Salt will be launched this summer. Based at Yafford, Wight Salt will use seawater taken from the sea around Ventnor. JE SS JO L L I F FE Check out our amazing artwork on page 60 from local artist Jess Jolliffe. Jess hails from the Isle of Wight and recently graduated from Arts University Bournemouth. Her illustrations are driven by a passion for nature, animals and character design. In this illustration, Jess was inspired by the Isle of Wight’s fun festival season, and the elegance of the Island’s local distilleries, wines and spirits. A love of cocktails and gin was influential to the design and the consideration of the flavours that emerge when combining spirits and fruity ingredients. Drawing the rough design first with fine liner pen and black ink, Jess then scans her illustration into either photoshop or illustrator and traces her design using a drawing tablet she then adds adding more detail and intricately rearranges the composition as she draws. And where better to spend an afternoon enjoying a relaxing cream tea? There are few places on the Isle of Wight, let alone England, that can boast such a tranquil and picturesque location for a tea stop with friends and family. With an extended tea garden this year, even more visitors can experience the attractions delightful cream tea offer, famously served now for the last two centuries. You can’t visit an island and not take advantage of the waters that surround it, especially when they are filled with some of the tastiest seafood around. There’s hours of relaxation and entertainment for those keen to take a closer look at what lies beneath. If it’s adventure that you are after, then a fishing trip from one of the Island’s charter companies could be right up your street (or make that stream). Black Rock Charters and Fishing are based out of Yarmouth and offer fishing trips for you, your family and even the dog! Climb on board their boat Alaminta, for a half day, full day or a speciality mackerel fishing

day (available from May to September). The Skipper, Rob, is a qualified chef putting him in an excellent position to advise how best to cook your catch. Over in Bembridge, Cachalot Charters is run by husband and wife team Chris and Priscilla. Ideal for the experienced right through to the first-timer, head out on their 34ft Starfish charter boat, the Robert Mark, for short or long deep-sea fishing trips. In addition to the mackerel season during the summer, they also offer cod fishing in the winter months. Freshwater fishing is a popular pastime on the Island with a number of ponds, streams and reservoirs boasting trout, perch and carp to name but a few. There are also several well-stocked lakes around the Island, perfect for an

afternoons friendly competition. Try Nettlecombe Farm in Whitwell with its three lakes; Somerton Reservoir in Cowes; Rookley Country Park for coarse and carp fishing lakes. Visit Island Fish Farm, a purpose built angling complex and trout farm offering fishing on four separate waters between the picturesque villages of Shorwell and Brighstone. If you fancy something a bit more ad hoc, then make sure that you bring a line and

a crabbing bucket, as there are tonnes of spots to enjoy- in fact pretty much any beach works when it is low tide. Try local favourites such as Newtown Creek, Bembridge Ledge, Freshwater Bay and off the sea wall in Cowes. It’s great oldfashioned seaside fun for all the family. It doesn’t even matter if you throw them back in at the end or don’t catch anything – the thrill is in the chase! If catching dinner yourself doesn’t float your boat, then take a trip to one of the well-stocked fishmongers for a taste of the deep. Ventnor Haven Fishery is run by the Blake family who have fished these waters for decades. Running day boats off the bay, the fish you buy here are some of the freshest you will taste, having been caught and landed that morning. Renowned for their quality crab and lobster, the Haven serves up a whole selection that varies with the seasons. Their love of seafood is so great that they have created crab on chips, affectionately known as the “Island’s national dish”. First put on the menu in 2010 when it was enjoyed by the Hairy Bikers and last

year by none other than Mary Berry on her visit to the Island. Order from the Haven window and then enjoy whilst sat on the sea wall looking out across the English Channel.

Make the most of the seafood restaurants and cafés whilst you are here – there are plenty to choose from! The Best Dressed Crab in Bembridge is a floating café on board the pontoon, used by Bembridge’s fishing fleet. Owner Graham has fished all his life, now preferring to cook it instead. The Seaview Hotel has retained its coveted ‘Bib Gourmand’ award for the second year in a row for providing excellent dining at value for money prices. The focus here is on fish and shellfish and with dishes such as Bembridge crab macaroni or brill fillet

No seafood pilgrimage is complete without a trip to Steephill Cove. A hidden cove, that is only accessible by foot (or even better – boat) and is a bit of a local haunt with Islanders for all things seafood. Sit down on the sands and try the local crab pasties from The Crab Shed, made with crab caught fresh every morning from the waters right in front of your table. Visit The Beach Shack for their legendary Thai Crab Soup, or for that special occasion you must try The Boathouse Restaurant. With only 30 covers, experience intimate dining on their terrace overlooking the sea or book yourself onto the Captain’s Table; situated in a fisherman’s hut right by the beach – the perfect setting for a seafood platter and fresh crusty bread. In our opinion there is nowhere better to enjoy fishing and seafood than the Isle of Wight. Explore the coastline, catch a crab and eat some of the freshest seafood around – dive in!

Over in Bembridge, Shooting Star from Captain Stan’s Fishmonger, a 26ft Cygnus Cyclone, is busy catching a variety of fish including bass, bream, plaice and dover sole. Crab and lobster is caught off an area known as Bembridge Ledge, sat very close to shore. Buy the catch from their shop on Bembridge High Street, or treat yourself to one of their frozen meals made with local fish, a perfect meal for a lazy evening. A company with a truly British history, Pink’s was a family business when Fiona’s great grandfather Thomas took the helm in the late 1880s. The original company grew to the point where it was the supplier of plum jam to troops in Pinks half page Taste the Great War and was

then sold in the 1920s. Raised with this history, owner Fiona wanted to revive the brand and Pink’s was reborn. The range includes jellies, chutneys, pestos and peanut butters. All the products are vegetarian and made in small batches.

Tomatoes have been grown in the Arreton Valley for over 30 years, where the Island’s unique maritime climate provides the ideal growing conditions. The Tomato Stall was founded in 2007, taking freshly picked tomatoes to a handful of farmers’ markets within London. These days Isle of Wight Tomatoes are sold in farm shops and delis around the UK as well as around 25 farmers’ markets throughout London, Bath and Hampshire every weekend. They are also on the menu at some of the country’s best restaurants, with chefs including Gordon Ramsay, James Martin and Mark Hix among their many fans. The Tomato Stall are experts in both organic and non-organic tomatoes, and utilise a number of sustainable farming methods throughout the nursery including biological pest control, rainwater harvesting and biodegradable growing systems. Up to 200 seed varieties are trialled every year in search of the best flavours, and every tomato is allowed to fully ripen on the vine before being picked by hand at their peak of flavour, ensuring

the best taste experience and most beautiful colours. The Tomato Stall’s on site development kitchen is responsible for capturing tomatoes at their very best and creating innovative recipes, all hand made in small batches using the finest Isle of Wight tomatoes and completely additive free. For their delicious range of roasted tomatoes a specially designed oven is used to slowly dry vine ripened tomatoes, intensifying their natural flavour and resulting in soft, tender fruits drenched in extra virgin olive oil. Available in warming Chilli and Fennel, classic garlic and Basil and moreish Oak Smoked they are perfect for antipasti, salads, cooking or just to snack. We’ve used lamb for these Greek kebabs with tzatziki, but it’s just as delicious with pork (try Farmer Jacks butchery) or halloumi (try Briddlesford Lodge Farm).

MARINADE: • 2 garlic cloves, crushed (try The Garlic Farm) • 1 tbsp olive oil • juice of ½ lemon • 2 tsp dried oregano • 1 tsp ground cumin • ½ tsp smoked paprika • 1 fresh red chilli, de-seeded & finely chopped (try House of Chilli) • 500g lamb leg, diced small (try Mottistone Farm Shop) TZATZIKI: • 2 garlic cloves, crushed • extra virgin olive oil • juice of ¼ lemon • 250g Greek yoghurt (try Calbourne Classics) • ½ cucumber • small bunch of fresh mint TO SERVE: • flatbreads & cherry tomatoes (try The Tomato Stall)

Mix all the ingredients for the marinade in a large bowl with a generous crack of salt. Add the lamb and mix well so it is completely covered in the marinade. Cover and refrigerate for at least 2 hours. mix

Meanwhile, make the tzatziki. In a serving bowl add the crushed garlic, 2 teaspoons of extra virgin olive oil and the lemon juice. Mix with a good crack of salt and pepper, then add the Greek yoghurt and stir through. Cut the cucumber lengthways, remove the soft core with a teaspoon and discard. Grate the cucumber into the yoghurt and mix thoroughly. Set aside. Skewer the marinated lamb and cook under a hot grill or on a barbecue, for about 16 minutes turning once, until done to your liking. Adjust the cooking times accordingly if using pork or halloumi. thread

While the lamb is cooking, finely chop the mint leaves and stir into the tzatziki. Check the seasoning, then drizzle a little extra virgin olive oil over the top. Serve with warmed flatbreads and cherry tomatoes.

Hop, Hop, Hooray

The Island has a long history of brewing and in the 1800s it was the 5th largest hops producing county in the UK, supplying the naval port of Portsmouth.

Fast-forward to 2009 and Ventnor Botanic Garden has not only resurrected this tradition, it has the only fully established productive hop yard on the Island. A stretch of land running along the coastal path was developed with the help of the

The hops are picked by hand on a single day as the botanists keep an hourly vigil over the hop rows in late August. On the chosen day, a call goes out to the pickers (usually a group of volunteers and the odd ale enthusiast). The hops are then dried and packaged before making their way to Yates Brewery to be brewed to perfection, as the VBG Original Botanic Ale.

the Garden has now produced a limited edition Pale Ale. Goddards Brewery have produced a strong ale, charging VBG’s green handpicked Sovereign Hops in, alongside dried Cascade and Admiral hops in the style of the new American craft beers. Matt is back with some more top tips for your summer fruit and veg patch… Without trying to dramatise the humble vegetable plot too much, summer growing season is the rollercoaster ride of the horticultural calendar. The early summer months are still focussed on planting, nurturing, watering and feeding. It all changes with the later summer months when it is all about cropping produce, re-sowing, cropping, re-planting, cropping, weeding, watering and… did we mention cropping?

This is the rewarding season for all of the years efforts. It’s the moment when you find out if the gambles you made have paid off. Whether you have a grow bag or a whole field, have fun and enjoy it!

In the early part of the summer many plants will still be establishing and some not quite ready to yield. Those plants that have started to produce will be a welcome sight and a great addition to the dinner table. Asparagus tips will have been enjoyed and the foliage is now left to grow to replenish the plant, or ‘crown’, after its busy cropping season. Climbing plants, such as runner beans will continue to need to be trained up their supports and berry fruits will need to be tied against walls to keep a bit of order.

Once climbers have reached your desired height they may be pruned at that point. This restricts their growth and allows the plant to concentrate on the existing yield. Continue to water regularly according to weather conditions, ideally using stored rainwater, to ensure that fruit and vegetables don’t become drought stressed, as this can seriously affect yields. As the growing season is in full swing, it is worth checking ties on fruit trees and any others you may have. The ties need adjusting from time to time to accommodate for the tree’s additional girth as it grows. Keep an eye out for pests at this time as an infestation, in particular greenfly and blackfly, can prove disastrous. Likewise,

Regularly continue to crop the multitude of varieties that are ready to harvest. The slower maturing produce such as onions, leeks and cabbages are ready now. As they are gathered, gaps will start appearing in your plot which will allow you some space to pop in some autumn/ winter/spring vegetables. Regarding fruit maintenance, blackcurrant bushes should be pruned. Fruited blackberry, loganberry and tayberry stems should also be cut back and this year’s young stems (next years fruiting stems) tied against their supports. Fruited summer raspberry canes should be pruned to the ground, if this has not already been done, leaving the young canes for next years crop. Strawberry runners can be dug up and replanted elsewhere or potted-on to use at a later date. This month sees the start of the ripening of orchard fruit or ‘top fruit’. There are lots of varieties of these trees and many picking times to boot. With late summer fruiters through to spring dessert apples that should keep until March under the right conditions. It’s always worth trying an apple or pear off the tree to check ripeness, but after testing a dozen apples, it’s worth taking a break!

Things should be hotting up by now and cucumbers, courgettes, chillies and tomatoes under glass/plastic are in full production. Outside, carrots, beetroots (generally root crops) and salads ideally should be sown in succession. This is where you sow in intervals with weeks in between and therefore avoids a ‘glut’ of any one variety of produce at one time.

In days gone by, the idea of eating in a pub was pretty remote... These days we love to eat in pubs, but some still place their emphasis firmly on the bar. Parents would dish out crisps and pop to kids, whilst they sat in the car and waited for mum and dad to emerge, an hour or so later.

Run by Dan Burgess and his Sicilian wife Viviana, the coffee bar was originally setup as a flagship outlet for their wholesale business, The I.O.W Espresso Co, which started out over 15 years ago.
