Happy feet Professional dancer Vikki-Anne Lee, who is setting up a new School of Performing Arts in Wickham Market, tells us about the positive power of dance. Have you always loved dancing? I went to my first ballet class at the age of three and at seven attended the Masquerade School of Performing Arts. I had different classes every day of the week and competitions at the weekend. I was then accepted at the Northern Ballet School in Manchester, which was very disciplined and quite tough, and then graduated with a Diploma in Performing Arts and a RAD Ballet teaching qualification then toured the world for ten years with a show called ‘Spirit of the Dance’, so yes, you could say I love to dance! 4
What are your dance career highlights? My dance career is all thanks to my mum for taking me to my first ballet class and always believing in me. After college I was accepted by a dance company called Spirit Productions. My first ever performance was in a beautiful Cabaret Hall next door to the Monte Carlo Casino. It had a real feel of old-fashioned Hollywood glamour and Prince Albert of Monaco and various celebrities regularly came in to watch the show. Combining my love for dance and travel has been an amazing experience.

What brought you to Suffolk? My partner Mark. He lived in Suffolk and is director of Norson Construction. He has been wonderfully supportive and is so proud of everything I do. Meeting him was like finding my ‘happily ever after’ at the end of this exciting glitzy and glamorous career. I now love being a country girl and we have just embarked upon a new adventure together; designing and building our dream home in Earl Soham. Why set up a dance school? I want to create a positive environment where children come to be themselves and have fun. I want my classes to be somewhere you can escape the pressures of social media and to express yourself through song and dance in a safe, nonjudging environment. With so much focus on body image, which is a battle I have faced all my life, I want children to feel
happy and confident with who they are as individuals and to know that it is OK to be different; being yourself is what makes you beautiful and special. What does dancing mean to you? I was bullied as a child and dancing allowed me to escape this. Believing in yourself is really hard, especially with the social pressures of today, and dance is a powerful life tool. It helped to instil self-confidence in me at an early age and I want to help as many children as possible to step into their own light and be the best version of themselves that they can possibly be. It changed my life and I haven’t stopped dancing since. The Vikki-Anne School of Performing Arts opens at the Oliver Hayward Playbarn in Wickham Market on the 8th May, with an Open Day on Saturday 5th May from 10.30am to 2.30pm. One delightful discovery that I have made this winter has been the realisation that tights are powerful and that their power is dual. Not only are they warm but also, they are patterned seductively and this enhances the simplest of dresses. Whack your heels on, squeeze into your power tights, slip on the skirt/ dress of your choice and tell me that you are not ready to take on the world – because you will be! On the flip-side though, it has to be said that tights are possibly the most unattractive articles to be seen in on their own; except if you are Sienna Miller starring in ‘Cat on a Hot Tin Roof’. (Worth going to just to see how to put on a pair of tights swiftly, smoothly and still look utterly gorgeous with nothing else on). Despite the recent freezing temperatures, one has to look ahead so I am; but in order to do that I will look back. I cannot remember a time when I was not a fan of the T shirt. When well fitted, it looks cool and sexy with jeans but is also a complete winner for work. For business time, tart it up with a neat silk neck scarf then formalise that with a structured jacket. Simple to wear, buy and maintain, it is most suitable that the uncomplicated T has been recognised as a staple for the coming spring and summer for both work and play. Pair your T shirt with a slick pencil skirt and flirtatious kitten heels or with a pleated skirt and flats or wide legged trousers with sandals. You get my drift; the versatile T!

The neat façade of the Rowe & Williams art gallery in Yoxford only hints at the stylish contemporary space within, where Matthew Rowe and Hilary Williams source and sell a collection of Suffolk art from both the past and the present. Located on Yoxford High Street, amongst the intriguing architecture of its decorative townhouses and glass-fronted shop windows, the gallery was opened by Matthew and Hilary in 2017. Specialising in the sale of modern, contemporary and applied art, they want to establish the gallery as a definitive place in time and space that connects audiences with artwork firmly rooted in East Anglia. The gallery itself is only two rooms, one neatly stacked upon the other and yet on entering you have a sense of a much larger narrative. Against the domestic interior of dark grey tongueand-grove panelling, the paintings are precisely arranged, the light falling on
their exact focal point, ensuring that the work is shown off to maximum effect. There is a sense of calm within and the neutrality of the surroundings is the perfect backdrop to the changing displays that grace the walls. Matthew and Hilary have both worked in the arts at a national level for over twentyfive years and bring with them a wealth of experience that is already gaining the gallery a reputation for showcasing some of Suffolk’s most talented yet slightly forgotten artists as well as a place to come and discover its rising stars. Matthew was involved with the opening of Tate St Ives 19

in Cornwall, which opened in 1993 to highlight the importance of the artistic movement that had grown there in the forties, fifties and sixties. His role as Assistant Curator was to bring together the work of important artists such as Mark Rothko, Barbara Hepworth and Alfred Wallis and to ensure visitors had a real sense of how their art was embedded in the community. At the time, Hilary was working for the Crafts Council and they met when she visited the Tate to borrow some artwork for an exhibition. They then moved to Sussex where they were both involved in award-winning projects; Matthew leading ‘The Towner Project’ – an architecturally stunning new art gallery in Eastbourne – and Hilary with the Ditchling Museum of Art + Craft, where she was director for over ten years. 20
These previous projects shared a common thread; celebrating artists from a specific regional locality and giving their artwork a sense of place. At Rowe & Williams gallery, Matthew and Hilary aim to turn the spotlight on the tradition of art in coastal Suffolk by hosting a series of seasonal exhibitions. On the day I visit they are just coming to the end of their winter show and the ground-floor gallery is given over to the work of Anthony Day, the son of a farmer whose striking gouaches perfectly capture the vast bleak fenlands. Upstairs, they are preparing for their spring exhibition, ‘Blossom & Forests’, which is being held in collaboration with Darsham Nurseries and I am allowed a preview. The main body of work is by the artist Kate Sherman, whose canvases offer uncomplicated glimpses of Suffolk that

have a wonderful sense of movement. They also have a charming painting by Yoxford born artist William Robert Symonds called ‘Apple Blossom in Springtime’ (c.1908) and a large mid-century impressionist canvas by suffragette and painter Amy K. Browning ‘Woman under a Tree’. Matthew and Hilary carefully source their paintings from auctions and private collections and an important part of their work is authenticating the artist’s work. They also frame the paintings in a style that is relevant to the period and write a beautifully descriptive narrative for each piece. As well as bringing a focus on 20th century Suffolk artists that they believe need more recognition, Matthew and Hilary also look to the now and are very interested in showcasing contemporary work. At the top of the stairs, I stop to admire a fabulous
sculpture called ‘Winter Ladder’ by the ceramicist Annie Turner who takes her inspiration from the River Deben. It is beautifully crafted and I am not surprised to learn that her work is held in the prestigious V&A Collection. They are also helping local artists and have recently had the work of Jane Morter, Amanda Edgcombe and Alex Curry accepted by an exclusive new development in West London that needs contemporary pieces for its show flats. Matthew and Hilary have certainly flicked the switch on Suffolk Art and their gallery is an exciting centre for giving such work a sense of belonging. Stepping out for charity along India’s second longest river John Massey, a Suffolk teacher helping deprived children at an Indian ‘slum school’ is to embark on the first recorded hike along the country’s second longest river, the Godavari, some 1,500km in length, to raise funds for the Door Step School and The Brain Tumour Charity. John moved from Framlingham to Mumbai with his family last year and was shocked to discover the lack of open space in the city and hopes his hike will remind children back home to cherish their natural freedom.
The Fram Makers Market is a new monthly makers market about about taking place in interiors town the Framlingham Unitarian Meeting House. The market aims to showcase the creative talents of local, Suffolkbased artists and makers who will be to selling their own products and creations including print, textiles, photography and painting. Did you know that the Suffolk Punch is now critically endangered and is thought to be rarer than the Giant Panda? This hard-hitting fact makes the work of The Suffolk Punch Trust vitally important, so I drive over to find out what more can be done to help. I head for Hollesley and as the skies open and stretch away towards the coast at Shingle Street, I spot the distinctive outline of one of these proud working horses on the horizon. There are nineteen of these gentle giants in residence at the Hollesley Bay Colony Stud and I can’t wait to meet them. There have been Suffolk’s working this land since 1759, when the Barthorp family first introduced them to the estate. The farm later became a Colonial College; a place where gentlemen came to learn farming techniques before heading off to do their bit for ‘God and Country’ and then, at the turn of the 20th century, displaced families helped grow food and supplies for
London’s prisons. In 1938 the estate was bought by the Prison Service, who used the farm for the rehabilitation of young offenders from the neighbouring prison until it was finally sold to the Trust in 2002. The Suffolk Punch is believed to Britain’s oldest native breed and for centuries they have worked the land and lent their weight to the shaping of the Suffolk landscape. As a breed they are ideal for the heavy clay that is found in parts of the county; short and stocky and with none of the showy feather of the Shire or Clydesdales, their upright hoof and short step meant they could pick their way through the mud and 31

had the needed horsepower to pull the plough. It was this strength, coupled with their renowned gentleness and big heart that sadly played a part in their downfall. During WW1 many thousands were commissioned for the war effort, being used to pull the heavy artillery through the deep mud of the battlefields, and sadly few returned to see the wide Suffolk skies ever again. Numbers took another sharp decline with the invention of the tractor and mechanisation of many traditional farming practices and it is believed that there are only three hundred left in the UK. I am met by Julia Vinson, manager of the Visitor Centre, and stud groom Sian Smith, who explain how the Trust is helping to protect this ancient sorrel horse. The Hollesley Bay Colony Stud is part of

an important breeding programme which works closely with studs and private owners across the country to try and increase the gene-pool and to ensure the best matches are found for the brood mares. Their stallion at stud is Besthorpe Achilles, a magnificent champion who has sired many foals, and they have five stateof-the-art foaling units and offer a weaning service, livery for brood mares and training for youngsters who need to be taught the basic handling skills. Visitors are welcome from the end of March to October and it makes for a great family day out as there is a cafÊ, play areas, pets paddock and working demonstrations. As well as helping to raise much-needed funds, this interaction with the horses also helps to raise public awareness and they run a scheme where you can adopt one of the Suffolk’s for a year.

Sian takes me out to meet their latest arrival, a three-week old colt called Colony Eli who is enjoying the spring sunshine with his dam Deeanne. All legs, he is adorable and gambols over for attention, pushing his soft muzzle through the fence so we can scratch his curly baby coat whilst mum keeps a patient eye. As we take a tour of the paddocks, Sian gives me a potted history of every Suffolk we see, reeling off their breeding history, age, likes and dislikes, and it is obvious that she has a real connection with these beautiful horses. There is the matriarch Iris, whose chestnut coat is now flecked with grey, her doe-eyed daughter Zinnia who is due to foal at the end of April; nosey gelding Aspall; cheeky youngster Calypso and camera-shy Easton Bill. At the top end of the farm are the team horses, towering geldings who saunter over
to investigate the newcomer. Up close and personal with 18hh of horse should feel quite intimidating but as Viridor and Wren gently breathe into my hair, I feel only privilege at having made their acquaintance. Back at the yard, Sian shows me the neatly mucked out stables and in the tack room, sets of gleaming brass and black leather harness hang ready for show days and a board crammed with ornately ribboned rosettes plays homage to all this hard work. The trust is a wonderful place to visit and I would encourage you to take a moment to learn more about these gentle giants that are such an important part of Suffolk’s heritage, before it is too late. www.suffolkpuchtrust.org

We meet James Power and Wil Harvey, two artists who share not just a deeply rooted love of the landscape and the architecture that defines Suffolk and its beautiful coastline, but also a passion for the actual process of putting paint to canvas. Although this passion to draw has burned within James and Wil for as long as they can remember, it was not until they had both blazed a trial in differing professional careers that they decided to take up the brush professionally. James spent over thirty years working within the horse racing community, firstly in Henley-onThames and then Newmarket, where he was Stud Groom for the acclaimed Juddemont Stud. “As a boy I was always doodling and making sketches, but it was never thought of as a ‘proper career’ in those days. I grew up surrounded by horses and followed my grandfather into the racing world; a world I loved and my
claim to fame is that I helped to foal and raise the mighty Frankel, the highest-rated racehorse in the world at one time!” James had started to scratch this itch to paint back in the mid-eighties after buying a set of watercolours on an impulse. His detailed knowledge and understanding of the horse shone through in his work and his paintings were soon accepted by ‘The Society of Equestrian Artists’, and in 2011 he hung up his boots and retired from the racing world to concentrate on painting full-time. Wil tells a similar tale. He was never without a pen or pencil, constantly scribbling, and was recognised at school for having natural 37

ability. However, the choices were limited and so Wil pursued a career in medical research, working at Guy’s Hospital, London and then for a large pharmaceutical company. “I still dabbled in art and have always been fascinated with the architectural outlines of industrial buildings and houses. I had my epiphany whilst at a conference in a high-rise office block in America. During the meeting I was looking down at a railway marshalling yard thinking how I would much rather be out there drawing. On a break, I used the restroom and the reflection of the tired, grey face that stared at me from the mirror made the decision for me. I took early retirement and never looked back.” Having left behind successful careers, both James and Wil felt it was a decision they needed to justify and have since dedicated 38
themselves to their art. James now lives in Debenham and is involved with various art groups, runs workshops across the country, including at the Munnings Museum, has exhibited in London and enjoys doing private commissions. Wil specialises in ‘house portraits’ and after moving to Wenhaston in 2002, began teaching art classes and running art workshops for different painting groups. He is also involved in various art groups including the Southwold Art Circle, the Inspired by Becker Art Society and, rather bizarrely, the British Water Tower Appreciation Society. “I know it is a bit quirky, but water towers have a fascinating history and for a painter who is attracted to design they do have a certain beauty. We even got a mention on ‘Have I Got News for You’.”

The two artists met at the annual ‘Inspired by Becker’ exhibition which is held in Wenhaston Church. James felt a natural affinity to Becker’s style of work, which is rooted in his ability to capture the pure essence of working life in rural Suffolk. “I saw the way he used light, paint, colour and brush strokes to create a little sample of time that has stood still. It resonated with me and so I contacted Wil, who was the Chairman, and asked to join the society.” They have been friends ever since and both especially love to paint ‘en plein air’, as Wil explains, “Working outside forces you to actually look at what is in front of you and you can be surprised by what you see. There is a lovely freedom to it, trying to capture the immediacy of the scene with just a few brush strokes or lines of ink.”
With James’s love of the landscape and Wil’s penchant for architectural portraits, they have decided to collaborate on a joint exhibition to be held at Southwold Arts Centre. Called ‘Peripheral Vision’, it showcases the beauty of the Suffolk landscape and the industrial shapes of the working countryside. In James’s studio I only get to glimpse some of the work to be featured; a sweeping stubble field, willows reflected in the slow bend of a river, bold fishermen’s huts and the curve of a metal staircase, but from my point of view I would say it promises to deliver from every angle. Sweet dreams
Who can resist a posy of freshly picked sweet peas, those delicate shades of pink and purple, that gently nostalgic fragrance that perfumes the air. I know I can’t. I love them, and they look fabulous in the garden grown over twiggy wigwams and supports, so this year I am attempting to sow my own. 42

Firstly, you will need: Rootrainers – sweet peas produce a good root system, so you need long thin pots – loo rolls are perfect Multi-purpose compost Mixed selection of sweet pea seeds Fill your pots with compost and then sow two seeds per pot. Now place in a cool greenhouse or by a bright window in the house. They should take 3-4 weeks to germinate. Keep the soil moist but not sodden. Once they are about 5” tall, pinch out the tips to encourage bushy growth. Harden off and then plant out in late spring once the frosts are past. Hopefully we will all get to this stage, but if not then you can always cheat and buy seedlings from your local nursery. Now is the fun part. Sweet peas, once they get
going, grow rapidly and need something to scramble up, so I plan to construct some hazel tepees. Pinterest is a great resource for those with architectural ambition, but I think there is a certain charm in keeping it simple. Gather some hazel sticks – or indeed any sticks that will be robust enough to last the growing season – and then weave them together to form a wigwam. Gather the tops with twine, strip off the lower twigs at the other end and push into the soil. Plant your sweet peas, about eight per tepee, and make sure that you tie them in is as they grow. Water regularly as they are thirsty fellows and feed with a potash rich feed for the first few weeks. Come June, we will all be enjoying towers of these gorgeously scented blooms. Remember the more you pick the more they grow. Good luck sweetie! 43

Time to blossom Spring is definitely here, even though the March weather tried its hardest to put it off. March 20th officially marked the beginning of Spring, as well as being the date of the vernal equinox – when the hours of day and night are approximately the same – so it is lovely to see the evenings drawing out. April brings Easter, an early one this year, and there are jewels in the garden to make it all worthwhile, such as clumps of violets shimmering in little spaces and snakeshead fritillaries nodding in the grass. Ideally all pruning and the planting of trees, shrubs and open ground plants should be completed by the end of the month – who needs a gym with all this hard garden labour to be done and putting up with the odd ache and strain is well worth the rewards you will see later in the year.

In May, trees are beginning to blossom so find time to pull up a chair, have a cup of coffee and marvel at their short-lived bounteous beauty. The greenhouse is bulging with seedlings and potted plants, giving great expectations for the coming months. The soil in the garden, if prepared properly, is ready for salad crops, herbs and carrots to be planted. As I write this, I am thinking that not everyone may want or be able to spend a great number of hours gardening. A low maintenance garden is very often desired and there is nothing wrong with this. Christopher Rayner-Green of The Suffolk Coffee Company spills the beans on the alchemy of hand roasting coffee to unlock its subtle balance of flavours and the secret to making a perfect cup of coffee. As soon as I step out of the car I catch the faint aroma of freshly roasting coffee, so it doesn’t take me long to find Christopher hard at work in his roastery behind the Post Office in Peasenhall. He roasts his beans to order to ensure the coffee is fresh and today he is doing a batch for one of his customers over at West Mersea which means I am lucky enough to get a one-to-one lesson on how the process works. He has been roasting coffee here for over seven years and what started as just an interest in fine coffee has lead to a successful business, one renowned for its characteristically rich, smooth coffee. Originally from Bury St
Edmunds, Christopher studied Fine Arts Valuation at Southampton and went on to become an antiques valuer for Bonhams Auctioneers, but after returning to Suffolk he decided he needed to do something more creative and setting up his own artisan coffee company seemed to hit the spot. The traditional gas roaster is already fired up and the air is thick with a complex mix of aromas. Christopher scoops up a handful of green beans from a hessian sack in the corner. These are his only raw ingredients, imported from around the world to the docks at Felixstowe and the sacks are stamped with their country of origin: Brazil, 49

Guatemala, Vietnam, India, Peru, Honduras. All have their own unique flavour and texture and the skill of the roaster is being able to combine these flavours together through the roasting process to create their own individual blend. This is a skill that takes years to master as there are so many differentials to factor in: temperature, pressure, moisture and time, but watching Christopher at work I can see that all of this is now second nature to him and sight, sound and smell are all he relies on. Christopher drops the green beans into a hopper which channels them down into the roasting drum where they are then tumbled slowly to develop their flavour. There are different stages to the process and several times Christopher pulls out a little tray of roasted beans, known as a Trier, so that he can check their colour and aroma. He is 50
waiting for the first crack, which is when the bean is forced to crack open at the moisture escapes, and once this happens he skilfully balances the temperature and watches the beans to make sure he stops at exactly the right moment. The gorgeously roasted beans, now a lovely nutty brown, are released into a cooling tray and within minutes they are ready to be tipped out so another batch can begin. On a busy day Christopher can produce up to 35 kilos of roasted beans, ready to be packaged up and delivered out to his customers. He stocks a large number of restaurants and cafÊs and you can buy his bagged coffee at the Store in Peasenhall and at Snape Maltings. He also serves his coffee at farmers’ markets and local festivals and events including the Aldeburgh Food and Drink Festival,

Flipside, FolkEast, the Hadleigh Show and Art for Cure and is happy to cater for parties and weddings. As the face of the company he enjoys going out to find new business and loves doing the festivals and events so this is an area he hopes to expand and is toying with the idea of taking someone else on. He would also like to source his beans directly from the growers rather than via traders and having been out to India to see the plantations, is looking to build working relationships with some of the coffee farmers.
As I would expect, the answer is quite precise. Make sure the pot and mugs are warm. After boiling, let the water stand between 2-5 minutes before pouring onto the coffee. Plunge after 4 minutes and serve, adding milk if required. Since moving to East Anglia in 2016, Richard GrinyerPower has been Head Chef at the Sibton White Horse, a 2 Rosette pub which was voted Suffolk Dining Pub of 2018 by the Good Pub Guide. Henry and Katie at Moat Farm Kenton who currently grow eating apples and pears for local farmshops, greengrocers and supermarkets have invested in a new belt press to make their own single variety apple and pear juices. The new press on site ensures the fruit is pressed straight from the orchard, retaining the fresh, distinctive flavours to create a range of delicious individually tasting juices from the zesty Bramley to sweet Russet and the lesser known heritage varieties such as James Grieve and Worcester Pearmain. Chocolate expresso cake An indulgent chocolate cake with a dense, fudgy centre that is best served thinly with a heap of crushed raspberries and a strong short expresso.
Ingredients 180g fine dark chocolate A small hot espresso 140g unsalted butter 5 free range eggs 200g golden caster sugar 1 tsp baking powder 2 tbsp cocoa powder 90g plain flour Punnet of raspberries
Method Heat oven to 400 oF/200 oC/Gas mark 6 You will need a shallow cake tin, 21-23cm in diameter, about 5cm deep, the base lightly buttered and lined with a round of greaseproof paper. Set the oven to 180C/gas mark 4. Break up the chocolate into small pieces and melt in a heatproof bowl set over a pan of gently simmering water. As soon as it has started to melt, pour the hot espresso over the chocolate. Cut the butter into chunks and drop it into the chocolate and coffee. Resist the temptation to stir. Meanwhile, separate the eggs and whisk the whites until thick and still and then fold in the sugar. Sieve the baking powder, cocoa powder and flour together. Once the chocolate has melted, remove from the heat, quickly stir in the egg yolks and then slowly fold the melted chocolate into the egg whites. Lastly sift in the flour and cocoa mixture. Work slowly and lightly so as not to knock the air out of the mixture. It should feel light and wobbly. Transfer the mixture to the lined tin and bake 30-35 minutes. Test with a skewer – it should come out cleanly – then leave to cool in its tin before turning out. Cut into thin slices – it is very rich – and serve with crushed raspberries and a sprinkling of icing sugar. (Nigel Slater: Real Food)

After the cold start to the year we’ve had there is nothing better than heading to the coast to blow away a few cobwebs and fill your lungs with sunshine and fresh air.
Covehithe
If you are a dog-owner, you will know how lucky we are to have so many dog-friendly beaches here in Suffolk. Here is our pick of the beaches that allow your four-legged friend to feel the wind in their coats all year-round.
Blackshore
A beautiful sandy beach that stretches for miles. Only accessible on foot or by cycle, park up by the church and then follow the footpath that skirts the edge of farmland before ending abruptly at the sandy cliffs. it always feels remote and is perfect for a wild and windy walk with the dog. Although the main town beaches of Southwold have summer restrictions, down towards the harbour you discover a lovely sandy stretch that is fabulous whether low or high tide. It offers tremendous views of the lighthouse standing proud of the town’s skyline and half way along you can nip over the dunes for a bite to eat at The Sail Loft.

Walberswick This gorgeous swathe of sandy shoreline is a winner for all dog owners and is especially great if you have young children in tow as they can play hide and seek in the tussocked dunes. There is also a great choice of pubs nearby if you are feeling peckish after all that exercise.
Sizewell This fabulous coastline is a lovely spot for an early morning stroll to watch the sunrise, and a steaming mug of tea and a bacon sarnie from the beach cafĂŠ is always a winner.
Aldeburgh Very popular with all the family as it offers shopping, coffee and fish and chips. Just to the north, up past the Wentworth Hotel, there is a mile of wide dog-friendly shingle
beach that runs alongside the path stretching from Aldeburgh to Thorpeness.
Shingle Street One of Suffolk’s most unspoilt beaches and a place to really get away from it all. Only the trilling curlew know the secrets of its past and you and your dog can lose yourself for hours here.
Ramsholt Not strictly a beach, but where the River Deben widens the sandy river banks and shallow water make this a wonderful place for a paddle before tucking into a Sunday roast at the Ramsholt Arms. Travelling home after a day on the beach with the smell wet dog filling the car will always be a reminder of happy days on the Suffolk shores so why not grab the lead and head out this weekend. 63
