Sushi for Beginners How to Enjoy Sushi for the First Time So you want to try sushi? Are you new to sushi? Have you ever wanted to try it but were not sure where to start or what you might like? Or tried it and weren’t sure if you liked it? This guide will hopefully offer some information as to a good way to start enjoying sushi if you are a sushi beginner. Many people may say ‘why do I need a guide to try sushi?” This is not intended to be a treatise on the ‘only’ way to start eating sushi, but merely some recommendations for those who are unsure about eating raw fish and may be looking for some direction to ease them into something that they may learn to enjoy. This guide is presented as a list of suggestion to follow or think about when you decide the time is right to try sushi. • Try cooked items first. Until you are comfortable with raw seafood, you may want to try the cooked items available before the raw ones. Not all sushi is raw, which may come as a surprise to some, and you can make an entire meal from cooked food. Eel (unagi and anago) is always served cooked, and usually with a sweet and savory sauce. California rolls also have avocado, cucumber and cooked imitation crab meat (called kamaboko or surimi). You can get grilled squid (ika) or octopus (tako). Shrimp (ebi) is a good place to begin as unless you are ordering ‘sweet shrimp’ (ama ebi) it is always cooked. Clam is often cooked as well. Sushi restaurants also often make rolls out of items that are cooked tempura style (battered and fried). Some of these rolls (maki) are actually quite good. Some fish is ‘cooked’ in an acidic marinade, similar to ceviche, which is popular in many countries. With these items, such as mackerel (saba), the acidity of the marinade cooks the fish instead of heat, and adds a great deal of flavor to the fish as well. While a strongly flavored fish may not be to your liking, check the menu or ask to see what may be available. • Start with what you know. Sushi is not that different from eating any fish, it’s just not cooked. If you were to put it in the context of ‘seafood’ it should be easier on the neophyte palate. If you like a nice piece of grilled salmon, or particularly smoked or cured, then a piece of salmon sushi shouldn’t that much of a reach. The two main differences are taste and texture, and taste-wise raw salmon is not that different. It may not have the smokiness of smoked salmon or the sweetness of the cured variety, but this particular fish is not that different raw or cooked. Texture wise, it is just a little softer, which will not stand out that much against the rice. Do you like calamari? Try the squid (ika). Do you like scallops? Scallop sushi is almost unchanged from the ‘seared’ scallops served in a nice restaurant, which is only seared on the outside and raw on the inside. Shrimp (ebi) is also widely served. While there are many fish you may not have encountered in a restaurant, there will also be plenty that you have, and will be familiar. • Try ‘vegetarian’ sushi. Just to get yourself in the ‘sushi mode’ you might want to try rolls without any meat in them. Kappa Maki (cucumber rolls) are a good place to start. By trying items like these you may become accustomed to the

style of food and then decide if you would like to partake of something a bit more adventurous. • Start with the cut rolls (maki) instead of sushi or sashimi. One of the many ways of serving sushi, the cut roll or hand roll (temaki) is a good way to start off if the thought of eating raw fish might be off-putting. With the rolls, the items are inside and not staring you in the face, which may be a bit more appealing to some. Sashimi may be the last choice for some as being nothing more than a chunk of raw fish, it may not be the best thing to start with if you are hesitant. With a roll, and sushi, the rice will be a nice buffer, so to speak, for you to become more accustomed to the concept of eating fish raw. • Try the items with the least ‘fishy’ intensity. The milder items are a great place to start. Foods such as scallop (hotategai), red snapper (tai), squid (ika), and halibut (ohyo) are particularly mild, and are great for beginners. Tuna (maguro) may look strong due to it’s rich, dark colour, but it is also a very mild fish, and a very common item in sushi restaurants. Putting a hunk of mackerel (saba) in your mouth when you are not expecting something overly fishy can be a deal-breaker for some. The milder fish can still have a great flavor without being ‘fishy.’ The general rule is the less oily, the less fishy, so keep that in mind. • Let the itamae (chef) help you. There is a dining choice called ‘omakase’ which essentially means ‘chef’s choice.’ This means that the itamae will choose what he thinks is particularly good that day and serve you items until you are finished. This is probably not a good choice if you are not sure what you like or definitely want to avoid certain items. Don’t let your friends talk you into this one unless you know what you are getting into, which I explain in my blog entry, omakase sushi. Everyone has different tastes and there is definitely no single way to approach sushi if you are new to it. Always stay at your comfort level and don’t be afraid to not eat something that doesn’t appeal to you. Find your own pace and you never know, sushi may grow on you. As a youth I was told to try something three times before declaring that I didn’t like it. It has worked for me every time and I can’t think of a food that I cannot appreciate. You may not turn into a sushi fiend, but there is a lot to appreciate about sushi and Japanese food in general. Try what you think that you will like and that looks interesting. Chili Blanco

Serves 6 to 8. A unique and delicious twist on the standard white bean chili, this recipe combines

shrimp, scallops and mahi-mahi with sautéed garlic, green and red peppers, jalapeños and white cannellini beans for a hearty, protein packed chili. Chipotle chilies add a smoky depth to the beer- and chicken-based broth without bringing too much spice. Serve over corn chips and garnish with a little cilantro.

Ingredients:

Seafood 2 tablespoons olive oil 2 teaspoons ground cumin 2 teaspoons chili powder 2 medium jalapeños, seeded and finely chopped

4 cloves garlic, finely chopped 1 pound shrimp, peeled, deveined and halved crosswise 1 pound scallops 1/2 pound mahi-mahi fillets, cut into bite-size pieces

Chili Blanco 3 tablespoons olive oil, divided 1 medium yellow onion, chopped 3 stalks celery, chopped 2 leeks, thinly sliced 1 large green bell pepper, cored, seeded and chopped 1 large red bell pepper, cored, seeded and chopped 2 teaspoons ground cumin 2 teaspoons dried oregano

1 tablespoon chopped chipotle chilies in adobo, plus 1 tablespoon adobo from the same can 2 (12-ounce) bottles beer 3 cups chicken broth 3 cups cooked cannellini beans, rinsed and drained 2 teaspoons salt 1/2 cup cilantro, finely chopped Juice of 1 lime

Directions:

For the seafood, put oil, cumin, chili powder, jalapeños, and garlic into a large bowl and whisk to make a marinade. Add shrimp, scallops, and mahi-mahi and toss gently to coat. Cover and refrigerate while you prepare the chili. For the chili, heat 2 tablespoons of the oil in a large stock pot, over medium heat. Add onions, celery, leeks and peppers and cook for 5 minutes. Add cumin, oregano, chipotle chilies and adobo sauce and continue to cook for 2 more minutes. Add beer, broth, beans and salt. Bring to a boil, lower to a simmer and cook for 20 minutes. In a separate saucepan, heat remaining 1 tablespoon oil in a large skillet over medium high heat. Add marinated seafood and cook for approximately 2 minutes, until the mahi-mahi turns opaque. Add seafood and any pan juices to the pot with the chili mixture. Continue cooking for approximately 10 more minutes. Remove from heat. Stir in cilantro and lime juice. Ladle chili into bowls and serve garnished with more cilantro, if you like.

Distortions Muddying the Water By Ted Venker No one has ever accused the federal fisheries management process of being too transparent. It is a Byzantine world of statistics, biology and, the murkiest ingredient of all, politics. It is a process that often yields confounding results.

CCA. To what purpose? To create clarity? No, if that was the case he would have articulated the philosophical differences that caused him to leave the organization in October of 2009.

Some of the most perplexing results ever seen in this arena are on the horizon, as the 2006 reauthorization of the Magnuson-Stevens Act requires NOAA Fisheries to set annual catch limits on every stock of fish under management by Dec. 31, 2011. The agency is a long, long way from having science on all those stocks, meaning that it is preparing to set a slew of catch limits based on what amounts to a SWAG – a scientific wild ass guess.

No one in CCA asked Mr. Geiger to testify on our behalf. Jeff Angers, president of the Center for Coastal Conservation, carried the message for CCA as well as for American Sportfishing Association, Congressional Sportsmen’s Foundation, International Game Fish Association, National Marine Manufacturers Association and The Billfish Foundation.

The House of Representatives Subcommittee on Fisheries, Wildlife, Oceans, and Insular Affairs acknowledged that the situation is ludicrous. It held an oversight hearing this week entitled, “NOAA’s Fishery Science: Is the Lack of Basic Science Costing Jobs?” which is a very telling label for a hearing. Loosely translated, it means that legislators realize that managing public resources by SWAG has real-world ramifications and, to their credit, they attempted to find what most of us involved in fisheries management are seeking: Clarity. A straight answer. Common sense. The Committee asked a diverse group of individuals to share their views and assess the impact of NOAA Fisheries’ distinct lack of science on the vast majority of stocks it manages. It was a unique opportunity. Congress was listening. It was a chance for parties to set the record straight and work toward a solution, and that doesn’t come along very often. But just when you thought the water was clearing, the tide kicked up more mud. During the hearing, an outgoing member of the South Atlantic Fishery Management Council, George Geiger, referred to himself as a leader of Coastal Conservation Association as he attacked HR 2304, the Fishery Science Improvement Act, in his testimony. HR 2304 is a bill sponsored by Rep. Rob Wittman (R-Va.) that, among other provisions, states that if the agency has not assessed a stock of fish in the last five years and there is no indication that overfishing is occurring, the agency is not required to set an annual catch limit. CCA and the other leading marine conservation organizations in the country have thrown their support behind Rep. Wittman’s bill as a common-sense remedy to NOAA Fisheries ongoing science shortcomings. The bill is opposed, however, by most of the environmental community, which insists that a hodgepodge of partial bits of information that perhaps add up to an informed guess is somehow good enough to manage our marine resources. No other wildlife resource management agency operates that way, but damn the consequences and full speed ahead for marine resources, these groups say. Mr. Geiger seems to believe that too, but strangely decided to cloud his affiliations and repeatedly referenced his leadership role in CCA Florida, giving Congress the impression that he was speaking for CCA despite his letter of resignation from CCA almost two years ago. It wasn’t a passing reference – he mentioned it more than a few times in his written testimony and in his oral testimony. But he never mentioned his abrupt departure from

It remains unclear who Mr. Geiger was representing. We know it wasn’t CCA – Jeff Angers was doing that. Was it Pew? His testimony certainly aligns with their opinion on the bill. Has Pew’s credibility dropped so low that it has to rely on someone who is apparently not connected with them, in this case an ex-member of CCA, in order to have its testimony presented? Why can’t Pew represent itself at a hearing? It appears that while anglers are calling for clarity, some other groups are content to play a shell game. Whatever game was being played, it was hard to listen to Mr. Geiger or read his testimony without concluding that he was suggesting that he represented CCA. That kind of obfuscation is similar to the questionable tactics employed by environmental groups that have also attacked HR 2304 in dramatic fashion. The Ocean Conservancy essentially labeled supporters of the bill – which has more than two dozen bipartisan co-sponsors and the support of the 300-member-strong Congressional Sportsmen’s Caucus – as pro-extinction. The Natural Resources Defense Council breathlessly said HR 2304 would “gut the nation’s fisheries law.” A bill that requires a stock assessment to set an annual catch limit for a stock of fish stands to gut the nation’s fisheries law? Gut?! Rhetoric like that muddies every discussion on federal fisheries management. The Subcommittee on Fisheries, Wildlife, Oceans, and Insular Affairs is to be commended for its efforts to seek solutions for NOAA Fisheries’ inability to implement the requirements of the Magnuson-Stevens Act the way Congress envisioned in 2006. Unfortunately, at a time when everyone – Congress, anglers, commercial fishermen, the Councils, NOAA – sees the need to address those problems, there are still some who find it better to muddy the water than seek the truth.

Menhaden Management moves up the food chain ALEXANDRIA, VA – Tangible management of menhaden in the Atlantic moved another step closer to reality this week when the Atlantic States Marine Fisheries Commission (ASMFC) voted to send a series of management options for this critical forage species out to public hearings. Menhaden management has long been a sore point among conservationists as intense commercial harvest of the species in the Chesapeake Bay has added to factors believed to be negatively impacting striped bass and other gamefish all along the East Coast. The primary industrial harvester of Atlantic menhaden, Omega Protein, has never had its harvest effectively restricted and stands as one of the very few commercial fishing operations in the country to successfully avoid management measures that might impact its bottom line. There is also a completely unregulated bait fishery that targets menhaden throughout its East Coast range. Comprised of boats of all sizes, from large mid-water trawlers to small skiffs, it supplies bait to both the commercial and recreational fishery. The quantity of menhaden harvested by that industry has never been comprehensively assessed, but it is undoubtedly significant. In addition, the fishery is believed to be expanding as northeastern lobstermen seek a substitute for the more strictly regulated, Atlantic herring, which is decreasing in abundance. The most current menhaden stock assessment showed the stock was undergoing overfishing and abundance estimates were at the lowest level ever recorded. Current science indicates that the menhaden spawning stock biomass is at about 9 percent of a stock that is not subjected to any fishing pressure. With the vote this week, the ASMFC

has put into play management options that could increase the spawning stock biomass to15 percent or more. “This is the grinding process of management,” said Richen Brame, CCA Atlantic States Fisheries Director. “The science is finally catching up with the problems anglers and conservationists have been talking about for a long time, and now the process can move forward. The fact that these options are going out for public hearing is significant, but it is a slow grind to get where we want to be with this stock. You can bet the harvesters think this is a significant development.” Whatever regulations are ultimately adopted will be interim measures that will likely be in place for three to five years until ecological reference points, generated from a MultiSpecies Virtual Population Analysis can be produced, which will require stock assessment updates on bluefish, striped bass, weakfish and menhaden stock. When that analysis is conducted, it is very possible managers will have a much better idea of the population of menhaden needed to fully serve as the critical forage base for those popular sport fish. “Almost everyone who has spent time fishing in the Chesapeake has seen how the industrial boats, aided by spotter planes, can wipe out whole schools of menhaden, removing them completely from the food chain,” said Frank Kearney, chairman of CCA Virginia’s Government Affairs Committee. “For a long time, anglers have felt powerless to impact the menhaden management process against a very well-connected and financially powerful company. Now that these measures are going out for public hearing, it feels like we have a chance to inject some sanity into this fishery and begin to manage it for the greater good, not just for the good of one company.”
