Caught in a whirlwind For Dave Courteen, entrepreneur and owner of Mosaic Spa and Health Clubs, which operate Fitness Express and Imagine Spas, life was ticking along very nicely, until in 2011, his wife Miranda was diagnosed with breast cancer and their world was turned upside down.

With a young family to look after, relentless school runs, hospital visits, and a national business to manage, the clock suddenly began to tick a lot faster in the Courteen household. Right from the start, Miranda wanted Dave to stay with her during the long and tiring chemotherapy sessions, and so on Christmas Eve 2011, instead of wrapping presents over a glass of wine, they found themselves sitting together on a hospital ward. With time on his hands for once, Dave, who had already experienced
some success with his blogs ‘Time to Split’ and ‘Under Beautiful Skies’, decided to write one about this shared experience. Called ‘The Last Chocolate Brownie’ it became a candid diary of how he watched his beautiful wife battle with cancer; the decisions they faced together, and how they coped as a family. It was an instant success, capturing the imagination of over 20,000 followers and giving a voice to the millions of men who have, and possibly may

have to walk this particularly challenging path. Miranda’s cancer was classified as ‘Grade 3’, meaning that she needed intensive chemotherapy for 3 months. During this time, as well as suffering all the normal side effects of treatment such as hair loss, nausea and tiredness, she also had to undergo a full mastectomy: a huge decision, one that is beautifully captured in some of their final posts. The blog, which poignantly came to an end on Christmas Eve 2012, caught the attention of Breakthrough for Breast Cancer, and with their support has now been published as a book, with proceeds being divided between this and the Woolverstone Wish at Ipswich Hospital. Thankfully, Miranda is now on the road to recovery, although she will not get the official ‘all clear’ until 2016, a date I imagine cannot come soon enough. In the two years
since her diagnosis, Dave and Miranda have watched friends facing the same battle and this inspired them to hold two large fundraisers balls, and collectively they have raised over £20,000. It has been a journey of discovery, one which is not yet over, and the advice Dave can offer is to really value the important things in life – don’t put things off but live for the moment. He is not sure if he believes the old cliché that you need to endure difficulty in order to become stronger, but likens their experience to that of a butterfly struggling to escape its cocoon. Once it has finally emerged it has two choices: to sit on the leaf and complain about the hard times, or to spread its wings and experience flight. Oh, how things change! I used to hate it when my clothes did not match. It was vital that my outfit was co-ordinated and that there was a clear link between shoes, bag, coat and all that lay beneath. Now, I adore it when there is a clash of some sort. Be that in terms of colour, texture or the mix of formality with down right causal. For instance, a satin cocktail dress combined with a leather jacket can effortlessly create the ‘wow’ factor. Well, it seems I am in good company for A/W 2014 as contrast is the way ahead and it is all about being noticed. (When isn’t it?) Introducing contrast can be in terms of pattern, colour, and /or shape. Geometric or leopard patterns with a plain, but beautiful, wool jumper is eye catching and stylish. Clothing shapes are also geometric this season with skirts cut on a slant and sharp, pointed shoes. However, it is also about comfort. With fashion, as with life, there is continuity and change. In terms of continuity, clothes are still designed to enhance and give status to the wearer but the change is the freedom available to us to dress in such a variety of stylish ways but still be comfortable. For me this is where the idea of contrast really is a total winner. By wearing trainers and a wool coat with a delicate dress, I can stand out in the crowd but I am also warm: what’s not to love?

The light room In an empty space, once a muddy backyard that separated a row of old stables from a dilapidated hay barn, children and lifestyle photographer Julia Bostock has built a fabulous new studio. 18

Julia and her husband Ben, who owns the prestigious Atlas Gallery in London, along with their two daughters Molly and Ella, moved to Suffolk just over four years ago. “For years we had been escaping London during the summer months; renting a small cottage on an island in Essex. It was our slice of sanity, and so it wasn’t hard to make the move to the country a permanent one.” Their new home, an imposing rectory just outside Framlingham, could be lifted straight from the pages of a Jane Austen novel, and as I drive through the gates I feel a tug of nostalgia for this bygone era. I half expect a footman in full livery to greet me, but instead an enthusiastic border collie bounds over and leads me to the backdoor. Inside, the house is beautiful, and a cursory glance as we wait for the coffee to brew hints at a wonderful mix
of the old and the new. Curved bay windows are home to deep sofas piled high with striking cushions, and clean lines and simple colours give the old rooms a modern twist – no chintz in sight! But I am here to see the new studio, which Julia uses for her own photo shoots, as well as hiring it out as a location to companies such as The White Company and Elle Decor. Julia is well-known for her natural and creative style of photography, and her clients include big names such as Jigsaw Kids, Monsoon, Debenhams, Vogue Bambini and Harrods. Right from the initial concept for the studio, Julia worked closely with the architects Studio RHE, and the resulting design is such a creative use of what was just a dead space. It is very simple in design, but the clever introduction of contrasting textures, contemporary materials and 19

neutral colours make it the perfect backdrop for photography. “I have always had the desire to build a house, and so in a way this has scratched that itch.” Reclaimed school flooring welcomes you as you step through the glass double doors, and the central space is flooded with light from a huge skylight and a large window that looks out over the walled garden. To the right, where once the horses would have stamped and nickered, there are now two light bright rooms, one of which has been taken over by Molly. Following in her mother’s footsteps she is doing an art foundation course and abandoned canvases are propped up around the walls. An original porthole window lights up the inner hall; in the wet room handmade Spanish tiles add just a pinch of Moroccan flavour, and the hay barn is now more 20
akin to a banqueting hall, its smooth concrete flooring reflecting the white washed timbers. Julia has exciting plans for the future. The studio has inspired her to start thinking about running niche photography courses; inviting acclaimed photographers to teach or give lectures; and to introduce people to the delights of the Suffolk coast, with its expansive skies and magical light. With her knowledge and expertise she has also set up Skyroom, a Suffolk based location company, where you can register your own home or beach hut or abandoned mill as a possible film or photographic location. No wind in the willows Suffolk Wildlife Trust nature reserve at Framlingham Mere is one of their most recognisable sites, and its stunning ancient willow pollards are an integral part of the habitat mosaic of cattle grazed marshes, dykes and river. However, in order to safeguard the willows in the future and their place in the grazing marsh landscape, work is currently being carried out by the trust to extend the life of the trees, and also to ensure that the weight of the branches does not cause them to split irrecoverably.

If, when you think of a big bowl of steaming moules marinière, served with a rich broth and hunks of crusty bread, you imagine yourself sat at a beach cafe in the south of France, then think again, as the Simper family are bringing their mussels to the menu, right here in Suffolk. Simpers of Suffolk is based along a sandy track that bumps its way past the church at Ramsholt. The family, who have farmed this land for over four generations, own 300 acres here and are one of the largest producers of asparagus in the county. Almost three years ago they also started growing and harvesting mussels and oysters along this stretch of the River Deben. It is very much a family affair, with Jonathan and Clare at the helm, their son Harry acting as second mate and Jonathan’s father, Robert on hand to offer his advice and support.
The morning I visit is clear and bright and the river glistens in the autumn sunshine while underfoot there is the crunch of discarded shells. It is a beautiful spot, the view unchanged for centuries and one that the Simper family never tires of. Jonathan explains that the seed mussels are brought in from King’s Lynn and then scattered in the river. During these important first few days the mussels all join together to form beds, which will not be harvested for another two years. During this time they are regularly monitored, and only when they are large enough to sell are they 29

selected by hand and taken up to the farm for purification in the tanks. They are then cleaned and graded, ready to be sent off to an ever increasing number of pubs and restaurants across East Anglia and London. Back in the office, I learn that along with their shellfish, Simpers of Suffolk also supply and deliver their own freshly caught fish, as well as locally sourced wet and frozen fish. It is a busy place, and as Jonathan chats away, the phone is constantly ringing, people come and go, and somehow I manage to end up with a Jack Russell curled up on my lap! At that moment son Harry wanders in, and he and Jonathan digress to talk about the orders, when is the best time to catch herring, and how one of their five boats needs attention. They obviously have an easy working relationship, and Jonathan jokes 30
that Harry must have webbed feet as they can never get him ashore for longer than a few days. It would appear that he not only works out on the fishing boats, but also lives on one of them too, and the Alice & Florrie is regularly spotted moored off the local riverside pubs of an evening. There is more than a hint of a pirate about Harry, and he has clearly inherited his father’s and grandfather’s love of the open water, a calling that will ensure this thriving family business has many more generations to follow. Later that day, with the sun still shining on the river, I tuck into a bowl of Deben mussels at the Ramsholt Arms. Plump and juicy and full of flavour, I raise a glass to the Simper family, grateful that for today at least, the taste of the south of France has come to Suffolk. www.debenshellfish.co.uk T 01394 411025

Put Nicky Lloyd of Sewplush in the same room as a battered old chair and she is drawn to it like a moth to the flame, unable to step away, already mentally dressing it in yards of fine weave wool or lengths of luxurious velvet. “I blame Blue Peter! I was always making things as a child, and this has led to a lifelong addiction to upholstery.” Nicky’s career path to the door of upholsterer and furniture restorer is an interesting one. Back in the 80’s and 90’s she owned and ran the Priory Studios in Kilburn; three separate studios that were hired out for photographic shoots. With her creativity and love of fabric she had great fun dressing the sets and, with friends in the media, was often asked to do styling jobs for films or commercials. She sold the studios in 2000 and then, whilst on a long weekend in the south
of France, and it would seem an even longer lunch, she and her husband Philip decided to buy an old barn there.“The idea was to convert it and then let it out, but we loved it so much we ended up staying for nine years.” During their time out there they bought two more properties, and it was through the process of converted and furnishing these houses that Nicky rediscovered her love of upholstery. Rummaging through the flea markets she would seek out vintage pieces and transform them into modern classics with the clever use of contemporary textiles and contrasting fabrics. 33

After returning to the UK, Nicky and Philip settled in Suffolk, and by this time Nicky knew that she wanted to make a career out of her passion for furniture restoration and soft furnishing. She embarked on a three year course at the Sir John Cass School of Design, and after graduating in 2013 set up her company Sewplush. Her studio is piled high with bolts of fabric collected from all around the world: trimmings made of scarlet feathers and green velvet pom poms hang next to yards of old lace, and shelves are stacked with jars of vintage buttons. “Once a year I visit an area of Paris that has the most amazing collections of linens and fabrics. There are shops bursting with buttons and row upon row of exquisite trimmings. I spend hours just wandering around like a child in a sweetie shop.�
Nicky also has a soft spot for making lampshades, the bigger the better, and she loves to experiment with contrasting textures and fabrics. Some of her designs are real showstoppers and this summer she was honoured to be invited to present her work at the Liberty British Design Day in London. Her reputation for revitalizing classic pieces is spreading fast, and you can now buy her work at the Thorpeness Emporium. Nicky is also happy to help with any soft furnishings, such as cushions and curtains, either made from your own material or from her own eclectic selection. Winter treats Whilst it’s easy to feel inspired by gardening in the summer, winter makes it harder to enjoy gardens as retreats. The cold soil and crisp air have most of us choosing slippers over wellies. By its very nature, winter inclines us to retreat. Yes, summer treats us, but winter re-treats us with skeletal splendour and naked truth. Contemplating the bare beauty of trees and plants, the roots snuggled in their beds, I can’t help but be reminded of the intelligence of nature. How gardens cope in colder climes. I’m left wondering – if gardens could talk, what advice would they give us for the coming months? First they’d tell us that as ‘delicate perennials’ we’re best brought indoors. That if we’re outside, we need to cover ourselves up and stay nourished.
It’s no coincidence that nature helps us out with root vegetables for stews. Next they’d remind us that winter’s a time to hibernate and regenerate. To study the flames of a fire and work out how our own ground will look in the spring – the very essence of New Year’s Resolutions. And as a final show of advice, the garden might have a shoot poke its head through the soil in February thinking it’s time to bud, until a frost nips and the flowers never sense the sun of spring. ‘But where’s the advice in that?’ we’d ask. The garden would simply smile and say we’ve got plenty of time to ponder it – all winter, in fact. 37

It’s nearly bed-time With an autumn that’s stretching towards mid-November, this year, winter’s waking with Christmas on its mind. The festive favourite’s always a tree and there’s nothing merrier than the twinkle of lit branches. If you’re bringing a real tree inside and want one that doesn’t drop, buy a potted Spruce complete with roots that you can use again next year. A cut tree should be treated like cut flowers (just not in your favourite vase). Dehydration makes needles drop, so keep all trees watered and away from heat. Don’t forget to make the most of what’s available in the garden to add natural notes to your decorations.

Once January’s here and the branches of your cut tree are drying out for the woodburner, it’s time to get down to the last of the winter jobs. Make a resolution to do the outdoor repairs you put off last year. Get a dose of crisp air and give your garden furniture a treat, or pressure-hose algae from paths or decking. If we do get some of the white stuff, be sure to knock it off conifers with a broom to stop the branches from splaying. Then settle in for some hibernation and watch out for the signs of spring. Sounding like a character plucked straight from a Tolkien novel, ancient and earthy, Hodmedod is actually the name of a fantastic new enterprise that is putting the British back into beans. Founded in 2012 by Josiah Meldrum, Nick Saltmarsh and William Hudson, Hodmedod was set up to help farmers market longforgotten foods such as black badger peas and fava beans, a crop that has been grown on these soils since the Iron Age, but little eaten here for 400 years. We first came across them at the Aldeburgh Food and Drink Festival a few years ago and recently met up with Josiah to discover more about them and their humble pulses.
were mainly being sold for export. As a meat eating nation we considered them second class citizens, and any beans that did make it onto our toast were being imported from the USA, Turkey and Canada. To Josiah, Nick and William, this seemed nonsense. So, with their combined knowledge and genuine interest in sustainability, they decided to see if they could create a market for British grown peas and beans.
It was whilst working together for the East Anglia Food Link on a project about sustainable food chains that they came to realise that although the UK was still producing a large number of pulses, they
In a bid to gauge public interest they initially left nearly two thousand half kilo bags of split dried fava beans in various shops, complete with a postcard asking for feedback or recipe suggestions. This was 41

the summer of 2012, and it wasn’t long before they were inundated with replies, all positive and all wanting to know where they could buy more. “We didn’t really expect such a wave of support, and so that autumn we shared a stand at a food festival to see what would happen.” Quite a lot it turns out, as they were then featured on BBC2’s Great British Food Revival, and the orders starting flooding in. With this sudden demand they needed to create a brand, and chose the word Hodmedod, an East Anglian dialect word for either hedgehog or snail, depending on which side of the Suffolk/Norfolk border you are born. With the help of talented illustrator Carol Kearns, they designed the most perfect packaging, and by 2013 had launched a range of Hodmedod pulses, including split and whole fava beans, 42
kabuki peas and black badger peas. Then in early 2014 they brought out their first canned products, British Baked Beans, Vaal Dhal and pre-cooked Fava Beans, and most recently added a range of tasty snacks. They are clearly on to something, and, as well as being stocked in Selfridges, Hodmedods are on the menu at Hugh Fearnley Whittingstall’s River Cottage. They have just begun selling Essex-grown quinoa, a super food whose health benefits have been widely praised, and which is set to cause quite a stir. Exciting times indeed, especially in a world where we now understand the health benefits of a balanced diet. And so, with a recipe booklet in every box there really is no excuse not to give them a try, and hopefully they will leave you feeling full of beans! www.hodmedods.co.uk

As we find ourselves in the deepest, darkest days of winter, with only a handful of feast days giving us cause for celebration, this is a time to seek out dishes to console you. Created by chef Mark Hougham of the Castle Inn in Bungay as a way to show case Hodmedod’s deliciously robust fava beans, this recipe is definitely one to warm the soul.
Chicken on split fava bean râgout topped with crème fraiche Ingredients 250g dry split fava beans 450ml chicken stock 2 tbsp soy sauce 4 chicken breasts salt and pepper 1 tbsp olive oil 2 garlic cloves chopped parsley Makes 4 servings Preheat oven to 200c/gas 6

Directions Marinade the chicken breast in the soy sauce with a little pepper for 15 or 20 minutes. Wash and rinse the dry fava beans thoroughly. Place them in a saucepan, pour over the chicken stock and bring to the boil with the chopped garlic. Cook for around 25 or 30 minutes, stirring occasionally, until softened but not breaking up. Tip: If you pre-soak the beans for a few hours first use only 250ml stock and cook for just 10 minutes. Heat the oil in a large pan on a high heat. Sear the chicken for four minutes, on each side. Pour the beans into a casserole dish and put the chicken on top. Cook in the oven for 10 minutes until the chicken is firm to the touch. Season, stir through most of the parsley and serve in a bowl with a dollop of creme fraiche on top. Great with wilted spinach and roasted butternut squash.

Death of a King There is nothing quite like a pair of new wellies. From the moment you first slide them on, you know they will never ever be this clean again, and I am always filled with a desperate urge to run outside and jump up and down in the muddiest puddle I can find. With this in mind, on a bright morning in November we called the Ferrars, loaded up the dogs and assorted pairs of wellies, and headed over to Hoxne to find some proper Saxon mud. Hoxne is supposedly the village where Edmund, the last King of East Anglia met his untimely death. To the delight of the kids it is reported that Edmund, originally a Saxon prince, had a bloody battle with some rather short tempered Danes, and that when he 54
wouldn’t renounce his Christian faith was tied to a tree, pelted with arrows and then had his head cut off! So, after parking at the Village Hall we set off on a 3½ mile circular walk that will take us past St Edmund’s Monument, and there is excited chatter of re-enacting this gory tale. The start of the walk leads you across Goldbrook Bridge, and another legend would have you believe that Edmund took refuge from the Danes here, only to be

betrayed by a newlywed bride. The bridge is thought to be cursed so after hurrying across we then turn right towards the centre of the village, dragging Damian and Martin past the Hoxne Swan where smells of our Sunday roast are already gently wafting on the breeze, and at the top of the green, with the beautifully carved wooden gates of St Peter and St Paul ahead, turn right onto the main road. It’s only a short hop before a small lane to the left, marked Watermill Lane, takes you down towards the tranquil water meadows of the River Waveney, and here we let the dogs off to enjoy a snuffle through the autumn leaves. At the end of the lane we admire the watermill, before taking a path to the right that winds through some old farm buildings and eventually brings you back onto the main road. Turn left here,
and then at the bend take Wittons Lane to the right, where a kissing gate marks the entrance to Brakey Wood. Here the kids run ahead and I get the chance to try out my new wellies and, by the time we reach the open fields and the monument is in sight, they are as reassuringly mud splattered as the next pair. We are unsure if we are allowed to walk across to the monument, and by now the kids have lost interest. They have learnt that Edmund’s head was supposedly found in the woodland ahead, cradled in the lap of a wolf, so with much howling and whooping they charge off again, the dogs in hot pursuit. Eventually we come out at the top of Cross Street and after turning right arrive back at the cars, where after a quick hose down we all pile into the Swan for a well deserved lunch. 55
