Adam and Kortney Bennett and their children, Adele and Harlan, have created their dream home in The Sanctuary. Since making it their home in November 2020, they’ve embraced the tranquil, nature-filled environment, leaving behind the bustling city life of New Orleans.
From the beginning, Adam and Kortney wanted their home to blend modern simplicity and Frenchinspired architecture, so they took on the role of both designers and builders. It was a labor of love, but one with expert help. The couple worked with contractors like Palatial Stone and Tile and Ahlstedt Dry Wall to create the unique space they love to call home.
The Bennetts’ children, Adele, 7, and Harlan, 2, keep them busy. Adele is a second-grader at Our Lady
of the Lake, and Harlan attends Northlake Christian’s Early Learning Center. Adele has been practicing gymnastics for four years at North Shore Gymnastics and enjoys playing soccer with the Mandeville Soccer Club.
Their kitchen is one of the family’s favorite places to be together. With a beautiful full waterfall island designed by Palatial Stone and Tile, it is the heart of their home where they gather and entertain. Another beloved feature in their kitchen is the two white oak French doors that lead to their pantry. Salvaged from an 1800s French estate, they add a touch of historical charm to their space. Another favorite for Kortney is her must-have spa-inspired master bathroom, featuring a stunning book-matched marble wall. These

His passion for art is also showcased with works by renowned artists such as local talent James Michalopoulos, New York finger painter Iris Scott, and stencil artist Penny.

One of the family’s favorite things about The Sanctuary is the surrounding nature. Adele and Harlan look forward to spotting deer and other wildlife wandering through their yard every morning. They’ve encountered a variety of animals, including owls, eagles, raccoons, and even an alligator. The family has also had their share of wildlife adventures, with Adam becoming an armadillo trapper after a family of armadillos made the Bennett’s garden home! Thanks to Adam, the armadillo family was carefully rehomed.
When it comes to local dining, the Bennetts have a few favorites. They enjoy dining at Pardo’s, where their kids are always made to feel welcome, and can often be found at Leonardo’s. Their Friday night tradition is sushi at AKI in Covington, where Chef Angus has become a family friend. They also
enjoy Trey Yuen for the occasional Chinese food craving.
In addition to their love for great food, the Bennetts enjoy spending time together on evening golf cart rides, a frequent tradition that they have come to cherish. They also love family walks and bike rides, embracing The Sanctuary’s peaceful, nature-filled surroundings.
The Bennetts have enjoyed a range of vacation destinations, from Disney World to Aspen, New York, and even international spots like London. No matter where they go, they always look forward to returning home to their Sanctuary home.
Adam and Kortney have created a space that blends their love of art, antiques, and modern design with the warmth and comfort that makes it home. They’ve embraced everything their neighborhood offers for their young family, from the natural surroundings to the lasting friendships they’ve formed. For the Bennetts, their home is more than just a place to live—it’s a place they look forward to being together every day.

• Mycoplasma Pneumoniae infections ( Walking Pneumonia)
The CDC recently alerted healthcare providers about a rise in Mycoplasma Pneumoniae cases in individuals under 18. Often causing cough and fever, these infections can sometimes progress to pneumonia. While most cases are treated outpatient, Covington Trace ER & Hospital also offers inpatient care when needed.
• Viral Influenza (Flu)
Cases in adults and children are rising and likely to stay elevated through winter. Symptoms include fever, chills, cough, sore throat, body aches, and fatigue. Along with supportive care, antiviral medications may be prescribed if symptoms start within 48 to 72 hours before evaluation.

As the weather cools down, deer are more likely to munch on your garden due to their natural food sources becoming scarce. This means they’ll be drawn to your plants, even ones they typically avoid, and may even eat flowers and plants they usually ignore.
To protect your garden, plant deer-resistant annuals like Dianthus and snapdragons. These plants are less appealing to hungry deer and help keep your garden intact through the fall and winter months.
For extra protection, consider installing motion-activated deer sprinklers that spray water when deer approach your garden at night. These sprinklers can be tied into your existing irrigation system, creating an automatic deterrent for nighttime grazers. Taylor Galiano’s Labrador Retriever, Gunner, has been a beloved part of the Galiano family for four years. In 2020, during COVID, Taylor and two other families in The Sanctuary decided to get puppies from the same litter after admiring a neighbor’s yellow Lab. Soon, a handsome white Lab named Gunner entered the picture and entered the hearts of the Galiano family.
Gunner Galiano is intelligent and knows and understands many words and phrases. Along with brainy attributes, he is playful and loves outdoor adventures. His favorite activities include hide-and-seek, long walks, chasing birds, and, in true Labrador fashion, chewing sticks and swimming. A real nature boy, Gunner would rather luxuriate on the grass in the sunshine than most anywhere else.
“If you ask anyone, they can tell right away that I am Gunner’s person,” Taylor proudly explains. He sleeps in her room and waits by the door when she leaves, showing how closely they are bonded.
Gunner’s journey hasn’t been without challenges. At just two years old, he tore his MCL and ACL, requiring surgery. The required six-week bed rest and lengthy rehab that included swimming laps, his energetic nature made it hard to keep him still. He made it through the restrictive six weeks, and after six months of recovery, Gunner was back to his active self, fully healed and ready for more outdoor adventures.
Gunner’s playful energy, eternal bond with Taylor, and stubborn determination during his recovery make him a cherished member of the Galiano family. Whether lounging in the grass or eagerly greeting Taylor at the door, Gunner brings warmth and love to every moment, reminding everyone of the special connection between pets and their owners.

Dr. G’s Top Ten Winter Pet Tips
1.) Safety proof your house for winter
Colder weather usually includes fireplaces. Place a protective cover over the fire so curious cats and dogs (and kids) can’t get into trouble. Don’t place pet beds too close to the fireplace or portable heater.
2.) Make some noise before starting your car
Outdoor cats and other outdoor animals often hide under cars to stay warm. Before you start your engine, beep the horn or knock on the hood to make sure they don’t get hurt by the engine.
3.) Check their paws after outdoor play
Frequently, pets will walk in obscure areas to escape the cold ground. These new areas could be full of thorns, branches, or other items that can lodge in their pads. Quickly look at the paws to ensure the pads are okay after outdoor play.
4.) Keep them on a leash
Many pets go missing in the winter because the cold air can mask the usual smells of an environment. This change can make it more difficult for your furry baby to find his way home.
5.) Check the microchip information
If your pet does wander, make sure his microchip is up to date with your contact information. Call the company and verbally check what contact information they have for you. This small step is often the key to reuniting with your pet.
6.) If you have an outdoor dog or cat, please monitor the temperatures
On cool nights (where it’s colder than 70 degrees), bring them inside. Pets don’t “do well because they wear a fur coat.” Have compassion and watch the temperatures daily.
7.) If your pet suffers from arthritis, the symptoms are usually worse in the cold weather
Winter is a great time to start acupuncture and laser therapy to help your arthritic pets stay comfortable. You can also use a daily topical rub by VetNaturally called PreviPain. It’s a great support for circulation, muscle health, nerve health, and pain control.
8.) Make sure any pet outdoors has access to shelter
Whether outside for an hour or several hours, they should have a safe place to keep warm if they are uncomfortable in the cold. A good rule of thumb is if it’s too cold outside for you, it’s too cold for your pet.
9.) Keep up their exercise routine even in the cold weather

E.J. Fielding funeral home

E.J. Fielding Funeral Home has graciously served families in Covington since 1992; however, the Fielding family has been rooted in the funeral industry for over 150 years, when 16-year-old carriage driver and cabinetmaker Jacob Schoen arrived in New Orleans from Germany. Jacob soon began using his skills to build coffins and transport them in carriages when New Orleans was hit with yellow fever. This marked the beginning of the Schoen/Fielding family’s 150-year legacy of supporting families in honoring and celebrating the lives of their loved ones.
In 1972, Eddie Fielding, a licensed funeral director and the great-great-grandson of Jacob Schoen, founded Cemetery Services, Inc., a business dedicated to assisting cemeteries with mapping, maintenance, and monument work. His collaboration with the owners of Pinecrest Memorial Gardens led to the opportunity to purchase the cemetery in 1979.
After the Schoen family sold their five funeral locations in 1986, Eddie Fielding lll, with the guidance of his father E.J. Fielding Jr., and support of family and community, opened E.J. Fielding Funeral Home in 1992. His sister, Kathy Fielding Smith, joined as a funeral director, helping Eddie manage the funeral home alongside his son, father, and uncle.
Today, E.J. Fielding Funeral Home has grown to
employ over 40 full- and part-time staff members. Both Eddie and his sister Kathy are now semi-retired, with Eddie continuing as CEO and funeral director, while Kathy manages public relations. Sixth-generation Benji Fielding, now serving as COO, continues the traditions Jacob Schoen started so long ago.

You don’t have to cross the Causeway to find incredible food. Here on the Northshore, we are blessed with an amazing culinary scene. Whether looking for something casual or upscale, many options will satisfy your dining expectations. The variety of dining options continues to grow, and so does the sophistication of palates of Northshore residents. Three local restaurants in the area have stepped to the forefront to serve fresh and memorable fare to all willing to eward themselves with a fantastic culinary adventure. Local restaurants such as Tavi, Papillon’s, and Bon Sake each provide memorable dining experiences and are true gifts to our area. We will explore each restaurant and provide our recommendations and experiences for each.
Our first stop takes us to Tavi. Located at 330 N. New Hampshire St. in the heart of downtown Covington, Tavi serves up amazingly bold Israeli, North African, Greek, and Middle Eastern-inspired dishes seven days a week for lunch and dinner. Opened by local chef John Besh, Tavi is a welcomed gem in the rapidly expanding downtown Covington area. Executive Chef Fariz Choumali offers inspired dishes that harken back to his childhood. Chef Fariz’s main goal is to serve customers food from his heart, reminiscent of the food his mother, Haifa, prepared for him as a child. The dishes at Tavi showcase bold Middle Eastern flavors combined with fresh, locally sourced Louisiana ingredients. Most of the dishes at Tavi are designed to be shared, which is what we prefer since it allows the diner to taste the many diverse and flavorful offerings. When you first sit down, the temptation of all temptations arrives at your table: the homemade pita bread. Born and raised in Tavi’s wood-fired oven, the pita bread arrives warm, succulent, and ready to fill your grumbling belly. Not to be outdone, Tavi offers an array of hummus options, some of the most popular items on the menu. You can’t go wrong with Tavi’s famous fried chicken or wild mushroom hummus. We got both, and we were happy we did. Other popular menu items include the Baba Ganoush, Suzuki flatbread with Armenian-spiced meat, tomatoes, mozzarella, and pomegranate molasses, crispy halloumi cheese, slow-cooked lamb shank, and the home-style chicken leg and thigh.
Fried Chicken Hummus
Chef Fariz came to our table when we sat down and said, “Let’s have some fun.” That was an understatement. We embarked on a culinary adventure that was one of the most memorable we have ever experienced. Chef Fariz was showing off this night, and he offered food from his childhood and demonstrated his passion and true love of cooking. We feasted on Baba Ganoush, fried chicken hummus, fresh Israeli salad with cherry tomatoes, cucumber, red onions, Bulgarian feta cheese with a preserved lemon vinaigrette, Gulf shrimp kebab, and the flatbread. The homage to his childhood is found in the chicken leg and thigh dish. Chef Fariz takes great pride in this particular dish because he said it reminds him of a traditional Sunday meal from his childhood. The chicken is roasted and served with aromatic rice, charred green onions, pistachio, pecans, and tzatziki. Like all of the dishes at Tavi, this is a symphony of harmonic flavors flowing from taste buds to energized taste buds. Don’t sleep on the desserts, either. Our favorite was the Ghazel Banat – an orange blossom gelato with pistachios and cotton candy for the win! The entire night was a win. Our next stop took us to a memorable experience at Papillon’s. This fine-dining Italian and French cuisine restaurant is nestled in the heart of old Mandeville along the trace at 690 Lafitte St. Papillon’s is led by chef/ owner Papillon Anderson and his wife, Lauren. Papillon’s improves upon the legacy left by the former tenant of the property, Gio Vancheri, with its homemade Sicilian and French-inspired dishes. Papillon’s overall ambiance is perfect for a romantic date night, a special occasion, or simply a night out with friends. Its dimly lit dining room offers a cozy, intimate space to enjoy your meal.
We arrived early and grabbed a drink in the bar below the restaurant. It was such a cool and fun spot to soak up a cocktail before moving upstairs to the main dining room. Upon entering the dining room, we were welcomed by our friendly server and soon found ourselves immersed in the cocktails and wine menu. Following a delicious Prosecco and a glass of Caymus, we were ready to explore the menu. Papillon’s offers traditional and home-style favorites such as Spaghetti Bolognese, Lobster Ravioli, Duck Confit, and a 14 oz. Veal Chop. We wanted to experience a little bit of France and Italy, so we started with a fresh and delicious beet salad and the Burrata served with pesto and ciabatta crostini. These mouthwatering appetizers were the perfect balance of savory and fresh. The journey continued with our entrees. We ordered the hearty Osso Bucco, which featured a slow-cooked bone-in veal shank served over risotto, and the Eggplant Fiore, which consisted of thinly sliced eggplant pan-fried and a homemade succulent marinara sauce.
We felt like we were in the old country with each bite. The Osso Bucco veal shank fell off the bone, and the eggplant melted in our mouths. We could tell Chef Papillon truly cares about his food, ingredients, and, most importantly, customers. Papillon’s was packed when we dined on a recent rainy Friday night; it was no surprise. Papillon’s serves up fresh ingredients, offers a fantastic menu of dishes, and treats its diners with first-class service you would expect from a restaurant of its caliber. This recipe is perfect for a successful restaurant and a memorable dining experience. We recommend you give Papillon’s a try if you haven’t already. Our final stop takes us to arguably the best sushi restaurant on the Northshore. Bon Sake has taken the Northshore sushi scene by storm with its amazingly fresh ingredients and innovative sushi creations. Located in downtown Covington at 528 North Columbia Street, Bon Sake is the sushi restaurant our area deserves. This charming restaurant has quickly become a local favorite for its delicious cuisine, friendly atmosphere, and commitment to quality. Serving up unmistakably fresh, high-end sushi (we got to see a 200-pound bluefin tuna being delivered to the kitchen during our tour), Bon Sake delivers quality and quantity with each dish. This isn’t your father’s sushi restaurant. Chef Rodney Bonsack, formerly of Rock n Sake, took his talents to the Northshore and has created an innovative and bold menu that celebrates its dishes as edible art and promises to present to its diners the most “beautiful and delicious sushi you’ve ever enjoyed.”
We were treated to a delicious snow crab salad, Surf and Turf roll featuring seared beef, cream cheese, jalapeño, green onion, ponzu, eel sauce, and voodoo sauce, the Wolverine Roll featuring nori, fresh tuna, tempura shrimp, jalapeño, cream cheese, habanero tobiko, honey, ponzu, voodoo sauce, and spicy sesame oil. These rolls pack a flavor punch and do not apologize. What an explosion of flavors! Other menu favorites include the ever-popular salmon sashimi with foie gras, featuring a truffle, honey, and soy garlic oil you will want to drink through a straw, nigiri flight featuring a chef’s choice of hand-selected fish, and numerous small plates featuring the best Brussel sprouts you’ve ever had and blue crab rangoons.

A Team Spirit for St. Paul’s Lacrosse
This year, six young men from The Sanctuary are giving their all on the lacrosse field at St. Paul’s School. Deke Carpenter, Cole Walmsley, Joseph Von Gruben, Matthew Gagliardi, Thomas Von Gruben, and Colton Gernan, are taking their contribution of talent, dedication, and camaraderie to the Wolves seriously. Each brings a different perspective on the game, but their shared passion for lacrosse brings them together.
Senior Deke Carpenter, who plays attack/midfield, appreciates the creativity of lacrosse and the countless ways to score. After coming off the football season, he’s excited to rejoin the lacrosse team for his final year, reflecting fondly on the mentoring from older players during his first lacrosse season. The understanding and experience he has gained since he started is immeasurable. Among these, Deke reflects.
“[The] biggest thing I learned is that the games are won in practice, not on Fridays.” As Deke looks toward getting into a top fifty college, his ambition to study philosophy, business, and eventually law highlights his drive both on and off the field.

Sophomore Thomas Von Gruben also thrives on the game’s speed but acknowledges that maintaining a solid mentality is one of the biggest challenges. “You can’t let yourself get nervous and drop the ball,” he says. As a defensive midfielder, he’s particularly excited about facing rivals like Catholic and Jesuit and aims for victory this year.

Matthew Gagliardi, has deep family roots in lacrosse.
Looking to try something new, junior Cole Walmsley, the team’s goalie, decided to give lacrosse a try and hasn’t looked back. Motivated by the sport’s emphasis on teamwork, he revels in the constant communication between team members that is vital to their success on the field, adding, “The team has to be working as one to make things happen instead of doing things individually.” Cole looks forward to leading his team to a state championship this year.
Eighth-grader Joseph Von Gruben, an offensive midfielder, thrives on the speed and physicality of lacrosse. As he continues to develop his skills, he is grateful for the support from older teammates, noting, “Older teammates taught me the basics on how to pass, shoot, catch, and run with the ball.” Eager to hone his skills on the field, Joseph looks forward to
Matthew’s dad, a New Yorker, has played lacrosse all his life and coached St. Paul’s to a state championship in 2019. Taking to the sport early on, Matthew notes, “ My dad introduced me to lacrosse when I was five, and I’ve been playing ever since.” Playing lacrosse is second nature to Matthew. He has competed on teams in Louisiana, Florida, and Texas and currently plays for St. Paul’s and travel team NOLA Krewe Lacrosse. Matthew loves the fast pace and is eager to win alongside his best friends.
Sophomore Colton Gernon was introduced to lacrosse by a friend who played on the St. Paul’s team. After learning to throw and catch, he was captivated by the sport. He began playing in eighth grade and now plays offensive midfielder for St. Paul’s. He values the team’s camaraderie, adding, “The team works together by celebrating for each other when someone does good and is not afraid to give good criticism when needed.” Colton respects the fast-paced nature of the game and the quick decisions required. He’s most excited about playing and cheering on his teammates this season.
Deke, Cole, Matthew, Thomas, Colton, and Joseph are valuable players on a cohesive and determined team. They are united by their love for the fast-paced, dynamic game of lacrosse and their shared goal of leading St. Paul’s to success this season.
