Cynthia “Cindy” Clark I invite you “In the Kitchen” to share recipes and to cook with you in your home or restaurant. I am a former Zuppardo family restaurateur, and my grandma Mary Binder, was the founder of Binder’s Famous Bakery in the Upper Ninth Ward on St. Claude Avenue in New Orleans. As a child, I remember playing ball with “flour” in my grandma Mama Mae’s bakery attic with my 4 siblings Gregory, Michelle, Randy and Billy. My most vivid memories in the kitchen are of Grandma Binder, and my mother Rachel, cooking and baking, old-fashioned healthy, delicious homemade dishes. During Covid, I took a hiatus from my New Orleans radio show “The Cuisine Report.” I am excited to get back “In the Kitchen” to cook for fun and health with my New Orleans community, in the pages of Inside New Orleans Magazine.

Heartwarming Crafting Happiness The Artistry of by Greta Honsberger
with Brush and Canvas Christina Pappion ARTIST CHRISTINA PAPPION discovered her talent and great love for drawing and painting as a child, spending time at her grandparents’ house. One day, her grandfather noticed her boredom and suggested drawing to entertain herself. The idea worked. In her hours of creating, Christina developed a deep passion for drawing because, as she created, time seemed to fly by as visions in her mind came to life on paper; she loved the experience. Her passion for art only grew from there as she began to enter art contests in school and won the competitions. With confidence and a love for creating that motivated her, she began working on her craft. The pivotal moment she knew she wanted to be an artist came about at Mt. Carmel Academy, where her work was chosen for the Art in Bloom exhibit at the New Orleans Museum of Art. About that experience, recalls Christina, “I was so excited to see my artwork in the museum. I love art and history, and to see my work in the same building as the greats was so inspiring. I knew that this was where I wanted my work to belong.” Knowing that she

had a gift that she so genuinely wanted to share with others, she went on to the University of New Orleans to study painting. Armed with a degree in Fine Art, with a specific concentration in studio painting, she began her career as an artist. Early on, she worked for local nonprofits that taught art, including KID smArt and Young Audiences. She also worked at the New Orleans
Recreation Department, teaching art in the Teen Division. Although she was teaching art in youth development, her dream was to be an event painter and bring people joy from her work. Christina explains that as she has evolved as a painter, she recognizes that her method somewhat differs from other painters. She incorporates unconventional methods by using digital components in her paintings. Using the digital component, she enjoys adjusting colors, saturation, and exposure and sees it as a way of taking her artwork to the next level. Christina adds, “ I am a painter first and a digital artist second. I enjoy using them both to convey my artistic message. I think this technique is what makes my creative approach so different and refreshing.” Christina doesn’t usually choose her subjects. Although the paintings she creates are diverse, she specializes in custom art. Her custom paintings are a collaboration between Christina and her clients as they discuss the plan for their shared vision for the painting. For example, in wedding paintings, a client will say they want certain family members painted, as well as some of the details in the decor that may not be in the room. Christina then creates the people or objects requested and incorporates them into the painting. These additional articles can be almost anything, even if they are not in the same space, such as pets and deceased relatives. Adding, “I use my creativity to paint their requests while staying true to my artistic vision of the day and special moment.” The client chooses the subject for the painting, but Christina’s vision of that subject is its essence. Another example that underscores her method as a custom artist is that of Mardi Gras Krewes. Through the years,
Christina has worked with several. Each Krewe has a yearly theme, and as a custom artist, Christina creates the art based on their theme or an image related to that theme. “They will give me just those words, or sometimes they give me images they like, and then I will take that, pray on it, and then create something [that] I think would be in line with their brand,” she explains. With just a theme or an image, Christina’s unbridled creativity intertwines with the Krewe’s yearly token to craft something vibrant and cheerful that exudes sheer jubilation. After all, it is Mardi Gras! Art has allowed Christina to communicate with all who view her work. Not a person who enjoys speaking in front of people, she lets her painting speak for her. Her work conveys exactly her intent, which is “to communicate joy, happiness, and love.” Her personal reward for the work that she creates is to make people feel good with the creativity that she pours onto her canvas. With each whimsical brush stroke, especially those made in bright colors, says the artist, “I create an expression of how I feel inside, and hopefully,
that expression makes others feel the same way, which is joy and being thankful to God [that] I’m alive and able to do this.” When she isn’t painting and creating, Christina loves to be with her family. With a great appreciation for history, it is easy to see much of the world’s history in the art found in museums, which is why she embraces traveling to different places and visiting art museums. Christina loves exploring and is a voracious reader and lifelong learner. This year, Christina has a new series in celebration of Christmas called “Christmas in Nola,” which features paintings of local icons, such as garland-adorned streetcars and beignets and milk for Santa. You will also find more traditional Christmas ornaments like the Holy Family and the Nutcracker. This special series, available through her website, promises to bring even more joy and festive spirit to her audience. Christina Pappion has found a unique and genuine way to connect with others. Her work fosters a shared sense of joy and thankfulness for the gift of creativity and life that shines vividly in her art.

LIKE MANY, I was aware of the Pontchartrain Conservancy but uncertain about its role in our community. Following a discussion with Executive Director Kristi Trail, I gained insights into the significant role the Conservancy fulfills across a vast expanse of over 10,000 square miles, spanning sixteen Louisiana parishes and four Mississippi counties. By the 1970s, bacteria pollution was one of the primary contaminants affecting Lake Pontchartrain. These nutrients mostly came from various sources, including agricultural run-off and sewage discharges. The pollution led to water quality issues like oxygen depletion, negatively impacting the lake’s ecosystem and overall health. Efforts to reduce pollution in subsequent years have played a crucial role in improving the water quality of Lake Pontchartrain.

Cleaning Up the Pontchartrain Basin
In 1989, the pivotal report called “To Restore Lake Pontchartrain” underscored the detrimental deterioration and the unhealthy ecosystem of the Basin and called for an entity whose sole focus would be the restoration of the Lake and the Basin. That year, concerned citizens, report in hand, united and began the Lake Pontchartrain Basin Foundation (now known as the Pontchartrain Conservancy). Since then, the Conservancy has focused on water quality improvements, restoring aquatic ecosystems, and overall environmental health, benefiting biodiversity and the community’s well-being. To maintain the tapestry that makes up this unique culture and create an ecological balance, a significant aspect of the Conservancy’s mission is identifying
pollutant sources and their specific locations. It is crucial to gather scientific data and insights to achieve this objective. Kristi Trail emphasizes that the Conservancy is a science-based organization. As such, data is the driving force in achieving every improvement in water quality. Presently, an ongoing project within the Chandelier Islands is actively collecting data to study the varying levels of hypoxia in the vicinity, like those observed in the Gulf of Mexico. Hypoxia, characterized by critically low oxygen concentrations in the water, poses a severe threat to aquatic organisms, severely limiting their ability to thrive and survive in these affected regions. By gathering and monitoring the data, the Conservancy aims to establish the link between hypoxia in the two water >>

regions and work toward a resolution. The Pontchartrain Conservancy also focuses on educating the community through hands-on education projects. The educators on staff are working to develop a science curriculum that is Louisianacentered. Facilitating Learning in Our Watershed, or FLOW, is a two-year program introduced in middle school offering knowledge, resources, guidance, and support to science teachers. The New Canal Lighthouse Environmental Learning Center is another resource for environmental education, focusing on educating four significant themes, including Climate, Science, Community, the Coast, Lagniappe (a little extra), and Water Quality. many facets of our cultural heritage rooted in the water around us. For this reason, a collective commitment to safeguarding the cleanliness and health of the waters in the Pontchartrain Basin is essential. Since 1989, the Pontchartrain Conservancy has led the charge in doing just that. Through crucial data collection, science-based research, and fostering community awareness through education, the Conservancy has been instrumental in restoring our water’s ecosystem to a healthy place, and they are committed to continuing this critical work.

THE HOLIDAY SEASON would only feel complete with a Saturday spent with my best friend on Magazine Street, enjoying our cherished shopping traditions. This year was no exception, as we visited some of our favorite shops and added a few new ones. A late morning arrival to Magazine Street calls for coffee and a little something from La Boulangerie, our first stop. La Boulangerie is known locally and beyond for its pastries, fresh bread, and desserts, all sourced from the area. If you enjoy a yummy croissant with your coffee, this is the place to come because they have four kinds of croissants. Only a few steps away, we discovered the Art by Christy Gallery, a charming and vibrant space. Christy Boutte creates her art through finger painting, using vivid colors and sometimes sparkling jewels. Her works beautifully depict New Orleans culture, from beadcovered Mardi Gras trees to enchanting voodoo babies. A personal favorite of mine portrays Petunia the Pelican in amusing scenarios. The gallery also offers wearable art, blankets, and pillow covers featuring Christy’s beloved characters, making for unique and delightful gift options. Crossing Napoleon Street, we made our way to Nola Boards. This is such a great shop because they have so many gift choices. Their handcrafted cutting boards are beautiful and functional and can be engraved to make them even more unique. Nola Boards also has a variety of barware with distinctive mixers and syrups for cocktails and kitchenware, including aprons, handcrafted wooden utensils, and tea towels with hilarious quotes. Their gift baskets also make perfect gifts for any occasion. Another first for us was visiting the Hilltop
Shoppe. We loved this endearing little shop! The classic, charming white clapboard storefront is picturesque and ready for the holidays with just the right amount of greenery and red trim. Inside, the bright interior is enhanced by a cozy red brick fireplace bedecked with bright-colored Christmas wreaths, and the beautiful white mantle has the cutest glass cone Christmas trees you’ve ever seen. Shelves showcase colorful barware glasses and stemware mixed with exquisite Christmas trays and other holiday serving pieces in green and red, some featuring nutcrackers. The white linens with monograms in gold or silver will add elegance to any table and go with everyone’s Christmas China. >>

Several trees throughout the store are decorated with exquisite glass ornaments. The pastel book stack ornament was my favorite. With a thorough selection of candles and Spongelle body wash-infused body buffers, making filling Christmas stockings is easy. For the person on your holiday list with great taste, discover something enchanting at the Hilltop Shoppe. When shopping on Magazine Street, my family expects me to visit Haydel’s for petit fours, which they love. So, we quickly stopped in the delightfully scented bakery to please them. Plus, I enjoy Haydel’s turtle cookies. These cookies became a favorite after we moved to Louisiana, and I always make it a point to try them at local bakeries. Among all the options, Haydel’s turtle cookies remain my top choice. Following our brief visit to Haydel’s, we continue west along Magazine Street, exploring the eclectic shops nestled between Joseph and Jefferson Streets, situated near Whole Foods. Here, you’ll find several must-visit stores. Our favorite shop along this stretch of Magazine Street is Miss Smarty Pants. We love this charming shop because there are so many beautiful objet d’art to savor, and they always offer customers a glass of wine! store’s fantastic bits and bobbles. They carry a large selection of fun local-themed drinkware, beautiful and unique scarves, candles, exquisite frames, and upstairs, all sorts of gorgeous holiday geegaws. Miss Smarty Pants is not the shop to skip, ever. For a Christmas shopping experience that you will want to have every year, you must visit Hazelnut. You will find Christmas trees festooned with different ornament themes throughout the shop. The icon-themed glass ornament tree is our favorite. Covered in icons from pop culture and beyond, this festive tree features pop culture figures like Edgar Allan Poe with his raven and Anna Wintour blowing a bubble. Additionally, there are many stunning artifacts to behold throughout Hazelnut. One-of-a-kind decor, sumptuous tabletop accessories, personal accouterments such as Susan Shaw and Capucine de Wulf jewelry, and Hazelnut exclusives, including the ever-popular New Orleans Toile, are just a few bits of the extensive array of decor and gifts that fill every corner. Whatever the occasion, you will find an original gift at Hazelnut. As the day turned to evening, marking the end of our shopping tradition, we were ready for cocktails and dinner. The Red Dog Diner, a cherished spot from our first annual Magazine Street shopping excursion, had been closed for three years due to the pandemic. To me, their boarded up windows represented another casualty in the wake of the pandemic and a reminder of the good times we had before our world bizarrely turned upside down. The Red Dog Diner reopened in June, and us returning for dinner there felt like a victory lap for the good guys. As we settled in the rustic front room of the restaurant, we enjoyed cocktails like Ginny Hendricks and Hair of the Red Dog, followed by a delightful dinner featuring Crusted Crab and Spaghetti. Our dining experience was outstanding just as it always was. Welcome back, Red Dog Diner! We missed you. Another delightful day of holiday shopping on Magazine Street was complete. The highlight was uncovering new shops and galleries to include in our yearly tradition. I eagerly anticipate returning next year to explore more fresh, distinctive, and oneof-a-kind establishments that enrich the iconic Magazine Street shopping experience. WHEN NICOLE HOUSE initially consulted dermatologist Dr. Zeena Al-Dujaili, she was concerned about a small red bump under her eye. Her concerns were valid because three years prior, the same concerning spot had been removed but was not biopsied. At that time, her dermatologist did not deem a biopsy necessary and was unconcerned. Six months ago, the mysterious red bump returned. A registered nurse, Nicole, works in the operating room with Dr. Zeena’s husband, Dr. Ravi Tandon. After overhearing Nicole discuss her concerns about the return of the red bump, Dr. Tandon referred Nicole to his wife and had an appointment set for her within the week. Finding the red papule suspicious, Dr. Zeena performed a biopsy and discovered that Nicole had Basal Cell Carcinoma, a Nodular type more commonly known as skin cancer. “[This] is a type of skin cancer,’ explains Dr. Zeena, ‘that typically develops in sun-exposed areas. This type of skin cancer grows very slowly, and although it’s not a threat to life, it will destroy the tissue surrounding it.”’ The treatment for this type of skin cancer is removal using Mohs Surgery. Dr Frederick Mohs developed the microscopically controlled procedure that involves the removal of the tissue layer by layer, as the doctor examines each layer under a microscope to determine if there are any remaining cancer cells. Dr. Zeena adds, “Mohs has a 99% cure rate, which is the highest cure rate for skin cancer removal. It’s the most effective treatment for the removal of basal and squamous cell carcinomas.” Thus, intending to achieve a complete cure for Nicole, Dr. Zeena performed Mohs surgery to remove the cancer cells from under Nicole’s eye. Thankfully, the laborious procedure effectively removed the cancer. It has been about three weeks since Nicole’s procedure, and Dr. Zeena reports that Nicole is doing well in her recovery with little scarring. In the future, Nicole will undergo a skin examination every six months and utilize sun-protective products recommended by Dr. Zeena. Regarding her journey through this process, Nicole expressed her gratitude, saying, “I am very grateful for Dr. Zeena and her exceptional surgical skills in removing my skin cancer with excellent precision and care.” She wholeheartedly endorses Dr. Zeena for providing her with peace of mind throughout the entire process. Dr. Zeena Al-Dujaili is double board-certified in Dermatology and Micrographic Dermatologic Surgery and Fellowship trained in Cosmetic Dermatology. After completing her dermatology residency at Tulane University, Dr. Zeena furthered her training and completed a fellowship in Mohs Surgery and cosmetic dermatology in NYC. In 2019, she returned home and founded New Orleans Aesthetics. She is a fellow of the American College of Mohs Surgery, American Academy of Dermatology, and American Society of Dermatologic Surgery.

In Love and Marriage Kamensky-Zandbergs
Amidst the blooming azaleas and the gentle
melodies of jazz faintly playing in the distance, the enchanting ambiance of a New Orleans destination springtime wedding brought to life the charm of a true Garden Party in the heart of the Crescent City as Abby Kamensky and Kalon Zandbergs exchanged their wedding vows. Abby and Kalon’s love story began when they were new hires at Google. Although they were starting the same position, each was located across the country from the other. Thus, they would be work friends only, but that lasted for about six months. After six months of friendship, Kalon told Abby he wanted to be more than friends. Abby wanted the weekend to resemble their family trips to the city, honing in on the food, entertainment, and essence of all that is the Crescent City. “It’s always been a bit of an unspoken agreement that that’s where this big memory would be made,” adds D e ce m be r 2 0 2 3 - Jan uary 2 0 24

Abby. There was no question that New Orleans would be the perfect place to celebrate the wedding of Abby and Kalon. Abby had a clear vision for her wedding, which she shared with wedding planner Elyse Jennings. “Aesthetically, I wanted New Orleans and coastal inspired Garden Party vibes – after I brain dumped on my wedding planner, she described it as ‘a whimsical coastal garden party in a wildflower-filled, New Orleans dreamland.’ I was like, [you] pretty much nailed it.” Elyse beautifully brought to life Abby’s desire, which served as the foundation for creating the couple’s dream wedding. After many months of preparation, the long-awaited weekend of March 19th arrived. Abby and Kalon hosted a welcome dinner at Port Orleans Brewing Company, followed by a lively night of revelry at Tipitina’s with music from Big Sam’s Funky Nation. The best was still to come. On her wedding day, Abby’s closest friends surrounded her, filling the morning with her favorite music and dancing at 7 AM. It set the tone for a day filled with family, friendship, dancing, and true love. An exquisite off-the-shoulder Oscar de la Renta wedding gown with handembroidery hit me right in the feels,” recalls the bride. An accompanying tulle offthe-shoulder shawl gracefully affixed to her gown formed a truly breathtaking train. Abby asked her bridesmaids to choose dresses in soft shades of purple, blue, and green to match the garden party theme. They did so beautifully, seamlessly complementing the overall wedding and reception theme. The couple’s New Orleans courtyard exchange of vows at Maison Dupuy perfectly captured the charm they desired, with its vintage red bricks, lush greenery, 50

The coastal New Orleans garden party theme came to life in the stunning outdoor space, with a tent adorned in white and green Danika Herrick block print fabric, lush greenery, lattice backdrops, rattan lanterns, and an abundance of stunning flowers by Pistil and Stamen. The space perfectly matched Abby’s early planning vision. The couple chose a strolling reception featuring New Orleans fare by Joel Catering, with raw and chargrilled oysters, chicken and andouille gumbo, and a gnocchi interaction and more time on the dance floor. Front and center the whole night on the dance floor to the tunes of the Pure Party Band, the newlyweds only left the dance floor to cut their Chasing Wang wedding cake. As the reception came to a close, the couple made their way through a sea of bubbles and well-wishes as they all headed out to the Gold Mine Saloon for more celebrating. 52

2oz Bumbu Rum 4oz Whole Milk ½ oz Cinnamon Syrup Nutmeg Garnish
Fill a rocks glass or fun/funky retro Christmas glass with ice, combine rum, milk, and syrup; stir, then sprinkle nutmeg garnish. HEAUX HEAUX HEAUX
2oz Bumbu Rum Cream 1 oz cinnamon syrup 2 oz banana puree Cinnamon stick Caramel drizzle
Fill a shaker tin with ice, combine the Bumbu Rum Cream, syrup, and banana puree shake well. Strain into a chilled martini glass; garnish with a cinnamon stick and caramel drizzle. VERY MERRY
2 oz McQueen and Violet Fog Gin 1oz cranberry syrup ½ oz lemon juice 3oz Luc Bel Aire Gold Cranberry Garnish
Fill a shaker tin with gin, syrup, and lemon juice. Shake well and strain into a gne flute. Top with champagne and three fresh cranberries for garnish. JACK FROST MANHATTAN

Savory Southern Maple Cornbread HOMEMADE SAVORY Southern Maple Cornbread pairs well with many soups during the chilly winter months. Enjoy a little cornbread background and a delightful recipe from my kitchen. Historically, early cornbread was made from a simple mixture of water, salt, and cornmeal and resembled a flat cake that traveled well on long horse and buggy trips. There was never a need to use yeast to raise the bread, so this American staple was “vegan” long before the word was created. Tip: The batter should be the consistency of pancakes. The batter should rest for 10 minutes before baking. The cast iron pan should be heated and greased with butter before adding batter to the pan to get a better rise. SAVORY SOUTHERN MAPLE CORNBREAD (Yields 8-10 Servings) 1 1⁄2 cups of yellow medium coarse cornmeal 1⁄2 cup of coconut flour (or all-purpose flour) 1⁄2 teaspoon of sea salt 1 tablespoon of aluminum-free baking powder 1/3 cup of Maple syrup 1 stick of butter 60

2 eggs 1 cup of milk Savory option: 1 cup of cheddar, 1⁄4 cup to drizzle top before baking 1 heaping tablespoon of Shallots 1 heaping tablespoon of jalapeno Sift and combine dry ingredients into a large bowl. Combine wet ingredients: butter, maple syrup, eggs, and milk in a separate bowl and blend on medium. Gently stir (do not beat) wet ingredients into dry ingredients. Fold in savory ingredients. Let batter rest for 10 minutes, not more than 15. Pour batter into a hot, buttered cast iron skillet, top with cheese. Bake at 400 degrees for 20 to 25 minutes. To test for doneness, place a toothpick in the center, if cornbread is cooked, the toothpick will be clean. Let it cool for 10 minutes. For crusty cornbread, remove from the skillet by using safety gloves and placing a wire rack over the skillet, then flip the skillet to remove the cornbread from the pan to cool for another 20 minutes.
