Unbelievably, coffee is the world’s second most traded commodity after oil. Over 80 countries produce 140 million 60 kilo bags of the stuff every year; that’s nearly 9 billion kilos of green coffee from something approaching 3.5 trillion coffee trees… That makes 3.5 billion cups of coffee per day & allows 25 million families worldwide to make a living from the broader coffee trade - 5 million of them alone in origin, managing farming & harvesting - 70% of which takes place on small family holdings. As an example of the reach & scale of the coffee trade - in Latin America, nearly 50% of all cropland is taken up with coffee agronomy, whilst in Burundi, 80% of all export income is derived from coffee. It is big business! What is more, the global coffee market is, despite the pandemic, snowballing, with consumption from emerging BRIC economies & repertoire growth here in Europe & the US expected to drive production to 160m bags pa, that’s a staggering 10 billion kilos! For many consumers, it has been the rise of the High Street Gourmet Cafe Bar chain. These bars introduced & created great coffee & fuelled their addiction to daily caffeine hit & at the heart of it all is the espresso, each requiring 42 beautiful beans to make a perfect caffeine moment!

Espresso coffee was ‘created’ as a brewing process only some 80 years ago by equipment pioneers such as Dr Illy, who discovered the optimal brewing process to extract the aromatic oils & essences that make up an espresso. ‘
Charcute stems from the French noun ‘Charcuter’ which means ‘to butcher’. However, charcuterie describes prepared pork of all sorts: bacon, ham, salami, sausage, terrines, pate, confit and more. ‘Char’ means flesh, and ‘cuite’ is an old French word for ‘cooked’. During the fifteenth century, ‘charcutiers’ were not permitted to sell uncooked pork due to the apparent dangers of raw meat and this is how meat started to be salted and cured in this specific way on a commercial level. Imported, dry-cured meats like Prosciutto and Serrano ham have been long-time servants on any meat platter. But British-made charcuterie is now popping up frequently in food markets, restaurant menus and at home.

Like all good stories it started down the pub. The Junction Tavern beer garden, in NW5, to be precise. It was there, on one of their many lost evenings, that founders, George Rice and Johnny Bradshaw, found themselves pondering a serious question. What would be the perfect snack to accompany their recently ordered pint of real ale and glass of red Bordeaux? It had to be a delicious taste complement to these fine beverages; but it also had to provide proper sustenance to power the boys through to their late dinner. Several packets of crisps, nuts and scratchings later, the boys agreed that it had to be something more serious. They hit on the concept of a “Posh Peperami.” It could only be made with top quality British charcuterie, they decided. This would be real food – satisfying, full of flavour and better for you than any existing pub snack. The very next day, Serious Pig was born.

The impact of the pandemic on the global supply chain network continues to present major challenges to all industry sectors, and none more so than hospitality (as highlighted in our recent interview with Alliance Wine’s Ned Llewellyn - Scan the code below to read this interview). But Climate Change is the main protagonist, with extreme weather events causing everything from severe spring frosts and hail, heavy rain and flash flooding, and drought conditions and wildfires. Vineyards are particularly susceptible to all of these issues, and the past two vintages, in particular, 2020 and 2021, have made history as some of the worst affected. So what steps can we take to make our wine lists fit for 2022 and beyond, and how can we minimise the impact of unavoidable price increases on many of the most popular wines?

Rationalising your wine list but increasing the number of wines you offer by the glass is a good way to increase the size of your offering for customers who are drinking less but drinking better, as well as minimising your exposure to out of stocks. It also ties up less money in stock too. If you’re going to increase your ‘by the glass’ range and you haven’t already done so, consider a wine preservation system like ‘Le Verre de Vin’, or if this is too expensive, a Coravin works well for mid to higher-priced wines where a Vacuvin pump and stoppers can manage the faster turnover wines.

There are some useful pointers worth considering here. A poll carried out last year by digital trade magazine ‘The Drinks Business’ revealed that the most important factor on a wine list was the geographical regions represented. Food and wine pairing information and price points were also featured prominently. Listing your wines by geographical region means that you can still offer a representation from New Zealand, for example, but it doesn’t have to be Sauvignon Blanc. Having price points that are carefully staggered, even if the list is more concise, gives customers the opportunity to trade up more easily than having wider price gaps. It may sound obvious, but also try to avoid
listing the wines in price ascending order. This will encourage customers to explore the full extent of your offering. Now I’ve never been a fan of the term ‘house wine/s’. Not only does it remind me of pub and Chinese restaurant wine lists from the 1980s and 90s, but 99 times out of 100 they represent the cheapest level on the wine list. Given it’s an easy default for your less knowledgeable customers to make…well you can see what I’m getting at, can’t you. If you’re going to insist on using the ‘house wine’ term, why not choose a wine that you and your staff are passionate about or one that best pairs with your signature dishes. That way, you can add credibility as well as make an easy upsell for the less decisive punters.

I mentioned there are a number of popular wines that are facing a severe shortage and big price hikes this year. Probably the highest profile is kiwi Sauvignon Blanc which has seen a 30% reduction in vintage 2021 due to severe frost damage but France, Italy and Spain have also been widely affected too, France especially so. Popular French appellations like Picpoul de Pinet, Champagne, Chablis and Beaujolais were badly affected although Champagne will be able to mitigate against this to some degree by using a higher proportion of reserve wines. Additional pressure in the form of steadily growing global demand, especially now the grip of the pandemic is weakening, is further exacerbating the issue pushing prices up, even on wines like Prosecco and north Italian Pinot Grigio that didn’t suffer at the hands of nature. 38

Let’s face it wine labels are a minefield when it comes to trying to figure out what’s inside the bottle, right? Especially if it’s from a non-English speaking country, this might go some way towards explaining why consumers generally stick with what they know, playing it safe with recognisable varietally-labelled wines. Just like other alcoholic drinks, wines legally have to include certain key pieces of information on their front labels (and back labels if applicable). We’re going to help you to decipher labels by identifying five key elements that will tell you as much as you need to know.

#1 ORIGIN
WHERE DOES THE WINE COME FROM?
W
hile the country of origin should be pretty obvious, the wine also needs to show some kind of geographical reference that relates to where the grapes are actually grown (known as an appellation). On top of this, there may be a further inference to the quality level through that country’s own appellation system. Most wine-producing countries have created their own appellation system with strict laws that regulate their usage. The laws are there to protect the integrity of that regional product, a bit like those in place for foods like Cornish pasties, Parma Ham & Comté cheese. The laws don’t just cover geography, they can also include factors like maximum grape yield, type of grape variety used, minimum alcohol levels, period of ageing & production methods. Countries with the most established & rigorous appellation systems are primarily European. France, Italy, Spain & Germany are perhaps the better known but Hungary & Portugal are in fact two of the oldest too. Most New World countries have adopted their own system, all of which are pretty selfexplanatory.

At the most basic generic level, you’ll start with a multiregional blend, which might for example be labelled Vin de France or Vino de España (the ‘country wine’ references replaced the old ‘table wine’ ones around 2010). At the other end of the scale, it will give more specific geographical information like the sub-region as well as the single site/vineyard from where the fruit is grown. Examples are Chablis Grand Cru “Les Preuses” (Chablis being the subregion & “Les Preuses” the Grand Cru rated single vineyard), or Henschke “Hill of Grace”, Eden Valley Shiraz (Eden Valley being the sub-region & “Hill of Grace” the single site). Germany has just announced earlier this year that it will be changing its wine laws for the first time since 1971 to bring them more in line with the rest of Europe. With more of a focus on geography & terroir to indicate quality as opposed to sweetness levels of the wines, this will be welcomed not only by consumers but also the German producers too. The sweeter categories ranging from Kabinett up to Trockenbeerenauslese will still continue when the new rules come into effect in 2026.

WHO MADE THE WINE?
very label has to declare who is behind the creation of that wine, whether it’s an individual artisan, an estate, a cooperative or a multi-national conglomerate.
Some wines just have brand names like Jacob’s Creek that are owned by multi-national companies. The company’s details can normally be found in small print on the back label.
This is generally fairly self-explanatory as the producer is prominently displayed on the front label, i.e. Eben Sadie (artisan), Château Petrus (estate), Produttori del Barbaresco (co-op), but it can be a little more complicated when you delve into Champagne for example.
Quality can vary greatly from producer to producer, & it doesn’t always hold true that all artisans make better wines than, say, co-operatives, even if they’re more expensive, so it’s always worth doing your own research looking at reviews & critic ratings as a guide.

WHEN WAS THE WINE MADE?
#3 VINTAGE I
f the label states a year on it, that’s the year it was harvested & made into wine. This is always a good indicator of how fresh the wine is. For example, if it’s a relatively low-priced wine, especially a dry white wine, you would hope that the vintage shown is no more than two years older than the current year otherwise chances are it will be tired & lacking fruit. Some better quality white wines like cool-climate Chardonnays, as well as many reds actually improve with a little bottle age. Fortified wines like Vintage Port & top red & white wines can continue improving for up to 50 years or more so
again it’s worth doing some research before writing off older wines. Champagne & other sparkling wines, most sherries & very cheap table wines will often be a blend of different vintages & will either show no year at all or in the case of sparkling wines, it will state NV (Non-Vintage). Some houses are steering away from the NV term & referring to their wines as a ‘multi-vintage’ blend, which is essentially what they are.
#4 GRAPES T
he grape variety/varieties used to make a wine will be prominently displayed on the label, normally on the front but occasionally on the back label, unless it’s a generic entrylevel wine, that’s forbidden from stating any variety, or it’s a traditional European wine like a Bordeaux, Rioja or Chianti. These famous appellations work on the idea that the appellation laws in that region dictate which grape varieties are permitted so that in itself should be enough reassurance to the consumer. A bit arrogant really but that stance is softening. Most producers who have their own website tend to have technical notes or downloadable tech sheets which give you all the information you need about what went into the wine & how it’s made.
WHAT IS THE WINE MADE FROM? France & Germany are pretty straightforward to understand once you’ve grasped the basics for each region, for example, White Burgundy is Chardonnay & Red Burgundy is Pinot Noir. Italy, Spain & Portugal have mostly indigenous varieties, many of which are extremely localised so generally you’ll find more of a regional style than a particular flavour profile. As a broad example, you’ll find light, spritzy whites from northern coastal Portugal (Vinho Verde) & full-bodied reds from the southern inland region of Alentejo.
#5 ALCOHOL T
he final element that has to be legally shown on the label is the alcoholic strength. In the UK, wines have to be no less than 8% abv, unless it’s permitted under specific PDO (Protected Designation of Origin) rules. Wines that fall below this level & outside PDO rules have to be labelled as a ‘wine based drink’. In the UK, it’s perhaps easier to categorise wines according to their corresponding duty bands. If the wine is sparkling & falls between 5.5% - 8.5% abv (like a Moscato d’Asti), duty is applied at a lower rate than a sparkling wine that falls between 8.5%
HOW STRONG IS THE WINE?
- 15% (say a Cava). The other likelihood with a lower alcoholic sparkler is that it’s going to be sweet because the fermentation has been cut short part-way through the conversion process. Still wines can range between 5.5% - 15%. These are generally table wines although in practise, the majority of dry wines will be at least 11% abv. Some German dessert wines can naturally be as low as 7% abv & fino sherries sit around 15%. Wines over 15% & up to a maximum of 22% will generally be fortified or red wines coming from very hot climates. Some Californian Zinfandels & Australian Shiraz have been known to reach 16.5%+ abv!

Our commercial releases (R#’s) are the result of this explorative R&D. When we have a beer that we feel is too good to not share, it makes it onto our larger 100 Hectolitre kit and eventually out into the public domain. Since the spring of 2021, this takes place in our new home at Garden in Zagreb. Working alongside the team over there has brought a new level of possibility and opened up the spectrum of what we can produce. It’s nice to know that we actually don’t know what’s next out of the tanks. It’s how it all started and it feels like we are back in our flow, right where we want to be. uinness is the reigning the king of stout in the UK. It is easily the most iconic example of a drink defining a nation. It’s always a lovely sight watching a pint getting poured. The way the white, creamy head mixes with the dark stout beneath, watching the bubbles rise to the top. Ahh, perfect. But even with global dominance & all that theatre surrounding Guinness, the stout category is huge. There are some damn tasty & great value alternatives to this “king of stout”, or as the locals like to call it the “black stuff”. Not only will these alternative stand to make you more money but they give your customers a great tasting option.
STOUTS & PORTERS What’s the difference?
S
touts & porters are ultimately the same. They are top-fermented beers. The name porter was first used in 1721 to describe a dark brown beer that had been made with roasted malts. Because of the huge popularity of porters, brewers made them in a variety of strengths. The stronger beers, typically 7% or 8% alcohol by volume (ABV), were called “stout porters”, so the history & development of stout & porter are intertwined, & the term stout has become firmly associated with dark beer, rather than just strong beer. What are milk stouts? The origin of the milk stout can be traced back to early 20th century England, an outgrowth of the increased popularity of dark ales like a porter, & later strong (or “stout”) porters. Milk, “sweet,” or “cream” stouts were generally beers with low amounts of alcohol but high amounts of residual sugar, Residual sugars are those left in a beer after the yeast has completed its fermentation. Because lactose is unfermentable by brewer’s yeast, lactose added to a beer makes the final product sweeter, fuller, & creamier.

Our Staffordshire brewery was founded in Burslem, Stoke on Trent in 1985 with one goal - to produce great beer! When we started back in the eighties, we brewed one beer – Titanic Premium. At the time, there were very few small brewers & it felt like we were sailing into uncharted waters. We shouldn’t have worried, people loved the easy drinking, quaffable flavour of Premium. We now call it Anchor & it remains a favourite.
