Hello, my name is Greta Honsberger, and it is with great excitement that I introduce myself as the new editor of The Sanctuary Living. I am absolutely honored and thrilled to be a part of this outstanding neighborhood publication. I jumped at this position when it was offered to me because I love words and writing. I felt I had a lot to offer and wanted to learn all that I could about the publishing industry. I have not been disappointed. I am having such fun getting acquainted with the talented and passionate people who we feature in The Sanctuary Living. On a personal note, when not editing and writing, I enjoy being with my husband, Rick, and three incredible children: Anne, 25; Lettie, 22; Grayson, 13; three pugs, and two grand-pugs. I spend my school days teaching English at Mary, Queen of Peace, where I get to share my love of words and writing. CHRIS FOLSE OF CARPOOL CATERer
Favorite Dish
Chris Folse of Carpool Caterer believes in good, healthy food and loves sharing it. His culinary journey began when he graduated from Mandeville High School in 1997 and set out for the Art Institute of Seattle to learn the culinary trade. After spending ten years learning his trade under some of the best chefs in the country, honing his skills, and deciding what exactly he wanted to do in the culinary world, he landed back in Mandeville with a very rewarding culinary career. According to Chris, Carpool Caterer came about from “Divine Intervention and God’s timing.” He was working at a local restaurant, and quite unhappy with his work situation, when a fellow chef friend with a home-based business asked him to fill in for her one week and cook for a group of Northlake Christian moms. This friend would cook for the moms on a weekly basis, then deliver them to the school. Not long after, his friend, who ended up launching another business, asked Chris if he wanted her client list to continue the path she had forged in this catering niche. He accepted the challenge and built on the concept by adding deliveries, a storefront where folks buy ready-made meals, and a weekly menu distribution that feeds thousands of Northshore families.
After ten years in business, the concept of home-cooked, healthy meals ready and waiting for busy families is stronger than ever. Moms all over the Northshore look to Carpool Caterer to feed their families, even their pickiest eaters. The secret ingredient to Chris Folse and Carpool Caterer’s success is the friendly, presentable staff who genuinely put their best into every dish that goes out their door to someone’s dinner table. About the sincere and careful effort that goes into each dish, Chris explains, “ [We] take the time to do things right. We go the extra mile to ensure our food makes mouths move!” Finally, in case you didn’t know, here are a few facts about Carpool Caterer. They are open 7 days a week and feature a large frozen food selection that is always discounted. Also, they offer grab-and-go lunch items for the person on the midday errand run, as well as individual-sized portions of their meals, plus, they deliver just about anywhere. In this month’s Chef’s Favorite Recipe, Chris decided to share the technique he uses to cook beets because his customers often ask him, “How do you cook your beets? I’ve tried several times and they just come out terrible.” So...the wait is over for you beet lovers because according to Chris, cooking beets this way is a simple thing to do. Have a look.
HOW TO COOK BEETS • Just put your beets into an oven-safe pan with 1/2” of water in the bottom of the pan. • Cover tightly (to avoid steam loss) with aluminum foil. • Put into oven at 375-400 for 1.5 hrs. -(If you don’t have a fan in your oven then they could potentially take 2.5 hrs.) -After an hour (you should be able to smell beets cooking) remove the foil and poke the largest beet with a knife. -You should have very little resistance and the knife should easily slide right in. -If you don’t feel they are tender enough, let them ride for another 20 minutes. -Once they are cooked, cover them with ice or just run cold water over them to cool them. -Once they are cooled: peel the beets under a cold water stream from the faucet. -If they are difficult to peel (sometimes it happens) use a rag as an abrasive to remove the skin. -Dice to your size preference and marinate in a dressing of your choice.
A Tasty Beet Marinade Here is a basic marinade that tastes terrible by itself, but naturally sweet beets will boost its flavors and make you crave them! This marinade will last a month or more in the fridge so stash it and just dress your beets as you cook them. Making large batches of vinaigrettes saves tons of time when you’re in a hurry! This dressing is not good on its own, so don’t judge this book by its cover! Salt and pepper your beets after they’re diced and before you dress them. You should be able to dress beets all month on this recipe alone. • 1c white or brown balsamic (You can use any vinegar you like, really.) • 1/2 cup of oil (avocado, olive, grape seed, canola) Extra virgin is the choice here. • 1 each chopped shallot or 2 TBLS red onion (Shallots are tiny, very strong red onions in the peel. Rouses always has them.) • 1/2 cup of honey • 1 Tbls dry basil (Fresh is even better but reduces shelf life.) • Juice and zest of 1-2 lemons
A Few Things About Beets… • If you use too much water then the water will steal all of the nutrients that the beets naturally provide. • Nutrients are God’s natural seasoning! • Yellow beets cook faster than red beets by about 30 minutes. • Beets love citrus and fresh basil!!!! • Beets last forever; I can’t explain, it but they do. • Overcooked beets do not have as much nutritive value, so find that sweet spot and enjoy the benefits of eating beets. • Don’t panic when you use the restroom. You don’t have a kidney or bladder infection. Beets stain your everything!!! • Beets actually widen your blood vessels which increase circulation and make you run better! • Beets naturally reduce blood pressure, so we could possibly cut out pharmaceuticals and use what God gave us to keep our bodies performing correctly!

Welcome to the Sanctuary Living magazine drinks column! Donna Canalizo and Shannon Brown recommend seasonal cocktails in each issue making sure you’ll be mixing up only the tastiest libations out there. So join us as we stir, shake, and pour something delicious!
MARTINI’S In this issue, Sipping In The Sanctuary is CHEERfully focusing on a classic cocktail: the Martini! Traditionally, gin was the spirit used in Martinis, but in this issue we have chosen to use vodka from Ukraine in support of the country during this difficult time, so put that gin in the bin! Historically, the Martini was a rather simple cocktail featuring gin or vodka and Vermouth with an olive or lemon twist garnish, but who created this wonderful concoction? One account is that the popular cocktail was created by a bartender at The Occidental Hotel in San Francisco during the Gold Rush of the mid-1800s. The flavorful cocktail, it is said, was fashioned for travelers getting ready to ride the ferry to the town of Martinez. Just as interesting as the history of the Martini are the little tidbits of information associated with a good Martini. For instance, having an even number of olives in a Martini is considered bad luck. In order to avoid this omen, one or three olives must be present in the cocktail. Also, the kind of olives are as important as the number of olives. The best olives are ones that will stand up to this boozy cocktail. The Spanish Manzanilla olives are always a great choice. If you
are feeling adventurous, try blue cheese-stuffed olives. You will not be sorry, as the combination of the blue cheese with the boozy juices is a true delight. Another little known fact about the Martini involves James Bond. It turns out, James Bond was all wrong about his Martini when he ordered it shaken. True Martini enthusiasts know that a stirred Martini is the way to go since the ice does not melt as fast. In order to get that pure clarity and smooth mouth-feel, always ask for your Martini stirred, not shaken. No one likes a diluted cocktail. The stirred not shaken argument presents another question. Just how long should a Martini be stirred? Some say 60 seconds is the right amount of time to produce a perfectly balanced cocktail, while others argue that 30 seconds will do the trick. Finally, if you are not a fan of Vermouth, it can easily be taken out to give you what’s called a “Bone-Dry Martini.” We like our classic Martinis a little dirty, or a lot dirty! Making a Martini “dirty”, simply means that olive brine is added to the mixture for an added layer of deliciousness. Nowadays there are lots of variations to the Martini. The days of just a dirty Martini are a thing of the past, as is presented in the following recipes. Here, we’re presenting three for your experimenting enjoyment.
The Dirty Martini Ingredients: (makes two drinks) 5 oz. vodka 1 oz. dry vermouth 1 oz. olive brine (or more if you like) Directions: Combine ingredients in a mixing glass filled with ice and stir until chilled. Garnish with one or three olives in each glass.
Grapefruit Martini Fruity martinis are very popular. Ours uses fresh grapefruit juice to make this drink super refreshing. Add a slice of grapefruit to the glass for a beautiful presentation. Ingredients: (makes two drinks) 4 oz. Ruby red grapefruit juice 4 oz. vodka 2 oz. Grand Marnier (or triple sec) Directions: Combine ingredients in a cocktail shaker with ice and shake until chilled. Garnish with a slice of grapefruit. 12 | The Sanctuary Living

Spicy Chocolate Martini The spicy chocolate martini is wonderfully decadent with a hint of heat, using Kahlúa, Baileys, chocolate syrup, and a dusting of cocoa powder on top. Ingredients: (make two drinks) 4 oz. Baileys Irish Cream 4 oz. Chili Chocolate Kahlúa (or use Godiva chocolate liqueur for traditional chocolate Martini) 8 oz. vodka Chocolate syrup and cocoa powder for garnish

very careful with boxwoods as they have become subject to blight, a fungal disease which can enter the property from another property with infected plants. But, there are new heartier varieties of boxwoods now, and we often substitute dwarf Yaupon Hollies.” The look is dynamic with the Christmas tree-like topiaries punctuating the corners, and dwarf mondo serving as ground cover amidst the boxwoods; it’s an elegant look. “This design took close to a year with revisions, and the May - June 2022
actual execution took 4-6 months,” says Sublette. “There’s a sense of drama here, with the trees spectacularly uplit. With an acre of land, there’s room for the motor court, and a swimming pool, which cannot be seen in this photo.” There’s something magical about this space, sure to be heightened by a cool breeze and a beautiful sunset. Spring is here!! It’s that time of year when everyone is ready to get outside and shed those coats and long sleeves that we’ve been wearing these past few months. Now is the time to get your patio and yard area freshened up and functional for spring and summer use! I know what you’re thinking. Furniture is taking way too long to come in these days, so it’s already too late. You are in luck, though, because our good friends at Eros Home in Madisonville have everything you need IN STOCK are ready to make your outdoor space feel like paradise!
Here are a few design tips to help get that “straight out of a magazine look”: 1. Eros Home has a ton of furniture for your outdoor space. HEATH FAMILY

F
or the May-June issue of The Sanctuary Living, we are excited to feature the Heaths as our Cover Family. Brandi and Shane Heath began calling The Sanctuary home in 2016 when they moved to Mandeville from the Baton Rouge area because of the great location and schools. Fast forward seven years, and add some significant life changes, the biggest of which was the birth of their first child, Cayman, who was born last May. Moving to The Sanctuary was an easy decision for the couple when they first started looking for a home on the Northshore. Although the couple loved their original home in the neighborhood, 18 | The Sanctuary Living
the plan was always to eventually build a home reflecting their style, wants, and needs for a family residence. Constructing their home would have been a natural choice since Brandi is a licensed general contractor and designer, as well as the owner of L & H Home and Designs. Coming from a family of contractors in Hammond, Brandi enjoys incorporating her construction knowledge with her design expertise to provide the experience of the two in one. The couple looked to Brandi’s combination of the two elements to build their own home, but that was not exactly how it turned out. Their plan to build was quickly modified when Shane, an insurance May - June 2022
and putting special touches to every element of the decor. Naturally, Brandi was able to use her construction and design expertise to refine their home and make it the perfect fit for their vision of a family home.
salesman and owner of Plantation Boat and RV Storage, stumbled upon the house that would become their family home in early 2019. As Brandi reflects on the first time she toured the property, she recalls, “We fell in love with it and everything we could eventually add to it!” One of the things that the couple liked most about the home was the open floor plan. Brandi points out about the open space, “[It] is so functional for our family! We love how homey and inviting it feels.” The couple also appreciated the quality construction and design of the home. A blank slate and ready for the couple to make their own touches, they jumped right into making it their own by changing all of the lighting, landscaping, May - June 2022
When asked what her favorite room in her home is, she was quick to say it is the closed - in attic. Yes, attic! Once she described the functionality of this great space, I can see why! Brandi uses the spacious attic to store all of her seasonal decorations. She likes the idea of attic storage without having to go into an actual attic. Another huge bonus for this storage area is the fact that it has heating and air conditioning. It is a dream come true for the person who loves to decorate for all seasons and keep their myriad of items stored in an organized fashion. The Heaths always look first to support local businesses whenever possible. For an evening out, they enjoy dining at Tchefuncte’s in Madisonville, but, says Brandi, “We also like venturing out to all the great local dining spots around town.” When Brandi searches for home k The Sanctuary Living | 19
decor for her clients, she explains that she goes all over the St. Tammany area. She loves working with all the local stores to get a little of each of their styles. The Heaths have a genuine appreciation for the St. Tammany area and embrace all that it has to offer. The couple, avid golfers, enjoy golfing at Beau Chene and Tchefuncta Country Club when home, but always like to fit golfing into their vacation whenever possible. A leisurely getaway for the Heaths involves exploring a place with beautiful tropical weather. Of course, now that the couple are the parents of Cayman, they are looking forward to visiting Disney World, another of their favorite vacation spots. Brandi and Shane are very happy with their move to Mandeville, specifically their neighborhood. Looking for a change that included a great location and schools, the Heaths made the right choice, as it took no time at all for them to fall in love with living in The Sanctuary and make it their home.

HAIL TYRUS! You’ve seen him on Fox News. You’ve seen him on the big screen. You’ve seen him in the wrestling ring. You’ve seen him atop an illuminated float in the Orpheus parade. Chances are you’ve also seen him enjoying a nice walk down a quiet street inside The Sanctuary. Tyrus is your larger-than-life neighbor who has seemingly lived at least three or four lives and is still going strong. Tyrus is everywhere these days, but he and his wife, Ingrid, and their children, Georgie, Rock, and Rhett, call Mandeville and The Sanctuary home. Tyrus was born in Massachusetts but grew up in the Los Angeles area. He fell in love with the Northshore area when he was filming the movie No One Lives in Mandeville. Then, while he was in town for a WWE event, he met his future wife, Ingrid Rinck, who is from the Northshore. Now, he can’t imagine living anywhere else. Tyrus and his family love everything about being residents in The Sanctuary. “It truly is a sanctuary. I love taking walks along the trails in the neighborhood with my family and taking in the beautiful wildlife and scenery,” Tyrus said. “You can’t get this beauty and peace anywhere else.” Tyrus looks forward to the tranquility found within The Sanctuary since he spends several days a week in New York City where he works as a regular on-air contributor for many Fox News Channel shows such as “Gutfield” and “The Five”. Sure, it would be easier for Tyrus to live in New York City, but Mandeville has captured his heart, and he does not mind the commute as long as he can still call The Sanctuary home. Tyrus’ journey to The Sanctuary has been filled with adventure after adventure. In his early years, Tyrus was a bodyguard for Snoop Dogg. Shortly after college, Tyrus began his wrestling career in the WWE and became a main character in WWE for years under the ring name “Broadus Clay.” Tyrus even appeared before millions of television viewers at Wrestlemania XXVII and XXVIII. Tyrus has wrestled against several WWE legends such as John Cena, The Big Show, Jinder Mahal, and Dolph Ziggler. Tyrus then continued his wrestling career with TNA wrestling in 2014 where he changed his ring name to Tyrus. In 2016, Fox News host Greg Gutfield first invited Tyrus to serve as a guest commentator on “The Greg Gutfield Show”. This 22 | The Sanctuary Living appearance impressed everyone at Fox News, and soon, Tyrus
began appearing as a regular commentator on many Fox News shows. Tyrus has also returned to the wrestling ring for the National Wrestling Alliance “NWA.” Tyrus currently holds the NWA World Television Champion Title, and he has no intentions of relinquishing that title anytime soon. “I’ll continue wrestling as long as I can continue to lace up my boots with ease,” Tyrus exclaimed. “And the last time I wrestled back in August, I laced them up without a hitch, so I think I still have something left in the tank.” Recently, Tyrus had the distinguished honor of serving as the Monarch for the Krewe of Orpheus. Tyrus recalled the phone call from the parade organizers informing him of his selection. “I got a call and the invite to be the Monarch of Orpheus, and the Orpheus people kept telling me how much I am going to love New Orleans and the Mardi Gras atmosphere. They even wanted to meet me at the airport with a jazz band and a police escort,” Tyrus recalled. “I let them finish, and then I said, ‘I live in Mandeville.’ There was silence and then chuckles,” Tyrus said. “They assumed I lived in New York and had no idea I lived just across the Causeway.” Tyrus at least got his police escort across the Causeway as he arrived Mardi Gras weekend to reign as Orpheus’ Monarch. “I actually got to chase the police for once,” Tyrus boasted. Tyrus was treated like a king and enjoyed every second of his reign. “I really can’t say enough about the fine people in the Krewe of Orpheus, including Sonny Borey and Renee Maxwell,” Tyrus said. “From the executive board, to the Krewe members, and to the NOPD officers in charge of security, everyone was amazing,” Tyrus recalled. Tyrus even admitted that riding in the parade was more thrilling and exciting than being in the ring in front of millions of television viewers during his appearances at Wrestlemania. Tyrus also proudly mentioned that his lovely wife surprised him with a custom-made crown to wear during his ride. At the end of the night, when his float pulled into the Convention Center, Tyrus was on cloud nine and even had a surprise reunion with several of his wrestling opponents from his days in the WWE, including his friend, Chris Masters. During his reign, Tyrus reunited with Jamie Foxx, and they reminisced about an incident back in Tyrus’ bodyguard May - June 2022 days in Los Angeles when Tyrus was forced to use some necessary
force to protect Mr. Foxx from an unruly fan in a club. Finally, at the end of the night, Tyrus was presented with a huge surprise: a lifetime membership in the Krewe of Orpheus. What a ride it was and continues to be! Tyrus, as you can tell by now, wears many hats. In addition to his trademark Boston Red Sox hat, his Fox News hat, his wrestling hat, his acting hat, and his father and husband hat, Tyrus now wears a new hat – author. He recently completed his first book - an autobiography entitled, Just Tyrus: A Memoir. His recentlyreleased book dives into his wild, but triumphant, life story. Tyrus is most proud of his book’s predominant message of accountability. “I just want people to understand that life is about taking ownership of not just your victories, but also your failures. We need to stop playing the victim all the time and to own our mistakes and problems in this life,” said Tyrus proudly. Tyrus also reflected on his book’s message by stating, “I hope people will read my book and understand my struggles growing up as a child but also understand that just because you are sometimes dealt a bad hand in life, it doesn’t give you the excuse to fold and not make something of yourself. Blaming others will get you nowhere. Accountability and humble self-reflection will pay you dividends in life if you focus and work hard to succeed.” Tyrus continued, “The only hero in the book is me. The only villain in the book is me. The important thing is looking in the mirror and taking responsibility and not falling on that crutch by blaming someone else. Life is not about blaming people.” Tyrus’ book is a must-read for anyone looking for inspirational insight and motivation. When his busy work schedule finally winds down each week, Tyrus always finds his way home to Mandeville and The Sanctuary. Tyrus also enjoys an occasional cheat-meal pizza at Coscino’s, but shhhhhh….please don’t tell his health-conscious wife, creator of the Rinck Routine. Wherever Tyrus is, his heart is always at home in The Sanctuary with his family. The world slows down while he is home. Even something as simple as catching some rays from the South Louisiana sun on his balcony with his family alongside means everything to him. Tyrus and his family truly are a treasure to this community, and we are happy and lucky to have them here. Hail Tyrus, our adopted king!

Culver and Christopher Stone are two business-minded teens who have found their niche in their own backyard. Their business venture, appropriately called, “My Best Friend” is a dog concierge service that started from a simple inquiry on the Sanctuary Sister’s Facebook page. About a year ago, a neighbor posted that she needed someone to help with exercising their two rather large dogs every afternoon with a long walk. Culver, not exactly knowing what he was in for, accepted the task of walking these two lovable Labrador mixes. Because of their size, walking them at the same time was a bit more challenging than he had anticipated. It didn’t take long before he turned to his younger brother Christopher for backup. In no time, the brothers found their groove with the Labradors. They quickly began to realize that taking care of dogs and other pets could be the perfect fit for a neighborhood business. Plus, Christopher and Culver really enjoy being outdoors making this newfound “chore” all the more fun. Pretty soon, the idea for “My Best Friend” became a reality. Culver, a freshman at St. Paul’s who plays J.V. football for the Wolves and Christopher, a 7th grader at Mary, Queen of Peace who spends his time playing baseball for the NOLA Monsters, make a great team as they juggle school, sports and pet business responsibilities with ease. Helping people manage their pets is something that Culver and Christopher both enjoy.Christopher explains that he likes the dogs that can run with him because it’s fun and great exercise for him and the dog. Culver loves spending time with animals of all

kinds and plans to pursue a career in veterinary medicine. Helping people with their pets is a natural fit for him. Culver stresses that dogs need at least one, brisk, forty - five minute walk daily, minimum, and he, along with Christopher, are more than happy to accommodate. The Stone brothers take pride in their work as pet caregivers and take as much pride in their school pursuits. Science is a favorite subject for both. Christopher finds science interesting and the easiest subject, which he attributes to his interest in it. Culver likes how science incorporates math, giving it a challenge that he appreciates. It’s a bright future for this pair who hope to one day pursue careers as doctors: one for people and one for animals. “My Best Friend” offers a variety of services for pet owners who live in The Sanctuary. Christopher and Culver will happily walk, run, feed, check on, and even change cat litter for your furry family members.“Getting paid is great, of course, “ says Culver, “but really I just like being with the pets.” For a couple of brothers who stumbled upon their budding enterprise by happenstance, Culver and Christopher Stone have found a calling where they can be helpful to their Sanctuary neighbors, and they get to hang out with some pretty awesome pets. With summer fun comes some dangers for our pets. Here are several tips to help you and your furry bestie have a safe summer. Follow VetNaturally on FB or Instagram for reminders! 1. Provide plenty of water and shade and always place the water in the shade so it stays as cool as possible. 2. Try freezing some treats in a block of water. When you put the frozen block of water out, the ice will melt, and your dog can have a cool treat ( blueberries, bananas, organic dog treats). Provide regular drinking water in addition to this frozen treat. 3. If your dog or cat has a dark coat they are more heat sensitive because dark fur absorbs more heat. Monitor these pets more carefully. 4. If your dog has a double coat (huskies, labradors, golden retrievers) they will be more prone to heat stroke because their coat is thicker. Monitor these pets more carefully. 5. Don’t shave your pet’s hair off for the summer! Hair is a natural skin protectant. Shaving your pet’s coat will decrease their sun protection. It will also slowly destroy your pet’s arrector pili muscle. This muscle lifts the hair off the dog and allows a layer of air between the surface of the hair and the skin-serving as an insulated barrier from the sun. 6. When walking your pet, choose a cool time of day. The time we recommend at VetNaturally is right as the sun is coming out or setting. Additionally, before you and your pet hit the sidewalk, VetNaturally recommends that you place your hand on the sidewalk for 10 seconds. If this temperature is comfortable for you, it is okay for your pet and won’t harm the pads on your pet’s paws. 7. Be sure to monitor your dog’s footpads and interdigital spaces. Walking around on the street and grass has many dangers for your

pet. Sticks, broken glass, branches, twigs, and the like can often lodge in the paw. Animals can’t just pull out a splinter. They will bite at the area, limp, or worse: suffer in silence. Check the feet regularly. 8. Fleas and ticks are in full force during the summer months. Apply a veterinary approved product to protect your pet from getting bitten and from bringing the tick or flea into your home. 9. Make your Fourth of July plans now with respect to your pet. Doggie day care will fill up quickly, so booking in advance is a must. If you will be home with a firework phobic pet, make plans to help them. Acupuncture, aqua-puncture, appropriate essential oils and certain Chinese herbs can all be helpful for pets scared of foreign firework noises. If your dog has severe anxiety with fireworks, he may need veterinary recommended and approved sedation. 10. Activities for your pet like jogging and walking, as well as allowing them to sit in a poorly air-conditioned car for only a few minutes can become deadly for pets in Louisiana. Due to harsh summer temperatures, heat stroke is a serious danger to pets. Be cognizant of overheating signs: open-mouthed breathing, heavy panting, thickening or lack of saliva, red gums, and the last adaptation is a LONG curled tongue. When you begin to see these signs, your pet is getting overheated and needs attention at once. Also any breed with a short nose (bulldog, pug, French bulldog, etc) is much more sensitive to heat in general, so taxing activities in the heat are particularly dangerous for these breeds.

On Saturday, February 19th, the “KREWE OF SANCTUARY” sponsored a lively neighborhood Mardi Gras Parade. The festive event for neighborhood friends and family hosted golf carts, four wheelers, bicycles, and even some walking groups of revelers!
