with artificial light from screens in the evening, we disrupt the natural cueing for our sleep-wake cycles along with a cascade of biological processes vital to good health.

HYDRATION

Your most important first cup of the day for good brain health is water. Pausing on the coffee for just a few moments to get 16–20

Daily exercise has continued to show it surpasses any pharmaceutical intervention for brain health on the market, and it is free. Don’t limit your idea of exercise to a class or a gym, it is about movement and novelty, every day and throughout your day. With some easy shifts and tweaks, your movement can be brain power. One tweak is to simply pick up your walking pace. Studies are showing walking speed has a strong correlation to increased longevity. Challenging yourself to walk more briskly so you are still able to talk but not be able to hold long conversations is a good gauge. Taking the brisk walk outside makes it a double win with the benefit of sunlight exposure.

Adding balance exercises and novelty to your movement is also an essential and often missing piece. Think playful and fun. Heel to toe walking, single leg balance, adding a ball toss or eye movement while doing balance work are all ways to challenge yourself and stimulate the brain while providing needed stress breaks in your day. Think of them as movement snacks. Playing a game, learning a new skill or simply finding different and unique ways to move throughout the day is an invaluable piece in enhancing your brain’s plasticity.

Foods that help fight inflammation to no surprise are also good brain food. Dark leafy greens, fatty fish, berries and cruciferous vegetables, along with fats like avocados, olive and coconut oil are all supportive of brain function. A lesserknown brain food to include in the diet is broccoli sprouts. Broccoli sprouts are incredibly rich in compounds that help reduce oxidative stress. Bone broth and foods that support good digestive health are also key, considering the majority of serotonin is produced in the gut and not the brain.

ASSAULTS ON THE BRAIN

Chronic inflammation in the body also means chronic inflammation in the brain. It is important to address the stressors that are contributing to the inflammation. Blood sugar dysregulation as well as sugar consumption are highly inflammatory for the brain. It is why Alzheimer’s disease is often being referred to as type 3 diabetes. Obesity, poor diet, chronic dehydration and alcohol all contribute to chronic inflammation.

A leaky gut can also mean a leaky brain. The same factors that contribute to a leaky gut and associated autoimmune conditions also make the protective blood-brain barrier more permeable and allow for increased assaults on the brain itself.

Exposure to environmental toxins, things like plastics, perfumes and scented products, pesticide-laden food, petroleum products and cleaning products as well as biotoxins from molds and bacteria impact brain health. The levels of chemicals and neurotoxins in individual products may be deemed safe; however, the cumulative and repeated exposure to these chemicals creates a heavy burden on the body’s immune and nervous systems. Look for ways to reduce the cumulative load and exposure. Consider and don’t forget that your wallet can direct change in industries.

CHRONIC STRESS

Finding ways to ameliorate chronic stress is also a critical piece in reducing inflammation and improving brain health. Simple breathing practices throughout your day, gratitude journaling at the start of your day and/or before bed, meditation and moving meditation like qigong or tai chi are a variety of tools to utilize. Being involved in your community, having deep and meaningful relationships with others in person and having a sense of purpose can be some of the most powerful brain enhancing and protective measures out there.

ADDITIONAL BRAIN SUPPORT

Spending some time in the sauna may be more than just a good sweat. The heat and perspiration allow for mild detoxification in the body and also increase circulation and vasodilation, which means more blood flow to the brain. There is also a release of endorphins which are the “feel good” hormones. A study has shown using a sauna four to seven times a week resulted in a 60 percent reduction in risk of Alzheimer’s disease and dementia. There are a host of supplements promising to improve cognitive brain health. However, before looking for an easy pill, don’t forgo the concerted and consistent effort of lifestyle changes in diet, sleep, stress reduction, hydration and movement. Additionally, supplements are modulators in your body so check with an informed functional medicine practitioner who is well versed in what your specific needs are. That being said, a very high-quality omega-3 supplement is an important addition to the diet. Considering the brain is 60 percent fat, providing essential fatty acids is critical for all aspects of the nervous system. It is especially important for those not consuming much fatty fish in their diet.

Lion’s mane mushroom is a promising supplement that has been shown to be anti-inflammatory, containing chemicals that improve the production and release of neurotransmitters as well as promote the growth and health of neurons in the brain.

Jessica Jackson FOUNDER OF THE CRAFTERY MARKET

Running one business is a lot. Running two businesses? Even more so. But throw a third one into the mix, and you’ve achieved a Jessica Jackson level of hustle. We won’t even mention the fact (not yet, anyway) that she’s also a busy wife, a mother of three, an occasional player of pickleball and a tireless advocate for the creative community in the Bucks County area. Just know that she’s busy. In fact, she’s probably dreaming up another project right now.

In another life, Jackson would have been a different kind of busy—the kind of busy where you’re wearing scrubs and a lab coat to work, poring over X-rays and assisting in the operating room. “I was very big into sports growing up and played collegiate tennis,” she explains. “Through my career I had multiple injuries that exposed me to orthopedic surgery as a discipline.” She got married at the age of 22 following her graduation from Messiah College (now University) with a degree in sports and exercise science/ physical therapy. She planned to take a year off before diving back in on a postgraduate degree as a physician assistant in orthopedic surgery, but she felt herself being pulled in a different direction. “Which now I see is perfect,” Jackson says. “It was the right thing for me because I have so many varied interests and I like doing different things.”

She started to dabble in DIY projects as a way to spruce up her first home on a budget. Even though she admittedly had no experience in renovation or design, she did have a healthy curiosity and an eagerness to learn. “I have a lot of confidence to just try things,” Jackson says. “I’m not afraid of failing.” She also had a like-minded best friend:

Monica Mangin. The two met while attending Plumstead Christian School. In 2011, they started a blog to chronicle their triumphs and tribulations on the DIY front. “Neither she nor I do things halfway,” says Jackson. “We decided, if we’re going to do this, we’re really going to do it. We posted five days a week, we were constantly doing projects.”

Their tenacity didn’t go unnoticed. Jackson says they were just a few months in when they were contacted by The Nate Berkus Show . The dynamic duo ultimately appeared in four episodes to pitch their tips and tricks to the masses. “We realized how much we loved doing TV. That was a surprise to both of us,” says Jackson. Another surprise—perhaps an unpleasant one: they had to change the name of their blog, “The Real Housewives of Bucks County.” Apparently the “real” Real Housewives—those feuding frenemies of reality TV— weren’t keen on sharing their name, so Jackson and Mangin rebranded and moved forward with East Coast Creative.

Next up for Mangin and Jackson: an offer to helm a show of their own, “Knock It Off!,” on the Live Well Network. By then, Jackson had two children, daughter Campbell and son Charlie, with her husband, Kevin Jackson, and had just found out she was pregnant with their third. Son Bennett was born in 2013. Not

long after, Jackson made the difficult decision to step away from the show. “I usually say I credit him with changing the trajectory of my life. He made me really rethink wanting to be on TV. I loved being on TV, but your schedule is not your own, you’re at the mercy of your producers and the people who run the show. I knew I didn’t want to be gone full-time when he was a baby.”

Jackson also knew— although she cherished her time with her littles ones—she needed a creative outlet outside her home. Even though the Hilltown Township native says neither she nor her two sisters (Rachel and Chrissie; Jessica is in the middle) were the type to roll up their sleeves and get crafty when they were growing up (“No creative bones in their body,” she says of her siblings with a laugh), she had found her niche in adulthood. At the tail end of 2014 she began hosting workshops for those who also wanted to get their craft on: think macramé, floral design, weaving, calligraphy and the like. At first, she borrowed space inside a local thrift shop, but grew tired of lugging all of her materials back and forth.

So, in June of 2015, The Craftery, as she dubbed her burgeoning enterprise, opened a brickand-mortar location inside The Square, a restored factory in Dublin, Bucks County. The workshops, Jackson says, expanded, and were popular from the start. “Ladies Nights” were a crowd pleaser (and not as ubiquitous then as they are now). Initially, Jackson led all the workshops herself; what she didn’t know how to do, she learned. “It was a lot of trial and error,” she says. Eventually she started bringing in other local experts and makers to share the load, which led to a turning point for The Craftery: Jackson wanted to replicate and expand upon other pop-up markets she’d visited, markets featuring carefully curated creators with high-quality, unique goods. The first market was held inside The Craftery space and featured about 12 local vendors. “It was such a leap of faith for them because I’d never done anything like this before, but they trusted my vision,” Jackson says. “I really wanted to bring attention to these really talented people.”

In doing so, she stumbled upon another passion: creating

beautiful community spaces and experiences. She was involved as a designer in the revitalization of The Square, which now boasts offices, a gym, a salon, a dance studio, retail space, a winery and more. Jackson expanded her own footprint there with the opening of Makers: Vintage + Handmade in November of 2019. It’s a place where some of the artisans, crafters and collectors Jackson has become acquainted with can sell their wares. Great idea; bad timing. The store was closed for several months while the COVID-19 pandemic raged, but Jackson says they found ways to stay afloat. “We did

flash sales and Instagram sales. We came out on the other side, and the community was super supportive.”

Fast-forward to November of 2020, and another new Jackson project was taking off at The Shops at The Square, although this one was more of a tag-team effort. Jackson and her husband, Kevin, opened Wheat & Vine Provisions, a small-batch specialty food store. “We just love food. We’re big foodies,” says Jackson. “Whenever we travel, we look for specialty food stores, and this was another case of where we didn’t see anything like what we wanted in Bucks County.” The offerings include charcuterie

boxes, cheeses, drink mixes, hot sauces and sweets. “We try every product before it comes in the store,” Jackson says. “That’s a perk of the job, to sample everything.” The family part of this family business goes deeper than Jessica and Kevin; their daughter, Campbell, also works at the store, as does Jessica’s sister, Chrissie.

Jackson says a second location for Wheat & Vine is a possibility down the road. She’s currently busy planning the rest of the 2023 schedule for The Craftery Market, which has now grown to some 80 vendors and aims to promote a family-friendly, community vibe with live music and food

while highlighting unique locales. Over the past few years, it’s popped up all over Bucks County and beyond. The next market is at the Bishop Estate Vineyard & Winery in Perkasie on June 17.

Looking back on the path she chose—the path that did not lead to a medical career, or a lengthy tenure in front of TV cameras—Jackson says she has no regrets. “I have a strong faith. I’m a big believer in God orchestrating things. It all makes sense. It feels like with each step, I took the next opportunity that came out of the step before.”

Drs. Erin and Chuck Bendas discovered their special connection on Thanksgiving Day, 2010. Both residents-in-training, they helped to resuscitate a desperately ill patient in the ICU. As Chuck took charge of the emergency, Cupid’s arrow landed. “I was in awe of him,” Erin recalls, although both felt an earlier mutual attraction.

Erin had arrived in Bethlehem after medical school in Kansas City, MO. Chuck earned his medical degree from Drexel. Their first date was the next day: a Harry Potter film. The rest is magic, and they soon will celebrate their 10th wedding anniversary and 13th year with St. Luke’s, where they came to train and chose to stay. Erin Bendas, DO, is now the chief of Palliative & Support Medicine and Chuck Bendas, MD, is a trauma/surgical critical care physician. While their path to finding love isn’t the same as everyone’s, it works for them, and grows day by day.

WITH APOLLO GRILL EXECUTIVE CHEF ALICE SCHNECK

Alice Schneck says her journey to becoming the executive chef at the Apollo Grill began when she was around 15 years old and started working in the food industry. “At 18, I entered my first real kitchen and fell in love. It was an environment I thrived in,” she shares. “I loved the atmosphere of the kitchen—the hustle, attention to detail, that there was always something to do, the ability to create a dish from simple ingredients.” Following that job, Schneck honed her skills and her passion in the culinary program at Northampton Community College.

“I believe I first started at the Apollo in 2010 or 2011, left for a short while and came back in 2012 until about 2017,” Schneck shares. She returned in 2019. “Third time is the charm.”

The lump crab macaroni and cheese recipe featured here is a popular order off the Apollo Grill menu. At the restaurant, she recommends pairing the dish with their Sonoma-Cutrer Chardonnay, which complements the creaminess of the dish, or their Italian pinot grigio, which will cut through the creaminess a bit.

Schneck’s advice to readers, which she says only applies to cooking, not baking, is to not be afraid to stray from the original recipe. “After you make it once, put your own twist on it and have fun.”

When cooking at home, Schneck says she keeps things super simple. “With a new baby and a full schedule, my wife and I have turned into a grab-andgo meal prep family. I make a mean breakfast sandwich most mornings,” she shares. “When cooking for family and friends, my go-to is to make a roast pork for tacos, over rice or for sandwiches.”

LUMP CRAB MACARONI & CHEESE

INGREDIENTS

1 cup heavy cream

2 cups 2 % milk

½ cup water

2 Tbsp. crab base

1 tsp. Worcestershire sauce

1 Tbsp. Old Bay seasoning

1 ½ Tbsp. dry mustard

¾ lb. Parmesan cheese

½ lb. Boursin cheese

1 lb. lump crab meat

1 lb. orzo pasta

Panko breadcrumbs

INSTRUCTIONS

In a pot, bring heavy cream, milk, water and crab base to a slow boil; then lower heat to simmer and thicken with roux (¼ cup butter and ¼ cup flour).

After liquid becomes smooth, add in Worcestershire sauce, Old Bay seasoning, dry mustard, Parmesan and Boursin cheese. After adding cheeses, turn to low heat.

Mix lump crab and cooked pasta into cheese sauce.

Once all components are together, place mixture into iron skillet or oven-safe glass pan.

Top with Old Bay-seasoned panko breadcrumbs and bake in oven at 425 degrees for seven to 10 minutes.

THE WILBUR MANSION Opens Its Doors to the Public

There is no shortage of beautiful architecture in the Lehigh Valley. Many of those include mansions built during the nineteenth century, when the Lehigh Valley, like much of the country, was experiencing industrialization and urbanization, and this rising class needed a home befitting their social stature. The architecture contributes to the charm of the region; many of those more elegant structures have become part of informally tagged “mansion

districts,” often located within historic districts. (Think Third Street Alliance in Easton, or the Historic Benner Mansion in Allentown, for example.)

So, what else do you do with an 18,500-square-foot property that includes a Gothic Revival-styled mansion with nine en suite bedrooms and an adjoining event space that formerly served as a Masonic temple? If you’re John and Lynn Noble, who’ve developed commercial real estate for years, you turn it into

a boutique hotel, event space and top-notch restaurant. You hire an equally incredible chef and then design the dream professional kitchen (it’s gleaming, enormous and well thought out) and get to work creating a unique menu with a thoughtful wine list and range of dining experiences (ask about the chef’s table). Sure, opening a hotel, event space and restaurant might seem like an obvious way to breathe new life into a historic space. But it’s remarkable, because The

Wilbur Mansion has not been open to the public ever before.

Nowadays? “People ring the doorbell and want a tour,” says Michelle Konish, general manager. “They don’t yet know what’s going in here.” That of course is slowly starting to change. (See their recent OpenTable dining awards, bestowed upon them this past February after opening in November 2022.)

just off 378, is perched up high enough to afford unparalleled views of Southside Bethlehem.

It was built in 1865 in the Gothic Revival style for Elisha Packer Wilbur and his family, which included 10 children.

Wilbur was the nephew of Asa Packer and one of the founders of Lehigh University; he also started one of the first banks in the Lehigh Valley (the Wilbur Trust) and was the president of the Lehigh Valley Railroad. At the time, though, South Bethlehem, with its prominent rail access, was its own borough and wasn’t part of Bethlehem until the early twentieth century, says Chris Worton, a licensed architect based in Easton. The location of the mansion, in what’s now the Fountain Hill historic district, he says, is no accident.

“The site is significant because it straddles the outer boundary of South Bethlehem but is in close proximity to Fountain Hill. Although it’s peripheral to both places, it paradoxically becomes a highly visible object in the landscape. This would have been important to the Wilburs as they were the elite of the area and it was important to be visible, not only to the other elite of the region, but also to the larger population as well,” he says.

In 1925, Wilbur’s wife sold the property to the Bethlehem Masons, who added a lodge and temple and used the site for their meetings and activities for nearly 100 years. They put the property up for sale in 2015 and the Nobles bought the building. According to Lynn, John had had his eye on that property for 40 years. “It is literally one of the few fully intact mansions from the era,” he says. "We want to preserve that and bring it back to life and make it a showcase.”

However, it needed some work. “It was in great disrepair, but thankfully all of the

elements were still there and it was able to be brought back to its original glory days,” says Lynn. The adjoining Masonic temple had sustained too much water damage and couldn’t be salvaged. However, its chimney had become home to thousands of chimney swifts. The Nobles did everything they could to keep the chimney intact—and therefore the home for these migrating birds—while the rest of the structure was renovated. “It was so worth it in the end! Our swifts came back and are now a part of our story,” she says. (And in the mansion’s logo.)

You have to see this place to believe it. There are 10 fireplaces and each one is completely different and seemingly more outstanding and/or ornate than the next. It’s warm and inviting but also grand and detailed, a careful balance of the old and new.

It’s hard not to feel a little fancy, though, just walking through the doors. The Wilbur doesn’t necessarily require a dress code, but when you're dining at a mansion you might feel obligated to dress up a smidge. (After all, The Wilbur Mansion also hosts weddings up to about 250, with both indoor and outdoor spaces for these celebrations.)

Such is the backdrop for some fine food coming out of executive chef Justin Beaver’s kitchen, who was born and raised in Bethlehem before attending The Culinary Institute of America (CIA) and working in Florida, Maryland and Nashville. (Incidentally, CIA is also where he met his wife, Amanda, The Wilbur’s pastry chef.)

The menu befits the setting, with a balance of classic dishes rendered in a modern yet approachable style. In other words, you’ll never wonder what’s on your plate, but you might be surprised by some of

the ingredient combinations and presentations. (Ever had roasted radishes? If you order the very incredible Amishstyle pork chop, you will.) The best way to describe the food? You can taste everything. The flavors are distinct and clear; nothing tastes muddied. The dishes are executed with care and intention, with the inclusion of local and/or seasonal offerings as much as feasibly possible. (Chef says to look for ramps, fiddlehead ferns and other foraged items this spring.)

People are really responding positively to the menu, says Konish. Among those standouts is the grilled Atlantic octopus. Yes, octopus. There’s definitely a bit of a curiosity factor, for sure—it’s not exactly an ingredient most people will cook at home. However, it’s also an ingredient that’s really easy to overcook, but here, it’s expertly grilled and served with green olives, caperberries, grape tomato and pearl onions in a roasted garlic broth with just a hint of heat from Calabrian chiles. “People just love it,” says Beaver.

Other dishes leaving a lasting impression include the steelhead trout, which most people can’t believe isn’t salmon (the color and taste are somewhat similar), with a sweet potato goat cheese purée, roasted oyster mushrooms and a smoked trout caviar sauce. It wouldn’t be a fine dining restaurant without a short rib dish; this formerly inexpensive cut of meat has become increasingly in demand in recent years. It’s braised for more than 12 hours in red wine, and served with a kabocha squash purée and orzo, along with local ricotta with pumpkin seed. To say the latter is fork tender would be an understatement; it’s more accurate to say it melts in your mouth. Fettuccine is house made and served as a Bolognese with wild boar, another protein you don’t encounter every day.

But some are real winners that will undoubtedly take up something resembling permanent residence on this menu. (I, for one, am advocating for the beets and burrata dish, with creamy beets and earthy

Indeed, since our interview, a few new dishes have already found their way onto the menu, such as Louisiana crawfish spaetzle, and another one, the duck with chestnut purée. “We’ve been using this crispy skin duck dish on our chef’s tasting table, and people love it,” says Beaver.

Oh, and about that chef’s table. The room you’ll dine in, if you opt for that option, is directly adjacent to the kitchen in a room loaded with a beautiful woodenbeamed ceiling. Expect seven

courses for that chef’s table dinner, which can seat up to six people, and your own dedicated server. “There are a few curveballs on the chef’s menu, including the chicken liver mousse tart. It’s gorgeous, with a port wine gelée over the top. I try to push people out of their comfort zone,” says Beaver. And feedback from diners across the board, not just at the chef’s table, is evident. “The dishes come back clean,” he says.

“Our big goal for the menu and the mansion is to be fresh, simple and colorful—and

that’s really what I hope comes through,” says Beaver. His words reflect a larger thought about The Wilbur itself, and it’s clear everyone who works there is kind of understandably smitten with the place. “Our favorite thing to do is create beautiful and functional spaces, utilizing and enhancing the surrounding nature. It really brings us joy, especially with The Wilbur Mansion project to be able to take something that was old, keeping all of the great features, but adding a modern twist to it,” says Lynn.

Anything! Really! We loved the burrata and octopus, and so do lots of diners at The Wilbur. You can also find dayboat scallops from Barnegat Light in New Jersey and lobster mac and cheese, on the appetizer menu. Entrées are substantive and beautifully plated, whether it’s the Amish pork chop, organic pasture-raised chicken breast, house-made fettuccine, short rib dish or that trout we discussed earlier. The steak au poivre is served in a fancy way; that’s all we’ll say about that because it’s important to be surprised sometimes, right? Don’t miss the cocktails, either, such as The Wilbur Fashioned (Woodford Reserve, vanilla bean, brown sugar, orange bitters), specialty martinis and the Smoked Negroni (Tanqueray, Carpano Classico sweet vermouth and Campari). The cocktails are, fittingly, as special and signature as everything else you’ll encounter here.

When Sports & Social landed in Allentown last spring, they brought their famous Crush Bar with them. “The Crush was invented in Ocean City, Maryland, near our company’s home base,” explains general manager Clint Malek. “Our secret recipe has made them our most popular drink nationwide for relaxing in the sun. There’s just something about a Crush that gives you a chill, laid-back vibe.” Said vibe can be easily enjoyed on the restaurant’s

patio this season—with both four-legged and two-legged friends alike. “Our patio has it all,” says Malek. “It’s a great location on Center Square, has comfortable furniture, giant umbrellas, yard games, a fire pit, live music. And, of course, we have outdoor TVs and an amazing sound system, so you never miss the action of your favorite sports.”

Malek says no matter the season, though, Sports & Social’s Crushes are often their top sellers of the week. “We make

them to order with freshly squeezed juice, perfectly crushed ice and other quality ingredients,” he shares. “When you taste all that crushed together, you instantly relax.”

There’s a Crush for every palate, with offerings ranging from Orange to Caribbean, Ruby Red, Cherry Lemonade and more. “We love creating specially flavored Crushes for events and holidays.”
