Method: Simmer pumpkin in water until tender, drain and cool. Heat oven to 180C. Line a 22cm tart tin with pastry. Chill 15 mins. Blind bake 15 mins. Remove blind beans and paper, cook 10 mins until pastry is pale golden. Allow to cool. Increase the oven to 220C. Puree pumpkin. In a separate bowl, combine sugar, salt, nutmeg and half the cinnamon. Mix in beaten eggs, melted butter and milk, add to pumpkin and combine. Pour into the tart shell and cook ten mins, then reduce the temperature to 180 C. Continue to bake 35-40 mins until just set. Cool, remove from tin. Mix remaining cinnamon with icing sugar and dust over.

their first year at the property has paid off with massive crops. “We sold over fifty kilos of pears at the Matakana Farmers' Market last weekend,” Waveney says. “And Charlies Gelato are now using our Kei apples to make delicious gelato!” Once one of the leading permaculture destinations in the world, Rainbow Valley Farm attracted people from near and far to work and learn alongside its founders Trish Allan and Joe Polaischer. Motivated to sell excess organic produce from Rainbow Valley Farm Trish and Joe were instrumental in establishing the Matakana Village Farmers' Market along with founders Christine and Richard Didsbury. Sadly, Joe passed away in 2008 and the farm passed through a series of different owners, all with different focuses and energy levels for the farm. When Waveney and Matthew took over, the formerly productive orchards were mostly overgrown, and the native bush overrun with invasive pest plants and predators. “We bought the farm in November 2018 and are working with others to restore the farm, the native bush and the connection with the community,” says Waveney. Their first year has been busy. Many people, from locals to international enthusiasts remember the delight of Rainbow Valley and have jumped at the chance to visit, volunteer or participate in one of the workshops on offer. A Permaculture Design Certificate Course starts in April with Trish Allan and Guenther Andraschko. Waveney and Matthew are both participating. “It's an amazing opportunity to learn about permaculture on our own land, with the woman who developed this paradise, and who is one of the country’s leading teachers.” To find out more about the course and what is happening at Rainbow Valley visit their Facebook page. FIRST TO HELP: RODNEY ST JOHN On 5 November 1960, after eight years working to establish an ambulance station in Rodney, the Rodney Ambulance Station (Warkworth) opened, thanks to a bequest by the late Sarah Wilson. Discussions took place between the St John Ambulance Association, the local hospital and local residents and it was agreed the local residents would provide the vehicle (ambulance) and St John Ambulance Association the service. From the date of opening it was a 24 hour service. The St John Warkworth Ambulance Station has seen many changes over the years, the latest being integration into the nation-wide double crewing project (DCP) in February. This saw the station become 24 hours double crewed with two paid ambulance officers, as previously some were single crewed. Volunteers have always been and continue to be an integral part of the station. For several years Warkworth station was one of three stations in New Zealand that maintained a 100% double crewing rate due to the commitment and professionalism of their volunteers. Ten paid ambulance officers and twelve volunteers make up the Rodney St John team.

If you find yourself house-bound for the holidays, there are plenty of options to keep the young ones busy. There are now virtual tours of galleries and museums from all around the world where kids are able to visit from the comfort of their own couch! Google’s Arts & Culture collection includes the British Museum in London, the Van Gogh Museum in Amsterdam, the Guggenheim in New York City, and literally hundreds of more places where you can gain knowledge about art, history, and science. You could try a ‘Nailed It’ approach to baking. Find a tricky recipe online, or from a cookbook, and try to recreate it in a set time. You could also try a bake-off between kids and adults! Some much needed fresh air could be on the cards and there are literally hundreds of games you can play in the back garden or even better, on a trampoline. Search up Pinterest for inspiration. There are also endless art and crafts projects there too and you can find downloadable resources to print off at home.
