Q: What is a crinkle-crankle wall?

The 18th century was a period of great change, cities grew, trade expanded, consumerism and popular culture bloomed, and Georgian styles were integrated into an architectural vernacular which went on to form part and parcel of the training of every architect. It was the heyday of country house building, many of which survive today, and these grand houses stood alone in their own landscaped parks.

A crinkle-crankle wall is a method of building a brick wall which allows for long stretches of single bricks to be utilised. The design provides stability and means that the wall uses less bricks as it is only one brick thin - if the wall was to be built in a straight line it would need numerous buttresses to prevent it toppling over.

Q: What is a ha-ha?

A ha-ha is basically a retaining wall with a ditch or trench beyond, designed to keep livestock off the formal gardens giving the illusion that the livestock are grazing on infinite lawns – as seen behind huntsman and hounds above. There are various schools of thought as to who invented the ha-ha, from the famous Charles Bridgeman or William Kent to Lancelot Brown - known as Capability Brown because of his ability to look at a piece of land and state “it had great capabilities”. It is also further thought that the ha-ha originated in France, where a similar style was called a ‘Saut de Loup’, which translates as wolf leap.

Many crinkle-crankle walls, also called wavy, zig-zag or ribbon walls, can be found across East Anglia and it is thought there are over fifty examples in Suffolk alone. The construction of these walls is thought to be attributed to the Dutch engineers who drained the fenlands and who called them ‘slangenmuur’, which translates as snake wall.

Hainanese chicken (serves 4-6) A fresh and vibrant recipe from the Aldeburgh Food & Drink Festival book, Un-Earthed, which celebrates life and food in Suffolk. Ingredients 1 whole free-range chicken 2tbsp sesame oil 100g root ginger, peeled and thinly sliced 5 spring onions, roots trimmed off, roughly chopped into 4cm pieces 1 garlic bulb, cut in half widthways 1 chilli, cut in half lengthways 2 star anise For the rice: 325g basmati or long grain rice 25g root ginger, finely chopped 6 garlic cloves, finely chopped 1tsp sesame oil 75g butter 1tsp salt Method Rinse the chicken under cold water then pat dry, rub the sesame oil over the outside and season inside and out with salt. Stuff the chicken with half the ginger and spring onion, place in a large pan and cover with cold water. Add the remaining ginger and spring onion along with the garlic, chilli and star anise to the pan. Place the pan onto a high heat and bring up to the boil. Turn down the heat and simmer for approximately 40 minutes, regularly skimming off any impurities which collect on the surface. Take off the heat and leave the chicken steeped in the broth for a further 10 minutes. Now prepare the rice. Vigorously wash the rice with cold water for 20-30 secs and drain, repeat twice more. Add the ginger, garlic, sesame oil, butter and salt to the rice and quickly mix together. Add a few ladles of the poaching broth, until the liquid is approximately 2½ cm above the rice line. Place a lid on top of the pan and cook on a low to medium heat. Once the rice starts to get a good steam going (approx 5 mins) reduce the heat to a simmer and cook for a further 15 minutes. Take off the heat and leave for another 15 minutes with the lid on. Carefully take the chicken out of the broth and plunge into an ice bath for around 10 minutes, turning occasionally. This slows down the cooking and helps to keep the chicken succulent. Place the broth back onto a gentle heat and test the seasoning. Remove the chicken from the ice bath and gently pat dry. Carve the chicken as preferred and place on top of some sliced cucumber on a serving plate. Garnish with sliced spring onion and coriander. Ladle the broth into individual soup bowls and serve up the rice either on individual plates or a big bowl in the middle, along with the chicken and some dipping sauces such as soy and chilli.
