HEALTH + SAFETY ... Imperial wanted to take the opportunity to update our clients and partners on the measures we have continued to adopt during the pandemic. At Imperial, we have been ensuring clients a clinically clean vessel for more than ten years, and we will continue to implement our rigorous methods to monitor the health of our captain and crew as well as to confine and sanitise the vessel between each charter and visit. Imperial offers a service that can provide a temporary sanctuary for those who wish to stay in isolation and avoid any contact with the public.  We’ve adjusted our general strategy to implement new procedures and policies, effective immediately. The team at Imperial has planned daily to navigate and stay ahead throughout these unforeseen circumstances. Imperial has remained positive and our charter clients have placed their full trust in us as our fleet remained fully operational during the summer season. Whether you are new to yachting or a seasoned adventurer, Imperial’s expertise in the charter industry enables it to create and oversee a broad range of fuss-free yacht charter experiences. Call the Imperial team and you will be assigned a charter broker – a specialist who will listen to your requirements, from destination and timings to interests and special requests. A recommended yacht and itinerary will then be presented to you on the basis of this conversation. 2
CAN THE ITINERARY BE TAILORED TO REFLECT MY TASTES?
Absolutely. Tell Imperial about the ages, tastes and profiles of those involved, because an itinerary can be designed to encompass everything from cultural tours, sporting events and active pursuits, to lazy days ashore or long, undisturbed evenings at anchor. 3
CAN I TAKE MY OWN STAFF?
That depends on whether there is adequate capacity to accommodate extra personnel. If so, you can certainly take your own staff but if not, Imperial is always able to organise first-class staff on your behalf. 4
CAN I TAKE THE KIDS?
It’s fine to take children on-board and if you talk to your broker in advance it may even be permissible to take the family pet. The yacht, destination, crew and itinerary can also be orchestrated to suit your needs, with family-friendly catering, destinations and pursuits all built into the plan. 5
DOES IMPERIAL OFFER CORPORATE CHARTERS?
Yes. Whether you book a charter yacht for client entertainment or staff reward, it makes a fresh and invigorating change from the norm. It can be the perfect hideaway for discreet business negotiations – and with some vessels capable of accommodating dozens of people at a time, there are very few venues that can match it for an upmarket conference. 6

CAN I SELECT A SPECIFIC CREW?
The crew tends to come with the yacht, so repeat charter customers will often specify a particular vessel in order to be certain of a reunion. However, if this is your first charter, tell your broker what kind of crew you favour. From relaxed and outgoing to slick and formal, a yacht can then be selected to match your preference. HOW SHOULD I CONDUCT MYSELF?

Just relax. There are no prescriptive expectations. Dress in whatever way makes you feel comfortable and behave in whatever way enables you to enjoy your charter to the utmost. Your crew will always be rigorously professional and entirely discreet. 9
ARE THERE ANY HIDDEN COSTS?
In addition to the basic charter cost, there is usually an Advanced Provisioning Allowance (APA) of around 25%. This enables the crew to stock up on fuel and food in accordance with the input of your charter broker. Any funds left over will be returned to you. 10
WHAT ABOUT TIPPING?
The timing and scale of any tips are of course at your discretion. However, the average is around 10% of the charter value and this can be paid at the end of your voyage, either directly to the Captain or indirectly via your broker.

The yachting industry is changing right in front of our eyes. Superyachts are becoming visually lighter and more closely resembling modern land architecture. In the era of great changes, there are typically those who accept change with enthusiasm, and those who are not ready for this brave new world. Around 30 years ago, when superyachts first appeared on the market, opinion also differed among yacht owners and industry enthusiasts: while some viewed the creations of young and ambitious designers with delight, others were unimpressed by the new concepts. Earlier still, in the 1960s, some yachtsmen remained loyal to wooden boats, while their neighbours in the marina were confidently navigating light fibreglass yachts. Time itself was the best referee in this dispute. Now, only those few connoisseurs go to sea on wooden motor and sailing boats, while yachts powered by diesel engines are causing many people to doubt their right to exist.
Today, the focus is on sustainable yachts. Superyacht owners have a greater interest in clean oceans, beaches, and lagoons than anyone else. Everybody knows how polluting fossil fuel is, but only a few are aware of how seriously the underwater world is suffering from yacht vibrations. Naturally, alternative types of engine will lead to changes on the yachting horizon. That’s why we decided to discuss the future of the yachting industry with designers – who are the first to agree with the owner regarding the desired look of their new vessel. All of our interviewees have had a massive impact on superyacht exterior design in recent decades. Each has a different view on new materials and technologies, but all of them agree – the future of the yachting industry is in harmony with the ocean.

ESPEN ØINO ES P E N Ø I N O I N T E R N AT I O N A L ... Espen Øino was studying naval architecture and dreamed of building sailing yachts, which are still popular in his homeland – Norway. However, one luckily won tender made him a well-known designer for superyachts. He is considered a designer who can change the look and the whole idea of a superyacht. This is the reason why many shipyards in the world – from Germany to Australia – are so proud to work with his studio – Espen Øino International.

How do you imagine the superyacht of the future? EØ I would like to think it’s possible – difficult, but possible – to build a fully sustainable yacht. We have to be as sustainable as possible in whatever we do, and the best way to start is to reduce our energy requirements. When you are building a sustainable yacht, you should know that everything starts with the hull shape. Multihulls are probably the most efficient. And you can get many more miles out of each litre of fuel if you use conventional fuel. A long time ago, buildings were built to be cool in a hot climate. They had thick walls, clever design and natural ventilation. I like to think it should be possible to repeat this on the larger yachts. They are all made of metal, and metal conducts heat very well. It is not insulating material, like stone or brick. The goal of yacht-building should be to design something that creates airflows. The one thing that our predecessors had at sea to help them cool down was a breeze. Using a clever design, you could have air gaps in between your decks to cool painted surfaces down, to avoid direct contact with the cabins below, and so on. Big opening doors and windows also help to create natural airflow on a yacht. Essentially creating more outside spaces will be another characteristic of yachts in the future. Inside spaces on the existing yachts are largely underused, especially if you are cruising in warm weather, and people are generally cruising in warm weather. A yacht like this would definitely look different, and some people might have difficulty accepting this look.
Do you think the pandemic has the capacity to change the yachting industry? EØ I do not think boats will be getting bigger, but I do think they will be a bit different from now on. The majority of yachts have been holiday homes. What we are seeing in the last year or two is people have moved on-board, spending much more time at sea. Interesting thing – many yacht owners today are very active in their careers, as they have been working from the boats. Most yachts today have video-conferencing rooms on-board. The pandemic has shown that modern technology allows you to work anywhere while still being discreet. People with whom you are connected via video conferencing may not even notice you are based on a yacht.
Is it the naval architect or designer’s task to create a modern superyacht? EØ The creative domain is open to everyone. Anybody can create something unique. From a technical point of view, if you are a naval architect or an engineer you probably have a better understanding of the fundamentals. Creating a new generation sustainable yacht is mainly down to common sense and logic. We are now working together with the Water Revolution Foundation, which is orchestrated by SYBAss (Superyacht Builders Association) with many yacht designers there. All of us are coming up with ideas, we are having round tables via video conferences where we discuss every aspect of yacht design. I think this is all great, it creates awareness and brings people together in trying to be more responsible, more sustainable. We should try to be leaders in this field because the yachting industry has one problem: yachts do not produce anything, they're not carrying anything useful like big commercial ships, they're just carrying people for their pleasure. Do you think that those shipyards that are not even considering hybrid boats have a future? EØ I think like in many other revolutions and transitions in the past there will be those who will disappear and those who will take active roles, risks and chances. For example, my forefathers used to build wooden rowing boats for four generations. My father was the first not to build boats from wood because in the 60s, fibre glass came onto the market and most wooden boat builders disappeared over two decades. Every yacht in the future will have…? EØ More storage, dedicated space for video conferencing, classrooms for kids and more space for crew with gyms and open deck spaces, because the crew will spend more time on-board with fewer breaks, perhaps.
For you as a naval architect, which is easier to design: a custom yacht or a production yacht? EØ The answer is – the custom yacht. The reason is – you are dealing with a smaller group of people, you have direct contact with the client and with some of his very close confidants. When you are designing a production boat there is no client, but there are markets. Different markets have different needs. Design is all about compromises in many ways. Designing a production boat, you have to find more compromises. Which yacht changed your view on the industry? EØ When I was young and fresh out of university, I started working for a company that designed sailing boats because that was what I wanted to do. Somehow, miraculously, I got involved in the tender design of a motor yacht. At that time, it was a very ambitious project and I was a project manager. This boat was called ECO (now it is called ZEUS); it was designed and built for a Mexican media magnate. This boat was designed in 1988 and it was very different, it challenged many norms of what a yacht should be or could be. When she was unveiled not everyone liked her. However, until today her design is timeless and she performs exceptionally well: 74 metres and 32 knots – it is still very unusual. This yacht opened my eyes to the industry in which I then decided to stay. When I had just started to work as a yacht designer on my own I designed a yacht called SKAT. When she was delivered people were again divided, some said it was a good-looking boat, some said – it was not. SKAT was designed very logically for a very logical client, and together we invented a few things. Now together with ECO, she is often listed among the most iconic yachts. ECO already has curved windows. Now we are seeing a huge amount of glass on almost every new superyacht. Do you think this material has the potential to change the industry? EØ The technology allowing us to use big glass panels on boats has made huge progress. Here in the port of Monaco, it is obvious how glass changes the look of the yachts. We’re now accepting glass as a structural material. Recently I saw on Instagram a kayak made of see-through plastic. It looked great! If you could create the yacht of your dreams what would it be like? EØ If budget weren't an issue it would probably be a motor yacht with a very sustainable energy source that would produce electrical energy and it would be big enough to carry a couple of small sailing yachts, a ski room and a helicopter.

Which yacht in the Bannenberg & Rowell portfolio is the most forward-looking and modern? DB You will not be surprised if I want to say all of them! But PROJECT KAPPA – a very progressive 112m concept – is the one that explores the limits of structure and architecture. At a smaller scale, our 43m ESTRADE achieves a very intense and direct connection with the ocean within her relatively compact size. Or I could borrow an answer from Bannenberg Senior and just say the next one…
Every superyacht in the near future will have a…? DB An owner fortunate enough to have the privacy a yacht provides.
What is the most sophisticated feature or technology you as the designer have to deal with today? DB I think advances in propulsion and glazing are the two areas that are going to impact our work going forward. Developments in battery technology, and combinations of hybrid drives, make different demands on space planning. Glazing solutions, previously seen more on land-based commercial projects, are increasingly finding a place afloat. Glass panel sizes grow by the year and open up exciting architectural opportunities whilst at the same time requiring more complex structural solutions, greater tests for air conditioning technology, and even window treatments!
Name a yacht that changed your world. DB Siran – one of the first projects I worked on with my father. I realise now that she was not exactly a typical new build but the experience of near weekly visits to Feadship shipyard in the client’s Gulfstream, laden with boxes of marble and timber samples, was quite something.
What does sustainability in yachting mean for you? DB This topic has been talked about for some time but with limited commitment from owners, clients, yards and, dare I say, designers. I sense it is now changing fast and I have been encouraged by the efforts of, in particular, the Water Revolution Foundation to pull designers together and lay down a measurable pathway to adopt.
Do you think designers are capable of changing the yachting world? DB Yes, but only as part of a bigger communal effort by all those involved in the yachting industry. Ultimately, the driver will be the client who controls the purse strings.
If you could create a superyacht for yourself what would it be? DB I would be happy with around 30 m of low-key, laid back and unflashy motor yacht capable of operating on battery power for extended periods. Barefoot living. No dining table inside. Plenty of shade. Simple finishes. Rosé on tap, or even in a tank.

Can you remember a yacht that changed your world completely? You saw it and understood superyachts would never be the same. PR It is easier for me to speak about the yachts we designed because I know them inside out. The yacht that changed everything for me is AVIVA. It is a 68-metre motor yacht. It was designed for one individual, who lives on-board, he spends from eight to nine months per year on his yacht. I never before did a yacht not for leisure or charter, but a yacht that could be somebody’s home. We had to design it differently, and it has really changed my mind. AVIVA was very innovative because she was built long before people started living on their yachts. Now the trend is going in this direction, especially with COVID-19.
For example, beach clubs with all these platforms around sound amazing but they could be too low to the water and therefore not private. This place becomes not functional and clients chose aft deck or balconies to enjoy their time on. Instead, our clients want a more functional space, especially with cabins. We are requested to make, for example, five identical to the master cabins. It happens because they spend more time with children and friends on-board and all of them want to have more space.
What do you think about ocean sustainability and the designer’s role in it? PR It is very important, and we are not just talking about it, we are starting to make yachts more sustainable. Every new project we are working on is greener as owners are interested in new energy sources to drive their yachts. In any case, now you don't have a choice about becoming more sustainable. Even if it is about interior and finishes, all the elements we used for many years to create a yacht interior now are impossible to find. I am speaking about teak, precious woods, marble – we have to find substitutes. Therefore, it is not just talk; it's a new reality. I’m convinced electric power and solar power are the future of yachting, and it affects the design very much. The old-fashioned approach to designing yachts is dying out. Can you tell us what are you working on? PR We are currently working on two projects – one with Oceanco and the other one with Amels. This is all I can tell you. This year is very busy. There are a lot of enquiries for larger boats, over 90 metres. Except for yachts getting bigger, do you see any other new trends in design? PR We have been working on spas and beach clubs on-board for a long time now. This year we are seeing a change in demand – clients are starting to realise what they do not need on-board and their focus is changing.
Do you find it more interesting to work with repeat clients who have already tried a yachting lifestyle and know what they want? PR You need both – a client who knows what he wants and a client who trusts you as a designer. Creativity is a balance between being avant-garde, daring and experienced. What type of material is able to create a revolution in yacht design? PR All the yachts we have completed recently and are working on now have a large amount of glass. Glass is the kind of material you have to deal and work very carefully with, because it lets a lot of natural light in the room and is not always good for acoustics. Do you have some experience with new kinds of ethically made decorative elements? PR Yes, I have a house in the South of France, it is a former fisherman’s hut, and Ihave a few carpets made of plastic bottles on the open terrace. They are very nice and soft, but as soon as they get wet – they become very heavy. The big challenge with new kinds of materials – we do not know yet how they are going to age.

Which yacht in the Sinot portfolio best expresses the modern philosophy of yachting? SS Our new project – a yacht that will be launched during MYS 2022 – emphasises what we call ‘‘asymmetrical design”, meaning designing in a way that fits more naturally into an environment. Asymmetrical design transfers areas traditionally reserved for lower decks to upper decks. Like gyms and spas, but also dining rooms and lounges. A poetical concept inspired by the flexibility you find in resorts, where beach, spa, dining, lounges are used more informally, just as the guests feel like, at any moment they desire.
Which kinds of materials are making a revolution in the yachting industry? SS Our full custom design approach makes us dig deep into materials and how to design them. We are now applying custom carpets made from 100% recycled PET soda bottles of a quality that surpasses silk. Physically environmentally friendly, philosophically pure. It’s great that owners are increasingly in favour of using renewable woods, recycled fabrics, and reclaimed materials. This is driving material technologies to become more durable and resistant to climate change. Provenance and performance in combination with aesthetics and purity will set the agenda for the coming years.
What are the features every superyacht will have in the near future? SS In our opinion, yachts are merging between a resort and a home. Owners nowadays are freer to explore the world and oversee their agenda than they used to be. They can be out on yachting trips while working, bringing their families, friends and entourage along with them. To accommodate this, the design and use of the yacht becomes less formal and a lot more like a ‘home’ or a ‘private resort’. This is challenging traditional naval architecture disciplines, and crews: the lifestyle aboard changes and requires ever more flexibility.
When you are trying to imagine a marina of the future what comes to mind first? SS Marinas are all good, if they are offering meaningful, family-orientated pastimes, have sustainable policies and work according to high ethical standards. At Sinot we believe that we work in an industry that is in a transitional movement. The owners we work for care for integrity, a work/play balance and quality time with family and friends. We consider this the result of cultural globalisation – this is less about ‘my’ culture and more about culture in general.
What does sustainability in the yachting industry mean for you as a designer? SS Sustainability is a weigh-in factor in yachting. It is interesting to compare with cars – hybrids being surpassed by full electric, hydrogen-awaiting infrastructure. Yachting as part of the maritime industry will follow suit, leaping to hydrogen faster, as we explored in our “AQUA” concept of 2019. Apart from propulsion, multipurpose spaces and furniture also plays a role. Spaces with dual usage, like beaches that transform into gyms, breakfast lounges into offices. Furniture that can be moved inside and out, which is leading to more durable and sustainable use of these pieces.
Name a yacht that changed your world. SS For our design house, yachts change our world every day – all our designers, stylists, architects and engineers working jointly, with utmost dedication and in close cooperation with the industry, to create the ultimate yachts for our clients.

As far as we know, Winch Design has a special file on sustainable materials that can be used on a yacht. Could you tell us more? JD I would not necessarily describe it as a file of materials. We have put together some concepts already with sustainable materials and suppliers in mind. We started this journey by researching sustainable materials, suppliers and sources to bring it into our projects. Whether a client requests it or not I believe we should consider these aspects more closely. Our responsibility as designers is to do that. Therefore, we are finding many different materials; most of them are the by-product of commercial agricultural processes. There are things made from pineapple husks for instance, or compressed sand or particular treatments to wood or veneers that are sustainable and much less harmful to the environment than the usual lacquering process. I have a sustainability ambassador in the studio; we made that appointment with our internal team very recently. Her name is Alex Parkinson. She is working not only on new materials but also on how we operate the studio and how we can make ourselves greener. We are also working alongside the Water Revolution Foundation, which is working on making an index of materials and processes involved in building a superyacht. They are trying to calibrate and measure everything from that perspective and give it a rating in sustainability.
What else should we expect from the yachts of the future? JD We see increasing popularity and a rising number of requests for explorers and expedition yachts. When you have an ice-class yacht, it means you have more space, but that does not necessarily affect how the boat looks. As clients become younger, the convention of what a superyacht should look like can be questioned.
Who made you have a closer look at sustainability? The global environmental situation? Or your clients, who are the most interested in cleaner oceans? JD I think this conversation is gathering pace very quickly from all kinds of different areas. Certainly, our clients are increasingly interested in it, because they want to swim in clean water. In parallel, there is a big conversation about ecology among shipyards, designers and suppliers. Some people in the industry are trying to push forward and being very proactive. In my opinion, if there are shipyards that do not think about building hybrid-powered superyachts now they will have to think about it very soon. All of the clients we are now making concepts for are interested in some element of hybrid technology. Which feature will disappear from the yacht’s design very soon? JD There are two quite different things. From a technology point of view there will certainly be a decrease in diesel power and fossil fuel-powered propulsion. I think it will happen quite quickly, it is already gathering a huge pace in the automotive industry and a lot will transfer into yachting. In terms of features and how our clients are asking their yachts to be configured, I think “an informality” is the best word to use. In the past, maybe because of the client’s demographic or average age, yachts always had a main lounge and dining area on the main deck. In most projects we are working on we are seeing a decline in requests for grandiose formal dining areas. Some of the younger clients do not think they need it. More and more clients want the main lounge to be connected to the deck area and pool. Last year we finished a project for Amels shipyard where we put a dining area on the bridge deck.
We are seeing more and more glass used in yacht design. Do you think this material is capable of changing the industry? JD Yes, I think it will continue to develop. Three years ago we were presenting superyacht EXCELLENCE built by Abeking & Rasmussen at the Monaco Yacht Show. It had lots of glass on all decks: multiple glass panels were about 5 metres tall, 2.5 to 3 metres wide and about 8 centimetres thick. Usage of glass as a construction material is becoming more acceptable and possible through developments in technology. But, it is very heavy, so I think soon we will see a structural glass that is much thinner, lighter and probably stronger. Can you name a yacht that changed your world? JD I should focus on the yachts that we have designed in the studio. The yacht that changed my world was the first yacht I worked on. I was part of a big team and we were working on a motor yacht in Dubai back in 1996. It is 162 metres long, so for that time it was the longest yacht ever built. That was my introduction to yachting after many years in landside design. Among the areas I took charge of was the lower deck spa and a squash court. It is still the only yacht I know of that has a squash court. Do you observe anything like fashion in superyacht interior design? JD Winch Design’s DNA is to design for a client, for a client’s lifestyle. To that end, our portfolio is very varied in the type and style of interiors. We have clients who come to us for classic and highly decorated interiors to a very simple and sleek style and everything in between. Can you tell me more about the very unusual project called HALO? JD We began it a few years ago. HALO is actually an airship. We worked with gentlemen from California who spent many decades building airships. Halo is about presenting our clients a different mode of travel, a different way of enjoying the world at a slower and much more sustainable pace. It will be electrically driven at a relatively low altitude, so it does not have to have a pressurised cabin like an airplane. It is completely non-polluting and has the benefit of being able to take off and land anywhere. Also, it can carry huge amounts of weight.

The most reclusive superyacht designer of our time has worked in his own studio, Hampshire-based Tim Heywood Designs, along with his wife and a few assistants, since 1996. start of his career to be taken under the wing of the legendary Jon Bannenberg, from whom he learnt a lot. Heywood’s signature projects include the 147-m yacht A+ (now TOPAZ), PELORUS, BATON ROUGE, QUANTUM BLUE, the Limited Editions line of six yachts for Amels. All these projects speak for their creator – literally, because Tim Heywood Designs doesn’t even have a website.

Which was the yacht that changed your world? You looked at it and understood superyachts will never be the same. For me, it was ‘Pelorus’. When the client gave me ‘carte blanche’ to design a new 100m yacht, I was able to invest time, effort and excessive attention to the details, throughout the build. The long, low profile of the design proved to me that a large yacht should not look like a block of apartments. This design has, I am told, been very influential…
Which types of areas onboard are gaining in popularity?? Wellness centres and spas have become more and more important, in the last 25 years and now, a yacht is not considered to be complete if it cannot offer guests and charterers these facilities.
How do you define your profession? What does being a yacht designer mean to you? Fundamentally, a yacht designer’s role is to create a design that motivates the client to want to have the design built, to interpret his wishes into an original and inspirational whole, with every feature and detail well considered, harmonious and buildable. The designer must then go forward with the shipyard and their subcontractors, to ensure that what is built matches the design previously presented to and approved by the client. What kinds of new materials and technologies are you working with now on a daily basis which it was hard to imagine working with 10 years ago? The first technological advance that comes to my mind is 3D printing. I first saw this technique, in reality, in the Renault Formula One factory in Enstone, Oxfordshire, in 2007 and realised that it could make some significant contributions to both design and production. Preliminary design models are now invariably 3D printed and more and more components of the finished yacht are now, also, 3D printed. Over the last 10 years battery technology has made giant strides forward, and we hope to utilise more and more battery power for tenders and the mothership. Do you think there is a material that is capable of creating a revolution in yacht design? Like fibreglass did a few decades ago? There are continuing developments in new materials that will eventually find their way into yacht construction. Bioplastic and Aerographite are two that I see becoming more important and usable, but they will not make a difference to the design process.
Every superyacht in the near future will have…? The facilities now thought to be essential are defined by clients’ lifestyles, with some additional suggestions from their designers, crew and brokers. Cinema, gym, wellness centre, have all become essential, all the facilities that owners enjoy while ashore. Unique yachting features such as underwater viewing rooms and waterside terraces are all now regarded as essential. Video conferencing will become more and more important, especially after the last 18 months. Solar panels, wind and wave generators will also become more prevalent as they become more efficient. What are the first steps to make yachts sustainable? Look at every function, every material and try to select the most sustainable option. Woven waste plastic, recycled timbers and metals can all help reduce the carbon footprint of the yacht. Propulsion systems and ‘hotel’ services must all be optimised and ‘greened’ where possible. These decisions will all affect the intricate design of the yacht, but can make it unique and stunning, if you have hired a good designer! If you could build your dream yacht, what would it look like? For me, it would be a modern classic design with an efficient propulsion system, to give no more than 13 knots. Accommodation for 8 guests in a wide hull of recycled aluminium. Recycled aluminium again for the superstructure, with full-height, tripleglazed opening windows port and starboard, and to fore and aft. Large deck spaces, with small, intimate interior areas with maximum insulation and minimal air conditioning! How do you imagine the marina of the future would look? Empty – all the yachts are at sea being used by happy clients!

1 Monaco might be the world’s second smallest country, but its reputation as the wealthiest and most glamorous place on earth is fully deserved. Ignore the beaches and head for the old town with its royal palace, luxury boutiques and beautiful urbanites. The Café de Paris, Louis XV restaurant and Casino de Monte Carlo are particularly memorable.

In addition to the expansive Juan-les-Pins beach resort, the Hotel du Cap-Eden-Roc, with its private beach, spa and restaurant, is a well-established hotspot for touring glitterati. A short distance inland lies Vence, one of the best preserved medieval settlements in the region and a famous hub for artistic inspiration.

Across the bay, Île Sainte-Marguerite’s translucent creeks are great for a leisurely swim, and the nearby Île Saint-Honorat is owned and run by Cistercian monks, who make and sell award-winning wines.

Today, the town’s old port is a great spot for superyacht cocktails and St Tropez tself is full of bars and nightclubs. The star-studded Caves du Roy is a particular highlight.

How did you first get into the yachting industry? The initial concept of Sabrina Monte-Carlo was exterior design – we concentrated purely on furniture and accessories for the outdoors. I found a huge gap in the market with very few brands offering exterior furniture that matched the beauty and quality of the interior. I decorated terraces, pool areas and gardens. Naturally, this branched out to yacht owners asking me for help on how to extend visual creativity to their main deck and sun deck.
How would you describe your style? Mediterranean chic! It is contemporary and fresh, yet warm and inviting.
From superyachts to chalets – which space can you experiment with the most when it comes to design? The level of artisanship on a superyacht is incredible. We go into further detail than with residential projects as the layout is very different. Every inch needs to be efficiently used and beautifully decorated to provide versatility. That being said, apartments and villas have more flexibility in design because there are fewer factors to consider. It is essential to take into account stability, safety, weather climate and lifestyle when designing the interior and exterior spaces on a boat. Which room is the most exciting to design in a superyacht layout? I love designing spas on superyachts; it is where I can have the most fun playing with mosaics and dabble with colour combinations. The spa has increasingly become a focal feature in many superyachts, where guests come to unwind after a long day out at sea. We can go beyond with our design inspiration by integrating a traditional Moroccan spa or a Balinese retreat, exuding a sense of serenity. What are your favourite décor and design elements to use in a superyacht? My favourite design element is creating a story. The living space must feel harmonious with the chosen colour scheme, textures and ambience. As well as interesting accessories that will make your guests look twice. Composing a unique story in each home is a reflection of your personality. Are first impressions important when entering a superyacht? The outdoor areas must have the wow factor! It is the first thing one sees and where the majority of the time will be spent. The outdoors must be an extension of the interior design; however, vivid pops of colour or alternative materials can be used to differentiate the two spaces. The main salon is also an area of importance for us. Even though it is not used often, it sets the theme of what the rest of a yacht will look like and should still feel welcoming to guests on-board. What are the design tricks to make a first impression right? Beautiful lines, colours and just the right amount of furniture and accessories. Sometimes less is more, it is important to know when to stop and not over-decorate! How did you collaborate with the iconic JL Coquet? JL Coquet’s Hémipshère White Satin collection is one of our bestsellers and a favourite amongst Chefs. We decided to join forces and collaborate on this set of dinnerware. We chose to personalise the plates with our signature Sabrina Turquoise colour for a Mediterranean feel. We developed two designs that can easily mix and match, as well as creating a variety of striking looks. We designed a dinner set with turquoise and white stripes and another set with turquoise trim. These plates look remarkable when paired with a white set for a bright look.

Machu Picchu, Peru – I would like to explore the magical country of Peru, including the “lost city” of Machu Picchu. It is located high in the Andean hills and allows us to travel back in time to be mesmerised by its archaeological heritage and mysterious beauty. Rajasthan, India – Situated in the North of India, Rajasthan has many unbelievable sights and experiences. “The Land of Kings” has earned its reputation with majestic historic palaces and forts. There are also many sanctuaries teeming with wildlife. Fiji Islands – The Fiji Islands are a tropical wonder zone enveloped by dazzling waters, emerald green jungles and pristine coral reefs. I would love to cruise to secret snorkelling spots and isolated sandbars. This paradise should be on everyone’s bucket list! Who are the designers that inspire you? Chahan Minassian is an inspiration, his innovative ideas and how he can transform any room to look divine. Minassian’s Oriental background has deeply influenced his designs to create sophisticated spaces. His intricate style of mixing culture and history transports people to a different era. What design trends are you into recently? Lately, I am drawn to a warm and neutral colour palette. Muted colours and natural hues of off-white, bone tones and beige are versatile, modern and sophisticated. Superyacht industry standards are becoming more stringent, and clients increasingly demanding as they seek more experience-led itineraries and activities, combined with comfort and ease of travelling. The growing number of requests for chartering in remote and sometimes extreme destinations requires the use of helicopters. Having a helicopter on-board is indispensable when cruising in Far East Russia or even the Antarctic. They can be used to fly you to the top of a mountain for heli-skiing or carry you to the most unreachable places for unique experiences. The concept of adventure is raised to another level with the bounty of things to do.
We have spoken to Imperial’s Helicopter Fleet Manager, who shares the intricacies of the joint operation of helicopters and superyachts. His responsibilities include overseeing the safety of helicopter use and ensuring that it meets the latest regulation standards during private or commercial operations as well as designing the exterior during the new construction phase to increase safety features around helicopter operations on the vessel. “In my experience, the standards and requirements for operating helicopters in the yachting industry are evolving in line with the aviation industry,” says the Helicopter Manger. “Recently, there have been no significant changes in the regulations. The basic rule remains the same: if the task is to use a helicopter on a commercial yacht, its helipad must be certified according to the requirements of the Passenger Yacht Code and ICAO. It must have a dedicated marking, a landing lights system, a fire extinguishing system and all relevant components increasing the safety of the helicopter operations.”
Having a helicopter (or two) on-board substantially increases the concerns associated with the operation and management. Imperial’s helicopter management department ensures this dream does not turn into a headache. The department offers turnkey services that include flight planning, regular maintenance, and the selection of pilots and engineers, as well as assistance on all issues during the superyacht construction and helicopter purchase.

Nowadays, the biggest superyachts may carry two landing pads, one for the owner’s helicopter and the second to transport guests. "When it comes to the location of the helipad on-board, it all depends on the geometry of the superstructure of a particular vessel, and the wind direction," explains the Helicopter Manger. "In the case of a helipad located at the stern of the yacht, it is recommended to land on deck when the yacht is underway at a constant speed. In the second case where the helipad is located at the bow of the vessel, all the helicopter landings will be done at anchor. To facilitate landing and depending on weather conditions, yachts are increasingly equipped with Glide Path Indicator systems. This is found on AMADEA (106.1 metres, Lürssen) and FLYING FOX (136 metres, Lürssen). The laser system creates a geometric picture in space, using which pilots can judge the accuracy of the trajectory on course, descent along the glide path and distance to the landing pad. "This system comes from the navy–from aircraft and helicopter carriers–and is primarily used during bad weather,” says the Manager. “These are additional investments, but given the level of security they guarantee, they are worth it."
Theoretically, with a helicopter fixed on an open certified pad, you can go across the ocean, but there are nuances associated with the brand of an aircraft. For example, Leonardo and Airbus define "storage" of a helicopter as not using it for a period of time without starting the engine. "Crossing the Atlantic takes an average of 15 days, whereas the engine of, say, an Airbus H155 needs to be started once a week, with the rotor blades necessarily in the operating position, not removed or folded," comments the Manager. "In real life, manufacturers tend to make exceptions for these situations, allowing deviations from requirements as long as all other guidelines are followed." That is why explorer yachts can travel the world with their helicopters on-board, storing them on deck in the stern (not the best option) or in a special hangar that prevents corrosion during a long stay at sea. It doesn't matter what type of hangar it will be: one with a lift and vertical loading or similar to an ordinary garage, as its main task is to create conditions with optimal temperature and humidity for the helicopter. In this case, the rotor blades will still have to be removed or folded, and neither is the formal requirement to start the engines once a week waived by the usage of a hangar. Manufacturers' requirements also differ regarding fuel in helicopter tanks during storage on a yacht: in most models it must be completely drained, but some aircrafts can be kept with a full tank (it should not be half empty). Aviation fuel operations on-board require a certified fuelling station with space-consuming capacities, which imposes additional requirements on the size of a yacht. The technical part in aviation is only half the battle, and without a man, a helicopter remains only an expensive thing. Therefore, one of the most important tasks of the Helicopter Fleet Manager at Imperial Yachts is to work with the pilots, technicians and landing crew of the yacht.
The helicopter model which is the most suitable is decided based on a list of requirements, the most important of which is the region where the owner intends to use it, as well as the operating model. This determines climate, purpose and flight duration. This is followed by the type and size of the carrying yacht, which will set a prerequisite for the interior decoration. The most advanced model currently used on-board is the Airbus H175. A medium-class helicopter (two Pratt & Whitney engines Canada 1776 shp each), capable of carrying twelve passengers plus two pilots in its VIP version. It moves at a cruising speed of 267 km/h and covers a distance of up to 600 miles without refuelling. The flight duration is more than five hours, with a record for the fastest rate of climb. The H175 combines the latest aircraft technology with low noise and vibration levels in its category. With the size increase of yachts, the availability and technical level of helicopters are also growing in tandem. The two worlds have synchronized. The Helicopter Manger says that automatic take-off and landing systems have already been developed and will soon be certified. With proper care and management of a helicopter on board, it can work for one or two decades.

4 La Digue offers a very low-key form of tourism, with a modest peppering of guesthouses and restaurants, plus some watersports operators, bicycle providers and horse-riding companies. However, it remains at heart a simple Creole island, with ox carts, plantation houses and blissful white beaches – and it’s all the more appealing for that.

Situated off the northwest tip of Bird’s Head Peninsula on Papua, the most eastern island of the Indonesian Archipelago, Raja Ampat, literally The Four Kings, is an archipelago comprising over 1,500 small islands, cays and shoals surrounding the four main islands of Waigeo, Batanta, Salawati and Misool. The name Raja Ampat itself is believed to derive from a legend according to which a woman found seven eggs, four of which hatched and became the kings of the four main islands. The remaining three became a woman, a ghost and a stone. With all its spectacular wonders, this is the place where words such as enchanting and magical carry real meaning.

1 Fam Islands Fam Islands’ dive sites are some of the most beautiful spots in Raja Ampat. The whole area is stunning, with its clear turquoise lagoons and deserted beaches. It is close to Kri Island and the dive spots here have some of the best dive walls and coral gardens.

On land, the island is covered with misty peaks clad in pristine Papuan rainforest. A hike up the beautiful waterfall, standing at 80 metres, will take around one hour to conquer.

4 The Passage Dive Site The passage dive site is one of a kind. Described as a river flowing between two islands, this is a narrow canyon (around 30m wide) between Gam Island and Waigeo Island. Its configuration gives it a unique micro habitat. There is also Citrus Ridge, which offers one of the best coral gardens in all of Raja Ampat.
≈ 53 Nm 5 The Dampier Strait This strait has extremely rich marine life thanks to the large amount of water passing through, and therefore amazing dives. Sardine Reef, Cape Kri and Arborek Jetty are all well-known dive sites in the Dampier Strait, and there are plenty more besides.
≈ 120 Nm 6 Boo Rock / Boo Windows One of Raja Ampat’s most iconic and most photographed dive sites, Boo Rock/ Windows takes its name from the two swim-through holes in the rock. This dive site showcases the biodiversity of the Misool area with schooling fish, incredible corals and stunning underwater topography. Expect to see everything from the smallest of critters to passing pelagics.
3 Blue Magic The Blue Magic dive site is located between the island of Kri and the island of Waisai. There is an underwater pinnacle that failed to break to the sea's surface. The top of the pinnacle is in around 7 metres of water, and its almost vertical walls descend to a depth of approximately 30 metres.

Imperila Crew Recruitment department is staffed by top recruitment experts who have an in-depth understanding of the industry, are familiar with the nuances of all yachting professions and can be trusted to screen candidates, selecting only the very best among them. Working as part of a superyacht crew is demanding and dynamic, and thus, as a rule, extraordinary people come to work here. They need to know and be able to perform the routine tasks of ordinary sailors, with double the workload. It is not enough for them to limit themselves to their main profession, and it is preferable to be able to work in an additional capacity, such as a paramedic, lifeguard, diving instructor, massage therapist, hairdresser or bartender. New equipment, changing regulations, the digitalisation of paperwork, sanitary measures, trends in sustainability and conscious consumption, confirmation of existing skills... and on top of all that, it takes up to a year to thoroughly master a newly built superyacht that no one has ever sailed on! In a yacht crew you can meet a variety of people: for some it is their first profession, others have six generations of sailors in their families. There are also people who have come from a related field, so they can not only do what they love, but also travel. So how does recruitment and hiring work in the superyacht industry, what does Imperial Yachts bring to it, and how does it differ from other management companies in this regard? Initially, the captain is responsible for selecting the candidates. After an initial screening of CVs, applicants submit documents and are interviewed by senior officers and then by a relevant representative of the management company and, sometimes, representatives of the owner. It is not uncommon for yacht owners to leave this responsibility entirely to specialists, but some clients prefer to personally review CVs, for example when recruiting senior crew members, and may even meet with candidates in person. “I am involved in the hiring process of all engineers, whether they are mechanics or AV\IT specialists,” says Ian Harris, Head of Technical Department at Imperial Yachts. “First, they are interviewed by my colleagues, who assess the qualifications and form their own opinions about the candidates. Then I go through their reports, and personally talk to them. ... “The recruitment process at IY is highly professional and aims at selecting the very best,” the deckhand of LANA superyacht shares his observations. “When I applied for this job, the hardest part was the multi-stage interviews, because there was a lot of time in between, and I had other offers. Nevertheless, I have made it to the end, and I consider myself very fortunate to get a job on a yacht like LANA. Now I continue to study in order to pass exams and become an officer in the near future.” The intervals between interviews are due to the utmost importance of confidentiality for superyacht owners and guests, therefore Imperial Yachts cannot neglect to vet candidates. By asking them about their previous jobs, managers assess the correctness of the answers and note whether they violate the privacy of previous employers, because maintaining the client confidentiality is one of the most crucial tasks of the company, and one for which we are especially valued. “In addition to crew selection, we provide a full package of services related to crew work on a vessel, including employment contracts, termination notices and personnel cost records, as well as all aspects of employment according to flag state requirements,” says Emma Laycock, Head of Crew Recruitment & HR at Imperial Yachts. “Additionally, we provide crew members with uniforms, make sure their appearance meets the standards and of course, continually improve their qualifications. Finally, we help prevent conflicts onboard and handle situations, which for whatever reason cannot be managed by the captain. Nowadays, superyacht crews are usually multinational: a variety of cultures and languages enrich the crew, and we encourage mixed teams. Industry has shown that not only individuals with experience in yachting are most in demand right now, but also those who have many additional skills. Professionals who are mentally and physically capable of combining completely different responsibilities onboard are especially valued.” At Imperial Yachts, we know that every sailor dreams of becoming a captain, and we create necessary opportunities for talented employees to build their careers. The company wants people to stay long term, understand the internal processes and grow within the company. When mutual trust is built, employees are always promoted with encouragement for long-term employment relationships, because in the end it benefits everyone. “Previously I worked on commercial ships and cruise liners, and I have had my Chief Engineer Unlimited licence for 12 years now,” says the Senior Mechanic on the superyacht RoMEA. In that time, I have accumulated management and consulting experience, so now I want to grow in my career as a senior mechanic on one of Imperial Yachts' major projects under construction, where my knowledge and skills will come in handy. At the same time, after working behind an office desk, I realised that I am still a sailor to the core, so I hope to keep going to sea, because that is where I really belong.” A love of the sea and a penchant for travel are the main, but not the only, reasons why people choose to work on private yachts, whose owners usually want them to be run by real professionals. Some psychologists believe that there is no particular personality type best suited to this job, but there are still certain traits without which it would be difficult to work as a crew member. First and foremost, it is openness to communication, the ability to act as part of a team and to find the positives in any situation. "The beauty of my job isn't just about earning money and seeing the world," explains the stewardess of LANA. "I enjoy meeting and interacting with people from all over the world. Working to the highest standards, I try to look for new ideas guided by the formula “how to surprise and entertain” to make sure our guests have a memorable time onboard. On a private yacht, the crew is best suited to the lifestyle and specific requirements of the owner, whereas on a charter boat you have to get to know the passengers all over again. Some input about the guests comes after the contract is signed and when they arrive onboard, the team turns on all their “sensors” to determine their likes and dislikes and then adjusts to them on the fly. "The yachting industry is constantly evolving, and my job has become much more demanding in terms of ensuring the safety and command of the vessel I am entrusted with," says the captain of the FLYING FOX superyacht. Our job is to ensure that guests can truly relax and unwind in luxury, knowing that their loved ones are taken care of at the highest level. When we succeed and when I see my crew functioning as a unit, I get the greatest satisfaction from my work".
"The level of service our guests receive is 7-star and far superior to any of the best spas on land," says the spa manager of the FLYING FOX superyacht. "Our protocols are constantly being refined to ensure that every spa technician and hairdresser has received proper training and hands-on instruction. I am not new to the spa industry, having been in it for over 20 years and having acquired the basic skills even before I joined the yachting industry six years ago. But Imperial Yachts' standards have definitely improved my professional conduct and the product training for the different brands has broadened my knowledge and strengthened my skills".
Often, having selected a crew, the management companies will not intervene until problems arise onboard which are reported to them by the owner or captain. Imperial Yachts acts differently: it is proactive in removing the preconditions for such situations to arise and develop. To this end, the company has managers who supervise and control crews and maintain close liaison with the shipyard, contractors and suppliers who were involved in building and equipping the vessel. With vast experience on yachts, they not only provide supervision, but also help the crew to satisfy guests' requests more quickly and efficiently. "We always have to be prepared for the most unexpected requests, whether it is news of a party of two hundred people or the owner's sudden decision to stay on the yacht for another month or two," explains the head of the interior department. "Each of these situations creates stress for the crew, and it can only be reduced by planning such scenarios in advance, so qualified management from Imperial Yachts is very important here". It is not easy to constantly hit the mark on the expectations of sophisticated passengers, but over the years, managers develop an understanding of what works and what doesn't. For example, the speed of serving guests at the table can be significantly influenced by the layout of the buffet, while a set of pre-conceived “special effects” helps to diversify the experience during spa treatments, and the combination of all this know-how helps to create a special atmosphere for guests.
Imperial Yachts’ fleet grows every year, and it is in the company's best interest to ensure that its carefully selected, well-trained and well-coordinated crews remain in service as long as possible and that their members, if they do change jobs, do so within the company. "I took the transition from yacht to land as a natural progression in my career," recalls Renata Potalenko, who has worked her way up from stewardess to interior manager. "This change has in many ways reinforced my desire to remain in the industry, not only because it has helped to balance my work and personal life, but also because it allows me to maintain a close connection with yachts. I am involved in their monthly checks, sourcing and selecting crew members, travelling to exhibitions, and staying up to date on all interior design trends. It took me a few months to learn my new specialty: you go from being a crew member to a manager acting as the owner's representative. I had to develop my own management style so that the captain and the team could hear me, while maintaining my own friendly approach.” Those who have served long and successfully on superyachts know that this is a job for those who are truly passionate about what they do. Those who work hard, constantly improving themselves and are open to new opportunities are able to build impressive careers. How long have you been in yachting, and how did you get started as a steward? I have been in the yachting industry for over 18 years and used my hospitality background as a means to travel and see the world. My first role as a Service Steward was on a 100-metre yacht and I have mostly enjoyed long contracts on privately owned vessels.
Have you done any interior courses? How have they helped you? I have undertaken many courses over my 25 years in hospitality, including a Diploma in Hospitality Management in Melbourne, Australia, which gave me the training to succeed in the interior department on yachts. I have also completed yacht training in medical courses, wine courses up to WSET 2, numerous butler and service courses, firefighting and safety courses.
What was your first yacht season like? It was extremely rewarding to tackle a new challenge and learn about a completely new international industry. I worked harder than I had ever worked before but felt the new knowledge of languages, cultures, places were invaluable to me and I still find those aspects exciting and attractive.
What are the main essentials for prepping FLYING FOX before a charter journey? Having the cupboards stocked full with all of the preferred items that the guests inform us of. If the guest preference sheet is incomplete before their arrival, it can create issues for suppliers, unhappy guests and unpaid accounts.
What is your most important responsibility as a Chief Steward? Managing the day-to-day needs of the crew, ensuring that they are happy, entertained, busy and mentally challenged which in turn will create a better experience for the guests during their important time on-board.
What sets FLYING FOX’s crew apart? We have as much fun undertaking the activities and instruction as the guests. We feel that as the largest and best charter superyacht in the world, we must also have the best-trained and happiest crew in all sub-departments to please and entertain the guests.
What is the difference between on-charter and off-charter responsibilities? On-charter responsibilities are usually centred around great communication and desire to fulfil the guests’ needs, whereas off-charter responsibilities are usually faster-paced, more varied and involve more departments, contractors and suppliers. We work hard and use the short time between charters efficiently so that everything meets high standards for the guests' arrival. How do you prepare yourself and the team for a busy charter season? With a lot of exercise, rest, sunshine and family time.
What does the future look like for you? Bright! ... What is your background and past experiences before coming on board LANA? I was born and raised in Greece, where a memorable part of my childhood was picking vegetables from my grandmother’s garden. My career began in Athens, cooking at Spondi restaurant (two Michelin stars). I then moved to London where I gained experience working in highly coveted international kitchens from Michelin-starred chefs, including Alain Ducasse at the Dorchester (three Michelin stars) and Joël Robuchon at his L'Atelier in Covent Garden (two Michelin stars). I was the Senior Sous Chef to Phil Howard at The Square in Mayfair (two Michelin stars). Most recently, I held the position of Head Chef for The Arts Club (Dover Street, Mayfair) from 2013. In 2016, I decided to join the yachting industry where I spent three years working on a 100-metre private superyacht. In December 2020, I made the transition and joined M/Y Lana as Head Chef. What are the challenges of being the Head Chef on board one of the largest superyachts for charter? As a Head Chef on one of the largest superyachts, I always need to be on my toes and work at the highest level to keep the guests happy. It is important to maintain the highest standards and remain consistent. One challenge is trying to source the best quality products even in exotic countries. For example, when I was in Vietnam I had to wake up at 05:00, go to the local markets and speak with the locals to find the best quality produce for the guests. On a charter yacht, sometimes you do not know where you are going next month and therefore you need to be adaptable. The crew and I are always prepared, organised, and plan ahead for any scenario. How do you try to impress and surprise charter guests? Presentation is very important as well as creativity. Most charter guests have dined at the world’s top restaurants, and my goal is to offer them something innovative and different from what they may have already seen. What is the most interesting meal request you have had so far? I was flown by helicopter to the top of a mountain in Patagonia. I was requested that I make a fire on top of the mountain and cook a meal for the guests whilst they were out heli-skiing. I prepared different salads and trout that was freshly caught from the lake. What is your favourite cuisine? Personally, my favourite cuisines are French and Japanese. The French cuisine is a heavenly combination of culture, tradition and sophistication. It is the backbone of many cuisines across the Western world. Japanese cuisine is refined and elegant, similar to the French. Its development highlights flavours, textures and colours and the method of cooking is as close to natural as possible.
Describe your knowledge of food safety. Food safety is vital on board yachts. I have taken specialised educational courses for food handling and hygiene practices. I maintain a high standard of cleanliness in my galley and ensure food is cooked to safe temperatures. I also manage the storage of food on board, making sure everything is well-labelled and separated in the many fridges and freezers.
What is your favourite cuisine to cook? I love cooking classic French cuisine with a modern twist, using the highest quality ingredients. I also love cooking Mediterranean food because I am from Greece so this brings me back to my roots.
How involved are you with menu development and overall design? I am very involved with menu development and design. I love this creative process. I have been cooking for twenty-two years and find the best way to develop a menu for charter guests is to speak to the guests themselves. After understanding their individual preferences and tastes, I can alter the menu to their liking. I always visualise my plating. I love combining flavours and tasting while I am cooking. I keep notes, photos and a spreadsheet for every project. I will start over until it is right. My focus when developing menus is always on the guests and making them happy.
Where is the best region for fresh produce? The South of France is the best region for fruits and vegetables, as the climate is favourable. I love selecting fish from Cornwall and shellfish from the Isle of Man as they supply top-quality and sustainable produce. What is your favourite wine? I enjoy red wines from Tuscany. The vineyards in Tuscany are beautiful and there are so many good wines produced in that region.
When are you happiest at work? Delighting guests through my love for food is my top priority. I am happiest at work when I have access to the best quality ingredients. I love the feeling when I know that people are eating well. I take pride in creating food that makes guests happy.
Tell me about pairing wine and food. Pairing food and wine together can enhance the flavour of both the food and the wine. Even though it is very subjective and depends on personal tastes, having expertise in it allows us to impress charter guests in a creative way.
What is your proudest moment as a chef? During my time at Alain Ducasse at the Dorchester, we were awarded three Michelin stars. This was the proudest moment in my career as a chef and a moment I will never forget.
What is an example of a summertime menu for lunch and dinner you would prepare? As charter guests normally have their day filled with activities from water-skiing to exploring beachside towns, lunch is relatively light and easy to digest. For starters, guests will find on their plate Sicilian red prawn carpaccio, artichoke and ricotta tortellini. For their main course, grilled sea bass with roasted aubergines and tomatoes, baby chicken with preserved lemon and roasted baby vegetables. As for dessert, a delicious coconut panna cotta with strawberries and lime. Dinner is where the guests sometimes request a themed dinner party or to prepare their catch-of-the-day. The dinner menu includes white asparagus and baby leek salad, Hamachi with avocado and citrus dressing, octopus escabeche for starters. For the pièce de résistance, a whole baked wild turbot. Of course, for dessert, a mouth-watering hazelnut soufflé with chocolate sorbet.
Where do you draw inspiration from for new recipes and food combinations? A huge part of my inspiration comes from my childhood. I often think about my grandmother’s recipes and develop them into something different and innovative. I am also inspired by all the famous chefs I have had the honour to work with, as well as all the food I have cooked over the years at many different restaurants. I draw inspiration from eating in restaurants, travelling, seeing new food cultures, visiting local markets, and observing how the locals are eating.
What do you do to stay current with new trends? Describe two of the most interesting industry trends. To stay current with new trends, I follow and watch famous chefs on social media, try different restaurants, and read cook books. I have a large collection of cook books and in my spare time, you will always find me reading. The two trends I find the most interesting are plant-based foods and low-sugar desserts. How do you test the quality of your ingredients? For the best quality ingredients, I prefer to personally select them. I like to go to the markets early in the morning and with the advice of local suppliers, I try and pick the freshest possible produce.

Project inception At the heart of every new-build project is a set of key decisions. Does the client intend to cross the Atlantic, push the frontiers among the icebergs of Antarctica or island-hop among the tightly packed archipelagos of the Mediterranean? What about the performance, the sleeping capacity and the living space priorities? Will it be used for charter or preserved for the owner alone? Once the client has worked through these key questions, an Imperial broker will select the designer and builder best suited to the client's needs and assemble a highly experienced team to help manage and complete their dream project.
Client collaboration While Imperial is fully content to take charge of the entire process, the client can of course be as involved as they wish. They can enjoy full access to the technical elements and a central role in every decision-making process; or they can step back and let the Imperial team take care of the finer details. Either way, the client will still receive regular reports to keep them abreast of key developments, including progress with the build, developments with the design as well as regular financial breakdowns.
Imperial’s role Imperial protects the future owner’s interests by acting as both the Construction Manager and the Owner’s Representative. Each new project is allocated a set of designated professionals: a Project Manager, based at the chosen yard, to supervise construction on a day-to-day basis and to keep the build on schedule; a Build Engineer, Electrical & Electronics Engineer and Interior Quality Manager to implement internal design and take charge of each detail of the fit-out; a Financial Manager to keep control of finances and to compile regular budget reports for the client; and a Build Captain and Build Engineer to oversee the final stages of construction and to bring the yacht into operation. Throughout the entire process, Imperial’s teams keep a tight grip on the quality, the timeline and the expenses to ensure that all elements of the build surpass the client’s expectations.
