Welcome to the 2018 spring edition of Taste of the Wight. Finally, the warmer weather is in sight and the blossom is on the trees. Local produce is available in abundance at this time of year, with many pubs and restaurants making the most of the Island’s own specialties on the menus. Spring is a great time for getting out with the family for a walk, especially the sort of walk that ends with a pub lunch! Check out our guide to spring walks on page 64 and our top picks of doggie-friendly places on page 128, so no one is left behind. As ever, you will find the most comprehensive guide to places to eat, whether it is beach-side cafés, relaxed bistros, gastro-pubs or a special occasion venue, there is something to suit all tastes. BIG BIRTHDAYS A PLENTY There’s big birthdays a plenty this year as some of the Island’s well known foodie businesses celebrate some pretty big milestones. Coming in at a sprightly 20 years is Character Inns. The first pub was The Bugle, Yarmouth. There are now eight pubs across the Island, the newest addition being The Crab & Lobster in Bembridge. Slightly older at 25, Goddards Brewery are celebrating this anniversary all year. 25 years equates to 10,207,013 pints! But, the biggest birthday of the year goes to The Spyglass Inn which turned 30 this year. The most iconic pub on the Island, make sure you say happy birthday when you pop in.

LEGENDARY SHA NKLIN PIE Already known for its homemade ‘Isle of Wight Scones’, Vernon Cottage have now put the legendary ‘Old Shanklin Pie’ – packed with slowly roasted lamb – firmly on the Isle of Wight map for all to enjoy, with a special edition of an ‘Island-Shaped Old Shanklin Pie’. MARMALADE Pink’s have released the product that symbolises its heritage with a limited run of ‘Original Seville Marmalade’. Made with fresh Seville oranges in January, it differs from mass produced marmalade which typically uses only tinned pulp and rind, whereas Pink’s uses the whole fruit. The name is a nod back to the days when Fiona (who owns Pink’s) great, great grandfather started the business in the 1890s. Today, the label features oranges with wings, depicting the Seville’s flying into London for Pink’s marmalade, which was on an original advertising poster from 1890. I W CH EESE CO ’ S N E W LOOK ! Have you seen the Isle of Wight Cheese Co’s new labels? Looking super-smart, you can still expect the same great taste and quality that goes into every batch. Richard, who makes the cheese, took over the running of the dairy farm late last year and he and the team have been working hard ever since.

F R E E - F R O M ? NO PROB L EM A brand new app has been launched on the Island. ‘FreeFromWight’ is a handy guide for people looking for eateries and shops which cater for vegetarian, gluten-free, dairy-free and vegan-friendly dining. 100 Island restaurants, cafés, bistros, pubs, bars and shops have been listed in the app, helping you to decide where to eat by viewing the menus available. You can’t have missed the rise in places offering great vegetarian and vegan choices, unless you have been living under a rock (be sure to check our Vegan feature on page 38). There are supper clubs from the Vegan Boys taking place throughout the summer and Islander Emily Deary has even written her own vegan cookbook. Aimed at taking the stress and expense out of shopping, with simple, easy (and inexpensive) to make recipes the whole family will enjoy. It’s the extra sunshine we enjoy here on the Isle of Wight that helps The Tomato Stall grow Britain’s best loved tomatoes... Tomatoes have been grown in the Arreton Valley for over 30 years, where the Island’s unique maritime climate provides the ideal growing conditions. The Tomato Stall was founded in 2007 to showcase the speciality organic and conventional tomato varieties grown on the Isle of Wight, and take them direct to farmers’ markets in London. The reception the tomatoes received at the markets was overwhelming and, over time, they have travelled far and wide trading at farmers’ markets all over the south and throughout central London including the now famous Borough Market. They are also on the menu at some of the country’s best restaurants, with chefs including Gordon Ramsay, James Martin and Mark Hix among the many fans. The two head growers based at the Isle of Wight nursery boast a wealth of experience and expertise (50 years combined). Growing a wide range of tomatoes and utilising a number of sustainable farming methods throughout the nursery, including biological pest control, rainwater harvesting and biodegradable growing systems. Up to 200 varieties of tomato are grown and trialled each year, and the search is always on for the next best tomato. Each variety

is rigorously taste tested to ensure the best possible flavour before making its way to the consumer. Encouraged by the fantastic feedback received on the fresh speciality tomatoes, a few years ago The Tomato Stall began to experiment, making a range of unique tomato inspired products. They now produce a wide range of award-winning products that encapsulate the ‘flavour is foremost’ ethos. All the products are completely additive and preservative free, plus suitable for vegan and gluten free diets. For their delicious range of roasted tomatoes a specially designed oven is used to slowly dry vine ripened tomatoes, intensifying their natural flavour and resulting in soft, tender fruits drenched in extra virgin olive oil. Available in warming Chilli and Fennel, classic Garlic and Basil, moreish Oak Smoked and now rich Oak Roasted and Balsamic, they are perfect for antipasti, salads, cooking or just to snack. For a refreshing summer cocktail or healthy soft drink, enjoy their pure tomato juices, available in classic red colour or amazing gold. Our trip takes you clockwise around the Island, looking at the various local producers who specialise in a great tipple or two… On the north side of the Island, in Pondwell on the outskirts of Ryde, you will find the recently opened Isle of Wight Distillery. Home to Rock Sea Vodka and most famously, Mermaid Gin. Here you can watch the stills in action whilst sipping on arguably the best G&T on the Island. isleofwightdistillery.com If it is wine you are after, Rosemary Vineyard in Ashey covers over 30 acres, so they are adept in producing a bottle or two. From fullbodied English red wines, ciders and bottle fermented sparkling wines to liqueurs and country wines, there is something for everyone.

Producing a growing range of beers, you can choose your favourite. For the spring months, try Wight Gold – golden brown, with rounded malt and hops throughout, featuring a well-known Island landmark on its logo. Watch the stills whilst sipping the rewards at The Mermaid.

Brewing on the Isle of Wight for 25 years, Goddards Brewery are the oldest brewers around. Although you can’t actually visit the site, you can certainly sample its beers in many of the Island’s pubs, or pick up a bottle in some of the local supermarkets. We recommend Island Pride, the special edition celebrating IW Pride taking place in July.

For those that love a quirky cocktail, Tipsy Wight provides both the taste and the quirk factor. Flavours are derived mainly from wild fruits and berries that grow on the family farm. You can buy a bottle from many of the Island’s farm shops. Try flavours such as Beech Leaf Vodka or Elderflower Vodka Liqueur, all presented in a decidedly ‘tipsy’ bottle!

Visit Adgestone Vineyard in Brading, one of the oldest commercial wine cellars in England. Enjoy the Grape to Glass experience, an hour long tour followed by a 30 minute wine tasting session, giving you all the knowledge you need to impress your friends at the next social gathering. Tipsy Wight’s Vodkas and Vodka Liqueurs come in an array of flavours and colours. They make a great base for cocktails.

The long-standing dream to own his very own brewery came true for Islander David Yates. Yates Brewery now supply most outlets the length and breadth of the Island. As well as an array of ales, they also produce the Island’s only lager. Isle of Wight Lager, a pale golden refreshing lager brewed using saaz hops with a crisp and light finish, is available by the bottle or on tap at selected bars.

For a soft option, or maybe for the morning after, you can’t beat an Island Roasted coffee. Hand roasted here on the Island, try a delicious cuppa in the companies own café, Caffe Isola. Recently moving to larger premises, the café is a vibrant and buzzing hub for coffee lovers the Island over.

GRACE’S BA K E R Y For over twenty years, the much loved family bakers have been baking six nights a week to serve handmade breads, cakes, sandwiches and savouries to customers and businesses across the Isle of Wight. With cosy tea rooms located in the busy shopping towns of Ryde, Newport and Shanklin, you can enjoy a freshly prepared sandwich and a hot cup of Island Roasted coffee. Grace’s is also conveniently located near ferry terminals in West Cowes and Yarmouth, so you can pop in for a treat before you board.

They have grown from one shop to five and everything is still made daily from scratch using traditional methods. While the Island is sleeping, the bakers are kneading dough and glazing doughnuts.

“We bake 24 hours a day now and deliver to our shops as well as over 50 wholesale customers twice a day. So when you buy any of our products, you can be certain when and where it was made.”

The family business was established in 1997 in the building of a former flour mill on Ryde High Street. In the

beginning it was only the owners owners, Ray Redrup, in the bakehouse and his wife Carole in the shop. Today, the team has grown to 60 members of staff, but family continues to be at the core of the company.

meet the chef Local chefs tell us what tickles their taste buds on the Isle of Wight. Paul Hayward from The Crab & Lobster, Bembridge... What’s the best thing about the Isle of Wight food culture? For us at The Crab & Lobster, it has to be the seafood. As a local ingredient it is very important to us. We are very close to the sea but it is still hard to get hold of as there is such a huge demand.

Your favourite place for a special night out? I do enjoy going to the Character Inns other pubs, especially The Sun, Hulverstone for its stunning views. However, if I want to completely get away from work and for a special occasion, you can’t beat Burrs in Newport. I know the chef there and a lot of local produce is used in its dishes.

What is your favourite local ingredient?

At the moment, it is the seafood we are getting in daily. However, during the winter months, I enjoy working with the game on the Island. There are 140 shoots here so there is always something to work with.

What is your favourite local tipple? Me and my wife are quite new to gin and are really enjoying it, particularly the local Mermaid Gin.

What is the one dish on your menu you keep coming back to? For me, a good steak is always a favourite. A nice piece of rump served with peppercorn sauce, a dressed salad and some triple cooked chips.

For a regal breakfast, head to The Royal Hotel in Ventnor. Open to everyone (you don’t have to spend the night) there is an excellent choice depending on what mood your taste buds are in. Choose from a classic Full English or if you fancy changing things up a bit, try dishes such as eggs Benedict, Loch Duart smoked salmon served with scrambled eggs or smoked haddock served with poached egg and hollandaise sauce. Instantly making a meal look more impressive, a simple flower can add depth and taste to your dish. Edible flowers have been used for years in cooking and food decorating, with some of the earliest recipes tracing back to 3000 BC when the Chinese were the first to experiment. Today, many restaurants are using flowers to enhance dishes with new flavours and unusual textures. One of the leading ‘floral experimenters’ is Ventnor Botanic

Garden where Head Gardener Chris Kidd and edulis chef, Brad Roe make a formidable combination. Ventnor Botanic Garden has an unparalleled collection of plants on the Isle of Wight and regularly utilise these into the restaurant menu. Some flowers are well known in highend cuisine, and are becoming more widely used elsewhere too, such as the flowers of borage, coriander, nasturtium, pansy and fennel. The Garden has an even wider range of plants that can be used, and it is Chris’ job to introduce these to the restaurant. Having worked as a professional

horticulturist for over 30 years, both home and abroad in celebrated botanic gardens, Chris has been here for the last 18 years and is currently the curator. Here, he has developed the collections extensively and tutored the gardeners to have the plant knowledge to recommend flowers that would otherwise be overlooked.

Other places where you will more likely find flowers on your plate than in a vase include The Seaview Hotel, Three Buoys, The Royal and Heima. If you fancy having a go yourself and brightening up your dinner parties, take some advice from local foraging fan, Vanessa Bilton.

“Spring has sprung and hints of summer are in the air, the Island is starting to look and smell beautiful. I myself am new to foraging flowers for the dinner table but with such an abundance all around us, it seems rude not to! The Island is covered with elder trees and if there’s one scent that is the epitome of an English summer, then it has to be the heady, fragrant scent of elderflowers. Their bountiful blossoms can be used for many things from elderflower cordial to elderflower jelly to name but two. One of my absolute favourites and one that carpets the Island in April in great swathes, is wild garlic. Most people use the leaves but the flowers are equally delicious and can be used as a garnish or to replace chives in many recipes. With a little knowledge you can turn an ordinary side salad into a very pretty dinner party addition. A scattering of yellow or orange marigold petals, fire-red nasturtiums or white or lilac borage petals, on top of any crisp lettuce of your choice makes such a pretty and inviting plate of food. I’ve actually seen borage used on lots of occasions due to its fresh cucumber-y flavour. Sprinkled over strawberries or Pavlova, floated on cocktails or frozen in ice cubes and popped into drinks.

There are many, many flowers that are edible, roses, violets, primroses and dandelions to list a few but with any foraging, you must always check before you eat. Happy foraging.”

The restaurant, edulis regularly adds the flowers and buds of Daylilies, Hemerocallis, to dishes. These are brightly coloured and highly tasty, the buds in particular are like an upmarket caper, with a unique fresh peapod flavour and crisp texture. In contrast, in May and June the chefs use the petals of Cistus as edible confetti on dishes. They have developed a layered approach with root vegetables sliced into micro thins and layered with petals to make translucent slices, something totally unique. The Garden has recently introduced evening cuisine sessions with guests travelling the world through Ventnor Botanical Garden to meet the amazing and sometimes strange plants, that will later grace their plate.

The style of growing here is definitely traditional and in keeping with the overall ethos of the Abbey – that you get back what you put in. Head Gardener Matthew Noyce takes this literally with traditional growing methods, nothing is artificially grown, nor are any pesticides used. This results in a far more labour intensive growing plan, but the taste and variety on offer make it all worthwhile. Following the traditional theme, much of the fruit and veg grown here are of a heritage variety, although they look anything but traditional! From purple carrots to the aptly named Turks Turban squash, heritage and legacy vegetables allow a range of flavours to be grown. The tea and farm shop sits within a beautifully maintained garden with the imposing Abbey creating a picture-perfect backdrop. Chefs work closely with the gardening team to create specials showing off what is on offer. Sharer’s boards are a favourite and it’s easy to see why. Using freshly picked salads and produce taken directly from the Abbey’s vegetable plot, with choices of meat, fish and ploughman’s, creating a delicious lunch for two.

Add in some of Quarr’s own chutneys or preserved pears and wash it down with a Quarr Abbey Ale you possibly have the most ‘local’ lunch available on the Island! The range of products in the farm shop that is either grown, made or farmed on the Abbey’s grounds is staggering. Jams and chutneys jostle for space next to apple juice (apples fresh from the orchard) whilst still and sparkling cider go down a treat in the warm summer months. Apples for the cider are exclusively from the abbey’s orchard with more than 120 trees. Spend a day at Quarr Abbey visiting the art gallery, walking the beautiful grounds or just relaxing with a cuppa!

“So, whether you’re a full blown ethical vegan who has chosen to eliminate all animal products from your lifestyle, a plant-based eater, vegetarian or curious flexitarian, there are now more and more places on the Island offering meat, dairy and egg free options.

Living in the West Wight, I’ve never been short of good places to eat. Personal favourites of mine include The Piano Café, The Red Lion and The Hut. All of which have always been happy to accommodate me, even at short notice, showing how easily you can ‘veganise’ a non-vegan dish and turn it into something enjoyable, delicious and even a bit healthier. Off The Rails in Yarmouth now have a few offerings on its menu including the Vegan Burger, Black Garlic Pesto Pasta, and more recently, Smokebox Chilli which I’m still yet to try, but I swear I could almost taste it just by ogling the picture on Instagram.

Just before Christmas, I ventured out to the Wight Mouse Inn in Chale, where a full vegan Christmas menu was on offer. It was a fantastic offering with three courses, each having THREE different dishes to choose from. I found it really difficult to decide what to have as it all looked so tempting. It was great value for money with hearty portions (I had to bring leftovers home in a box) and you could tell the chefs had really gone to an effort to research the ingredients.

The staff were even clued up on which booze was suitable for vegans (yes, a lot of alcoholic drinks are not actually vegan, but that’s another story). It’s not just the pubs and restaurants that have been cottoning on. Being a mother of three, I spend a fair bit of time at Tapnell Farm Park. Ok too much time. Particularly in the café. This is because I know that whilst the kids are getting a good run around, I have the bonus of treating myself to a selection of vegan cakes, flapjacks, energy balls, chocolate bars, Hippeas snacks, dairy

The best thing about Isle of Wight food is seeing and dealing with suppliers who are being recognised not only on the Island, but on a national level. I enjoy being able to showcase and have the pleasure to work with the best of the Island.

Where is your favourite place for a pub lunch? The Taverners, Godshill. I always order from the specials board, of course washed down with the Taverners ale!

What is your favourite local ingredient? I have always loved using goat cheese and curds. When I visited and tried the Green Barn Farm goat cheese, I had to start using it on my menu. It’s great having this local ingredient and being able to create interesting flavour combinations guests may not have tried before.

What is your favourite local tipple? An Espresso Martini using the Isle of Wight Distillery Rock Sea Vodka. I can’t get enough of them, all the ingredients a chef loves...

What is the one dish on your menu you keep coming back to? One of my go-to and most favourite dishes to make and eat is spring lamb, burnt aubergine purée, sweetbreads and goat curd – the combination is unbelievable.

ASP AR A G US ! When: Although it’s available all year round in supermarkets, we are talking about the real locally grown stuff, that is absolutely at its best. Pick it up from local farm shops from April to July. Where: Local farm shops are your best bet to get locally grown produce that has travelled minimal food miles and might have even been picked only that morning. Try Farmer Jacks, Brownriggs, Rosalie’s of Cowes Briddlesford Lodge Farm Shop or The Farm Shop, Bembridge. Look out for tightly furled tips with straight, firm shoots. How:

For an alternative, it’s great grilled. Toss the spears in olive oil, season with salt and place in a hot oven for about 10 minutes. Serve up with a tasty summer roast chicken. If the sun is shining, why not pop them on the barbecue. Do the same as for grilling, just make sure to remove them before they char. Eat out: Many of the Island’s eateries put locally grown asparagus on the menu as soon as the first spears are in. Wash and then remove the ends of larger asparagus. You can boil it, but for the best taste, steaming is where it’s at. Steam for about four minutes then serve with Hollandaise sauce or dipped into a runny egg.

Whatever time of year, you can’t beat a walk that culminates in a good pub lunch. Spring offers mild weather, pretty scenery and if you are lucky, a stint in a sunny pub garden. Matt is back discussing the benefits of buying local on the Isle of Wight and where to enjoy seeing the Island’s produce being grown... “Living on one of the most southernmost parts of the UK does have its benefits. Fresh sea air, great beaches and a fine selection of dinosaur bones falling out of the eroding cliffs are a great start. However, for the budding gardener or the food producer alike, it’s the growing conditions here on the Isle of Wight that are really exceptional.

I tend to a 200 acre estate which is home to a community of Benedictine monks. Quarr Abbey is located on the northern coast of the Island and is unmistakable with its striking architecture. Blessed by its unique setting, the site includes woodlands, pasture, orchards, ornamental areas and a walled garden enclosing the Abbey’s vegetable plot, farm and tea shop. The vegetable plot is where the horticultural magic happens as I have tailored the growing plan around heritage, heirloom and local varieties of plants and fruits. From Shetland Blacks, a small deep purple potato (reputed to have

been rescued from an Armada wreck in the Shetland Isles) to the Chioggia Pink beetroot, a pink and white beetroot from 1840s Italy. There are plenty of interesting varieties of fruit and vegetables available to try from our vegetable plot. I feel hugely passionate about growing great tasting, quality and somewhat unusual produce using sound growing practices. This satisfies a growing market of customers who want to know the provenance of produce and the growing methods of the food that they eat. I’m not surprised of this intrigue, as I too am one of those people.

It’s not just the Isle of Wight’s location that is key to growing great produce, it’s the people too. There are many individuals who put a huge amount of effort and passion in to what they grow and harvest, a real labour of love. I think this is because ultimately, people do recognise that you get out what you put in. Feed and nurture the land in a caring and responsible way and the land will then yield. The Island is home to family run farms, such as Living Larder, who supply popular fruit and vegetable box schemes through to large commercial growers. One such large producer who specialises in its ‘field’ is The Tomato Stall, supplying a mind boggling range of the not-so-humble tomato (as the name suggests!). Other Island growers welcome the public in to their growing spaces including The Garlic Farm, who invite visitors to take a tour around the farm and supply everything garlicky in the on-site shop. Fortunately, the love of food and produce runs deeply on the Island and you are never far from a farmers market, food fayre or food themed festival. Favorites for me and my family are the Garlic Festival, usually around the middle of August, Bembridge Harbour Food Festival in late September and the Farmers Markets in Newport (Fridays) and Ryde (Saturdays).

Tending to the garden requires patience, but the rewards are worth it.

It is always reassuring and refreshing to meet and chat with the growers of your food.

But why is the Isle of Wight such a good place for growing and sourcing produce? Geographically, the Island is very well placed to enjoy more than its fair share of sunshine. With long standing records as being one of the sunniest places in the UK, parts of the Island have been known to bask in over 2000 hours of sunshine per year. The other bonus of its location is that in the summer months, the Island can usually escape seasonal unsettled weather when the winds are in its favour and clouds can be seen gathering over the mainland and not overhead. This all said, there are areas that maintain a micro-climate such as Ventnor Botanic Garden who are able to showcase an amazing subtropical and exotic plant collection.

The Mermaid, home to the Isle of Wight Distillery

One of the early pioneers of this movement is The Garlic Farm. Here, you can enjoy a meal in the restaurant and café, with garlic playing the starring role.

Set on a working dairy farm, Bluebells Café at Briddlesford Lodge Farm is a great place to enjoy produce that has travelled mere metres rather than miles. Whether it is the milk in your latte (choose from skimmed, semi-skimmed or whole); the butter on your crumpet; the cream on your scone or even

Quarr Abbey Tea Room has an abundance of produce growing in its own allotment, much of which is served up on the menu or available to purchase from the farm shop. Freshly laid eggs, honey, jams and chutneys are just some of what you can expect to find. It even has its own ale. Quarr Abbey Ale is made by local brewery Goddards and uses coriander and sweet gale grown in the abbey’s own gardens. As well as eating, drinking at the source is also possible on the Island. Caffe Isola in Newport have recently expanded with a stunning café in a converted church lecture hall. This now allows a space large enough to roast their own Island Roasted Coffee on site, as well as offer barista training to the selfconfessed coffee-geeks. Adgestone Vineyard has an on-site café where you can enjoy a glass of the wine whilst looking over the vineyard towards the sea.

Caffe Isola has long been at the forefront of the Island’s artisan coffee scene...

Run by Dan Burgess and his Sicilian wife Viviana, the coffee bar was originally set up as a flagship outlet for their wholesale business, The I.O.W Espresso Co, which started out over 15 years ago.

The menu reflects the marriage of local produce with Viviana’s Sicilian heritage, offering paninis and traditional hand cut sandwiches, salads and soups and of course plenty of homemade cakes! An enhanced breakfast and kids menus and authentic Italian pasta specials will also be added. The gallery will house a retail area that will showcase some of the Islands great artisan cottage industry producers as well as,

of course, expanding on the company’s coffee equipment and education offerings. Customers will also be able to experience a smaller scale version of the roastery from green coffee preparation, through traditional drum roasting, to packing the finished product.

In 2010 they launched their Island Roasted brand commercially which can now be found all over the Island as well as on the mainland. 2018 has seen expansion into an exciting new site in Upper St James Street, Newport, an area which has become a real hub for local businesses. The former Beavis building, which was originally a church

lecture hall, was perfect for us to expand our artisan café and incorporate even more local retail products, says Dan.

Push the boat out: For gourmet taste and style, a Gallybagger Soufflé is a showstopper but surprisingly easy to make, even in a self-catering kitchen. Gallybagger cheese is unique to the Isle of Wight, with the name coming from the local colloquialism for scarecrow. Similar to cheddar, it is made in such small quantities that it rarely leaves the Island, instead being sold in local shops and showcased in local restaurants. Check out the recipe from the chef at The Dairyman’s Daughter online.

Try baking your Isle of Wight Soft for a local twist on a baked Camembert.

Nice and simple:

Fresh out of the oven – Gallybagger Soufflés.

Suns out, buns out: If you have the use of a barbecue, then make the most of locally reared meat and smother it in some of the delicious sauces and marinades from The Garlic Farm. Baste chicken in the super-tasty barbecue sauce with (you’ve guessed it) garlic and if you are feeling brave, top burgers with the legendary Vampire Slayer Seriously Hot Sauce.

Pimp your pasta with some Pink’s pesto!

For fuss-pots: If you have a fussy one in your party, a simple pesto-pasta might be your saviour. Pink’s do a great range of flavours from classics such as Smoked Tomato or Basil & Garlic, to more adventurous Watercress & Wasabi. Simply stir into cooked pasta. Add some cooked chicken or salmon for a more substantial meal.

For a quick and easy meal, you can’t beat baked Isle of Wight Soft Cheese. Simply score the top of the cheese, pop in some garlic cloves and place some rosemary on top. Put in a preheated oven (180°C) for 15 to 20 minutes or until you can see that the cheese has melted. Dip in sourdough bread or even some potato wedges for a posh version of cheesy chips! Serve up with some roasted tomatoes from The Tomato Stall for a simple, yet deliciously effective meal.

Boil the kettle and leave to cool for one minute, freshly boiled water is too hot and will scorch the coffee.

Whilst we all love picking up a cuppa from our favourite coffee shop, it is nice to be able to create something similar at home now and then. Dan Burgess from Island Roasted artisan coffee and Caffe Isola gives us the lowdown on the perfect brew without leaving the house...

Weigh out and grind your coffee. Use 30g of coffee per 500ml of water as a guide and tweak to personal taste. The grind should be coarse, a bit smaller than instant coffee granules. Freshly ground coffee is always better, as air and moisture start attacking the coffee much quicker once it’s ground.

Tip the ground coffee into the cafetiere and pour the water upto a couple of centimetres above the level of the ground coffee, making sure all the coffee is soaked. Start the stopwatch and leave for 30 seconds, the coffee will “bloom”, this is where it expands as it gives off CO2.

Cafetiere is the simplest extraction method and best suits medium roasted coffees.

Pour in the rest of the water and stir briefly, then leave to infuse for four minutes. Depress the plunger firmly and your coffee is ready to pour. The flavours become more apparent as the coffee cools slightly, particularly if you are using a single origin with a distinct character.
