about CORNWALL PEOPLE for CORNWALL PEOPLE by CORNWALL PEOPLE Dr. Lama Ghantous (pictured here showing a
pamphlet to patient Kristofer Renaud with her assistant Kathrine Lefebvre looking on) proudly graduated from Ottawa university with Bsc in biochemistry in 1993 and from university of Montreal with a doctorate in dental surgery in 1997. Dr. Ghantous established her family practice here in Cornwall in1999 and attends Continuing Education courses on a regular basis to keep current and to provide quality treatment.. Integrity, empathy and professionalism are the guiding principles for this practice, and your dental health is their focus. Dr. Ghantous offers a wide range of dental services including wisdom teeth extractions, implants, dentures, partials, root canal treatment, invisalign, removable orthodontic appliances, night guards, desensitizing treatments, crowns, bridges, veneers etc. For your comfort, all these services can be offered with either nitrous oxide or oral sedation. She has a special interest in preventative dental education in elementary schools. From focusing on good oral hygiene habits, healthy diet, how to avoid trauma to teeth, to the importance of taking care of baby teeth and more, Dr. Ghantous informs her young patients early on. Dr. Ghantous has been a guest speaker at several functions addressing multiple oral health topics. Recently at the “I am a woman" show, she chose to talk about “Women’s oral health and the overall health” "Good oral health is essential to good general health. And specifically for women, a growing body of research has linked gum disease to a variety of health problems that affect women. Because gum disease is a bacterial infection, it can enter the bloodstream and may be a factor in causing other health complication," says Ghantous, "Women have special oral health requirements during the unique phases in their lives. Changes in female hormone levels during puberty, menstruation, pregnancy and menopause exaggerate the way gums react to plaque. So at these times, women need to be especially thorough when brushing and flossing every day in order to prevent gum disease." And since gum disease is usually painless, many women may not even realize they have it until it reaches an advanced state. Your best defense is to brush and floss daily and see your dentist regularly. You can book a complimentary consultation for invisalign treatment, Zoom whitening and implants. The office is open Monday to Friday 8:30-5:00 and located at 30-13th street east in the medical building. Call today, 613-938-0645 or 1888-897-8080

Last week I re-visited Hudson, QC where the local canine enthusiasts celebrated their fourth annual Pet Idol & Adoption Day. Once again it was a success with some really talented resident dogs who performed magnificently! The room was jam packed with an audience of about 300, made up of mostly families and their dogs. The tricks were so much fun to watch, and some of the dog’s performances wooed the crowd as they so affectionately did what their owners asked. What a heartfelt experience to see this powerful connection a dog has with his owner as he performs for his master. Give a high five to Donna Piché, who organized the event with her team of vo l u n t e e r s, and where her real goal is to generate interest to find homes for the many lost and abused dogs and cats that are brought to the event for adoption. While there is no shortage of sad stories of what people do to their pets, it is the hope of events like this to facilitate a companion to a household. Supporting this event were the Quebec SPCA, Kiko Dog Rescue & Adoption, Animatch Adoption , Rosie Animal Adoption, Greyhound Rescue Quebec, and Gerdy’s Rescues & Adoptions. Each table was staffed with volunteers who work endlessly to ensure the proper care of our neglected pets, and in the interim foster the animals until a home is found. I envy the village of Hudson on how it promotes an added quality of life to its residents where dogs are welcomed by all. Just walk around the village and you will spot the amenities needed to ensure owners are compliant with the local bylaws. There are people walking their dogs everywhere! I had a good chat with the Greyhound Rescue, and they are very grateful that they get five free weekends at Finnegan’s Flea Market to help promote their dogs, which by the way, is soon to start up on Saturday’s again. I hope to run some articles on the plight of the Greyhound, especially after learning we have some adoptees right here in Cornwall. Our photo this week is Alan (sorry I did not get his last name) & Scooby, who found each other through a rescue, and what a presence these two make wherever they go. I had a chance to be with Scooby for a few minutes, and he took to me like I was his best friend. Propped up by his head as he peered around under the safety of my arm was rather funny, considering the size of him. He was such a gentleman – a gentle giant! I had so much fun enjoying all the dogs that were there from Border Collies, Mastiffs, Chihuahua's, and mixed breeds to mention a few, which causes me to ponder that maybe someday we should do something like this in Cornwall too. Hmmm….you just never know what the Cornwall Dog Park Association is up to. Bob Sloan CDPA Chair

SOME MORE COFFEE GRINDS Congratulations to Thomas Mulcair! He is the new leader of the NDP. Mulcair was not my first choice for leader, but I would like to focus on what I perceive to be the positives of having him as leader. He is an excellent and engaging speaker (so the NDP will have a strong voice in the House of Commons again), he is an experienced politician both Federally and Provincially, he has the most potential of securing the Quebec vote again, and I think he has the most potential of attracting at least some Liberals and maybe even some Green votes to the NDP. A little satire! I know how Cornwall can rank as the #1 City in Canada. We can become a subburb of Ottawa, and piggy back off their success. That would work right? If that doesn't suit your fancy, I thought of an excellent new slogan for our City, and I welcome our tourism department to use it royalty-free: Move to Cornwall, we are still better than New Glasgow!
ARTS, CULTURE, AND POLITICS Mark Sultan live at La Maison! Mark Sultan hits the stage this Friday March 30th at La Maison Tavern in Cornwall. Also performing are the Sin Sisters Burlesque group, and Ottawa/Cornwall punk rock band Raw Raw Riot.
Canada Day Committee looking for a few singers! David Runions wrote the following on the City of Cornwall Facebook page: The Canada Day committee is looking for a few singers for an hour long showcase of local singers. They are also having a buskers event on that day. They are looking for local buskers before they go out of town in search of talent. Again as always, they are looking for local French performers. People’s Choice Award Winner Revealed! The Cornwall Regional Art Gallery says congratulations to artist Dwight Saunders. His fabric sculpture piece “Blue Rose” gathered the most votes from the public for the People’s Choice Award. Sandra Whitworth has a new CD! Whitworth says, "Thanks to the huge cast who helped make this happen. Marc D. Muir who produced, arranged, played multiple instruments and made all of it better, better, better; the many musicians who contributed their incredible artistry, Stephane Joseph Levi McAlear, Ann Downey, Jason Ryan, Noureddine Ismag, and Jeanne Ward; Roy Nichol who engineered it; João Carvalho who mastered it; Jason McNamara for awesome photos; Lynn Andrews for the stunning artwork; Aidan Whitworth for fearlessly navigating design challenges; and Terry McMillan at Healey Music for guiding us through the final steps". Kudos Sandra! I am looking forward to hearing the new CD! My Mother Nature Book Launch! Coming up on Saturday, April 14, 2012 from 9:00am until 12:00pm at The Gathering House, 2 Water Street, Chesterville, Ontario is a book release! Come out and celebrate 18 year old local author Jaymie Thurler and her new children's book; "My Mother Nature". Delightfully wise, full of wit, and exceptionally illustrated by Joel Fawcett, "My Mother Nature" is sure to be a keep sake for people of all ages. Meet Jaymie and Joel on Saturday April 14 and enjoy free story time, games, colouring, face painting, and music. You can also get your own signed copy of "My Mother Nature". The Gathering House cafe will be open serving up hot and cold drinks and lots of sweets. Kudos to Cabane À Sucre! I would also like to say congratulations to the organizers of the annual Cabane À Sucre event. Well done!
THE ENVIRONMENT Man sent to the moon, but coffee cups still not recyclable! I would like to see Tim Horton’s make recyclable coffee cups. Yes they have green options like the re-useable mugs, but during the very popular Roll Up the Rim contest, many of their cups end up in landfills. It's amazing that we can send a man to the moon, but environmentally friendly cups are still beyond our technological grasp. Weekly Recycling! The City of Cornwall is making it easier for residents to recycle with the introduction of weekly recycling collection in a single stream. As of Monday, April 2, recyclables will be picked up weekly on residents’ regular garbage collection day. All recyclables can be placed in a single container. To help usher in the change, all single family households

Dear Seeker Chicks Letter to the Editor: II would like to offer a response to the "Thrift Shop promotion fails to build good rapport with this customer" written by Jason Setnyk last week. As a business owner myself, I fully understand the reason why the thrift store did not give Mr. Setnyk the stamp he needed. When businesses run promotions, it's an incentive for customers to come back to their stores and buy. And when we say "get this or that for every $5 you spend in the store", it means that you will get that item if and only if you spend $5. $5 is not $4.35. Mr. Setnyk knew that if he didn't get to $30, he would not get the stamp. Why not buy for 65¢ more? That's what the rest of us do! If a business makes an exception for one, it will have to make that exception for all. And if 100 go through the business being short of 65¢ each, and the business makes an exception for them all, that will amount to $65 at the end of the day. I don't know about you, but as a small business owner, $65 means a lot to me.
Fred will be receiving a new blue box in the coming days. In addition to the new blue box, the old blue and black boxes can also be used. Interesting water fact! Interesting Fact - Last year, the Cornwall Water Purification Plant treated and distributed over 11,690,000 cubic meters of water. That’s enough to fill over 46 billion glasses of water! The 2011 Drinking Water Quality Report is now available on the City website: http://www.cornwall.ca/en/municipalworks/recources/2011DrinkingWaterQua lityReport.pdf
SOCIAL JUSTICE The Drummond report has received a great deal of attention, however the Commission for the Review of Social Assistance has slipped under the media radar. The report outlines pragmatic and fair ways to improve the Province of Ontario's welfare system, and the report should be key to the government's policies in reducing poverty. The report recommends that government remove barriers and increase opportunities for people to work. The Drummond report recommends rolling back the Ontario Child Benefit, which would be harmful to low income families who have children to provide for, and not a surprize, since the main objective of the report was about where to make cuts. The Drummond report does not address social needs such as the need for affordable housing and affordable childcare. History shows when poor people speak up, changes happen, and when the poor are silent, the government does not act. Therefore stand-up and be heard!

Check out the following testimonial and see for yourself how enjoyable it can really be….. “I wanted to share my thoughts on the cooking seminars I attended with Sylvie Thibert. A friend of mine invited me to come along. I am a crazy busy mom who works and tries to take care of herself so, normally, I say no to most of these things since any free time I have I prefer to spend at home. For some reason my gut told me I should go to this seminar, so I attended. I was so happy I did as Sylvie gave me the tools I needed to make some positive changes for myself and my family. I've always tried to be healthy but God knows that by living at the rink and the dance studio, it is not always easy. Sylvie's workshop explained how you don't have to be a super woman, even little changes can make a difference. The meals she prepared are easy to make and taste wonderful. She explained why organic and local foods are important. What stood out for me most was how to choose the proper foods for my family. I believe in positive thinking and meditation, and I practice yoga regularly. I guess I was looking for something to add to the positive lifestyle in the food spectrum and Sylvie's workshops came in at just the right time. Sylvie has an amazing personality and her aura is just so happy and positive that you can't help but be excited when she speaks. I encourage you to attend her workshop, if anything, you will have a great time just watching her perform in the kitchen.” Sincerely, Michelle Gosselin Thank you so much Michelle for accepting to write a testimonial of your experience at my seminars….you are awesome and are a true role model for so many… For more information, please feel free to visit my official website at www.thehealthnut.ca there is a contact link on the main page or you may also email me at thehealthnut@cogeco.ca or call me at 613-931-3119. I am going to be brave and admit; I am awkward at times. Hey, my last name and first initial is in the word, so I guess it stands to reason. At least I can admit it and laugh at myself, especially when others inevitably chime in. After Brad’s art on Saturday at Seaway Acoustic Performance concert, I came home and decided that I would make a homemade cake for Brad’s birthday. He was having a double birthday celebration with my mom the next day. I pulled out one of my favourite cookbooks & could see the earmarked page to make a one bowl cake from scratch. I tied all my hair up in a severe ponytail and gathered ingredients. I set the Ipod to random and began my cooking adventure, while following the precise instructions. I slipped the pans in the oven, and waited for the cakes to rise. When time was up, I carefully removed them, testing for readiness and let them cool. My stove rack was a little crooked so the cakes were uneven. Once cooled, they slipped out with ease and I set them in my cakeholder until morning. I woke up early on Sunday and proceeded to make homemade icing as well. I then iced the crooked cakes, that I tried to even out and knew, yes, I had yet another one of my famous good tasting, esthetically challenged cakes, which I dub as “earthquake cakes”. After scrambling to get piping that I didn’t have and trying to reduce the damage of the lopsided cake with the sliding icing; I decided, if I can’t make it look pretty or at least presentable, I’d add decorations to enhance the cake. Since Brad turned 18 and is embarking on a career in animation, I selected a few of his small childhood toys to accent the cake and surrounding tray. When I arrived at my parents’ home, I brought the covered cake and already warned them of the return of earthquake cake. I also posted a message about it that morning and received encouraging messages back. Hey at least I tried. My family, who I keep telling I am secretly writing a sitcom about, because it is sitcom gold; were laughing not at the cake, but at my lack of direction. I admit it, not only am I awkward, but I am also direction challenged. Last week, instead of writing 401 west, I wrote south because I was referring to Southern Ontario. My awkwardness has a certain charm, or so I keep telling myself. Thankfully I have an incredible memory, otherwise I may never leave my driveway. After the laughter settled down about that, I unveiled my cake, which they all admired for it’s quirkiness.

With temperatures rising and spring just around the corner, City crews are now turning their attention to cleaning up after the winter melt. As spring rolls around, the accumulation of winter’s unsightly garbage gets revealed, and residents and businesses can do their part by helping to pick up litter in the City’s parks and commercial areas. “We all have a part to play in keeping our community beautiful and litter-free,” said Mayor Bob Kilger. Typically, City crews are still dealing with snow removal and the dismantling of outdoor rink boards at this time of the year, however the earlier-thanexpected thaw has prompted the City to accelerate its efforts. A number of garbage cans are now in place in the City’s outdoor parks, and additional ones are being fixed up to be placed in the parks and commercial areas later this week and next. Throughout the months of March and April, Parks staff will be picking up litter in parks, painting garbage cans, repairing picnic tables and benches and installing bike racks and flower boxes.

I could have tossed the cake and ran and bought one, instead, I made the best of a bad situation and gave Brad and my family one more memorable moment. Besides my love of sci-fi shines through . End result, I get an A for effort, a D for execution and an F for language. Just kidding, I didn’t curse once. We had a few laughs, it tasted okay and they also had a second cake to choose from, since there were two birthdays to celebrate. My 5-year-old niece Ella, picked out my mom’s 70th birthday, so they got her a "Hello Kitty" cake. She was so proud that the cake she asked for was given to my mom. So I may be awkward, we may not be your traditional family, but when things don’t turn out as expected, laugh about it and make the best of the situation. That’s the stuff some of the best memories are made of. Follow Kris Ward’s Blog at: www: kriscrossroads.wordpress.com

Financially Speaking with Brian Seguin
Delay in Investing Could Prove Costly You’ve no doubt heard that “time is money.” While this expression may be applicable in many areas of life, it’s especially relevant for investors — because the longer you put off investing, the less money you are likely to have when you really need it, such as during your retirement. That’s why it’s essential that you don’t wait to start saving for your days as a retiree. Many people think it won’t make much difference if they delay investing for a few years. As you know, time flies, and before you know it, “a few years” turns into a decade — and a decade’s postponement in saving for retirement can make an enormous difference in your life. How big a difference? Suppose you plan to retire at age 65. If at age 25, you began putting $200 a month into a taxdeferred vehicle, such as a Registered Retirement Savings Plan (RRSP), and your investments inside that RRSP hypothetically earned on average 7% a year, you would accumulate about $512,000 after 40 years. However, if you had waited until you were age 30 to start saving for retirement, with all else being equal, you’d end up with only about $355,000 when you reached 65 — $157,000 less — due to that five-year delay. And if you waited 10 years, until you were 35, you’d end up with about $243,000 — far less than half of what you would have accumulated had you started saving at 25. (Keep in mind that you will eventually have to pay taxes on these accumulations, and the actual figures don’t reflect fees, commissions or expenses.) Clearly, the cost of delay can be considerable — which is why you should consider taking these steps: Develop a strategy with your advisor. It’s easier to stick to a strategy if you know where you’re going. Your advisor can help you determine how much you need to save to reach the type of retirement you’ve envisioned. If you haven’t started saving, begin now. If you wait until you feel more financially comfortable before you invest for retirement, you may never begin. Even if you can put away only a small amount, such as $50 per month, you’ll have made a start.
SMART CITY TOASTMASTERS CLUB invites you to overcome your fears of public speaking and encourages you to learn speaking skills in a positive environment - Having fun is included!
Systematically invest toward your goal. To make it easier on yourself, set up your accounts to automatically move a set amount each month into your RRSP. As the above examples show, the best way to build substantial savings is to start early, but even if you’re in your 30s or 40s, you can catch up — although you’ll need to save more to potentially get to the same level.

“ About The House”
How do you patch a large sized hole in drywall and make it smooth and look like the paint was done at the same time as the rest of the wall? Angela, Port Alberni, BC Sent via FaceBook. Angela Thank you for the great question. First thing we have to know is how large is large. Tiny is like a nail hole up to about ½” diameter, small is ½” diameter or larger, medium about the size of a doorknob or larger, and large would be bigger than a dinner plate. Tiny holes can be filled with a couple coats of drywall compound or spackle applied smoothly and sanded. No other steps required, just prime and paint.
Small and medium holes can be patched easily with a small piece of drywall of any thickness. First square off the hole with a drywall saw. Now cut a patch 2 – 3 inches larger than the hole. On the back of the patch, scribe the dimensions of the hole with equal spacing all the way around. Now cut the back paper along the lines, fold and peel off the gypsum core. This should leave you with a patch the perfect size which has a paper flap all around the front. Now you simply apply drywall compound around and inside the hole and apply the patch. Large holes will require some bracing using a plywood strip along each edge. Simply screw it to the back of the drywall and allow it to overhang by half. Now cut a patch to fit inside the hole and screw it to the braces. Now you can cut the patch in the same fashion as above with the paper flap or you can use drywall tape to mend the edges. Now after the first coat has dried apply a second coat over the entire patch expanding out 8 -10 inches all the way around. Third coat will be expanded out another 8 – 10 inches . This is where the blending is really going to make the difference between the patch you can see and the invisible patch. We can pretty well detect any deviation in the wall over 1/8” to the foot so keeping the patch tight with a lot of pressure on the trowel and using as little compound as possible is very important and will result in a much cleaner finish. Once everything is dry sand and be sure that you feather the patch around all the edges. Do this by shining a light oblique to the wall. This will illuminate any high spots that will become apparent when the wall is painted. Sand them smooth and wipe down the dust. Now when you prime you want to expand out another foot or so all the way around. Now your baseball sized patch has grown to about three feet but should be invisible if you have done everything right. Painting is now straight forward provided you have some left over from the last time you painted. If you do just paint two coats over your patch and you should be good to go. If you don’t, then you will have to have more mixed to the same recipe as the old color. The problem with that is the newly tinted color, even though the code is the same as the last, will not match the old paint exactly. So to overcome this you will have to paint the entire wall, from corner to corner. The color will be close enough that you won’t be able to tell that it changes at the corner but stopping in the middle of the wall will leave obvious color, gloss, or texture differences. Good luck with your repair, and thank you for a great question. Sincerely, Joe And thank you to everyone who contributed this week. Joe,
A weekly look at racing from both sides of the 1000 Islands The 2012 racing season is just about here, and there are plenty of stories to follow at all our local racetracks as the new season approaches. It seems that many tracks have been struggling through a difficult economic time, but our tracks in this area seem to be on the verge of a great season, with speculation of increased car counts, and exciting events planned for the coming season. Over the past few weeks I have attended several racing related events that lead up to the start of the new season. On Tuesday, March 7th, Cornwall Motor Speedway hosted a press conference at Au Vieux Duluth Restaurant in Cornwall, Ontario to announce their plans for the upcoming season. Cornwall will host both the World of Outlaw Late Models (June 24th), and World of Outlaw Sprint Cars (July 29th) this season. These two divisions will bring the best of the best of dirt tracing to Eastern Ontario, and I am really looking forward to it. The WoO Late Models have been to Cornwall before, but this will be the inaugural appearance for the Sprint Cars. Cornwall Speedway also announced a plan to lower admission prices on all regular race nights, and introduced a three race Sportsman Series with one race each at Cornwall, Mohawk Raceway and Brockville Speedway. The Series will be called the St. Lawrence Seaway Sportsman Championship. I also attended the annual Gater Racing News Motorsports Expo on March 10th and 11th. Finish Line Web Design had a booth at the Expo with Dillon Sallows Sportsman car on display. We had a great time at the show, met a lot of great people and really enjoyed being part of the show. Thanks go out to the entire Gater News family for putting on such a great event each year.
This past weekend was the annual Frontenac Mall Race Car Exhibit in Kingston, Ontario, and also the Can Am Motorsports Park Car Show at the Salmon Run Mall in Watertown, New York. It is always great to see some of the local cars in the Mall before the season starts. It is a great way to promote the tracks to people that are outside of the racing community, and it is something that many tracks take advantage of.
Although the first green flag of 2012 is less then a month away, several tracks still have their banquets to honor award winners from 2011. Mohawk International Raceway hosted their awards presentations this past weekend, and I must say the track spared no expense when it came to handing out trophies. Each champion in all classes received a gigantic trophy, and the banquet itself was very well done. Cornwall Speedway will host their banquet this coming weekend, while Brockville Speedway honors their champions and top finishers the following weekend. There seems to be a lot of talk around the racing community that the car counts for the 358 Modified and Sportsman divisions at both Brockville Speedway and Mohawk International Raceway will be on the rise for 2012. Brockville Speedway fans will see a return of Lee Gill to the Modified ranks, and rumor has it that Pat O’Brien, Dale Planck and Carey Terrance will also call the BOS home on Saturday nights this season. I have also heard that a couple other 358 Modified teams will be attending Brockville on a regular basis for most of the season. Add that to the ultra competitive list of cars in the 358 Modified division, and this season could certainly be a year to remember. Brockville Speedway will host their first ever BOS Fan Fair on Saturday, April 14th from 10am until 2pm at Home Hardware in Brockville. The top five cars from 2011 in both the Modified and Sportsman divisions will be on hand with their racecars to sign autographs and meet with the race fans. There also seems to be some banter about Mohawk International Raceway, with the possible addition of Danny O’Brien and Stephane Lafrance to the 358 Modified division. Sportsman standout Tom Conklin is also making the move to the 358 Modified division at Mohawk Raceway. The biggest story though over the past few weeks is with Chapman’s Can Am Motorsports Park. It has been a frustrating couple of weeks with the debacle over whether or not Can Am is DIRTcar sanctioned or not. It seemed to start with the open tire rule races that were originally on the schedule, and from there it went back and forth over the next two weeks. Finally, an announcement was made just a few days ago that Can Am will not be sanctioned this year. What this really means, and how this will really effect Can Am is yet to be seen. I understand that there are some drivers that require a local DIRTcar sanctioned weekly track in order to compete for the Mr. DIRTcar titles, but there are only a few cars that run weekly at Can Am that also follow the DIRTcar series. I personally feel that the track will do just fine without DIRTcar. They have several exciting events lined up this year, and have raised the purse for the Sportsman division. They are offering some great incentive for all classes this year, and I look forward getting past all of the craziness and uncertainty from the past few weeks, and getting to the track to start a brand new season. The 2012 racing season is here. I look forward to seeing everyone at the track in just a couple weeks. I hope you continue to enjoy my weekly column, as always, any comments or suggestions can be sent to crevelle@ripnet.com.

FROM S HARYN’S PANTRY by Shar yn Thompson
GET A HEAD-START ON EASTER COOKING With Easter Sunday just over one week away, I wanted to share with you my "latest" favourite recipe for Hot Cross Buns. I was looking for a Hot Cross Bun recipe to give to my customer Claudette and came across so many recipes which I have baked and dated each year for Good Friday, that I had to choose out of all of them, my latest new favourite one. I soaked the dried fruit in a little Triple Sec for extra flavour. The recipe really is a very good one. You start the dough in your bread machine for such an easy way to make your buns. For a traditional Easter Ham, try my tender and moist ham with a scrumptious glaze. I save the water which I bake the ham in to start a potful of delicious pea soup. I use a mixture of whole yellow and split yellow peas for a terrific texture and flavoured soup. Make lots and lots of soup as pea soup freezes beautifully. I'll have more delicious recipes for you next week to help you with your Easter menu. Enjoy a great week!
THE BEST HOT CROSS BUNS liqueur and puff up nicely.
Use your bread machine to mix the ingredients on the "dough cycle". only add the fruit at "the add ingredient beep". This recipe will make about 15 large buns. 1/3 cup skim milk powder placed in a 2-cup glass measuring cup, add enough warm water to bring the level up to 1- 1/3 cups total liquid. You could also use warmed up potato water for extra nutrition and moistness for your buns. 1 egg at room temperature, beaten 1/4 cup butter, at room temperature, cut up into small cubes 1/3 cup white sugar 1- 1/4 tsp. Kosher salt 3- 3/4 cups unbleached bread flour ( Use Sharyn's Pantry bread flour, which is a bakery quality flour for the absolute best results. You won't believe the difference! ) 1- 1/2 tsp. ground cinnamon 1/2 tsp. ground nutmeg 1/2 tsp. ground cloves 1/2 tsp. ground allspice 1- 3/4 tsp. instant bread machine yeast 2 tbsp. grated fresh orange zest METHOD; -Place all of the above ingredients in your bread machine. -Choose the DOUGH CYCLE. INGREDIENTS TO ADD AT THE "ADD INGREDIENT BEEP"; 1/3 cup currants 1/3 cups golden raisins enough Triple Sec to nearly cover the golden raisins and the currants in a Pyrex measuring cup 1/3 cup glace orange peel 1/3 cup glace mixed fruit METHOD; -Use a Pyrex measuring cup and place the currants and golden raisins in it. -Pour in enough Triple Sec ( this is a lovely lightly flavoured orange liqueur ) to nearly cover the fruit. Microwave this on HIGH for 3 to 4 minutes. The fruit will absorb the
-To this, add the glace orange peel and the mixed fruit. Stir to mix and set this aside to come to room temperature. -Once the bread machine indicates the "add ingredient beep", pour the raisins, currants, mixed orange peel and mixed fruit into the bread machine and allow the machine to mix in the fruit and complete the DOUGH CYCLE. -Once the DOUGH CYCLE is completed, remove the dough and punch it down. Allow it to rest for about 10 minutes. -Divide the dough into about 15 equal pieces and shape them into buns. -Place them on parchment lined baking sheets. -Allow the buns to rise in a draftfree place for about an hour or so, until they double in size. I cover mine with a clean, dry tea towel. -Bake the risen buns in a pre-heated 350 degree F. oven for about 15 minutes, or until lightly browned. -Remove them from the baking sheet and allow them to cool on a wire cooling rack. TOPPING; -Once the baked buns are completely cooled, mix the following ingredients together and form a cross across the top of the buns. 1 cup sifted icing wugar 1 tbsp. table cream 1 tsp. pure almond extract -I place the icing mixture in a ziploc baggie, seal well and cut a small hole across one corner. Squeeze the icing through this to easily form a cross across the top of each bun.
SWEET AND SPICY BAKED GLAZED HAM
You will always find great buys for a nice big ham at Easter time. Buy several, use one now and freeze a couple for future use. With a ham, you can enjoy it roasted, have slices
of it fried with eggs for your breakfast, grind up some for Western Omelette, make a quiche, make a potful of pea soup. All these meals from just one goodsized ham. Your budget will sure be in line. 1 - 10 pound bone-in ham THE GLAZE; 1 cup brown sugar 2 tsp. dry mustard 1 tsp. ground ginger 1 tsp. ground cloves 1/3 cup pure maple syrup 2 tbsp. white wine or sherry vinegar METHOD; -Place you ham in a large roast pan, add enough cold water to nearly cover it. -I cover the top of my ham with a sheet of tin foil to protect it from drying out as it bakes. -Cover the roast pan with a lid. -Bake the ham in a 225 degree F. oven overnight. -In the morning, drain off all the water from the roasting pan, saving this for your pea soup. -By using a lot of water to roast your ham, you dilute the saltiness from the ham and this allows you to use the liquid for your pea soup. -Mix the ingredients for the glaze. -Brush this over the top of the ham in your roasting pan. -Use a sharp knife to score the top of the ham to make a pretty diamond design. It your wish, you can place a whole clove in the corner of the scored pattern on the ham. -Bake the ham, uncovered in a 375 degree F. oven, continuing to brush the glaze over top of the ham every 5 minutes or so. Bake the hame for about 20 to 25 minutes, until nicely browned and glazed. -Remove the ham from the oven and allow it to rest for at least 15
minutes, before you slice it up for your dinner. ENJOY!
EASY PEA SOUP
1 lb. whole yellow peas 1 lb. split yellow peas 2 Spanish onions, chopped 6 large carrots, grated 2 ribs of celery, chopped 1 bay leaf 1 tsp. dried thyme 1 tsp. summer savory 1 tsp. ground black pepper METHOD; -Pick over and rinse the peas in a sieve, watching out for any field stones. Place the peas in a very large pot. Cover them with cold water. Allow to soak overnight. -Next day, if you are planning to use the cooking water that you baked the ham in, drain offf the water that you soaked the peas in and cover them with the water from the ham. -If you don't have any ham water, just keep the water that you soaked the peas in to cook your soup with. -If you have a ham bone, add it into the pot and bring the soup to a boil. Cook, using a slotted spoon to lift off any scum and froth which forms as the peas begin to cook. Where Did Betty-Jane Go? I have been vacationing in Miami Beach for the last two weeks, my first Florida vacation. It did seem a bit strange, vacationing in a city rather than in the country side which has been our habit. Now that I reside in the country the city scape was a pleasant experience and I have to say that Miami is a beautiful place. Back to the idea of vacation, I find it remarkable that once I begin to relax and sink into my days, the anxieties of day to day living evaporate. A new rhythm is established for living the moments of each day. Suddenly there is space for me as well as all those important dreams and ideas that get pushed aside in the normal pace of life. Early last week I had one of my dream visions. These are more vivid and real than normal dreams and tend to stay with me. I assume that is because they have some deeper meaning and that perhaps the Universe is attempting to communicate something important to me. In this dream I found a child, very young, cold, craving attention, curious. I immediately slipped into my mothering role, hovering over the infant, hugging and loving her. The child seemed to be in need of my care, underdeveloped and undernourished. In the few minutes of this dream the relationship between me and the child grew very intense and I awoke with a start, wondering what the dream meant, assessing whether I was being called in some way to work with children.
ASK THE TOY LADY ...
roadSIGNS by Betty Healey
Ladies…time to get BALLS!
I have learned that my dreams, and probably yours, are metaphors for something deeper and as such, need not be interpreted literally. They are simply images of something missing in life or of something to come. Rarely do they mean exactly what they seem. With this in mind I relaxed and simply lay in bed with the images and the feelings that the dream conjured up. As I did so I began to wonder about the child and whether child I had found was me, Betty-Jane. While I have been away I have given myself the opportunity of writing and coloring in our new ME FIRST Playbook. (It’s always a good idea to use the tools you create for others!). I have a full set of colored pencils and using them I have immersed myself in filling in the images created by Tracy Lynn for the Playbook. As a child I loved to draw and color, in fact my mother often told me that I was drawing as soon as I understood how to hold a pencil. The act of coloring kick starts the brain differently. It is rather mindless as an activity yet it is mind opening as it allows you to banish other thought form and create space for your child to emerge. The child’s energy is about wonder, curiosity and creativity and of course, playfulness. It is about the dreams you had about who you would become when you grew up, some of which you may have realizes while other were buried. As I lingered under the covers with my dream memory, I saw myself again as a child with my friends Muriel and Charmaine. On warm summer days, we created castles out of blankets and lawn chairs. In the rooms of our creations we lined up all our dolls. Here was where I taught my first lessons and the dolls were the very best students. There is something in each of us that understands very early in life what we are called to do in our life. Teaching was my calling. It was not the career I chose initially however and one I have come back to. I am still considering what else the dream was showing me and I am left with the question “where did Betty-Jane go and what dreams did she have that I have forgotten?” It is a great question to consider, not for the purpose of digging up the past but rather to wonder what your child spirit most desired and whether this desire serves you now in your life. My childhood was interrupted when my parents separated. I can mourn this or I can give myself permission to simply unlock the door on Betty-Jane’s room and let her out to play, to re-capture her child energy and to embrace her qualities of curiosity and creativity. Imagine if you did the same. Why not extend a hand to your child energy and invite her/him out to play with you once again. What would you remember about you? What are the dreams you had as a child and how have these manifested? If they haven’t, why not realize them now? It is never too late. Remember that your child knew you in many ways better than you know yourself; she knew you before all the rules of the world were piled on your shoulders. Create some space in your life to have a visit with your Betty-Jane. Until next time…. Betty Betty Healey is an award winning author and inspiring speaker. Kegel balls, Ben Wa balls, Venus balls, love balls or Geisha Balls, call them what you want, just get a set. Why? Exercising your vaginal muscles will decrease urinary incontinence that occurs when you cough, sneeze or laugh. Can you relate to this? Doing Kegel exercises while pregnant can ease the pains of child birth. I vaguely remember my Obstetrician telling me this, should have listened.
The more movement while these balls are inserted, the more you will be stimulated, so get out the vacuum, get on the tread mill or go for a walk….
Saving the best for last…any of these balls will strengthen the vagina which improves sexual performance, and your partner will also enjoy the new tighter you. These balls are recommended by gynecologists and Obstetricians, so what are you waiting for, get those muscles tightened up and feeling in control. Like any exercise, just start out slow and increase the length of time you keep these balls in your vagina. Not to worry inserting and removing these balls is easy, if you are skeptical or concerned, purchase balls with a string attached for fast and easy removal. No ladies, they will not fall out, your muscles will hold them in. So ladies, get yourself a set of balls and get working those kegels. Men, next week we will talk Kegel exercises for the guys…. JOB TIPS with John
The Phone Interview Phone interviews are common today as a second step following résumé screening. They are used by the hiring manager to get to know you a little better and to dive deeper into your résumé and experience. More importantly however, the phone interview will make or break your chances of getting to the in-person interview.
Unlike the in-person interview however; the phone interview immediately puts you at a disadvantage. You never know when the call is going to come. You might be rushing around the house or just returning home carrying an armful of groceries when the HR manager from your dream company calls to ask you a few questions. Always expect a phone interview. As much as you can, be prepared for it. This is the hiring manager’s chance to get clarification on aspects of your experience or to ask you questions relating to your education and qualifications. They will, therefore, ask you questions relating directly to what is on your résumé. Be sure to keep a copy of it near the phone so you are both ‘reading off the same page.’
COOKING WITH YOUR GARDEN
A question asked to further stream candidates is salary expectation. Don’t be shocked if you are asked this over the phone. Try to do a little research into how much the company pays. If you are comfortable with the level of financial compensation, give a number in line with what you know they are offering. Asking for an amount far in excess of what they generally offer will potentially exclude you as a candidate.
with Tony Lacroix of LoveLoveFood.com Tony Lacroix is a food lover and writer on LoveLoveFood.com, his passion of food started at a very young age where he would cook complete meals starting at the age of 12. His partner and his mom are some of his biggest supporters and inspirations when it comes to preparing food.
If you’ve submitted résumés to various companies, expect that each time your phone rings for a hiring manager to be on the other end of the line. Answer the phone accordingly. Sound professional in your greeting and ensure there are no distractions such as a blaring stereo or television. While we cannot see the face of who is at the other end of the line (unless they have asked to do the interview via Skype or Facetime!) we can definitely pick up on the other person’s enthusiasm. Sound as if you want the job and be convincing when answering questions. You will be asked why you left your last position; what type of position you are interested in; why you are applying to work at that particular company. Try to avoid answers such as “I’ll take whatever,” or “I’m desperate for a job right now to pay bills.” I hear this frequently. While such answers might point to the underlying truth of why you are applying for a position they are most definitely interview killers. Rehearse a few answers to the above questions that can be conveyed in one or two sentences. To sound engaged, interested and confident try standing instead of sitting when on a phone interview. Smile when you talk and imagine that the person you are talking to is actually in front of you. That you have received a follow-up call is a great sign. Your résumé made it through the initial and perhaps second reading. The call shows that the company is interested in talking to you and now considers you a serious candidate.

ART SEEKERS by Sandra Taylor Hedges
SEEKING THE ARTS . SEEKING THE ARTS Artist, get out of town! Well, my winter at the beach has come to an end and I will be heading back to Cornwall and reality. While down here I learned a very important lesson about getting out of your comfort zone. At home we have our support group; our friends; our familiar places to hang out but do we really know if we and the art we make are a product worth marketing to a bigger audience? Are we able to hold our own with our peers in other towns and cities? How can we know? The only way you will ever know is to put yourself out there in the big wide world and introduce yourself and your art to the masses, even if it is in a small way. We need the input of those who are not judging us by our history but instead will judge us by who we are now. The exciting news is the odds are in your favor that they will love you. As long as you show up in a positive and confident way your energy will attract people to you to learn more about you and your Art. I found that in my case my particular approach to painting was so exciting to the local artists that I was invited to do a workshop and opportunities arose for me to teach in a bigger way when I return next winter. Is it that I was better than they are or the local instructors? No, just different and new. Myrtle Beach isn’t unique in this matter, other towns ask me to lecture and I sell more artwork when I am out of town than in. I am positive there are many other local artists that will agree that this is the same for them. Often recording artists go to Europe where they have a huge following but barely known here at home or in Canada in general. I personally know the road manager for the rock group Moneen (ever heard of them) that tour and make huge record and MP3 sales in the USA and Europe not to mention Tee Shirt, poster and other souvenir type sales. Think about some of the best talent in Canadian comedy and drama being picked up by Hollywood to make movies. So take it from me find a way to visit another town or city outside of your comfort area and participate in an event that will give you a chance to be seen and see what the world thinks of you. Stepping outside your comfort zone can be scary but feel the fear and do it anyway. You will be surprised what you will learn. It may be positive or it may be negative but either way it will be the honest truth. When we learn the truth even if it’s yucky it will help us grow into stronger better artists. How do you find opportunities? Go back and read my last three columns on Believe in your Dreams. So go on; get outa town!! You will never regret it. Are you the type of person that is stuck in a routine? Do you see yourself doing the same thing each and every day? Feeling like you’re stuck in a rut? Well, guess what, you’re not the only one! Unfortunately, many women deal with this on a regular basis and it can be a hard battle to face, as many of us fear change. Let’s say it together; deep breath… Change is good! First, why do we fear change? Change is something that usually means starting something new or being introduced to a new atmosphere or a switch in routine/habits and potentially facing the unknown. It can all be very scary and of course worrisome and usually just the thought of it can potentially create major anxiety. Good news! Don’t fret, there are definitely some tricks and tools to incorporating change in your life, little by little, in order to break that routine or habit. It can potentially help embrace change in your life!

Change is good!
LET GO -When change happens, we often resist it, fear it and refuse to acknowledge it. When we let go of our fear of the word change, we are able to welcome new thoughts and energies by letting go of the old ones. This is the first step to taking that leap, but it’s usually the hardest. Relax, you’re fabulous, you can do this! ACCEPT IT – Now that you’ve stressed about it and weighed out your pros and cons, it’s time to accept it. Focus your energy on the new change that is happening or will be happening and think positively. It’s a great time to assess the priorities in your life; what matters and what doesn’t. GIVE IT TIME – Change happens and when it does, it takes time to adjust to our new reality and it can sometimes be uncomfortable. Surround yourself with people that care about you – and that you care about as well – as it can makes the process that much easier. It’s so important to give yourself time to adapt to this new transformation in your life and realize your strengths and weaknesses. KEEP THE GOOD – Keep the good in your life, the things and people that make you happy and are positive in your life. It helps make transition more acceptable and can help keep a sense of security in your life. ATTITUDE - A major culprit to fear of change. If you’re feeding your mind with negative thoughts and actions, there is a good chance that it’s stopping you from taking that first step to bettering you and your life. Whether your glass is half full or half empty it absolutely depends on your attitude and you should try to focus on the good and positive aspects that surround you and let go of the negative ones.

Blend until smooth. Serve with fresh organic vegetables, spread over toasted Ezekiel bread, or serve with organic brown rice chips. Enjoy!
TAKING CARE OF YOU – I’ve said it before and I’ll say it again, as women, we tend to not take enough time for us and it is so important to do so on a regulars basis to help incorporate change in your life. Do something for you each and every day. Remember that when stress levels increase, it can weaken your immune system and lessen your energy levels; but with a little bit of exercise and a healthy diet you can avoid that. Sometimes a change in scenery and atmosphere can help put a new perspective on things. I’ll admit, I’ve feared change, and I once had a hard time embracing it. But I’ve realized that good change is necessary to grow not only as a person but also as a woman. If we don’t take that leap into change, we may miss out on a great opportunity that can be a positive step to personal growth.

TONY'S PRE-FIGHT. by Jordan Filion
In order to win, he must train and that's exactly what Lightning Luis has been doing. With the help of his personal trainer, Jamie Seguin, he is preparing for his next big fight on April 7th. Sacrificing his social life, he has been putting all of his energy into his training. Luis has been undergoing a rigorous diet and workout routine in order to grasp his next belt. The workouts consists of half conditioning and half training. His workouts are not monotonous and are constantly changing in order to keep each muscle engaged; “We hardly repeat exercises. It helps me get stronger and explosive for every movement possible” Luis says. Seguin pushes Luis hard, ensuring that he's ready for anything.
As a power lifter himself, Seguin trains Tony with strongman exercises and power lifting movements. But mostly importantly, he focuses on explosive movements. For the explosive movements, Seguin gets Luis to undergo box jumps with medicine balls, which targets different muscles so he can explode during a fight. Luis uses weighted chains to build strength for his power lifting movements; the bottom of the lift engages muscles at a 30% capacity and the top of the lift allows 100% of muscle activity. As well, Seguin trains with a movement called the farmer's walk; using 2 calibrated pieces of metal, held within each hand, weighing anywhere between 30 to 400 pounds in order to help Luis with his grip strength, shoulder strength and his cardio endurance. “He's not only one of my greatest friends, he is my trainer. He's always looking for new routines to make me stronger and ensures that the routine will enhance, not hamper my boxing” Luis mentioned, when asked about his opinions of Seguin. Luis trains with Seguin 2 to 3 times a week, the remaining time being spent training with his father, Jorge Luis, at Champs. He is there 4 to 5 times a week, gaining strength and agility for his fights. Seguin and Luis grew up together in Cornwall and are life-long friends. Seguin believes that Luis is not number three or number two, he is number one and with the right people surrounding the Lightning boxing champ, it's just a matter of time before he breaks down the barriers and makes his way to the top. Luis is very determined and is one of the hardest working athletes that Seguin has ever met. As a trainer, his goal is to make Luis stronger and faster. “I think Tony is a special athlete because he is not a quitter. He only knows winning and he won't stop until he's won it all,” Seguin added.
La Cabane a Sucre est fantastique! Photos by Jason Setnyk and Mai-Liis Renaud Last weekend was La Cabane a Sucre festival which took place at the parking lot and inside the Army, Navy, Air Force Club in Cornwall. There was talented musicians performing, children's activities and entertainment, and of course the cabane where sap boiled on a wood stove was served.

Tom Irvine is a big supporter of Lightning Luis' career. He generously donates his gym, Quest, as a platform for Tony to improve himself and continue with his success. With the help of Seguin, and his father, Luis' training has been and is continuing to prove successful. Luis is building strength, speed and the right mentality to take on his next challenge on April 7th. The fight will be held at the Centre Claude-Robillard in Montreal, Quebec. Lightning Luis is ready for the fight, and it's one you don't want to miss!
