Then, move into the likes of Oven Baked Snow Fish from the southern seas of Tasmania, with wood-fired cauliflower, lemon zest, dukkha crumble and white miso sauce. And for the grand finale (dessert, obviously), The Cloud will transport your tastebuds to cloud nine, with pavlova, passionfruit granita, berry gel, Chantilly cream and vanilla infused strawberry jelly. A meal is not a meal without a cocktail or vino (or both, definitely both!) and lucky for us, there is a talented mixologist on standby. Using locally sourced beverages and ingredients from the JW Garden, the result is liquid gold. For the vino enthusiasts, an expertly crafted wine ambassador program has been introduced to provide the ultimate grape juice experience, and call an Uber already because we are so sold. THE UNICORN OF SEAFOOD HAS ARRIVED ON THE GC!
Why Broadbeach’s new dining destination is no fanta-sea.
W
ho doesn’t love an all-day menu – and an extensive, Mediterranean seafood infused one at that – and we know you all do, so #AllEyesOnUs. GC, may we present Unicorn Seafood Restaurant and no, this is not us describing its supernatural deliciousness (although, there’s that too) – it is literally named Unicorn Seafood Restaurant. This may ring a bell to Kingscliff folk and for good reason, because both unicorns share the same maker and yeah, this is beginning to sound like the next sci-fi instalment of Star(fish) Wars. Time for us to scale back on the seafood and mythical horse funnies and get back to the task at hand – telling everyone how so-fish-ticated the food is at Phoenician’s newest eats destination. Earning a rep as the best seafood restaurant on the NSW north coast, Unicorn

Seafood Kingscliff didn’t let a little ole thang like Rona get in the way, opening its doors mid-pandemic and never looking back. Fast forward to February this year and second time is definitely a charm, with the Broadbeach arm setting the local foodie scene alight with its seafood-erranean (the Bennifer of seafood and Mediterranean) goodness. Well known for delivering a seamless dining experience with impeccable food, service and amazing ambience to boot, proud local owners Mr. and Mrs. Sharma have produced another o-fish-al crowd favourite. Upon entering the space, you’re suddenly living your best life in the exotic surrounds of the Mediterranean, with refreshing blue and white hues and relaxing ocean murals. Combined with a welcoming, relaxed and laid-back vibe, it’s an all-rounder done right. Mixed booth and chair sitting adorn the inside, and outside dining gives us the GC meets coastal Euro feels. To start proceedings, we recommend the Beetroot Feta with pita bread and a round of Oysters (any which way you like). If you’re keen on an entrée (same) and crustaceans tickle your fancy (same again), it’s no accident that the $50 Lobster Mornay here is the signature special and people pleaser. And if you don’t
order it, make sure your +1 does because sharing is caring and if they object, well that’s just ‘shellfish’. The Whole Sole is another Unicorn specialty with natural flavours in abundance, and if you feel like going all out then friends, behold the Seafood Platter for Two. It has all our ocean’s finest, including fresh king prawns, smoked salmon, mixed dozen oysters (natural, mornay and Kilpatrick), barbequed bugs, barbequed prawns, garlic prawns, fish, calamari, lobster mornay and fresh fruits to freshen the palette. There are also several prime meats, pastas, poultry and vegetarian dishes on offer so if seafood doesn’t float your boat, trust us – there are endless mouth-watering alternatives that will. If you’re still hungry at this point (and we’d be surprised if you ordered the platter because we reckon it could feed a small country), how about Strawberries Romanoff for dessert or everyone’s fave, a classic Sticky Date Pudding. Please sir, I want some more! Something else unicorn-status worthy is the wine (bottle prices range from $39 to $160) and cocktail menu. With around twenty cocktails to choose from, we suggest starting at the top and working your way down. Get the party started with an Oyster Shot with vodka, tomato juice, Worcestershire and Tobacco, before playing posh with a French Martini with Chambord, vodka or gin, pineapple juice and garnished with a cherry on the rim. So next time you’re Broady-bound, come sea for yourself that a real-life unicorn exists and enjoy a truly fin-tastic feed. Words by Bianca Trathen

Meet the Gold Coast co-founder of Evolt 360.

ands up if you are still trying to reach those fitness resolutions you promised yourself at the stroke of midnight 2021/2022? Well, look. No judgement here, because same. So to convince you (and us) to kick-start those resolutions back into gear we spoke to Evolt 360 Co-Founder, Kelly Weideman on her journey to building the body composition scanner (AKA your fitness saviour) globally and what her local loves are! How long have you been a Gold Coast local? 13 years. Tell us a bit about you. Originally from South Africa, my family immigrated to Canada when I was a teenager and I arrived in Australia in 2008 with my sister for a holiday looking for adventure and fell in love with the Gold Coast! Many years later I am now an Australian citizen. I have travelled all over the world and the GC is my favourite place I have ever been to, it offers everything you could possibly need and want; sunshine, beautiful beaches, vibrant cafe culture… Explain to us what The Evolt 360 is. The Evolt 360 is a medically graded body composition scanner that uses bioelectrical impedance technology to provide a user with important information about a user’s internal body metrics. Body Water and Total Body Fat and distinguish between internal body fat and visible body fat which is essential information when trying to change body composition. It is impossible to know whether your training or nutrition efforts are working in your favour just by using the weight figure on the scale. What’s the benefit of people understanding their body composition? Not knowing your starting point or understanding what you need to do is like trying to locate a new destination without using a GPS guide or set of directions. Traditionally most people use a standard weight scale that can’t tell you whether you are losing body fat or losing muscle mass.
Why should people be counting their macros rather than calories? People tend to track calories and end up on a yo-yo dieting pathway. This is because not all calories are created equally. For example, 1,500 calories of fast food will not have the same effect on your body transformation goals as say 1,500 of balanced healthy fresh, home-prepared meals. Each macronutrient plays a very different role and depends on your individual activity and training style, so understanding the proportion of protein, carbohydrates and fats is crucial to ensure that your body’s needs are met, and are aligned with your goal. The Evolt 360 is the only body composition scanner on the market that provides a suggested individualized approach based on the user’s individual circumstances. You had Richard Branson test out the Evolt 360. Tell us what that was like? That was very cool and unexpected! It was great to see that he had a really high health score on the scanner and was very happy about it, he mentioned it was his favourite piece of equipment on his new Virgin Voyager cruise ship and has now decided to include Evolt 360 on all of his cruise ships. METHOD 1. Marinate beef in a shallow bowl of sugar, sesame oil, kecap manis, fish sauce & lime juice for 30 mins in the fridge. Reserve the remaining marinade. 2. Grill marinated beef 4 minutes each side on med-high. Discard the leftover marinade. 3. Let rump rest under foil for 4-5 minutes then slice thinly to serve. 4. Prep salad by julienning the papaya (or mango) & carrots, then add to a bowl the tamarind, chilli, onion, sprouts & herbs. 5. Add leftover marinade sauce from Step 1. 6. opened this small, boutique and dog-friendly distillery in 2020, and it quickly became hot property with gin lovers far and wide. Us included. hen someone says Dracula, us Gold Coasters don’t think high-collared capes and bloody fangs. Instead, our minds wander straight to Hooker Blvd and THE Dracula’s. The one we grew up with, drove past a thousand times with the parentals, and pondered what awesomeness lurked inside that creepy-cool exterior. Let’s unpack the menu which is positively LIT. We recommend starting with an entree of Charred Field Mushrooms featuring lentils, sauteed spinach and sherry vinegar dressing. Then, move on to a main and wait, we’ve just spotted a fusion of our two faves; seafood and pasta! When you find a restaurant who can do this ‘power couple’ justice, it’s a moment. The Linguine Seafood Pasta with Moreton Bay bugs, prawns, cherry tomato, zucchini, chilli and baby basil hits all the right notes, and is it excessive to order another helping? Throw a bottle of chilled Aquilani Pinot Grigio into the mix. Or, for those craving a meat fix, the Crisp Pork Belly with baked radish, carrot puree and caramelised apples is cooked to perf. The crackling on this bad boy is phe-nom and we won’t judge if you try and steal your date’s helping coz, crackle. Pair it with a bottle of Donnhoff ‘Estate’ Riesling which, friends, IS the (now not so) secret sauce. A meal minus dessert is like cheese sans quince paste, so do right by your tastebuds and order the 54% Dark Chocolate Parfait with whisky and vanilla sauce, chocolate biscuit and roasted nuts cream. Divine. So now that your next date night is sorted, your only conundrum will be finding a frock that conceals the evidence of a three-course feed so good, you couldn’t part with a single crumb…or sip.

Although we do hope the cute as a button Bear Mousse with Oreo makes an appearance everyday! Now what goes perfectly with your chosen cake? Coffee! Meet Mint Designer Kitchens owner.

yan Manthey is the Gold Coast local tradie turned business owner of Mint Designer Kitchens. From kitchen renos to multi-million dollar homes (we’ve heard there’s been remotecontrolled drop down bars and showstopping back-lit marble counters), Mint has been making client’s dreams a reality since 2009. Operating out of a purpose-built, fully-equipped showroom in Southport, clients can be inspired by the full range on display. We sat down with Ryan to talk about the company’s success and why Mint is leading the field in custom designer kitchens and bathrooms on the Coast. How long have you been a Gold Coast local? As long as I can remember. I was born in Mackay and moved to the Gold Coast when I was two. My family lived in the same house in Ashmore until I was in my 20’s and since then I’ve bounced around the GC. What do you love most about living here? I love everything about the Coast – the laid back atmosphere, the people, my crew of friends and most of my family are here. On the weekends, when I get any free time, I go boating on the Broadwater or jet skiing with friends. I love that at the end of a hard day at work I can walk to the beach, put my feet in the sand and chill out. 30 | insidegoldcoast.com.au
Tell us about your career thus far. After I left grade 12 at Trinity Lutheran College, I did an apprenticeship with a shopfitting company. Following this, I worked at a large commercial joinery manufacturer. I started to think about starting my own business and in 2009 Mint Designer Kitchens was born. Mint started out with just me on the tools and has grown to be one of the Gold Coast’s largest bespoke kitchen and joinery businesses. Tell us about Mint Designer Kitchens. We are a leading Gold Coast designer, builder and installer of custom made, high end kitchens, bathrooms, bars and laundries on the Gold Coast and Brisbane. In the past thirteen years, we have grown both our factory and our staff to enable us to deliver many different projects. Our designer kitchens range from renovations to transforming our client’s homes to new builds and rolling out multiple kitchens, bathrooms and laundries per week for our builder/developer clients. What sort of projects do you work on? As we are a large business with salespeople working in multiple verticals, we always have a wide range of projects on the go ranging from multi-million dollar builds to large scale builders and commercial joinery.
We are known for our unique and complex designs, often building solutions that other cabinet makers won’t even attempt. What does Mint do differently? Mint custom makes projects, meaning the end product is specifically suited to the environment and style. We believe in using quality products and not cutting corners with cheap materials that save money up front but will cost more in the longer term.

And for those from other ‘burbs around the Coast, you would have driven past it – perhaps unknowingly – every time you’ve ventured down the Gold Coast Highway at Tugun. A deceptively unassuming building, there is so much more than meets the eye here. 55 years young, the hall has done so much good for the community, undeniably earning its stripes… and a very well-deserved facelift. As passionate advocates of this iconic, community-owned groundbreaker, we’re delighted to tell you why it’s so special and unpack how you can help secure its future. The crux of the matter is, for this communityowned and funded local treasure to keep up with (the Kardashians….no not really) demand, it needs some TLC. A lot actually – $360k worth. We’re talking functional upgrades such as disabled access and updated facilities, as well as a reinvigorated exterior. Its fresh new look will be reminiscent of a vibrant 50’s art deco cinema which seriously, is there anything cooler?

For this epic upgrade to continue, however, the volunteer-based Tugun Progress Association (TPA) – the Trustee for the hall taking care of general operations and maintenance – is sending out an SOS.
With so much construction yet to take place, they’re in need of precious donations big or small from anyone who can spare a dollar to support. As it’s community-owned, all funding must come from selfless donations, whether they be cash, labour or materials. Without the above, this Tugun trailblazer won’t have a shot at a second life – and we’re reaching for the Kleenex at the prospect. So just what exactly goes down in this muchloved old-timer that makes it worthy of all the fuss? For starters, it’s long been a place for the locals to discuss important developments and pressing matters that directly affect the community. Regularly facilitating conversations between the public, politicians and the Council, big plans have been hatched, halted and heeded within those sandy brick walls.
It has also led a double life as a bit of a playboy (sans the bunnies and the grotto… and Hef), acting as a place of fun, creativity, expression and ‘togetherness’. Always popular for private celebrations, workshops, performances, lunches and fundraisers, there is an ever-growing list of groups utilising the space on a regular basis. The hall is the only community-owned, not-for-profit hall on the Coast, and a beacon for the rich history of its beloved ‘hood. Rejuvenating the space will not only provide better facilities for the many community groups who use it, but preserve one of the few original structures left standing in our beautiful city. So friends, if you can spare some moolah, contribute a trade or help in any way, this is a great way to give back and help a golden oldie regain its youth, and continue its do-gooder deeds. In addition to transforming our CBD’s everyday urban spaces into illuminated technicolour displays, this inaugural event will also showcase an eclectic line-up of live musical performances. The diverse soundscape will celebrate the Gold Coast’s vibrant nightlife and live-music scene and seriously, we LOVE this for us. So friends, tell Siri to put this in your calendar now and prepare to be en-LIGHTened. With epic initiatives like this, the future of the Gold Coast is…bright. EVENT: Perry Cross Research Gala Dinner LOCATION: The Star Gold Coast A slick and sophisticated crowd flocked to the Perry Cross ‘Everything is Possible’ Gala Dinner presented by Prestige Cars Group. The sell-out event was hosted by media personality Shelly Craft and close to $250,000 was raised for the Perry Cross Spinal Research Foundation. Over 600 guests enjoyed a delicious three-course dinner as they helped in raising funds to assist in finding a cure for paralysis.
