This portfolio, from its design to compilation, reflects the rich diversity of people, places, wines & values that are at the core of what we do at Inn Express. We are proud of our wine collection and we feel that it perfectly reflects our ethos as a business. We champion the smaller, independent producer but also those looking to offer their customers a point of difference. At a time when great wines are now being produced all around the world, we have carefully selected our range to complement this. We look to source wines that you won’t find on the supermarket shelves, wines that are grown, crafted and packaged specifically for the Independent sector. We are constantly analysing trends and as such have recently added wines from Japan & Uruguay and have also included a large selection of natural & organic wines. Above all, we pride ourselves on offering value for money across our entire range. M E E T the makers The Falasco family have deep roots in the wine industry. Back in 1939, a young Don Lolo Falasco started selling wine from the front of his bike... he had ambition and a dream to make top quality wines; wines of personality, character, and a style that truly expresses the virtues of their terroir. After much hard work, innovation and investment in technology, today Bodega Los Haroldos are one of Argentina’s leading family-owned wineries. Third generation Jorge Falasco now leads the destiny of this family business, and many of the fourth generation work with him, ensuring the future of the family’s involvement in the production of fine wines. M E E T the maker Ever thought about the person responsible for the wine inside the bottles on your back bar? We did.. So we had the labourous task of chatting all things wine with one of Australias best known wine makers. Its a tough life!! raduating from the multiG campus Charles Sturt University, Jo worked under

Andrew McPherson’s tutelage and in 2011 was appointed Winemaker at The McPherson Wine Co in the emerging wine region of Victoria. They have been producing high quality wine since 1968 with the McPherson family still very much integral to its day-to-day running. Jo’s passion and natural feel for winemaking is evident in every aspect of her life. So, the obvious question, why wine? A great question! I guess it was from a curiosity of how one product can be so varied to make it loved by so many people with such different tastes. Really it’s all about wondering how the same grape variety can create such different wines. For example, if you drink a Shiraz from France, it’s completely different grape to a Shiraz from Australia. The same grape with different regions, different climates and different growing techniques. The winemaking team has so much control over the whole process, you can easily see

the passion and skill involved. There is a definite science behind winemaking, but its more than just chemistry – winemaking is science and art together. What is the one aspect of your job that might surprise people? Winemaking is not about drinking wine all day. You’ll be surprised how many people think we spend our days tasting wines and having long lunches. Don’t get me wrong, we do taste our wines to make sure the taste and quality is right, but years of hard work need to be done before we can get to this point. Anyone thinking of becoming a winemaker will find it an incredibly rewarding career – there’s few other products which make people smile so much as wine. But they need to be prepared to work hard and not give up, and always listen to feedback both good and bad. What do you find is the hardest part of any harvest? It would have to be the long hours and spending time away from my kids. Harvest can last anything from eight to 12 weeks, depending on

the season. During this time we usually work six or seven days per week, 12 – 14 hours per day. And, the winemaker is always on call, which could mean a call out during the middle of the night. My husband is also a winemaker, we support each other and our family during harvest time. Our children love learning about the winemaking process and, although it’s too busy for them to come to the winery during harvest, we’ve even started to make our own batch at home. What does the future hold for McPherson Wines? Another 50 years of innovative and ground-breaking wines one would expect. Hopefully we’ll continue to grow and evolve, but the important thing is to never compromise quality. We don’t have any dreams to take over the wine world, that’s not what we want to do. AUSTRALIA Australia has been at the cutting edge of New World wine for a number of years. It's true to say growers are now under increasing pressure from limited water supply and whilst yields may have dropped, quality certainly hasn't. Australia excels in mid-range varietals and our long association with McPhersons Wines is testamount to that. They are real magicians, it’s the equivalent to using sandpaper on a cricket ball!

We had the pleasure of firing a few quick questions to Bouchon Family chief winemaker Christian Sepúlveda So Christian, it seems fitting to ask, where did it all begin?

picking them early and fermenting at low temperatures in ceramic tanks.

I studied oenology (wine-making) at the University of Chilé, then my my first wine making role was in New Zealand, working with biodynamic agriculture, followed by a mind-blowing role working with Grand Crus in Burgundy. Then I returned to Chilé and in 2016 became chief winemaker in Bouchon Family wines. I have visited many other wine regions around the world, and I think you have to know and to try different types of wines, to expand your vision and to be able to innovate in a consistent way.

So what does all that do to the País wine?

But wine is a traditional, agricultural product, so isn’t it hard to innovate with? It’s true that there is a long wine-making tradition in the Maule Valley where we are based, but my mantra is ‘to innovate through tradition’. País is a great example of this: it is an indigenous grape growing from very old vines, and in some cases just growing wild amongst the trees around the vineyard. You have to respect how it has adapted to its environment, has a natural equilibrium and then work with it. Give Pais a chance! In the past decade País’ reputation has begun to change.

Personally, when I work with grapes from a 100+ year old vine, I feel a heavy weight on my shoulders, because you are making wine with history. It is not about changing the wine completely, but managing it correctly. So for us that means doing things like not crushing the grapes as they are already naturally tannic,

It produces bags of red fruit flavours, is medium bodied, relatively low in alcohol with elegant tannins. We have an incredible environment in Chilé to make wine: there are amazing weather conditions and the vines don’t get the diseases that are common in many other wine-making countries. I guess this is why people know Chilé for the home of decent wine which offers brilliant value for money? Yes of course the world knows we can make great value wines in Chilé using international grapes like Chardonnay and Merlot, which are grown all over the world. We need to change that perception though, because there is so much more to discover here. With our growing conditions and indigenous varieties like País, there is a fantastic opportunity, in fact Bouchon see it as an obligation, to make wines that express the place they are actually from. Finally, what developments are you working on for the next few years? Over the last few years we have created a lot of new wines, now it’s the time to develop a consistency of style in these wines. Also, the Bouchon family are a French family and so we are planting classic Mediterranean varieties like Carignan, and using traditional methods of cultivation like growing bush vines and dry farming. The Bouchon family always want to lead new innovation in Chilé.


CHILÉ Chile has been associated for a long time with reliable and keenly priced, mainly from well-known international varietals. The Old World envies Chile for its low costs and ever dependant warm summers. Depiste the volume coming from the ever dependant varietals, there are some interesting indigenous grape varieties available. Included in ths list is the ancient grape Pais, a much-underestimated wine with similar characteristics to Beaujolais wines. All we are saying is… give Pais a chance!

Ones to Watch! Pais Viejo (‘Old Pais’) is a wine with history. Made with Pais grapes from over 100-year-old Gobelet vines planted in the dry-farmed, coastal region of Maule.

& NATURAL WINES

With a growing interest in organic, biodynamic and minimal intervention (natural) wine, we have discovered some real gems from a range of small, family-owned estates from around the world. Each wine tells a unique story of its origins. So, we have teamed up with our friends at Alliance Wine, who have offered a plethora of helpful advice and provided some refreshing clarity regarding these popular and upcoming wine trends. ORGANIC

BIODYNAMIC

N AT U R A L

There are laws that regulate the use of the term ‘organic’. However, the terms ‘sustainable’ and ‘biodynamic’ are free from legal definitions. In order to clear things up, let’s try and explain these definitions. Firstly, there is the term ‘organic’. Typically, there are two types of organic listings on wine bottles; wines produced using organically grown grapes (avoiding the use of any synthetic pesticides or additives) and wines produced using organically grown grapes (which are also free from additional sulphites – though naturally occurring sulphites may still be present).

Biodynamic farming follows similar principles to organic farming as it also takes place without the use of synthetic chemicals. However, biodynamic farming incorporates ideologies that a vineyard should be viewed as an entire ecosystem. This also takes concepts such as astrological influences and lunar cycles into account. A biodynamic wine means that the grapes have been farmed in a biodynamic method and the winemaker has not produced the wine with any commonly used manipulations such as the addition of yeast or acidity adjustments. A wine made from biodynamic grapes means that although the vintner used biodynamically grown grapes, a less-strict ‘set of rules’ was used in the process of the wine making.

The term ‘natural’ is a more obscure term to clarify, as there is no true definition as to what constitutes a ‘natural’ wine or a ‘raw’ wine. Despite a rising popularity, we are yet to see a recognised definition for this style. An appropriate definition for the term ‘natural’ has been penned by Isabelle Legeron MW (founder of RAW WINE), who describes wines of this variety as “living wine from living soil”. In her book (Natural Wine: An Introduction to Organic and Biodynamic Wines Made Naturally 2017) she goes on to suggest that a natural wine comes from an organic/biodynamic vineyard and, therefore, has had nothing externally added or removed from the growing process. The microbiological life that exists naturally in these vineyards is what creates ‘living wine’ as these microbiological organisms continue to exist in the wine, even after the fermentation and bottling processes are complete. These wines are not filtered or fined. We like to think that they follow a similar concept to bottle conditioned beers.

EVERYTHING YOU NEED TO KNOW ABOUT JAPANESE WINE

I

f you ever flick through any sort of trade magazine or publication, you’ll no doubt have read somewhere that we should all be really excited about wines from upcoming regions. Whether it’s about targeting millennials, keeping up with the latest craze to come out of the London restaurant scene, or somewhat cynically trying to put a positive spin on the state of global warming, everyone is ever-keen to uncover the ‘next big thing’ in wine. The honest truth is that we’re not sure if Japanese wine falls into that category or not – they’ve actually been producing wine there seriously since the late 19th Century, so can’t really be classed as ‘new’ – but one thing we are sure of is how good the stuff is that we’ve just added to our portfolio. More on that in a bit. But first, a few things you should know about Japanese wine: IT’S ALL ABOUT KOSHU If there’s one fact you need to know about viticulture in Japan, it can be summed up with this word – Koshu. The Koshu grape is actually native to Japan, but has its routes in Europe, having travelled down the Silk Route. It accounts for the major chunk of Japan’s wine production and since 2013 has been recognised as an ‘official winemaking variety’ by the OIV. The real wow factor for Koshu is its colour – brilliant pink – and when it’s planted in the traditional pergola method can make for some pretty spectacular photos.

IT’S NOT ALL FUN AND GAMES When you see photos of Japanese vineyards, it all looks as ‘zen’ as you might imagine – the pergolas and eerie mist punctuated by the vibrant pink clusters of Koshu. But Japan’s winegrowing climate is actually a bit of a nightmare. Japan’s vineyards are located in subtropical environments that are prone to heavy rainfall during the summertime,

right in the heart of the growing season. This brings with it all the associated risks and headaches that come with hot temperatures and lots of moisture, most notably rot and swollen berries. Winemakers then have to be absolutely meticulous in their management of the vineyards and have developed their own innovative ways of coming up with the goods come harvest.

and white stone fruit. Unsurprisingly it pairs really well with Japanese food – think fresh seafood, light meats, tempura, or an over-the-top pairing for the Sushi tray in your Waitrose meal-deal.

There’s a lot to winemaking in Japan. It appeals to the ideas of exoticism that drive a lot of the excitement around new and interesting wine regions, but Japanese wine comes with a delicacy and level of attention to detail that can sometimes be lacking in the New World. Quiet, meticulous, and coolly going a little under-the-radar – it’s all part of its charm. So, when we tasted the wine itself and thought “that’s a bit alright”, it’s no wonder we’ve been so excited to introduce Château Mercian to our customers now it’s finally available.

Pale yellow color. Refreshing aromas of citrus fruits such as lemon, lime, sudachi and apple, nuance of toasted bread derived from Sur Lie Method appears. Fresh acidity is accented by pleasant astringency extracted from the skin of Koshu grapes.

C H ÂT E A U M E R C I A N Château Mercian essentially is the history of winemaking in Japan and amongst its growers are the current generation of the two young men sent out it the 1860s to learn winemaking from Japan. Indeed Mr Takano’s oldest Koshu vineyard is named Troyes, the city in France where their forefathers were sent. Today Japan, and indeed Château Mercian, produce Merlot, Chardonnay, Cabernet Franc, Cabernet Sauvignon, Syrah and more, experimenting with Albariño, Mencia et al. The productions are minimal with tiny yields from the few areas land given over to vines. But there is huge interest in the delicacy of flavours produced here, what the OIV called, in giving vitis vinifera status to Koshu “the next generation of our palate”. Of course, you can’t sell a wine purely off the colour of the grape skin that it comes from, so we better say a bit about what it tastes like… Koshu wines are actually really delicate and tend to show quite a lot of fine citrus

Sweet and gentle aromas of apricot, apple compote, Darjeeling, old Rose with subtle vanilla notes are derived from 8 months in oak barrels. The complex palate from the skins and seeds of the Koshu grape come from gentle skin contact, this creates a three-dimensional feeling in the mouth.

It is an exciting time for Japan, with the Emperor changing in March 2019, the Rugby World Cup in September 2019, the Olympics in 2020, as well as landing probes on asteroids, and launching their stunningly detailed, unique and enchanting wines on our soils.

IT ’S NOT MADE WITH ORANG E S To m a k e a n o r a n g e w i n e , y o u f i r s t t a k e w h i t e grapes, mash them up, and then put them in a large vessel (often cement or ceramic). Then, you typically leave the fermenting grapes alone for four days to sometimes over a year with the skins and seeds still attached.

Orange winemaking is a very natural process that uses little to no additives, sometimes not even yeast. Because of all this, they taste very different from regular white wines and have a sour taste and nuttiness from oxidation.
